Welcome

It may have been yet another disappointing summer in terms of the weather but no doubt many of you like me have been glued to two weeks of brilliant Great Britain triumph in Rio at the Olympics. We are extremely proud of all our Olympians but none more so than our local athletes, all of who raised the bar with further medals. As well as the Cotswold rowers our Hartpury based Dressage squad led by Carl Hester won a team silver to add to their gold from London and the heroic Charlotte Dujardin gloriously triumphed with her second individual gold. Congratulations to you all! This September is the like the beginning of a New Year to many including myself. Children start a new school or class, many peoples offspring will be heading to university and for those who are back to work and the daily grind, it can bring a mixed feeling of emotions, including in some cases relief to get our lives back to normality! Our Food Writer Rachel Cappuccini has put together some simple but healthy and tasty recipes, which can be created in minutes to feed the family quickly. For those with no childcare commitments, September is an ideal time to take a holiday in the last of the summer sun. This month Mrs & Mr Jones showcase the fabulous delights to see in Prague while Lucy Garbutt recommends visiting paradise on some beach islands in Indonesia. There will have been many marriage proposals made over the summer and in this edition of Cotswold Style, we are featuring ideas for the perfect wedding. Style Interview REAL LIFE

PC LEAH DAVIS Nigel Aplin met with ‘Bobby on the Beat’, PC221 Leah Davis, Tetbury Beat Manager and Family Liaison Officer. PHOTOGRAPHY BY ANGUS BETHUNE Police Stations are odd buildings, very symmetrical, architecture that appears to hail from the sixties; landmarks of order that are constant in our towns and cities. They are not buildings of any beauty and are not designed with any regard for their surroundings or environment. They would certainly be more at home in any suburb of any Russian town, solid brick in sterile concrete. Paradoxically they certainly invoke emotion, sometimes trepidation, unease and even fear, a silent sentinel of law and justice. I have no trouble finding Cirencester Police Station, it is like any other. I glance around me, moving shiftily as I pass through the door. Somebody precedes me and I speculate on his purpose as he whispers to the uniform behind the small ticket office like window. It is my turn as I smile confidently, too confidently, at the duty officer. A door is opened and I am let into that which is beyond, the inner workings of policing at work. Suddenly I feel a flip of relief, a slither of sunshine, chatter that is playful and fun and a greeting that bubbles boisterously. It is PC Leah Davis. Leah, very insistent that we are on Christian name terms, is a veritable ball of frenetic energy but slightly encumbered by the tools of her trade that are affixed around her person. She is not tall which only adds to the impression of hustle and bustle. She’s the sort of person who is always busy about her business, a honeybee at the height of summer who flits from one flower to the other. She shows me into a room where the residing ‘Serge’ offers me coffee and a quick look up and down. I notice that he has a picture near his desk, children and dogs. On another day I might see him

chairing a tragic press conference, he has that bearing, but not today. The rapport between him and Leah is genuine and warm, they get on. As Leah and I settle down at a table he hovers helpfully, ready to cite any statistics that may assist Leah’s answers to searching questions. Leah is your honest to goodness ‘bobby on the beat’; to be technical Tetbury Area Beat Manager and Family Liaison Officer. She was born and bred in Cirencester, one of a pair of twin girls. She looks, and is happy to admit, to always having been a ‘tomboy’ playing sport at every opportunity, achieving a BA in Sports Studies at West Sussex University. She would liked to have joined any one of the forces but a genetic disease, giving her defective hearing, ‘I’m deaf in one ear,’ dictated otherwise. Following on from a holiday job she went into retail sports management at Terry Warner sports where she stayed for sixteen years, “I did it because I was

interested in community retail together with all things sport related. It was excellent training giving me people skills and invaluable experience dealing with the public at large, lots of courses shaping my aptitude for managing of difficult situations, being able to deal with customers who were at times far from easy. Without doubt it prepared me for what I was to do next. I had my eye on joining the police having been very impressed by one of their road shows. With my impaired hearing it was not easy but I got in on my second attempt.” Making the transition was probably more difficult for the people she served, one minute in a shop, the next in a uniform on duty. For Leah perception was reality, “There’s no mask, you just adjust accordingly to the people and the situation. You have guidelines to follow and procedures just as in retail; there are options but you have to adapt according to the circumstances, it is just common sense, speaking to people and >>> COTSWOLD STYLE SEPTEMBER 2016 13

Style Interview understanding their point of view.” According to Leah too many people use the stick rather than the carrot in the positioning of the police, especially with children. “The ‘don’t do that or the police will get you’ is not helpful when dealing with children, I’m all for breaking down barriers so we’re seen as approachable. I want people to come and speak to me and I encourage people to come forward and ask for help because you never know when they are going to need it.” One of the most important and successful initiatives in recent years has been the introduction of restorative justice putting the victim first ‘victim focussed’, is very much how the police view it. In simple terms victim and perpetrator are introduced in a meditative process, which seeks to give reparation for the harm caused, “It allows the victim to see and talk to the person who committed the crime first hand, to find out why they did it. It’s all about closure; unless they've had a meeting with the offender they feel they can't move on. Every person I've met says it's it helps them so much just to see the person who's done it, talk it through in a controlled environment, giving them the opportunity to make amends and rectify the wrong. Why did you break my window and why did you snatch my bag? It doesn’t mean, in criminal instances, they’re let off, justice has to take its course; it confronts the wrongdoer with their offence directly and the harm visited on the victim. It humanises the process and is a massive step forward in contemporary policing.” As the application of policing has changed in Leah’s time as a police officer, so has the nature of crime itself, crime, which we are all too familiar with on a daily basis. Leah is trained to recognise and deal with instances that fortunately are not a daily occurrence in the Cotswolds, “Adults and children at risk, subject to domestic violence and grooming, female genitalia mutilation, instances not necessarily big in Cirencester but certainly evident in Gloucestershire. I certainly have to recognise any of these potential situations, safeguarding and signposting, making relevant agencies aware and then acting as a liaison officer, the bridge.” Protecting the vulnerable also extends to internet and cyber crime, “We all know how rife that is and how 14 SEPTEMBER 2016 COTSWOLD STYLE

sophisticated the nature of the crimes are becoming. As in all situations I’m often the first port of call and the elderly are extremely vulnerable. It is not easy explaining the intricacies and technicalities involved, we’re all at risk, me as much as everybody else; we’re all potential victims.” There are many definitions as to what qualifies the term vulnerable and again Leah is at the forefront when it comes to the issue of mental health, “We deal with this as we would anything else, firstly considering vulnerability, trying to establish everything you can. We have very good intelligent systems in Gloucestershire, that’s why policing in in the community is so valuable. Sometimes you don't appreciate people have a mental health problem but we have recourse to check. Tragically at least half are children and it is my

responsibility to liaise with the relevant agencies and provide as much help as I can.” Given the nature of their work, police officers put themselves at risk every day, none more so than Leah who is the first to arrive at any potentially dangerous situation, ranging from anything as in a man wielding a knife to a traffic accident that has yet to be contained. In addition they have a duty to protect themselves. When I was with Leah ‘The Serge’, Garret Gloyn, hinted at a recent confidential memo that stressed how alert officers had to be on their way to and from work ensuring that their uniform was kept hidden at all times. Leah and I meet on a day that the latest terrorist incident has occurred in a French provincial church and I ask what would happen if this were to threaten in The Cotswolds. I learn that the French

“...I couldn’t do this job unless I was completely wedded to it and I passionately care about the community I serve.” policing system is structured in a different way to the UK, “Being a Beat Manager I have a very good bush telegraph and an informal intelligence network. The great advantage of community policing is that I’m more likely to know what is going on or if there is something not quite right. The French do not have that system and that is why it is essential that we safeguard what we have. People know me and they trust me and I am confident they will come to me if something makes them suspicious. Of course the proper intelligence agencies operate far above me but I am on the ground and that is crucial.” Leah is clearly a woman seldom intimidated but does recall attending a traffic tractor crash fatality at the notorious accident black spot on the near The Air Balloon pub that threatened her life. “I had never seen fog quite like it with visibility practically down to near zero. I was trying to secure the accident at ‘Granny’s Pumps’ but the traffic was hurtling towards me at ridiculous speeds. Suddenly a car came out of the fog and missed me by inches when he came to an emergency stop. That was really frightening.” As a Family Liaison Officer it is Leah’s responsibility to break the worst possible news of fatalities to families and it never gets any easier, “The worst

part is attending to somebody who is still alive at the roadside but is slipping away. I’m with them at the end. It’s then my role to inform their loved ones and I never know how they are going to react, some scream and cry, others shout at me to get out of their houses and some laugh out of hysterical shock. I join them on their journey of grief and that bond means that I am still in touch with some long after the event.” Whilst ‘proceeding in a northerly direction’ is the accepted cliché of police speak and the dryness and uniformity of being in the force, it is not quite so - underneath the surface is invariably rather different. True Leah’s colleague, Sergeant Gloyn, is the epitome of what every good Sergeant should be but there’s a certain impishness about him that rather appeals, none more so than his use of social media, “There’s no harm in putting a little colour into our communication; ‘should have gone to Specsavers’ surely says it all when a known disqualified driver parks next to a marked police car.” @CotswoldPolice is worth a look but there is a serious side, “When someone invites a reward of £1,000 for any picture showing an assault of a police officer, it’s time to act but there’s nothing wrong with a post of a beautiful sunrise when I come off nights.”

