My father knew best

As long as you tell the truth, you don’t have to remember what you said. ~ Anonymous ~ My dad passed 30 years ago this past April 15 – the only year in his life he dropped his taxes off before midnight. My dad was quiet but outspoken, and firm by using very wise words. While he was at work, my mom kept order around the house in her kind hearted way. I remember them dancing in the kitchen many times; I was lucky to have parents truly in love.

I have many memories of my dad’s words of wisdom, but remember seeing him angry only once. He was reading the Power of Positive Thinking books back in the 50s – long before it was in vogue. When I was five, he spanked me for the first and last time. I wish he were here to wish him Happy Father’s Day. And a Happy Birthday wish is in line for our Canyon Lake Community Profile this month – Millie Meister turns a young 80 on May 29, just as this June issue is being delivered. She has been at the lake for almost half her years and experiences little miracles on a regular basis. Her prayers are answered often, and if they aren’t, she knows there must be something good she missed – aahh, perhaps God knows something she doesn’t! She is a delightful personality who keeps happiness in her life by intentional design and by altering her perspective to see good.

On our cover this Father’s Day issue – it’s, well, Willie – at his recent Whitewater performance as he approaches his 78th year full of life! Willie is, at least, a dad...

“An octogenarian, but 16 at heart”

by Sue Sweat Millie Meister was born May 2 , 1 30 – the year of The Depression. Nothing about Millie is 80, except perhaps her wisdom and soft voice. Healthy, thin and energetic, her youthful appearance defies her age. Insightful observations are expressed with a tranquil sense of humor, peppered with lighthearted lessons learned from her belief in God and her experiences in life, even those from difficult times.

“Everyone makes me happy – some by their headlights approaching, some by their tailights departing.”

Her fascination and love of words stems from her years as a young journalism student and writer for the Houston Chronicle.

“Friends wanted me to write something to get their names in the paper – until they learned I wrote the obituraries.”

Millie was raised in Houston “when it was a country town; there were no freeways,” she remembers, “when construction on the Gulf Freeway began and it’s been under construction ever since.” Her favorite mode of transportation was the Interurban, the rail that stretched from Houston to Galveston – on train-like tracks driven by cables. The Gulf Freeway was built on top of them.

Millie lived in the same subdivision for 42 years before moving to Canyon Lake on November 27, 1 72 when she bought the Canyon Lake Cottages. Nestled between FM 306 and the lake’s shoreline, she has spent almost half her life there.

Sally Ride and Challenger astronauts once rented the entire property for three nights on the 4th of July weekend, 1 81. Pool shark “Fast Eddie,” portrayed in The Hustler by Paul Newman, put on an exhibition there. Slim Pickens visited briefly while making a TV pilot show. There are many stories of those good ol’ days.

The Canyon Lake community was much smaller then. FM 306 was a deadend; there were no grocery stores. Canyon Lake Bank was a small wooden building, where Wells Fargo is now. When Millie’s kids were young, she kept baked goods on top of the refrigerator for them. Some days, the bank’s Vice President who was a friend, would stop by for a fresh roll and take her deposit to the bank for her on his way to work. It was a different era.

Millie and Ken Rice, the president of the bank, were instrumental in preparing the first brochure for visitors about Canyon Lake businesses, before the Chamber existed. Canyon Lake Cottages has been a member of the Canyon Lake Chamber since its inception 25 years ago.

Millie raised four children: Bill, Cecilia, Louis, and Eric. Only Canyon Lake Views Cecilia and Eric remain. She has eight grandchildren, seven great grandchildren, and one great, great grandson barely a year old.

Millie bought The Hideout at the end of her road from the Hardin’s in 1980. The restaurant/bar/dance hall in the 5,000 square foot structure functioned more like a community center for informal gatherings. American Legion bingo games were held there. Neighborhood musicians would stop in and start pickin’. Dances with a band would draw hundreds – most with kids in tow. There was shuffleboard, pool, washers and dart tournaments.

Millie was never much of a drinker, she explains, “I didn’t taste alcohol until I was 30 – I was silly enough without it.” She considered The Hideout as “an establishment that sold beer on request,” unlike “bars that push beer and more beer.”

One day in 1 87, it all came to an end. Millie’s eldest son, Bill, was involved in a tragic incident on his way to South Carolina for a new job. Millie rushed to his side just before he passed.

