“If music be the food of love, play on”. Well, we couldn’t agree more, Shakespeare. With upcoming weddings and new births, our office is simply bursting with love. On that note, I would like to say a huge ‘Congratulations’ on behalf of the Cotswold Style team to our amazing designer, Nick and his wife Katie, who recently became parents to the beautiful Maisie Elizabeth. On the same ward as Nick and Katie was in fact, Zara and Mike Tindall - so, ‘Congratulations’ on the birth of their daughter, Mia Grace. So, with love on our minds, we thought it only right to indulge you with an issue filled with beautiful boudoir inspiration (page 34). The furnishings gracing our pages are just divine and left me wanting to update my bedroom immediately, and I’m certain it will with you, too. Sitting amongst the coming pages on page 58 is one of two photoshoots this month, showcasing four pages of glamorous lingerie. The shoot is reminiscent of the Golden Age of Hollywood and appropriately set at The Daffodil. Now, if you’re struggling to find the perfect outfit for the Races in March, never fear; our second photoshoot, ‘Manor Glamour’ (page 78) is sure to be of service to you. Another exciting part of this issue is my interview with chef extraordinaire, Albert Roux, at Cheltenham Racecourse (page 16). I even had the opportunity of sampling his delicious new menu for the Festival in March. If you’re going, you will be in for a treat. Albert was a true gentleman and ever so amusing, it was an honour to meet him. Be sure to enter our exclusive competition (to the left) with Le Champignon Savage. Guests were invited by Creed Foodservice to their offices on the Staverton Technology Park to a free Cookery demonstration by Rob Rees The Cotswold Chef. The purpose of the meeting was to launch the Wiggly Worm 100 Club to raise much needed funds to help feed some of the 16 per cent of children living in poverty in Gloucestershire. The event was organised by Eilis Cope of Cope Sales and Marketing. Local companies are being asked to contribute £250 to help feed those in food poverty with the help of the Little Wiggly Worm Machine which tour around the county providing nutritious hot meals for those in need as well as offering cookery advice and demonstrations.To get involved please contact www.thewigglyworm.org.uk

“Gordon? Oh, he’s a little lamb...” Albert Roux and Michel Roux Jnr are, quite simply, two of the most extraordinary chefs of current times. You may already be aware but Albert was awarded the very first, two and three Michelin stars in the UK! As a result, Albert is one of the most admired chefs in the world. My meeting with Albert came about from both he and his son, Michel, having created a bespoke menu for Cheltenham Festivals in March. Served exclusively at ‘Fairlawne’, racegoers will experience the ultimate in exquisite dining with stunning, panoramic views across the racecourse and Cleeve Hill. The decision to name the restaurant, ‘Fairlawne’, is significant as it is a reference to Albert’s tenure as Head Chef at the Fairlawne Estate in Sussex. The location also happened to serve as the birthplace of his son and co-creator of the menu, Michel. Having been invited to sample the new menu, I can tell you firsthand that it is simply divine. My favourite was the Crème Brulee dessert. Delicious, just delicious. I was lucky enough to spend some time with Albert and talk about that wonderful thing that tends to be an integral part of our lives – food. The act of preparing, cooking and serving food is something that Albert considers almost an expression of love. “My first wife was a fantastic cook. She cooked and I would only ever give her a few tips but only if she asked me. She was very good. My second wife didn’t cook. If I cooked it was too rich for her. In the end I had enough. I said, you cook your dinner and I will cook mine” The inspiration behind his new cookbook, French Country Cooking, is testament to how influential both his grandmother and mother were in the family kitchen; “To be served every day, simple, peasant food gave you the need to want to eat well. My mother really enjoyed cooking; in fact my latest book is all about her. She was very French that way; something that has unfortunately, disappeared these days”. Handing over Le Gavroche to his son, Michel Roux Jnr was a proud moment for Albert; “I handed it over to Michel without any interference at all. I said to my son that if he needed anything then I am only one call away. He was apprehensive but he has done so well. I’m very proud - it’s like winning the lotto ten times over. I’m very proud of my son; his attitude, the way he handles people – that’s very important to me”. Passing on his expertise is paramount to Albert, yet, his high standards remain crucial to him. “There should be one aim and that is to teach; that is great. In the kitchen, you have to be rigid but not pushing, which we [he and Michel Jnr] both are but don’t shout at people, humiliating them in front of others is wrong, it unfortunately still happens which is sad”. Albert has trained some of the very best chefs around; namely Marco Pierre White and Gordon Ramsey. Of course, Gordon Ramsey is infamous FEBRUARY 2014

for his outbursts on television, doing just what Albert condemns. In defence of his protégée Albert stated, “That was done by the media. Gordon? Oh, he is a little lamb. I trained him, Gordon can cry! So, what does Albert make of the celebrity chef phenomena? “It’s all good stuff, although, I wouldn’t some of them to cook me a meal! If it wasn’t for television, they would be out of work. They make cooking interesting; it brings people into the kitchen. But some think they can become a film star, but perhaps they should go to Rada instead of a kitchen. It should just be about the food. If Albert were to encapsulate what makes a great chef, it would be simple; “One word. Attitude! If they have that, I can teach them. The wrong attitude? I cannot teach. There’s a packet full of talent these days. We have some very intelligent girls and boys, who want to enter the profession. This is all very good”. I couldn’t let Albert leave without him giving us an idea of what to cook for the person we love this Valentine’s...”I would do a little heart, you can buy the moulds; with white cheese and cream, de-mould it and all around I would place raspberry coulis. Albert then turned the questions over to me, “Are you thinking of creating this for the man in your life?”. Oh, I sure am Monsieur Roux! CS

Using colour to link rooms

To energise the kitchen, use lime greens with turquoise blues and vibrant yellows. A statement blind in a patterned lime green curtain fabric looks great. Fragrantissima February Mention honeysuckle and most of us are instantly transported to a summer evening and a sweetly fragranced lemon yellow liaison. Just to get you started, Rhododendron fortunei and Euonymus fortunei, now see how many you can find. the fragrantissima part of the name. Who said Latin was difficult?! I wish I’d had that one in my translation with Mr Hepburn in Lower College 3 circa 1991)! Also referred to as woodbine, honeysuckle was even acknowledged as “luscious” by none other than Shakespeare in ‘A Midsummer Night’s Dream’ and Chaucer also felt it worthy of a mention. Easy to grow, fragrantissima is happy in full sun or partial shade and is best planted at the side of a gateway, behind a bench or alongside a pathway so that the scent can be enjoyed. The flowers often bloom on bare branches, but it is worth noting that in some mild spots the shrub will cling onto its leaves. Expect a display of dull red berries to follow flowering. Do allow it enough room as it likes to be able to spread out, a trait many of us share after an over indulgence at the Christmas cheeseboard! It was also once believed that planting a honeysuckle in your garden would ward off evil (think that’s probably of the spirit variety, won’t prevent the lure of the cheeseboard)! Of course honeysuckle is well used in the perfume industry. Chanel’s ‘Allure’ offers an enticing honeysuckle note and The Cotswold Perfumery use honeysuckle in one of their classic fragrance oils. Estee Lauder once released ‘Honeysuckle Splash’ – a few years ago now – well worth a spray if you can still find it! So whether by your garden gate or adorning your pulse points, I wish you a February full of fragrantissima. CS

