PEARSON RANCH JERKY, SNACK STICKS AND SUMMER SAUSAGE YOU COULD NEVER TURN THEM DOWN!

By: Gail Veley The next time you pack a backpack, tackle box or picnic basket, Marvin Cromwell/Pearson is certain there’s something you’ll want to include inside – Pearson Ranch jerky, snack sticks and summer sausage. Made from elk, venison, bison and even wild boar, Pearson Ranch products have a taste and texture unlike any other competitor’s products and are thoughtfully produced so as to not include MSG, gluten, soy, nitrites or nitrates. Sea salt and celery juice are used instead to help cure and preserve every product whose meat starts first at USDA inspected plants prior to being shipped to final USDA inspected comanufacturing locations.

Unlike other businesses, COVID-19 hasn’t slowed down Pearson Ranch Jerky sales at all. In fact, the opposite has happened. Sales increased 44% last year as people either spent more time outside, or more time at home snacking. The end result has meant hundreds of retailers from travel centers and truck stops to popular sporting goods stores carry their products, which evidently are too intriguing to pass by.

“We’ve found our customers really enjoy the taste and the convenience of having something healthy and different to snack on,” said owner Marvin Cromwell/Pearson, who along with his wife Yvette, son Matt and brother Bret operate the business. Although they raise and use some of their own animals for their products, high demand for their products necessitates purchasing animals or meat from other ranches, farmers, co-ops and wholesalers.

A family passion for raising livestock began with his great-grandfather’s immigration from Germany and settling and ranching in eastern Colorado. In 1959 Marvin’s great uncle, Ken Pearson, started Pearson Ranch in the mountains of southwest New Mexico. Forty years later, in 1999, Marvin’s whole world changed after his mother handed him a newspaper article about raising and owning elk. He met his wife the following year and together, they put up some high fence and started raising some elk in New Mexico on the Pearson Ranch, which he had taken over in 1994. After a fortuitous meeting of Scott Salonek at a NAEBA convention, the

production of Pearson Ranch brand elk jerky, snack sticks and summer sausage began. Shortly thereafter in 2003, bison products became available followed by venison and wild boar in 2014. Today, after requests for more traditional beefbased products from their retailers, they have developed Cowboy Original and Hot ‘N Sweet beef jerky as well as green chile and autumn chile snack sticks made with New Mexico’s worldfamous chile’s.

Twenty-one years of devotion and dedication to this business has enabled Marvin, his family, and employees to make a name and presence for themselves and provide some of the best products available anywhere.

Marvin’s dedication run deeps and has made such an impressionable impact on Matt, that he is now their V.P. of sales and marketing and oversees six sales representatives in numerous states and their direct store delivery (DSD) routes. This makes one thing certain - business isn’t slowing down. As Marvin looks to the future, he hopes for this: An ever-growing business, teaching ranching and horsemanship to his oneyear-old grandson (a 5th generation Pearson), hunting vacations and the time to take Yvette out dancing, doing exactly what they were doing when the Pearson Jerky idea began 21 years ago.

P

urchasing a cheap doe or breeder buck is the most expensive mistake a deer farmer can make. Investing instead in top quality DNA pedigreed does is perhaps the key to a deer farmer’s overall success, offers Daniel Thomas of Daniel Thomas Whitetails and Louisiana Whitetails in Springhill, Louisiana. Although budget considerations can weigh heavily in the decision of how many and what type of deer to buy,

a deer farmer is wise to spend their money on quality, any day, rather than on quantity. Given that any doe will average 18 to 20 fawns if she is well taken care of and lives a long-life span, both “below average” does as well as proven DNA pedigreed does cost the same amount of money and time to feed each year. Likewise, every spring “below average” does produce the same amount of offspring as proven DNA pedigreed does. However, with one exception. “The proven well-bred DNA doe will produce other well-bred does and perhaps even breeder bucks,” Thomas emphasized. “You will make substantially more money from that doe and she will pay for herself over and over again.”

