elcome to the latest edition of Southport Exclusive Magazine.

I would also like to welcome you all to summer. As the weather gets warmer and we get the opportunity to enjoy the long evenings, I think it’s fair to say it makes each and every one of us feel just that little bit better and puts a spring in our step. We begin to look forward to that summer holiday that’s been booked for some time now and the weekends suddenly become so much more appealing. ere is always the feeling though when the sun shines that we should be doing something. Let’s not waste the warm weather. What should we do? Where should we go? It won’t be long before the kids break up from school too. How are we going to amuse them? Well I have some good news for you because we are in Southport and there really is so much going on. I can already here you questioning my assertion that you won’t be short of things to do.

All of you golf enthusiasts out there may not yet be aware that e British Open is taking place at our very own Royal Birkdale Golf Club this summer. ‘It’s at Royal Liverpool I hear you cry’. Well you would be correct if you think the world of golf revolves solely around the men’s game. For four days this summer from 10th - 13th July the crème de la crème of the world of ladies golf descend on Southport to compete in e Women’s British Open tournament for what promises to be a magnificent showpiece for the town. at has to be worth checking out. We have our annual Flower Show in Victoria park from 14th - 17th August Always a great day out. Find out much more about these two particular events within this edition of Exclusive.

Don’t forget the Woodvale Rally which also takes place in Victoria park from 21st 22nd June and has been a fixture in our calendar for many a year and never fails to entertain the whole family. is year promises to be no different. e re-emergence of our amusement park is great for the tourism aspect of Southport but it’s not confined to visitors to the town. How lucky are we to have facilities of this type in the town where we actually live? It is one sure fire way of keeping the kids happy on a balmy summer day and let’s absolutely not forget the transformation at Kings Gardens and around our Marine Lake. If you haven’t yet taken a stroll through this magnificently re-developed facility then I strongly suggest you to do so. With all of our beautiful parks and gardens to enjoy I urge you to get your picnic hampers out everybody and enjoy the summer in Southport. Our town.

outhport Fashion Show 2014 organised by GMODELS & Casting Agency directors Lisa Hames and Jeff Wilkinson took place at Southport eatre and Convention Centre on Sunday 23rd March 2014. e event has been hailed a huge success for the town and saw over 800 people attending. Community Link Foundation were proud to be the chosen charity for the day and raised £977 through fundraising activities and ticket sales. e day was a perfect opportunity to get up to date with the latest fashion trends, shop and have a few drinks whilst enjoying the free treatments that were on offer and to enjoy the professionally run

shows. e event was hosted by Baz Todd and Gemma Cutting of "Juice FM" who kept the audience entertained throughout the day. AFTER PARTY e official Southport Fashion Show after party was held on Sunday 23rd March at Southport's plush bar and brassiere Eighty Eight. e evening was a perfect opportunity for all the businesses, models, entertainers, staff, family and friends involved in the event to get together and unwind with a drink to celebrate the success of the day. Many guests attended the evening to enjoy flowing canapes, champagne & music by DJ Sean Sines.

Jewellery by Gauthier, Catwalk Boutique, Scarf Nation, Man to Man, Community Link Foundation, Eighty Eight and Southport Exclusive Magazine. Spring/Summer collections were showcased on the main catwalk with labels provided by Coco Boutique, Over the Moon, Miss G Couture, Man to Man, Sophie Maddocks and Hotfrox and all were modelled by the stunning 28 models provided by GMODELS & Casting Agency. If that's not enough, the day also featured stilt walkers, a magician and a fantastic vocal performance by Scott Chapman. he 2014 Ricoh Women’s British Open returns to e Royal Birkdale Golf Club for the sixth time in the tournament's history this summer. From 1013 July all the action of Britain's premier women's golfing event unfolds in 'England's Golfing Capital,' teeing up an exciting double header of world-class golf on Merseyside with the men's 2014 Open Championship rolling into Royal Liverpool, in Hoylake the following week. England's Golf Coast boasts an impressive golfing pedigree. Did you know that this picturesque stretch of the North West's coastline is home to the world's highest concentration of championship links courses? at's including three of the UK's 'Royal' courses and seven of the top 36 courses in the British Isles. Royal Lytham St Annes, Royal Liverpool and our very own Royal Birkdale have hosted the Open Championship no fewer than 30 times between them. Pretty impressive we think you'll agree. THe majesTy Of ROyal BIRkdale

Of course, Royal Birkdale's clipped fairways, undulating hillocks and fearsome pot bunkers are no strangers to championship golf of every persuasion. Indeed, over this fabled links course's illustrious 125-year history it has staged five Women’s British Opens, nine Open Championships, and two Ryder Cups in 1965 and 1969 respectively. e Women's British Open first appeared at Royal Birkdale in 1982 when Spaniard Marta Figueras-Dotti took the winner's spoils. Four years later, the championship returned, when England’s Laura Davies claimed a popular victory. Sophie Gustafson won the millennial tournament and in 2005 it was Jeong Jang's year, with the South Korean grabbing her first professional victory. e competition's last outing here in 2010 was a record-breaker, as Taiwan's former world number one – Yani Tseng – secured the Open trophy to become the youngest player ever (male or female) to win five majors at the age of 22 years, six months and eight days. It will be a welcome return to Royal Birkdale for Yani, who has since slipped to 44 on the Rolex Rankings. Speaking on the official tournament website she said, “Of course I am a little biased but I think Royal Birkdale is an unbelievable course and I feel so proud to have won there. It has hosted so many great Championships and I look forward to returning there in 2014 where I hope I will win again.” Captain of Royal Birkdale Golf Club, Michael Hadden, was also thrilled at the prospect of seeing the world's top women golfers returning to Southport. “We are very much looking forward to the return of the Ricoh Women’s British Open in 2014,” he told organisers. “e positive feedback from our

In 1983, it was Tom Watson who would grasp the Claret Jug for an amazing fifth time in his career, with a recordbreaking score of nine under par.