Sudeley Castle welcomes back Steve Lanin following his return from a garden restoration in Cumbria. Steve offers inspirational words, during what is usually a quiet month in our gardens... After a two-year absence from writing this column, I'm afraid I'm back! I left Sudeley Castle to help kick start a massive garden restoration in Cumbria and, after year when incredible progress was made and £1m spent on the project, I returned to Sudeley, bringing all my new experience with me! Writing this column the first time around, there was always one month of the year that I struggled to write about. January is easy, you have thoughts of reflection on the year past and aspirations for the year to come; April is all about hopefulness for the summer and tulips; June is dominated by roses and the autumn months are all about clearing and hedge cutting. February is different; it’s often a messy month where completion of winter tasks and the tidying for the new season overlap during often cold and unpredictable weather, right at the end of a winter we have all begun to tire of! I was so stuck in fact that I pleaded with a fellow gardener friend of mine for some inspiration, and in due receipt of a brilliant idea, I have since chosen to ignore it! The reason is this; it set my mind to thinking about something that is endemic in gardening, although it’s not confined to it as it’s often found FEBRUARY 2014

where enthusiasts meet, and that is generosity of spirit. Which brings me back nicely to my time in Cumbria. The project was massive; the garden had been abandoned for 70 years and the starting point was zero. I should have been terrified and often was, but what I found was communities of experts far more knowledgeable than myself who were not only willing but also keen to help me in literally every aspect of the project I came across. That same sense of enthusiastic support is something I have found throughout my involvement in gardening. It is one of the many lessons I learned, and one that has allowed me to start to regenerate parts of the garden at Sudeley with renewed vigour. You will find many changes in the garden when we re-open next month; some of them small, some of them rather larger, but what links them all is the underlying principle that if you’re not sure about something then there are always people more knowledgeable than you who would love to help you and inspire you on to greater things. Very few of us have massive gardens that are blank canvases or have significant historical features to be

restored: most of us have modest plots, which have multiple uses from spring through to autumn. The winter is a good time to think about what you might like to do, and don’t be afraid to think big: many grand gardens are split down into manageable portions, which are then themed. So if you'd like to create a white garden, a Japanese tea garden, or a wildlife-friendly meadow, then all of that is entirely within your grasp. There are literally thousands of enthusiasts in gardening clubs, allotments, garden centres and even in historic houses who would love to point you in the right direction, impart some words of hard-won wisdom or maybe even give you some seeds to help you on your way. In gardening you can indulge your own sense of creativity, much as you can with your home interior, only outside is far more dynamic and, I think, rewarding. We get approached by all kinds of people for all kinds of reasons, however, increasingly we are being specified by the Client or Homeowners, Architects or Designers. 2. Are there any trends becoming increasingly popular? There is a renaissance for classical architecture and architectural features. This style sitting alongside cutting edge technology and modern design works extremely well and complement each other beautifully. 3. Do you offer private commissions? We do offer private commissions and a bespoke service which have seen a growing appetite for. 4. What has been the most exciting project you have worked on? We are always proud to work on important historic buildings and to restore them impeccably. That said, we are always excited to work on anything that is a challenge - something new that has never been done before. One of the most exciting projects to work on is still in the design stages and won't be complete until FEBRUARY 2014

The most popular period style is the Georgian period; it is one of the longest and includes the Regency period. The neo classical style was directly influenced by the grand tours of Europe, brought home here to England and lovingly adapted to suit our way of life. It has left us with a rich heritage of beautifully proportioned and well designed buildings. 6. What makes your service stand out from the others? Our understanding of design and proportion together with an attention to

detail are what helps us to provide you a service that shares our responsibility to do the only the very best for you, for us and for the building. After all, we are helping to create an important architectural heritage of our life time. 7. When adding value to a period home, is there anything that you would recommend? Try and use traditional products and materials wherever possible, they were used for a reason. Handmade and locally sourced materials and trades are the best investment in the long run. 8. What should customers be aware of when looking to update their period home? Never go small; mouldings or features that are undersized or under proportioned can look odd. Bigger will always look better. A good rule of thumb is to look at the skirting boards, if they are original they will give you a good indication as to what size the cornice should be. 9. Improving pet health and welfare through technology Alison Jones of Vets on the Park shows us how valuable technology can be for pet owners The veterinary profession has made rapid advances in the technology we use in the diagnosis and treatment of poorly animals. However, it has been rather slow to realise the huge value of everyday technology in the vital role of preventative health. Thankfully, that’s all changing quickly and at Vets on the Park, we have recently introduced a bespoke pet reminder service whereby all of our clients are automatically sent a text message reminders from us when their pets flea and worm preparations are due. This simple service is a great memory jog for our busy clients who, like me, are juggling both a busy work and home life. Sometimes real life just gets in the way doesn’t it? Most pet owners are fully

aware of the need to keep their pets worm and flea treatments up to date but simply forget when to do it. All of our lives have changed and we now rely more and more on electronic communication making this bespoke reminder service perfect for busy people. We can even fine tune the reminders to know that a client should have used up all their treatments and so make sure our staff have the next pack of treatment ready and waiting for them at the surgery. We hope to build on this technology to remind owners about other products and services such as prescription medication and even special diets. Many drug companies have also realised the value of technology in

educating and informing the pet owning public. New free educational veterinary “Apps” are being launched all the time. One of the most useful ones we have seen recently, is a breathing rate monitor and recording ‘App’ for dogs with heart disease. This simple check that all owners can easily do for themselves at home, gives us vets a great amount of useful information about how the pet is doing on the medication we have prescribed, without you even leaving the sofa! With the winter months now truly upon us, the Farm Park is closed to the public until mid-February. There’s still plenty to do; looking after the animals and preparing for the new season, but I took the opportunity whilst it was quiet to go and visit a very inspirational young lady, who’s recently taken up the reins at Nell’s Dairy, the organic dairy farm that’s based literally down the road from us. 21 year old Flo was not particularly academic or interested in school, but having grown up on a pig farm, she had an instinct for farming. Flo was determined to follow her passion, so she took herself off to study Agriculture at college, sailing through with distinctions across the board. Armed with her qualifications, in her own words she ‘spent some time helping out here and there’ until her Mum spotted the advert for her dream position – the opening at Nell’s Dairy - in Farmer’s Weekly. Flo never thought she would even get an interview, so it just shows that if you are determined enough to follow your dreams, you can get there if you just stick at it. When I arrived at the farm in the pouring rain, I was eager to meet the herd and Flo led me into the barn where the Guernsey cows are kept. I was so impressed with how well maintained it was and how they were nestled into all of the fresh yellow straw, nice and cosy, most of them still FEBRUARY 2014

With Valentine’s Day fast approaching you might be planning on a romantic dinner date, trip to the movies or a cosy night in. Whatever your plans are, it’s the perfect occasion for pretty, glowing makeup.

