The festive season has passed, much too soon I must add and the month of love is upon us and I’m sure Cupid has been shooting arrows up and down the country in the last year, so how are we celebrating in 2014? Whether it’s a romantic dinner or an island getaway, we’re sure it will be memorable. We visit Bali this month and I can assure you this is one not to miss, this island and its people are truly special and we hope we do it justice in our feature. A romantic dinner on Jimbaran beach is one way to romance your loved one or how about learning the Rumba, the soulful dance of love explained to us by none other than Michael Wentink, the celebrated judge of Strictly Come Dancing or if you can get your hands the Queen of Fruit, Mangosteen, share one with your partner. No matter what you choose let the spirit of love find you, wherever you are, and then go on and embrace it. And of course, as always, we bring you exciting and fun competitions in the name of love, like the Guess ‘his’ and ‘hers’ perfumes or how about a romantic getaway to the Drakensberg Gardens in the Natal Midlands? This month we’re jam packed with all things ‘love’ and we hope you draw inspiration from our many features. Last year we put smiles on so many faces with our great give-aways and this year promises to be bigger and better. Be My Valentine?

Have you ever pondered the origins of Valentine’s Day? What is it all about? Well, I’ve done my research and I’ve decided that at the end of the day Valentine’s Day is simply a money making racket. Saint Valentine is probably turning in his grave amazed at the commercial viability of the day. So how do you avoid the commercial aspects of Valentine’s Day and make it more special? Well, let’s see. Start by boycotting florists trying to boost sales of overpriced aging red roses guaranteed to last no longer than a one night stand. Avoid the aisles of Hallmark cards bearing images of winged cupids and little red hearts whose contents hold generic words which promise undying love and are signed off ‘Be my Valentine’ which, in my mind, is about the equivalent of ‘Mind the Gap’. Bypass those Belgian chocolates all dressed up in their swanky Valentine wrappers bearing hefty price tags and sure to do no more than fatten up your Valentine. And whilst we’re on the subject of food, steer well clear of romantic tables for two in restaurants promising special Valentine’s menus created using every known aphrodisiac guaranteed to make your partner horny; you are more likely to end up with food poisoning from a dodgy oyster. I dare you to resist the convenience of a store bought Valentine. Keep a little more of your hard earned money in your pocket, get creative and make your Valentine’s Day a bit more authentic. How you may ask? Well, instead of buying weary red roses you could pick wild flowers or flowers from your garden and arrange them in a simple bunch for your loved one. If you don’t have a garden full of flowers, you could go out and buy a little ‘Peace in the

Home’ plant, God knows most of us could do with a bit more peace in the home. Even a potted herb such as lavender whose meaning is undying love and devotion or basil whose meaning is love, but not just any love, a sweet and spicy love would make a better gift than the overpriced roses for sale at the local florist. Make a card for you loved one; take the time to handwrite your own words on a pretty piece of paper and decorate it with lace and ribbons like they did before Hallmark stepped in. Use an old photograph from when you first met and write a special message on the back. Save money on overpriced restaurant meals and make a delicious dinner at home then if you have children, bribe them to play the part of the waiters, insisting that they get to bed as soon as they are done serving. Run a lovely bubble bath for your Valentine and fill the bathroom with candles, this is not only super romantic but you’ll save on electricity too! There are endless possibilities, step off your hamster wheel and give it some thought. I guarantee it’ll earn you extra brownie points! Much love...

LATE FOR A DATE? There are so many factors that you need to consider when you are heading out on a nerve racking first date. With all the love in the air during the month of February, I thought it would be great to look into this, sometimes extremely stressful occasion, and focus on the question that we ALL ask, “WHAT MUST I WEAR ??” I know that in my younger years, when I was dating, one thing that often made me consider canceling a date, was the fact that I believed I never had anything to wear. I look back know and chuckle at the thought, since things like, “ what am I going to talk about?” “ Where will I be going?” “ Will we have much in common?” are just as important factors to consider. However, if you don’t feel good in what you are wearing, you will lose confidence, and the rest will go downhill from there. Shallow to some, but let’s be frank, you should want to present yourself in the best light and create a great first impression.

So where do you start?

1.

First and most importantly in my opinion, is to get the foundation right. Yes, underwear! Invest in something glamorous and sexy, that fits well. Even if you are the only one who sees it, you will feel sexy and in turn more confident.

2.