Ultimately Leah is the ‘bobby on the beat’, the epitome of the British institution that nobody wants to lose. “I’m really proud of that and we shouldn’t lose it. I’m here to serve my community and I believe the public get good service from us. I couldn’t do this job unless I was completely wedded to it and I passionately care about the community I serve.” The building isn’t that grey after all and there is a soul and heart that beats beneath it. Like any job in any work place, success depends on the people that work within it and their willingness and ability to do a good job because they are committed to doing it. Leah was keen that I should go and meet the ‘big boss’ and so was I. Like everybody else in the station, it seemed, Inspector Karen Ellis was into dogs, real ale and a spot of sheep shearing but her real words were for Leah, “She is somebody whose passion for serving her community is paramount and indicative of the very best in policing. She serves the community and it’s the decisions that officers like Leah make on a day-to-day basis that allow us to live in safety. It is about all of us, protecting a way of life and community which we are part of too and whose interests we strive to safeguard. Serving those that are in it is what good policing is all about.” COTSWOLD STYLE SEPTEMBER 2016 15

Norwegian Wood Clive Burling has been exploring the understated elegance of Scandi Style What do you think about when Norway is mentioned? For most people it’s probably Fjords, mountains or glaciers. In my case it’s fish in a barrel, but that’s another story! Add fishing, hiking and skiing and that’s probably about it, although for some reason I recall those immortal John Lennon lines to end one of the finest songs on the Beatles album; Rubber Soul... ‘so I lit a fire, isn’t it good, Norwegian Wood’. I visited Norway for the first time last month. This was the perfect opportunity to discover for myself what else this kingdom has to offer, especially anything related to interiors. I don’t know how good Norwegian wood actually is but I soon discovered that there is an awful lot of it there! Everywhere. The beautifully designed arrivals hall at Stavanger airport with wooden panels and shelves in the ‘duty free’ and the wooden houses, painted in many different pastel shades seen on my taxi ride to the centre left a lasting first impression. It’s quite normal for places with different cultures and customs to look unfamiliar but in Norway there was something else. Something very different. During my first exploratory walk towards the harbour I noticed how clean and uncluttered everything appeared to be. Then I figured it out. There were no street signs hanging from every available

post, no yellow lines all over the roads, no traffic lights on pedestrian crossings and very few signs of any description. I discovered later that this was not some kind of crazy city centre experiment but was evident everywhere. Interestingly there was no chaos on the roads, traffic all stopped for pedestrians on the subtly marked crossings. Cars were also parked in allocated spaces and everyone seemed to know where they were going. On closer observation all the relevant information was displayed where needed but it was presented in a very understated and elegant way. That, I soon learned, is how they do it in Norway. Understated Elegance. Those two words sum up Norwegian design both inside and outside the home. The ‘traditional’ wooden houses being built today are, of course, anything but! They are

constructed using thick, thermally efficient concrete walls and all with cellars, integral garages and lots of large windows, the final stage is the wooden cladding. Designs seem to be flexible enough for owners to customise the plans so that each one looks different in some way and combined with the use of the previously mentioned pastel shades completes the very pleasing look. Clean lines, no clutter and the pastel shades continue inside. Pale blues, subtle greys and gorgeous greens abound and along with lots of white shades for floors and walls, help to create light, roomy and relaxing living spaces. I quickly realised the reason for the use of very large windows and light painted floors too. I visited Norway in the summer when there are more than 20 hours of daylight. This took me by surprise on my first morning when I jumped out of bed with the sun streaming into my room only to discover that it was 2.30am! In the winter the opposite is true, so everyone is keen to make the most of the 4 hours of daylight each day. I’ve mentioned wooden floors before and I am a big fan. In conclusion there is a very simple and easy way for you to create the Norwegian look in any room to make it seem more open, clean and light. Have a really good clear out and ‘declutter’ then rip up the carpet and get painting those floorboards. You will be amazed what a difference it can make. ‘Lincing’ together to raise close to £11,000 to help beat cancer Lawyers and staff at Willans LLP have raised in excess of £10,800 (and counting) for a local cancer charity by running a full programme of events hey organised a carol concert, business quiz evening for 200 people, pool competition, sponsored Divas Opera event at Pittville Pump rooms, cake bake-offs, had staff participate in sporting challenges and put fees for documents that needed witnessing straight into the pot. In addition two lawyers are taking part in individual sporting challenges this summer, which will add to the total already raised. The Cheltenham-based firm has now donated the funds to LINC, which will use the money to support local people and their families affected by leukaemia, lymphoma and other blood cancers. James Grigg, partner and head of the charity committee at Willans, said that everyone enjoyed focusing their efforts on raising money for LINC as the firm’s charity of the year and he is proud of the results.

“We’ve had a great year and we are very grateful for the efforts made by our staff, our friends, connections and clients who have helped raise this incredible sum for charity. “LINC are very active in the community and work incredibly hard to provide both financial and psychological support to help people cope with their diagnosis and keep families and relationships together. We were delighted to support them with their invaluable work.” LINC will use the money raised to benefit Rendcomb ward side rooms; the ensuite facilities in the eight single isolation rooms are in desperate need of refurbishment. “LINC is so appreciative of all the hard work and determination to raise so much in our charity year. The team have far exceeded all expectations and this is a significant help towards getting the en-suite facilities on the way and

making a difference when patients need to stay as an inpatient,” said Karen Organ, LINC’s fundraising manager. Dr PJ Crook, LINC patron said “This was a delightful occasion; a celebration of the splendid amount that Willans has raised for LINC over the past year. Just shy of £11,000 is a sizeable donation to the charity and will help make life considerably more comfortable for LINC’s patients. Through the Garden Gate This month our Cheltenham based Media Horticulturalist, Camilla Bassett-Smith, enters the four walls of an autumnal horticultural treasure chest… he National Gardens Scheme (NGS) showcases thousands of gardens across the country sharing their creations with the public and in doing so raises millions of pounds each year for charity. Their yellow book is an excellent place to search out something new and this I did as I visited a Gloucestershire garden filled with creativity. Barn House, Sandywell Park in Whittington is a jewel in the A40 corridor’s crown, until recently unmined by myself. Owned for 31 years by Shirley and Gordon Sills, this property sits in land once owned by the stately Sandywell Park – where two of my garden benches once lived before being purchased at auction by my greatgrandparents! The garden which they have been lovingly creating for over 25 years sits inside the Victorian brick parameters of a former walled kitchen garden, wrapped and waiting to be

discovered and shared like the best pass the parcel possible. Shirley tells me that the garden has evolved over the years as she felt the need to create more and more borders to house her growing collection of plants. An artistic lady with vision who has presented the most delicious canvas of colour. Yellows of the glowing Golden Rod and Rudbeckia sway in time to the rhythm of the wind with scented Phlox in whites and pastels and Crocosmia in feisty red. A particular favourite of mine owning the end of a border like a giant full stop was Helenium ‘Sahin’s Early Flowerer’. Borders are wide and repeat planting leads the eye forward and beyond. Shirley trained in garden & landscape design in Cheltenham when her children had grown up, but this lady has a natural eye that no teacher can impart. This is very much a garden of different areas and rooms and behind

Much use is made of hedging, from beech to yew, often encasing a feature from pond to ‘banana bench’ inspired by the great Piet Oudolf. Shirley has also taken inspiration from Gloucestershire’s Rosemary Verey as regards her original layout and Beth Chatto when it comes to considering the importance of leaf shape and colour. However, it is Shirley’s own ideas, always finding a way to use something that gives this garden its stamp. The greatest

example on show I believe is the Lshaped pond. 13 years ago a neighbour offered her some architectural stonework from London in exchange for some plants. Add some bottles and clay pipes, plenty of water lilies and a gorgeous gazebo covered in the large leaved Vitis coignetiae, then you have a sight that would surely make Monet mauve with envy. The hot border colours beyond jump out in the sunshine, their reflections like youngsters clad in multi-coloured swimsuits,

splashing around with excitement. Sculptural and ornamental statements are everywhere, from a circle of wooden posts to a trough filled with died black water. This trick, as well as looking stunning and often used in high end design water features, prevents the growth of algae. An old bowser originally from Glenfall House in Charlton Kings and a water pot from Burford also add to the eclectic collection. These introductions stand hand in hand with those old hands who

have been on site for decades such as ancient apples – ‘Bramley’, ‘Lord Derby’ & ‘Newton Wonder’ and sophisticated Silver Birch who cast a glittering protective shadow on their botanical neighbours below. This garden has year round interest, but for me, as the nights draw in, it is the late summer/autumn colour that will continue to glow here with the utmost confidence, providing the most luxurious multi-coloured portal for us to enter the winter ahead. Britain’s best loved TV chef and publican, Tom Kerridge will headline this year’s Malvern Autumn Show. Billed as the ultimate harvest festival, Malvern Autumn Show brings to the fore the fruits of the season with a feast of artisan produce, family entertainment and food and gardening royalty topping the bill. Cotswold Style Columnist Ellie Mainwaring stepped into the kitchen to catch up with Tom. That’s a bit posh that. The part of Gloucester I came from didn’t get Mayonnaise until I was about 18.