Getting Started For soft and supple skin begin by prepping your face with a light moisturiser. It’s important to choose skincare that suits your skin type. So for those with normal/dry skin, Simple’s Kind To Skin Hydrating Moisturiser (£3.99) is a great option. If you have combination/oily skin you still want to ensure your skin is hydrated, but opt for a moisturiser that is oil free like Nivea’s Daily Essentials (£3.99). Get the Glow Key to this look is radiance. One of my favourite foundations for brightening the complexion is NARS Sheer Glow (£30.50). It gives great coverage and is particularly lovely for this time of year when our skin can appear a little dull due to lack of sunlight and the cold weather taking its toll. To awaken the eye area use an illuminating concealer, gently using a patting motion to apply. A great alternative to the iconic YSL Touche Eclat is L’Oreal’s Lumi Magique Concealer (£8.49). Enhance your features by dusting a pretty shimmer highlight on your cheekbones and at the top of your cupid’s bow. Bobby Brown’s Shimmer

As an extra step, give warmth to the skin by using a matte bronzer. Add it where your face would naturally catch the sun: on your temples, cheeks and across the bridge of your nose.

Enhance Those Eyes Keep your eye makeup soft and natural: warm browns and gold make a gorgeous combination. A great palette is the Chanel Quadra Eyeshadow palette in Prelude (£38). I love that each shade has a little bit of shimmer, which adds some sparkle to the look. A top tip to draw out those eyes is to use a touch of the champagne shade in the inner corners for that wide-eyed appearance. To complete the eyes line your upper lid with brown pencil liner, and don’t forget to curl your lashes. I used the No7 Lift and Curve Eyelash Curlers (£7.25) before adding three coats of Maybelline The Falsies Mascara (£7.99) for that extra flutter! Get Cheeky For a flush of colour it’s time for blush. Kissable Lips For the perfect pout, start off by exfoliating your lips with one of Lush’s Sugar Scrubs (£5.50). Not only will it buff away any dead skin cells, it also tastes rather yummy! Follow this with a nourishing lip balm to give your lips that extra loving care. Molton Brown’s Protecting Vitamin Lip Saver (£12) is enriched with beeswax and vitamin E to keep your lips perfectly smooth. Valentine’s Day doesn’t have to mean red lipstick. Revlon’s range of Lip Butters (£7.99) keep your lips hydrated and Cotton Candy is the perfect pretty pink shade to compliment this natural makeup. Your partner is sure to find it hard to keep their eyes off you with this beautiful look. Finish with a spritz of your favourite perfume, and have a fabulous Valentine’s Day. FASHION LOVES Valentines Day is upon us, which can only mean and another date in the diary to treat yourself, or your significant other. It’s also a great excuse to purchase something wonderful. To help give you some inspiration, I’ve teamed up with a couple of shops for this February’s fashion must haves. In March, Lisa von Hallwyl Millinery, will be working with Beards of Cheltenham to create some amazing displays for the races. Here, I will be showcasing some of my latest pieces, designed especially for Ladies Day during the Gold Cup weekend. With the Gold Cup weekend moving ever closer and the fashion fiesta that is ladies day (My favourite day of the year!), I’m getting more and more people asking me what colour to go for and what styles to wear

Anti-Valentines Style You may wonder why this page isn’t filled with red and pink lashes of love and all round soppiness. After all, it is February and Valentines is upon us. But I say no, let’s buck the trend and dress the Anti-Valentines way, keeping our stylish feet first and forgetting the red… Words by Grace Parry, fashion and lifestyle writer With that one special day to spend with a love interest, best friend or even family member this month, the thought can really bring us out of the January slump. However, there is always that nagging need to buy into the trend with over the top gifts and cliché outfits that just always seems to put a dark cloud over an otherwise celebratory occasion. Valentines means so much more than red, hearts and cuteness, although I’m not suggesting we should skip it altogether; this year, I’m proposing that we stick to Anti-Valentines style. Surely red isn’t everyone’s colour; so why not say goodbye to it for one year and go for something way less lovey. We all know life isn’t always about the LBD, even if it is a Valentines special. So, I say our outfit inspiration this month should be focused on bold colours, great cuts and quality; not forgetting the separates – they also need some love! French Connection has always been one of my favourites for separates. With such a quality cut you can rarely go wrong, so spotting the tailored trousers in a dramatic shade of yellow, I knew I had to share these with you.

With a colour so bold, it’s best to keep it simple on top. But that doesn’t mean we have to keep it plain and boring; especially when Hobbs has the cutest patterned jackets especially for the occasion. Although I definitely feel the need to avoid the cliché dress this year, there’s no reason why we shouldn’t get on board with a new kind of dress. Something gorgeous yet comfortable, that clearly makes a statement is on my mind this time. Whistles are great with prints and colour; the perfect combination I’d say. So this Mystic Mountain dress in a beautiful shade of bold dark green completely caught my eye. The cut is so complimentary and couldn’t be further away that a classic vision of valentines, wouldn’t you agree?

If you’re looking for something simple but stunning, Reiss has got the perfect look for you. I love this Neo lace dress and I’m sure you will too; and who said being bold with colour means wearing brights? But if you’re searching for some brights, then why not go for the Warehouse neon blurred print playsuit. “Singing is my voice” Caroline Mander, queen of the action! Following her hugely successful sell-out show in July, and the equally popular Christmas show under her belt, you’d think Caroline Mander would be putting her feet up, but no! The next series of shows for The Everyman Theatre’s 150-strong community choirs is well underway. Cheltenham’s leading lady, Caroline Mander, runs eight choirs across the town, which come together to perform as one on the main stage, but this is no ordinary choir and Caroline is no ordinary choir mistress. Gone are the days of the dull school choir, with the stuffy mistress staring into her manuscript and tapping her long baton on the music stand. Watching Caroline Mander perform (yes, directing her choirs is a performance!) is nothing but magical. And listening to the Everyvoice choir is nothing short of breathtaking, making the hairs on the back of your neck stand to attention, as if they too are listening to every beautiful note and often poignant sentiment..If you haven’t experienced the Mander Magic yet, please do; it will not disappoint. So how does she do it? Caroline, who trained in musical theatre, and performed in the West End before starting a family, began a small choir two years ago, which was inspired by the TV show Glee. There were just eight members, but as word got around, more came, until a second choir emerged. Now, with a waiting list to join all eight choirs, boasting 150 children, men and women aged between 4 and 88 (including a mothers with babes-in-arms choir), all performing to a 700-seater auditorium twice in the last year, how does Caroline feel about the phenomenon that is The Everyvoice Choir? “Singing is good for you; singing is my voice,” beams Caroline. “The choir brings people closer together. When you come together to rehearse for a show, it give gives you a huge boost. But bonding in rehearsals is one thing, but at the performance; the fear before going stage; singing your heart out and then the euphoria; there’s nothing like it. It’s the combination of those elements FEBRUARY 2014

