Publisher’s Letter

Winter is here! It’s official. The season for snow trips, hot chocolates, schnapps, whiskies, wetsuits, tropical escapes, log fires, indulgent Winter nights and entrepreneur thinking!

I have to say I love the cold, flickering flames from open fires and flying down a mountain on skis pretending I’m 25 and indestructible. If that’s you, it’s kind of your season too.

A little piece of history is leading our Snowy Mountains feature. Larry and Nan Adler, the skiing fabric of Australia, Collaroy Ski Shop is an icon. It’s simply a beautiful story of love, passion, ski boots and the Aussie Alps. We cover places to stay, things to do, places to drink and a beautiful accommodation property that I can’t wait to stay at.

Nan Adler will hate me for saying this, and I will have to admit it to myself, but the years are ticking along. Larry himself turns 95 this year.

The theme of this Winter Issue 2023 is - AGE.

What is AGE really? It’s a mark in time or longevity of well-built traditions, in business success, or the age of entrepreneur spirit.

Whatever AGE you are, to me it’s a celebration of life and history. Everyone loves their old Nana, remembering their younger years, or that their business has survived the test of time and become an AGE-old love brand.

This cover shot was taken in 1977 by my awesome Mum. That’s Megan and I, our big bro Adam and late father at Charlotte Pass. I’m two and Megan is just five and that’s another world ago. Check out the clothes and the old school cross country skis and poles. It’s a story of AGE, a personal note to recall the years flown by us but memories are precious moments in time.

The Manly Skiff kicks off the season in its hundreth year, looking at the next chapter and beyond. Jonah’s have an escape that’s a must do, with 93 years established as a premium accommodation and dining experience. It’s time to indulge yourself in a luxury ocean retreat.

The Shack Live Music Club is a hidden gem nestled in the heart of Warriewood. Operating on the first Saturday evening of each month at the Ted Blackwood Hall on Jackson Road, this club offers a diverse range of modern and traditional quality acoustic music for music lovers.

Founded as a folk club in the 1960s, The Shack was revived in 2006 to the great delight of musicians and lovers alike. As a non-profit organisation, it promotes and presents original, contemporary, and alternate traditional 21st-century folk music.

The Shack Live Music Club provides a warm and welcoming space where enjoyment of the music is paramount, and musicians of all descriptions are rewarded for their gifts. Audiences are treated to a variety of acoustic acts each month with three live performances in a candlelit cabaret atmosphere, creating an intimate and authentic experience for all.

SKYUKA

Perth-based pop icon Skyuka releases the incredibly catchy track ‘Michael Cera’ With a blend of indie rock, 90’s fuzz and a touch of humour, this infectious tune will be your favourite bop of the year.

The single showcases Skyuka’s unique blend of upbeat pop melodies alongside introspective witty lyrics. It tells a relatable story of falling for someone you just can’t seem to escape from, and the frustration that comes with it. It’s a reflection on unrequited love, delivered with Skyuka’s lightheartedness and sass.

“When I wrote ‘Michael Cera’, I was listening to a lot of Vampire Weekend and really enjoyed the playfulness of their earlier albums which influenced the writing process of this song. It felt refreshing to write something fun that people could clap and sing along to and have a laugh at, but still had a lot of heart,” says Skyuka.

Joining forces with Debaser Studios in Perth, Skyuka collaborated with Andy Lawson (Noah Dillon, Death By Denim, Draphy, Tired Lion) who beautifully mixed and mastered the incredible track.

GEORGIE WINCHESTER

Following the release of her single ‘Follow The Sound,’ Georgie Winchester presents her exquisitely crafted debut album of the same name. With her distinct sound setting her apart from the crowd, this album showcases her unique musical style.

Drawing inspiration from the likes of Kim Churchill, Adam Newling, and The Waifs, the album showcases a diverse and eclectic sound. From heartfelt ballads to lively indierock tunes, it boasts eight original tracks that skillfully exhibit Georgie’s impressive songwriting, production prowess, and powerful vocals.

This album follows her personal journey and life experiences as she delves into heartbreak, hope and resilience, taking the listening audience on a journey with her through powerful and emotional lyrics. This is beautifully highlighted

throughout the album in tracks including ‘Follow The Sound’ and ‘Anything Else’ with themes of growth and evolving.

“The album is a collection of all my best songs I’ve written over the past three years. Each track has their own story and reason for making the album,” says Georgie.

Utilising her audio-engineering degree, Georgie Winchester recorded the majority of the album in her bedroom over the past year. She collaborated with Sean Cook (Maids, Ben Leece, GARVEN) who mixed the album and Joe Carra (Russell Morris, The Mojos, The Teskey Brothers) who mastered it to create a masterpiece that is “Follow The Sound”.

Western Sydney’s The Sooks have crafted a vibrant and dynamic track, “Burn Me Out,” infusing their own surf rock style that fans of local acts like Skegss, The Terrys, DICE, and broader bands like The Strokes would appreciate. This powerful single combines a compelling vocal performance with punchy guitar riffs and an infectious rhythm.

“The single explores the feeling of being alienated from the things around you, being disconnected from

release in 2022, indie-folk duo Salt Tree are picking things up again for 2023 with the delivery of a striking new track in ‘Coming Home To You’.

The single represents the songwriting dynamic between both Tom Boerema and Nathan Parsons beautifully; melodically rich and full of warmth in tone and delivery.

‘Coming Home To You’ is a perfect way to remind long-time fans and newcomers alike of Salt Tree’s clear and present talent as storytellers.

Recorded in a shipping container, the single was produced and mixed by Tom, adding to the clarity and precision of the song’s overall direction. Elevating each other in studio and generally as a duo, both Tom and Nathan shine on this record as they navigate themes of home, nature and being at one with it all.

“We both grew up close to the ocean and around nature, which has always been a huge part of our lives. As a kid, Nath would take any chance he got to

Tom spent a lot of time sailing with his whole family living on a boat for months at a time,” says the duo.

With the band members sharing a deep love for nature and the ocean, it’s not a complete surprise that their new music would feature this core interest as a prominent part of its DNA.

The connection Tom and Nathan have with one another is a special one. Both have experienced life lived out of the ordinary. Tom, raised in regional South Australia, was brought to Margaret River in WA through work. For Nathan, his path to adulthood was different. Growing up in Newcastle’s government housing system, he was able to see more of Australia through working various jobs around the country while spending the rest of his time surfing and snowboarding.

With the release of album “Out of the Water”, Salt Tree propelled themselves by selling out venues and winning acclaim.

the world and feeling like time is passing by when you are standing still. We all get that kind of feeling of being burnt out by something or someone, and this song is sort of a tribute to that universal frustration,” says the band.

The track was recorded at Sonar Studios in Sydney and skillfully produced and mixed by Jack Nigro, known for his work with Pacific Avenue, Skegss, and DMA’s. It was then mastered by Darren Ziesing, who has worked with notable artists like Flume, Lime Cordial, and Rufus Du Sol.

Featuring an explosive, catchy chorus that's sure to get crowds singing along and dancing, it came together over a quick period of time.

“After realising that we had studio time booked in, we thought it would be a good idea to write a single a few days ahead. So we sat with acoustic guitars and put the song together in 20 minutes from scratch, lyrics and everything.”

In the wake of a recent exposé about high profile interferences with Indigenous art, Harvey Galleries is proud to team up with Yanda Aboriginal Art to present the stunning work of sisters, Tjungkara Ken and Yaritji Young. Beaches COVERED. caught up with passionate Galleries Founder, Trevor Harvey, to talk about the importance of Indigenous art and why ‘only black hands on black art’ matters.

with him. They had a good business relationship and all the terms they were able to negotiate, directly, were good. They were being looked after and respected.”

Chris has a large property outside Alice Springs where artists are able to stay for as long as they need to complete their work.

“I try to buy the best,” explains Trevor, “And the best is where artists are working with the best materials in the best environment so they are happy and create their best work.”

TAKING CARE OF INDIGENOUS ARTISTS

Kicking off on Friday, June 23, and running until July 11, Harvey Galleries presents an unforgettable exhibition by sisters, Tjungkara Ken and Yaritji Young.

“I want to keep supporting that and sharing this beautiful work that is both genuine and true,” affirms Trevor.

Over the course of nearly three decades, Harvey Galleries in Balgowlah has been at the forefront of promoting Australian and International artists. This Winter, they are honoured to join hands with Yanda Aboriginal Art, who are based in Alice Springs, to celebrate a remarkable milestone – 25 years of dedicated commitment to showcasing ethically acquired and authentic Indigenous art.

“Twenty five years ago in my own search for the very best in Indigenous art, I visited Yanda. What I found there was immediately impressive,” recalls Harvey Galleries Owner, Trevor Harvey.

“As I got to know the Owner, Chris Simon, I understood his interactions to Indigenous people was one of tremendous respect and understanding.”

