October is a month of many faces: First and foremost, breast cancer awareness which has been on-going since its inception in 1992 by Alexandra Penney and Evelyn H. Lauder, who also founded the BC Research Foundation in ‘93 that has raised over $315 million since then, saving countless lives and nearly eradicating this disease. Secondly, it’s Halloween - that everso-exciting holiday where kids get to go trick or treating, sometimes to their parents’ dismay, and adults get to dress up in all sorts of costumes deemed to be childish otherwise. Thirdly, it’s also the official start of autumn - the most romantic season of all. And finally, it’s the joyous occasion of Eid - Eid Mubarak to all! With such a happening month, Dazzle got busy putting everything October together for you. Growing up in Memphis, Tennessee, Hale adored Faith Hill and Shania Twain, performed two Martina McBride songs during a talent competition at Loretta Lynn’s Ranch in Hurricane Mills and ultimately left for Los Angeles to seek success as a singer.

Maybe if she’d gone to Nashville instead, she wouldn’t have wound up a TV celebrity first. But as her debut album demonstrates, it was only a matter of time before she found her way back onto the musical track. 6 Ways To Find Inner

Peace

Most of us get so tangled up in life’s trials and tribulations that we end up drowning in a pool of stress and unhappiness. We drain ourselves emotionally and physically day after day without realising that it doesn’t have to be this way. The key to dealing with any of life’s problems is to find inner peace, one that naturally keeps your mind, body, and soul happy and healthy. Here are six easy ways to find peace in life and keep it forever: 1. Release Your Emotional Baggage The first step to finding inner peace is to let go of your emotional baggage so you can feel light, healthy, vibrant, and free. Emotional baggage comes in different forms and intensities, the most common ones being guilt, shame, or regret for past mistakes, insecurities, body image problems, and distorted beliefs about yourself. According to Hameeda Harb, a self-help coach in Jeddah, emotional baggage of any sort is damaging to your health, and not being able to offload it can cost you a blissful, stress-free life. She explains, “Inner peace is all about loving yourself, and unless you let go of all your self-deprecating emotions and beliefs, you’ll never be able to appreciate who you are as a person.” 2. Surround Yourself With Peace The environment we live in has a profound effect on our inner peace. That’s why you feel dull and depressed in rooms with little sunlight, and more alert

and cheerful in naturally well-lit spaces. Abir Omar, an interior designer in Jeddah, says that you can create a tranquil environment in your home through simple decoration methods. “Psychologists have long noticed that certain colours and decorative pieces help in creating an environment conducive to peace,” she explains. “All pastel colours and various shades of blue add a subtle yet effective hint of serenity, while white brings with it light and purity. Moreover, water fountains, plants, flowers, candles, and paintings also add a sense of calm and peace.” 3. Revive Your Mind, Body, and Soul Cleanse and connect your mind, body, and soul by meditating regularly. “Meditation isn’t only relaxation, it’s a way of life and an important aspect of attaining inner peace,” comments Lara Adrian, a meditation teacher in Jeddah. According to her, meditation enables you to clear away all the petty thoughts, and to get to your deeper subconscious mind to deal with problems. “This

accelerates your pace towards achieving peace as it vitalizes you physically, mentally, and spiritually.” Meditating just for five minutes a day is “more than enough,” she adds. “Just sit with your back straight, rest your eyes comfortably downwards, and let your breathing become deep and rhythmic. This simple exercise will calm your mind greatly.” 4. Keep Learning Much of the stress we face in life comes from the fact that we always worry about not having all the answers. But just accepting that you don’t know everything, and that you’re willing to always keep learning, is a tremendous step towards achieving peace within yourself. Harb concurs, “When you look at life as a journey of never-ending learning, you’ll become much more content with what you are and what you have, and you’ll eventually start experiencing true, unconditional bliss.” 5. Control Your Thoughts Our state of mind depends on our thoughts. If you constantly


occupy your mind with negative and destructive thoughts, inner peace will always remain a far cry. Thus, it’s very important that you control harmful thoughts and replace them with healthy ones. Harb adds, “Mastering your mind isn’t easy, but always remember that it’s your brain and you ultimately control what happens in it. Whenever a thought gives you a negative feeling, replace it with something that makes you happy. The more you do this, the more positive and peaceful you’ll feel.” 6. Live In The Moment The biggest obstacle to obtaining peace within yourself is the constant anxiety your past and future cause you. When you place so much importance on what has happened or what might happen, you forget to experience the joy of right now, which is free from problems and concerns. “There’s only stillness in the present moment, and it’s within this stillness that you can uncover real tranquillity,” says Harb. “So forget what happened yesterday, stop worrying about tomorrow, and just be happy with what you have today.”