Find out where you are going, as you need to dress for the occasion. Nothing worse than been over dressed, let alone under dressed... Picture arriving in stilettos for a picnic, little awkward I would say. I am of the belief however that rather over dressed than under dressed.

3. For a great first impression, I advise that you wear a skirt or a dress (no not the usual LBD!) and a great pair of heels (as long as the occasion allows for it) Without sounding old fashioned, men really do love women who ooze femininity. We so often avoid wearing dresses and skirts, as we tend to feel slightly over dressed. Seize these moments as they really do fit the occasion! Just remember if you 20

choose a skirt, make sure you don’t land up with a typical workwear look.

Do not try and reinvent the wheel on the day! Stick to styles that you know suit you. Half the panic is so often caused through us expecting a completely new look for the occasion. Worst thing, as you are now fighting a “fit” as well as a “look”battle.

5. This may sound silly but grooming is hugely important. Yes he will notice if you have hairy legs and scruffy nails. Treat yourself to a blow wave, it is such a simple way to instantly make you feel good. If you not a make-up fan, try to at least wear a little keeping the look natural. On the other end of the scale if you consider yourself to be a make-up artist do not go over the top. Remember there will come a time when you won’t have the mask on. Less is more!

Make sure that you can walk in the shoes you are wearing. If you ain’t the high heel kind of girly girl, then don’t try it on your first date. I giggle so often as you can spot the inexperienced a mile away.... You really don’t want your date having to scrape you up off the floor!

Society really puts pressure on us to always be thinner, taller and sexier (to name a few). A recipe for disaster is trying to be someone that you are not. Dress for you, smile and have a good time! I guarantee you will blow his socks off. Y our friend in fashion

Michael Wentink is a South African champion Latin American dancer, instructor and choreographer who is a 12-time South African Latin Americam Dance Champion and Japanese Dance Champion. He is also a judge on the hugely popular hit tv show “Strictly Come Dancing”. He and his celebrity dance partner, Zureida Jardine won the inaugural show in 2006.

Forget about just wine and dine… Lets dance and romance! Whilst Cupid shoots an arrow this month, the Rumba ignites a flame and sets the mood for a sensual Valentine’s Day.

Better known as the dance of love! Having won the Rumba along with the other 4 compulsory dances (Cha ChaCha, Samba, Paso Doble and Jive) at the World Latin American Championships in Berlin, I can’t but help myself to dig a little deeper and treat you in better understanding this dance’s roots and origins. Whilst the Salsa, Cha ChaCha and Mambo are explosive and high impact dances, the Rumba is passionate, sensual and very articulate. A dance which originated in Cuba and is rumored to have been popular in bars and clubs in the early 1930s, this dance separates‘the men from the boys’.

“Rumba”was simply another word for “party”

but little did they know that this party dance would become a metamorphosis of mood.Musically timed and powerful in character, the Rumba allows two bodies to move as one silhouette. A mix of emotions and feeling or expression, there is no question that the Rumba is a dance full of passion. The Rumba, like the other of its family has evolved into a very technical dance today and studied by international Latin American and ballroom lovers, whereby the use of a beautiful straight leg type action, is a must. Foot work is so precise that it almost looks like its been dissected under a microscope. Lead and follow with high intensity and an understanding of connection is essential, but there is no doubt that the story line is that of romance.

A Cuban Rumba is danced either as a slow quick quick count and is danced in a box step or as the International Ballroom style and counted as a 2-34_1(with no step on 1) with a different foot pattern. Either way, the Rumba is danced in Cuban motion whereby the hips are rotated in a figure 8 with the 2 bodies stuck together like Velcro with a beautiful frame, almost suggesting that you never want to let go. Sounds complicated I know and that’s why a teacher is always a good option in better understanding this technique. Having said that,…. The essence and meaning behind the dance is simply a love story!!!!!!! If you have not yet booked a lesson on the technique of how to dance a rumba, it’s not too late, or you can simply take your partner this Valentines Day, wine them, dine them and head off to the dance floor and dance your own version of the Rumba.

Surfs up Summer time is upon us, and the best thing to do when the sun is out is to get down to the beach. Not only is the beach a popular hangout for all age groups, but it offers a variety of activities to keep everyone entertained for the day. The one we are going to tell you about is surfing.