It didn’t take long for Trevor to discover why Yanda was producing such special and esteemed works of art.

This exhibition is even more important after respected authorities on Indigenous art recently claimed white staff, at one major art centre, were seen to be interfering with Aboriginal artists’ paintings and the representation of their sacred Tjukurrpa.

“It’s disappointing,” says Trevor. “We’ve been hearing stories in conversations for a number of years, so for it to be confirmed as true doesn’t come as a complete surprise, but it’s still a shock.”

Trevor is passionate about supporting Indigenous art, recognising its cultural significance and promoting its rightful place in the artistic landscape.

“We do whatever we can do to support those who are doing the right thing and support the artists and their families. It’s important to us that the artists are respected and the integrity of the work has to come first. That’s why this is such an important exhibition.”

For acclaimed artists such as the Ken sisters, the chance to exhibit and share their culture is a proud one.

Hoodoo Gurus

The Hoodoo Gurus, an Australian iconic rock band have achieved legendary status with their timeless music and enduring popularity. Known for hits like ‘What’s My Scene’, ‘I Want You Back’ and ‘Miss Freelove ‘69’, their songs have become an integral part of the musical landscape from the 80s until today.

Their debut album, Stoneage Romeos, garnered critical acclaim and was named Australian Debut Album of the Year. It achieved remarkable success in America, reaching number 1 on the Alternative/College charts for seven weeks and becoming one of the most played albums on college radio that year. Their second album, Mars Needs Guitars, topped the charts and quickly achieved gold and platinum status. Blow Your Cool, released in 1986, propelled them to pop stardom with the smash hit single ‘What’s My Scene’.

The band’s subsequent albums, including Magnum Cum Louder,

Kinky, Crank, Blue Cave, Mach Schau, and Purity of Essence, maintained their momentum and allowed them to tour extensively across Europe, North America, Australia and Brazil. In 2011, they released the highly acclaimed compilation album Gold Watch to celebrate their 30-year career. That same year, they embarked on the Dig It Up national tour, featuring a line-up of artists associated with the band and received rave reviews.

Despite their International triumphs, including sold-out tours and nine gold and platinum records, the Hoodoo Gurus have always remained connected to their Australian roots. They were rightfully inducted into the Australian Music Hall of Fame, solidifying their status as one of the country’s most beloved and successful musical acts. Missy Higgins

Australian singer/songwriter Missy Higgins has enjoyed phenomenal success with her irresistible melodies, seering lyrics and an authentically striking voice. She was just 21 when her 2004 debut, The Sound of White, exploded in Australia. The nine-times Platinum, six-time ARIA Award winning album was the first of her five domestic #1’s. Her 2007 follow-up, On A Clear Night’ followed with another chart topping single, Steer, plus RIAA gold-certified U.S. breakthrough hit, Where I Stood

Missy remains one of Australia’s most revered voices. 2018’s ‘Solastalgia’ probed the existential crises that come with climate change and was accompanied by a stadium tour with Ed Sheeran while her work on the soundtrack to the acclaimed TV Series Total Control earned her several songwriting awards in 2022 and inspired the Total Control mini-album.

Most recently, Missy received the Melbourne Prize for Music 2022. The triennial award honours Victorian artists whose work has made an outstanding contribution to Australian music and to cultural life.

Kate Ceberano

Kate Ceberano (AM), a renowned singer, songwriter, artist, and performer, has released her 30th album, My Life Is A Symphony (ABC Music). The album celebrates her four-decade career and features reimagined versions of her most iconic songs, including Brave and Pash with epic cinematic arrangements by the Melbourne Symphony Orchestra. All tracks were written or co-written by Kate.

She will embark on a national tour with state orchestras from May 27, leading into Night at The Barracks on September 23 with the Metropolitan Orchestra. These performances will reflect Kate’s rise to the pinnacles of rock, pop, soul, and jazz. This new album and tour bring her back to her essence as a musical force, an electrifying live performer and one of the greatest voices of her generation.

With 11 platinum and eight gold albums, 15 Top 40 singles, four ARIA Awards, and over 8,000 live performances, Kate Ceberano is one of the most celebrated Australian artists of all time.

Tom Burlinson

Tom Burlinson is a renowned Australian actor and entertainer with a career spanning over 45 years. Tom began his journey in show business after graduating from NIDA in 1976 and made his mark with lead roles in films such as The Man from Snowy River and Phar Lap. In 1991, he was chosen by Tina Sinatra to sing the voice of her father in the Warner Bros. miniseries Sinatra. This led to the creation of his own show ‘Frank - A Life in Song’, which celebrated the music and career of Frank Sinatra and was performed all over Australia, Toronto, and Las Vegas.

Tom has also held lead roles in various productions such as The Producers, Australia’s Got Talent,Now Were Swingin’!, Sinatra at the Sands, Young at Heart, Swing That Music, Chicago, and Swingin’ the Great Standards He continues to honour the musical legacy of Frank Sinatra and other great stars of vocal Swing such as Dean Martin, Nat ‘King’ Cole, Tony Bennett, Sammy Davis Jr., Bobby Darin, Harry Connick Jr., and Michael Buble in his latest show. What inspired you to create Coastal Stone Whisky?

Australia is renowned for producing world-class wine and beer, making it puzzling that we import 97% of our whisky. Distilling shares many common skills and utilises core ingredients like barley, which are extensively grown in NSW and Victoria. With the increasing popularity of cocktails and spirits, the opportune moment arrived to embark on our whisky distilling journey in 2017. People know us for our gins, and now after more than six years of maturing, our whisky brand, Coastal Stone, is on everyone’s lips.

What sets your whisky apart from others?

With eight gold medals from the world’s top competitions, it’s clear we are onto something special. Our coastal temperate climate and high-quality water, filtered through natural sandstone, create the perfect conditions for our barrels to mature evenly and at a faster rate than traditional Scottish whisky.

The result is a whisky with a subtle marine influence. We take pride in using clean Australian grain and employing patient production processes. Unlike those driven by big output targets, we focus on meticulous craftsmanship to achieve an exceptionally refined spirit. Our custom-designed stills, featuring upward sloping line arms, further contribute to our unique product.

In our commitment to reducing our carbon footprint, we prioritise the use of high-quality ex-Australian red wine barrels which are readily available in Australia. This allows us to reach our desired flavour without relying solely on imported ex-bourbon and fortified barrels. Our distillers possess exceptional skills in marrying these barrels, resulting in bold and balanced flavours that really stand out.

What’s your favourite way to drink whisky?

I like drinking my whisky over a large ice cube. Subtle dilution can open up the flavours of the whisky by softening the alcohol and allowing more subtle notes to emerge. It also helps release aromas and enhance the overall tasting experience. Otherwise, nothing beats a delicious whisky-based Boulevardier cocktail. It’s a simple variation on the classic Negroni that is adored for its deft balance of bitter, boozy and sweet. It’s the exact drink you want to reach for on a chilly fall or Winter evening. •

THE SAILING OFFSEASON MAY BE A PERIOD OF REST AND RECUPERATION FOR SOME  BUT MALCOLM PAGE MISSED THAT PARTICULAR MEMO.

The Olympic sailing gold medallist doesn’t possess a stop button.

As Manly 16ft Skiff Club’s newly elected commodore, he’s already implementing plans to build on the highly successful 2022/23 centenary season.

And at the top of his to-do list is to keep kids in sailing and introduce new participants to the various classes –Flying 11, Manly Junior, 13ft, 16ft – offered at Manly.

“It’s been a busy year for a lot of people – on and off the water – but a very productive one,” Malcolm said.

“We’re right back into it to ensure the momentum continues.

“We’ve got a wonderful sailing community at Manly and a lot to look forward to in the coming years, but it won’t happen automatically.

“Like any sport, sailing has its challenges as far as participation rates are concerned and we want to maintain and build on the numbers we’ve got.

“That means ‘selling’ the sport to as many kids and parents as we can.”

A big part of that process is the Manly swap day –an annual event where 16ft skippers and crew take keen youngsters out for a spin around the harbour.

Malcolm said, “Many of the kids start out a little

bit apprehensive, but by the end of the day, they don’t want to go back in.

“It’s these sorts of experiences and memories that will stay with them and hopefully encourage them to stay in the sport or take it up.

“It was wonderful to see so many smiling faces among the kids and so many of our sailors willing to offer their time to ensure the success of the day.”

Manly 16ft Club Champion, Daniel Turner, who skippers Moonen Yachts took a posse of kids out for a ride.

“I remember the support I received coming through the juniors and swap day is one small way to pay that back,” he explained.

“You can explain the thrill of sailing a 16ft skiff to someone all day long, but to actually get out there and experience it for yourself takes it to a whole new level.

“They were exhausted by the end of it because it’s all action out there, but they all want to come back and give it another go.”

There is no sitting still inside the club either.

The kitchen team has been busy massaging its Winter menu, tweaking the offerings while keeping faith with old favourites.

