Breaking ground to begin construction in academic building at Seward for new food science lab.

The new food science lab is still under construction in the academic building at Seward, but is expected to be ready for class by Sept. 8.

Staying safe with food science and safety program Seward County Community College/ Area Technical School’s food science lab began construction this summer. The lab is expected to open Sept 8. The Food Science and Safety Program is in its second year here at SCCC/ATS and has lots of opportunities to offer, such as local area jobs in the food industry and the new food science lab.The program offers various courses such as food science and meat science.

Chris Guyer, food science and safety program specialist at SCCC/ATS, has a few simple tips for college students in order to stay food safe.

Hand washing is esential to food safety, but many may not be aware of the correct way to wash their hands. According to an article

on Centers for Disease Control and Prevention, there are five effective steps to washing your hands: Wet, lather, scrub,rinse and dry. By simply washing your hands, you are preventing yourself as well as others from getting sick.

Cross-contamination is also a big hazard related to food safety.

Guyer mentions that it might not seem like a big deal, but it actually is. An example of cross-contamination is using the same cutting board for raw meats and vegetables without washing the board.

We might not think anything about this, but harmful bacteria can stick to the vegetables.The bacteria won't be burned off on the vegetables as it is for meats. The bacteria is destroyed when meat is cooked.

Proper food temperatures en-

sure food safety. Plenty of us do not use a food thermometer unless we are cooking a turkey for Thanksgiving dinner. Proper temperatures can range from 145-165 degrees depending on what types of foods are being cooked. Guyer also mentioned that there are leftovers, they should not be left out for more than two hours, due to the bacteria that may grow on them.

Reheating foods is also as important as anything else. Leftovers should be cooked to 165 degrees.

Proper Refrigeration is also as essential as all the other food safety tips. Look at the picture on the left, do you see anything wrong with it? Nothing really, right? The proper way to refrigerate food is to put the meats at the bottom. This is because the liquids from the

meats might spill and fall on the fresh vegetables. According to the article, “ Clean A Refrigerator” by Sarah Aguirre on about.com, we should frequently toss all expired foods away and also wipe off jars such as sticky jelly and crusty salad dressing lids.

Fall produce available to pick starting Sept. 8 behind the agriculture greenhouses northeast of campus

The agriculture department at Seward County Community College/Area Technical School has an abundance of fall decorations growing. David Coltrain, sustainable agriculture resource program specialist said, “The field has about 1,000 pumpkins, 30 bushels of mini pumpkins and gourds, and hundreds of Indian corn ears.”

People from the community and students are invited to attend Tuesday’s evening session where they can pick produce and learn farming techniques at 6 p.m. Kristen McCann, former SCCC/ATS student, attended her first session recently and enjoyed the variety. “I picked watermelon, squash, cucumbers, tomatoes, and corn,” McCann said. McCann heard about the free picking through a coworker, and she loved the idea of them doing this. She mentioned she had made spaghetti squash and uses the cucumbers and tomatoes for salads and veggie sandwiches.

Dr. Kenneth Trzaska moved from the upper penninsula of Michigan to take his role as leader of SCCC/ATS after previous president Dr. Duane Dunn left for Kansas State University. Trzaska previously worked as Dean of Instruction and Chief Academic Officer at Gogebic Community College. Trzaska is the 10th president of SCCC/ATS. Trzaska has a fresh perspective and a new vision.

Q: A:

Where are you from?

“I was born in Buffalo, N.Y., and I was raised in Germany. I grew up in Germany my whole life, and then went to college in New York and then Illinois, where I earned a doctorate in the University of Illinois. A doctorate of education policy and education leadership.”

Q: A:

Can you tell me a little about your family?

“I am married. I have been married since 1997. I have a daughter who’s 17 so she’s going be in college next year, she’s a senior. Interesting fact about m family, my wife is from India. We meeach other in undergraduate school. We met each other in 1992 so we've known each other for 23 years.”

Q: A:

What are your interests outside of work?

“I like to read and run.

I enjoy every now and then a good foreign film.

That’s it. I just kind of keep it simple.”

Q: A:

What type of books do you like to read?

“Well, I have a master’s degree in English so I like authors like Ernest Hemingway. One of my favorite poets is William Stafford who wrote a book called ‘Walking the Australian Crawl’ which is one of my favorite books regarding poetry, thinking, writing and living.

