Method:
1 teaspoon ‘Pumpkin Pie Spice’
Preheat oven to 180°c. In a medium sized bowl, sift together flour, sugar and baking soda. Mix together in separate bowl, cooked pumpkin, melted butter, eggs, 1/4 cup of water, and spices. Combine with dry ingredients until just incorporated - do not over-mix. Fold in the glace or crystalised ginger and slivered almonds.
1 1/2 cups self-raising flour 1 cup sugar 1 teaspoon baking soda 1 cup pumpkin, cooked and mashed 1/3 cup butter, melted 2 eggs, beaten 1/4 cup water 1 teaspoon ground ginger 1 cup slivered almonds, chopped 2 tablespoons glace or crystalised ginger, well chopped

Spoon mixture into a prepared muffin tin and bake for 25-30 minutes. Check with a toothpick by inserting into the centre of a muffin. If it comes out clean, it’s done! Cool on a rack.