“We have made slight changes but kept popular items and club classics,” Executive Chef, Justin Wong, said.

“With produce prices going through the roof, we still managed to use the top of the range products in our menus and let the produce speak for itself without over complicating the dishes.

“We are keeping it as home-grown as possible, using Queensland barramundi, Tasmanian salmon, Tasmanian mussels, Australian beef, Western Australian octopus, Australian lamb and some New Zealand seafood.

“Modern Australian dishes are a mix of our multiculturism; therefore, you will see Asian, Mediterranean, European and South American influences and ingredients in our dishes, which I believe make them

very unique and interesting while at the same time tasting delicious.

“As always, we are always striving to improve our dishes and bring bold flavours.”

Protected from the Winter elements thanks to protective screening on the deck and a phalanx of gas heaters, The Skiff is now a genuine all-yearround venue.

With a history spanning more than 50 years, the Warringah Rats Rugby Club is rich in culture, passion, and has a deep love for the game. And behind this Northern Beaches institution is a community of like minded people, and passionate business owners, who are fostering the future of the sport.

Most locals know the Warringah Rugby Club by their beloved nickname, the Rats; a title they inherited from Doug Leslie Snr, a Rat of Tobruk.

“According to history, Warringah experienced some difficult years with humiliating defeats,” explains the Club’s General Manager, Jake Letts.

“At the time, players were reminded by Doug that to give up in the face of adversity is never an option.”

After that, the Club became known as the Green Rats and their long held friendship with the ‘Rats of Tobruk Veterans Association’ began.

“Their legacy is honoured by a memorial on the hill at the southern end of Rat Park,” says Jake.

Rock up to Rat Park on game day, and you’ll get a sense of the Rats community in action.

“One of the best sites is our Juniors Day, where all Grade players wear their junior club sock colours. Our Juniors play in front of the crowd at half time and Juniors turn into Seniors. It truly is a local club for the community,” adds Jake.

As well as spectators, local businesses have, and always will be, an integral part of the Club.

“This year alone, we have around  35+ local businesses who support the Rats rugby program. They are our heartbeats and play a significant contribution to our sustainability.

“Bayfield’s, for instance, have been a major sponsor for over 35 years! It’s most likely the longest lasting sponsorship in community sport history,” adds Jake.

Having played rugby as a kid, first for the Newport Breakers, age 6 to 17, Junior representative for the Rats, from 10-17, and all the way through Colts and into Grade, Jake understands the importance of sponsorships when it comes to backing rising stars.

“All sponsorship helps as it provides a viewpoint for what local juniors can strive towards as they develop. The Club also directs funding to Warringah Juniors to continually support the development program. We have several partners that support the Senior Club and our Warringah Juniors which ensures both programs prosper.”

“The Rats Rising Program was established to invest, develop, and grow Australia’s biggest rugby nursery,” says Jake.

“It provides a high-performance program that caters to local rugby clubs and players aged 13 to 20. The Club is raising funds to provide some key positions such as Academy Head, a professional S&C team, several Wallaby and Rugby AU specialist coaches, the purchasing of high-performance equipment and the hire of grounds and gym facilities.”

Kaine, your family has a long history with the Warringah Rugby Club. Can you tell us about the support over the years?

In 1987, we owned the Narrabeen Sands Hotel. My Dad and Pop were looking for sponsorship opportunities and decided to support the Warringah Rats. This sponsorship strengthened and in 1999, Mark Holmes approached us about extra support for the Colts. I started playing Colts that year, and we felt strongly about developing the Colts who will be future grade players. In 2001, Bayfield Hotels became the major sponsor of the Club. Now, 36 years and $2.5 million later, we are still the major sponsor.

Did you play as a kid? How does your sponsorship help rising stars?

I played Rats Juniors from under 13s and Colts from 1999-2001, and I was lucky to be part of the winning 1st Grade Colts team in 2001. I played grade from 2002-2006 and again in 2008. This has always

been an important part to develop and spend money on. Dad has a grandson and granddaughter who play juniors and will hopefully progress to senior Rats one day. Watch this space!

Jason, what support has Pittwater RSL given the community over the years? Pittwater RSL was formed in 1958, and over the past 65 years we have welcomed people from all corners of our community, supporting local grassroots sport clubs and charities. How important is it to support grassroots sports in your community? We believe community sport fosters wellness in physical and mental health and provides a critical support network for families and individuals. Patronage of our members and guests at Pittwater RSL allows us to directly fund local sports organisations and charities. We encourage the community to consider us as their venue of choice for casual catch ups, family celebrations, events and functions. We host regular events like Family Fun Day on the first Sunday of each month and special events like our Winter Wonderland Spectacular launching in July, with Ice Skating and a unique Dining Dome experience for the adults.

How does your sponsorship help rising stars? All kids want to be a part of a successful environment and by supporting them from a young age, they will thrive.

How important, as a local business operator, is it to give support to the grassroots sports in your community? It's everything. The universe has a way of working it out. You only get out what you give back. Sponsoring the Rats allows us to put back in what the community gives us in support.

What has been your best memory while supporting the Warringah Rats? Literally crying as I ran onto the field after winning our 1st Grade premiership at North Sydney Oval. It was a sell-out and a historical moment for the Club.

On the lower west side of Westfield Warringah Mall is Lindt Chocolate Boutique – one of 18 Lindt Chocolate Shops in Australia – and a heavenly haven for chocolate lovers of all ages.

While it’s easy to pick up some Lindt chocolate at the supermarket, here you’ll find an exclusive world of Lindt, including an epic LINDOR Pick & Mix station, elegant hampers, and products from the Lindt Artisan range. And did we mention the Lindt Chocolate Bar? Kids will fall in love with the world-famous Crema Gelata ice cream, delicious milkshakes and delectable hot chocolate.

Thomas Schnetzler is one of only seven Lindt Master Chocolatiers in the world. Having grown up in Switzerland, it’s no surprise he wound up working with chocolate.

“It is somewhat of a dream job,” he smiles, while showing us around the Warringah Mall boutique.

“I grew up in Switzerland where chocolate is a big part of everyday life. Every town has stunning chocolate shops and every day after school, we would have a bit of sourdough with salted butter and a few slices of chocolate.”

Sounds like the perfect afternoon treat. It wasn’t long before Thomas decided he would make a career out of mastering chocolate.

“I got inspired and charmed by chocolate at a young age and decided to embark on an apprenticeship when I was 15,” he says.

“There are no chocolatiers in the family but my Mum was a really good baker. I trained as a Pâtissier Confiseur Chocolatier in a town called Schaffhausen and my

apprenticeship took three years. I travelled and worked in hotels, then joined Lindt 20 years ago.”

Lindt Master Chocolatiers, like Thomas, are known for their attention to detail, innovative recipes and continuous improvements which keep Lindt’s reputation as one of the world’s finest chocolate makers. It’s this passion and dedication that led to the creation of the famous LINDOR truffles.

“LINDOR truffles are basically like a real chocolate truffle,” explains Thomas. “We create the shell by placing chocolate into a mould which then spins around all axes creating the thin shell. Once set, the filling goes inside. That’s what gives you that unique taste experience of smooth melting filling in a delicate shell which is made to melt you.”

CHOCOLATE MASTERY

The delicate process of refining the chocolate, called the ‘Conche’, was invented by Rodolphe Lindt in 1879.

“This process was revolutionary to the chocolate industry and to this day every chocolate, by all chocolate makers, is conched in one way or another,” says Thomas.

Lindt, however, has added its own secret to the method which explains their flawless and sublime chocolate experience.

“It’s a bit of a secret as to how, and how long we do it for. Every chocolate to this day has a little Lindt know-how.”

The quality of the raw ingredients used to make Lindt chocolate is also incredibly important.

“At Lindt, we are one of the few large companies that make our chocolate from ‘bean to bar’, meaning we complete every step in-house. This allows us to have full control over the quality of the process. That is one of the Lindt Differences.”

Similar to the craftsmanship behind good coffee and fine wine, Thomas

explains that crafting quality chocolate requires a delicate process.

“Almost like a winemaker, we blend together different cocoa varieties from different regions to get different outcomes. Similar to wine, cocoa beans from different origins and varieties have different attributes, so how these are treated and blended to be made into chocolate makes a big difference,” he says.

Lindt works directly with over 80,000 farmers through the Lindt and Sprüngli Farming Program, which ensures they have traceability of all the cocoa and can get the best quality cocoa beans to make their chocolate.

“We purchase all our cocoa beans directly which ensures farmers and their communities are supported,” says Thomas proudly.

IRRESISTIBLE JOY

On average, Swiss people eat 11kg of chocolate per year, and Thomas is the first to admit he still eats chocolate every day for pleasure.

“As for my favourite, it’s hard to single out one product, but Lindt’s EXCELLENCE 70% Cocoa Dark Chocolate is a stunning classic dark chocolate and our LES GRANDES Milk with whole roasted hazelnuts takes me straight back to my childhood.”