Dr. Samah Fadali, a practicing psychologist in Jeddah, elaborates, “Optimistic people exude positivity, hopefulness, and happiness, and we feel

a sense of comfort whenever we’re with them.” Your chirpy friend can also boost your physical health, according to Dr. Hilary A. Tindle, Assistant Professor of Medicine at Pittsburgh University. “Research shows that women who have strong positive influence in their lives have stronger immune systems, making

them less susceptible to illnesses,” she explains. “They’re also less likely to die of a heart attack.” 2. Workout Buddy She’ll make sure you stick to your fitness regime no matter what. She’ll motivate you to go to the gym, push you to exercise harder, and celebrate your success


like it’s her own. Ghaida Sulaiman, a personal trainer at a women’s gym in Jeddah, agrees, “Having someone you can laugh with and exercise with is amazing. Your buddy and you won’t even realise how much effort you’re actually putting into exercising, and before you know it, you’ll start seeing noticeable results. Plus, there’s also a great deal of healthy competition when you exercise with a friend, and that’s an excellent way to stimulate and maintain motivation at the gym.” 3. Childhood Buddy She knew you when you were a boy-crazy, acneinfested 16-year-old – and she still loves you. “Close friends from our childhood remind us that we’re still the

same person we’ve always been. It makes us feel that we’re loved for exactly who we are, and this improves our self-image and self-care,” says Todd Jackson, PhD, author of a recent study linking high levels of social support with healthier diet, regular exercise, and better sleep habits. “We begin to value ourselves more and feel confident, and as a result, we take better care of ourselves by making healthier lifestyle choices.” 4. Empathetic Buddy Whether you have work problems or serious illness issues in the family, she understands your pain because she went through the same dilemma. “Such friends are great in times of crisis because they relate to your fears and concerns, and they can help you deal better with the problem,” says Jackson. “Moreover, having such a strong support will help you heal quickly, make you feel less vulnerable, and give you more control over your emotions.” 5. the one who lends a shoulder to cry on every time you’re upset, and according to Dr. Fadali, she’s the reason why you’re still sane. “Having someone you can always turn to is great for your emotional health,” she says. “When you share your emotions with someone you trust and value, the level of tension reduces in your body, and you feel less stressed. It also promotes better sleep, relaxes muscles, and reduces the risk of cardiovascular diseases, depression, and high blood pressure.” 6. New Buddy She’s like a breath of fresh air – she has no preconceived notions about you, giving you the freedom to explore new facets of your personality. “New friends ignite different kinds of thinking and new ways of being,” explains Dr. Fadali. “And it’s always good for your mental and physical health to do something out of the ordinary. Being Your Own Boss Being your own boss - getting your freelance or small business off the ground…

Today, there are many new tools to get you started on the right track, but they are still based on tried and true principles: Network: There’s no such thing as too much networking. “Start with your immediate network,” says Shawn O’Mara, senior partner at design firm OCreations, who earned his associate of applied science degree in Visual Communications from The Art Institute of Pittsburgh in 1991. “Do you have an uncle who owns a pizza shop? Offer to create a new logo for him. The money doesn’t matter as much when you’re first starting out; you need to concentrate on building your portfolio.” Build Your Portfolio: Another great way to build your portfolio is to contact non-profit organizations. “Non-profits usually don’t have a large budget, so if you offer to do the work at a reduced rate, you’ll get