that makes everyone feel closer and that’s a great thing. In truth, we’re bonded by song.” And Caroline clearly loves it. It’s hard work, but I can tell there is a passion and an unending enthusiasm to keep going and give her choirs the chance to experience a little of the thrill she so dearly loves about performing on stage. “I like to make people happy,” stresses Caroline. “I want to help people find something that makes them feel good about themselves, and let them try a little bit of show business too! Trying to give the choirs some of the experiences she was lucky enough to have had working for many years in the theatre is why Caroline tries many different things with her choirs. For starters there are the main stage shows where 150 voices come together in magnificent and spine-tingling harmonies; then the Christmas CD recorded by each choir individually and sold for charity; and next term’s smaller shows taking place in The Everyman’s Studio Theatre which, Caroline explains, teaches the choirs different skills because of the intimacy with the audience, “It’s a warts and all performance which is very rewarding”. Caroline is extremely proud of her choirs’ achievements: “Sometimes I’m on stage with the choirs and the music just blows me away; the sound is incredible, and at times gives you goose bumps! It just goes to show, with the energy and enthusiasm they all bring to the table, they can achieve anything.” Caroline’s inherent modesty prevents her from taking any of the credit, but it

must not go untold that it is Caroline who creates the enthusiasm she cites as so important, and the dedication of all the choirs is entirely down to Caroline’s infectious spirit and charisma. “Choosing the right songs is very important,” says Caroline. “The choirs need to sing from their heart and soul. I choose songs that make you feel; connect with your feelings. When I see the choirs sing I can see the emotion in their faces and it really adds to the performance. Sometimes in rehearsal we end up in tears!” Caroline describes her approach to the choir as relaxed yet professional. The pitch-perfect delivery from a group of people who look like life-long friends, but I learn have really only just met, is testimony to this. Caroline refers to them as her choir family; and she means it. So what next for Caroline Mander? As well as next term’s Studio shows, Caroline announces that the choirs will come together again in July to perform two nights at The Tuckwell open-air amphitheatre in the grounds of Dean Close School. There is even talk of a summer festival or two! There is no stopping Caroline’s enthusiasm and zest for life and love of music and fortunately for the 150 members of the Everyvoice choirs, she shares this generously, in abundance. Q

I am getting married this summer and my fiancĂŠ and I have been talking about a prenuptial agreement. We both have assets which we have been gifted by our respective families and it is important to both of us to make sure these stay intact, even if our marriage does not work out. I am really looking forward to our wedding and we just want to get the practical things over with as soon as possible. What should we do?

A

Although the discussion about whether to have a pre-nuptial agreement before getting married is no doubt uncomfortable, with an average of 50% of marriages ending in divorce, it is a practical move to protect yourself and everything you have achieved to this point. As both you and your fiancĂŠ appear to agree that a pre-nuptial agreement may be sensible, the next logical step is for both of you to retain your own lawyers. The lawyers will then advise you both separately as to what can be protected under a pre-nuptial agreement and areas of potential exposure which pre-nuptial agreements are not necessarily able to bind parties absolutely. At this point, you can then commence negotiations as to the terms of the prenuptial agreement. This can sometimes cause distress between an engaged couple because you will effectively be asked to think about what you want to happen at various points in the future in the event that your marriage does not last. This can be difficult for a couple who is looking toward a future together with great hope. That said, if you are looking to protect yourself as much as possible, it is important to put yourself in your own shoes in, say, 15 years, with 2 children in school and significant income and capital needs. The more potential eventualities that a pre-nupital agreement covers, the more effective it will be in the Court applying weight to the agreement in future.

As the law stands at present, a pre-nuptial agreement is not absolutely binding in England and Wales, but it is persuasive, and provided that each party received independent legal advice as to the terms and effect of the agreement, and there was no coercion or undue influence place upon either party to execute the agreement, it is more than likely that the Court would hold the parties to the terms of the pre-nuptial agreement. However, at present, the Courts do retain the power to go behind the terms of a pre-nuptial agreement and disapply some or all of it, in consideration of the various matters to which the Court is to have regard when dealing with the division of assets, income and pensions in a divorce, as set out in s.25 of the Matrimonial Causes Act 1973. This includes the needs of the parties and any children of the family, the health of the parties, and their contributions to the marriage, to name a few on what is a fairly comprehensive list set out in the statue. It is possible to take steps to protect each of your current capital assets from possible financial proceedings on divorce in future, and the best way to do that is to start discussing with your fiancĂŠ and your respective lawyers the issues that most concern you as you approach married life with your own capital assets. It is good that you are thinking about this now, as it is best practice to ensure that there are at least 21 days between the execution of a pre-nuptial agreement and your wedding, which is designed to reduce issues of alleged coercion, but also, on a more practical level, it will let you focus on enjoying your wedding. Private Medical Insurance: The healthy option Brunsdon CEO and Financial Adviser Brian Morman explains why healthcare insurance should be part of your financial fitness regime Have you been in hospital recently, either as a patient or visitor? If so, how did you rate your experience? Good, bad, indifferent? Whilst most of us still hold the NHS in high regard, the fact is that more and more people are seeking out private medical solutions as they become increasingly disillusioned with our national healthcare institution that was once the envy of the world. Why is this happening? I think it’s because negative personal experiences, or anecdotal evidence, outweigh the good news about advances in medical science and treatment. Unfortunately we’ve all heard accounts of poor levels of hygiene, particularly in relation to the ‘superbug’ MRSA, and the number of C-diff cases (the potentially very serious digestive bacterial infection) reported in hospitals has risen from about 1,000 a year in the early 1990s to something in the region of 1,000 a week now! It’s a fact that up to a quarter of health trusts don’t meet basic hygiene standards.* Then we have research which suggests that almost half of NHS staff themselves do not believe patients are central to what they do.* Add to this rather depressing mix Government spending cuts and the healthcare demands of an ageing population and the future of the NHS does not look too rosy, does it? Having said that, FEBRUARY 2014

despite its shortcomings, the NHS is still a free, universal service and we should count ourselves lucky we have it. But Private Medical Insurance (PMI) is all about handing choice back to the individual. It allows you to skip lengthy NHS waiting lists and receive fast track consultations and private treatment for short-term, curable medical problems. You can be treated in a NHS hospital or in private facilities. So what else do you get for your money? Firstly, as with all financial products, it depends entirely on your personal circumstances and requirements, but as a rule of thumb, a ‘standard’ PMI plan would cover essential treatments, including surgery, consultations, nursing and hospital care. However, this would not cater for drug addiction or incurable conditions, or accident and emergency treatment. And the cost? Again, that depends on your age, health, circumstances and needs. As an example, a 30 year old male, with health declaration, could pay as little as £39.69 a month (subject to a £100 excess). In fact, getting cover when you are young makes sense, as the older you get, the more costly it becomes – for obvious reasons. Taking out PMI can nowadays be as easy as arranging your car insurance, but as with every other financial product

on the market, it will pay dividends to seek qualified advice before deciding on the best option for you. At Brunsdon, we have specialist advisers that can help you. It was great to see what they have done to the building, especially for me, as for five years it was my office when we ran Business Link. The improvements are very impressive. 20 members of the Leaders Forums discussed their various approaches to Talent Management and shared some valuable insights. No sooner was the Leaders Forum over than we held our Exec Forum at Adey Professional Heating. Haimish Mead, Marketing Director at Adey shared with the group insights into Adey’s approach to their marketing strategy and the massive opportunities for the company going

forward. A very inspiring story. Haimish was followed by the energetic and talented BBC Sports presenter Jill Douglas who provided the group with tips and techniques on how improve our communication skills, making sure we get the very best out of every situation. It was a lively and thought provoking session. Eat Your Heart Out If Brownies be the Food of Love, Eat on…