Where in the world would you choose to be castaway to and why?

I’m a big fan of Greece. I grew up in a single parent family and we never had the money for holidays – our idea of an overseas holiday was to the Isle of Wight. My first trip abroad was at the age of 25 to a small island in Greece, with my now wife, and since then we’ve been back countless times. If you’re in the right place, it’s really rustic and honest and the vocabulary of Greek food is very small but when it’s done properly it’s incredible. Their understanding of balance of flavours is second to none – simple, perfect cooking, focused solely on what it tastes like. You can take the entire works of one musician to your Castaway destination.

Oasis. I’m the same age as Liam and their music was massively relevant for me as a young chef at this definitive time in my life. I also competed in Celebrity Mastermind with Oasis as my specialist subject and won. Sponge, our 8-year-old boxer and Inky, our 3-year-old French Bulldog, both totally different in their character but always pleased to see me, no matter what time I get in. What animal or pet would you take?

It’s not a super power, but I wouldn’t mind being a really good fisherman. After a full day at sea, I once said to a fisherman, “We didn’t catch much today”, he replied, “That’s why it’s called fishing, not catching!” What would be your chosen beauty item?

Cotswolds Culture Football Frolics Susan Blanchfield is hotly anticipating Jilly Cooper’s venture into the world of… soccer scandals Cotswolds author Jilly Cooper recently revealed on Radio Four’s Desert Island Discs, that she is penning a new novel about the soccer world; “I suddenly decided to write my next book about football” she told Kirsty Young before explaining that her newly ignited fascination with ‘the beautiful game’ stems from the experience of supporting her local team, Forest Green Rovers. The subject is a radical departure for Cooper, who found fame with the socalled ‘Rutshire Chronicles’; torrid accounts of upper class cavorting set against a backdrop of polo matches and smart country piles. Her aristocratic bedhopping male leads and racy tomes portrayed in novels like Riders and the bestselling ‘The Man Who Made Husbands Jealous’ created legions of fans keen for anecdotes on upper-middles’ passions of horses, classical music and sex. Not surprising then, that the announcement of an intention to delve into the soccer world, has ruffled a few feathers at the prospect of old Etonian Rupert, being summarily dumped for Wayne from Watford. The collective scramble from media commentators to debate Cooper’s startling disjunction from her standard material has

included a revisiting of the notion that Football might be morphing into a middle class midfield worthy of her literary attentions. Aside from regurgitating the well known adage that Prince William arrived at Eton a fan, privately educated Frank Lampard, Alex OxladeChamberlain and Scott Parker have vicariously been proffered as ‘proof ’ that football is turning posh; this presumably based on the idea that private schools are the standard route by which children from ‘new money’ enter the English establishment with all dodgy working class nuances eroded. For all their reverie the media debates are missing the point. The gap between, the upper classes and working classes in terms of ‘out there’ behaviour is surprisingly narrow, especially when mixed with the potent ingredients of power, sex and money. A seasoned social commentator like Jilly is well aware of this; “You have got the managers who are enormously powerful and the WAGs. You get some terribly good-looking footballers, particularly when they come back from their holidays when they are all bronzed and hot to trot. I am very excited. It’s all there” she is reported to have said. Clever Jilly. There is a slew of material for her to get her teeth into. In fact, the raw material is so absurdly racy it is likely to warrant a toning down of reality. Soccer players are often notoriously controversial figures, their ludicrously high wages, stratospheric transfer fees, inappropriate comments and occasional habits of biting their opponents mean that they are seldom in the media merely for their sporting performance. Rumours involving a plethora of Premier League players and their decadent excesses are well known. Documented transgressions include a married father of two having sex with a 48-year-old grandmother in a rubber catsuit and a mother-of-six dressed as a cowgirl. Another famously celebrated

family orientated footballer indulged in a long-term affair with his own brother’s wife. The ensuing scandals, gleefully unearthed by the tabloids, resulted unsurprisingly in an abundance of divorce proceedings and public recrimination. Nonetheless and despite the questionable behaviour, the addition of pots of money allows footballers to transcend class boundaries and attend, well, frankly any old Polo match to enjoy an afternoon of champagne and ponies they damn well like. None of this will be lost on Cooper. In addition to the scandals, new money activities such as lolling about on super yachts, zipping about in private jets with the mistress in tow as well as unseemly splurging at race meets and swanky restaurants provide ancillary raw material upon which to base her fictional characters. The fact that the footballers are brands in their own right means that much of this behaviour is documented for public consumption through the lens of social media. And there are plenty of consumers who want to know what really happened behind the carefully constructed facade of the Instagrammed photo of family fabulousness. Can the travails of the soccer world side really be turned into a poolside summer page-turner? The stakes will be high with the legions of fans to please but if anyone can do it, Jilly can. She’s just moving to burgeoning pastures new. And there is no doubt she will score a number one best seller. lava flows making the island topography beautiful in the extreme. We had arrived in Bali in time for the Bali Spirit Festival with its vibrant dancers, energetic musicians and thousands of spirituality seekers. We had plunged into the extremes of Balinese culture in an allconsuming way. As we travelled by boat approximately 30 miles east of Bali to Lombok it was as if we appeared to pass through an invisible filter that separated out the hedonism of Bali and transported us to these idyllic islands of peace and tranquillity. Lombok is a bohemian beach paradise with wild coastline for

surfing in the south of the island and sheltered shores to the north with stunning sweeping bays and white sand beaches framed by a backdrop of mountain peaks. Mount Rinjani at 3,726m, is Indonesia’s highest and most spectacular mountain with a blue

green crater lake fringed with bubbling hot springs. The locals here are so welcoming and warm hearted and we were soon settled into our romantic beach villa on stilts wonderfully named a lumbung. Following a glorious swim in the silkywarm crystal clear sea we settled into a beach bar with wavelets lapping at our feet, eating freshly caught fish while sipping watermelon cocktails and soaking up sunset views across to the volcanoes of Bali. We felt a thrill of excitement and quite intrepid as we set off on the thirty minute boat ride from Lombok’s North coast towards three little specks in the ocean. These miniscule

desert islands are the Gilis and are fringed by white sand beaches, stunning underwater scenery and topped with swaying palms. The islands consist of Gili Meno, Gili Trawangan and Gili Air and we appeared to have arrived in a very remote, undiscovered part of planet earth. Our first few days were to be spent on Gili Trawagan and with the absence of any vehicles on these islands, we were taken by horse-drawn cart to our tropical beach hideaway with outside bathroom and open-sided bedroom with billowing white gauze curtaining looking out to the ocean. That night warm rain bucketed down and we leapt outside to enjoy an

invigorating monsoon rain shower in our private garden to a chorus of shrilling frogs. Next up we visited Gili Air and then headed to Gili Meno where there is absolutely nothing to do but relax and enjoy the company of your loved one! Our abode was the perfect back to nature retreat – a chic lumbung which blended unobtrusively with our tropical island setting. We cycled around the island enjoying views across to the other islands and that evening enjoyed a delicious meal of grilled octopus with haloumi salad and fresh mojitos and watched fishing boats silhouetted on the ocean as the sky turned pink and blue. Somewhere for the Weekend? Our very own Cotswoldia couple, Mrs and Mr Jones, hosts our travel section. They thoroughly investigate destinations ideal for a little trip away revealing vital tips on a glamorous getaway and also provide the inside track to ensure the destination caters for a range of tastes and wallets. From the slickest city hangouts to peaceful boltholes, you won’t waste a moment planning your travels. This month we visit PRAGUE in the Czech Republic “Wow! Prague. Pure emotion” exclaimed Mr Jones. He was either getting romantic in his old age, thought Mrs Jones, or had been truly overcome by the view from their Park Hotel window. Returning from her shower Mrs Jones discovered it was neither. He was reading the words printed on a little bag of goodies, brochures and maps left for them by Prague City Tourism. She noticed that Mr Jones was already clutching the ‘Wine in Prague’ and ‘Beer Guide to Prague’ booklets and a map and it was clear to Mrs Jones exactly what his emotional plans were. ‘Pure Emotion,’ it transpired, is the perfect strap line chosen by the marketing people to describe this fabulous city, but more of that later! Mrs Jones thought that a weekend break in early summer would be a good idea and having discovered that Czech Airlines have introduced a new regular service direct to Prague from Birmingham, the decision about where to go was an easy one. Mr Jones was at first a little sceptical. “Isn’t that where all the kids go to drink cheap beer and have stag do’s?” he asked. Once Mrs Jones had assured him that was years ago and was sure ‘the kids’ had found plenty of other places to go by now, the weekend was planned. Birmingham Airport has to be one of the easiest airports in the country to access, whatever mode of transport is chosen to get there. Parking and access 54 SEPTEMBER 2016 COTSWOLD STYLE