the experience,” says Dana Melvin, director of career services at The Art Institute of Pittsburgh. Once you’ve started working with those clients, Melvin reminds business owners to make sure to get permission to use them as references. Promote Yourself: Melvin also reminds entrepreneurs, “No matter where you go, your business card should come with you.” That includes the gym, grocery store, and gas station. “You never know when you’ll meet a potential client and you should never pass up an opportunity to get your contact info in their hands.” Use Social Media: One of your biggest networking tools doesn’t even require you to get out of your pyjamas. “Facebook, LinkedIn, and so many other social media outlets allow you to reach out to people you could not reach before. A lot of the work I am doing is for people that I went to high school with and I could not have connected with them if it weren’t for social networks,” says O’Mara. Advertise: O’Mara also encourages budding entrepreneurs to think outside of the box when advertising their business. Office Space: And then there’s office space. Do you need it? There was a time when a business without an office wasn’t much of a business at all. But times have changed. O’Mara’s business is graphic design and although now he has an office, he says all a freelancer in his field needs is a laptop and the right software. He says most client meetings can either be held at the client’s office or at your local coffee shop. If you do decide you need an office both Melvin and O’Mara advise that you look into co-working spaces. “Those facilities have common conference rooms, shared office equipment like a copier and fax machine, a common kitchen, and some have a receptionist for all the businesses that share the space,” explains Melvin. O’Mara says there’s an extra benefit to the shared space as well. “The people you’re sharing the space with become part of your network and help you to grow your business; they can also become your clients.”

The Roman Emperor Nero was said to have burned an entire harvest of frankincense during his wife’s elaborate funeral. How do you see the future for tourism in the region? All indicators (Infrastructure and investment activities) show that the travel and tourism sector in the region will experience exponential growth. For example, an estimate of over 3,000 hotel rooms are due for completion by the end of 2014, and Port Sultan Qaboos’s expansion and transformation into tourism and cruise ship precinct. In 2013 only, 435,000 visitors from the Gulf region visited Salalah during the fall season, an increase of over 80,000

Customer brand loyalty harder than ever to keep, says global research consultancy TNS… More than half of customers are likely to defect to a competitor brand when a product needs updating or their contract expires, according to a new study from global research consultancy TNS. Almost two thirds (60%) of customers are likely to defect to another brand when buying new electronic products; 57% would replace their car with a different brand; and 64% would opt for another manufacturer when selecting white goods like a washing machine. According to TNS’s global analysis of 40,000 customers, companies can no longer ensure loyalty and spend just by providing a reliable, consistent service. In fact, many of those who defected to a competitor actually felt their current provider was performing well. Looking across the banking, utility, and telecoms industries, TNS identified that more than 50% of companies are failing to translate good performance in terms of product and service delivery into customer preference for their brand. According to TNS’s proprietary TRI*M tool, European mobile network providers were found to have the most notable ‘performance-preference gap’. One fifth of customers rate their provider’s performance highly but admit they still would not necessarily prefer them over

competitors. Companies that fail to address this gap are wasting millions of pounds trying to improve their individual performance in the eyes of customers, while failing to understand the risk posed by other providers, and more importantly, how attractive these competitors are to their customers. Stefan Schmelcher, Global Head of Customer Experience at TNS, explains, “Given the fierce competition in many markets, securing valuable customer relationships requires a deep understanding of what drives your customers’ behaviour. The most successful businesses are able to translate what’s best about their performance into an active customer preference. They don’t just invest in any service or promotion, they get smarter about the customer experiences that matter and deliver on the bottom line. Simply throwing resources at different touch points without understanding how to build a personalised service will only undermine long-term credibility.” Satish Dave, AMME head of Customer Experience at TNS, explains, “In Africa and the Middle East markets where this study was done, results are not very different. There are clear

indications for banks and telcos that a “good” rating is no longer good - a good rating does not translate into the key business outcomes clients are looking at, such as increased spend and recommendation. Only very good ratings and strong preference scores are likely to lead to long-term customer loyalty.” TNS found that customers with the strongest relationships to their providers are three times more likely to stay loyal, six times more likely to recommend the brand, and five times more likely to buy additional products and services from the company. Schmelcher explains, “In each case, companies need to uncover the optimal balance between what customers want and what delivers profitable growth for the business. The reality for today’s brands is that best isn’t always right. The most successful companies permanently question their investment in different customer experiences. They know where they gain the most advantage and build their proposition around customers who love and advocate their brands. At TNS we call this the ‘Customer Code’. Understanding the hierarchy of importance for customer needs, and questioning the level of investment in different experiences is the essential starting point for this.”

She was awarded an honorary Doctor of Health Science in the UK for her advocacy work.