Thomas believes below average does producing below average offspring will eventually “ruin your farm as a result of offspring who mature more slowly,” he said. “You can’t wait until bucks are three or four or five before they leave your farm, unless you are a hobby farmer. As a business owner, you want them to be at least 220” plus and off your farm by the end of their two-yearold year. Otherwise, they are costing you too much to keep around, including fatality risks as they get older and more aggressive. So, ask yourself: Do you want 18-20 high end deer or 18-20 deer you’re going to break even with?

FARM STORY said. “Remember that hunters, as part of a national market, are willing to drive or fly to whatever parts of the country they prefer to hunt, and Louisiana would be wise to stay competitive in an effort to keep attracting them to our state,” he explained. Therefore if, for example, a preserve owner is willing to pay a deer farmer $3,750 to $4,000 for a buck who measures between 195224”, the profit margin for this buck could be much more substantial if they reached that size by two, rather than at three or four or five. With the additional understanding that deer reach their genetic potential through proper nutrition and good management, they also can be expected to grow and produce well if they come from proven

DNA pedigrees that are known for producing 220” plus two-year-olds.

In Thomas’s opinion, “if a deer farmer will not spend the money to get their does DNA’d, there’s usually only one reason. There are “holes” in their pedigree,” he said. “If a breeder is not keeping up with DNA do not buy that doe. You have too much to lose in not investing in quality up front.” Thomas has had more than 10 doe fawns born in one day on his farm. “Some of our does are such good Mommas that when they stop to let their fawn nurse, there will be two or three pen mates who show up and nurse her at the same time. Without DNA it is almost impossible to know

their pedigree,” he said.

Taking all of this into consideration “ultimately, it is almost impossible to breed successfully out of low-end does regardless of whether or not they are going to a breeder farm or hunting preserve. However, with the right breeder stock released into the preserve, it is possible to raise 200” plus two-year-olds annually.” With the future of the deer industry looking rather bright for all who are involved in various parts of the country, especially Louisiana, Thomas encourages every serious deer farmer to carefully evaluate their inventory and ask themselves a heart-felt question. “Are my does better off as breeding stock or meat?” he said. “The worst thing you can do is buy a cheap doe, because all of her offspring are either meat does or very low-end bucks. Either way, the farmer loses.”

T

here is a peacefulness felt inside Mary Ann Hall when she’s outside with her deer.

Pitching alfalfa hay to her eager takers as the sun brings warmth to the day, fills her soul with gratitude for the opportunity to raise deer At Solid Rock Whitetails, the farm she has operated along with her fiancé and KALA Chairman Tony Maddox and stepson Luke in Winchester (central) Kentucky, since 2017. Most days, Hall feels more satisfaction raising whitetails than she typically feels at her full-time job as a physician’s assistant. Yet, in her role on the farm, everything she has learned and done as a P.A. enables her to diagnose, administer I.V.’s, give shots, suture velvet, cast a broken leg, listen to wheezing or crackles in lungs and find appropriate correlating human-to-animal medications to treat virtually every situation that comes up with their deer.

Pulling on scrubs five days a week and seeing to the well-being of human patients takes an interesting turn when Hall’s white coat and earrings come off and the jeans and muddy boots go on. And it isn’t just her vast medical background that in her life of 46 years now comes intuitively and naturally, it’s her ability to bring the devoted and loving touch of a woman to raising deer.

“Women bring a very caring, patient and nurturing aspect,” Hall said. “Men

Both women agree that the willingness to perhaps work harder than you have ever worked in your entire life, is also a necessity when it comes to running a family-owned and operated deer farm. There isn’t one job that either woman has ever shied away from whether it be putting up a fence, record keeping, feeding, paperwork, financials, sending bills or gathering

Fawning season brings an expected increase in the commitment that she, Tony and Luke have for their farm, but all throughout the night when fawns first arrive, it’s Hall who is preparing and feeding bottles to any newborn that might need one. Sharing her strong protective mothering instincts for fawns is Mitzi Holland, who along with her husband Jason and son Jack have operated Barren River Whitetails in Gamaliel (south central), Kentucky since 2018. “We also raise cattle, but I’ve never felt like they were mine,” Holland said. “But with the deer I do feel like they are mine. People assume with agriculture it’s the male who’s running everything but that’s not always the case. Successful farms have the strong presence of women.”