is so easy and there is a free air-rail link from Birmingham International station, which takes 2 minutes. Having checked in with plenty of time to spare Mrs & Mr Jones made full use of the luxurious No 1 lounge and having missed lunch, Mr Jones was not slow in filling up from the complimentary food bar while Mrs Jones settled for a cream tea and a couple of glasses of pre flight Chardonnays. It was a smooth and surprisingly short 1hr 40 minute flight and a 20 minute taxi ride to THE PARK HOTEL which was designed by the award winning architect Zdenek Edel in 1967. The recent total refurbishment has given the 237 rooms a complete makeover while sympathetically retaining the very retro 1960’s feel with all the comfort and facilities to be expected of a four star hotel. With the 1 hour time change and a little time spent settling in they were ready for dinner. The hotel restaurant

had just closed at 10pm but after a very short walk over the road, they soon discovered a variety of bars and places to eat, all open till 1.00 am. The Czech republic still has it’s own currency and is not part of the Euro, so armed with a fistful of Czech Koruna they settled for a vegetarian goulash and a burger, washed down with two pints of the famous Urquel Pilsner and a couple more Chardonnays for Mrs Jones. When the bill arrived there was at first a very puzzled and then very happy expression on the face of Mr Jones as he calculated that the 350 Koruna cost of their meal, including drinks, was in fact a little over £11! ‘Wow! Prague’ indeed! The following morning and after a splendid buffet breakfast in the hotel Mrs and Mr Jones were walking through the park to town for their eagerly anticipated ‘Food Lovers Guide to Prague’ tour. A glance at any map of Prague shows huge amounts of green space. The parks, it appears, are everywhere and two of the largest are close to the Park Hotel (the clue is in the name!). During their 20 minute walk, with stunning views

across the river towards the Old Town, Mr Jones was impressed how relaxed everyone seemed. Dog walkers, joggers and people having picnics or just sitting on benches reading, this place was looking very chilled indeed. This thought was reinforced once they had crossed the bridge over the Vltava River into the Old Town. For a busy city it reminded him more of the slow and friendly pace of life he once saw in San Francisco. With limited time available the ‘Food Lovers Guide to Prague’ tour starts at Pernickuv Sen where they met Jan their tour guide and knew they had made the perfect choice. This gorgeous little bakery specialises in everything gingerbread and is reviving Prague’s gingerbread tradition. Mrs & Mr Jones tasted a selection of gingerbreads made to the authentic recipe with plum jam and walnuts and were introduced to the delicious poppy seed kolache. The poppy seeds are ground to a paste and make a fantastic, not too sweet, filling to many of the cakes available. Mr Jones had to be reminded that the tour lasted four hours so it would be a good idea not to eat too many at this stage! > COTSWOLD STYLE SEPTEMBER 2016 55

Spotlight on... The Old Town Square The tour ended close to The Old Town so Mrs & Mr Jones decided this would be a good time to have a look. Prague receives around 6.5 million visitors a year and on arriving at the Old Town Square it seemed to Mr Jones that they had all arrived at once this year! Parties of Japanese, Korean, Chinese and German tourists were keenly following their tour guides and trying not to get left behind. Fortunately it's a big square and plenty of space left to view this magnificent collection of historical architecture. There are very few places in Europe to have survived intact through so many

The classic chebicky (open sandwiches) at ‘Sisters’ cafe were definitely a highlight and the Prague ham from Nase Maso was spectacular. The charming Restaurant Zvonice provided a taste of the best Old Bohemian Soup in the world and a very welcome glass of Moravian wine but the best was yet to come. Styl & Interier started life as an antiques shop with a small cafe. Situated in a hidden courtyard in the middle of Prague’s ‘New Town’ it is a haven of calm with a fabulous walled garden. It is now very much a cafe with a few antiques cleverly distributed around the various rooms. Mr Jones noticed that even the chair he was sitting on had a price tag! 56 SEPTEMBER 2016 COTSWOLD STYLE

wars and uprisings with such a varied collection of styles and influences. It was founded in the 12th century and is dominated by the Baroque church of St Nicholas. The amazing Rococco Kinsky Palace and the House at the Stone Bell, which is a Gothic palace from the 14th century, are all outstanding examples of their type. The most poignant memorial has to be the stones set into the cobbles of the square marking the site of execution on 21st June 1621 of the 27 Czech lords who had defied the ruling Habsburgs. The star attraction, however, is the astronomical clock on the Old Town Hall, which was built in 1410, making it the third-oldest astronomical clock in the world and the oldest one still working. A trip to the top of the tower was well worth it with great views over the square and the red pantiles of the Old Town. On the way back to the hotel Mrs & Mr Jones booked a river cruise which seemed like a good way to spend the evening and see the sights of Prague from the river while having a well deserved drink and dinner. Prague Castle dates from the 9th century and is now the official residence of the President of the Czech Republic. The castle was a seat of power for kings of Bohemia, Holy Roman emperors. The Bohemian Crown Jewels are kept within a hidden room inside it. According to the Guinness Book of Records, Prague Castle is the largest ancient castle in the world, so to see it properly take one of the many, guided tours available and allow plenty of time. The castle buildings represent virtually every architectural style of the last millennium. Prague Castle includes the Gothic St Vitus Cathedral, Romanesque Basilica of St George, a monastery and several palaces, gardens and defensive towers. Most of the castle areas are open to tourists. The castle houses several museums, including the National Gallery collection of Bohemian, Baroque and Mannerism art, an exhibition dedicated to Czech history, a Toy Museum and the picture gallery of Prague Castle, based on the collection of Rudolph II. A

few months ago I invited local seamstress and dress designer, Tracey Sarmis into my large but very tired wardrobe. With our current economic uncertainty, who is sure of the challenges ahead? Buying new clothes is probably not top of most people’s lists and to be honest, I think I have enough (I don't tell him indoors that however). My love and passion for clothes has never wavered but it has, over the years, resulted in some questionable buys (cue horror face emotion). Of course most of my garments have given me great pleasure and have resulted in a long love affair with me refusing to let them go. Tracey started up The LAB earlier this year and stepped in to tweak, take, turn up and generally bring everything back to life. Super talented Tracey set about attacking the dusty closet and pulled out everything old from my sartorial collection. Within a few days she had worked her magic returning my tired old garbs as a newly transformed wardrobe. Tracey trained in fashion and enjoyed a very successful career as a wedding dress designer. However, like many with family commitments she put her career on hold. Now she is back with renewed gusto and ready to take on tired wardrobes and tailor your new clothes that just don't sit right. This month's shoot took place in a Cotswold country garden and uses pieces from my reworked wardrobe. Winner of Cotswold Style’s Facebook modelling competition, Mollie Griffin, did a sterling job showing great maturity and professionalism whilst looking totally exquisite. Model Anastasia Tolmacova, who is studying cinematography at Birmingham University, kindly lent us her face and figure for the day. Laura Leigh styled Anastasia's hair into an elfin, choppy crop and the hair and makeup, also courtesy of Laura Leigh was as perfect as ever. Our star Fashion Photographer, Stef Calleja-Gera, was as sublime as ever - a dream to work with and a creative perfectionist and Tracey Sarmis and myself styled the models and created the sets. Unbelievable! Sandra Paul needs to make her life easier Is it me or has life become more difficult to navigate? Do you ever feel burdened by the stresses and strains of modern life where getting through the day is quite simply exhausting sometimes? I have decided that I need a chauffeur and an administrator to take many of my burdens away. Let’s start with my reasons for a chauffeur. Maybe it is the hot weather or maybe it is actually a sad but permanent characteristic of modern-day life in Britain but have you noticed how aggressive and confrontational, drivers seem to be lately? Only in the last week, I have been verbally abused, shown various hand gestures, and had to avoid some crazy driving designed to retaliate and intimidate me by three drivers in three different parts of Gloucestershire:

1. Merrily driving along in Cheltenham where two lanes merge into one, a white van driver attempted to barge in front. I was already ahead of his van and rather than be intimidated by his larger vehicle, I held my ground and refused to brake and let him get in front

of me. He was furious that I did not give way to him, and wound down his window to shout and gesticulate at me for the next five minutes as we drove along in heavy traffic. At every opportunity, he attempted to get alongside to scream abuse at me endangering him and others around. The crazy thing was, because the traffic was so heavy and we driving at 20 mph, he couldn’t have gotten very far ahead, so what made him want to flex his driving skills? And why did he think it acceptable to try and intimidate me with his aggressive behavior? 2. I was driving at the speed limit but not knowing the road and following my sat nav, I wasn’t behaving like Speedy Gonzales. This must have irritated the driver behind me who zoomed in front of me whilst blaring his horn, performing an illegal move, just to edge in front. 3. The final time was at a roundabout in Gloucester. Now I am a cautious driver – I make no bones about it. I always wheel myself in and tell myself as a mother, I cannot afford to take risks just to get to my destination a bit quicker.

