LETTER FROM THE EDITOR “Eating Together” In the steamer is the trout seasoned with slivers of ginger, two sprigs of green onion, and sesame oil. We shall eat it with rice for lunch, brothers, sister, my mother who will taste the sweetest meat of the head, holding it between her fingers deftly, the way my father did weeks ago. Then he lay down to sleep like a snow-covered road winding through pines older than him, without any travelers, and lonely for no one. In “Eating Together” Li-Young Lee, one of my favorite poets, writes about partaking in meals together with his family. There is a strong sense of community related to particulars of scent and spice and the idiosyncrasies of manner. Lee reveals the extraordinary in the ordinary as he recalls a typical family meal. Something mysterious and beautiful exists in the moments of customary calm as loved ones share the common ritual of eating. And it’s no surprise that Lee’s memory of his father eating trout leads him to thinking about his father’s death. Because in the seemingly mundane and routine act of eating together, an extraordinary thing

The fashion set has been crowding eateries in Lincoln Center every day for the past week — but not for a big greasy burger filled with cheesy goodness and bacon. Rather, it’s been the much more predictable spinach salad with Parmesan cheese, spiced pecans, pear and vinaigrette. But there’s a twist; they’re splitting the salads. These restaurants typically expect that a four-top table will do about $130, but with the fashion crowd, they only do about $70. The owners weren’t complaining because the business was fantastic this past week. Also, the fashion flamingoes tip pretty well, even if they only eat like sparrows. This posed a really interesting question to me. “If we could make Oklahomans more fashionable, could we also make them healthier and leaner?” This is a challenge that intrigues me. Just like Oprah and so many others, I have dealt with weight issues my whole life. I am the first to say, “Feel beautiful at whatever weight you are,” but I am also guilty of wanting to shed a few pounds to get into that pair of designer jeans or a swimsuit. I would like to positively promote a healthier lifestyle through fashion. The public is increasingly fascinated by what celebrities and models eat. The public’s more recent fixation with celebrity eating is about how the trend has shifted to starlets telling us not about what they don’t eat, but how much they do eat! And, we love to hear it. There’s even a new acronym to describe this fascination: DIPE, which stands for Documented Instance of Public Eating. The message: The fashion/celeb clan can wolf 30

I’m reminded of that old Pantene shampoo commercial where a barefaced, straggly hair model would say right before her on-screen transformation: “Don’t hate me because I’m beautiful; in the morning I look just like you.” Phew. I encourage everyone to either look in your closet and see if there is a garment that is just a little snug or small and pull it out. This is your new goal point. Or if you are like me, you would rather head to your favorite shopping destination and pick out a new outfit. Something you really love. Next, try it on in a size smaller. If it is a realistic goal that you can meet, then this should be your new outfit to try to get into. Now don’t just starve yourself, but make small changes like taking a walk three times a week or laying Johnathan Kayne off sodas.

