his month we all know is Mother’s Day so we’ve taken the opportunity to salute all mothers, would be mothers and soon to be mothers by calling this issue Sister Act, as a tribute to the amazing women around the country from all walks of life doing incredible things, juggling careers, growing careers and paving the way for women everywhere, showing us all that anything and everything is possible, with balance and focus. And that yes, this can all be done in stilettos. We introduce the gorgeous Arabella Latham , high school musical sensation that is breaking barriers whilst being a star student as school. We showcase the incredible talent of Russian born fashion designer and mother of two Larisa Terblanche who has conquered the South African fashion scene and we salute media personality Ramona Kasavan whose passion and commitment to the cause of the ‘girl child’ has resulted in the outstanding social achievement, Happy Days. We also visit Johannesburg and see it with fresh eyes, we hope that after reading this edition, you do too. It serves as a reminder of the many changes our country has experienced and still continues to go through, but in a positive way. We loved this visit to Egoli and seeing the transformation has happily changed our perspective of our busiest city.

Whilst the style of these items will need needs to be current but not too fashion forward. Your mom doesn’t want to come across as dressed too young. On the opposite end of the scale, I think of my 14yr old daughter, who often asks to borrow some of my shoes, since they are the only items as a huge compliment, but am mindful of the fact that they may be a little inappropriate for her age. First off she looks a lot younger and she is extremely petite. It’s just as bad her wobbling in grown up heels as it is me trying to carry off a crop top at the age of 40! Whether it’s the vintage coat that makes a comeback, or a pair of jeans that are shared, the most important thing is to enjoy this special time as mother and daughter, as time ticks by so fast!

SA Fashion Week was recently held in Johannesburg and as always the young designers from KZN held their own to critical acclaim. Amongst others was Casey-Jeanne Walters and Thembeka Vilakazi whom we introduced to you with the ‘21 Steps To Retail Programme’ held by the KZN Fashion Council. Another young star was Larisa Terblanche. Soft spoken and extremely talented, this young mother of two made waves with her Spring/Summer 2014 collection.

Originally from Russia, Larisa’s love for fashion began at an early age. But not only was she in love with the way clothes ‘looked’ on the body she was very interested in their shape and form. Larisa was born in Yoshkar Ola a town 800km from Moscow and studied fashion design in her hometown at one of the most prestigous universities for 6 years, passing with distinctions. One of the subjects was anatomy which she enjoyed as it allowed her to perceive design from the shape and structure of a person’s body

When Larisa came to South Africa about 9 years ago it was a bit of a challenge as not only was the language different but she soon discovered that Russian style varies greatly from South African. Also, in Russia, weddings at the time were not as big a deal as they are here and her love for wedding gown design soon began to grow as it allowed her to explore her creativity whilst creating something unique and individual for each client. She was exposed to a wider selection of fabrics including lace which she loves working with. When Larisa was selected for the “21 Steps to Retail” programme it changed the way she saw her business and she realised that it was now time for brand building. The intensive 2 mth programme which included having to complete a business plan as well as designing a collection was challenging with two small children but her drive and determination saw Larisa excel and gained her a spot at SA Fashion Week Autumn/Winter Collection 2013. Since then it has been a rollercoaster ride with word of Larisa’s innovative approach on the lips of fashionistas all around the country. The sheer joy of showing at SA Fashion Week and the adrenaline rush that came with it was like ‘being in Disneyland’. Having been 15 years in the fashion industry Larisa has developed her

her client base grow throughout the country and Johannesburg or Cape Town. She expresses her gratitude to the KZN Fashion Council for recognising her talent and she adds that she has huge respect for them and what they’re doing for fashion in the province.


Always seeking to improve, Larisa continues to study in order to stay abreast of current trends and her future goal is to have her own Larisa Moda Couture store where her beautifully crafted garments will be available for all to own. Larisa especially loves the ‘shift dress’ which I guess you could say, is her signature look, as it is ‘elegant, classy and be dressed up or down. It also suits almost every body type. She is a huge fan of Carolina Herrera and Donna Karan and hopes that her name too, will one day be synonomous with quality craftsmanship, in the way that when you hear those names, you instantly get a picture of the brand. Larisa’s husband Danie, a civil engineer, is supportive of her career and assisted her in become a thriving business. Her two daughters Liana (8) and Darina (3) are the light of their talented mom’s eye and Larisa’s face lights up when she speaks of her family. She says occasions like birthdays and Mother’s Day are a big deal in her home and she’s looking forward to a wonderful Mother’s Day celebration...if her birthday was anything to go by (the girls sent mom on a treasure hunt complete with treasure