“He was a very generous son,” Millie said. His last gift – as an organ donor – improved the quality of life for over 200 recipients.

But it changed her life. First Louis, and now Bill was gone. Millie closed The Hideout the day she returned; all alcohol was thrown out. Millie had already lost Louis in a motorcycle wreck, yet “instead of grieving” she says, “I turned it into appreciation for the time I had them. Some people never have children.” It is that attitude of appreciation that she lives by.

“You can’t make steel without going through hot fire.”

This year, Millie will open part of the building as a Thrift Shop and then will re-open The Hideout – alcohol free. “There’s nothing wrong with alcohol,” Millie says, “Our Lord’s first public miracle was changing water into wine... But this time, there will be “no drugs, no booze – just a good time so you can remember what you did tomorrow. Learn to use the natural endorphines God put in your brain to have fun without destroying your body.”

Millie will rent out a couple of cabins soon as longterm rentals to make time for her new plans while keeping some for vacation rentals too. “Generations of families expect me to have some available.

They came as children, then honeymooned here, and now they come with their own children.” And she will be there to welcome them as family. Millie plans to “live to 115 – if the good Lord’s willing. At that time, I’ll renegotiate.”

What’s your PSI?

Something as simple and straight forward as tire pressure (PSI) can frequently create a “great debate” among vehicle owners. How does one know how much air is best for their tires? Do you go by the rating on the tire, the sticker on the vehicle door, or your own made up formula?

The real answer is yes ... sort of. Are you clear now?

There are actually several factors that need to be considered.

One is the load that the vehicle will be managing. Are you towing a travel trailer or heavy equipment? The handling factor during evasive driving to avoid a collision also needs to be considered. Maximizing gas mileage is always of importance to each of us. We have a need for good traction on slippery roads. And last, but not least, we want to manage wear and tear on the tire itself in order to maximize our investment.

Well, the best place to start is probably to understand what the manufacturer says is best.

The tire pressure on the inside of the vehicle door is the PSI best suited for that make and model of vehicle with the original tires, or new ones that are the same as the originals, on the vehicle. That PSI provides the “sweet spot” of maximum overall vehicle control, traction, gas mileage and wear and tear. Increasing or decreasing the PSI in order to change any of these factors, such as increasing gas mileage, could compromise one or more of the other factors in. Example: over-inflating to “increase fuel efficiency” often will increase wear and tear and possible over-steering when taking evasive action. Well, why do the tire manufacturers put the rating on the side of all tires if we are not to use it? That is a good question. The answer being that any particular tire may fit many different vehicles with many different PSI ratings. The tire PSI is the maximum that that tire will handle, but should be inflated to the recommended vehicle PSI unless the two ratings are too far apart.

by Dr. Justin Kim Persistent dryness, scratching and burning in your eyes are signs of dry eye syndrome. Another symptom of dry eyes is a “foreign body sensation,” the feeling that something is in the eye. And it may seem odd, but sometimes watery eyes can result from dry eye syndrome, because the excessive dryness works to over stimulate production of the watery component of your eye’s tears.

Tears are essential for good eye health. Tears wash out dust and debris and keeping the eye moist. They also contain enzymes that neutralize the microorganisms that colonize the eye. In dry eye syndrome, the lacrimal gland or associated glands near the eye don’t produce enough tears, or the tears have a chemical composition that causes them to evaporate too quickly.

Dry eye syndrome has several causes. It occurs as a part of the natural aging process, especially during menopause; as a side effect of many medications, such as antihistamines, antidepressants, certain blood pressure medicines, birth control pills; or because you live in a dry, dusty or windy climate. If your home or office has air conditioning or a dry heating system that too can dry out your eyes.

Another cause is insufficient blinking, such as when you’re staring at a computer screen all day.

Dry eye syndrome is more common in women, possibly due to hormone fluctuations. A recent study also indicates that risk of dry eyes among men increases with age. It’s an ongoing condition that may not be completely curable (depending on the cause), but the accompanying dryness, scratchiness and burning can be managed.