Over the last five years the 2014 Ricoh Women's British Open has attracted average attendances of more than 55,000. An economic impact study of hosting the 2013 Ricoh Women's British Open at St Andrews in Scotland, carried out by the Sport Industry Research Centre at Sheffield Hallam University, revealed that Scotland's global media exposure over last year's Championship's reached £8.33m and the net total impact was estimated at £5.2m. So get ready

Who can forget Justin Rose announcing himself on the world stage, as a fresh faced 17-year-old amateur, in explosive fashion with a second round 66 and a magnificent chip-in on the final hole of a championship won by the American Mark O'Meara. And of course, the most recent Open Championship to be held here in 2008 witnessed a stirring title defence from Ireland's Padraig Harrington. But if you are thinking of heading to the Championship, perhaps for your first ever taste of live top class golf, what can you expect from the UK's pre-eminent ladies' golf tournament? Of course the main spectacle will be the superb golf on show at Royal Birkdale. But spectators also have the ideal chance to unwind and soak up the electric atmosphere from the comfort of the Championship Village. Last year the Ricoh Women's British Open championship went to Stacy Lewis, from the United States. Registering her second career major, she became the first American woman to win the Championship since 2006, when Sherri Steinhauer was the victor. at statistic can partly be attributed to the Asian dominance of the Championship, with Lewis' triumph ending a winning streak of three on the

RICOH GOlf Paula, you came third in the Ricoh Women's British Open, at Royal Liverpool, in 2012. Playing on Merseyside obviously agrees with you; what is it about this part of the world that you enjoy? ere is so much that I love about the courses up here and I really enjoy the challenge that links golf brings. Both my caddie, Colin Cann, and swing coach, David Whelan, are English and I think they have helped me feel very at home there. e fans in the North West of England are always amazing too.

How will you relax whilst your here in Southport? Will you have time to look around? I have been to Southport a few times now and have really enjoyed it there in the past! In 2005 I stayed in a really cute guesthouse not far from the golf course which is all part of the fun of being on Tour and as long as I get a good night’s sleep that will help me relax. Other than that, because I like to go go go all of the time I will find it hard to leave the course and make time to look around but I am sure Colin and David will want me to get out and about and have some fish and chips on the pier.

What do you think of the historic Royal Birkdale course? And how do you think you'll fare here? I liked Royal Birkdale from the first moment that I stepped foot on the course in 2005. I like to think that I know the golf course pretty well by now but it did play a lot different in 2010 from in 2005 so it will be interesting to see how it plays this year. In my two previous appearances I finished T15th and T21st so I will be hoping to go a few better this year and challenge for the title. How does links golf suit your game? I love the challenges links golf throws up and the variety of shots you have to produce. It is nice to have to think differently and I find it refreshing as we play a lot of similar, wonderful courses in the US that require the same sort of strategy week in, week out. I also love visiting the historic courses that the Ricoh Women's British Open are always played on and that I watched on TV growing up or have read about. e good thing this time around is I have more shots in my bag then I did in 2005 and I also know what to expect which helps me a little. I cannot wait! What do you think of the British crowds over here? e fans in the UK are amazing; I love coming over here because they are so supportive and knowledgeable on golf so if I can play well and put on a bit of a show for them that would make me really happy.

Obviously Stacy Lewis won last year, could we see another US victor this year? It is really hard to pick a winner, the state of the Women’s game is fantastic at the moment and there really are so many players from all over the world that have the ability to win. I, for one, will be trying my hardest to follow in Stacy’s footsteps though! What difference does being a Major winner make when you're in the hunt for another, like the Ricoh Women's British Open? Is it a confidence booster? Winning a Major gives you that belief that you can succeed on the toughest golf courses and the confidence and relief that I took away from those four days at the 2010 US Open really is something that I have never felt before. Although it has been a while since that day but I think it will stand me in good stead. Your season's going great, with two T-3 finishes and clinching the HSBC Women's Champions tournament (with that 75-foot putt!), what's been the highlight so far this year? Winning the HSBC Women’s Champions in Singapore has to be the highlight for me. I felt like I had been close to winning for such a long time before that putt went in so to see it drop was a huge relief for me! Sharing the moment with Colin, my caddie, made it all the more memorable because he has been there through it all!

What's your favourite thing about the Ricoh Women's British Open? e Ricoh Women’s British Open is such an historic championship and one that every female golfer wants to win so this makes it an extremely exciting week. e tournament is also played on a number of great courses and I have always enjoyed links golf. It's also a nice change to come out here and put your five layers on and play in your rain gear because it makes golf a little bit more interesting. It really is the title that we all would love to win.

You've achieved so much, what would rank as your career highlight up to now? And what are your career goals? Winning the US Open in 2010 has to be my career highlight to date and I hope that if I can keep putting myself in contention in the Majors I can win many more! Winning the Ricoh Women’s British Open is certainly up there in my career goals.

RICOH GOlf What did you think of Inbee Park's achievements in 2013? Is she the one to beat at Birkdale? Inbee Park was incredible in 2013 but she worked very hard on her game to get to that point so she deserves all of the success. She’s still world number one so you could say she is the one to beat but Yani Tseng won the last time we were here so you never know.

Who is your inspiration – golfing or otherwise? I have to say that it is my Mum and Dad. ey have done so much for me and supported me in my career choices.

What words of encouragement would you give to any young girls who might watch you in action at the Ricoh Women's British Open and feel inspired to take up golf? I hope they come wearing pink so I’ll know they are my fans and I’ll be able to give them a smile or a wave or an autograph! My advice to them is to dream big and work hard but most importantly, have fun.

What was it like being immortalised in the Tiger Woods PGA Tour video game? Being a part of Tiger Woods 2014 was really cool and I was happy with the way it turned out. When they were making the game and wanted to include me the one thing that I said to them was make me look awesome! Whenever I play the game I never play as myself though, I always create my own character!

Finally, can you explain why you're known as “the Pink Panther”? And how important is fun, fashion and femininity to you and to women's golf in general? Pink is my favourite colour because it is so cheerful and it comes in many different shades. When I look at pink it makes me happy so I always try to have something pink on. e name originated from a good friend of mine from my junior golf days and it just stuck!