Other breast cancer risk factors include: Prior breast cancer, Early periods starting before the age of 12, Later menopause after the age of 52, No child bearing, Late pregnancy at the age of 30 or over, Hormone replacement therapy or oral contraceptive pills (the risk reduces over time once you stop), A few types of benign breast problems, Dense breasts (seen on mammogram), Exposure to high levels of radiation, Previous radiation treatment for other cancers as a child or young adult, Overweight - especially after menopause, Drinking more alcohol than the recommended daily amount (2 units/women, 3/ men), and Smoking (the evidence

is inconsistent). Factors that may decrease the risk include: Periods starting after the age of 12, Menopause before the age of 45, Having children (especially having the first one before the age of 20), Breastfeeding (for a minimum of five months - this could be one baby or more), and Risk-reducing surgery (preventive only for those who have inherited a faulty gene). Remember, this information is not a check-list quiz; a person may have many risk factors and not develop breast cancer at all, while another may have very few risk factors and yet get diagnosed with the disease. One individual component of ginsenoside includes both a sugar chemical component and a non-sugar one, in which the non-sugar element is labelled as AGS. While there are various types of AGS, the ones labelled with ‘R’ have many extraordinary properties! These particular AGS components are extremely effective when it comes to fighting cancer. As AGS enters and is broken down by the body, the active chemicals Protopanaxadiol (PPD), Protopanaxatriol (PPT), and a bacterial metabolite M1 are formed. How It Works AGS, a sub-component of the phytocompound ginsenoside, can be found in the common herb ginseng. By itself, ginseng has never been recommended as an effective cancer-fighting herb. In a lab, however, these thousands of compounds that are found in ginseng can be separated and used for medicinal treatment. R-family ginsenosides have been proven to block new cancer cell growth by restricting the development of new blood vessels (angiogenesis), which are required to feed growing cancer cells. Antiangiogenesis drugs are currently one of the most popular fields of study/ research in the fight against cancer. R-family ginsenosides also have the ability to selectively destroy cancer cells, and also reverse precancerous growth in early development. They are also believed to enhance the effectiveness of traditional cancer fighting medicines when used in combination. Potential Complications AGS or any R-family ginsenosides produce no harmful side effects. In many different studies, research concluded that no toxic effects were present. In fact,

treatment with AGS is being considered a successful ‘natural chemotherapy’ method of treating many different types of cancer without toxic complications! However, for those who include ginger root as part of their diet and/or for disease treatment or prevention, some precautions should be taken. Certain side effects can be triggered when two herbs are introduced to each other inside the body. Also, herbs can interfere with other supplements or medications and their effectiveness. For the most part, side effects related with ginger are quite rare, but if consumed in large doses it may cause heartburn, diarrhoea, and mouth irritation. More and above, Ginger shouldn’t be consumed by anyone with a bleeding disorder or on blood-thinning medications, including aspirin. Additionally, those who have gallstones should consult with a doctor before consuming ginger. substance that targets a wide variety of cancer types, including multiple drug resistant (MDR) cancers in which treatment options are very limited, and it can also alleviate MDR. It does so by inhibiting the P-pg protein, which makes this cancerfighting substance a very popular choice when it comes to treating all types of cancer. One of the few compounds able to pass through the blood brain barrier, AGS is a particularly viable brain cancer treatment. It has been reported that in 1999, a naturopathic doctor began using AGS on over a dozen cancer patients who were not responding to other treatment methods. In the world of natural medicine, AGS has become one of the most promising natural substances for cancer treatment. Stress can kill you and the longer you experience stress the worse your health can become. In fact, exposure to longterm stress causes the body to produce several hormones that can lead to anxiety, depression, digestive problems, heart disease, trouble sleeping, obesity, and memory loss, according to the Mayo Clinic. Both men and women suffer from stress but women are more susceptible to stress-related conditions, which can also include infertility. Stress levels can also increase significantly when economic times are tough. In England, the British Health and Social Care Information Centre found that stress increased by 47% during the recession and that stress was the single biggest cause of sickness in the UK, affecting 20% of the population. Professor Cary Cooper of Lancaster University, a known expert on stress, was alarmed and told The Independent, “I have never seen figures like this before. Stress is a trigger mechanism for a whole range of conditions, from heart attacks to immune system disorders, mental illness, and depression and anxiety.”

Now, new research from the University of Haifa published in the science journal Appetite has confirmed the relationship between salt and stress in humans. Researchers found an inverse correlation between salt and depression/stress, especially in women. In essence, the body is self-regulating to prevent stress and depression by making us crave salt.