For very mild dryness, sometimes artificial tears alone can solve most of the symptoms. But often most of dry eye patients need more than just artificial tears. There are prescription medications that reestablish the balance of tear components and improve tear production, but there are pharmaceutical-grade nutritional supplements that can help. There has been great success treating dry eyes with punctual plugs, which temporarily or permanently close the tear passageway to retain the patient’s own tear from draining too quickly; this is a quick and painless procedure done in the office, which most medical insurances cover. There are many options for relief and your optometrist can evaluate which treatment option will be best for you.

You’re sitting there in your personal library on your own personal throne thinking, “Man, I can’t remember the last time the septic system was serviced!” You have nothing new to read so you’re looking around and see something sprouting out of the window frame. You knock it down and you see little buggies looking at you. They’re hollering at you, “Hey, you’re messing up our work here!” But, you can’t hear them because they’re not very loud and it’s a foreign language anyway.

Congrats! You’ve just discovered Eastern Subterranean Termite activity. The Bug Brothers call this a termite or mud flower. It’s made of dirt, some nice gooey saliva and cellulose from, ‘Oh my God!’ your house! You knock it down again, only this time you spray it with anything from an insecticide to Windex. Whatever is handy. Problem solved. Wrong! Ah, but you say, they haven’t come back. Of course not. You just created your own little version of global warming, polluted their area and Al Gore is coming for you. All the termites do is make a little detour to a more welcome environment.

Though we have several different termite varieties here, the Eastern Subterranean Termite is by far the most prevalent. This is not a bad thing as their habits are very specific. They are where they are because of what I call the big four: consistent temperature, moisture, a food source and an entrance point. A bathroom close to an exterior wall on a concrete slab has all of the above. Soil under a slab maintains temperature like an underground cave. Your bathroom walls sweat enough through repeated use to produce humidity that creates moisture. Food source is a no brainer. And, don’t tell me no problem because you have a metal-framed house. It has paper-backed drywall, does it not? Entrance points are anywhere plumbing goes through the foundation, cracked slabs (not good!), expansion joints between house and porch or garage or right up the outside of the slab. Entrance into a pier and beam house is usually the lowest point next to a porch or attached garage.

Mud flowers have no power over PCOs in the know.

by Charles Sullivan As promised this article will try to provide some minimal thoughts regarding estate planning and strategies to avoid Death Tax double taxation. Itâ&#x20AC;&#x2122;s my sincere hope the Death Tax is permanently abolished as was planned. Realistically I am skeptical so it is time for those who may face this taxation to take measures to protect their life savings and assets from their hard earned efforts. This is not comprehensive nor exhaustive but just some ways to protect your estate. Seek legal advice to determine what is appropriate for you.

One option to look at is a Pour-Over Will. A Pour-Over Will is a device wherein the writer of a Will creates a trust, and decrees in the Will that the property in his or her estate at the time of his or her death shall be distributed to the Trustee of the trust, for the beneficiaries of the Trust. The pour-over clause protects property not previously placed in a Trust by pouring it into the previously established Trust through the vehicle of the Will. The Trust instrument must be in place, however the funding can be done prior to probating the Will. Upon death the testatorâ&#x20AC;&#x2122;s assets are put into the separate legal entity with the spouse or children as beneficiaries.

Thus the legal entity, the Trust, is not subject to estate taxes for the portion of the estate being placed in the Trust.

Another is the Living Trust. The Living Trust document itself names three different parties. The individual (or couple) that establishes the Trust is named the Grantor (also referred to as the Trustor). The Trustee is the person named by the Trust as the controller of the Trustâ&#x20AC;&#x2122;s assets (and in many cases, the Trustees are the same people as the Grantors). On the receiving end, the beneficiaries are the heirs that will benefit from the Trust once the Grantors have passed away.

Originally under English Common Law, Living Trusts were used by the rich to keep the king from getting all their land when someone died. People gave their land to the church Trust with the understanding the church would give it back when the Grantor passed away. In modern times, it is merely a Revocable Trust that becomes irrevocable upon the Grantorâ&#x20AC;&#x2122;s death. Essentially while still alive, you continue to run your affairs, but at death the legal entity that owns the assets is the Trust, so there are no estate taxes.

This is not only for the rich as you can avoid some expenses in probate. Another advantage is you donâ&#x20AC;&#x2122;t have to put everything into the estate. For instance, if you have a $5,000,000 ranch and $200,000 in other assets, the Death Tax may be avoided by simply putting the ranch in the Living Trust and bequeathing the other assets by Will. Itâ&#x20AC;&#x2122;s a less complicated deal as you must follow the Trust laws and guidelines, and failure to do so can result in the Trust being busted.