If you haven't already spotted babyballet's dynamic duo of Twinkle the bear and Flutterby the fairy cruising around Southport and Formby in their nifty pink wheels (a convertible Volkswagen Beetle called Kitty) then where have you been?! Babyballet specialises in pre-school movement to music classes for babies and children aged from six months up to six years old. “It's all about getting everyone involved in dance,” says local franchisee and professional dancer, Jennifer Berrett - or Miss Jennifer as she's affectionately known to all her babyballet stars. “It doesn't matter about ability, size, background; everybody can have fun,” she adds. e babyballet concept was the brainchild of Claire O'Connor, who recently appeared on hit Channel 4 programme 'Big Ballet.' After spotting a gap in the market she set to work to bring fun, non-competitive dance classes to pre-schoolers, focussed on increasing every child’s confidence. Such a simple idea rapidly progressed to a full cast of cuddly characters, a rapid expansion of busy franchises, and a steady procession of pirouetting children and smiling parents from the south coast to Scotland and everywhere in between.

Miss Jennifer recently celebrated four years of running babyballet classes in the Southport and Formby area, with a sell-out 'pirouette and pizza party' held at Roberto's, on the Ocean Plaza in Southport. Sixty children and their parents came together for an hour of singing and dancing, followed by delicious freshly-baked pizzas. But Miss Jennifer takes all the success and plaudits in her sashaying stride, as for her it's all about seeing the children progress. “Some children have been coming to babyballet since they were six months old and now they're going to school in September,” she says. “It's such an honour to be their first ballet teacher and for some of them their first teacher ever.

“ere's so much that you can gain from dancing. Not just ballet or the movements but the fun, the confidence, social skills and sharing. It's a really good way to prepare them for school and for life.” Miss Jennifer won the Sefton and West Lancashire Women in Business 'Shooting Star' award for the best new business in 2011 and last year scooped an award for outstanding contribution to babyballet. Not bad considering she admits to having “fallen into it” after a stint of teaching at the dance company's headquarters in Halifax. e awards, and soaring attendances (more than 200 local children now attend babyballet), will come as no surprise to the scores of youngsters, parents and businesses who have encountered Miss Jennifer's boundless enthusiasm and professionalism.

She on the other hand is genuinely modest about her success. She says, “I just kind of go day to day and things pop up, we get excited, and then we move on to our next adventure! I started teaching just by myself with three classes a week at one venue. en I set up in Formby, which doubled it, and it's just snowballed ever since. “I now have three teachers that work for me but I still teach the majority of classes myself because I do like the teaching side of it. I always say to myself, 'It can't be real, it can't be a real job!' because it's so much fun. I've been very fortunate to be able to do what I love and I really enjoy it,” she adds with a grin. th e P u P i l B ec o m e s t h e mAster

Behind the branded pink hoodie and bubbly persona there's a natural business acumen that no doubt stems from a lifetime of dancing discipline. As a three year old, the same age as

many of her protégés, Miss Jennifer was dancing at the Sereno School of Dance in Southport. At her 'second home' she progressed through her Royal Academy of Dance (RAD) examinations, through to gaining her Advanced 1 Ballet in 2013 – a first for mentor Mrs Sereno.

on a Saga cruise ship, Miss Jennifer returned to dry land to teach in schools and at babyballet headquarters, where she was eventually persuaded to take on her own franchise back in her hometown of Southport. e rest, as they say, is history.

Training up to six days a week as she got older certainly paid off, when at 16 years old Miss Jennifer was accepted to the Merseyside Dance and Drama Centre. ere she gained all her teaching certificates and became fully qualified to teach tap, modern, ballet, jazz, national, street and cheerleading (to name but a few!). After graduating with distinction, there followed professional dancing contracts working at the Tall Trees Hotel in Teeside, a casino in Portugal, then six years aboard cruise ships travelling the length and breadth of the globe. She says, “I've been everywhere; on Mediterranean cruises, around Japan and Asia, and all the seven seas!” After a final oceanic fling as a swing dancer

“I was very wary because I'd only ever dreamed of being a dancer,” says Miss Jennifer. “You have to be that focussed to be a professional dancer that you don't think of anything else. So I never really dreamed of my own dance school.” at was soon to change though. She continues, “But I tried it and it fitted perfectly around my life. I've met so many lovely people doing it and the children are just amazing.” Unlike traditional ballet schools, babyballet doesn't just break down the stereotypes of the archetypal dancer, it also transports parents from the waiting wings to fully participating in classes with their children. Something that Miss Jennifer cherishes for the shared experiences that result. “It's absolutely magical some of the things we share,” she says. “Parent's come to me with tears in their eyes, and say 'I can believe she's jumped.' We do a show every year and the feedback that we get from the parents is just incredible.

“ey really don't think their three-year-old will dance on the stage in front of a hall full of people. But they do! ey get up there, they smile, and they do exactly what they love doing.” Ask Miss Jennifer what her future plans for babyballet are and where she wants to take it she'll tell you: “To the moon! We need to turn it pink and blue!” Of course, she says it with a gleeful giggle, and tongue firmly pressed in cheek, but it gives you a fleeting glimpse of her unwavering ambition. You can't help thinking that, if she set her mind to it, it might not be tutu much of a stretch of the imagination after all.

ummer is just around the corner and you know what that means? Long, balmy evenings sat outside with friends and family. Perhaps over meat-laden barbecues, with succulent smoky scents wafting across the neighbourhood from Crossens to Kew. Better still, in a heaving sun-soaked beer garden, making a day of it, catching some much needed rays in those almost

forgotten about shorts or skirt. Or plum in the centre of a quintessentially British open-air festival, sampling the best in music, food or drink. We might not get the most fair weather days in Europe but we sure know how to wring every last drop out of the ones we do get.