Surfing is a water based sport where the

rider will "catch" a wave and try their best to stand up on the surf board while avoiding being slam dunked by the barrelling water coming chasing you from behind. Now this may seem like a crazy idea to some, but there is a light at the end of this liquid tunnel. For centuries surfing has been taking place in the Polynesian oceans by the natives who lived in the area, as the Europeans began discovering this fun past time, so it began growing around the world from Hawaii to Australia, and really anywhere that has a beach with a few decent sized waves. Surfing has grown into a multi-Billion Rand industry as the range of surf style clothing and gear is popular and stylish in most trends of today.

Surfers represent a diverse culture based on riding the waves. Some people practice surfing as a recreational activity while others make it the central focus of their lives. Magic with Mo My first encounter with Mo Magic was a few years ago at a private function and as like any sceptic I was entertained but not necessarily bowled over. Fast forward to early 2013 and at another corporate event he did something that really intrigued me, he got my sunglasses to levitate. Now, my curiosity was peeked. During the year we often met each other at functions and eventually became friends. It was only after several conversations and getting to know him that I realised how truly talented Mo really is. Not only is his story inspirational but it also proves a point that I firmly believe in, “Do something you love, and you will never work a day in your life”

During his early years as a university student Mo watched a David Blaine tv programme, a few years later, with six days to spare for his thesis to be submitted, as providence would have it during a study break, the very same programme aired on tv. It was at this point that Mo thought, “That is what I want to do”. But, he finished his degree and for a few years pursued a career as an engineer. At some point in this time, there was a Harry Potter magic show in Johannesburg, which Mo attended, and it was a chance meeting with another magician that really got things going. During all his spare time and using up all his vacation time, including unpaid leave, Mo did magic shows around the

we think of the supernatural or the ‘dark side’ or ‘tricks’ but Mo describes his brand of magic as a learnt art form with a unique presentation and a personal connection with his audience which creates an experience that one cannot easily forget. Mo enjoys performing in smaller venues where there is greater audience participation and interaction but he has also performed around the world in countries like UK, Sweden, Belgium to name a few to both large and small audiences. He recently wowed some of the worlds top golfers with his magic at the Volvo Golf Championship gala dinner and performed for many local celebrities and international musicians like Kool and the Gang. The English cricket team also had their chance to be bowled over by the skill of Mo Magic. He has had appearances on Top Billing and Expresso but the popularity that he has gained has not altered the humility of the person.

So how did a small town boy, from Greytown, who is a qualified engineer with more than 6 years experience in the field decide to give it all up and become an extraordinary entertainer? I sat down with Mo to discover the answer.

Bali is the best... Sun, rest and relaxation, Bali is definitely the place for all of these. Well, anyone who knows me knows that I love the sun..I enjoy the feel of it on my skin, I don’t mind the heat it brings and if you asked me what the one thing was that could life my spirit, it would be, waking up to the glorious sun shining through my window. So of course, Bali would be on my list of places to visit, if for nothing else but the stunning weather and of course, like so many women, I read Eat, Pray, Love and ...

...So it was that hubby and I packed our bags and headed off to the beautiful island. We decided at the very last minute so of course seats on all the quicker routes were already full and we were to go the long way round, by the time we arrived, we were both exhausted, frustrated and quite grumpy with each other. But, landing at the beautiful Ngurha Rai airport changed all of that. The newly built airport instantly reminds you that you’re on holiday..it has a light airy feel and doesn’t feel like an airport ‘arrival’ section at all. Our destination was Nusa Dua quite a bit of a drive past the very popular districts of Kuta and Seminyak. Nusa Dua is not as busy as Kuta and is the ideal location to experience the majesty of this “island of the Gods”. It is close enough to Kuta or Seminyak and about 40kms from the capital, Denpasar, so that you can spend the day in the madness but return to the relative calm of the south side of the island. Nusa Dua is known as an ‘enclave’ of 5 star resorts and we chose, The Grand Aston Bali. Kuta is overrun by tourists at any time of the day or night, most of them coming from Australia, as Perth is just a 4 hour flight away. To put it in context, it is quicker to get to Bali from Perth than it is to get to Sydney.

