HUBLOT, BIG BANG 20 TH ANNIVERSARY. In 2005 the Big Bang marked the advent of a new era in watchmaking, more closely attuned than ever to the privileges of its name. Twenty years after its launch, it remains the incarnation of a Manufacture that constantly pushes the boundaries of the imagination.
In the 1980s, Hublot shook the world of luxury watchmaking to its core. Doing the unthinkable, the brand entered the scene by combining two materials from seemingly opposing worlds: gold and rubber. With its distinctive porthole design and clear nautical inspiration, the aim was to create a watch that was both sporty and opulent, fulfilling the dream of the brandâs founder Carlo Crocco to have a watch that he could rely on when sailing and still look sleek with a suit and tie. In 2005, that same revolutionary mindset was brought back to life in new extremes with the Big Bang, boasting a maximalist design and oversized yet ergonomic proportions. Nothing would be the same.
BIG BANG
The Big Bang. The cosmic event from which all matter and time itself would be born. An entire ever-expanding universe created from a singularity event. The Hublot Big Bang would indeed usher a new reality for not just the brand, but the entire trajectory of contemporary watchmaking. Under its âArt of Fusionâ philosophy, the established rules were there to be broken in pursuit of absolute creative freedom. With the introduction of the very first Big Bang in 2005, this new approach would allow design and materials to reign supreme. Foregoing a traditional construction, Hublot deftly combined 18K pink gold, ceramic, rubber and carbon fibre in a layered construction that was unlike anything the world had seen until that point, opening a world of infinite possibilities. The original Big Bang went on to receive numerous awards and accolades, including the prestigious GPHG 2005 âDesign Watchâ prize. But it was just the beginning for the Hublot Big Bang, and the only limit was imagination.

In the years following the Big Bangâs introduction, Hublot would continue to redefine the rules and raise the stakes. Francesco Rubino, you are both General Manager of Kube Paris and Head of Food & Beverage here in Saint-Tropez. Tell us about your career path.
âI joined the Machefert Group in 2019. Year-round, Iâm General Manager of Kube Paris, in the 18th arrondissement. This summer, Iâm in Saint-Tropez as Food & Beverage Manager. In fact, Iâm lucky enough to assist Marc Leveau, the hotelâs General Manager, and itâs a real pleasure to work alongside him.â
What exactly is your role here in Saint-Tropez?
âI coordinate the entire catering operation, from room service to the rooftop and our three swimming pools. Iâm the link between the kitchen, service, reception, accommodation, housekeeping... Iâm there to welcome our guests and make sure everything runs smoothly, 24 hours a day. A plate of pasta at 5am? A club sandwich by the pool? Weâre always available to respond to requests, from the most classic to the most exclusive.â
The restaurant has recently evolved. Can you tell us more?
âYes, we welcome a new chef, who is taking over the kitchen with a completely redesigned menu. Itâs a large, structured, Mediterranean-inspired menu. It covers the restaurant, rooftop, pools, room service and breakfast. The cuisine is generous and accessible, combining sharing dishes with more gourmet fare: soft veal escalope with chanterelle mushrooms, perfectly seared fillet of beef, delicate grilled red mullet or a whole sea bass roasted with fresh herbs. On the fresh side, magnificent mixed salads, heirloom tomatoes worked into textures, finely carved purple artichokes, sea bass or salmon carpaccios subtly enhanced with umami sauces. And letâs not forget the summer staples: generous Niçoise salad, creamy burrata escorted by grilled vegetables... â
âYes, without hesitation: veal escalope Milanese. Itâs revisited here in a very elegant way, with a fine, crispy breading. It can be shared, and is served with a fine salad, parmesan and arugula. Crisp, light and perfectly mastered. A simple yet refined dish. Delizioso!
Who is this cuisine aimed at?
âFirst and foremost, of course, our hotel clientele. But Iâd also like people from the region to make the place their own, to come and have lunch or dinner in this five-star setting, between sea and pool, for a reasonable price. To treat themselves to a wonderful evening, have a good time and simply eat well.
What do you think sets you apart?
âService. We cultivate a warmer, more Italian spirit: we take our time, we understand our customersâ desires, and we bring them a real experience. And then, of course, our cuisine: simple, gourmet, convivial. A chic barbecue, a dinner with friends... Thatâs what itâs all about.â

Since the creation of the Machefert Group, how would you define your vision of hospitality?
The story of the Machefert Group unfolds in two chapters: the one initiated by my parents, and the one I continue to write today. Itâs a wonderful journey, as many of our peers believe that my parents either invented or introduced the concept of âboutique hospitalityâ to Paris in the 1990s. While the groupâs DNA remains rooted in distinct identities for each property, a resolutely boutique, independent, and family-driven spirit, and a unique emphasis on design, we are now expanding our vision of the hospitality industry. Our focus is increasingly on integrating diverse food, beverage, and event concepts into our existing propertiesâ with authenticity and boldness. This drive for diversification has led to a growing number of unique and coherent F&B experiences.
What values form the foundation of the groupâs DNA today?
The DNA of the Machefert Group is built on four key values: perseverance, generosity, pleasure, and boldness. These values reflect our daily commitment to remain independent in an industry undergoing consolidation. We fully embrace this stance and proudly pass it on to our teams and share it directly with our guests. From La Mezcaleria to Rehab to Cesar y Georgette, each space tells a story crafted down to the finest detail, even if that means leaning into maximalism when it comes to âstory-living,â because itâs precisely this level of precision in our concepts that makes the difference.
How do you reconcile this quest for immersion with the French art of living?
France has long cultivated a true art of hospitality, rooted in tradition and refinement, which began to spread abroad as early as the 18th century and gradually absorbed Anglo-Saxon standards in the 20th century. At Machefert, we advocate for a contemporary, family-oriented, and elegant form of French hospitality, without merely replicating the sometimes rigid codes of the old school found in historical institutions. What drives us is the quality of human connection, sincere attention to detail, and the ability to create refined experiences without ostentation. Often, it is through closeness to the guest, genuine exchanges, and personalized stays that the true art of hospitality is revealed.
Why is responsible commitment now a priority for the group?
Our responsible commitment is expressed both socially and environmentally. On the human side, we are dedicated to welcoming individuals from a variety of backgroundsâoften from outside the hospitality sectorâ and supporting them in their training and skill development. A spirit of versatility, mutual support, and family prevails. On the environmental side, we design our spaces to last. Gastronomy is an integral part of our vision of hospitality. Our speakeasies, homemade restaurants, and wine bars elevate the guest journey, offering warm and genuine moments to all who walk through our doors. Who is your target audience across your various properties?