Mary Ann Hall permits. While they are grateful for the fortitude that deer farming has required of them, they are also grateful for the life lessons it has taught their children.

“First of all, your children learn they are responsible for a life,” Holland said.

“They witness the cycle of life, and they learn responsibility and that the deer are not going to make it without you. How that will shape them as an adult is amazing. To realize nothing is free and easy and to not have a sense of entitlement and to know that hard work pays off.” In addition, Hall believes “the biggest benefit is teaching them responsibility and to have a good management and work ethic. We have a lot invested and when we lose an animal, it hurts us all.”

“I have a new respect for deer and a new perspective on how hard life is to live in the wild,” Hall said. “And in knowing how important women can be to the cervid industry, I’m very glad that Mitzi and I, along with so many others, can be a vital part of it.”

esearchers have discovered the longest distance ever recorded by an adult male white-tailed deer—close to 200 miles (300 kilometers) in just over three weeks. According to researchers, the finding has important implications for population management and the transmission of disease, especially chronic wasting disease, a fatal neurological disease.

“Deer are one of the most abundant, well-known and intensely managed species of wildlife in the United States,” said Remington Moll, assistant professor of wildlife ecology and lead author. “So, to make this discovery despite the fact that they are so well studied is pretty surprising.”

In the research study by the University of New Hampshire, published in the journal Ecology and Evolution, researchers analyzed data from GPS radio collars on more than 600 deer in Missouri. One dispersal, or longdistance journey, of an adult whitetailed deer stood out for its length, duration and age of the deer. The buck traveled close to 200 miles over 22 days by moving an average of almost 8 1/2 miles per day.

The buck crossed a major river seven times, an interstate highway, a railroad and eight state highways. To confirm the findings, the researchers surveyed

the scientific literature for other dispersals of white-tailed deer. The deer, known as N17003, stood head and antlers above others; his walkabout was 174 kilometers longer than any other recorded for an adult male deer.

On the evening of Nov. 25, the buck reached a forest patch where he would establish a final home range.

He remained in that patch of woods until his death that summer on June 20. Evidence at the mortality site suggested the buck died of hemorrhagic disease, although scavenging and decomposition prevented confirmation as cause of death.

“This extraordinary movement just jumped out from the others we tracked,” said Moll. “At first, we thought it was an error. It looks like someone took the GPS collar and drove across the state of Missouri.”

The findings were remarkable not only for the deer’s range—he roamed a distance equal to that between New York City and Baltimore—but also because unlike juvenile males, who move to seek breeding opportunities, adult males tend to stay put.

Movements were faster and more directional than those in their home territory and were faster and more directional at night than during the day when the deer frequently sheltered in forest cover. The journey, which happened in November 2017, occurred during hunting season.

“We call this a rare event, but we haven’t been putting collars out for that long, and not in these large numbers,” said Moll. “It’s entirely possible that it could be happening with greater frequency than we’ve known.”

Nearly eight million Americans hunt deer which contributes more than $20 billion to the U.S. economy. The researchers say that understanding the distance deer travel and how they do it is important for managing the species and controlling chronic wasting disease, a fatal neurological disease spread by direct contact and the environment.

Knowing that deer are crossing county or even state lines highlights a need for regional management coordination.

Funding for this study was provided by the Missouri Department of Conservation, the U.S. Fish and Wildlife Service and the University of Montana.

In fact, the new 14-day testing rule, when coupled with the current testing requirements will prevent an outbreak of this nature from occurring in the future.

