A REFRESH FOR SPRING

Having been stuck inside all winter, customers are itching to spend time outside on beautiful spring days. Outdoor dining creates an inviting casual atmosphere and can bring in more business.

IDEAS FOR OUTDOOR DINING SPACES Make a Cozy Ambiance

Hang lights around the trees or other fixtures surrounding your seating area. This will give the area a cozy ambiance. Be sure to string lights that are suitable for outdoor use. Lights that give off a warm tone (a slight yellow glow) will offer a cozier vibe than ones that are bright white.

Add Some Greenery or Flowers

Flowers and plants bring life to a space and make it feel inviting. There is something about plants that makes an atmosphere more relaxing.

Using Awnings for Shade

Not only can it block sunlight, the right awning can add a unique pop of color to your space and give it character. Consider using a medium to darker color to avoid stains and discoloration as it weathers.

Turf or Outdoor Fabric

There is nothing cozy about concrete. Treat your guests to an outdoor oasis by rolling out a turf fabric or outdoor rug. This is a great way to define the space.

Make It Pop

Colorful chairs and tables will brighten up your outdoor space and help you stand out from the crowd.

Pickle It

Pickled vegetables give a refreshing pop of flavor. Try adding pickled vegetables to sandwiches, salads or flatbreads.

Adding some veggies to your pizza is a great way to revamp your menu and make it seasonally relevant. Topping a pizza with greens like arugula and spinach can be very popular with guests seeking something fresh and unique.

Antipasto Specials

Menu Items Not In-Season

Out of season ingredients typically cost more and are not the best quality. Which of your menu items have these kind of ingredients?

Timely/Inefficient Recipes

Consider discontinuing inefficient or timeconsuming recipes, especially if you’re dealing with staffing concerns. Ask your Delco Sales Rep if they have any products to help save prep time without sacrificing flavor.

Ingredients Not Cross-Utilized

Which menu items have an ingredient that is not used in any other recipe and has a short shelf life? Is it worth keeping on the menu or should you revise the recipe?

Recipes with Highly Volatile Ingredients

As you know, the food market has been unsteady and unpredictable. Look back on your purchases this year to see which of your ingredients has been the most unpredictable.

Low Profitability & Popularity

Take a look at your menu items and rank them based on popularilty and then based on profit. Menu items that rank low – both on popularity and profitability – should be considered for removal. Some items may not make sense on a menu anymore.

TUNA MELT BRUSCHETTA

Ingredients

• 1 cup (4 oz.) Shredded Mozzarella

Delco# 170550

• 1 can (5 oz.) water-packed tuna, drained and flaked

• 2 Tbsp. minced onion

• 2 tsp. minced fresh parsley

• 1-1/2 Tbsp. minced fresh oregano

• 4 to 6 slices Italian bread

• 2 Tbsp. olive oil

• 2 cloves garlic, halved

Directions

1. Combine cheese, tuna, onion, parsley and oregano in a small bowl. Brush both sides of bread with olive oil and rub surface with cut-side of garlic.

2. Toast bread in two large skillets over medium heat until light golden brown. Turn and top each toasted surface with 1/4 of the cheese mixture; reduce heat to low, cover and cook until cheese melts and bread is golden brown on bottom.

3. Arrange three slices of bruschetta on a plate; serve warm as appetizer.