Keep in mind there are other options. This is a tidbit of information on a complex issue. The main idea is that there are options to consider to avoid the expense of probate and exorbitant Death Taxes which may be on the return. Again seek competent legal advice to protect yourself.

Happy Father’s Day (cough)

by Steve Sherman Lyndy and I have no kids. We have a cat.

It’s been my experience that cats can be pretty irresponsible regarding important celebrations. Take Father’s Day, for instance. Last year, the cat coughed up a hairball for me (as she seems to do for most special occasions).

I’m sure it was convenient and inexpensive, and I have to remember that it’s the thought that counts.

If you are contemplating a Father’s Day gift for your dad, I would suggest something other than a handful of hairballs. Maybe you could wander down to your local neighborhood hardware store and load up on the latest cool stuff.

Dads need tools. There is a whole kaleidoscope of wondrous, shiny new tools to select from. There are ratcheting wrenches, automatic power hammers, multi-tipped screwdrivers, arm extenders, bit extenders, cordless drills, cordless multi-tools and cordless screwdrivers to name a few.

Grills are always a welcome sight. There’s usually the promise of fun times with great tasting food attached to a new grill. Deciding between charcoal and propane flame cooking is a very personal choice, so you may want to do a bit of research first. “Hey Dad, which do you fear most, white hot coals or flames on demand?”

With a question like that, your dad may set himself on the straight and narrow, or he may understand that you’re talking about grills.

Hammocks and “anti-gravity chairs” make great gifts. In fact, they’re gifts that keep on giving. The best dads are dads that are well rested and stress-free.

This month’s column is for those who are either old, planning to get old someday or caring for an elderly parent or relative. Being “old” has little to do with chronological age. Take for example a 58-year-old surgeon who is tired and “burned out” and feels ready to retire and rest. Compare that with the 80-year-old rancher who is vigorously putting in full work days and participating in various sports and social activities. Topics that must be addressed in dealing with the elderly include planning for medical care, lifetime income, housing options, incapacity physical or mental) and estate distribution.

Medical Care: There appears to be some lingering confusion about the difference between Medicare and Medicaid. Simply put, Medicare is a federal healthcare program available to virtually everyone, regardless of financial situation upon reaching the age of 65. It is paid for as part of Social Security taxes collected during our working years. Medicaid, on the other hand is a welfare-type program for poor people of any age. The primary reason for the overwhelming interest in Medicaid is that, contrary to Medicare, it pays for long-term nursing home care.

Medicare issues will be discussed in more detail in a future writing.

Planning for Lifetime Income: One of the most important sections of a Comprehensive Financial Plan, is Retirement Cash Flow. It involves analyzing various sources of income and anticipated retirement expenses and how they escalate with inflation over the years. Equally important, income sources must be classified with respect to their frequency, predictability and tax implications. Investment planning for seniors involves more dimensions – some of which are purely psychological – than planning for someone in the accumulation phase.

Housing Options: One of the most difficult decisions in planning for the elderly parent concerns housing options. Factors that must be considered include medical and custodial care needs, emotional attachment to the home, cash flow and estate tax considerations. A key question is whether a family member is willing to (or capable of) caring for their elderly loved one.

Incapacity Planning: Physical and/or mental incapacity (at any age) usually requires another person to make decisions and conduct transactions on behalf of the affected person. Prudent advance planning can protect you from going through lengthy, expensive, unpleasant and often unsatisfactory legal guardianship proceedings.

There are many methods your computer can be compromised. The Internet provides a variety of venues for the modern day thief. Suggestions will be presented here so that you may strengthen the coral around your computer security.

It is very important to keep our operating system current with the latest updates and security patches. All operating systems – Windows, Macintosh, Linux, etc. – must be kept updated on a regular basis. Each one has its own methods – manual and automatic. Check your documentation on how to perform this crucial task.

Our computers contain a lot of personal information about us.

Typically, we use antivirus, antispyware, and firewalls for our mainstream protection. However, there are many other applications that affect our computer’s security, including our website browser which utilizes Sun’s Java, and Adobe’s Flash to present modern website content to us. When an update balloon is presented stating that an update is available for Java or Flash, please do so in a timely fashion.