Vivacious entrepreneur, Karen McIntosh, is the inspiration behind the Miss K Ice Cream Food brand, although she is very much part of a dynamic team with her mom, Di Neethling. ‘’My mom and I worked together some years back in a biological pest control business which was later bought out by BASF, a large international corporation’’, explains Karen. ‘’We both have a heart to spend our time on something worthwhile and leave a legacy – no matter how small’’, continues Karen. ‘’If you truly believe in what you are doing, all the hard work is worth it’’, is a motto by which the duo live. Now, I’m not a stranger to

Johannesburg, my two sisters live there and so did my brother for many years. Normally, it’s getting picked up at the airport by family and spending the time just catching up or doing family things. I’ve made the trip at least four times a year for many years but this time was different.

On arrival I decided that I was going to use the Gautrain loved it. The convenience and ease of use has me sold. Got off in Rosebank As I took the short stroll down to my hotel, it suddenly occurred to me that I could be in any city in the world, I was a ‘tourist’ in my own country. Walking down the road, reminded me of when my hubby and I got off the airport bus in Paris and did the same thing.

The tree lined roads in the heart of bustling Rosebank offered a cooling shade and when I stopped to double check that I was going in the right direction, I was not hesitant at all to ask.

Feeling completely at ease, I found my destination in under 10 minutes, all of this in stilettos, pulling my suitcase and lugging my overstuffed handbag. How continental I thought to myself, sore feet and all.

As I entered the hotel, the sumptuous 54 on Bath, the thought that I should look at Jo’burg with fresh eyes began to stir. A few days later, the thought became an idea to share Jozi from a different point of view.

As with many South Africans, we often see Jo’burg as the place to go and carve a name for yourself but your soul always stays in your city of birth.

We see it as busy, bustling and crime ridden, and I’m sure all of those elements are there but the transformation of the city far overshadows the negatives. So being there for just 4 days, I asked myself, if I were to tell someone visiting Egoli it be....

I arrived on a Thursday, so there is no choice really, it just had to be Now many of you probably have already been or heard of it, but those of you who haven’t, Katzy’s has become a Thursday night institution, for both locals and everybody else that has adopted Jozi as their home. Always packed, always great music, the resident band for as long as I can remember has been Dr. Victor & The Rasta Rebels.

Wander around the collectibles stores, relax under the shade of a tree whilst sipping on your drink or enjoy a bite to eat at Salvation Cafe or Vovo Telo or any of the stunning eating places on offer, 44 on Stanley list of places to visit. A great place for a spot of ‘people watching’. I’m told that at night the beer garden is the ‘place to be’ , so there is something for everyone from the ‘hip and happening’ to the shopaholic.

For afternoon sundowners, there is no other place on a Friday than the pool deck at the Southern Sun Hyde Park hotel. We sat here for a while from around 2pm, catching up on emails and it was relatively quiet. Come 430pm and suddenly there wasn’t a free chair to be found.

Now I love music, and most especially jazz, so off I went to Orbit Jazz Bar at 81 De Korte Street and believe me if you’re a jazz lover, this is where you will fall in love. Downstairs is the bistro and upstairs the theatre. What makes Orbit special is the commitment to the development and promotion of the performing arts. You will often performing here during the day. It gives young artists a platform to showcase their talents in a professional environment. A great evening out.

Saturday, well there is no other place than the Neighbourgoods Market. Hectically busy, completely eclectic and nestled in the heart of Braamfontein, a visit to the market is enough to give you an idea of the bigger picture. Johannesburg has transformed and continues to do so.

Not too far from the market is The Beach, set on a roof top complete with sea sand and beach umbrellas, a novel way to work on your tan and sip a cocktail, right in the heart of the city.

Also, quite close by is Kitcheners, its the second oldest bar in the city, not the fanciest but certainly extremely popular.

I actually wondered what made it so special, since it really isn’t the most attractive place, the decor is by no means anything to talk about but I’m told that their events are quite something and when it turns into a ‘nite club’ at night it is quite the spot to be. Not forgetting that the ultra chic, super exclusive Randlords is also located in this area. At the highest point of Braamfontein in South Point Towers with a panoramic 360 this ultimate destination of sophistication. Randlords is only open to the publice on event days so make sure you get on that list.