WINING & DINING “Here in the resort town of Southport, we like to think we have it better than most. Sunny Southport isn't just a name, it's a way of life.” It's a scientific fact, in our heads at least, that we are blessed with more sunshine, and good times, than anywhere else in the British Isles. And what better way to celebrate than to don the flip flops, slap on the sunscreen, and head outdoors for some al fresco wining and dining in our fair town. Us Sandgrounders have long since embraced the pavement cafe culture and bier garten philosophy. You just have to take a stroll along Lord Street of a midsummer's day to spot a flotilla of cafe terraces spilling over with happy diners. en there's the traditional English pubs. Unlike our larger Merseyside neighbour, Southport is positively teeming with luxuriant, well appointed beer gardens. By now, the Warehouse Restaurant's new Michelin starred Chef Director, Matthew Worswick, has got his feet well and truly under the desk and has been turning out premier league cuisine that's setting pulses racing and tongues wagging. We caught up with Matthew, and the Warehouse team, for an exclusive chat which you can read in full on page 58. Find out what it takes to scoop a Michelin star, what makes a top chef tick, and exactly what tantalising treats to expect whten you open up his menu. Because summer lovin' you'll have a blast but - as we know, all too well - summer lovin' happens so fast! “In fact, it's a stranger sight to not find a place beneath the sun for Pimms o'clock, or long icy cocktails, than it is to find your very own green slice of paradise.” At the time of going to press, the annual Southport Food and Drink Festival will be days away from plating up the finest regional flavours and pouring back in to Victoria park for the last weekend of May. In 2013, an estimated 28,000 happy gourmands flocked to the festival, buoyed by the promise of tasty morsels – like ostrich burgers and foraged vittles – plus a cellar-full of tasty tipples. Not to mention chef demonstrations, a children's marquee and of course some mighty fine surroundings to soak it all up in.

The Star Attraction Matt Worswick, the Warehouse Restaurant

I

t's been a long, scenic journey home for Matt Worswick. e Liverpool-born chef returned to Merseyside in March, to take up residence as Chef Director at the Warehouse Restaurant, having worked in some of the most celebrated kitchens in the British Isles and securing a coveted Michelin star along the way. All that at the tender age of 26. A large portion of Worswick's success undoubtedly stems from a straight-

talking, nose-to-the-grindstone Scouse mentality. But it's more than that. Quiz him on flavours, seasonal ingredients or his ma's scouse and those impassive, shark-like eyes ignite. ere's a deep rooted love of food that fuels his undeniable talent. e food and the customers come first. It's a simple mantra but one he stands by vehemently. If a Michelin star should blaze its way to Southport as a result? Job done.

Having achieved so much already, Matt's gone back to basics. Serving Southport's loyal diners the bold, but rustic flavours and classy, yet unpretentious servings and ambience for which he's famed. As well as settling closer to home to start a family with wife, Eva. Southport Exclusive caught up with Matt on his very first day of service to find out more about this brave new era for the Warehouse Restaurant.

Hi Matt. You've worked across the UK. How does it feel to be working on Merseyside, where you were born and bred? My wife and I came back to start a family. We've been away for nine years, so we wanted to lay down some roots and start a family around here. We've gone away, learned the trade, and now we've come back to put everything in progress. It's good, I'm really happy to be back. What can diners expect from your menus when they come to the Warehouse Restaurant? I think diners can expect bold, fairly rustic flavours. Unpretentious food, which we will serve at a very accessible price point. We offer a two-course lunch menu for £15 and three-courses for £19, which is very, very affordable. ey're not going to come and be baffled by the ingredients. We're not trying to scare people away by putting snails and porridge on the menu. Some people do but it's not what we do at the Warehouse Restaurant. We just want to offer quality ingredients – at a very reasonable price – and for people to come and enjoy it for what it is. What are your ambitions for the Warehouse Restaurant? Obviously the big question on everyone's lips is will we see a Michelin star in Southport? With the whole process of accolades and things, I think people might lose sight of what the ultimate goal is. And that's to offer a really great product for a customer base that's been loyal to the Warehouse Restaurant. at's what we have to focus our attention on first. People will say 'are you going for the star' and things but again if it comes, it comes. It's not at the back of my mind all the time. Obviously I'd love to get it, of course I would. Every chef would love to get it but we just have to move in the right direction and hopefully the accolades will come along the way.

What style of food do you like to cook then? I like to use lesser known ingredients. Certainly fish from the British Isles. You'll never find tuna on my menu...ever. I think we've got an abundance of ingredients from Britain that we can use rather than going further afield. We do have some French ingredients on the menu but not a lot to be honest with you. We try to keep it as local, and British Isles based, as possible – certainly as far as the fish and meat are concerned. We put a lot of work into it and there's been a lot of work behind the scenes to get to this point. Paul Adams, our owner who has an amazing track record for running successful businesses, is unbelievably energetic and passionate about what we do. He’s been very supportive and plays a huge part in steering the direction of where we are going. He's behind us 100% and we hope the people of Southport will continue to support us. Tibu, our Restaurant Manager - who has been taking care of our diners for over 15 years at the Warehouse - has a wealth of hospitality experience. He has served thousands of guests, and provides great input and ideas, and continues to run the floor service in his own inimitable style and flare. It’s a real team effort.

What does it take to achieve that accolade of a Michelin star? ere's a lot of good chefs that haven't got any. You need to have a pronounced style, so you know what way you want to take the food and where you want to go. Too many people are cooking for the guides and trying to impress them straight away. It doesn't really always work. “I think this is probably the first time in my career that I'm cooking food that I actually like to cook, which is a big statement for a chef.” It's true we've had a star, and the accolades before, but I'm happy with the food we're doing now and the progression. We're always getting better and we'll always keep getting better; that's the ultimate aim. If that gets me one star, absolutely fantastic, I 'd really embrace it. But the amount of dedication that people put into getting a star and they don't get it is so misguided. Hence why we've come back to the idea of making it about the customers. If you've got a really buzzing, busy restaurant and offer quality food and warm, professional service, then hopefully that will warrant getting a star, because people are coming back time and time again.

So tell us a bit more about your day to day role and what's been happening behind the scenes to get you ready for service. “I'm not just a 'stove monkey' stuck behind the stove cooking, I have a hand in the front of house, for the feel and the style of the place.” I am able to influence the direction of the business with Paul and the team. And as no ‘shrinking violet’ I certainly have my say on a day to day basis; on both front of house matters, as well as the kitchen operation. It’s important to have an integrated and one team approach in order to keep our customers happy. It must be fantastic at 26 to have this blank canvas and create this journey that you're on with the Warehouse Restaurant now? e Warehouse Restaurant is one of the best looking restaurants, certainly for interior and atmosphere on a busy night that I've ever been in. I thought if you could raise the food to a level and match the ambience and style of the restaurant then people will have a really good experience. We're just going to make it really relaxed. So many people think that they're not going to get a big portion because it's a Michelin starred chef cooking but it's not like that. I'm from the North West and hopefully I think I understand what the people of the North West want to eat, so that's what we're cooking.