Seminyak, is well known to tourists and quite a bit more upmarket than Kuta with many excellent dining establishments , including the 2 Michelin starred Mozaic and the ever popular Ku De Tat. Whichever area you choose your hotel, Bali, is bound to delight you and enchant you in many different ways and will leave you wanting more. Though Bali is part of Indonesia, it has a identity all its own. The language spoken is Balinese and the culture is almost entirely unique to the island. Although Indonesia is a majority Muslim country, the population on Bali is 90% Hindu. The preservation of the Balinese culture means everything to the Balinese, for example the tradition of the eldest male son living with and taking care of his parents is paramount on his marriage, so every Balinese married male of course wants to have a son.Of course, when you’re in the ‘city’ this might not be that evident but take a drive to Ubud and you can see exactly how they live. Not in a ‘house’ per se, but rather on a compound, where there are free standing units for the elders, the married son and his family, the temple (all homes have one) and the common area, all joined together by beautiful gardens and pathways. With the rebirth of tourism, the main source of income for the island, many of the compounds have converted their home fronts to little shops selling anything from fruit to handmade sandals to jewellery. Traditional clothing is still worn by many, the colours are vibrant and the items are lightweight, with both males and females wearing a sarong. that I have never met more hospitable people, well, I hadn’t been to Bali then. The spirit of the people is amazing. Friendly, helpful and so obliging, nothing is too much trouble. They clearly know that tourism means prosterity for the island and every single person is happy to ensure that you have a great stay and hopefully return, I most certainly will. We spent a week in Bali, but I would suggest that if you had the time, at least 10 days should get you to all the ‘touristy’ must see spots without too much of a rush and then a second visit to just enjoy the flavour of the place.

So, there is much to do and see in Bali but I’m going to try and give you the best reasons for a visit:

1.

The Temple at Tana Lot - This is a spectacular site, located in Tabanan, about 20 kilometres from Denpasar.The temple sits on a large offshore rock in the water, which has been shaped over the years by the ocean tide. When the tide is out, you can walk across to the temple. Sunsets in Bali are spectacular, but for some reason, they’re even more amazing here.

2. The 30 000 year old Mt Batur volcano in

Kintamani - it is at least an hour away, but really worth a visit. The surrounding lake is spectacular and we got lucky, this area is usually surrounded by cloud, but the cloud lifted just long enough for me to take some stunning pictures. Or if you’re feeling really adventurous, you can do an early morning hike up the volcano, but don’t worry, though it is an active volcano, it last erupted in 2000. Be warned though, this region is extremely popular with tourists so you will definetely be confronted by pushy vendors selling you anything from fridge magnets to silver jewellry.

Dine under the stars at Jimbaran - this strip of beach has dozens of restaurants with tables in the sand. The cuisine is of course seafood and the restaurants range from the super expensive to the averagely priced, but it is a favourite of tourists, simply because of the setting. Bali is a well know destination for surfing, and the best beach to ride the famous waves is defintely in the south west Uluwatu wher you will have to paddle out through the famous Uluwatu cave or two hours north of Seminyak is Balian, a black sand beach with a more gentle and slow wave which breaks in two places, one close to shore and one further out. These beaches are preferred by seasoned surfers so if you just want to have the experience of surfing in Bali, without the pressure, then the beach at Kuta is perfect. Kuta, is extremely popular with young people, hence the beach is almost always busy.

5.

A visit to a Kopi Luwak plantation - Now this was a treat for me. After having read about this famous and very expensive coffee, I absolutely loved this.You get to taste all the different types of Balinese coffee free, the Kopi Luwak is the only one you have to pay for. Civets are very private animals and live high up in the trees but some of the plantations have one available so you can actually see the animal that is responsible for this very controversial coffee. Kopi Luwak refers to the beans of the coffee berry once it has been eaten and excreted by the civet, the resulting coffee has become highly popular with coffee lovers.

Most of what they make is exported but the interest for me is that these ancient skills are passed down from generation to generation and it is fascinating to watch brothers carve a piece of stone into a thing of beauty.

9. Temples abound and festivals and ceremonies happen all the time. Not all temples are available for you to enter but what struck me most about them, is that they’re all ‘open air’ much like the compounds on which the Balinese live.

10. You will definetly be invited to watch a

Barong or a Kecak show, these shows are interpretations, in dance form, of the Rama and Sita story , which is of religious importance to the Hindus, but though the Balinese are essentially Hindu, their practice of the faith differs to Hinduism as we know it in South Africa.

The highlight of my visit was meeting Ketut Liyer, the medicine man who famously helped author of Eat, Pray, Love, Elizabeth Gilbert . Now, 95 years old, he is still sprightly and active and still practising as a healer. No, I did not have a reading but thoroughly enjoyed a conversation with him. He made sure to tell me though, that he was in the book. Should you wish to have a reading though, I would suggest you make a booking as he is old now and only consults during certain hours. The cost is about R250.

The area of Ubud - is overcrowded by tourists but you must visit. There is a lot on offer here, like a visit to the old King of Ubud’s palace or the Monkey Forest and of course there is lots and lots to buy.