It’s a great book. When I taught English in college, I would always recommend that book to students and they would usually get it. It was always good to have good discussions.”

Q: A:

You said you liked foreign films. What is it that you like about foreign films?

“I think foreign films are a bit more edgy.

They provide a deeper sense of social reality, political reality. I think they push the limits a little bit more. Plus I’m really interested in cinematography, and I think foreign film directors do a much better job of showing the world. The style of those films is very interesting. I actually used to guest lecture at a colleague’s film class at my last job, and I used to show a film called ‘For My Father’ which is an Israeli film.Often times the professor would joke, ‘I show twelve films and you show one, and they all like your film best.’ I think part of it is the story. It’s filmed in Jerusalem, and it just provides students a different perspective of what they would normally be used to seeing.”

What is your expectation for this school

year?

“My expectation for this school year is really to build upon the vision that we have. As one of my admired poets, William Stafford, said, ‘Be aware of the nowness of things.’ tune in to your surroundings. So for a good part of this year, this semester at least, [my goal] is paying attention to what’s happening, listening to my colleagues, as I like to call everyone on campus, my team members. I don’t like to divide members, I don’t like to divide people by faculty or staff. Everybody is a team member. Really know what’s on their mind and help that continue to build our vision and mission for the college. I want to look at growing our programs, I want to look at growing our enrollment, I want look at continuing to build our diversity among our students.

My ultimate noble vision for this college is to be the number one college in the state, to be a college that when people are thinking about it, they know they have to check out SCCC/ATS. So it’s really setting the stage for high expectations and for holding one another accountable, and for, last but not least, having a lot of fun along the way and enjoying what we do.”

How would you describe your name to newcomers?

Anything you would like to add in the backto-school issue?

“Trzaska. The z is silent, and people can call me Trzaska or Doctor T. A lot of people are trying to do that, and that’s fine. It’s of Polish background and there’s a unique story.

The name Trzaska comes from King Boleslaw. he was protected by this soldier. Everyone was attacking the king and then the soldier’s sword broke. The king gave him his sword, and then it broke again and he named the guy Trzaska. That means ‘he who hits hard,’ after this King Boleslaw of Poland. That is the legacy of the Trzaska name, so maybe in that fact there’s a level of intensity inside of me, which I think is kind of part of that name. I’m someone who likes to get things done.

There’s a lot of energy and passion in my work and I believe in building exceptionally strong relationships and being very genuine with everybody. I think part of that is how I grew up.

I traveled all over the world and I look at people as people. People are, in my mind, all the same and that’s the beauty of it . That’s kind of the energy I’m bringing into this college. So that’s a little story about my name.”

“Welcome, everyone. Come by my office anytime. I have a no-door policy. If anyone at any time wants to stop by and say hi, if there’s something in their mind, if they see me around campus stop me. I want people to see me as someone who is very accessible and who is a peer, and who is here to look out for them and make sure they have a great experience. This goes for everyone: faculty, staff, students and everyone on this campus.”

#KelbySpecs: Kelby Tomlinson a former baseball player at Seward County Community College/ Area Technical School is now playing for the Major League Baseball team the San Francisco Giants. Tomlinson’s career with the Giants started with a hit in his first at bat. Tomlinson’s remarkable rookie season is also continued with his first major league home run — a Grand Slam.

In 2009 SCCC/ATS Assistant Baseball Coach Mike Davidson was recruiting another player in Anadarko, Okla. when he stumbled upon Tomlinson.

Coach Davidson remembers sitting in the s t a n d s when he began to make small talk

with two men who turned out to be Tomlinson’s uncle and grandfather.

They discussed how well Tomlinson played, so Davidson stayed to see for himself.

Tomlinson stood out to Davidson because of his athleticism and speed. At the time no one had recruited Tomlinson so he took the opportunity and invited him to Seward for a visit. Tomlinson signed with SCCC/ATS a few weeks later in 2009.

According to SCCC/ATS Head Baseball Coach Galen McSpadden as a freshman, Tomlinson did not get much playing time so his confidence on the field was still short.

However the summer after his first year, Tomlinson traveled to Oklahoma City, Okla. and played with a summer team where he got the opportunity to play games almost every day, which built his confidence, said McSpadden. When Tomlinson came back, he developed faster than what McSpadden expected. He elevated his game and was making big plays.