Heart-shaped chocolate brownies INGREDIENTS 5 free-range eggs 300g caster sugar 100g milk chocolate, chopped 200g Green & Blacks 70 % dark chocolate, chopped 150g unsalted butter 150g plain flour, sifted Pinch ground cinnamon 1½ tsp baking powder Selection of strawberries Heart shaped mould For the chocolate sauce 250ml double cream 100g milk chocolate, chopped METHOD 1. Preheat the oven to 180°C/350°F/ Gas Mark 4. Grease and line a square

tray with parchment paper. 2. For the brownie, whisk the eggs and sugar in a large bowl until pale and thickened. 3. Now, melt the milk chocolate, dark chocolate and butter in a large heatproof bowl, set over a pan of simmering water (do not allow the bottom of the bowl to touch the water). Once melted set aside to cool for a few minutes. 4. Once the chocolate has cooled, stir this into the egg mixture and then fold the sifted flour, cinnamon and baking powder into the mixture. 5. Next, you will need to spoon the brownie mixture into the baking tray. Smooth the top with a palette knife. 6. Once in the over, bake in the oven for approximately 20-25 minutes. To

check it’s set, the top should be springy to the touch and beginning to crack. Now, it will be difficult to resist delving into the brownie as the smell will be divine, however, set it aside to cool in the tin. 7. For the chocolate sauce, heat the cream gently in a pan. Place the milk chocolate in a large bowl and pour the hot cream over, then whisk so that the two combine. 8. Once the brownie is cool, use your heart shape mould to cut into hearts. Now place in serving bowls, dip your strawberries in the melted chocolate and place next to the brownie. Drizzle with the chocolate sauce and top with a sprinkle of icing sugar. 9. Serve to you and your loved one and enjoy every last mouthful. CS

A Culinary Delight with Food Writer Shelle Duffin With the January diets and detoxes of early 2014 drawing to hasty close, February is the month to get excited for what is still yet to come. Being the shortest month of the year and with

winter nearly over, the bloom and greenery of spring is almost upon us. Not to forget the exciting event of Shrove Tuesday, where nearly every household in the nation will be flipping those pancakes with gusto! So, what better time than this to bust those January blues by throwing the first proper dinner party of the year. As

somewhat of a culinary crusader, I like to welcome in the New Year by getting adventurous in the kitchen, and cooking up the ultimate treat for my guests (or, as it is the month of St. Valentine, for that special someone on the 14th!) Now don’t be put off by the long title, this delicious dish is very easy to put together with show-stopping results.

INGREDIENTS 2 duck breasts, skin on For the puree 250g parsnips, peeled and diced 1 large apple, peeled, cored and chopped into chunks 250ml full fat milk 1 bay leaf 1tsp ground cinnamon For the mushrooms 200g fresh girolle mushrooms, thoroughly washed and drained (Cook’s note ~ any sort of wild mushroom is suitable for this dish, however it can be rather difficult sourcing these fresh. Here I urge you not to go out and pick your own but instead source from a local greengrocer or supermarket. Girolles work beautifully in this dish and can be sourced from Tesco.) 50ml white wine vinegar Olive oil Fresh thyme Black pepper 1tsp caster sugar For the sauce 100ml red wine 120ml beef stock 50g butter 1tsp redcurrant jelly

METHOD 1. Preheat the oven to 180°C 2. Season the duck and score the skin. Heat a heavy-based frying pan and place the duck breast in skin side down. Cook’s note ~ you don’t need butter or oil here as there’s plenty of fat in the duck’s skin. Gently fry for 56 minutes until the skin is golden and crispy, and place in the oven, skin side up for 8-10minutes by which point the duck should be lovely and pink inside. 3. Remove from the oven, cover and allow to rest for 10 minutes, making sure you store all the juices. Meanwhile, to make the puree place the parsnips, apple and milk into a saucepan with the cinnamon and bay leaf and gently simmer for 10-12 minutes until tender. Drain the milk into a bowl and place to one side and discard the bay leaf. Puree the parsnip and apple using a blender and add a little of the reserved milk to make a thick puree. Season and place on a warmer or in the oven to keep warm whilst you finish assembling the rest of the dish. 4. For the mushrooms, heat a little olive oil in a frying pan, add the mushrooms and gently fry for 2 minutes until they are tender. Add the white wine vinegar, thyme, and

sugar, and season. Cook for a further minute and place to one side to marinate but keep warm. 5. To make the sauce, heat the red wine in a saucepan and simmer until it reduces by half. Add the beef stock, the juices from the duck and bring to the boil. Boil until the liquid has reduced by half. Add the butter and redcurrant jelly and simmer, allowing the sauce to thicken. Season to taste. 6. To assemble the dish, spoon two tablespoons of the puree onto the middle of each plate, and smear into an oval shape. Carve each duck breast into slices and place on top of the puree. Scatter the mushrooms elegantly around the plate and drizzle with the sauce. CS

BOURTON-ON-THE-WATER Now the ‘driest’ month of the year has drawn to a gratifying close and those challenging diets have become a little more relaxed, it’s time to look to the next big date on the 2014 calendar – Valentine’s Day. As a celebration of romantic love through cards declaring poetic verses, boxes of indulgent chocolates or a bloom of vibrant red roses, each year the consumer goods industry never ceases to disappoint. However, it’s said that the way to a person’s heart is through their stomach; therefore a good meal at the end of a busy day is key in the world of romance. Nevertheless, the issue many of us have is timing. Completing a hectic day in the office and still being able to plan and execute the perfect meal is easier said than done. This can easily become a stressful ordeal which for many result in a slap up takeaway and a good bottle of plonk – not exactly the height of true love! So, in keeping with the resolutions we set ourselves only a month ago, why not minimise the hassle, maximise the ‘amour’ and step up the game by taking your special someone out for a romantic meal. Situated in the heart of the dreamy Cotswold village of Bourton-on-the-Water, opposite the landmark river, which in the evening glows in the glistening moonlight, the setting could not be more perfect for a little romantic escapism. Following a warm welcome by staff on our arrival, we were shown through to the sitting room where we enjoyed a glass of champagne in front of a big roaring fire. As we tucked into canapés of smoked eel foam and ham hock terrine with pomme soufflé, the atmosphere was cosy and intimate remedying the cold winter’s evening outside the Cotswold stone walls that FEBRUARY 2014

surrounded us. Feeling comfortable and relaxed, we chose our dishes from the menu, which our waiter then supplied a selection of wines to pair with our choices and provided us with samples of each to help us make a decision according to our palate. The dining room at The Dial House is idyllic for a Valentine’s Day meal, an intimate mood is lit by flickering candlelight with each of the tables carefully positioned a good distance away from the next so that you aren’t sharing the passion of the neighbouring table; a courtesy so many restaurants lack. The menu at The Dial House models inventive combinations of French cuisine assembled by the 2 rosette team of chefs lead by Paul Nicholson. Using classic combinations and modern techniques, they strive to produce exciting dishes, creating the ultimate dining experience for their guests. We began our feast with an amuse bouche of cauliflower velouté with cep oil; a light, creamy sensation which injected a delightful tone to the beginning of our meal. Each course offers five options to choose from with a range of meat, fish and vegetarian dishes each providing innovative excitement in their own right. Starters included lightly smoked cured quail breast, confit quail leg with foie gras au torchon and caramelised hazelnut; and poached rabbit loin and confit leg terrine, roasted rabbit

