Then, there is the issue of wasted space below the hanging clothes. With a custom closet, you can have multiple levels of shelving, rods and storage that are adjustable and truly maximize your space.”

Redoing your closet can offer many advantages. Whether it’s a small ancillary closet or a large walk-in closet, having your items neatly organized, easily accessible and arranged aesthetically can do wonders for your frame-of-mind. Since many of us begin our day with getting dressed, the sense of order in a well-organized closet can help cultivate a state of calmness to our entire day.

Ingredients 4 center-cut beef filet mignon steaks, 6 oz. each 1 lb. fingerling potatoes 12 white asparagus spears 12 patty pans

1/2 cup vegetable oil 750 ml. red wine 1/4 cup sugar 1 tsp. rosemary, chopped 1/2 tsp. garlic, chopped

2 shallots, sliced 1 oz. micro salad greens 1 oz. dried carrot curls salt and pepper to taste

Procedure Place the wine and shallots in a sauce pan and reduce by two-thirds. Strain into another sauce pan and add the sugar. Continue to reduce until sauce consistency and keep warm.

Bring salted water to boil, add the patty pans and cook until fork-tender. Pull patty pans out of the water and put into a sauté pan with 2 oz. of oil. Add asparagus to the boiling water for 30 seconds. Move asparagus to the sauté pan with the patty pans and heat on medium-high. Add salt and pepper to taste.

Keep warm.

Meanwhile in a bowl, mix fingerling potatoes with 2 oz. of oil, salt and pepper. Place potatoes on a sheet pan and roast in a 375 degree oven until fork-tender. Pull out of the oven and add chopped rosemary, garlic, and shallots. Place potatoes back into the oven for an additional two minutes. Remove from oven and keep warm.

Pan-sear the tenderloin to the desired temperature and let rest.

To Assemble Place asparagus spears off-center on the plate with the fingerling potatoes next to them. The patty pans will go in between and in front of the asparagus and fingerling potatoes.