Despite the many clear benefits of salt-intake in a person’s diet, various national and governmental organizations are calling for drastic reductions in the amount of salt people consume. However, a new study published in the American Journal of Hypertension found that the average American is already consuming the right amount of sodium for optimal health outcomes and that the low sodium levels currently recommended by the CDC and major health departments are now viewed by many in the scientific community as excessively and unrealistically low. The fact remains that whether they are called comfort foods or mood stabilizers, salty foods are incredibly effective at making people feel better and reducing heightened stress levels. 34

He went on to question whether the voluntary selection of salty food choices was a biological defence mechanism that evolved to cope with daily stress.

I keep hearing mixed advice about pedicures protocols and safety. Can you tell me what’s really important to keep in mind when I get a pedicure? Shazia, Riyadh

Whether you’re getting ready for a romantic evening out, or looking ahead to when sandal days are back again, treating your feet to a pedicure can help you look and feel your best - as long as you keep foot health front of mind.

It’s important to ensure your pedicure is done properly, whether you’re doing it yourself at home or enjoying a professional treatment in a nail salon or spa. The American Podiatric Medical Association (APMA) offers some pedicure pointers to help you love how your feet look and feel: * Start with a good soak in warm water for at least five minutes. This will help soften calluses and prep feet for removing dry, rough skin. To exfoliate, use a pumice stone or foot file. Never use a foot razor to remove dead skin, and ban your pedicurist from using one on you. It’s too easy for a quick slip-up that could cause permanent damage or lead to serious infection. * Shave your legs a day or two before your professional pedicure, but not the day of. Shaving can cause minor abrasions and fissures in the skin, allowing bacteria to enter while your feet soak or the nail technician handles your feet. A little bit of stubble won’t bother her at all.

* When doing a home pedicure, use toenail clippers with a straight edge and cut nails straight across. Avoid other cutting tools such as manicure scissors, as they can increase the risk of ingrown nails. For salon pedicures, bring your own tools; shared tools can spread bacteria if they haven’t been properly cleaned. Use an emery board to smooth and round nail edges.

* Look for foot-friendly products that have earned the APMA’s Seal of Acceptance or Approval. Podiatrists have evaluated these products and found them to be beneficial to foot health. Finally, never put up with foot pain. Discomfort and pain that lasts longer than several days could be a sign of a more serious problem or infection. Seek treatment from a podiatrist - the foot and ankle expert.

As soon as you enter the hotel, you can’t help but notice the museum-like character of its lobby. The entire room has been lovingly restored to its original splendour with infinite care, recreating the authentic period details; the furnishing, flooring, colour schemes, and fabrics are all as they would have been in the eighteenth century. The most interesting feature of the lobby, which can also be seen throughout the hotel’s rooms, is an exceptional collection of paintings from eighteenth century masters like Reynolds, Gainsborough, and the satirical cartoonist Thomas Rowlandson.

The hotel’s Dower House Restaurant envelops itself in rich, earthy tones. The combination of whites, greens, and browns in different tones and textures creates a very calm and tasteful atmosphere. What caught our attention immediately was the grasslike wall décor, which adds a raw touch to an area so crisp and elegant. And in keeping with the eighteenth century theme, large sofas with traditional English-style upholstery are used as dining chairs.

The Sir Percy Blakeney Suite is stylish, enchanting, and functional. The drawing room’s open fireplace and high Gregorian ceilings with ornate plasterwork give the suite a charismatic charm, and the antique four-poster bed works both as a décor element and a functional piece. The colour palette is not loud or bright, but the pairing of pastel shades with more solid colours gives the overall décor an engaging androgynous personality.

The bar’s seating area features a setting that is both beautiful and exotic. A Swiss Escape

The Dolder Grand opened in 1899, and over the years it has hosted Winston Churchill, Arturo Toscanini, Albert Einstein, the Shah of Iran, Henry Kissinger, and the Rolling Stones. The castle-like hotel closed in 2004 and reopened in 2008 with Foster & Partners essentially creating a brand-new hotel that partly envelops the renovated belle époque landmark building, located approximately 10 minutes from the city. To get there, you can take the No. 3 tram from the main train station to Römerhof and the Dolderbahn funicular. But if you can afford to spare about 30 Swiss francs, you should opt for a taxi ride instead as it’s faster and more convenient. The hotel has a total of 173 rooms and suites, all of which are very sleek, pristine, and comfortable.