I know that being a cautious driver makes some drivers furious. I take my time to pull out, making sure the way is clear, and with a bit of a slowish car, I can’t do 060mph in a nanosecond. So at a roundabout I will always WAIT until it seems clear for me to pull out gently. Why do others feel the need to perform a long continuous beep at me accompanied with various fingers waving at me? Perhaps they think it will make me move more quickly? So, I need a chauffer who will be accustomed to taking these onslaughts – I hope – and will be able to deal with them better than I can, while I sit quietly in the back playing with my phone. The reason I need an administrator is also a sign that modern life is sooo difficult. Do you too get frustrated by how difficult it can be just to get a new

driving licence, or fill in your tax form, or work out how much energy you are using in order to switch to the best provider? Or open a bank account, or remember your password to an account you don’t use very often or try to understand why your SKY isn’t working? Isn’t it crazy that you can spend hours online trying to work out these details? Then, if you are my age, you will probably search for contact details in order to telephone someone to ask, where on the websites are the forms I need to fill in and how do I do it? Recently I have been trying to sort out car stuff. Now, first of all, I find it unbelievable that when you change your address and tell the DVLA, the DVLA does not inform the other parts of the bureaucratic machine, about your new address. Instead, we are supposed to know that the different departments do not speak to each other. So, you must duplicate the hours online and fill in completely new forms to ensure your car registration, car tax, and driving licence all have the same details by filling in three entirely different forms to send to the different departments. This week I searched in vain for the right forms to complete – their bureaucratic language does not compute with me. Then, after searching for a telephone number, all I seemed to come up with was an email address to address my queries. I emailed and asked if they could send the right forms back to me by email so I could fill them in and return. Seriously, they emailed me back and asked in what format would I like this? I really do not have the time to waste trying to stay on the right side of the law! Why are all these thing so complicated? If I had an administrator I could happily palm these jobs off and save myself at least a day per week. No wonder I have wrinkles! WESTMINSTER IN THE COTSWOLDS Emma Logan has asked the county’s MPs to inform Cotswold Style readers what they have be doing to represent their constituencies both locally and from Westminster.

NEIL CARMICHAEL, MP FOR STROUD This summer I accepted an invitation to become parliamentary champion of the Skylark, a beautiful, inspiring but alas, increasingly rare bird. I was delighted to accept this role, not least because, while growing up in Northumberland, I often saw Skylarks sweeping across the sky above the hill farm where I lived. I am also attracted to the Skylark because it is featured in the writings of Milton, Shakespeare, Shelley and many others. This is why it is an inspiring bird. Threats to the Skylark include once being popular for the dinner table; apparently, during the 1890s some twenty thousand per day were sold for consumption at the Leadenhall Market, London. Thankfully today's great television chefs such as James Martin, Lorraine Pascale, Rick Stein and the Hairy Bikers would never consider the Skylark as part of a menu but, incredibly, Mrs Beeton of “Household Management” fame did produce a recipe for the Skylark. Now, they need succour and protection. Skylarks are widespread in our countryside; open moorland including our commons, salt marsh such as that found near Berkeley and lowland farms are their favourite territories. However, since the beginning of the golden decade of the 1970s, there has been a 60% drop in numbers, accounting for the loss of some three million birds. 84 SEPTEMBER 2016 COTSWOLD STYLE

Their fate is linked to modern farming practices such as the move from traditional hay making to highly mechanised silage collection and the increasing popularity of autumn sown crops instead of spring varieties. Steps can be taken to mitigate against these trends such as the creation of ‘Skylark patches’ where suitable habitat is portioned off or when arable stubble is deliberately retained for the winter. When I visited Slimbridge Wildfowl and Wetlands Trust to spot some Skylarks, the topic of agriculture policy reform came up within the context of Brexit and environmental protection. For the UK, the end of the Common Agricultural Policy is in sight so, depending on the structure of a replacement policy, there could be more locally focused incentives to protect wildlife and, in particular, the Skylark. subsidies to our farmers. The Cotswolds harbours some of the most productive and fruitful land in the country and we must do everything in our power to support the local economy in the region. After the EU referendum there has been little time to relax regarding Brexit negotiations and the team of experts that Mrs May has entrusted with this arduous task – Boris Johnson, Liam Fox and David Davis – illustrates the wealth of talent present in this government to achieve a brighter and more prosperous future outside of the European Union. The ongoing events surrounding the Minor Injuries Unit at Cirencester Hospital have occupied much of my time and it is important that we act pragmatically with all of the relevant facts to hand. I have contacted the Gloucestershire Care Services NHS Trust to seek clarification on patient numbers and the costs involved for all. The comparison of 976 people using the MIU between 11pm and 8am during 2015-16 with the 16,355 patients seen between 8am and 11pm illustrates the nature of the situation.

Style Politics A great addition to my August calendar has of course been the Olympic Games in Rio. It is fantastic to once again marvel at Team GB competing and beating the juggernauts of China, Russia and the USA. ALEX CHALK, MP FOR CHELTENHAM The news that Gloucestershire Hospitals NHS Trust has been found in breach of its licence by the NHS Improvement watchdog is both serious and sobering. At a time when record sums are being invested nationally into the NHS, it is disappointing that Gloucestershire is falling behind on the 4-hour A&E waiting time targets. This should not of course be seen as a criticism of those who are working so brilliantly in the emergency departments across our county. The dedication, compassion and professionalism of local healthcare professionals are beyond question. Second, we should not ignore the fact that our emergency departments face challenging factors beyond their immediate control. These include the ‘upstream’ pressure of more people presenting at A&E, sometimes inappropriately. They also include the ‘downstream’ challenge of securing sufficient local health and social care capacity to accommodate discharged patients. But it would be wrong to hide behind these factors. They are not unique to Gloucestershire. There are systemic

weaknesses here, which cannot be swept under the carpet. In fairness to the Trust leadership, I believe they recognise that. There has been no attempt to duck it. I have met senior officials, including the energetic new Chief Executive and it is clear that they are facing this head-on and have already taken decisive steps. I welcome the fact that an Improvement Director has already been appointed and that statistics are already moving in the right direction. But the elephant in the room has to be the downgrade of nighttime A&E at Cheltenham General in 2013. Concerns were raised then that such a major capacity reduction would put the local healthcare system under intolerable strain. We were assured that this was not the case. I believe the time has come to look at this again. With a new Chief Executive in charge, someone not associated with the 2013 decision, this is the right opportunity for a fresh set of eyes to reflect on whether this was the right call. So, although this news is unwelcome, I believe it can be turned into an opportunity – namely to make significant changes which will build a stronger, more sustainable and more resilient A&E model in our county. No options should be ruled out. I am confident that the Trust will get the job done. www.alexchalk.com

LAURENCE ROBERTSON, MP FOR TEWKESBURY Parliament was in recess in August and it gave me the chance to catch up with local work and see more people. It’s always good to be able to do that. My wife, Annie, and I also managed to take a week off in Cornwall and had three days horse racing at York. I’ve been fortunate in having travelled quite a bit across the

world but I never cease to be amazed at the natural beauty and history, which exists in this country. Parliament sits for two weeks in September, during which time there is much to consider and then we go off to the Party Conferences. The Conservative Party Conference will be held in Birmingham this year and while I enjoy the time there, especially near to the modern, developed centre, I do miss the annual gatherings at the seaside! Again, though, Conference offers the opportunity to meet many people who I usually only see once a year. I also hold many meetings with charities, businesses and others during the week. September also provides some time to visit schools, businesses and such organisations locally and I shall be taking the opportunity of doing that during this time. I’m also planning to lead a trade delegation to Kenya late in the month in support of British businesses which are either exporting to that country already or else are looking to do so. This forms part of my work as Chairman of the Westminster Africa Business Group, which was formed in 1947 to help promote links between politics and business in Africa and the UK. So, a very busy time, between recesses and time in Parliament and I hope to meet as many people as I can during the month. CHANGE Bradley Salisbury, Headmaster of Dean Close School discusses the start of the new school year One of my favourite toys when I was growing up was an “Etch a sketch”. For those who are unfamiliar with this mechanical drawing device, it is essentially a grey screen surrounded by a red plastic frame. In each of the bottom corners are two knobs, one moves the stylus horizontally and the other vertically. True “Etch a sketch” artists can create portraits of famous people and reproduce well known paintings. I was more limited to street maps and square spirals. The genius of the device for me was that at the end of every drawing you could shake the box up and down and the screen would be cleared ready to begin again. In some ways, the start of the new school year is similar to a clean screen on an “Etch a sketch”. The summer holidays has given everyone a chance to shake away the old picture and get ready for the new drawing. Every pupil will be facing change in September – it may be starting a new school, or in a new class with new teachers, or simply having a new position in the school structure. And still everything is possible, with lots of new lessons to be learnt. The freshness of a new year is a welcome opportunity to learn from the mistakes of the previous one. To have another go at the subject which didn’t go well in your end of year exams, to try out again for that sports team or to re-

establish some relationships that went wrong. For others it represents uncertainty as familiar routines and social rules have been wiped away and expectations have changed. Based on my experience of working with teenagers over the last 20 years in state and independent, day and boarding schools, I humbly offer three pieces of advice to pupils and parents:

1. Make three new school year’s resolutions, write them down and tell someone about them. Then make a point revisiting them in the half term break. You could choose to learn five new pieces French vocab a day (about 420 words by Christmas), find time to sit and read a book for 30 minutes each day, join a club you have never been to before or govern your social screen time to one hour a day.