As for tips for chocolate connoisseurs, Thomas says, “Be adventurous, explore different cocoa percentages and compare them. To get the best out of it, taste it at room temperature.”

Connections that Age

Darcy Botheras, a Year 9 student at Queenwood, understands the potential disconnection that can arise from seeking out peers of a similar age. Through her school’s Intergenerational Program, Darcy has learned the importance of keeping an open mind and connecting with people from different generations. This program has instilled valuable lessons in Darcy that will stay with her for a lifetime.

Age is used to group people. It is often used to categorise individuals by skills and interests, as at school. For the most part, this makes sense. It would be strange to have a Kindergartener working in the classroom with a Year 12. But even as we grow older, we are still drawn to people of a similar age and they naturally become the people who we surround ourselves with. When we do this, we can lose connections with other parts of our community.

The Intergenerational Program at Queenwood takes a small group of Year 9 girls every Thursday to our local Aged Care Centre, Glengarry, in Mosman.

We interact with the residents. We ask them questions about the happiest moments in their lives, listen when they recount struggles, and sometimes, just sit in comfortable silence whilst we appreciate each other’s company.

I heard stories from a woman who, despite her father’s orders, overcame the odds and studied law at Cambridge. She told me I should do what makes me happy, even if that means going against what society tells me a woman should be.

I talked to a lady who travelled as a flight attendant. She told me to get out into the world and see all the beautiful places it has to offer. I spoke to a woman who grew up in Italy and was a designer for Christian Dior. She told me about her home at the seaside and how much she missed her favourite music.

One of Queenwood’s values is service, something that we are taught from

Kindergarten to Year 12. Service allows us to give back to our community and provides a sense of purpose. Connecting with the residents at Glengarry has allowed us to gain a new perspective whilst also bringing them someone to talk to.

When I originally signed up for this program, many things were running through my head. I thought about what an amazing opportunity it would be to talk to these people and how it would bring them joy. I wanted to be there for them and give them something to look forward to each week.

However when I signed up, I was unaware of the impact it would have on me. I had not thought much about our wider community. I had never thought about visiting an aged care home before and was unaware of how much a small act of service could mean to someone else.

The residents say that the short amount of time we spent at Glengarry is enough to completely turn around their whole week. It may not seem like much, given that the time we spend there is limited, but the effect it is having on both students and the elderly says otherwise.

These trips are becoming the highlight of my week. The connections we are building are something that cannot be compared or described. We listen to their stories, and they listen to ours.

Age is only a number, but it will always define us in some way. As we get older, we get more responsibilities. When we

are 16, we can drive. When we are 18, we can vote. With age comes experience. Older people have so much wisdom and knowledge to share with us. While the challenges of our lives may be different from what theirs would have been, the roots and concepts are still the same. Having the opportunity to gain insights and hear just a snippet of their amazing diverse lives is such a privilege.

The Intergenerational Program will leave a mark on me. It has taught me how easily we forget to open our eyes and that it is never too late to make an effort. The older generations have done so much for us and led unique lives that are worth sharing. I have benefited so much from this program and feel lucky to be able to continue it.

We can choose how age defines us, but it shouldn’t define who we choose to spend our time with. I went to Glengarry wanting to make a difference in someone’s life. Coming back each week, I have now realised how much they have already made a difference in mine. For that, I will always be grateful. •

The Age of Opportunity

St Augustine’s College is renowned for offering an exceptional educational experience that is highly regarded by its students. Attending St Augustine’s College provides students with access to teachers who are experts in their field, and in 2023 this has been recognised again with two staff members invited to speak at the 2023 International Boys’ School Coalition Conference. The July event is in Auckland NZ, where educators will dive into research and best practice on how to positively impact boys’ education and develop men of the future.

In addition to the opportunities on campus, students have embarked

on International tours this year to enrich their educational experience. 2023 tours so far have included Football’s UK tour, Language’s Italy tour, and Drama’s USA tour. Rugby’s Fiji tour, Cricket and Tennis’ UK/Europe tour and Basketball’s USA tour are still to come. There is also an Arnhem Land Immersion scheduled in the Northern Territory for late June.

Opportunities extend beyond academics, with a diverse, inclusive, and consistently successful Sport and Co-curricular Program, including the number one Schoolboy Rowing Program in Australia for the second year in a row. The entirety of the College’s U19 Men’s Coxed 4+ has been selected to represent Australia on the world stage at the 2023 World Championships in Paris, France, after last year’s World Championships victory.

“Throughout my journey here, it’s quite astounding just how much I’ve been offered. I’ve been involved in swim squads, band, debating, school plays, SRC, soccer, and cricket,” says Max Martin, 2023 College Captain. “While our academics are strong and we work hard, we also are sportsmen, musicians, artists, actors and athletes.

You can be whoever you want to be here at Saints. You just need to be your best self.”

The co-curricular activities Max references to provide ample opportunities for personal growth and self-expression. From drama productions to chess, coding club, theatre sports, bands, and music ensembles, there’s something for every student to explore his talents and passions. The College is also proud of the lifelong friendships formed on the playing fields, at camps, and during performances.

Ben Cheshire, 2023 Prefect for Sport says, “Our school is packed with memories, friendships, learning adventures and the capacity to discover oneself. I would encourage all boys to embrace as many opportunities as they can and get involved with all the College has to offer.”

It has been a busy few months since the State Election. Thank you for re-electing me. I will continue to be a strong voice and advocate for our community and am focused on issues that impact our community including the cost of living, housing affordability, reliable energy and better bus services.

There is a busy agenda ahead as your Member of State Parliament, and I am looking forward to building on the progress already made over the past few years. This includes:

• Upgrading Balgowlah Boys

• Bringing the Opal cap on to the Fast Ferry

• Supporting a dynamic local economy from Manly to Dee Why

• Demolishing the former Aquarium and creating open space on our Harbour

• Protecting our local environment, including the rehabilitation of Manly Lagoon.

MARK SMITH Politics

Now that the state election is over, the mainland of Australia is governed at both state and federal levels by the ALP. Only in Tasmania are the Liberal party in charge. They are also diminished however, after two MPs quit the party and moved to the crossbench (over concerns about the new AFL stadium, but that’s a story for another day), meaning the Liberals are now in minority government.

In NSW, the Labor party managed to win 45 seats, the Liberal/Nationals 36, with 12 crossbenchers (three Greens and nine Independents. This means the ALP regains government after a long time in opposition, albeit in a minority. Chris Minns has a big job to do as the new Premier.

As I thought, the Liberals struggled on the Northern Beaches after candidate selection cost them the seat of Wakehurst (formerly held by Brad

I will continue working with local schools, community groups and volunteer organisations to ensure that our part of NSW continues to be the best place to live, work and raise a family.

Manly Hospice now open Australia’s first hospice and palliative care facility for young adults is now open on the former Manly Hospital site. I have received lovely feedback from parents and carers who have stayed at the facility. There is no cost to the families who receive care and support at the AYAH, and they come from right across the state.

In that seat, Rory Amon (successor) to Rob Stokes just beat out teal Independent, Jacqui Scruby, 50.7 to 49.3 after preferences, a swing of over 21% away from the Liberals. Now the real work begins for the state Liberals and Nationals, to decide what they stand for and show the people of NSW a vision for the future, otherwise they will find it tough to win back voters who have gone to the so called Teal candidates.

Federally, the government has just delivered their budget for the upcoming year. For the first time in 15 years, a Treasurer, Jim Chalmers, has forecast a surplus. It appears that this may only be a one-off, but at least it’s positive economic news.

The focus of the government is now concentrated on the ‘Voice to Parliament’ referendum coming up some time later in the year, probably in October.

While obviously this is an important issue, it is imperative that the cost of living crisis is not forgotten about. This is something

that affects everyone, from interest rate rises, high grocery costs, petrol prices, and of course the massive increases to power bills, not just for households but small businesses as well. Anecdotally, the business owners I have spoken to are all saying that they are now making choices between being able to pay their bills or reducing trading hours and cutting staff. This isn’t good for anyone.

The Labor party promised the Federal election to cut bills by around $275 for a household going into next year. This is not going to happen. Of course, outside influences are in play, but they are going to have to convince the public that they are working on solving what will only get worse during the Winter months.

A quick note on how the State Election campaign was run between the two major parties; wasn’t it refreshing to see a civil debate with the Liberals’ Dominic Perrottet and Labor’s Chris Minns showing due respect to each other while disagreeing on the issues? Congratulations must go to both. •

I take pride knowing that I have contributed to the healthy, glowing faces of the Manly community.

What is the biggest obstacle you have faced in your career and how did you stay motivated during it? Navigating

the last few years and keeping positive with so much uncertainty. We were so privileged to be able to keep trading while so many of our fellow retailers were closed. We worked tirelessly to keep the shelves full with immunity boosting products to help ease the stress within the community. We have come out the other side strong, vibrant and excited to continue to provide new and unique products to the community.