Arguably, the most famous street in Soweto, it is also where 13-year-old Hector Pieterson was shot, sparking the riots of June 1976 and his memorial is also nearby.

Mandela House, now a museum can be found at the corner of Vilakazi and Ngakane Streets. Taking on the atmosphere of a boulevard with benches dotted along the road and vendors plying their trade, a stroll or bike ride along the street makes for a great afternoon out whilst soaking up a bit of history, but perhaps what makes Vilakazi Street so amazing is the proof that extraordinary things can happen to ordinary people from simple and ordinary beginnings.

Tomato dehydrated, pickled and essence, tarragon, gin, cucumber and cow milk curd Serves 4

Dehydrated Purple Russian tomatoes 4 Purple Russian tomatoes 5g Maldon Salt Cut tomatoes in half horizontally and place on a dehydrator or oven pan. Set the dehydrator at 68’C and dehydrate for 3 hours. Keep aside till ready to use.

Pickled Yellow tomatoes 4 Yellow Tomatoes 50ml Sherry Vinegar 15g Sugar 100ml Water 1 sprig Tarragon Pinch of salt Make a small incision on the top of the tomatoes. Blanch in boiling water for 15 seconds and then plunge into ice water to remove the skin. Bring the ingredients for the pickle to the boil. Take off the heat and leave to cool. Pour over the yellow tomatoes and leave to pickle for 2 hours. Tomato essence 10 Plum Tomatoes 1 Cucumber 5g Tarragon, chopped 10g Salt Cut the tomatoes roughly and place in a bowl. Peel the cucumber and cut roughly; mix with the tomatoes. Add the tarragon and the salt and place all the ingredients into a muslin bag. Tie the bag tightly at the base to create pressure to push the tomato water out. Hang the bag overnight over a container in the fridge. The next day discard the bag and reserve the tomato essence.


Tomato tartar 1 Plum tomato 1 teaspoon tarragon, chopped Pinch of salt Peel the plum tomato the same way as the yellow tomatoes. Cut into quarters and scrape out the seeds. Chop the essence to the other tomato essence. Place the tartar in a container for later use. Cucumber squares and ribbons 1 Cucumber 15g Parsley Pinch of salt Peel the cucumber with a speed peeler to get 4 nice equal ribbons, reserve for later use. Proceed to peel the rest of the green skin off the cucumber and keep the peelings. Cut the sides off the cucumber to remove the seeds, add the seeds to the peelings. Using the thickest part of the cucumber sides cut 8 equal squares 1cmx1cm. If you have a vacuum sealer than place the cucumber squares into a vacuum bag. Juice the remaining cucumber and the parsley through a juicer and add to the vacuum bag. Compress the cucumber with the juice and leave to marinade for 1 hour. If you don’t have either one of the machines just use the cucumber in its natural state.

1 lt Milk 60 ml yoghurt 15 ml lemon juice Boil the milk, remove from the heat when it foams, stir in the yoghurt and lemon juice. The curds will begin to solidify and separate from the whey. Pour contents into sieve lined with muslin, drain curds into a cloth/ Wrap cloth and squeeze out liquid whey. Weigh down with a heavy weight for 6-8 hours. Unwrap and cut roll into balls. To serve Arrange everything neatly in the centre of the place. Pour in the essence and garnish with extra tarragon and some basil shoots. Sprinkle some volcanic black salt onto the pickled yellow tomato. Serve at room temperature. 65

Method Roughly chop and slice all the mushrooms. Start by sautĂŠing the mushrooms with the chopped garlic in some oil and butter. Once all the water has reduced, add some Italian white wine. When all the wine has evaporated add the cream. Let the sauce reduce to a fairly thick consistency. Add salt and pepper to taste.

Agnnolotti Alla Masaia Assembling the whole dish On the stove over high heat bring a pot of water to boil. Add a pinch of salt to the water. Once the water is rapidly boiling put your agnolotti’s in the water to cook. Let them cook for about 5min or until the pasta is soft. In a sauce pan add your Masaia sauce and warm up. When pasta is cooked add it to the sauce. parmesan. Check salt and pepper and adjust if necessary. Serve on a plate with parmigiano, fresh basil and small cubed tomatoes as garnish.