8. Bali is a nation of craftsmen and you can visit the stone masons or the silversmiths or the wood carvers and watch them in action.

A few things to know before you travel:

The currency of Bali is the Rupiah, and it can get quite confusing, for example R1=+/1100 IDR so the easiest thing to do is to divide by 1000.

Take along your mosquito repellant, it is an island, the weather is tropical, mozzies are everywhere.

Before you buy, bargain, bargain, bargain, they can spot a tourist from a mile and the price is almost always double what you should pay.

Service charges are almost always included, but they do not always get to the person serving you, if you want, go ahead and tip over the charge, in cash

6.On the beach in Kuta, you WILL be accost-

ed by vendors selling you temporary tattoos, manis, pedis, jewellery, in fact just about anything. It can become quite frustrating, so be prepared and keep your sense of humour, just remember, all prices are negotiable.

Most hotels outside of Kuta offer a free shuttle service to the area, so before you book a taxi, enquire at the reception.

8. It does rain, often, but it doesn’t last long and it is still very hot.

Bali, is a stunning destination. It is a beautiful place to visit whether it be for a honeymoon or a Valentines getaway. It is not big city living but it does offer big city luxuries, but nonetheless, if you’re planning a trip, expect to be transported to a different way of being. Many surprises await you, I was gobsmacked when I saw vendors selling Magic Mushrooms on the road , legally and families of four or five all packed on to a little Vespa, including groceries and I was really surprised at how clean everywhere was yet there was not a bin is sight.

The Antique Cafe Durban’s Secret Garden Take a guy, one with a Doctorate in Business Administration and a girl, who studied fashion design and had as her mentor the great Jean Paul Botha of the RUFF TUNG label and you get Steffano Toffoli and his beautiful wife Terri-Anne who combined their passion for design and the ‘pretty’ things in life and began an adventure that changed everything. Steffano is well travelled, having been born in Verona,Italy and moved around the globe during his corporate years as MD of Luxottica SA, well known for their sports eyewear labels, Ray Ban and Oakleigh and then on to SAFILO who bring us the beautiful Gucci and Christian Dior designs, so he is well accustomed to enjoying the finer things in life. It is hard to imagine what he did next. Terri-Anne, had a great career in fashion having always been inspired by Jean Paul Botha and was quite happy pursuing her creative passion in the industry. The couple have been married for five years, but it was in the very early stages of their romance that Steffano told Terri-Anne that one day they would work together. When Steffano decided to take a years sabbatical, he and his new bride set off to Paris for a year. From there it was on to Italy and Tokyo and many other destinations. It was during this time and though he hadn’t yet realised it, the vision was taking shape. The couple spent many leisurely hours in coffee shops and cafes in Europe and the seed was planted. After a job opportunity that was not realised, the couple left Johannesburg and set up home in Durban, Terri-Anne’s home town. A chance meeting with the owner at the Antique Cafe back in 2012, while having a cup of coffee saw her offering the business for sale and this was the beginning of the dream come true. Steffano immediately got on the phone to Terri-Anne and said “This is it, remember, I told you we would one day work together? We’re about to

do it” And so began a year of building and restoring but what started as an antique shop with a small coffee shop has evolved into a coffee shop with everything else attached, such is the appeal of the quaint ,European styled cafe. Steffano and Terri-Anne, have an old school approach to the business. Steffano buys everything for the coffee shop, fresh,daily...he personally, goes to the markets and chooses the best ingredients for the day. There is no freezer in sight, he does not believe in frozen food. I particularly loved that the meals are served with vintage crockery and cutlery. Terri-Anne is very involved in the fashion side and carefully selects what items and labels both vintage and current will be available. They are both quick to remind me that the Antique Cafe is a constant work in progress. But from what I have seen it is just perfect.