Do you happen to have areas of increased pigments, red spots or brown spots on your skin? If so, don’t worry, a lot us do. In fact, we all have them. Brown spots and red spots look great on a designer purse or shoes. They also seem appropriate on animals at the Zoo. However, they don’t “play so well” on Human Skin. Spots, areas of red or brown hyperpigmentation (increased pigmentation/coloration) or abnormal pigmentation are usually the result of sun damage, normal aging, or genetics. Even though they are commonplace and widespread, people tend to be very self-conscious about them, especially when they occur on the face and hands. They feel that these “imperfections” detract from their appearance and attractiveness. Nationally, and in OKC, red spot and brown spot removal are popular reasons to visit the local med spa, esthetic medicine specialist or dermatologist. WHAT IS AFT OR IPL? AND HOW CAN IT HELP? Advanced Fluorescent Technology (AFT), otherwise known as Intense Pulsed Light, skin treatments using the Photo-rejuvenation process represent a breakthrough in age-defying skin care, which are specific treatments that fall under the heading of Photo-facial treatment. This new technique treats skin damage non-invasively — there is no disruption of the skin's epidermal surface. Why choose AFT over other treatment options? Laser resurfacing and deep chemical peels often send patients into hiding, as they wait for redness and swelling to subside. Microdermabrasion addresses many skin irregularities, but it’s not effective against all complexion problems including redness, flushing and broken capillaries. FIVE EASY AND HEARTY FALL RECIPES
BUTTERNUT SQUASH SOUP Soups are great for lunch, between-meal snacks, or paired with dinner. And homemade soups in the fall and winter are particularly satisfying. However, they can be labor intensive, so we've made it fast and easy for you. Purchase some fresh, fall butternut squash and enjoy.
Fall has finally arrived, and with it crisper weather. It's time for some easy, cool-weather comfort food, and we have just the ticket. Below are quickly made, rib-sticking recipes that will appeal to all. And it's pigskin time again, so we haven't forgotten to toss in a few football favorites.
In a large stock pot, heat the olive oil. Add the onion, garlic, and a pinch of salt and pepper. Cook over medium heat until the onions are soft, but not brown. Add the squash and a little more salt and pepper, cooking until tender. Add enough chicken stock to cover the squash along with the cumin, cayenne or chili powder, and a tad more salt and pepper if you like. Boil. Let simmer for another 20-30 minutes and serve.

FLANK STEAK Flank steak is a versatile and economical lunch option that is sure to please any crowd. You can grill this recipe in the backyard or use a grill pan in the kitchen. This recipe is always great along with a simple green salad. Ingredients: ¼ cup olive oil 4 cloves garlic, smashed 2 tablespoons fresh lemon juice 1 teaspoon sugar 2 teaspoon salt 1 teaspoon pepper 1 ½ pounds trimmed flank steak Combine the olive oil, garlic, lemon juice, sugar, salt, and pepper. Marinate the flank steak in the mixture for a minimum of 30 minutes. Shake off the marinade and grill or cook in a lightly oiled grill pan for about 10 minutes per side over medium meat. 42

Ingredients: 1 small butternut squash peeled, seeded, and cubed 1 medium onion, finely diced 3 cloves of minced garlic 1-2 cups chicken stock 1 tablespoon olive oil 1 tablespoon fresh thyme 1 tablespoon chili powder or cayenne pepper pinch of cumin salt and pepper to taste
GRANNY PUD'S TANGY CHICKEN DINNER Granny Pud had a huge family to cook for, so she liked her meals ample and easy. Her tangy chicken never fails. Ingredients: 3-4 pounds chicken pieces 2-3 large white onions 24 ounces egg noodles about a bottle and a half of French dressing 2 tablespoons butter Preheat the oven to 400 degrees. Clean and salt the chicken. Place it in a baking dish with a few pats of butter. Halve the onions, slice them thickly, and toss them over the chicken. Pour just as much French dressing as you want to all over it. Cook for an hour. Serve over boiled egg noodles.
SPICY BAKED CHICKEN WINGS Now it's time for some tried and true tailgating eats. As chicken wings are a game day standard, that's where we'll start. The fact that you bake these instead of frying them saves a lot of time and mess, so you'll never run out. Ingredients: 5 pounds frozen chicken wings ½ cup butter 2 cups Louisiana hot sauce 2 tablespoons white vinegar 1 tablespoon flour Blue Cheese dressing (of course!) Preheat the oven to 400 degrees. Layer the frozen wings in a single layer in a shallow baking pan. Bake for 25 minutes, then turn. Heat the butter, Louisiana hot sauce, and vinegar, whisking it until the butter melts completely. Slowly add the flour and stir the mixture until it's as thick as you want it. Drain the wings, and let them cool for a few minutes. Pour the sauce over your wings and toss. HOT RED'S FUNKY TATER SALAD Let's face it: potato salad is boring. The good news? Hot Red's is anything but! Ingredients: 2-3 pounds red potatoes 2 small onions, chopped in thick pieces ½ cup spicy mustard ½ cup mayonnaise ½ teaspoon dill
1 tablespoon curry powder Tabasco to taste 1 tablespoon pickled jalapenos Cut the potatoes into healthy chunks and boil. Drain and add the mustard, mayonnaise, dill, onion, curry powder, and Tabasco. Mix well and top with the jalapeno peppers. RED ONION DIP You can't go wrong with dip for a game day snack. This onion dip takes almost no time to make and puts that congealed, inedible goop available in the grocery store to shame. Ingredients: 3 small red onions, finely chopped 2 cups beef stock 3 cloves minced garlic 1 teaspoon fresh chopped parsley salt and pepper to suit your taste 1 teaspoon balsamic vinegar 1 cup sour cream Cook the onions, beef stock, garlic, salt, and pepper in a skillet over medium heat until the onions have absorbed almost all of the stock. Let the mixture cool, then stir in the vinegar, sour cream, and parsley. Serve chilled with veggies, chips, or baguette slices. You're done. Everyone's been fed, and you weren't too busy cooking to enjoy the game!

