Paleo meals seek to mimic the diet of our caveman ancestors who were hunters and gathers. With that said, don't think for one second that Paleo meals are boring! They are far from it. The Paleo Diet consists of exciting and tasty recipes loaded with herbs, spices, and other everyday ingredients that comprise a broad range of delicious meals that everyone can enjoy. Paleo meals do not include any:

Grains like wheat, corn, oats,... Vegetable oils and margarines Legumes like soy, peanuts, lentils,... Sodas, sugar, fruit juices,... Dairy products Processed food and preservatives

But they do include:

Meat: Beef, pork, chicken, bison,... Eggs: Omelets, Frittatas,... Fish: Salmon, sardines, trout,... Fruits and vegetables: Berries, spinach, beets,... Shellfish and seafood: Mussels, scallops, shrimps,... Good fats: coconut oil, tallow, clarified butter, olive oil... Nuts: almonds, macadamia, walnuts...

As you can see, the staples of Paleo meals are lean meats, fruits, vegetables, and seafood. These foods are more nutrient-dense than refined sugars, grains, vegetable oils and dairy products. Consequently, this way of eating has a very high mineral content. Many doctors agree that vitamin and mineral deficiency is a major cause of disease. Here are a couple tasty Paleo meals to get you started. Enjoy! Cinnamon and apple omelet Ingredients:


· 3 eggs · 1 granny smith apple, peeled and thinly sliced · 3 tbsp coconut milk · 2 tbsp coconut oil · ½ tsp cinnamon Preparation: 1) In a bowl whisk the eggs with 1 tbsp of the coconut oil 2) Heat a non-stick skillet over medium heat, add 1 tbsp of the coconut oil and cook the apple slices with the cinnamon until the apple is tender. Set the cooked apple aside and reserve. 3) Add the remaining coconut oil to the pan and pour in the egg mixture. Cook as a normal omelet, using a spatula to stir the omelet gently while it cooks and to allow uncooked parts to run underneath. 4) When almost cooked, flip the omelet over and add most of the apple mixture and 1 tbsp of the coconut milk. 5) Fold the omelet in half, serve into a plate topped with the remaining apple mixture and 1 tbsp coconut oil Beef rib roast with horseradish and herbs Ingredients: · 1 bone-in prime rib roast, about 16 lbs (6 ribs) · 8 cloves garlic, coarsely chopped · 1 cup prepared horseradish · ¼ cup + 2 tbsp fresh thyme leaves, chopped · 3 tbsp fresh rosemary leaves, chopped · 3tbsp fresh sage, chopped · ½ lb tallow, butter, or ghee, room temperature · Sea salt and freshly ground black pepper to taste Preparation:


1) Preheat your oven to 325° F 2) Combine the tallow or butter with the horseradish, sage, thyme and rosemary in a food processor and process to a smooth puree 3) Place the roast, fat side up, in a roasting pan, season it to taste with sea salt and freshly ground black pepper and rub the horseradish and herb puree all over it. 4) Place in the oven to cook for about 3 ½ hours, until it reaches a temperature at the center of 125° F for a medium rare roast. 5) Baste the roast occasionally during the cooking process 6) When cooked, remove the roast from the over and set aside to cool for at least 20 minutes before carving and serving.