The three building complex now includes an on site bakery, the antique shop, the coffee shop, the fashion outlets, and the newest addition, the wine cellar which boasts some of the most unusual and rare wines in the country, like the L’Ormarins Cabernet Sauvignon

1989 and the Fleur du Cap Cabernet Sauvignon 1989. For this project Steffano teamed up with Peter Clark owner of Domain Des Dieux and La Vierge wine estates and together they designed and built the cellar. In October 2013, the cafe held its first wine tasting and with little or no advertising it was oversold and had customers clamouring for more. The wines tastings will now be held once a month but you would have to either visit or call the store to know when exactly it will be. Think Paris or Italy that is what Steffano says when you ask him of his vision for the Antique

Cafe. You can enjoy your meal to the gentle sounds of French Classical music or there is a piano and a guitar available and any musician can come in and play the instruments, reminiscent of the Cafe de Artiste’s in Paris. Whilst I was there a gentleman came in and began playing the most beautiful music on the piano. The clientele of this special place are as eclectic as the venue itself, from the young and trendy creative types to young moms doing the school rounds to the grannies out for tea. The Antique Cafe is definitely very European in feel and certainly attracts its share of foreign visitors. This is one cafe that is well worth a visit for attentive service, delicious food and perfect ambience. Each visit will surprise and delight you in new ways. You can spend an entire morning browsing the collectibles, enjoying the beautifully fragrant water which is served in vintage glasses or just soaking up the atmosphere.

We all know winemaking is an art but gone are the days where it was preserved for males who seemed to speak in a language that the rest of us could not understand. Enter the female winemaker. We spoke to one of the young ladies who together with a few others are breaking new ground in this area. Lauren Snyman is the new, young wine maker at Le Bonheur and she is relishing the experience. According to Lauren, the wine industry is filling up with the ladies and over the past eight years that she has been in the industry she has seen more and more entering the field. The guys in the industry take it in their stride and Lauren says they are always willing to help or advise where necessary and the balance makes it a pleasure to be a part of the wonderful world of wine. We asked Lauren how and why she chose winemaking as a career?

“I started studying a BSc - Chemistry at the US, towards the end of my first year I realized I didn’t want to spend the rest of my career in a Lab. So my dad suggested winemaking, I never knew you could study wine, and my friend’s father who was winemaker at Koopmanskloof gave me great inspiration. In my second year I started studying wine, and never looked back. “

“And I am still learning, things change every day!” Sakkie Kotze, a Wise Man, is Lauren’s description and whom she affectionately refers to as ‘Oom’ was the Winemaker and Estate manager for 20 years and contributed greatly to the success of the very popular Le Bonheur wines. Lauren had the privilege of harvesting with him in 2013 and though he has retired he still pops in every now and then. Lauren’s favourite cultivars to work with are: Sauvignon Blanc and Cabernet Sauvignon as she finds these challenging So far, the 2014 harvest at Le Bonheur looks good and as Lauren says the wines show for themselves and the terroir of Le Bonheur lends itself to excellent wines, so if nothing changes, (weather, disease etc) look out for the next award winning wines from the vineyard made by the beautiful Lauren Snyman. She is excited to take the brand to new heights and make her own mark on the label with her own personal touch, but, without changing the style too much. Lauren is truly passionate about what she does and draws inspiration from everything related to winemaking, from the people she

works with, the people she meets , being outside in nature and getting to experience the mountains, the owls and even the caracals. In fact, Lauren says, the adrenalin of ‘harvest’ alone can feed her passion. Though it is the most tiring time of the year, it is also the most amazing, your every emotion is tested but the reward is so sweet you cannot wait to get back and do it all again. Describe a normal day of a winemaker, we ask Lauren, and she replies, “ What is normal? I haven’t experienced a normal day, every day is different....and I wouldn’t have it any other way, I think once a day is ‘normal’ my passion may just die”

Lauren also shared some hints and tips for anyone considering winemaking as a career: 1. Firstly, know it is hard working, hands on, and you do get dirty.

2. I never wanted to be an account, but you

must balance your stock sheets in this industry. Winemaking is not just in the cellar - there is a financial aspect as well ie. Budgeting/costs/ sales/ farming and many other aspects and yes, you need good social skills as well.

3.

You must be able to accept criticism, this is a big industry, there are loads of wines to choose from and things can go wrong.

Did You Know? The piece of equipment to take wine out of a barrel - is known as a “Wine Thief” The farm Le Bonheur means “Happiness” and dates back to the 1700’s. It is 163ha big, of which 70ha are under vine. Roughly 600 tons are harvested each year. The cultivars include: Merlot, Cabernet sauvignon, cabernet franc, Chardonnay and Sauvignon blanc (the main varietals), but there is also Shiraz, Petit verdot and Viognier.