As a strong and successful woman, how do you inspire the next generation of boss girls? By showing how being organised, proactive and hands-on can help you achieve your goals! You pick up skills from every opportunity so don’t be afraid to try new things. This is the best way to learn and to figure out the next step.

How do you manage the pressures of balancing work, home, and personal wellbeing as a woman in today’s society? A positive outlook

is so important along with a healthy mind and body. I am so fortunate to have a loving and supportive partner, a fantastic team and amazing customers. A tight inner circle can boost you during difficult times.

How do you see your business evolving in the future, and what are your long-term goals for it?

We plan to introduce a range of ready-made meals and snacks that you can trust that have no nasties. And, we would also love to be more involved with local organisations to encourage accessible choices for healthy living, food and nutrition. •

What is your proudest achievement as an entrepreneur? Your ‘I’ve-madeit’ moment? The gratitude shown by my wonderful clients, who have trusted me to design and create their cherished forever piece of jewellery or restore a valuable family heirloom to it’s glory, means the world to me. Additionally, I am appreciative of any awards I receive. Moreover, I take immense pride in involving my children in my business. They have assisted me while pursuing their studies, and this has instilled in them values such as professionalism, positivity, mindfulness, and humility. Witnessing their growth is truly inspiring.

What was your biggest career obstacle and how did you stay motivated through it? As an entrepreneur, I have encountered numerous challenges throughout my two-decade journey in business. These experiences have truly shaped my character. Amongst them, the most significant test I faced was confronting the impact of the COVID pandemic directly. However, amidst these trying times, I managed to create a remarkable lounge wear brand called bybrigitte.com. This endeavour proved

to be a major positive during a period of uncertainty. Maintaining a forwardlooking perspective is crucial for any entrepreneur. It is inevitable that hurdles will arise along the way. When faced with obstacles, it becomes imperative to find creative solutions and navigate both beneath and above them.

As a strong and successful woman, how do you inspire the next generation of boss girls? I love working with the next generation of young ladies. They inspire me as much as I try to inspire them. I always encourage them to remain true and genuine to themselves, save money for their future, be brave enough to go for their dreams and stay financially independent throughout their lives.

Looking back on your journey to success, what advice would you give your younger self? I would give the gift of self-belief by assuring her that she is smart and capable. I would tell her to stay on her path and not veer off too much, but if she does, she should be able to find her way back.

What is the most significant barrier for women in the business world, and how can we overcome it? I’ve found that being a single mother to two beautiful children adds another level to time management, financial outgoings and keeping yourself vital to be creative. It’s important for us all to remember how important it is to support our fellow sisters in business on all levels.

How do you manage the pressures of balancing work, home, and personal wellbeing as a woman in today’s society? A great strategy I use is not to sweat the small stuff. There just isn’t time. Running your own business and having a family adds another dimension to life, and balance for me is loving myself along with my children. As a result of this, we are a tight knit supportive tribe.

How do you see your business evolving in the future, and what are your longterm goals for it? Manly Jewellers is growing from strength to strength. We’re thrilled to share that we’ll be relocating our store from Wentworth Street in Manly to Shop 5A in The Corso on June 12th. It’s an exciting step forward for us. We’re still providing our specialised services, including jewellery repairs and restorations, custom made jewellery along with our exquisite ranges of fine jewellery. Looking back on your journey to success, what advice would you give your younger self? Don't let insecurities hold you back from dreaming big. Work through moments of self-doubt and don't wait for perfection. If you have the passion, take the leap. Trust the journey and believe that you will succeed because you put your heart and soul into it.

What is the most significant barrier for women in the business world, and how can we overcome it? The pressure of balancing multiple roles is a significant barrier for women.

I have an incredible network of female entrepreneurs who understand the challenges, share experiences and support and encourage one another.

There are significant societal pressures on women in regards to managing their home life and career.

What is your strategy behind balancing work, home, and wellbeing? I'm still trying to figure this one out! Balancing work, home, and well-being is an ongoing challenge. Accepting help when offered, staying organised, and being okay when things don't go as planned are important strategies. We set aside a specific day each week for uninterrupted family time.

How do you see your business evolving in the future, and what are your long-term goals for it?

I'm excited about Rimba's future. Our goal is to become the most recognised wellness brand in Australia. We plan to open several new locations in the next 18 months. Building a head office team and bringing our staff along on this journey is part of our long-term vision. We aim to create a positive impact on the wellbeing of many individuals and communities. •

Maintaining composure, staying committed, and focusing on the task at hand are critical. The objective isn’t to rush to the finish line but to relish the journey while maintaining the highest standards.

Looking back on your journey to success, what advice would you give your younger self? Not every idea will be a success –if you fail, fail fast and recover quickly. There is a lesson to learn in all that you experience.

What is the most significant barrier for women in the business world, and how can we overcome it? Gender discrimination, equal pay, and flexible work arrangements are persistent challenges that cannot be resolved overnight. However, we firmly believe in the principle of “Get out of your own way” and offering unwavering support to colleagues and industries. Women empowering women is our ethos. What inspired you to start your own business? Eleven years ago, I left my corporate career to start my training and development company, Human Incite. I wanted to be my own boss and set my schedule to suit my family. My teenage daughters further sparked my obsession with health and wellbeing which inspired me to launch Soulhub. Be vulnerable, ask for help when needed, learn from others, leave your ego at the door; do the work! Define your own success and be true to what lights you up and try to enjoy the journey!

Looking back on your journey to success, what advice would you give your younger self? Look back but don’t stare. Reflect and learn from mistakes, but don’t let it paralyse you. Focus on progress rather than perfection. Build meaningful relationships with the people around you. Offer your help and be a cheerleader for others. Oh, and don’t get drunk at corporate Christmas parties!

What is the most significant barrier for women in the business world, and how can we overcome it? It’s unfortunate

that biases still exist when it comes to women’s achievements, caregiving roles, assertiveness, and self-prioritisation. To bring about change, we need awareness and open discussions about these societal barriers. When I embarked on Soulhub, I experienced some interesting encounters with men during lease negotiations. Despite being treated like a naive girl, I see it as an opportunity to defy expectations, rise above, and achieve remarkable success. That fierce determination is what motivates me, and I’m fully committed to making it happen.

How do you manage the pressures of balancing work, home, and personal wellbeing as a woman in today’s society? I gave up on the illusion of ‘balance’. I choose now to compartmentalise different areas of my life. When I’m with clients, I am 100% there for them, likewise with my family. I dropped the ‘guilt factor’ that serves no one. Instead, I choose gratitude. I make ‘Recovery Rituals’ a non-negotiable, prioritising time to refuel, recharge and reconnect, sleep and exercise.

How do you see your business evolving in the future, and what are your longterm goals for it? We hope to expand onto a digital platform. I’d love to open more Soulhub locations so more people can experience the magic. •

What is your proudest achievement as an entrepreneur? Your ‘I’ve-made -it’ moment? Recently, I arranged a five-night charter for a long-term client to attend the Monaco Grand Prix. To my surprise and delight, they extended an invitation for me to fly to Monaco and stay on board as their guest, allowing me to personally experience the incredible event.

It was an absolutely amazing experience. One of the greatest sources of joy for me is leading and managing a team that I am incredibly proud of.

What was your biggest career obstacle and how did you stay motivated through it? In the predominantly male-dominated industry of superyachting, I’ve had to navigate the path of finding my voice and ensuring that it is heard. It has been a challenge to stay creative and continuously generate fresh marketing angles in such a highly competitive field.

As a strong and successful woman, how do you inspire the next generation of boss girls? Always believe in yourself. Even on the hard days, know you are worthy and can do anything you put your mind to. Always take the long road and never any short cuts. I am a big believer in women in business; women are powerful and can succeed at anything they set out to do.

Looking back on your journey to success, what advice would you give your younger self? Don’t stress the small stuff. Have faith in your ability to achieve anything through hard work. I would advise myself to stand up for what I believe in and confidently speak my mind.

What is the most significant barrier for women in the business world, and how can we overcome it?

The key is to build a strong support system around you. Juggling a business, team, Airbnb, and a family would be impossible without the constant support of a loving network of family and friends. I am incredibly grateful for their presence in my life as it enables me to pursue my dreams wholeheartedly.

How do you see your business evolving in the future, and what are your long-term goals for it?

I have a vision of our team growing and expanding our business internationally. What inspired you to start your own business? My first moment of inspiration was when a girl bought one of the fluffy frames I’d made for a local market stall. The feeling of thinking “someone likes it enough to buy it!” was so positive and rewarding. From there, I decided not to get a normal nine-to-five job. Instead, I decided to follow my passion for creating things, and along this path I met other creators at the markets who were also creating their own, like cosmetics and candles. We became friends for life!