It is difficult to keep track of our computer programs and which ones need updating. For the Windows platform, I suggest using an update tracker application named Personal Software Inspector (PSI) available for free from Secunia.com. PSI detects programs and plug-ins that are vulnerable and out of date and then directs one to the appropriate software vendor’s website. Another application tracker which works on Windows and the Macintosh OS X operating system is Version Tracker. It is available at Versiontracker. com.

Another useful tool is the Microsoft Baseline Security Analyzer (Windows only). MBSA is available for free from Microsoft at Technet.microsoft.com/en-us/security/cc184924.aspx. This analyzer will provide a detailed and lengthy report assessment of Windows, Office, and related components. Passwords are among the most important deterrents for enhancing computer security.

MBSA will check all of your user account passwords and alert you if you have weak or disabled passwords.

Ensure you have strong passwords. Avoid names, birthdays, zip codes, addresses, and dictionary words. Use a minimum of eight characters, including letters, numbers, and symbols. Simply, make it look like “Greek”. Document user IDs and passwords and store in a secure place for future use. Stay secure!

Swing in the summer

June is here and summer is in full swing! It’s hard to believe we’ve made it to another summer, but here we are.

With Canyon Lake once again sitting at or above its conservation level, there are high hopes for a stellar summer season.

All boat ramps are currently open and the lake is in perfect condition for swimming at designated beaches, skiing, wakeboarding, fishing or just cruising. The river should be as popular as ever this year, with flows optimal for tubing at times, and at others, prime for serious kayakers and rafters. As always, safety should be a top priority on the water and authorities are asking lake- and river-goers to take care this summer: • Always wear a life jacket or personal flotation device (PFD) • Avoid alcohol on the water, and always use a designated driver for the boat and a safe ride home.

• Pay attention to the people in your party, especially those in the water.

• Be especially careful on personal watercraft.

• Children younger than age 13 must wear a Coast Guard approved life jacket while underway.

• Enroll in a boater education class.

For our land lovers, summer is the perfect time to catch any one of the amazing shows lined up at Whitewater River Amphitheater, including everything from Robert Earl Keen to Foreigner, and the Heroes of Woodstock to Ryan Bingham.

Don’t forget to take a tour of the Canyon Lake Gorge before the weather gets too warm, and when it does, take a walk down the Guadalupe River trail along the banks of the river below Canyon Dam, where you’ll be protected by soaring shade trees.

The Canyon Lake Area Chamber of Commerce Visitor’s Center is open Monday through Friday from until 5 and Saturdays from 10 until 2 for visitors. Members should be sure to keep the Center well stocked with brochures and business cards to ensure visitors are making their way to you during their stay! In recent months, we’ve discussed what water softeners do, why they are necessary in our area, and even some possible alternative solutions. However, this important appliance remains a mystery to most homeowners. If you have had a softener installed, or purchased a home with an existing unit, how will you know if it’s working properly? If you have a softener that doesn’t seem to be functioning, should it be repaired or replaced?

First, let’s shed some light on a few common misconceptions regarding salt-based softeners. A softener system consists of a narrow cylinder called a media tank, where the ion exchange resin is held, a control valve mounted on top of the media tank, and a salt storage tank. Many people imagine that their water is running through the salt, thereby adding large amounts of sodium to the water. The water actually runs through the control valve, down through the resin, back up through a pipe in the center of the resin tank, and then out to the house. In fact, the salt (or brine) tank only comes into play when the resin has become saturated with calcium. The resin is soaked with salt solution to replenish the softener’s capacity for calcium removal. This backwashing and brining of the resin is called a regeneration, and will typically occur in the middle of the night while no water is being used. The average lifespan of a softener can be 12 to 15 years depending on incoming water quality and maintenance.

Since water quality can vary greatly from one well to the next, the settings on a softener are crucial to ensuring proper operation. The control valve must be set correctly to reflect the incoming water conditions. Many installers will simply leave a softener set to factory defaults, which will cause ongoing issues for the homeowner. These settings are easily determined with a few well-aimed questions, and a simple test of the water. Salt usage is the best indicator of proper operation, and is determined strictly by the household water usage. A licensed water treatment specialist can easily help you determine how much salt you should expect to use.

The concept of custom home allowances

When a custom home is built, the owner decides on everything from the houseplans to the door hardware.