2. Keep your new exercise books, folders and homework diaries as pristine and graffiti free as possible for as long as possible. Taking pride in your work is vital and it does not take long for those well-meaning resolutions to be wiped away once books are drawn on or covers torn.

3. Watch out for week 3. The first week often goes well whilst everything is new and novel. The second week starts to see some relationships becoming strained as you begin to miss old friends/teachers or start to realise that some people/subjects are still difficult. A good idea might be to take some time out on the weekend before the third week and remind yourself about your plans for the year.

Here at Dean Close, we welcome about a quarter of the school as new pupils which means everyone here has to adjust to some level of change. For some the transition to newness is easy and for others it presents a significant challenge. But for all, it brings fresh opportunities to break new ground and build on the previous year. The biggest market is unsurprisingly the US where a staggering 1 million people are employed across almost 500,000 different businesses. In the UK alone the weddings market generates over £10 billion every year. It is fast becoming a great option for investors for two key reasons. Firstly, the returns are reliable. With over 300,000 of us getting married every year, wedding firms have a constant supply of customers. And marriages mean money – lots of it. Research reveals that in 2016 over 80% of the time, the brides’ parents no longer pay for everything. The wedding industry has been routed in tradition for years. But things are changing driven somewhat by enthusiastic investors behind the scenes. The latest digital technology and the money behind it, is moving into this market fast. New businesses are springing up all the time – to help couples plan, vet and choose all aspects of their special day.

Social trends are also changing. The proliferation of Facebook, Twitter, Instagram and SnapChat means the rules of the game have changed. These days ‘Digital engagement’ is often a reality and not just a marketing term. With so many couples meeting and even conducting relationships via ‘apps’ – the money and machinery behind the scenes has been quick to capitalise. Hi-tech wedding businesses like WeddingWire, The Knot and Wix have already attracted millions in investment. But market analysts now predict the biggest growth yet is set to happen over the next 5 years. A growing number of ‘wed-tech’ start-ups have mushroomed over the last 12 months. Over $250 million of investment has flowed in since 2015. Back in 2013 the comparable number was closer to $80 million. The explosion is infectious and with current investment trends many more innovative businesses are set to start on this side of the Atlantic in 2017. The Arkansas based ‘tech-tux’ firm Menguin has been overwhelmed with interest worldwide since starting its online fitting service for grooms in 2013. The company (funded by billionaires Mark Cuban and Scott

We all appreciate the benefits of new technology but many couples also fear a diminished sense of tradition and poignancy. Communicating Cats Animal advice from our friends at Vets on the Park Cat owners know their pets have an amazing sense of hearing but you may be surprised to know they also gather information about the world around them through their sense of smell. Much of this information comes from other cats in the form of pheromones – special chemical compunds that transmit information from one animal to another via scent. Pheromones were first studied in the 1950s, in moths and ants. Almost all species produce pheromones, including insects, animals, and humans. These microscopic compounds are produced by special scent glands in the body and cats take in the smell through sensory apparatus in the roof of the mouth called the vomeronasal organ. If you've ever noticed your cat pausing with his mouth partly open and his upper lip curled back as he inhales, you've seen him smelling pheromones. Interestingly, pheromones send chemical signals that can influence behaviour. Cats will also scent-mark various household surfaces, such as the edges of doors or walls, by rubbing the sides of their faces against them. This leaves a pheromone marker, along with a tiny bit 92 SEPTEMBER 2016 COTSWOLD STYLE

of fat, which is why these areas sometimes develop a brownish appearance. These facial pheromones seem to produce feelings of contentment; therefore, cats rub the same spots over and over again. Products such as Feliway are synthetic versions of these facial pheromones and can be very helpful for cats with stressrelated behaviour problems. Cats are creatures of habit, and any change in their environment can be stressful – moving, travel, a trip to the vet, a new cat in the household, the loss of a human or another pet, or sometimes even a simple furniture rearrangement. Cats often respond to stress by urine marking, overgrooming, not using the litter box, refusing to eat, or hiding. Using a product such as Feliway can be remarkably helpful in easing the cat through the stressful period. Feliway is not sprayed on the cat, but on appropriate surfaces in the environment, such as the cat carrier before a trip to the vet. Feliway is also available in a plug-in room diffuser to use in larger areas. The diffuser is a good idea when bringing home a new kitten, or when a new cat is being introduced into a multi-cat household. For a large home, several

diffusers will probably be best, placed in areas where cats spend the most time. A new Feliway plug-in called Feliway Friends is now available to ease inter-cat stress in multi-cat housegolds too. Pheromones go a long way in helping a cat feel content and comfortable in an ever-changing world. What’s for Dinner? Cotswold Style’s Food Writer, Rachel Cappuccini, creates some delicious, easy family suppers y inspiration for this month’s issue was today, or rather the last 18 years. A crazy day balancing work, children, dogs, errands and home-life followed by that inevitable question: ‘what’s for dinner?’ Once I’ve delivered a suitably sarcastic response, I begin my eternal quest of putting together another quick, healthy and economical supper in 20 minutes. Although I really love cooking and still have so much to learn, everyday cooking - day in, day out is probably my biggest challenge. If cooking isn’t your thing it is an even bigger challenge. So whether you’re feeding a family, a wife, husband or partner or want a quick supper for one that doesn’t come out of a packet, here are some ideas all ready within 20 minutes. It is only after all these years of having to do this myself that I appreciate why Friday evening was always mum’s night off and dad was sent packing to the chippy with our orders.

That aside, I do enjoy encouraging my boys to take part in the preparation and the cooking of our family meals when time and homework allow and eldest son makes awesome breakfasts. My first recipe is one I threw together

this evening. I feel very saintly when I manage to use things from the cupboard and this recipe worked very well and can be adjusted easily to suit your personal or family tastes. Amounts can be adjusted according to what you have...

Char-grilled Tuna Steak on Coconut Rice Noodles & Stir Fried Vegetables Ingredients – Serves 4

Dash of sesame oil (or groundnut or vegetable) 1 garlic clove, crushed 3 cm piece of fresh ginger, chopped finely 1 red chilli, seeded and chopped 1 red, green and orange pepper, cut into thin strips 2 large carrots cut into thin strips 1 small cauliflower cut into small florets 1 head broccoli cut into small florets A dash of fish sauce (optional) 1 tin coconut milk 1 packet of medium rice noodles (4 nests) 4 tuna steaks with oil

Juice of 1 lime and seasoning Fresh coriander and sweet chilli sauce to serve (optional)

Method:

1. Heat the sesame oil in a frying pan and gently fry the garlic, ginger and chilli without browning. Add all of the vegetables and stir fry until softened slightly for a good 5 minutes. Add a splash of fish sauce if you wish.

2. Whilst the vegetables are cooking, bring a pan of salted water to the boil and cook the rice noodles as per the packet instructions. Drain and add to the vegetables. Pour in the tin of coconut milk and toss together on a low heat

taking care not to break up the noodles.

3. Meanwhile, heat a grill or frying pan until lightly ‘smoking’, squeeze some lime juice and a drop of oil over the tuna steaks and season. Then sear on each side for 2-3 minutes. 4. Plate the noodles onto warm plates then add a tuna steak. Top with a handful of fresh coriander and a splash of sweet chilli sauce if you have some in the cupboard.

Cooks tip: you can replace the tuna with chicken, beef or pork or if you’re vegetarian the noodles are delicious on their own with some chopped toasted cashews on the top.

Chicken with Halloumi, Fig, Lemon, Thyme & Honey Ingredients - Serves 4

12 x boneless skinless chicken thighs 1 block halloumi, sliced into 8 pieces 4 figs, halved Juice of 1 lemon 2 tbsp runny honey 50ml olive oil 1 large handful of fresh thyme

Method:

1. Put the chicken thighs and halloumi into an ovenproof dish, dot the figs around.

2. Mix the honey, lemon and olive oil in a jug then drizzle over the chicken, halloumi and figs. Grind some salt

Turkey & Chorizo Burgers Method – Serves 4

Mix 600g lean turkey mince with 75g finely diced chorizo, a handful of chopped herb of your choice, salt and pepper and form 4 patties. Cook on a griddle pan and serve in brioche rolls. Delicious with guacamole, sweet potato fries or coleslaw and a simple tomato salad – buy these if you haven’t got time. No guilt needed.

Whole Wheat Pasta with Ham Hock, Peas & Crème Fraiche Ingredients - Serves 4

400g dried Whole Wheat pasta (penne or farfalle work well) 1 small red onion, chopped finely 50g butter 200g frozen peas, thawed 200g shredded ham hock (available most supermarkets) 1 tub low fat crème fraiche Salt and pepper 4 tbsp grated Parmesan cheese

Method:

Heat a large pasta pan filled with salted water and bring to the boil, add the pasta. Meanwhile, cook the onion gently in the butter, add the peas and ham and heat gently through. Stir in the crème friache. When the pasta has cooked, toss through the sauce, season and serve. Top with the grated Parmesan. Also delicious with mushrooms and chopped parsley.