You've had a stellar rise, winning your Michelin star in your mid-twenties. What do you put your success down to? I worked for a guy called David Everitt-Matthias at Le Champignon Sauvage, in Cheltenham, which is a two Michelin star restaurant. at opened my eyes to what could be achieved with such a small team – there was only four of us in the kitchen – at such a high level, with such humble ingredients. He just has a different process to coming up with dishes and a different outlook on food. It really, rubs off on people. I think that's one of the fundamental stages in my career so far by a very long way. And I think that changed me as a chef dramatically. Obviously cobbled with the long hours, and the hard work. We worked six days a week, for nine months of the year, in my last place (Glenapp Castle, in Ayrshire). So it's a long stretch and we got a lot out of it. We got the star and nobody can take that away from us now. Does having the star put pressure on you or does it give you added confidence? I think every chef should be evolving and open to change. You should be able to stand back and look at the food and see where it can be improved. A lot of chefs don't taste their own food but we taste our food. When we do a dish all the chefs taste it and we get feedback and opinions of what people think. en it goes out to the customer and if there's any customer feedback we listen to it. I'm not an arrogant chef, saying 'the customer is wrong and every dish is perfect,' because I'd be wrong in saying that. It's all a journey about getting things better. Ultimately, we want to

put a dish in front of the customer and for the customer to think it's great. If it isn't, then we have to go back to the drawing board and start again. We'll do it again, and again until it is. It's an evolving process that we've got at the Warehouse Restaurant. We just have to be on board with changing things, and tweaking things, and hopefully it just gets better, and better. Just because I got a star doesn't mean I'm Gordon Ramsay. It's nice to have, and it was a great accolade to have, but I've still got a lot to learn and so have the guys in the kitchen. So hopefully we're moving in the right direction. You mentioned Gordon Ramsay. What's your temperament like in the kitchen? Are you fairly cool and collected? I don't go around screaming and shouting at people. It's not the way I do it. I think if mistakes are made then mistakes are made. Nobody's perfect and I fall into that category too. So if people make mistakes we try and rectify them as soon as we can, we move on, and we find out why we made the mistake and we fix it. en hopefully that mistake won't happen again. I don't go throwing people out or throwing pans. It's not the way I work. I don't like to work in that environment. I want the guys to enjoy what they're doing. I think at the moment they are enjoying what they're doing and the vibe in the kitchen's good. I can't help the long hours but that's the way it is. I don't want people working long hours and getting screamed at - nobody wants to be doing that. Obviously everybody's got to concentrate and be on board but if you've got happy chefs then generally the food's happier too.


WINING & DINING It's a great coup for Southport to have you here. What do you think of the dining scene in town? I've only been here for a short time. I eat at the Vincent Hotel a lot. I love the sushi in there, I think I'm semi-addicted to it. I've been there probably about 16 times in the last three weeks for the sushi. I love the interior and the food and obviously that's our sister hotel, so it's an easy route to go and eat there. My old head chef Andrew Carter is actually the head chef at the Vincent, so we've got a connection there. It's a very busy place and I like seeing busy places; it makes me want to eat there. If it's busy then they're doing something right. I'd rather support a local restaurant, which is independent, rather than a chain restaurant which clutters Southport and everywhere else. I certainly will - and the people of Southport should - support as many local restaurants as possible. We've got enough in Southport to keep everybody busy. If you could sum up in a few words why people should come to the Warehouse Restaurant and try your menu, what would you say? Just unpretentious, really accessible food at a good price. It's as simple as that. We are what we are and we want to be as humble as possible about the food that we're serving. We're not the best in the world but we're just having a good go at it. Hopefully we can satisfy the good people of Southport and beyond and can stay as busy as possible. î Že Warehouse Restaurant has got a strong reputation already, so hopefully we can build on that and just get better and better.

My first recollection of the race was being told at about the age of 6 that I must try really hard a school. I can’t just play anymore. Even at that age I remember thinking that was a bit of a shame because I liked playing. It was fun. is work idea didn’t seem to be in my nature. It felt alien. Surely this can’t be what life is about? Life was easy before the great weight of expectation was placed on my shoulders.


LOCAL BUSINESS As children we live in the moment enjoying the small things. I used to take great enjoyment from just running, for no reason, could have walked but just ran, because it was fun. If I was upset at something like the time my brother accidentally stamped on my pet stick insect, I would just go outside to play and then everything would be ok again. e rat race that is life tends to suck the enjoyment out of the everyday existence. Life is serious, fall in line, strive to be your best and enter the race. We sleep, eat, work and holiday with the weight of responsibility on our shoulders. It is instilled at a young age and never goes away. Our Lifecycle normally looks something like this:

experience. As a child I remembered being told that I could do anything I wanted, the world was mine and if I tried really hard I could achieve my dreams. At age 16 the school Careers Officer sat me down and told me I could do 5 things? e Careers Officers office is the place where dreams go to get narrowed down! at was fine by me as I didn’t really have any dreams and he told me that one thing I could be was an apprentice electrician. Two weeks and two electric shocks later I decided it wasn’t for me. 17plus - Slowly falling in line with society, the above first major decision is often made on the back of affordability. Continued financial support from family or time to start paying your way. I got a job and started paying my way and paying my taxes. Still no real Life-Plan, just working, getting paid, then spending my earnings.

0 – 3 years – Easiest part of life by far, shame we have no recollection of this stage. Basically, get fed, wheeled about in your own mini chariot and spoken to by adults using silly baby voices. e only stage in early life when it is fine to be incontinent.

Age varies, probably about 25 - Competition and comparison at fever pitch as you try to progress in your chosen or fallen into career path. Get a job above the other interviewees, then aim for promotion. Earn more money spend more money. Save a bit if you can.

3 – 11 years - Junior school, do well at junior school, work hard. Make your parents proud and do better than spotty Johnny over the road. You must be brighter than him. Your elder brother is in the top set in all his lessons Comparison and competition, which will be prevalent throughout life too.

