DH: FHA is deemed as the ideal platform for exhibitors to penetrate into the Singapore as well as the Asia market. What makes this biennial event unique for this 20th exhibition? TSM: FHA is deemed as an ideal platform because it constantly tries to introduce something new each edition. At the upcoming edition we will feature many ‘firsts’ in its 38-year history. Foremost, this is the first time that we had all the six specialised exhibitions sold out months before the start of exhibition. Due to the high demand of exhibitors, we not only maximised the space of the halls, but we will Food&HotelAsia2016 (FHA2016)

returns to the

Singapore Expo, celebrating its 20th anniversary from the 12th-15th April 2016. This biennial event forms the largest and most celebrated food and hospitality trade exhibition with more exhibitors and trade visitors from all over the world centralised in one strategic location, the gateway of a thriving Asia. For this year’s FHA2016, DagangHalal speaks to the Project Director of FHA2016, Miss Ting Siew Mui, as she gives insights of this event.

about

yourself and your responsibilities? Ting Siew Mui (TSM): I spearhead the planning, managing and execution of FHA (Food&HotelAsia) - Asia’s largest and most comprehensive food and hospitality trade exhibition and conference event. This involves working with our stakeholders on all aspects of the event as well as managing a capable team to ensure FHA stays ahead of the competition. DH: For how long have you been holding this position, and what are some of the valuable experiences you have gained from it? TSM: I’ve been involved in FHA since 2006. I think engagement

Through interaction

with industry players, I am able to keep abreast of the developments in this vibrant industry and thus keep the exhibition relevant to the industry.

Furthermore, FHA will have many professional and well-experienced market leaders such as Arla, Fraser & Neave, Owl International, Scelta Mushrooms and SodaStream Professional and more at the show. We also see the interest in sweet products and will be having a new competition to cater to the demand for sweets called the “Sweet High Tea Challenge”. Finally, we will be introducing the Halal Supermarket, organised together with DagangHalal, which aims to heighten the increasing demand for halal foods around the world. All these and more will add to the holistic and comprehensive experience for trade attendees, whether they are there to attend the exhibitions, the conference and training courses or participate in the competitions. DH: This year’s exhibition has an impressive tag of, “the apple of the industry”. What message do you intend to convey to your audience? TSM: Our message has consistently been about ‘leading the pack’. We constantly strive to stay ahead of the competition and bring the best to the buyers. FHA is the most comprehensive business event catering to the food and hospitality industries in Asia. Like an apple, FHA offers trade attendees an all-rounded and holistic experience through its six specialised exhibitions, activities including intense, prestigious competitions, as well as a platform

We are looking at linking buyers with sellers at the Halal Supermarket and to provide more information about halal certification and qualification. At the conference, the new tracks in Hotels & Resorts Management and F&B Productivity will have industry thought leaders sharing their perspectives and views on the latest trends that will impact the food and hospitality industries. DH: Although the Muslim communities in Singapore are relatively small compared to neighbouring countries, do you think FHA2016 will be a great opportunity for halal companies to promote their halal products? TSM: FHA is a regional platform for buyers so we definitely see great potential in the halal market. Also, halal food is not just being consumed by Muslims, as many of the

DH: Can you share with me the facts and figures related to the halal trends in the previous FHA2014 exhibition? TSM: There were more than 100 exhibitors who showcased halal products, equipment and services at FHA2014. These companies come from various Muslim and non-Muslim countries and regions such as Indonesia, Malaysia, the Middle East and even Taiwan. DH: Do you see FHA to be more focused on halal in the upcoming exhibition? TSM: I won’t say that we will be more focused on halal in the upcoming exhibition but it is definitely one of the target sectors for us to develop because we see that it is gaining traction in this part of the world. Halal products and services have been featured in FHA in past editions and will continue to be featured as long as there is interest and demand for halal products and services. Exhibition Services. What is your opinion for this special event? Do you think this will ease trade visitors when it comes to sourcing for halal products? TSM: We see the value in this partnership with DagangHalal to organise the FHA Halal Supermarket as buyers who are sourcing for halal products now have a point of contact and won’t feel lost in this huge exhibition with so much to see and taste. The Halal Supermarket will be a single source of information for trade attendees and definitely makes it easier for them to source for halal products. It will also help those who are interested in attaining halal certification, as they can find out more about the process at the Halal Supermarket. DH: Can you give three key reasons why visitors should attend FHA2016? TSM: FHA is the show to see and be seen at! It highlights the latest products, services and technologies available in the international market, for the region. Trade attendees get to sample these products and try out new technologies or services that are relevant to their businesses. They also have opportunities to extend their network beyond their home country to the regional and international markets. It

is a showcase for top talent from the region, from baristas to chefs in our various competitions. Not only will skills be honed through the competitions, the culinary talents from the region will also be able to benchmark themselves against world standards. Lastly, we have a viable platform for knowledge transfer. The FHA International Conference is the perfect breeding ground for new ideas and perspectives into the business. Delegates get to exchange views with industry thought leaders and their peers on the issues and trends impacting their business.

They should be segregated to avoid contamination. In the situation for chilled or frozen transport, halal and haram products cannot be transported together. The only leeway is given to halal livestock that is not slaughtered according to the Islamic ritual. incorporation of the right amount of spices to add the final kick to the chicken wing. For those that crave spices, Wing Zone, a famous restaurant in Singapore, will test your level of endurance towards spice. As stated through its name, Wing Zone is the specialist of chicken wings, and is guaranteed to give you satisfaction. During my last visit to Singapore, I came across this restaurant during a quick search on google. According to the reviews, this place is recommendable, and I decided to dine at this unique and promising restaurant. Wing Zone is located in Bugis+ at Victoria Street. It was easy to find the restaurant, as one only need to head up to level 4, and the restaurant can be seen located just beside to the escalator. From the ambient of the restaurant and the type of food served, it may seem that Wing Zone could be classified as a fast food restaurant. However, it is actually far from being another fast food chain. It is a casual fine dining restaurant, where the food is cooked in perfection upon ordering. On top of that, the foods are all halal, which gives Muslims a peace of mind. As a spice-lover myself, I decided to challenge myself by ordering Mango Fire Wings and a Grill Chicken Burger, along with Minute Maid Orange juice which helps to quench my thirst. As the foods were cooked upon order, it took a while for the food to be served, and I waited for a good 15 to 20 minutes. After taking the first bite on the Mango Fire Wings, I felt a sense of ambrosial. The sweet flavour from the mango dulcified the buffalo wing; however, the aftertaste gives out an explosive zesty taste to the chicken wing, which brought tears of joy to the eye. If you love spicy food, Mango Fire Wing is definitely a must! Next in line was the Grilled Chicken Burger. The taste of the burger was quite similar to the Mango Fire Wings. This is because the chicken burger

patty brought out a piquant smell, and it enhanced the taste of the burger patty. The buns were also soft and warm. I would recommend this dish to children or those preferring a milder level of spiciness, as the chicken burger was not as spicy as the buffalo chicken wings. Ultimately the food tasted delicious and I completely enjoyed my dinner. For those who are not keen on spice foods, do not fret as the restaurant also offer other flavours that are worth trying. For those who are more adventurous, I urge you to try the dish that is the spiciest. If ever you are in Singapore, head to Wing Zone. It is a must try for all!