Placement of the hose bibs to the light switches must be thought out and lived in (in their mind’s eye). It might make sense for some to include dusk to dawn lighting or two shower heads in the master bath. While not all buyers would need these features, it’s a possibility for the custom home buyer. Some builders manage these wide varieties of features with a simple allowance system.

The builder will ask some key questions regarding the buyer’s requirements – like what kind of appliances do they want in their new home, what kind of floors, cabinets, doors, etc. before the plans are priced. The contract is then constructed including the allowances for the items the buyer wants to choose.

The expenses from the countertops to the plumbing fixtures can be managed with allowances. The idea of course is to stay within the budgeted allowances that are set up in the contract originally. These are items that can vary to extreme.

Even if the buyer asks the builder to allow for granite countertops, they can be priced from $40 a square foot up to, well – whatever! Cabinets are the same way. That’s why it’s important to communicate to your builder (and be in agreement with your spouse) early on in your relationship what you expect in your new home. Allowances – what you don’t use, you’ll get back; what you go over, you owe.

At your request, your builder can probably suggest lighting companies, or a plumbing fixture brand, maybe a flooring company they are used to doing business with.

In some cases discounts are offered to builder customers – simply because the builder will be doing several houses with them that year. Typically builder savings are passed on to the customer.

The arrival of warm weather in Texas usually coincides with an increase in signs of allergies, not only for people, but for dogs. Licking, chewing, scratching, and rubbing are all signs of itchiness in dogs, and they can be miserable without Jeff Quinn, DVM proper treatment. While there is no cure for allergies, it is the responsibility of pet owners and veterinarians alike to provide relief for these dogs by alleviating the symptoms of their allergies.

Here are some steps that owners can take to make sure their dog stays comfortable: 1) Control itching. Medications ranging from omega-3 fatty acids to antihistamines to steroids are mainstays in treatment for allergies. Talk with your vet about what is best for your pet.

2) Control fleas. Fleas are rampant in this area, and for sensitive dogs, even one flea bite is excruciating. Put your dog on a monthly preventative (prescription products are safest and most effective), and always treat your house and your yard to kill flea eggs as well as adults.

3) Control secondary infections. Dogs with allergies are predisposed to getting skin and ear infections, which are itchy and require medications prescribed by your vet.

4) Keep your dog indoors as much as possible. If your dog does spend a lot of time outdoors, wiping them down with a damp cloth after coming indoors and then drying them off can help remove excess allergens from their skin.

5) Bathe regularly with a shampoo recommended by your veterinarian. This may be an over-the-counter product such as an oatmeal shampoo or a medicated product containing antibacterial and anti-yeast components.

6) Talk with your vet about starting a food trial. Food allergy and environmental allergy have identical clinical signs (year-round, profound itchiness), and dogs with food allergies can experience significant relief from itching on an appropriate diet.

Digital art possibilities

Digital art is an umbrella term for a range of artistic works and practices that utilize digital technology. Modern technology has changed many things in our lives, including the way we communicate, travel and entertain ourselves. Electronic instruments and computer simulations have revolutionized science. Even art has been going through a deep upheaval in the way it is created and appreciated, using the fast processing and graphical output of computers.

New possibilities. Art was once restricted to static creations, such as an oil painting, sculpture or photograph, produced by the artist and then passively regarded by the viewer. Nowadays, however, computer-based visual art allows improved dynamic forms — art that develops or evolves before our eyes. The “artist” may have no more idea of what will finally emerge than anyone else. An even more exciting possibility in computer-aided installations is interactivity — digital art that responds to the viewer’s actions, for example, through input from movements of the computer mouse.

The five basic kinds of digital or inkjet or giclee prints are: (1) computer-generated images – original giclee prints; (2) digitally-printed photographs; (3) reproduction giclee prints of images scanned into computers; (4) digital photographs or scanned images that are then manipulated, enhanced, reworked, or altered by computer (using programs like Photoshop, for example) before they’re printed; (5) and giclee or digital images of any kind that are enhanced, reworked, or altered after they’re printed.

Digital art of all types is rapidly increasing in popularity, regardless of whether the finished products are reproductions, originals, or some combination of the two. Whatever you want to make is fine, as with all art, there are no rules other than to not misrepresent what you’re making or selling. One thing is certain: Like photography in its infancy, the internet and digital art are not going to disappear. Computers are making it increasingly possible to create photo-realisitic images and painterly quality works and sculptures.