25 – 30 years - Marriage/Partner – here is a further lump of responsibility for you. Not just you anymore, must continue to progress on the career path.

11-17 years - Senior school, you are a small adult. Mummy or Daddy are not holding your hand and walking you to school anymore. Now you can’t hide behind the fact that you are a child. Now you become responsible for your actions. If I had wet my pants in assembly in junior school, nobody would have batted an eyelid. ey would have even had a spare pair of pants in order to combat such an event. It happened to me, as a result of nerves in my first big assembly in senior school. I was ridiculed for the next 5 years and picked up a few nicknames that took many years to shake. And, no big school has spare pants. Life has no spare pants, we don’t get a practice shot, we must get it right first time. By the time we leave big school we should, apparently, have great grades and know what we want to do with the rest of our lives? Fun and playing have largely been replaced by moodiness and moping. 17ish years - Crossroads, first major decision we must make. Left school, is it to be College, Uni, YTS, a straight forward job or the dole. Take your pick, get on the road and head in your chosen direction. At that age I had absolutely no idea what I wanted to do? How could I? I was 16 years of age with zero life

M oR t g agE – o Uc h. Twenties - First child – A blessing for sure. For the first time you feel your mortality. Now it’s serious. Can’t leave a job just because the boss is irritating. ree mouths to feed and many other associated costs. Work for that promotion. 30 or 40 something - 2.4 Children, a dog and a bigger house, equating to a bigger mortgage and increased pressure and responsibility. Climbing career ladder to balance it out. Can’t remember the last time I played, certainly don’t have the inclination or energy to run just for the fun of it anymore. Much more important to conserve energy. At this stage life moves at 100mph. Hopefully you have got something called a Pension by now. No idea what that is for, how much the charges are or if it is any good. Got some life cover too because you are a bit scared you might die at some point. Don’t want to leave the partner and kids high and dry. It’s years since you stopped feeling immortal. Still no real long term Life-Plan. Still just going in the direction you are facing. 50 – 60 Earnings at their peak. Got some significant life experience and know where you are at. Big career move or promotion. Maybe even your own business. Possible minor health issues and grey hair. Children not children anymore,

decide what they want out of life and set goals. Together, we get a Life-Plan in place so you know where you are going, then review, review, review on a regular basis to make sure you get there.

60 -70 Would be nice to slow things down a little if affordable. Retire completely or certainly reduce the number of days in a working week. Is it affordable, that is the question? 70 and beyond – Hopefully retired, will you have enough money to support your chosen lifestyle. Good news, life expectancy is increasing so you should have more time to enjoy the little things in life, like when you were a child. Grandchildren keep you young and you have more time to enjoy them than you did your children. Life can be fabulous in retirement, if you have planned for it.

Fear of flying, or “Aerophobia” to give it its correct title, is actually on the increase even though statistics tell us that air travel is the safest mode of travel. It seems that as many as half of us have some kind of fear around flying, although not all of these would be classed as a full-blown phobia. Fear of flying is often more about the “what might happen” rather than what actually is happening, and these thoughts trigger a reaction in the body that causes the person to be fearful and anxious. Fear of flying is often centered around the idea that flying is not a natural form of human movement and this 80

arouses natural human fear, ranging from slight nervousness (perhaps being a little edgy when there is turbulence during the flight) through to those who simply cannot and will not travel by air. e impact of this can be massive, not only because holiday options are more limited, but some people can become more socially isolated, perhaps because they cannot get to see family and friends. Others have lost jobs or job opportunities due to the air travel required on business and they simply cannot fly. Sometimes just providing someone with factual information, such as safety statistics and learning about what turbulence actually is, can help those who are just a little nervous about getting on a plane, but with those who have a severe or phobic response, another approach is needed.

AT THE CUTTing EdgE Olivia Cunningham was first inspired to pick up a pair of scissors working as a casual in her uncle's salon as a fresh faced 11-year-old. By the age of 19 she was ready to fully commit to her craft and joined the staff as a full-time junior, working her way through the ranks and eventually taking the reigns of the Hillside salon a decade ago. “e hairdressing business was in the family for years and by now I've actually been hairdressing for 25 years!” she says, looking back at an impressive career that has taken her all over Europe as part of the Sebastian Professional (Wella's sister company) education and artistic teams. “I travelled all over the Continent for about seven years, doing seasonal collections, bringing them back to the UK and teaching them across the country,” she says. After meeting husband Alistair, expansion plans inevitably followed with two new juniors of their own and a full-scale salon extension. According to Olivia, “We started the extension two years ago because we decided early on that we didn't want to get into a pickle financially and it would take as long as it took. We also decided that we weren't going to scrimp on fixtures and fittings because that's what makes the place as nice as it is. e end result is exactly what we want.” Olivia now spends two days a week as a colouring educator for Salon Promotions, visiting salons right across the North West, and the rest of the week at her shiny re-styled salon sharing her formidable knowledge and expertise with her Southport clientèle. “What sets us apart is the fact that we are a truly friendly salon,” says Olivia. “We listen to what people want, rather than just doing what we want to do. Hair is a canvas and it should be beautiful and healthy. He recently moved onsite at OliviaC's salon after relocating his duo of successful practices previously based at the Vincent Hotel and Lulworth Road. Specialising in the prevention and treatment of health issues and injuries, Alistair offers a holistic blend of advanced western and eastern therapies. Alistair says, “Our main 'bread and butter' work is looking for muscle, ligament or tendon damage in necks, shoulders, backs, hips, toes, knees – anywhere on the body.” Having obtained the Football Association's Diploma in the Treatment and Management of Injuries at Lilleshall National Sports Centre, Alistair has worked in the physio departments of numerous football clubs. “My background is mainly football injuries, although I treat a lot of different sports men and women, from Olympic level all the way through to grassroots,” he says.

Pat Garnett has been a loyal customer of the salon for 17 years. She says, “I travel around the country and go abroad a lot. I've visited hairdressers all over the place and this is by far the friendliest. You get a welcoming smile and you're treated well; that's what I like about it. 1979. After graduation and during her pre-registration year, Dr Groves first identified the need for better end of life care in Southport after experiencing two particularly traumatic deaths in young women.

