SALSA FOR ALL SEASONS pico de gallo INGREDIENTS: 3-4 Roma tomatoes 1/2 cup white or red onion 1 jalapeño 1/4 cup fresh cilantro 1/2 teaspoon FRENCH PANTRY Sel Gris bon Salt 1-2 Tablespoons FRENCH PANTRY Tahitian Lime Oil 1 lime, juiced with Citrus Press DIRECTIONS: Chop your tomatoes, onion, jalapeño and fresh cilantro in the Eco-Chop. You may have to do a couple of separate chops. Toss chopped items in Stainless Mixing Bowl, add salt, oil, and freshly squeezed lime. Stir well to combine, then taste and add more salt if needed. Cover and refrigerate until time to serve.
BON TIP: For less spice, remove seeds from jalapeño before chopping.

Next, transfer to Stainless Mixing Bowl and add the balsamic and oil. Mix well. Season to taste with salt.
BON TIP: For a holiday pleaser, trade the mango for 1 package of fresh cranberries. Swap the bell pepper for 2 large ribs of celery, and add 3/4 cup sugar (or maple syrup) in lieu of the balsamic. Tada! A delightful Cranberry Lime Salsa!

MICROWAVE DIRECTIONS: Place Large Round Mold on a microwave safe plate. Place bacon in Large Round Mold and cover with Octagonal Bonmat. Microwave on high for 3 minutes. Once bacon is cooked, remove bacon from Large Round Mold and place on a paper towel. Chop once cooled.
OVEN DIRECTIONS: Preheat oven to 400°F . Place your Flexiflat on the Perforated Baking Sheet. Add Brussels sprouts to Flexiflat. Add olive oil, salt, and pepper (to taste) and toss. Spread mixture out evenly on the Flexiflat. Roast 20-30 minutes until tender and browned. Remove from oven and drizzle immediately with Traditional Dark Balsamic and toss to combine. Enjoy!
Keep 1-2 tbsp bacon grease (or substitute oil of choice) in Large Round Mold and add sliced onions, cover with Octagonal Bonmat, and cook in microwave for 1 minute.
OPTIONAL: For added flavor, add 4 oz. Pancetta, sliced ¼ inch thick, cut into 1/2 inch cubes. Try different FRENCH PANTRY oils or create your own custom combination.
Add greens to onions, cover, and steam in microwave for 2 minutes. Add mustard, herb blend, salt, and pepper. Toss to combine, cover with Octagonal Bonmat, and microwave for 1 minute. Remove from microwave, add chopped bacon and apple. Toss to combine. OPTIONAL: Top with a poached egg or add eggs on top of greens before the final minute of cooking.