What is your proudest achievement as an entrepreneur? Your ‘I’ve-made -it’ moment? I’ll never forget the day Harrods called to stock my Britt Bears in their London store. It was a dream come true! Seeing my Britt Tutus in the David Jones’ Window Display at the Sydney CDB store was also amazing. I used to be a window dresser there. It’s also heartwarming to hear from people on how much they love my Britt Bears.

What was your biggest career obstacle and how did you stay motivated through it? I’ve experienced many setbacks, but I’ve learned a lot

As a strong and successful women, how do you inspire the next generation of boss girls? Just take the leap! It can be very overwhelming and daunting at times, but it can lead to so much. Don’t give up after the first rejection; use knockbacks as motivation to keep trying. Give your staff flexibilityit comes back tenfold!

Looking back on your journey to success, what advice would you give your younger self? Advice I would give myself is to be more confident and not believe everything other people say they can bring or offer. Qualifications do not always mean that someone knows what they are doing. As a teenager, I left school early and thought that

without qualifications I was inferior to others. But my life and work experiences by far have outshined this.

What do you believe is the most significant barrier for women in the business world, and how can we overcome it? I think women have broken so many glass ceilings, though juggling motherhood will always be a challenge. Running your own business definitely helps with flexibility. For me, dealing with overseas cultures, as a female, was not easy. I overcame it by showing up confidently to meetings – I pretended I spoke a different language once! And I walked out on a massive deal as a bluff. This ballsy move helped me to avoid being underestimated, which was common with many women who were doing what I was doing at the time.

How do you see your business evolving in the future, and what are your long-term goals for it?

I’ve been wanting to compile a book about all the Britt Bears stories I have. I’d love to see all of the letters and drawings from the kids and parents sharing very special moments in print. •

The first time Larry Adler ever saw snow was when he was 27 years old. Today, more than six decades later, his name stands as one of the most iconic in the global ski industry and the Larry Adler Ski & Outdoor store in Collaroy is a Northern Beaches landmark. Beaches COVERED. sat down with Larry’s wife, Nanette, to talk about legacy, love and Larry’s obsession with the perfect fit of ski boots.

If you’ve lived on the Northern Beaches for more than five minutes you’ll be familiar with Larry Adler – the one-stop ski shop on Pittwater Road in Collaroy.

With an eye-catching antique sleigh in the window and premium ski gear, everything about this chalet-inspired hub is a Winter enthusiast’s dream. And the fact it sits at the end of a quiet street, leading right to the beach, just adds to its endless appeal.

Sitting on an old, well-loved, brown leather lounge in the middle of the Larry Adler store, Nan, as she is affectionately known, nurses a warm cup of coffee and vividly recalls a colourful life that has led to creating one of the biggest ski brands in the world.

“When we first opened the store in 1976, Europeans would come to Sydney and they couldn’t believe there was a ski shop by the beach,” says Nan, CEO of the world famous store and wife to Larry Adler himself.

“People thought we were absolutely crackers!” she laughs.

Larry, now 95, is a Pharmacist by trade. He was raised and educated in South Africa and, before the ski shop, he and Nan ran a local pharmacy just a few doors up on Pittwater Road. But it wasn't long before Larry’s obsession with fixing skis and fitting ski boots in their garage at home got out of control.

“It was a hobby at first," grins Nan. There was no business plan! We had the pharmacy and we dabbled in ski gear.

"Our pharmacy customers used to get upset because Larry was always fitting ski boots rather than helping fill their scripts."

And that's how the boot fitting that Larry Adler is world famous for all began.

“He really loves skiing and boot fitting," says Nan. "Because of his medical background, Larry understands the anatomy of the foot and as a ski instructor, he understands the need for a comfortable boot."

From day one, Larry and Nan dedicated their time to looking after skier's needs, delivering the best customer service and providing top-tier gear for anyone who loves the Winter lifestyle.

"From when we were first in the business, we concentrated on boot fitting. It doesn’t matter what clothes you’re wearing, if you’ve got uncomfortable ski boots, you are miserable and the your holiday is ruined.”

There are now six Larry Adler stores across NSW, including the renowned Larry Adler Rent-A-Ski in Jindabyne and one of the largest online ski stores. Plus, four Montbell concept stores, a delightful destination for the outdoor adventurer.

“We are a one-stop shop," declares Nan. "We do all the boot fittings, boot repairs and ski tuning. We’ve got workshops, and we offer a personalised service and stock all the top brands. We have always been the Mercedes or BMW of the ski industry, with brands like Strolz, which we’ve had since the ‘80s,” says Nan proudly.

And to this day, the Adlers still do everything with purpose and passion.

“In the early days, everyone came to Larry because they knew him from Charlotte Pass, but there were a few

suppliers who said, 'We're not supplying a pharmacist with ski gear,' but Larry just continued regardless.”

"I’d often say, ‘Larry, you can’t spend four hours playing with that woman’s feet and expect to make money’. He’d say, ‘Well it takes that long and I’ve got to get it right!’”

A SERENDIPITOUS BRUSH WITH FAME

One of the most surprising things about Larry Adler, the King of skiing, is that he didn’t grow up in the snow.

“When he finished University, Larry left South Africa and travelled to London where he managed a Boots Chemist and went backpacking around Europe. Like all of us in the 50s, it was a rite of passage,” recalls Nan.

“He was 27 years old when he wound up in Norway and saw snow for the very first time. He couldn’t stand up, but he decided to conquer this thing called skiing. He went back to the hostel where he was staying and asked them to give him a job. The owner said he could help

by peeling potatoes. So, Larry Adler learned to ski while peeling potatoes in a youth hostel in Norway,” she laughs.

As Larry’s love for the ski fields grew, so did his beard.

“It was freezing cold (in Norway) and he ended up with this great big beard,” says Nan, telling stories of her sweetheart like they could have happened yesterday.

“It was 1956 and Kurt Douglas, Ernest Borgnine and Tony Curtis came to Norway to film the movie, The Vikings They advertised for anyone with a beard that could row. Larry applied and ended up in the movie as an extra.”

Iconic photos of Larry in The Vikings now hang proudly on an upstairs wall in the Collaroy store, impressively signed To Larry from the Hollywood stars of the show.

“Larry stayed with the company and became friends with Kurt, Ernest and Tony who said, ’Come to America and

work’, so he did. He travelled from New York to Mont-Tremblant in Canada where he got a job as a ski instructor.”

It was on the pristine slopes, powdery snow, and trails of Mont-Tremblant that Larry embarked on the journey of teaching ski instructors how to teach.

“Larry loved teaching and ended up with the Canadian Ski Instructors’ Alliance where he became Chief Examiner of the Alliance and Ski School Director at MontTremblant,” declares Nan.

A LEGACY OF CARE

When the snow ran dry and Summer set in, Larry ran a pharmacy in Toronto to keep up his qualifications. In 1960, he made his way to Australia and ended up in Charlotte Pass, the highest snow resort in the country.

“He loved Charlotte Pass and that’s where we met in 1963,” smiles Nan.

“I’d finished my nursing degree and thought I’d go to Charlotte Pass with a friend. I met Larry, who taught me how to ski.”

After returning to Sydney, Nan set off for London and Larry made his way back to Canada.

“Then he came to London to catch up with me, and the rest is history –we got married!” she says.

“It was Summertime, and we ended up in Jersey in the Channel Islands. Larry was in charge of the pharmacy in St Helier and I ran the casualty department of the General Hospital.”

After a year overseas, Larry and Nan returned to Sydney and settled on the Northern Beaches where they would spend the next 50 years raising a family and creating a legacy in the ski world.

“We are probably the oldest couple still in the ski industry,” she laughs.

“We’ve been on the Northern Beaches since 1965. We’ve lived in the same house, run businesses on the same street, and our children all went to school here.”

The Adler’s children, Larry, Craig, Skye and Scott, are all involved in running the family business in some way, and now you’ll find the grandchildren working in the stores too. But if Nan has it her way, she won’t be retiring anytime soon.

STOP 1: BREDBO

Bredbo is a wee little town, 80 km south of Canberra, and home to The Bredbo Pie Shop – the world’s best pie shop –or so the Publisher and Creative Director of Beaches COVERED. proclaims.

STOP 2: BERRIDALE

Most people pass through Berridale en route to the mountains. The tiny town between Cooma and Jindy is a great spot to stock up on supplies. Check out Shut The Gate and The Little Grocer, a small wine producer and one-stop shop for beer, wine and gourmet groceries. Originally from the Clare Valley SA, Shut The Gate has also opened up a cellar door!

STOP 3: DALGETY

If you take a left turn at Berridale, you can make it to Jindy via the scenic loop route through the little town of Dalgety, which boasts a historic timber bridge that’s still in use today.

And on the banks of the Snowy River, you’ll find Dalgety Brewing Company with plenty of craft beers, using water straight out of the Snowy River.

