WHICH pasta

SHOULD YOU CHOOSE?

THIN LONG NOODLES LIKE SPAGHETTI, ANGEL HAIR, CAPPELLINI & SPAGHETTINI

These delicate strands are best paired with light sauces, like garlice & olive oil or tomato. They will coat the strands evenly without weighing them down. Small, light toppings such as crisp crumbled pancetta and fresh herbs add a light touch.

FLAT LONG NOODLES LIKE FETTUCCINE, LINGUINE & PAPPARDELLE

Ribbon-like, flat pastas are best paired with creamy or rich sauces. The surface area of each strands stands up well to the weight of a thicker sauce. Wide ribbons like pappardelle pair well with rich, meaty sauces. Thinner flat noodles like fettuccine & linguine are best with simple cream sauces.

SHORT TUBE PASTA LIKE PENNE, RIGATONI, ZITI & CAVATAPPI

With sauces ranging from creamy to hearty, these shapes work well in soups, salads, casseroles and more. The larger the tube, the more potential for catching creamy sauces flavored with meats or vegetables. Watch for the word “rigate”. That means the pasta includes ridges to really capture the flavor.

LONG TUBE NOODLES LIKE BUCATINI

These noodles resemble spaghetti, but with a hole running down the center. They have an extra heft and are perfect for brighter flavors like pancetta or crushed red pepper flakes. Loose sauce work best to flow through the tube in the center of each strand.

SMALL TUBE PASTA LIKE MACARONI & DITALINI

Baked dishes are the perfect vehicle for these narrow tubes. They can be flooded with creamy cheese sauces. These shapes are also great in soups & pasta salads and can hold their own against a meaty sauce.

SHORT SHAPED PASTA LIKE FARFALLE, FUSILLI & ORECCHIETTE

These pasta shapes have a sturdier bite and come in a variety of shapes that make them ideal to hold rich sauces.

National Pizza Month began in October 1984 and was created by the publisher of Pizza Today magazine, Gerry Durnell. As a pizzeria owner himself, Durnell wanted a magazine to support the growing pizza industry. October was designated as National Pizza Month to celebrate the month the magazine debuted as well as to praise everyone’s favorite food!

Want to step up your social media game? October is the perfect month to post all about what makes your pizzeria unique. Use videos and images to get your message across. Here are a few post ides:

• Highlight the quality ingredients that go into your pies

• Feature a best selling pizza or a specilaty pizza

• Let a great employee shine with a Q&A or a day in the life

• Show a customer enjoying your food

• Let your viewers know a little more about your history.

Pizza Today offers online tools to celebrate national pizza month. here are a few of their low-cost marketing ideas:

• Original pricing from when the pizzeria opened if it’s a legacy pizzeria

• Eating challenge. Entrants compete for t-shirts or other swag. Create a wall of fame.

• Create a 31 Days of Pizza Menu featuring a different specialty pizza each day

• Raise money the month of October to support a local cause

• Have a contest and ask patrons to submit videos about why they love your pizza. Great for social media content as well!

• Challenge a pizzeria owner in another city to a duel. Whoever sells the most cheese pies in October gets to pick the charity for the “loser” to donate $500 to.

• Reach out to your local news to provide pizza and talk about your location.

• Partner with local breweries, wineries or dessert shops to create unique pairings