Tomlinson's improvement was the product of countless early mornings and the right mental approach. The coaches never worried whether Tomlinson was focused or not. He was there to play, and that is what he was going to do with all

of his capability.

Not only did Tomlinson play for the SCCC/ATS baseball team but he also played for the semi-pro team the Liberal Bee Jays in the summer of 2010. Tomlinson’s experience while playing baseball at SCCC/ATS will always stay with him.

“Playing at Seward was an amazing experience. Some of my most fun moments happened during my time there and I’ll always remember my years playing there,” Tomlinson said. Being able to live amongst his teammates and hang out with them on and off the field was where Tomlinson said many fun memories were made.

McSpadden mentions that Tomlinson has also always held his values high.

“To me, Kelby exemplifies a simplicity in the game. He is a quiet ball player who just works hard. He is humble, and I think that humility is almost a lost characteristic these days,” McSpadden said.

Anyone who knows Tomlinson casually or personally will say similar things about him: he is a caring and humble individual who does not make things about himself.

“It's not about Kelby. He is not an ‘I’ guy. He cares about everybody that is around him,” Davidson said.

Former Saint lands among the Giants Tomlinson is a player who understands that nothing will be handed to him, and McSpadden also noticed this quality.

“I think he feels that baseball and life don't owe him a thing and he's got to work for all of it,” McSpadden said.

Davidson and McSpadden greatly appreciate the effort Tomlinson makes to volunteer his time to talk and work with the players at SCCC/ATS. They could not be more proud of what he has accomplished.

“He has his beliefs and he is going to do what he is going to do.

He is very strong in his Christian beliefs and his workouts and his regiments and those things he stays true to very much,” Davidson said.

When Tomlinson got the news that he had the chance to go to the big leagues and play for the San Francisco Giants, he called both McSpadden and Davidson in the late hours of the night to thank them for all that they did for him.

“To get the news that I was getting called up was exciting news. It was kind of surreal to know that all the work and effort you put it would be paying off, “ Tomlinson said.

Being the first baseball player from SCCC/ATS to make it to the

major leagues is an awesome experience for both Tomlinson and the SCCC/ATS Saints.

“My experience with the Giants so far has been unbelievable. I’ve been very blessed to be able to contribute to a team as great as the Giants.”

To m l i n s o n said.

Advice that stuck with him and he would pass along to others is that the only thing you can control is your attitude and your effort.

“My advice would be to keep working hard and enjoy the ride as long as you are given the privilege to play,” Tomlinson said.

Welcome Week is a week full of on-campus activities designed to bring freshman and sophomore students together. A variety of events were planned that ranged from early morning donuts to a photobooth set up in the union that students were able to enjoy.

Thais Baziquetto-Allen lands dream job as volleyball coach Newly appointed Seward County Community College/Area Technical School Girls Volleyball Coach Thais Allen came from the local high school excited to coach and put a larger emphasis being involved with volleyball exclusively and become closer to the sport she loves. When asked why she came to Seward Allen responded that at Liberal High School she only coached volleyball 3 months out of the year by coming to Seward County she was able to “Focus more on coaching.”

At the college level volleyball training goes almost yearround. Allen either coaches or recruits or trains 12 months out of the year. She is fully dedicated to the sport that brought her from her home country Brazil. Allen has been in the United State 11 years, she received a scholarship to play at a Saint Petersburg Community College in Florida. “It happened all at once” she said. After her two year career was done at Saint Petersburg she transferred to a 4 year institute where she finished her volleyball career as layer. When asked about her love and passion for the game Allen said “I started playing volleyball and sports at a really you age. My dad played volleyball and he taught me, my brother and my sister to play. I’ve been playing since I was 12 or 13.” Allen’s first coaching job

was just a year after she finished college, she was asked to be an assistant coach at Lamar Community College in Colorado. After one year there she moved to Liberal to coach at the High School. Allen coached at Liberal High School for four years as the head coach.

Last year she was offered an assistant coaching job here at Seward. As an assistant coach Allen’s duties were conditioning the girls in the off season and pre-season, assisting with travel and recruiting the new players. Now as head coach her job will expand more.