Double room rates start at 870 Swiss francs a night, while the suites can cost you anywhere from 5,500 to 14,600 Swiss francs a night. The most impressive suite there is the Maestro, housed in the tower of the historic Main Building. A stay there, on two floors covering 400 square metres, is bound to be a memorable experience. Other interesting suites include Carezza, Masina, and Suite 100. Each of these suites features extravagant interiors and breathtaking views of the lake. Dining at the Dolder Grand is as exquisite as it is opulent. Spring Rolls Spring Rolls Ingredients: Chinese dried black mushrooms, 6 soaked and cut julienne 4 Cups oil 2 Cups your choice of meat 2 Scallions, shredded 2 Tbsp oyster sauce 2 Tsp sugar 2 Tsp cornstarch (corn flour) 1½ Cups Chinese or regular green cabbage, shredded 1 Tbsp oil 1 Cup mung bean sprouts 1 Small carrot, shredded 1 Package spring roll or egg roll wrappers 1 Egg, beaten ½ Cup bamboo shoots, cut julienne ¼ Cup chicken broth Sweet & Sour Sauce Ingredients: 4 Tbsp brown sugar 2 Tsp cornstarch mixed with 4 tsp water 1 Tbsp ketchup 1 Tsp soy sauce ⅓ Cup rice vinegar

Spring Rolls Directions: 1. For the filling, in a wok stir-fry meat briefly (until cooked through). Then add vegetables and stir-fry for 2 minutes. Combine chicken broth, oyster sauce, sugar, and cornstarch, add to wok, and stir-fry until sauce thickens. Let filling cool. 2. Position one wrapper like a diamond with one point facing you. Place about 2 tablespoons of filling in a log shape across the bottom about 2 inches from the lowest corner. Fold the bottom corner up over the filling and tuck it behind the filling. 3. Roll the packet up once to enclose the filling securely, and moisten the three remaining corners of the wrapper with beaten egg. Fold the left and right corners to the centre and press down firmly to seal, forming an envelope. Finish rolling up, sealing the top corner. 4. In a deep fryer or wok, heat 4 cups of oil to 360°F. Deep-fry spring rolls, a few at a time, until crisp and golden. 5. Drain on paper towels and serve hot, whole or cut in thirds. Sweet & Sour Sauce Directions: 1. Mix the vinegar, brown sugar, ketchup, and soy sauce together and bring to a boil in a small pot. 2. Mix together the cornstarch and water, add to the other ingredients, and stir to thicken. 3. For a thicker sauce, increase the cornstarch to 4 teaspoons while keeping the water constant.


Fried Sesame Balls Ingredients: 2 Tbsp fine sugar 1 Cup high-gluten (sticky) rice flour 228g Red-bean paste Appropriate amount of white sesame seeds Directions: 1. Sift Divide bean paste into small portions. 2. Soak sesame seeds in boiling-hot water for half an hour, then drain dry. 3. Mix flour with sugar and add two cups of cold water. Knead into soft dough and cover with a wet towel for half an hour. 4. Divide the dough into small portions and press each into a bowl shape. 5. Stuff with bean paste and roll into balls, then roll them on the sesame seeds so that each ball is covered evenly. 6. Fry in hot oil till golden-brown, then serve.

Shrimp Dumplings Ingredients: Filling: 8 Oz. shelled shrimps 2 Scallions, finely chopped 2 Tbsp chopped bean sprouts 2 Tsp soy sauce 1 Tsp rice vinegar Ÿ Tsp sugar Dumplings: Cups flour 2 ½ Cup hot water Directions: 1. Sift the flour into a large bowl making a well in the centre and pour water into it. Then mix until the dough comes away from the sides of the bowl. 2. Turn the dough out into a lightly floured surface and knead for 5 minutes. Return to the bowl, cover, and set aside for 30 minutes. 3. Chop the shrimps finely and put them in a bowl. Stir in the scallions, bean sprouts, soy sauce, vinegar, and sugar until mixture is thoroughly blended. 4. Turn the dough out on to the floured surface, and roll out into a sausage about 1 inch in diameter. Cut the dough into 1-inch slices, then flatten the slices evenly with your fingers until they measure about 3 inches in diameter. 5. Place a teaspoon of filling in the centre of each dough circle. Gather up the dough around the filling and bring it up over, pleating it up slightly as you bring it towards the centre. Turn the ends clockwise slightly to seal the filling in completely. 6. Half-fill a large saucepan with water and bring to the boil over high heat. Arrange the dumplings in a colander, sealed side up, and place over the boiling water. Reduce the heat to moderate and steam the dumplings for 10 minutes, then serve immediately. www.dazzle-magazine.com 65