Dear Texas Deer Breeders, As you are aware, Texas Breeders have been faced with the devastating news of 6 CWD Positive facilities. Our thoughts and prayers are with those facilities and all trace facilities that are caught in the web. Most recently, the Ox Ranch in Uvalde County received suspect positive results from one deer this past Friday. I was also informed yesterday that test results from the depopulation at WB Whitetails returned not detected on 100% of his facility. We must continue to emphasize and advocate for live testing moving forward.

DBC and TDA leadership have been actively engaged in an effort to calm the storm at TPWD and TAHC. The TDA scheduled some key meetings with members of the legislature this week and asked me to attend in support of the DBC. Representing TDA were John True, Jeff Jones, and Jody Phillips, and I attended representing DBC. We travelled to Canadian, TX to meet with State Representative Ken King at his local office. Representative King is Chairman of the House Committee on Culture, Recreation and Tourism. This house committee provides legislative oversight of TPWD. The following day myself and John True met with Senator Charles Perry in Lubbock. Senator Perry is the Chairman of the Senate Committee on Ag, Water, and Rural Affairs, the Senate Committee charged with oversight of TPWD. Our meetings were productive and served to inform our legislative leaders of the point of view of the deer industry in Texas.

Leadership from DBC and TDA are of the sincere opinion that all members need to engage in this discussion with their respective legislative representatives and senators in their area.

Additionally, we recommend all membership reach out to the TPWD Commission Member in their area. Make no mistake, special interest groups aimed at destroying our industry are actively communicating their message to legislators and commissioners.

John True and I are members of the CWD Task Force which is schedule to meet at TPWD on June 28. With certainty, we will be met with criticism of the current rules and a sense of urgency to enact changes. Your engagement in this issue is critical. I am requesting each of you contact your commissioners and legislators immediately.

Below are a few talking points that may serve to guide your conversation or correspondence with legislators and commissioners.

In 2016 the TPWD commission made broad changes to the comprehensive CWD and deer breeding rules to provide greater confidence that CWD was not being spread across the state. This rule package included a measure that required release sites to be high fenced to prevent breeder deer from being comingled with free range deer. Since that time breeder deer have only been released in high fenced pastures that are registered, permitted, and deemed qualified to receive deer.

Deer are not being moved to, or from, sites that are nonmovement qualified.

In November 2020, the TPWD commission enacted a rule requiring CWD testing to be submitted within 14 days of sample collection.

This rule became effective March 14, 2021. The deer breeding industry supports this rule and asserts, had the rule been in place prior to 2020, this recent outbreak would have been significantly reduced.

TPWD staff has asserted that they felt current measures were not working. This is not a valid statement. The disease testing rules are performing better than TPWD expected. CWD has only been detected in .003 percent of Texas’ 5.7 million deer population. Only 157 white tailed deer in the entire state of Texas have tested positive for CWD. The focus of CWD testing is unreasonably slanted at breeders… more emphasis should be placed on free range testing of hunter harvested deer. CWD will only be located where it is looked for intensely.

Texas deer breeders support release sites in Texas. From a hunter recruitment standpoint, all hunters and hunting opportunities are important to Texas. The TPWD Commission is actively engaged in hunter recruitment and understands we are losing hunters as Texas urbanizes. Release sites represent much needed additional hunting opportunity for Texas residents and visiting hunters. As Texas population continues to boom, land fragmentation will continue to occur. Smaller properties need all the tools available for intensive deer management, including deer breeding and the release of breeder deer.

Economic impact of the deer breeding industry to Texas $1.6 billion annually, and supports 16,892 jobs, most of which are in rural areas of the state, The deer breeding industry is a growing and important segment of the Texas economy, contributing to the vitality of rural areas of the state.

Texas is considered one of the best places in the world to come hunting or fishing. Much of the success enjoyed by anglers and hunters in Texas is due to the resources and tools available to our stewards and land managers. Deer breeding is one of those tools.

More emphasis should be placed on live testing of trace animals and positive facilities. TWPD recently depopulated a facility containing 221 deer – 100% not detected results were received.

They sacrificed an entire herd and found no positive animals while a live test was available.