SHOCK TOP RASPBERRY WHEAT This is a newer Belgian-style wheat ale, introduced just this year, and it has the same smooth, refreshing taste of Shock Top Belgian White, but with a hint of raspberry. Serve it the same way—in a tall, wide-mouthed glass to showcase its foam head. MICHELOB ORIGINAL LAGER This is a European-style lager with a deep body and caramel malt. This beer is full-flavored, and it should be served in a traditional pilsner glass. It pairs well with Italian foods, particularly those drizzled with balsamic vinegar and also goes well with barbecue chicken breast and steak.
MICHELOB AMBERBOCK This is a dark, American bock-style lager with a nutty aroma and a hint of caramel malt. This lager is brewed using 100 percent malt and goes great with German-style foods. This beer also goes great with chocolates and cheeses, and it is best served in a tulip-shaped glass.
CZECHVAR This 1895 Czech lager hit the United States in 2007, and its delicious taste is desired by those seeking a perfect balance between sweet and bitter. It’s made with only top Czech ingredients, including Artesian well water that rests 300 meters deep! This is not your typical lager.
STELLA ARTOIS Stella Artois is a golden, Belgian lager, and this one is a classic. First brewed in 1366, there is only one way to serve this beer right, and that nine-step process is called the Belgian Pouring Ritual. This lager is best served with intense Asian or Indian dishes including curry.
LOWENBRAU From Munich, Germany comes this high-end imported lager with an herbal hop aroma. Lowenbrau means “lion’s brew” and is a traditional lager dating back to 1383. It goes great with grilled chicken, Pan-Asian dishes, and shellfish.
HOEGAARDEN Curaçao orange peel and coriander help make this Belgian white ale truly unique. With a rich history, dating back to 15th century Belgium, this beer has a refreshing flavor that goes great with fish dishes, especially those involving citrus. Just keep it cold! LEFFE BLONDE This is another classic Belgian beer, usually referred to as an “Abbey” beer, with a light, fruity flavoring and delicately bitter aftertaste. It dates back to 1240, and it is made with only the finest ingredients. You can pair it with hearty meat dishes like steak or pork loin, or you can even use it to compliment subtle cheeses. BASS Bass is a very popular English pale ale, and its recipe has not changed since 1777. It was painted by Manet, and it was served on the Titanic. Bass goes great with smoky poultry dishes and pastas. It should be served in its signature tri-glass and can even be paired with a stout beer. BODDINGTONS Boddingtons is a medium-bodied English pale ale with an easy-drinking flavor. It has a light sweet flavor and lingers in the mouth with an enjoyable aftertaste. BECK’S Beck’s is a popular German pilsner that uses only the finest, top-grade barley and hops. Brewed in accordance with the German Purity Law of 1516, it has a truly unique, full-bodied taste, and the recipe has been honed and cultivated through generations. BECK’S DARK As the name suggests, Beck’s Dark is a dark German pilsner with a sweet, lingering aftertaste. By roasting the barley malt, the beer is given a dark, copper color. Beck’s Dark sets itself apart from other dark beers because it gives a robust, full-bodied flavor while keeping the refreshing taste of a lager. By doing this without heat, the beer maintains much of its original, slightly sweet flavor and balance. REDBRIDGE Redbridge is a specialty, full-bodied lager that is gluten-free. Redbridge has a unique fruity aroma balanced with a moderately hopped finish. Redbridge is best served in a glass with a wide opening or pilsner-style glass, allowing the beer to showcase its foam head. Pair this beer with robust meats such as lamb or veal. WILD BLUE Wild Blue is another specialty beer offered by Anheuser-Busch. It is a fruit-infused lager and has a delightful ripe blueberry flavor and aroma and is finished with a tart kick. HURRICANE HIGH GRAVITY This spin off of the original Hurricane is a high-end malt liquor with full-bodied flavor and a smooth finish. It still has a sweet taste and aroma, but with a more smooth and distinct taste than most malt liquors.