Queenscourt Hospice was built in 1990 and first opened its doors to patients in June 1991 however the story had actually started many years earlier in 1984. One of the people instrumental from the very start of Queenscourt is Dr Karen Groves who has been a key figure in the success of the hospice and is currently the Medical Director. Karen Groves was born and educated in Liverpool and qualified as a medical doctor from Liverpool University in

It was a determination to ease the pain of patients that drove Dr Groves and her sister Sarah, a nurse, to seek advice from Dame Cicely Saunders, the founder of the hospice movement. î “ey visited her in London to find out more about her work and what could be done to help patients. When they returned they inspired a small group of people to begin fundraising towards a hospice for Southport and the local area. In 1985 a property on Queens Road in Southport was donated to the cause. It was originally hoped that this building would become Queenscourt but it proved unsuitable and was sold with the proceeds going towards the fundraising. î “is is where the name Queenscourt Hospice came from.


IN THE COMMUN ITY 1986 saw a public meeting take place at the Floral Hall, following which fundraising groups were then set up and trustees appointed to the newly formed charity. e very first palliative care started for day patients in 1988 in a borrowed room at the Promenade Hospital in Southport. In 1989 a piece of land adjacent to the District General Hospital in Southport was bought for a peppercorn rent, and so the building of Queenscourt commenced and was completed in 1990. By June 1991 five in-patient beds and a day care facility was available to patients and in October 1991 a further 5 in-patient beds were opened. In 1992 we were honoured to have HRH Princess Diana officially open Queenscourt, a day that caused Queenscourt to hit the news headlines across the world as Princess Diana shed tears at this event.

In 2009 we introduced Queenscourt 'at home', a service working in conjunction with existing excellent community services, aiming to keep 'at home' those who wish to stay 'at home'. is is now an important part of our service and helps over 200 patients each year to stay in their own homes. Over the past three years, Queenscourt has undergone a complete refurbishment to meet the needs of the current century. e works involved two separate extensions, carried out in phases to allow us to continue to provide care with minimal disruption to our patients.

For the first five years that Queenscourt was open Dr Groves worked as a volunteer doctor whilst also working full time as a GP. In 1995 she was appointed as the Medical Officer and by 1996 Dr Groves had become the first local consultant in Palliative Medicine across the hospital and community.

Queenscourt continues to grow under the guidance of Dr Groves and provides care to many people from the local community at a time when they need it most. Described by many as an extraordinary woman, Dr Groves has a real passion to make things better for her patients and their families. She has an unyielding desire to ensure patients facing the end of life should be given every opportunity to spend that time “living and not dying”, which has led to her being awarded an MBE for her services to palliative care.

Since then Queenscourt has continued to develop and thrive under her direction. With her passion for learning and teaching, and with the support of the visionary trustees of Queenscourt, the Terence Burgess Education Centre was opened next door to Queenscourt in 2001, to spread the word and share the knowledge of palliative medicine, not just with other health professionals, but also with teachers, clergy, nursing home and catering staff and all who are involved in the many different aspects of palliative care and bereavement. is centre was started and run by Cath Baldry, who later became Queenscourt’s Director of Nursing & Education,

On Friday 22nd August, Queenscourt hosts its annual Golf Day at Southport and Ainsdale Golf Club. is prestigious event is expected to draw golfers from across the area for a full day of competition on a championship links, with lunch and a presentation dinner in the evening. Teams of four will battle it out over 18 holes in a Stableford Competition format, tackling the sea breeze and abundant gorse and heather that make Southport and Ainsdale a unique golfing challenge.


IN THE COMMUN ITY Players can look forward to the course being in excellent condition as Southport and Ainsdale hosts the qualifying course for the Women’s British Open in July. With limited places available we would encourage anyone interested in bringing a team to book early to avoid missing out on a great day. f Southport is the star turn on Merseyside, then the most glamorous supporting actress has to be Formby. is bijou coastal town punches well above its weight, as the high rolling home to two of nature's rarest and most coveted species; the resurgent red squirrel and the Premier League footballer. On a serious note, there are plenty of reasons to visit fantastic Formby. For a kickoff it's natural charms are generously ample. Pay a visit to the National Trust's protected reserve at Formby Point, in the Freshfield hinterland, and you'll meander through a gradiated landscape of soaring pinewoods, past picnic spots and asparagus plots, to rolling dunes and a vast golden beach. Perfect for picnics, long walks and paddles.

En route, keep your eyes peeled for a fleeting glimpse of Sciurus vulgaris; the beautiful and endangered red squirrel. anks to an intensive conservation effort, Formby lays claim to one of the few remaining tracts of UK forest where it's still possible to see these delightful auburn fluff-balls going about their business. Keep an eye out for the latest squirrel count at the ranger's hut at the entrance and seek out the various feeding boxes for your best chance of spotting one. Getting to Formby can be half the fun. If you're partial to a two-wheeled trundle then try the Squirrel section of the Sefton coastal path. It skirts the railway line between Southport and Formby, passing through the gorgeous scenery of Queens Jubilee Nature Reserve, Birkdale Nature

Green fingered enthusiasts can also seek out expert advice from show garden exhibitors, plant societies and floral exhibitors. If you're feeling particularly inspired the Flower Show is home to the largest amateur growers' competition in the country, which includes honey, contemporary floral design and floral art.