STOP 4 Jindabyne

Just a short drive from Thredbo, Perisher, Charlotte Pass and two hours to Selwyn Snow resort, Jindy is the service town for our Alpine playground. Outside Kosciuszko National Park at the base of the Thredbo Valley and set on the shores of Lake Jindabyne, it’s no wonder this ski town is famous for good vibes.

For culinary and liquid luxuries Jindy has it all. In the Old Town Centre, Dalgety Brewing Company has a new venue (at the former site of Angie’s Italian kitchen). Drop into Mooses Taphouse Bar & Grill which opens this season!

Jindy Inn is another top spot for warm, friendly and eco-friendly accommodation! Owners Claire and Eric have even set up a wombat rescue at their property, just outside Jindabyne, and a percentage of profits from all their endeavours help to maintain this cool facility.

Jindy has everything you need including two shopping centres, the Old Town Centre and Nugget’s Crossing, the ultimate Winter shopping hub. Here you’ll find Larry Adler’s beautiful retail shop as well as Larry Adler’s Rent-ASki. These guys are the best in the biz, especially for fitting ski boots, which will make all the difference to your end game on the slopes.

And right in the heart of Jindy is Jindabyne Brewing, a local, familyowned business whose goal is to make you feel right at home. These guys love fresh food and local produce. Their breads are made in-house and their beers are inspired by global travels and crafted with local snowmelt water.

More good times and great food await you at Banjo Paterson Inn, home of the famous Kosciuszko Brewing. Also check out Clancy’s Brasserie and The Overflow Pizza & Burger Bar plus a gorgeous, boutique accommodation, Banjo’s Rest

If Perisher is on your list of places to visit, head out of Jindabyne on the Kosciuszko Road for a 30-minute drive up the mountain. There, you’ll find Australia’s largest ski resort and some of the best terrain parks in the country.

Perisher has 65 kms of runs to cater for all levels of skiers. Covering 3,076 acres and serviced by 47 lifts you are able to access Perisher Valley, Smiggin Holes, Blue Cow and Guthega. The Valley is well serviced with a Medical Centre, chemist, post office, mini supermarket, equipment hire stores, clothing stores, snack bars, après bars and restaurants.

One of the oldest hotels in Perisher is the Marritz Hotel, a classic European-style ski lodge. Here, you’ll find fireplaces to daydream by; Perisher’s only heated pool, a relaxing sauna, an après ski bar and gourmet restaurant with exceptional service.

The Marritz Hotel started life as an exclusive, invitationonly private hotel, frequented by parliamentary figures and celebrities, and much of the history and eclectic charm remains.

With over 100 km of marked crosscountry trails, cross country skiers love Perisher! If you’re not on skis, it’s also perfect for a peaceful walk.

Finally for those who like to fly, Perisher’s award winning Terrain Parks are the best in the Southern Hemisphere for skiers and boarders of all levels. STOP 6: CHARLOTTE PASS

Skiing in Australia was born in Kiandra in the 1860’s and by 1930, a 38-bed chalet was built at Charlotte Pass, Australia’s highest ski resort. The current Kosciuszko Chalet Hotel was built on the same site in 1939 and to this day, it remains the heart of Charlotte Pass Snow Resort

The Pass has grown over the years, with several independently-owned hotels and lodges, installation of t-bars, pomas and the Kosciuszko triple chair. The expansion will continue as Guthries' high speed poma will be replaced with the Guthries double chair.

It’s not hard to see why beautiful Thredbo is renowned as one of the country’s premier ski resorts. The vibrant village is brimming with great restaurants, bars, places to stay and a pumping aprés ski scene.

Now boasting the high-speed eight person Merritts Gondola, skiers, boarders and scenic passengers can get from the village to the base of the Cruiser Area in six minutes. For a sip of sweet schnapps made from local fruits, stop into Wildbrumby Schnapps Distillery.

Filled with Austrian charm, this place is a day out for the family. Fill the kids with schnitzel and set them free to explore the raspberry patch and sculpture garden while you sip on locally-produced gin, schnapps, gluhwein and vodka distilled onsite.

You’ll pass through here on your way to Selwyn Snow Resort, so stop into the supermarket for locally smoked trout and a pie from the bakery.

If you’re looking for somewhere to stay, there are several options in and out of town at Providence Portal, Anglers Reach, or Old Adaminaby. The Snow Goose Hotel serves hearty pub meals to satisfy any appetite.

STOP 10: KIANDRA

Also on the way to Selwyn, Kiandra is an abandoned gold mining town, and the birthplace of Australian skiing. Once a bustling gold town that attracted more than 10,000 men, women and children, Kiandra saw the construction of banks, hotels and all the usual services. In less than a year, most of the gold was gone and the population was reduced to under 300. Today, all that remains of Kiandra are the cemetery, chimneys, cottages, race lines, dams and mullock heaps. Unfortunately due to the 2019/ 2020 Black Summer bushfires, many of the timber structures were destroyed; however, you can explore the self-guided heritage walk. At the very least, slow down and pay homage to the ancestral home of Australian skiing.

Just under 2 hours from Jindy with green and blue runs galore, Selwyn Snow Resort is the perfect spot for beginner skiers and families.

Unfortunately the 2019/ 2020 bushfires swept through Selwyn too, destroying infrastructure and impacting the local community. Good news is that The Blyton Group has been rebuilding Selwyn which is set to re-open this season!

While you can’t stay on the mountain, make sure you visit, show your support and check out the brand new facilities. State-of-the-art technology and snow guns mean you’re guaranteed fresh powder all season long!

On a non-skiing day, be sure to check out the jaw-dropping Yarrangobilly Caves where you can take a guided tour and swim in the thermal pool, fed by a natural spring and 27ºC year-round. Here, you’ll find some of the most beautiful limestone caves in Australia, with six caves open to the public. Indulge in South Glory, Jillabenan and Jersey Cave for unforgettable scenes. Then have a BBQ at one of the fire pits in the picnic area. •

Hi Tarquin. What is it about the iconic Long Reef Surf Shop that stole your heart and ignited your passion to own a slice of beachside history? As a lifelong surfer, ocean and beach lover, I’ve always had a passion for surfing and the history and culture of Australian surfing. Jenna and I moved our family back to the Northern Beaches after an eight-year stint working in the USA. We were looking for a sea change business we could both feel passionate about –that’s when we found Long Reef Surf. We could immediately see the vision and how we could build on the legacy of 38 amazing years in business! We put Jenna’s experience in fashion retail, together with my passion for surfing and global corporate experience to rebuild this iconic shop from the ground up.

The renovation looks amazing. What are the key changes you’ve implemented? From the minute you walk in the door, you’ll feel chilled and welcomed. The interior is totally refreshed, but still feels familiar with an old school vintage surf vibe that pays homage to the amazing history of surfing on the Northern Beaches. We’ve got classic vintage boards from many local shapers of yesteryear on

display, and we've enhanced the layout for easy exploration of our expanded product range. We’ve increased our range of wetsuits for women and kids, our surf accessories and our swimming and snorkelling products. We’ve had great feedback from long-time customers which motivates us to keep improving.

It is getting cold in the surf! What are the coolest technological advancements you've witnessed in wetsuit manufacturing? There’s an exciting mix of new tech and sustainability/eco features available in our range this year. O’Neill has a major focus on sustainability this Winter with their super warm Blueprint at the top, featuring neoprene and materials made from limestone, recycled oyster shells, carbonised tyres and recycled plastic bottles, combined with the amazing flexibility the Hyperfreak wetsuits are famous for. The Rip Curl Flashbomb Fusion offers revolutionary new stitchless Dry Seams that promise warmth by keeping the leaks out. Quiksilver also have eco-friendly suits, and the stand out this Winter is their Highline, which is lightweight and spongy, yet super warm with the softest eco-velvet lining we’ve ever seen.

You’re a family business. How do you manage all the demands? It is a busy time of life, and there’s a lot to juggle! With one teenager and one tweener, who are both sport lovers, we have a full work and after-school life. The master plan for Tarquin, after 20+ years in the Corporate Tech industry, was to kick off every day with a midmorning surf, followed by a few hours at the shop and onto an afternoon game of golf at Long Reef. Well, that plan is still a long way off… Jenna is already fulfilling her dream of running her own shop, while I’m on school pick-

up and work in the back office! Perhaps ask us again in a year or two...

We’ve noticed a lot of kids using hand planes in the surf. What changes have you seen in the industry over the years? The most exciting evolution for us has been the tremendous growth of women and girls into the forefront of surfing. That’s a big reason why we offer so much choice now in store for women and girls. When I was growing up, surfing was dominated by blokes, and it was very “macho” out the back. Women bring such a nice welcome vibe to the sport! The other big change is the unfortunate demise of many local shapers as the industry moves board production to mass production in China. Brookvale and the stretch up to Palmy was where it all started, and there are only a few brands left who shape and produce locally. There is so much surf heritage on the Northern Beaches, and we’d love to see it return.