8-10 small waxy potatoes, scrubbed and cut into chunks Sea salt and black pepper 12-14 Free-range eggs Drop of vegetable oil 6 shallots (or 1 small red onion) peeled, finely sliced 2 red peppers, chopped 1 pack green beans, chopped 1 handful basil, torn Goat’s cheese, Cheddar, Parmesan (optional)

Method:

Turn on your grill to pre-heat or if preferred your oven to medium-high temp. Boil the potatoes until just cooked. Beat the eggs with a fork, season. Heat a large non-stick ovenproof frying pan, add a drop of vegetable oil and fry the shallot, red pepper, beans and potatoes until golden brown. Add the basil. Pour over the beaten egg spreading evenly. Allow to cook from the bottom for 3-4 minutes before putting under the grill to finish. At this stage you could top with some goat’s cheese or grated cheddar or Parmesan. Delicious served on its own or with rocket salad. If you want to add a little spice, throw in some chopped red chillis.

Developing innovative menus, forging links with local companies and working as a private chef means that Rachel is still very much hands-on. Rachel’s consistent love affair with food means the next meal is never far from her mind; day-today nutrition and nutrition in sport are of particular interest as well as bigger issues such as school meals, food wastage and animal welfare. Her obsession with food developed in early

childhood watching her mother create superb meals on an extremely tight budget using ingredients such as nettles and offal and later, her regular trips to Italy and the south of France ignited further passion. R&R A monthly column exploring the perfect location to clear your head and spend quality time with the ‘lovely one’ in your life This month Lucy Garbutt reviews The Lakes by Yoo Nestled on our doorsteps in the heart of our beautiful county is a sanctuary so unique and different it is hard to believe that we had not journeyed overseas to a far-flung part of the planet to reach it. We had been ushered past security into the private gated 650-acre estate of The Lakes by Yoo, founded by international property entrepreneur John Hitchcox and designer Philippe Starck and we were excited and intrigued. We drove to the central hub of the estate and were greeted by delightful Josh, Manager and in-house Personal Trainer in the stunning spa lounge. The spa boasts zesty furnishings and inventive design with floor to ceiling windows spanning the resplendent slate pool, lawns for elfresco dining and lake beyond. John Hitchcox’s vision for the Lakes is ‘an extension of the Good Life, only on a slightly bigger scale’. Josh escorted us on a driven tour (adhering to the strict 5mph speed limit in place to protect free range children!) through glorious countryside along pretty winding woodland tracks designed as walking and bike trails. We realised there is plenty to see and do as we passed the Lakes Zip-wire, spring free trampoline, tennis courts and pretty beach with kayaks, rowing, sailing and fishing boats for guests to use free of charge. The grounds are a giant adventure playground, comprised of five cobalt glittering lakes (one of which is stocked with 500 trout), surrounded by uber chic private villas nestled into lakeside banks. There was something magical about checking into our own boutique haven with spellbinding views across a shimmering lake. Lechfield Lodge’s hip contemporary décor and zen-inducing design has the effect of removing life’s everyday clutter as you walk through the door and immediately unwind and regenerate. The vast open plan living

room is designed in taupe, silvers and greys creating a calming mellow effect to complement the surrounding twinkling lake. The scene is a moving picture with the clever full-length bifolding doors giving a full panorama. Huge L shaped sofas beckon at one end of the space with a woodburning stove and stacked wood basket (which you can order concierge to stoke ready to roar!) and apple TV connected to the Sonos soundbar, with a large dining table and chic modern fully fitted kitchen at the other and remote control terrace sunawnings framing the picture. A decadent welcome hamper awaited our arrival and we settled on sunloungers with coffee and croissants on our over water deck to soak up the scene. Climbing the wide stairs to the second floor revealed more superlative comforts with four spacious bedrooms and bathrooms complete with fluffy robes and Bamford geranium, lavender and peppermint range of products with which to indulge. The greatest treat was the resplendent master bedroom and vast superking sized eco bed overlooking the lake with a huge ensuite bathroom and roll top bath, twin basins and separate rainshower. We achieved unimaginable levels of relaxation during an afternoon of pampering in The Orchard Spa enjoying soothing, relaxing treatments including a deep tissue massage which resulted in mutual states of blissful submission. The pampering continued with a Bamford facial inhaling the delights of the Spiezia organics range of products. As dusk fell, the outdoor hot tub was

up to temperature and we wallowed beside the pool with the divine waft of wood burning smoke watching geese grazing on the lawn and the lake beyond. Incapable of following our plans for nearby pub grub we floated back to escape to the luxury of our lovely house in a state of deep relaxation. (If required, there is an extensive concierge menu from a range of chefs and from top-notch boutique hotel to deli style, from kedgeree to homemade smoothie). The following morning we woke feeling completely revitalised and headed off to meet Josh for a private session at the gym. In a few minutes we were off the beaten track running along one of the trim trails beside the river, past Ben Fogle’s children’s outdoor adventure camp and a bothy tucked in the woods beside a lake. Following a swim, steam and sauna we were soon back on our terrace in the sunshine for a wonderful breakfast of homemade local ingredients from our hamper. THE SCALES AND YOU Cotswold Style’s Fitness Expert Luciano Kydd, educates you in weighing yourself I know as a fitness professional, no other piece of equipment seems to put the fear into people like the weighing scale. As a trainer/coach these are the most common quotes I hear, “I have put on so much weight this week”, “I lost 2 lbs yesterday”, “I have put on 2lbs today” and the cycles continues going between elation and depression, depending on how the numbers on the scale reads out. So in this month’s article I aim to educate you in using the scale, without breaking out in hives every time you use it or having negative beliefs about yourself because of some numbers on a piece of equipment. First and foremost, weight loss alone is not and shouldn’t be your only focus when stepping on the scale, because ultimately it doesn’t take into account a great deal about the positive changes in your overall body composition such as your lean muscle mass compared to your fat mass. The scales simply measure your total body weight, which is made up of bone, blood, organ, muscle, fat, glycogen, basically everything - not how much is muscle and how much is fat. Take for example you lost 10lbs this week – you may think this is great. So you continue eating and training in the same way the next week in the hope of the same results. However, what if over two thirds of that weight loss is actually

muscle tissue? By only concentrating on what the scale reads you will begin to notice everything isn’t great as it seems with that sudden drop of 10lbs. You can lose 10lbs without noticing any change in the mirror or in your girth measurements. Take away point: you always want to maintain muscle mass not compromise it over fat, which is the weight you want to shed. What you eat and drink needs to be taken into consideration such as your carbohydrate intake in your meals (glycogen), along with your sodium levels and water intake. These play a critical part in your daily weight fluctuations. For example, for every gram of carbs (glycogen) stored in your muscle or liver, 34 grams of water is stored with it. It’s worth mentioning that a healthy adult can store around 400 grams of glycogen in the liver and about 100 grams in muscle cells. If your glycogen levels drop you’re estimated to lose about half a kg ( just over 1lb). As mentioned earlier, every drop of glycogen carries with it 3 grams of water, meaning that if you deplete your glycogen store this will show up as 2 kgs loss on the scale. This is another reason why most fad diets will tell you to go low carb in order to get you seeing results in the first few days/weeks. If you dramatically cut back on your carbs and then resume your old habits, the weight comes plying back fourfold giving you the notion that eating carbs makes you fat, when in reality it doesn’t. It comes down to you just overeating and not addressing the root cause of the problem, which is your lifestyle habits or even worse making people carbs phobia, which is totally wrong. Take away point: your sodium, water and carbs intake makes your bodyweight fluctuate on a daily and weekly basis. Finally for women, the menstrual cycle

plays a major role in weight fluctuations. It is known that the female body can start to gain weight up to seven days prior to menstruation and then drop again once the cycle stops. Premenstrual weight gain can range from half a pound to ten. Issues such as infrequent bowel movements or larger meals the previous evening can also impact scale weight as the large intestines can carry quite a lot. Most importantly, these small and frequent weight fluctuations will not necessarily affect your body fat levels; they are usually just an indication of water weight changes occurring. Take away: During your menstrual cycle your weight can dramatically change your scale weight due to water fluctuation. To summarise, the scale has its place to track if you’re moving in the right direction depending on individual goals but don’t become fixated with just numbers if you truly don’t have the larger picture in view. If you choose to use the scale here’s my advice, use the same scale in the same environment on the same floor every time, as reading can differ on different surfaces. Weigh yourself in minimal clothing, at the same time, every day/week, ideally first thing in the morning after your toilet use, log it down then at the end of the week, get an average. Claire in the County Claire Thayers sits back and watches all the sporty action ell the Olympics are over… I own up I was glued to it all. From the diving (did you see those ‘budgie smugglers’ too small for a baby wren?), to the eventing (didn’t our team look great in their tails in the Dressage), to the six-pack in the pool of our new golden boy Adam Peaty (are those bodies for real?). As for our boys in the gym…how do they do what they do? I watched in awe and wondered if I could have a go – swinging off the lights in the lounge… but maybe not, the ceiling’s not up to the weight! The shooting – I should love it but it’s not a TV sport let’s be honest – talented as they are. Now as for the rowing – that is more interesting, again obviously their skill in the water, their strength, their true grit – nothing to do with their physic you understand. I loved the rugby sevens… I even enjoyed watching the women, they were inspiring and felt exhausted watching them all. There’s nothing like a bit of sofa sport – especially with a G&T and some nibbles – what’s not to love? But it’s over and the post Olympic blues kick in…as the nights shorten. I love the spring, I cope with summer (not good with the heat and flies and