BUT!!! It is also rewarding - “it makes me happy when someone is enjoying a glass of wine that I made” Or when you have had a difficult harvest and you think the wine is going to be bad... and then 8 months later you taste it from the VAT and it is beautiful. Even though both Lauren and her husband, Hartmut hardly get to celebrate Valentines day as they are both so busy, she shares with us how she would like to spend the day: I would pack a picnic, with a blanket, head for the grass patch under the trees at Le Bonheur Wine Estate. In my picnic basket there would be: Le Bonheur Sauvignon blanc, to pair with “Asparagus Quiche”, cucumber salad with Smoked salmon; Le Bonheur Cabernet sauvignon to pair with smoked gouda slices and toasted almonds and of course to end off with a dessert, Fresh Cherry pie with dark chocolate sauce. Experience fine cool climate wines amidst sunkissed vineyards at the newly upgraded Constantia Glen tasting room this summer. Carrying the signature of sought after South African interior designer, Graham Viney, the stylishly refurbished tasting room is a fusion of European and Cape design. Taking his cues from what already existed on the site, Viney has transformed the former stables and cow byre into light, eclectic spaces featuring a chic contemporary wine bar. Fresh design elements include Cape Georgian cellar doors with their klompie brick surrounds, spaansriet ceilings and a great cast iron pavilion created out of the juncture of three verandahs. Arts and Crafts inspired chandeliers hark back to the stable origins, whilst pale French oak and raffia lamps are enliven by splashes of vibrant earthy oranges and animal prints interspersed with miniature washboard surfaced coffee tables. MIXING WITH

Summer is fast approaching and that means one thing, cocktail bars will soon be teeming with trendy, young revellers looking for this season’s hottest new cocktail. And they may just find it, in an unexpected place. Fortified wines like those from South African producer MONIS, are lining up to be the next big thing, and they are definitely onto something. MONIS produces three Sherry-style fortified wines, namely, Pale Dry, Medium Cream and Full Cream, which have become favourites in South African households, bars and restaurants alike. Now Monis is embarking on a journey to bring the growing trend of fortified cocktails to the South African market. All over the world, from the high streets of London to New York’s trendy boroughs, we are experiencing a revival of fortified cocktails involving sherry-style cocktail mixers. We say revival, because while Sherry-based cocktails might be something new to the South African market, they enjoy a long history as a great mixer. During the 19th century fortified wines, including sherry and port, were extremely popular cocktail ingredients, popping up in all sorts of drinks, including Shrubs, Flips, Possets and Cobblers. In fact, in the 1888 edition of his Bartenders’ Manual, Harry Johnson described the Sherry Cobbler as “without doubt the most popular beverage in the country.” So why is the world of fortified cocktails experiencing a 21st Century revival? As Ryan Duvenage from Barcode Bespoke Bar Services, a national mixology company, explains “Sherry is comparatively low in alcohol, when placed next to the spirits usually used in cocktails. This means that it’s particularly well suited to South African summers. In the heat people want a drink that is refreshing and Sherry cocktails provide this balance between alcohol level and refreshment.” He continues, “It’s more than just another arrow in the quiver of local bartenders and mixologists, it’s a drink that is uniquely suited to the South African climate and provides a credible alternative to the spirit-based cocktails that have become standard fare at bars and lounges.” It is in line with these international trends that MONIS recently engaged Barcode to develop a range of signature drinks, which could help bring the world of Fortified Cocktails to life. The cocktails range from the blissfully simple, such as Pale Dry topped off with Dry Lemon and a twist, to the palate-challenging complexity of Pale Dry & Full Cream as well as Drambuie, Absinthe and Bitters. We’ve already spoken about the historical popularity of the Sherry Cobbler and this cocktail follows the maxim, “if it ain’t broke, don’t fix it.” This classic cocktail is prepared by muddling the orange and lemon before adding the other ingredients and shaking vigorously. Confit of Duck

with roasted autumn Baby Vegetables and Hasselback Potatoes

Yield 4 portions

Baby Vegetables

Ingredients 4 x Duck leg/thigh portions 4 Tbl Sea salt 10 x Garlic cloves 4 x Bay leaves 4 x Sprigs of fresh thyme 1 tsp Black peppercorns 1L Olive Oil

Yield 4 portions

Method Sprinkle duck portions with sea salt and refrigerate for 12 hours. Rinse in cold water and pat dry. In an oven proof dish, sprinkle bottom with salt and add the garlic, bay leaves, thyme and peppercorns. Cover with olive oil. Bake in oven at 100°C for 12 – 14 hours.

