In a Scandia cornfield, stalks stand tall, leaves browned by October frosts. On November 1, Roger Rydeen hadn't started harvesting, but he predicted high yields for the year. For Rydeen, who grows corn for sale and to feed his cattle, the low prices are discouraging. "Looks like the yields will be good, but the prices are terrible," he said. "And the price to plant it stays the same. Seed and fertilizer are still as high as ever. … The price can have to do with foreign trade." This year, the uncontrollable variables bringing low prices could signal more than oversupply. A recent report by the New York Times, "A Global Chill in Commodity Demand

Scandia yoga studio to close

Almost every culture has a signature sausage. The Germans made wursts, Italians salami, the Polish made kielbasa and the Swedes, korv. For some families of Swedish heritage, potato korv is a mid winter tradition, served hot on Christmas and cold as leftovers. For others, it’s never graced the julbord (Christmas table). “Some people liked it and some didn’t,” said Julie Erickson, PR coordinator at Scandia’s Gammelgården Museum, which will host two korv-making classes this weekend. “It wasn’t ever really a festival or Christmas dish until more recently. It was a way to stretch out meat scraps into another dinner. But some foods take on a different meaning over the generations.” In addition to stretching a meal, korv was also valued by early settlers for its shelf life. “When they came here, they used to make it around butchering time,” said Erickson. “The meat scraps were mixed with potatoes, and they’d clean the intestines and use them for the casing. Then they were stored in vinegar in crockery. They’d make it all at once and store the crock in

Yoga Hus, Scandia’s premier yoga studio – and the only dedicated studio in a 12-mile radius – will hold its final class Saturday, December 26. “Change is not easy and it was a difficult decision to make,” wrote Yoga Hus owner Chris Coleman as she broke the news to local yogis, “but I am looking to simplify and focus on just one studio.” Coleman also owns and runs Yoga Forest in Forest Lake, and plans on expanding offerings there.