rack, rabbit liver, foie gras parfait and a caramelised onion film served with a selection of autumn vegetables. Main courses are consistent in their creativity with poached and roast fillet of veal, Madeira glazed snails, garlic purée and glazed shallots; and fillet of wild sea bass, Alsace bacon foam and cauliflower purée. For dessert, I urge you to try the passion fruit soufflé served with 65% Valrhona Kalingo chocolate sorbet; if any dish is going to light a spark, it will be this one – only made less romantic by the fact that it’s not one for sharing! Nevertheless, if you still have room in your bellies after this glorious feast, there is a generous cheeseboard which cannot be gone at alone! The dishes at The Dial House are exquisite, modelling inventive combinations which are presented with creativity to bring you remarkable plates of food. New Year, New Discoveries Coq au Vin is an old favourite but it can be a very different dish to the one we know and love so well. It’s a traditional French casserole and although the origin of the recipe is so old it has been lost in time there is a story that credits it to the Napoleonic era. The legend tells us that Napoleon unexpectedly stopped at an inn where the innkeeper had little food apart from an old cockerel and some wine. The innkeeper despatched the cockerel and cooked the bird in the wine with onions, vegetables and herbs. It’s amazing how many recipes are attributed to Napoleon – perhaps because of the scarcity of food during the Napoleonic Wars – where recipes for dishes were hastily made up out of whatever was available. Chicken Marengo, Lobster Thermidor and Napoleon Pastries are all credited to chefs cooking for Napoleon. Apparently Napoleon would never eat before a battle and was ravenous afterwards – he is credited with the saying “an army marches on its stomach”.

Coq au Vin Blanc is made in Burgundy with Chardonnay, in Alsace, a white Riesling, in the France – Comté a white Vin Jeaune (made from late harvest Savagnin grapes) and in Bordeaux a dry white from Graves or the Entre Deux Mers. French recipes with white wine usually specify morels instead of field mushrooms but you can use oyster mushrooms which are more readily available in shops in the UK. FEBRUARY 2014

Coq au Vin Blanc

Ingredients 1 large chicken (1.5 -2kg), jointed into pieces 1 tbsp olive oil 2 tbsp butter Salt and ground white pepper 250g white pearl onions 1 onion, finely chopped 3 sticks of celery, finely chopped 4 cloves garlic, sliced 225g oyster mushrooms, chopped Large glass of dry white wine 360ml chicken stock 1 tbsp lemon juice 2 tbsp butter 1 tbsp fresh tarragon, chopped

Method • Heat the oil in a casserole dish and add the chicken, skin side down. Cook until lightly browned, season with salt and pepper and turn to brown other side. • Remove to one side when done. Add the pearl onions to the casserole dish and cook until lightly browned. Remove to one side. Reduce the heat to low and add the chopped onion, celery and garlic, cook until softened, and stir in the mushrooms. When they wilt, add the wine, bring to a simmer, add the lemon juice and the chicken stock. Return chicken to the casserole dish with any accumulated juices, baste, cover and cook for 1 hour until tender. Scatter the tarragon on top before serving. • Bordeaux whites are exceptionally good with this dish and depending on your preference there are a wide variety to choose from. Made from blends of Sauvignon Blanc, Semillon and Muscadelle grapes Bordeaux white wines can be dry, semi-sweet (Moelleux)

or sweet (Sauternes and Barsac). My choice would be Chateau Ballan Larquette white Bordeaux; a 50/50 blend of Sauvignon Blanc and Semillion. With its crisp floral flavours it will enhance the delicacy of this easy to prepare family dish. A Cross Country Champion We find out more about Cross Country Mountain Bike Champion, Ruth Owen-Evans, to find out more about biking and why it’s important to encourage women into the sport So, Cross Country Mountain Biking... what’s that all about then? This discipline of Cycling has received more interest recently, since the highly successful Cross Country Mountain bike events at Hadleigh Farm, Essex for the London 2012 Olympics. The course met with some scepticism due to Essex being one of the flatter counties in England and a large amount of confusion as to why a course hadn’t been chosen in an area where mountain biking facilities were already established, such as Wales, or even the South Downs. However, thanks to the hard work of the course builders at Hadleigh Farm and a great partnership between the land owners and organisers they managed to deliver two fantastic show case events at the London Olympics which really showed Cross Country Mountain Biking at its best. The course was highly challenging both physically and technically and demanding for even the world’s best riders. The course was also designed to be spectator friendly and laid out in a rough clover leaf shape allowing spectators to walk between different sections of the course quickly and easily and watch competitors as they raced round. The atmosphere was electric and since then it’s no wonder so many youngsters want to get involved. Gloucester based Ruth Owen-Evans has been competing in Cross Country Mountain biking for a number of years,

but has only raced at Elite level for two seasons. Ruth is the 2013 Welsh Female Cross Country Mountain Bike Champion, ranked 14th in Britain and 200th in the world. She is also awaiting results for her nomination and shortlisting as Coventry, Solihull & Warwickshire Sportswoman of the year (Ruth grew up in Warwick and moved to Gloucester 6 years ago and has recently started a job at Hartpury College). Ruth is currently building her profile as an athlete ambassador, hoping to encourage more women and youngsters to get into sport, and specifically Cycling, which can often be seen as male dominated. ‘There’s so much great work going on to encourage women in to sport, ranging from exercise classes to sport specific groups and sessions such as Breeze Cycle rides. Sport can be great tool to help build community spirit

through friendship and general wellbeing; I’ve made so many friends through my sport and met many inspirational people. As an athlete and through a career in sport development I’m trying to give something back to sport and this can be really rewarding.’ Ruth’s new role at Hartpury College as Performance Lifestyle Manager will support elite athletes balancing busy training and studying schedules at the college, helping them to make difficult decisions as they develop in their academic and sporting careers. Ruth is aiming for Commonwealth Games selection for Wales in 2014 and you can follow her progress at her national and World Cup events via Twitter @RacerRuth. It’s time to own up; we’re now at the start of February and I wonder how many of your New Year’s resolutions have gone out of the window... Ok, I will admit, although my own haven’t quite gone out of the window that is because I haven’t quite started them yet. Nevertheless, I am determined to really embrace them this year. However, I think I will keep them to myself for the meantime. There are ones that never seem to be viable but are always at the forefront of people’s minds; quit smoking, join a gym, use the smartphone less and so on, but in reality some just seem impossible to some of us. For me, it has to be my phone. In fact, I’ve have grown to really dislike my phone in the past couple of years but seem to be unable to live without it. Everything is on there, it’s my entire life. I can’t get to places without Google Maps; I can’t win arguments without Wikipedia, or get through a single film without IMDB. I keep all of my notes on my phone, all of my documents in dropbox. Would I be able to run my business without my mobile phone? The answer is sadly, ‘No’... So, if my mobile phone was to suddenly be gone, I would be devestated. What would I look at when sat waiting to meet friends? How about when I wake up first thing in the morning? Oh, and what will I use to check all the football scores and scorers that I like to keep up to date with on a Saturday afternoon? The thing is, I find myself checking my phone even when it hasn’t made a noise and it annoys me terribly. It’s that constant need to check and possibly, a fear of missing out. For someone like me who used to be really fit, I vowed to always stay in shape and grow old gracefully yet remain in good shape. However, the reality is that