For pint-sized gardeners the Southport Flower Show Schools Design-a-Garden Competition, sponsored by e West Lancashire Freemasons' Charity, is also open to all primary school children. Budding young gardeners are asked to design an eco-friendly garden and the two victorious designs will be brought to life by professional landscapers and displayed at the show. ey'll also walk away with a cool £500 to brighten up their school grounds. Local businesses are also being encouraged to take part in the best dressed window competition, where plucky business owners will be dressing their shop windows to reflect the Brazilian theme as part of a floral transformation right across the town. et's hope those beleaguered meteorologists are right. Because they reportedly predict that the El Niño phenomenon could make 2014 the hottest British summer on record. After a scorching summer last year, followed by the wettest winter in a century, hopes are high that a lingering hot spell could be coming our way. What better way to top up your vitamin D supplies than by packing up your picnic hamper and heading to one of Southport's many parks and outdoor attractions? With its blooming array of beautiful parks and manicured gardens, it's not for nothing that Southport has been tagged the 'floral capital of the North West.' As a coastal resort, there are also ample opportunities to get your toes sandy, with miles upon miles of pristine beaches. Stretching from Southport's vast golden plains, to ever popular Ainsdale, and the broad, sweeping sands and protected dunes of Formby (see page 94 for more on Formby) – you really are spoilt for choice. at's not to mention the vast way-marked tracts of cycle paths, and walking routes, to explore on a whim. As well as our top notch facilities, like the Marine Lake, Eco Visitor Centre and RSPB Marshside for an extra dose of outdoor excitement. Southport truly is an open-air playground for all ages. Set amongst 12 hectares of Victorian refinery, Hesketh Park has been given a £3 million facelift in recent years, that's seen its ornate fountains and historic conservatory restored to their former glory. It first opened in 1868 and was designed by landscape architect, Edward Kemp, after the Rev Charles Hesketh bequeathed the land to the people of Southport. Feeding the ducks, swans and occasional Canada Goose from the banks of the curving pond is a bit of a weekend institution. Kids and adults alike never tire of hurling great clods of bread to the onrushing gangs of voracious mallards. Who can blame them! en, when the bread's run out there's a vast children's playground and an adjoining cafe for mums and dads. For something a bit more active, exercise stations are dotted amongst the flowers and trees beside the pushchair friendly pathways and there's mini golf for budding golfers small and large. Hesketh Park also scores highly for heritage, with one of the UK’s last remaining floral clocks and a lovingly restored observatory. For the green fingered among us, there's also a stunning rose garden and an aromatic sensory garden. MARiNe LAKe

Less than a mile's walk from the town centre, Southport’s largest and arguably prettiest park is a veritable green oasis

e iconic Marine Lake, hemmed by the Millennium Bridge and Marine Drive's sea views, has a variety of water based activities to choose from. When the sun's ablaze what could be better than taking to those shallow waters in a hired pedalo or motorboat and pootling along with a water's height view of the resident flock of swans?

PARKS AND Gardens Or for something altogether more sedate, West Lancashire Yacht Club (based on the lake) offers a host of sailing activities including ‘learn to sail’ courses for complete beginners and skills development courses for more experienced sailors. Southport Sailing Club is also based there and has a summer long schedule of racing, as well as occasional taster days. Plus SUP North offers Stand Up Paddle Board lessons – it's the fastest growing water sport in the world – on the Marine Lake's benign waters.

Ainsdale's dunes play host to more than 450 plant species including many that are locally or regionally rare like petalwort, seaside centaury and yellow bartsia. It's also a stronghold for Europe’s loudest amphibian, the rare natterjack toad. You might also be lucky enough to spot great-crested newts, sand lizards and orchids amongst the swaying marram grass. A short walk along the promenade you'll find Victoria Park; home to some of Southport's biggest events like the Southport Flower Show and the Southport Food and Drink Festival. Here you're encouraged to walk on the grass and with acres of lawns to choose from it’s your best bet for family picnics and impromptu ball games. You'll also find Victoria Park Bowling Club on site. Newcomers to the game, and practiced hands, are positively encouraged to give it a whirl. Regular ‘Come-and-Try’ sessions (costing £3) are rolled out in the summer months, so keep an eye out on their website and notice board for more details. A i N S DA L e B e Ac H

e sandy expanse of Ainsdale Beach is a favourite spot for long strolls beside the sea, cruising the waves with some swell windsurfing, and galloping along the sands on horseback. Not to mention traditional games of beach cricket and lavish picnics amid those glorious wide open spaces. 108

Yet another classic Victorian Park, dating back to 1874, the Botanic Gardens nestle in the quaint neighbourhood of Churchtown. Take a leafy stroll amongst its floral splendour where you'll come across a fernery and an aviary that's fit to burst with exotic birds and furry favourites including rabbits and guinea pigs. ere's a boating lake, picnic areas, and even a toy train that winds a path around the park. Plus there's a sizeable play area and a wholesome cafe specialising in homemade morsels and sells a variety of gifts and toys. e on-site museum gives a great insight into the gardens' colourful history, since it's gates first swung open in 1874. eco ViSitoR ceNtRe

is award-winning centre was designed with sustainability squarely in mind. Situated on the Esplanade Park and Ride site, you can do your bit to go green by hiring one of an array of bikes – from tag-a-longs, trailers, children's and adult bikes – and getting out to explore our coastal trails.


PARKS AND Gardens Whilst little ones can learn all about the environment with various interactive displays about energy, transport and climate change. e building itself is a bit clever too. e lightweight aluminium roof is designed to collect rainwater to flush the toilets. Energy efficient glazing maximises winter sunshine and an overhang provides cooling shade in summer. Superinsulated walls and concrete floors encourage thermal storage and presence sensors control the lighting, heating and hot water systems. At the Northern section of Marine Drive you'll encounter a bird watcher's paradise in RSPB Marshside. is picturesque coastal reserve comes alive with hundreds of chattering avocets and lapwings in the early summer months and there's plenty to spot with every changing season. It's free to enter and within its boundaries you'll find two hides (both glazed, one heated), a viewing platform and three viewing screens, all linked by pushchair accessible trails. Finally, if you can tear yourself away from the wrought iron elegance of Lord Street's shops and cafes, just across the road - and stretching the length of this illustrious thoroughfare you'll find Lord Street Gardens. Many of us locals merrily wander through this picturesque setting oblivious to the fact that this landscaped expanse, and it's smattering of trees, flowerbeds and fountains, is in fact a park in its own right. Pitch up here on a sunny day and you'll find no shortage of cosy benches to take a load off, nibble your sandwiches, and watch the world go by in a blur. So now you've got your itinerary sorted, all that's left to arrange is the Pimms and strawberries, an extra large picnic blanket, and an obligatory frisbee. Oh, and some sunshine! We can't guarantee that last one unfortunately but here's hoping El Niño can work some magic for us. summer 2014

International motorcycle stunt rider Steve Colley will also thrill the crowds. e three times world, British and Italian champion will be performing two stunt filled shows each day.