WIDMER BROTHERS OKTO This is a great Oktoberfest ale with a unique twist. The dark orange-amber beer with an off-white head has a grapefruit and roasted malt aroma. MARGARITAVILLE SPIKED LEMONADE This is a very new drink, introduced this year, and it is a great-tasting malt beverage from Anheuser-Busch. It carbonated with 100 percent natural lemon flavors, and Margaritaville also offers a spiked iced tea. GOOSE ISLAND’S 312 URBAN WHEAT ALE 312’s fruity ale flavor and spicy aroma is coupled with a smooth, creamy body, which gives this beer great balance. It has a hazy straw color and is best served in a tall glass. 312 goes great with fish and salads, and also can be paired well with mozzarella cheese. HURRICANE MALT LIQUOR This full-bodied malt liquor is hearty, and its fruity, slightly sweet taste makes it a smooth drink. Hurricane has a yellow color and white head and has a subtle sweet aroma.
PEPE NERO Pepe Nero has a distinct, roasted chestnuts aroma and a dark, mahogany color. It is a Belgian-style farmhouse ale and is best served in a wide mouth glass. After graduating from Oklahoma State University in 2005 with a BS in Hotel & Restaurant Administration, Jennifer began working as a wedding planner and started her own company, A Black Tie Affair. After a few months of working strictly in the wedding planning arena, Jennifer decided she wanted to do more with her degree, so she accepted a job as a manager at Baker Street Pub and Grill where she stayed for two-and-a-half years. She enjoyed the spirited environment and the numerous people with whom she interacted, but the hours of the bar industry weren’t necessarily for her. So Jennifer began exploring other avenues of interest still in her area of expertise. This is when she discovered Glazer’s of Oklahoma, a brokerage for Fine Wine & Spirits. She became a Sales Representative for Diageo and Moët-Hennessy, and she currently represents one of the best and largest portfolios with products such as Crown Royal, Captain Morgan, Jose Cuervo and Smirnoff. In 2011, Jennifer received an award for Sales Person of the Year, and she has recently become the State Sales Product Marketing Manager. Jennifer said, “I absolutely love what I do. I am one of the lucky people. I enjoy what I do so much that it doesn’t even feel like work.”

Britton Stewart is a graduate of UCO where he received an undergraduate degree in History and continued to earn a Masters in Education. Britton worked at Cafe 501 for six years where he started as a server. Britton became intrigued by food and wine, so he took the initiative to learn more in this realm, which eventuated in him becoming a manager. Britton utilized his college studies to develop the training program for 501 that ensures staff has all the necessary tools and resources to become the best at providing personalized and professional service. One of the things that Britton loves about working at 501 is the opportunity to form relationships with the numerous regulars who visit. Some regular customers come to 501 daily, and others come weekly. Britton is amazed that many people still don’t know that Cafe 501 is a full service restaurant in the evening with an impressive menu and a tremendous variety of choices. Cafe 501 is definitely not just a favorite lunchtime spot; dinner is a must try. Britton is most proud of the great staff and team that has been developed and works extremely well together. Ask him what his favorite entrees are. He says it’s definitely the Coyote Chicken Sandwich for lunch and the Crispy Chicken for dinner.