I now struggle for time and motivation to take myself off to the gym. I want to set goals and achieve them, a prime example being signing up to the Cheltenham half marathon and get back to the shape I used to be in. I have recently been put forward to do a charity cycle ride from London to Amsterdam in May, so that should be interesting and a challenge to say the least. I now need to get in a saddle soon and get used to a bit of saddle rash! Whether you are keeping to your resolutions or haven’t done so yet, I wish you all the very best of luck. Just remember, if you have the desire to make changes then do so. Don’t wait until the 1st of January to do them. So, what are you waiting for? Go and prove me wrong. CS @duffo16

It’s the month of love and time to love yourself Laura Milne encourages us to show a little love to ourselves... Since February is the month of love, I think it’s time we talked about you. Now, do you seem to put everyone else’s needs first? Do your children, husband or work rank higher on the list than your health, happiness and well being? I hold my hand up; I do this too, we all do, especially Mums. We know how important it is to love someone and you know how amazing it is to know someone loves you whether it is your children, mum, friend, husband… the feeling of love is so very special and something we all need. It gives us the power to erase doubt, negativity, hurtful feelings and alleviates the way we feel about ourselves. Loving yourself though is another story and it is hard. Many of us do not find it sociably acceptable to show that you are happy with yourself; and that we must always have something we don’t like or something that is wrong. Why is this? The world has become quite negative in many ways, so lets change that for you. Not loving yourself, being negative about how you look (your hair, lumpy belly, big bum, stretch marks) or who you are creates a negative and stressful environment in your body and brain. This causes hormone imbalances and can effect the production of dopamine, noadrenalin and serotonin and these are your happy hormones. Having this can lead onto depression and other mental health problems. In turn it can lead into a weakened immune system, unhealthy digestion, high blood pressure, cancer; the list goes on. People tend to turn to emotional eating, binging or starvation and you will then find it very hard to lose weight and remain healthy. This is why you need to be able to accept yourself, it doesn’t mean you do not want to change it but means you are FEBRUARY 2014

willing to accept where you are now. Once you have managed this, you can then start to focus on where you want to be, with more self-belief. You are so, so, important; not just to yourself but to your children, husband, friends and family. They want you to be happy and healthy. If you are ill and unhappy that is not good for you or your loved ones. You owe it to yourself and to the people you love to look after YOU. Start thinking more about how you can become happy. Put yourself first, just this once, and they will love you more for it. I was always running around after everyone; trying to do this, organise that, wanting to be thin, wanting to exercise and eat healthily, which became so much pressure. I had an eating disorder and never liked who I was. I had to change; I was becoming ill and consequntley became infertile. I decided it was time to put my health and happiness first; I wanted a family more than anything so I started to say ‘no’ to things and give myself more ME time. As I result I am healthier than ever, look good, thinner and never put on weight and I am now expecting our first child in April – I couldn’t be happier! It took time to get there and it was tough but it was worth the effort. HERE IS A LITTLE TECHNIQUE YOU CAN DO EVERY DAY TO HELP YOU LEARN TO LOVE YOURSELF 1) Spend 10 mins EVERY day looking in the mirror. Look at yourself from every angle. 2) Find 3 things you like about your body and 3 personality traits that you like. The first time you will probably find it very hard, but stick with it and always and only look for the good stuff.

LOVELY CHOCOLATE HEART RECIPE Ingredients 100g coconut oil 25g cacao powder 2 dessert spoons honey ¼ cup of chopped dates 100g walnuts/pecans/flaked almonds Instructions 1. Whizz the nuts in a blender until small pieces not powder 2. Melt the oil in a glass bowl over a simmering pan of water. 3. Remove from the heat, add cacao powder and honey and stir. 4. Add the nuts & fruit, stir and divide into heart shape muffin cases. 5. Chill until solid. Enjoy!

ask the expert WHAT IS PILATES? Often known as the thinking person’s exercise, Pilates is a form of body conditioning with exercises that systematically work the major muscle groups of the body. Unlike other forms of body conditioning where you isolate one muscle using robotic type movements, Pilates exercises employ as many as five muscles together which create a more flowing movement to give you the body you want – balanced, strong and lithe. Great attention is paid to correct breathing, alignment, controlled movements and technique. The very essence of the Pilates’ technique, however, is ‘core stability’. This simply means making your centre, or core, solid and strong. It is the key to the effective training of not only the abdominal muscles but also all the other muscles in the body. To achieve core stability, you need to have control of three essential areas – your breathing, your pelvic floor muscles and your deep abdominal muscles, which play a vital role in correct posture. Correct breathing is one of the most important aspects of Pilates. Why? First and foremost, because your muscles and tissues need oxygen to work efficiently. Directing more oxygen to the brain improves concentration and coordination. Focusing on your breath also helps you to become more centred, giving a whole new mind-body dimension to your exercises. Correct breathing will not only improve your posture; it will also help keep your skin and eyes clear and give you an all-round healthy glow.

Pilates for optimum health and fitness

HOW TO BREATHE THE PILATES WAY Although we breathe automatically, we often don’t breathe efficiently. Most of us use only a tiny part of our respiratory capacity and we often hold our breath for much longer than we should, for example when we are concentrating or exercising. In Pilates, we practise ‘thoracic’ breathing – taking air deep into the rib cage so that the ribs expand out to the sides. We breathe into the thorax and not the abdomen because every Pilates exercise involves contracting the abdominal muscles. Don’t be alarmed if you feel light-headed or dizzy when FEBRUARY 2014

Good health and wellbeing are not to be regarded as something of a luxury or some kind of self indulgence – both are an essential part of a successful, forward thinking and fulfilling lifestyle. practising thoracic breathing, this just means that you are breathing efficiently and that your brain is receiving more oxygen than usual... this is all good! Try the following exercise for correct Pilates breathing. You can practise it at any time of the day but you might find it particularly useful in the morning when you wake up (to give you a boost of energy and in the evening before you go to bed (to calm you): • Lie down on your back with your knees bent and slightly apart, and the soles of your feet flat on the floor. Keep your head aligned with your spine and do not press the spine into the floor. Place the palms of your hands on your rib cage, with your fingertips just touching each other; • Breathe in deeply through your nose. Notice how your diaphragm muscle drops and your rib cage opens and expands, allowing you to fill your lungs with air. Note, too, that your fingertips will no longer meet. Feel the rise and expansion of your rib cage beneath your hands; • Exhale through your mouth until you have expelled all the air and your rib cage has contracted so that your fingertips are touching once again. Repeat for eight inhalations and eight exhalations; • Now stand upright with your feet hip-distance apart and repeat the breathing exercise another eight times.