I feared for a long time that I’d lose the painter in myself, that technology takes the hands out of the medium. It still frightens me to an extent, but in defense of digital imagery, I still paint. That’s my discipline.

The most expensive bottle I have ever sold was a special order cognac that was 80 years old and cost $2500 for a .750ml size. Ten grand a gallon. Besides categorizing specific products like whiskey, brandy or vodka, another method for classifying distilled spirits is aged and unaged. Vodka, gin, neutral spirits and some types of rum and brandy are all unaged. Whiskeys, cognacs and other products must be aged for specific periods (the minimums are usually mandated by law) in wooden barrels in order to develop specific characteristics of taste, color and aroma.

The legal minimum when aging American whiskey is three years in American oak barrels. Light rum must be aged at least one year, gold rum for at least three years and añejo’s four to six years and sometimes longer. With tequila, añejo must be aged at least one year and if it is aged for two to four years, it is muy añejo.

Canadian whiskeys have to be aged for three years but most spend four to six years in the barrel. Irish whiskey is aged three to nine years in reused barrels. Cognac requires two and a half years, but the majority of cognacs age for much longer periods, with the XOs maturing for two to three decades or more. Scotch has to rest for three years also, but the aged single malts that are 12 to 30 years old are smoother which demand a high price tag.

During this maturation process the whiskey “breathes” in the barrel. Aging is sometimes referred to as mellowing; it takes the edge off the raw whiskey and creates what we know as smooth whiskey. Also, during the aging process, approximately 2% of the alcohol evaporates annually. This is also known as the “angels share”.

The most common barrels used for aging distilled spirits are made of oak. Experts dispute whether American or French oak is better. White oak is one of the few woods that can hold liquids while still allowing the process of breathing through the wood’s pores.

Some spirits are aged in new barrels and others in barrels that have been previously used for aging wine, sherry or other distilled spirits. Of course in aging, no one knows what goes on inside the barrel. For taste and smoothness, distilled spirits producers have never found any substitute for a better taste.

Watering tips for Central Texas summers

Until our recent storms, we had only received about a quarter inch of rain while our average May rainfall is about five inches.

Although it appears that average will be met, there’s a good chance things may soon change.

With warmer weather well on its way, we know Central Texas summers can dry quickly. Should the weather dry enough that your lawn needs watering, following these tips will keep your lawn looking healthy.

One of the most important aspects of lawn watering is to know how much is being applied. If you have never or not recently had your irrigation checked out or calibrated, then you really don’t know how much water you’re putting down in a given period of time.

The solution is simple, get about six to eight cat food tins or tuna cans; place them out in the yard at one station – then turn your system on for five minutes. Then measure how much water you have in each can. If you get a 1/4 inch in each can, then you know that it takes ten minutes to get a half and 20 minutes to get an inch. Repeat this at each station and keep a record of it so you will know. You won’t waste that much water and the information gained is worth it.

Remember that we don’t need to be watering the streets and sidewalks, so when you’re testing, adjust the nozzles so that they are spraying the right areas. With the price of water these days, doing this will benefit your wallet and the lawn, while conserving water for Mother Earth.

An inch of water per week is plenty for St. Augustine grass. How do you know when your St. Augustine needs to be watered? It’s simple – just walk out in the yard and look behind you. If you can see your footprints in the yard clearly, it needs water.

Arianna Aloia reaches State Level in PTA Competition

Arianna Aloia is a 10-year-old 5th grader at Rebecca Creek Elementary.

Arianna submitted her musical composition Truly Beauty this year for the nationally recognized PTA Reflections contest earlier in October.

The theme this year was “Beauty is...” She has been playing piano since she was five and plays guitar also.

Arianna performed for a commercial at Toy Fair in New York. and this past February she played piano and sang The Climb by Miley Cyrus for 150 wedding guests at The Castle Avalon. Her original piece, Truly Beauty, was a two-track this year – piano with flute overtones, similar to the sounds heard in Romeo and Juliet.

The Texas PTA in Austin notified Arianna by letter that her composition, Truly Beauty, was one of 2,200 entries – out of 100,000 pieces of artwork submitted from schools all over Texas – that had advanced to the state level. There is a possibility that she will advance to national level as well.