Classic Italian Tiramisu’ Ingredients for 5 Portions: 5 Boudoir Biscuits ( for crushing ) Cocoa Powder Strawberries 1 Orange 1 Can Tinned Baby Apples Icing Sugar

3 Large Eggs ( Separated ) 66g Sugar 250g Mascarpone Cheese 5ml Vanilla Essence 1 Double Espresso 10 Boudoir Biscuits Method:

1. Slice the orange into paper thin slices. Place on a silicone mat on a baking tray and sprinkle generously with icing sugar

3. Whisk the egg yolk with 45g sugar until pale 3. Add the mascarpone cheese and the vanilla essence and continue to whisk until thick 4. In a different bowl whisk the egg whites and 21g sugar together until they form stiff peaks 5. Fold the egg white mixture into the mascarpone mixture 6. Place a little bit of crushed biscuits into the bottom of your glass 7. Spoon some mixture over the crushed biscuits 8. Break your boudoir biscuits into the correct sizes for the glass

10. Pack one layer of boudoir biscuits over the mixture in your glass 11. Carry on layering mixture then biscuits until your glass is full. It should take two layers of biscuits. End off with mixture on top 12. Leave your tiramisu’ to set in the fridge for about an hour 13. Once set dust the top with cocoa powder 14. Cut your strawberry in half length width but not all the way through so that you can “fan” the strawberry 15. Sprinkle the strawberry with icing sugar 16. Natal bushpig wellington with charred red pepper sauce, oyster mushrooms and roast winter vegetables. Bushpig, in my opinion, has to rate as one of the tastiest venison meats. In Kwa-Zulu Natal, we are lucky to be able to acquire this meat most of the time, although it is generally easier to come by in the winter months. I decided to share this recipe now as it is applicable to the season we’re heading into and it is hearty, warming and most satisfying! This recipe can be adjusted to replace the bushpig with beef, lamb or a different venison entirely.Generally, store-bought puff pastry works just as well as home-made and often one cannot taste the difference if it’s a good quality pastry.

Recipe: Serves 2 – 3 people To replicate this dish, you will need: Wellington: 1 Bushpig Fillet 100g Chicken Or Lambs Livers 20g Macadamia Nuts 100g Button Mushrooms Chopped Up 2 Sprigs Of Thyme 1 Sheet Of Store-bought Puff Pastry (If you want to make it from scratch see below) Seasoning (salt and white pepper)

Pour some olive oil into a pan and allow it to get very hot. Lightly season and briskly seal the meat all around in the hot pan. Leave to rest. Place the livers and the mushrooms into the same pan and turn until just cooked. Remove, add the nuts, thyme leaves and some seasoning then blitz in a food processor until you have a nice, spreadable pâté. Leave the pastry to thaw and then roll it out and place enough pâté on

the pastry and pâté around the meat. Crimp the join by hand and place it seal-side down on a greased oven tray. Brush the pastry lightly with egg up.


Vegetables: Beetroot Cut Into Wedges Fresh Brussel Sprouts Baby Carrots Pearl or Pickling Onions Out In Half 50ml Balsamic Vinegar 50ml Extra Virgin Olive oil 20ml Honey 2 Sprigs Of Rosemary Salt And Black Pepper Place all the vegetables into an oven tray and dress with the olive oil, balsamic, honey, rosemary and seasoning. Roast at 180°c until soft and browned, turning occasionally. Sauce: 4 Red Peppers Cut Into Flat Pieces With Seeds And Pith Removed 5 Whole Cloves Of Garlic (skin still on) Salt And White Pepper Olive Oil Place the peppers skin side up with the garlic cloves on an oven tray and roast on the highest possible heat until completely softened, blackened and blistered. Take the peppers out of the oven and immediately place them in a them to steam. If you don’t have cling top of the bowl; you just want to seal in the heat. Remove the skins from the garlic cloves; this should be very easy and the garlic will be soft and sweet inside. Remove the cover once cooled and peel the skins off the red peppers; they too should come off easily. Place the peppers, garlic and seasoning into a food processor and blitz. Slowly add olive oil until the consistency becomes a sauce. Put it together: Pan fry the oyster mushrooms in a hot pan with olive oil; add a little salt and pepper. Roast the wellington in a hot oven until the pastry is cooked. Remove, rest and slice. Plate the dish and serve. Guaranteed to impress. 75

Honey and Nougat Parfait with berry coulis Ingredients: 250g Cream 50g Water 50g Honey 1 Small Piece Of Nougat, (I used cranberry and almond) 4 Egg Yolks Method: Makes 4 - 6 individual parfaits depending on the mould size. I used 7cm metal rings with cling wrap over one end.