Pilates is for everyone, male and female, young or old, at any level of fitness – from the total beginner to the top athlete or sportsperson. If you begin when you are young, you will be giving yourself the healthiest start in life. If you are older and less fit than you would like,

Put a smile on your face with EXERCISE.... I know that the thought of exercising doesn’t always fill you with the joys of spring when you’re heading to the gym, or to an exercise class, but I bet you feel happy when you come out? So, really the hardest bit about exercising is getting round to doing it in the first place? Well here are some fab reasons to help give you the motivation you need to get yourself up and out of the front door:

Not bad reasons, hey? So take your pick from the list above; what catches your attention and gives you the spark you need to get up and do some exercise? There are so many positive reasons to exercise; you just need to find your mojo and give it a go, just thinking about it won’t work, you need to actually do it. If you haven’t exercised in a while then start at the beginning, don’t crash and burn, just go for a walk, get some fresh air and look around you at the beautiful Cotswold countryside we are so fortunate to live in. If you need more of a challenge, pick a gym or exercise class

that will work for you and commit to going. Put it in your diary and treat it as though it is a work appointment. Don’t find an excuse to cancel, make sure you go otherwise you are just throwing away your money. If you really don’t feel like it, I tell my clients to get their exercise kit and trainers, head to the changing rooms at the gym, by hook or by crook just get yourself to the changing rooms and by this point you will feel more ready to give it a go, try it... You honestly will feel so much better after and you will walk away feeling more positive and who knows you may even smile! Why I love Routine, and why Nigella (or is that the Dalai Lama) holds the secret to happiness… When I was young, I didn’t need to be told the day of the week – I could work it out from the food I ate at my grandma’s house: chops on Monday, celery & cheese sandwiches on Tuesday, cream cake on Friday (no 5:2 diet in 1977). In the same way that every Monday the kitchen would be filled with suds (washing day) and that on Thursdays the house would smell of polish and windowlene – (cleaning day); I knew what to expect and when to expect it. The circle of life was preordained, and she had to manage watching “Crossroads” and “Name that Tune” in the gaps inbetween. In short, she had a routine – not fashionable now, but they should be. Although a routine can sound boring, and dull, they actually promote flexibility and help make time for the fun stuff. They allow you to go on autopilot, to help ensure that what's important actually gets done (especially on the daily grind of chores that keep a house running). Part of the problem with our modern day culture, is that because we have so many labour saving devices, jobs that were once deemed proper work and time consuming, are now dismissed as

The recipe to happiness unimportant and immediate. We expect everything to take no time. The cruel domestic irony is that even though switching on the washing machine takes seconds, the laundry still has to be sorted, dried, ironed, folded and put away. I’m not saying I want housework to be elevated (god forbid), but my point is that in my grandmothers’ day, her routine, her outline gave her a sense of structure and took away the agony of decision making. The Dalai Lama knows the benefits for sure; someone once asked him the secret of happiness – and without hesitation he replied: “Routines.” And he’s not the only fan. Think of any talented sportsman or musician; No one criticizes Lang Lang for practicing scales for 8 hours, or ridicules Lionel Messi for his repetitive training drills. These people are talented, yes, but they also stick to their program. Without the routine, you have to make decisions, and we all know how dangerous that can be.

What’s with this need to reinvent our recipes all the time? This insistence that new is always better; yet you never hear someone saying “we’re having Sunday roast again”, because there’s a simplicity to shopping and cooking this meal, it’s repetition is in itself soothing and comforting. When I went to see Nigella (yes, she of the “6” time coke snorting episode) at the Literature Festival, and asked her which cookery books Italians favoured, she said they didn’t; most Italians tend to stick to the same 10 or so dishes their mothers taught them, without so much as a stick of lemongrass to spice up their repertoire. A bit like us Brits on a Sunday. So do yourself a favour. Work out your week – all the boring, mundane chores that need doing and decide when you’re doing them. Plan your meals and write out a shopping list and buy the ingredients. And then just do it. You will see how much more time you’ve got in your life – cos you’re not sweating the small stuff. CS

You had me at Woof! Where do you stand on domestic pets? As a region, I’m told Gloucestershire is pet friendly. We are a county of animal lovers: Dogs and cats, caged small mammals, horses, goldfish and even the odd pet sheep or goat.... not uncommon in our rural idyll. I have more than my fair share – 2 dogs, 3 cats and a few horses. They’re mine, not ours – Husband refers to himself as ‘not a keeper of animals’. I hate to remind him we live in a houseful of them. In the past we’ve had pet sheep – raised from lambs on a bottle - and also a tiny, tiny Russian Hamster that seemed to live for about ten years, which I am told would be a world record. Sophia weighed about one gram and once fell, traumatically into the washing up bowl. I was there to save her, but was shocked at how minute she was when her fur was wet and clinging to her miniscule frame. And hamsters can swim. Toby the terrier (pictured) can speak five languages, he reckons. He speaks English with a rather posh drawl and loves absolutely everyone, including the vet, the postman and most probably burglars. Jessie (also pictured) is a black Labrador whose one goal in life is to be bymyside and neverleaveme. She loves to eat and says she is also a good cook, although I doubt this is true. One of the cats lives outside permanently – Belle the silver tabby. She is not so tame and only comes inside in the summer when the windows are open long enough for her to ponder her entry or non entry for a couple of hours. She was part of a duo, but heartbreakingly her sister Jingle was killed on the road a few years ago. Belle rarely speaks, but does curse and swear repeatedly at worming time. The other two cats are black and white lads – Arthur and Merlin. They sleep on the Aga for about 16 hours a day and catch and kill rodents the rest of the time. They only know two words: ‘IN’ and ‘OUT’. I’m sure that if we got a cat-flap, they’d soon forget even that small vocabulary. As for the horses, there is Rooster – a very small, fat white pony who is most

He escapes next door constantly, no matter what we do to the fencing and wants to be in when he’s out and out when he’s in. He thinks he should be a Police Horse. Dolly is the light of our lives and the most beauty pony you’ll ever see. She’s the colour of caramel and fresh cream and wears her heart well and truly on her fetlock. She loves everyone and knows for sure that everyone loves her. We are also blessed with Woody who will be 20 years old next month. He is a retired thoroughbred racehorse who was bred by Lord Rothschild and has had some remarkably showbiz moments in his life. He likes eating hay and rolling in the mud. Simba is the baby of the herd – a blond bombshell who gets all the ‘ooos and ahhhs’ and will eventually turn into a small sports horse for the kids, for when they’re taller. He is currently confused

about his place in the world and needs constant petting for his mental security. My pride and joy, my Ferrari in the stable block is Pro-Test. Supremely well bred – good enough for the Olympics - I have owned him since he was born.We like gliding around the lanes, knowing we could go faster but choosing not to. Pro-Test is ALWAYS smiling and thinks life is very amusing all of the time. We will never go to the Olympics, but that’s just fine with him, hahaha ha DE HAR HAR!. Anyone with even one pet will appreciate how much work, expense, joy and love this menagerie brings to my family. Here’s to you and yours.