Through the years of coaching Allen said that she has learned a great deal. She said that the biggest thing she learned is “Getting the best out of your team. There are different players and it is a different type chemistry every year.” The previous jobs have helped Allen to coach for the team that she has that year, and as her philosophy states “You can’t coach every team the same way.” Allen also said that she learned how to “get the best out of all different types of players.” Allen looks forward to the new position as an opportunity to keep living her dream of coaching and helping students achieve their dreams academically and athletically.

Lady Saints welcome new assistant coach This year Seward County Community College/Area Technical School has added many new faces to the staff. Among those is the new Assistant Women's Basketball Coach DeAudra Brown.

Brown is from Rock Mount, North Carolina, and came here to help coach the women's basketball team. "[This job] was a really good fit for me and I believe I will do well here," she said.

Brown played basketball for four years. She played at St. Paul's College in Virginia and later continued to play at Elizabeth City State University in N. C. "I couldn't imagine myself doing another job," she said. "I love basketball and being around it! It is the best job to have."

Before coming to SCCC/ATS, Brown lived a pretty similar life. She coached a basketball team at community college in Arizona and says her responsibilities were pretty similar.

Although Brown does spend a lot of time on the court, she likes to do other activities as well. She enjoys going to the movies and reading during the off seasons. Living far away from her family she says is pretty tough, but when she is back in her home town she tries to spend as much time with them as possible.

As the new assistant coach, Brown has various responsibilities, ranging from recruiting and washing practice gear to running individual workouts. She tries to take on as much responsibility as she can to help out the head coach.

Brown hopes for her team to have success academically and athletically. "I'm excited to be coaching the best team in a great conference and to see the growth of the players after a year," she said.

Old friends turn into new coaches

New Seward County Community College/Area Technical School men’s and women’s tennis coaches Greg Owen and Chase Ashley came to Liberal to follow their passion of coaching and playing tennis. Both attended the same high school, Henrietta High School in Oklahoma.

Owen has been coaching six years but has been around tennis his whole life. After high school, Owen went on to play tennis at Southeastern Oklahoma University.

Ashley attended Northeastern State University and has been coaching for eight years.

Both were asked to come to Liberal to coach the rising Crusader photo/AJ Coleman tennis team of Seward County. When asked how it is for Greg Owens new SCCC/ATS tennis coach. two good friends to coach together, Owen replied “It’s easy to feed off of each other because we have the same mindset.” He went on to say that having different opinions also helps to see perspective when coaching. The coaches are very excited about their returning players but they are especially excited about the returning All-American Tare Mariga. They look forward to many intense practice matches as well. The other male returners are Des’mne Curtis, Christian Kurz, Dominique Apsley, Arthur Courbis, Mason Ramsey and Alvaro Peces.

The girls’ tennis team will also offer a new brand of action. On the girls’ team there are no returning players. They are “all new,” said Ashley. He went on to say the coaches are excited to see how the girls would do and how they would adjust to student life, as they have not all arrived on campus yet. They are especially excited and eager to work with Southern Utah University transfer Alba Payeras. One more interesting fact about this year’s tennis teams is that out of 24 student-athletes, eight of them are American and the rest are overseas transfers.

The Saints opened their season Sept. 4 with a scrimmage at Blue Bonnet Park and will also enjoy the privilege of hosting the Regional Tournament later on in the year.

W h a t caught my attention the most from this movie was the portrayal of the police department because it would immediately remind me of the current issues people of color face today.

T h e m o v i e evokes the same feelings that watching the news lately does. This movie is so powerful and so relevant.

As I watched the movie, it seems like we have not evolved as a society in the past decades, there are still unjustifiable acts of violence towards people of color that one should think are actions left to the ignorant past.

One of the main reasons I wanted to watch this movie was the casting. Looking at the actors will transport you to the late ’80s early ’90s. The casting director really made sure the actors looked like the person they were portraying.

Casting, acting, story telling, music and action, excelled on every point. If I had forgotten my student ID and payed full price, I would have not regretted a single extra penny.

New movies that will take you down memory lane

I walked in the movie theater with high expectations for “Straight Outta Compton”. I had been hyping myself up for this movie for a couple months and when I finally bought the ticket my level of excitement increased so much I could not stay still, then first scene opened and my eyes were immediately glued to the screen.