Ingredients 8 Baby carrots 1 Fennel bulbs, each cut into 8 wedges 1 x Red onions, each cut into 8 wedges. Leaving root attached ½ x Small butternut 25ml Olive oil Salt and pepper to taste Method Blanch carrots, fennel and onion. Refresh in cold water. Roast butternut till cooked. To order, coat all vegetables in olive oil and roast at 200°C until hot. Hasselback Potatoes Yield 4 portions Ingredients 12 x Baby potatoes 60ml Olive oil 2 x Sprigs of thyme 1 x Clove sliced garlic Sea salt Method Put potato on a spoon and cut slits into the potato. Insert the sliced garlic into the slits and coat with olive oil Roast at 180°C until golden brown Add sliced thyme to garnish.

Indulgence Indulgence head chef, Derek Moore (38), always had a love of food. His biggest motivations in life that are still with him to this day are honesty in the preparation of food, cooking with love and care and to constantly be passionate. Derek was born in Worcester, Western Cape. In 1999 he began his travels where he spent time in Central and Southern America, Switzerland and then settling in the United Kingdom where he recieved his first job as a chef at a French bistro, Wirksworth, which won the best Country Style Newcomer award. Upon his return to South Africa, Derek completed a course at the SA Chefs Academy in Cape Town where he trained in the French classics. He was then offered the opportunity to work at The Twelve Apostles as a chef. Now Derek is the Head Chef at Indulge, a sophisticated boutique restaurant which offers a touch of fine dining combined with excellent service and delicious food. Derek puts a personal touch on everything that he creates. Although not her full-time vocation, she worked with some of the biggest names in feature films as a private chef, creating special private dinners, cooking for corporate events as well as close friends and family. Not naming any names there is a reason for her Larder style benedict is called Johnny Depp. Her style is a melting pot of the best flavours, she has encountered in the places she visited and lived in around the world – from Cape Town to Sydney, London, New York, Europe, Thailand, and Hong Kong. When Block & Chisel approached her to take over their café, she was living in London, and made the immediate decision to return. She has always loved café’s with soul – places where you feel at home and treated like a friend. She wanted to create a homely space - slippers/pantoffels are welcome, she says - offering the most delicious ingredients for your plate from producers who are passionate about their products and what they do.

SonjaEdridge She returned almost 2 years from London to start on her own café, The Larder. After graduating, and a summer in Tuscany, cooking in Castello di Montepò for Italian nobility, foodie elites and visitors from the Vatican, Sonja Edridge returned to London to enter the world of television, working on Channel 4’s Light Lunch and The ItalianKitchen, with Rose Gray and Ruth Rogers. She then helped to launch Delia Smith’s website, Delia Online. Next, she worked as a food editor for supermarket magazines such as Waitrose, Sainsbury’s and Marks & Spencer, after which she became a freelance food stylist, writer and recipe developer for numerous publications, cookbooks, television commercials and packaging shoots, working with fabulous food photographers, authors and stylists from around the globe. Shooting regularly with Jonathan Lovekin, Nigel Slater’s partner in crime as well as David Loftus, Jamie Oliver’s no 1.

She works with the seasons, changing the menu depending on what her carefully chosen farmers are harvesting and only using local and freerange meats. The food is real and honest and, where possible, made on site. And naturally, with good food comes good coffee. The Larder is starting beautifully simple, with a small menu ("so much easier to choose", she adds) and a few shelves of interesting and unusual goodies for your larder. If those who visit love the jams in their scones, they can buy a jar on the way out. And she doesn't stop there. In time, they plan to make homemade meals, as well as a catering service too.

BANANA, CHOCOLATE & CARDAMOM LOAF A delicious twist on the usual! Make sure to use extra ripe bananas Prep time 10 minutes plus 15 minutes to ice Cook time 30-35 minutes Makes 2 loaves

INGREDIENTS 125g unsalted butter, softened 150g dark brown sugar 4 ripe bananas, mashed 2 large eggs, beaten 250g self raising flour ½ tsp baking powder 1 tsp cinnamon 5 cardamom pods, pods removed & seeds crushed 50g dark chocolate, chopped To decorate 200g chocolate, chopped 200ml double cream 50g pistachios, chopped

METHOD Heat the oven to 180C,160F, gas mark 4. Grease 2 small loaf tins and line the base with greaseproof paper. Beat the butter and sugar with an electric beater for 5 minutes until thick and creamy. Mix in the bananas with the egg, a little at a time. Sift in all the dry ingredients and fold together. Then stir in the chocolate. Pour into tins and bake for 30-35 minutes until springy and a skewer comes out clean. Allow to cool before icing & slicing