The team’s success wasn’t limited to Samuel alone. His younger brother, Luke, at just 14 years old, bagged an astounding six gold medals and a silver in his age group at the 2023 Age Nationals. Another rising star, Lachie Davies, solidified Warringah Aquatic Swim Club (WASC) the affiliated Club to NS Swim School, dominating in the freestyle category across multiple distances, sweeping the 50 and 100 freestyle events in the same age group. With 56 finalists, WASC achieved 4th place out of 204 clubs at the 2023 Australian Age Nationals.

The school’s commitment to excellence has propelled many of their swimmers to remarkable achievements. Their team’s participation in various national competitions such as the Australian

Age Nationals and open water events has consistently showcased their talent and determination. NS Swim School’s swimmers have risen to the top, securing impressive rankings and making their mark in the swimming world.

Pillow TALK

A double bed should have two pillows on either side, even if you only intend to use one. Get creative with your pillow cases. They don’t have to match! Mixing a variety of prints create depth and interest. Make a statement by mixing the contrasting colours of Pure Petal and Mellow Yellow.

Work from the bottom up.

Matching a bottom sheet with pillow cases and flat sheet is a great way to create cohesion. You can add interest by using a different pattern for your doona cover and top pillow cases. We love the playful combination of Thelma Stripe and Nanna’s Kiss.

After travelling for a year, I returned home in 2002 to pursue a career in Landscaping and Horticulture. Michelle Begley is a Director of nuevue, a window furnishings company on the Northern Beaches that delivers high quality products and an impressive end-to-end service. In a catch up with Beaches COVERED. she recalls playing in her grandmother’s retail studio with in-house workroom in Bondi and how these profound childhood memories shaped her life forever.

With a legacy spanning three generations, nuevue has been crafting premium window treatments and luxury soft furnishings, including indoor and outdoor solutions since 2007.

“My late grandmother, Diana, was an industry leader for over 30 years,” says the nuevue Director, and local Mum-of-three, Michelle Begley.

“My Father, Jonathan, worked alongside her. He’s now coming up to 42 years in the industry. When I was a child, my weekends and holidays were spent immersed in fabrics, trims, curtain hardware and lending a hand for onsite installations.

“My earliest memories are of making up curtain tracks with my father and laying out fabrics on the work benches with the tailors and seamstresses. I was like a kid in a candy store; everything was exciting.”

Following university, Michelle worked as a primary school teacher before making

her way back to the industry where her family’s business began. Originally based out of a double lock up garage, it was the quest for more space and business expansion that brought her northside.

“We started our business in Bellevue Hill, which is where the spelling of nuevue is inspired from. When the business required a bigger premises, we got our passports and moved across the bridge,” she laughs.

Now, nestled in the industrial heart of Cromer, nuevue is a cherished lifestyle business that loves helping their clients bring their dreams to life, tailoring their vast array of functional and aesthetic desires.

Many people think plants should not be planted in Winter. Wrong!

“Plants are just like humans,” says Marina Grassecker from Harvest Native Nursery in Terrey Hills .

“We, and they, need warmth, shelter, food and lots of love! They also take time to adjust to their new surroundings. When the weather warms up, the soil is already warming up and plants will be ready to take advantage of this and start growing. Remember, native leaf mulch acts as a blanket and will help keep the soil warm in Winter while also keeping weeds down.”

Marina says Winter is a great time to pull out pesky weeds, by the roots or use a natural herbicide to eradicate them.

“If you don’t have time to get rid of the seed heads before they mature to stop them spreading, you can pick them off the stems, mow or whipper snip.”

Native plants prefer pruning in Autumn or Spring as the cold can damage new shoots in Winter. There are lots of beautiful native plants to consider planting this season – here are Marina's top five!

WHAT ABOUT INSECTS?

If insects are damaging your plants, my best tip is to let them eat and let them live! Butterflies grow from caterpillars, and spiders, wasps and flies, rely on your plants to feed on, build nests with and generally have a good life by pollinating plants. Birds feed on these critters too. There is a massive decline in the insect population so we need to let birds eat insects instead of getting rid of them.

Keep in mind, when caterpillars demolish a plant, the butterflies and moths you see are a result of you letting them munch on your garden – it’s the best café in the insect world! If your garden has lots of insects feeding on the plants, it’s part of the ecosystem and ecosystems need animalia to thrive. •

Beaches COVERED. caught up with Zali Steggall and three local business owners to talk about their commitment to a sustainable future.

Saving the Daintree One Scoop at a Time

Ben & Jerry's Manly has teamed up with HalfCut, a global movement dedicated to rainforest conservation, to help raise awareness and funds that will conserve the Daintree Rainforest in Queensland for it’s traditional owners, Eastern Kuku Yalanji people. Since August of last year, this Scoop Shop has raised over $12,000. You too can help to conserving a portion of the rich biodiversity in the world’s oldest rainforest.

HalfCut is an organisation that aims to protect crucial and endangered biodiversity in the fight for climate justice, all while supporting the Traditional Owners of the land by handing over management and healing of Country.

Last year, the team at the Manly Scoop Shop held a variety of fundraising initiatives, including Round-Up Donations, where customers could choose to round up their purchases to donate the difference.

The store also offered Coconut Bowls paired with delicious scoops of ice cream, providing a unique and ecofriendly ice cream experience. Raffles were organised, offering incredible hampers with prizes donated by local businesses in Manly while the "Guess how many lollies are in the Lolly Jar" competition added an element of fun.

Ben & Jerry's Manly even organised a breakfast event with local community members to raise donations while the dedicated staff members also contributed their own personal donations to showcase their commitment to making a difference in their community.

As Ben and Jerry's Manly enters their third year of involvement and partnership with HalfCut, they strive to surpass the achievements of the previous year, making an even greater impact.

"It's not every day that you see your local ice cream shop saving endangered rainforests," says Alyssa Reynolds, Store Manager. "It's a good time to get down, grab a scoop and play a part in ensuring a safe future for all species on Earth," adds Hayley Economos, Social Mission Lead.

In March, the Intergovernmental Panel on Climate Change (IPCC) released a report revealing the severe and widespread impacts of climate change. To avoid a catastrophic future, stronger climate action is needed. While many countries are accelerating their transition to clean technologies, Australia currently ranks among the bottom 10 nations for action on climate change.

Across the world, governments and businesses are racing to Net Zero and accelerating the transition to clean technologies by establishing strong targets and policies that drive investment. Australia needs a strong 2035 target – a floor of 75 by 35 –to stay in the race.

URGENT CLIMATE ACTION

The latest IPCC report underscores the urgent need for action. Human induced climate change is causing dangerous disruptions worldwide, affecting billions of lives. The report warns that without substantial reductions, global warming could start tipping over 1.5 degrees by as early as 2027. To mitigate these risks, rapid and deep cuts in greenhouse gas emission are crucial.

THE GLOBAL PERSPECTIVE

Governments around the world are responding to the climate crisis by setting ambitious targets like the UK’s 78% reduction by 2035, incentives to accelerate transition through the US’s Inflation Reduction Act, Germany’s Net Zero target by 2045 (80% by 2040) and

enhancing the competitiveness of Europe’s Net Zero industry through the EU’s Green Deal.

To meet the Paris Agreement goal of limiting global warming to 1.5 degrees and emerge as a leader in climate action, Australia needs to match our International peers and accelerate emissions reduction.

75% EMISSIONS REDUCTION BY 2035

To turn our performance around and set Australia up as a renewable superpower, we need a strong, achievable target. This is why I am calling for a commitment to a 75% emissions reduction target by 2035.

In late May, my ‘75 by 35’ campaign was officially launched, aiming to mobilise public pressure on the Australian Government to take on this more ambitious target. Australia’s current commitment to 43% by 2030 is not sufficient to meet the Paris objectives.

This is not an unrealistic target. Tasmania is committed to Net Zero by 2030, Victoria 75-80% by 2035 and NSW is also committed to 70% by 2035. With the states and the business sector leading the way, the Federal Government must join their efforts and commit to a more ambitious target for the entire country.

We already have the solutions to fix this, but we need the political will and investment to do it now, and to accelerate this change.

Collaboration among all levels of government will enable Australia to work collectively toward a common target and ambition. A strong commitment to 75% by 2035 with clear sector roadmaps and targets has the power to supercharge our economy as it will give business and the International investment community the confidence to invest in Australia.

ACTIONS NEEDED

While there is much to do at the national level, as individuals we can also make significant contributions to emissions reduction. Installing rooftop solar, switching to renewable energy providers and replacing gas stoves with induction cooktops are some actions that can be taken. Moreover, transitioning to electric heaters and hot water systems can save over $1,800 per year.

In workplaces, choosing LED lightbulbs, implementing energy efficient heating, ventilation, green superfunds as default employee superannuation funds and opting for sustainable suppliers can all make a substantial impact.