Eazy-E knocking on a door, trying to finish a drug deal when suddenly a conflict between him and the people in the house arises. I was hooked. I thought, this will definitely be a good movie, but suddenly LAPD arrives, literally knocking doors down, and I went crazy inside.

The first five minutes of “Straight Outta Compton have made it into my top five favorite action movies. If those five minutes were all there was to the movie, I would have been satisfied.

The movie follows the three founders of N.W.A. Ice Cube, Dr. Dre and Eazy-E along with MC Ren and DJ Yella and their rise to fame despite the struggles of financial issues, drug deals, sex and racism.

Refreshing start: Anahy Anaya was previously enrolled in Seward County Community College/Area Technical School in 2004, but made it only a year and a half before she had to put her education on hold. She became a full time employee to support her family.

Anaya and her family originate from Mexico City, where she was born and lived for her childhood. Her family consisted of her father, Alfredo Anaya; mother, Ofelia Anaya; and younger brother, Alfredo Anaya.

When they moved to the U.S., Anaya was 9 years old and her younger brother Alfredo Anaya was 5. Her family moved to Liberal to find work and to be closer to family.

When she started to take responsibility for her siblings, she was 17 years old in Liberal High School. Her family had grown to add 7-year-old Anthony Anaya and 1-year-old Ashley Anaya, when her moth“I am now er died of cancer. Despite her more focused, loss, Anaya was able to gradudetermined, ate high school, and enrolled for fall semester at SCCC/ATS and know in 2004. what I can get Anaya decided to continue from a college her education to help her family. “I choose to come to education.”

Life derailed Anahy’s college plans for 10 years, but now she’s back on track

cashier at a local Mexican store up until her third semester. Her father couldn’t cope with the loss of his wife, so he returned back to Mexico.

Anaya was left to look after her family. She dropped out of college and became a full-time worker at USD 480 as a parental coordinator while supporting her siblings.

Anaya didn’t see her father’s absence as a hardship, instead she tried to see things from his perspective.

“I didn’t judge him because leaving was his way of coping with the loss of my mother,” Anaya said. “I didn’t mind really because I was the oldest and I did what I thought was right.”

Anaya’s younger brother, Alfredo always looked up to her determined attitude.

“She was the person that raised us, from motivating us to do our best, to helping me pay for college,“ Alfredo said.

Alfredo, the oldest brother, who graduated from Fort Hays State University is now a Language Arts teacher at West Middle School. He is now helping Anaya raise their two younger siblings.

The middle brother, Anthony, is a senior in Liberal High School, and Ashley, the youngest, is an eighth grader at South Middle School in Liberal.

Anaya is currently 28 years old. She is technically a sophomore with 17 credit hours. Despite being a full time student, Anaya also works full time as a Quality Assurance employee at National Beef.

Even with a busy schedule, Anaya has high hopes for her future and completing her education at SCCC/ATS, and she is feeling recharged and refreshed.

“I am now more focused, determined, and know what I can get from a college education,” Anaya said.

Virtual Tour: As of fall of 2015 a new virtual tour of Seward County Community College/Area Technical School is accessible online.

Students wanted to use an old virtual tour made by student workers, but the link was broken.

“It was remarkable how the project received support from the Board of Trustees because it was expensive to get done,” said Rachel Coleman, director of marketing and public relations.

The Marketing Office and the Admission Office in charge of the project asked the company YouVisit to do the project. Its cost was between $10,000 and $12,000.

The Admission Office and Coleman are also interested in adding photos, like the garden in the center of campus decorated for fall with pumpkins.

The virtual tour was a need for the school. “We’re trying to make it really easy for students who come from low income families that can’t afford to travel to be able to look at the college to picture what it would be like.” ”So many of our students come from families who never sent anyone to college, so it is really an ed-

Coleman mentioned staff wants to make sure that the present website reflects the presence of the college.

The staff is still working on updating the virtual tour. According to Coleman, it is a continuous process.

The staff wants to add sport events , musical trailers and photos on the virtual our because people need to see what is really good about SCCC/ATS, At the bottom of the picture of each facility, students are able to see an actress giving more details about what is going on at this place.

“We wanted someone who is easy to identify with” Coleman said, “someone who might be your next door neighbor.”

The virtual tour is designed to help students navigate the campus online and can be accessed through the sccc.edu homepage.