sadly the bingo wings don’t look great in sleeveless dresses), I love the autumn (thick tights, flat shoes, warm scarf, classic coat) but dread the winter… the dark nights, the rain, the wind and the fog… but what gets me through … Rugby and Racing. I lived in Cornwall for 17 years and I couldn’t wait to return home to the Cotswolds – so many people asked me ‘how can you leave the sea?’ EASY… my passions are here (and I am not talking about the gentlemen of the county I hasten!). Yes there is rugby in Cornwall – the Cornish LOVE their rugby and I have great memories of watching the Pirates in Penzance shouting…Give us a P, give us an I, give us an Arrrrrrrrrrrrrr! Meeting friends and singing Trelawny afterwards over a pint of Tribute and a pasty were great fun… but Kingsholm is where my heart is. Yes I have been to Exeter and Newton Abbot to enjoy a bit of racing (Exeter is lovely but Newton Abbot – bit of a shock to the system – more Aintree attire that’s all I will say) but there is nowhere in the world as wonderful as the hallowed turf of Cheltenham. So, the RIB was sold, the blue and white striped tops and shorts packed away, and the ‘all weather’ gear back on

the coat rack, with Timberlands and loafers below – BRING IT ON. When I walk to Kingsholm the atmosphere builds the closer you get to the ground – I love driving in to see the glow of the flood lights on a winters afternoon… the smell of the burgers, the steady stream of red and white jerseys walking to the ground, and most of all the banter. Same with racing – every walk of life goes racing and everyone is united through their love of racing, a desire to talk about the last winner, tips for the next race… especially the Irish. So ladies – if you are single and ready to mingle, don’t go onto the depressing dating sites, just get yourself out there and enjoy the best the Cotswolds has to offer - there is nowhere better to meet people than at the bar, be it Prestbury Park or Club 1873. My top tip - do your homework, nothing worse than trying to hold a conversation with someone pretending you know who ‘Laidlaw’ is or who ‘Nichols’ is without knowing the basics. Cotswoldia Angela Chancellor in Mounting into the world of Equine Romping can hardly contain myself; I am sitting here at my desk with fingers frolicking merrily over my keyboard like giddy foals in springtime. That would work better with lambs wouldn't it but I have horses on my mind as I am looking forward to great Cotswoldian, Jilly Cooper's new novel. The man who set many a girls heart (and other parts) a quiver, will be back in our dreams from September. Will he have mellowed? Last seen knee deep in home baked apple pies with Taggie, the woman who finally domesticated him, will he have grown a little portly I wonder, jowly even? Shudder the thought! Jilly, I am sure, knows we do not want to read about out of shape has beens. We may fancy a silver fox but we still want thighs of steel, piercing looks that make our hearts skip a beat and many other fine qualities you might want in a fine specimen. I think we can be fairly certain we will not be subjected to chapter upon chapter describing Taggie's sweetness, her wonderful cooking skills and any cottage garden/animal sanctuary she might have installed at the marital home. Thankfully, Jilly Cooper still very much has her wits about her and 'Mount!' is not destined for the kindergarten curriculum, so I expect we can look forward to some good oldfashioned fun. The plot follows Rupert Campbell-Black taking his favourite stallion 'Love Rat' on a round the world tour in pursuit of title 'Leading Sire of the Year'. Leading sire is the horse whose progeny or offspring have won the most races or, more importantly, clocked up the most prize money. Will the combination of gallivanting all over the world and Rupert's unbridled desire to succeed, lead him to stray from his devoted wife? Certainly he will face many challenges along the way as the ladies, both fictional and non, have always found him irresistible. Country Life magazine's tongue in cheek guide to being a lady last year included the stipulation that one must be ‘secretly in love with Rupert Campbell-Black’. Mount! is published on September 8th

so we will have to wait until then to find out what the cover will look like and one thing is clear, that the readers faithful will not be wanting some dull watered down or ghastly politically correct cover. The outrage following a reissue of the 1985 novel Riders, which had been redesigned to move a hand from touching a woman's bottom to a more modest position on the hip, resonated through the land. ‘Lots of human nookie’ has been promised in the forthcoming book, so there will be plenty of romping to look forward to but while researching her material in stables it was the equine romping that proved an even greater source of inspiration with one stallion, according to Jilly, only fancying greys so a sheet had to be put over any coloured mares.

The researching of equine romping is indeed a most interesting subject, which was certainly very distracting to me when I was writing my article for the Cheltenham Festival in March. Sadly I was unable to pursue this angle at the time, as most horses in jump racing are geldings, eliminating my opportunity to explore and share the fascinating

In the world of flat racing the stallions are often 'retired' at the peak of their racing to move on to their 'work' where the really serious money is made, covering mares from dawn till dusk, with some top stallions being to able to command £50 K a pop or more. With sums like these to be made, it is no surprise that the covering shed is run like clockwork with a schedule often starting at seven in the morning and going on every four hours or so throughout the day until eight at night, with the option of a last slot at midnight if demand is particularly high. That is indeed a pretty active schedule and one most men could only dream of, let alone being paid for the pleasure; imagine! The lady in question even has her tail nicely tied up and washed, dons a leather cape to prevent overexcited biting and to top it all off, wears a nice pair of boots on her back legs in case she kicks the stallion, as a kick in the knackers can put the poor chap out of action for 10 days, which is a rather expensive holiday. The mare doesn't come too short as she may get a double dip. Prior to her covering by the sperm donor, she gets 'bounced', as I believe the term goes, by the teaser stallion to get her in the mood but the poor chap has to wear a giant sized condom to avoid expensive disasters. As you can see it all sounds quite saucy and believe me I have barely scratched the surface, plenty of opportunities for innuendo with lots of material to inspire a jolly good Jilly bonkbuster. I for one can't wait and am not sure will I be able to restrain myself until my Christmas stocking!

RIP JT Cotswold Style’s Racing Expert Nigel Aplin pays tribute to one of the greatest jockey’s of the modern era here are names that shouldn’t be spoken of in the same way that others are spoken. There are words that can’t be written to describe the pain that some endure and there is bravery that is beyond the comprehension of most. JT McNamara was a man, a jockey, who embraced them all. John Thomas "JT" McNamara (8 April 1975 – 26 July 2016) was an Irish amateur steeplechase jockey born in Limerick. He won over 600 racecourse victories during his career. He had partnered with Teaforthree to secure victory in the Diamond Jubilee National Hunt Chase at the 2012 Cheltenham Festival having been the 5-1 favourite. He won the same race in 2002 on Rith Dubh and was successful in the Glenfarclas Cross Country Handicap Chase with Spot Thedifference three years later and won the 2007 Foxhunter Chase on Drombeag. At the Cheltenham Festival on March 14, 2013 JT fell at the first fence in the Fulke Walwyn Kim Muir Chase on Galaxy Rock. The fall fractured McNamara's C3 and C4 vertebrae. He was flown to Frenchay Hospital in Bristol and was initially kept in an induced coma after recovering from neck surgery. He

Every time I think about him, it makes me smile and I think that’s the greatest thing you can say about anybody.” was the first jockey to have been paralysed on riding at a British racecourse since Wayne Burton suffered a serious head injury in a fall in Exeter in March 2008. In June 2014, 15 months later, McNamara returned home to Ireland in a wheelchair. He suffered complications in July 2016 before being transferred to University Hospital Limerick and then discharged to spend his final days with his family. He died at his home on 26 July 2016 at the age of 41. McNamara was married to Caroline and the couple had three children and it was Caroline, who brutally brave and stoic nursed him through the utterly ruthless and totally crippling injury. Alastair Down described her as ‘a woman who is nothing less than a triumph of

humanity. Tough, tender, utterly resolved and fighting her husband's corner with a heart the size of Limerick.’ An exceptionally emotional AP McCoy said of JT, “He was a brilliant man and he was a brilliant jockey too and it’s very sad circumstances - but I think it’s important we remember him as a brilliant jockey and as a brilliant person, because he was that.” Mick Fitzgerald, a Grand National winning-jockey who was forced to retire from riding after suffering neck injuries in a terrible fall from L’Ami at Aintree in 2008, also spoke of McNamara’s resilience. “The only thing I can say about him is he was a real fighter,” Fitzgerald said. “All he ever wanted was to be there for his family and he just loved being home. The greatest thing of all is he was able to do that for the last few years of his life. “He’s a real inspiration to a lot of people. Partying with the Horses Kate Justice expresses the delights of Gatcombe Park So, it's back to school. I know a lot of parents will be breathing a sigh of relief here! I actually, feel quite wistful. I've had a lovely time with the kids. We did day trips, a bit of camping, watched some of the Olympics and went to a few horse shows. One of the highlights was The Festival of British Eventing at Gatcombe Park. This is the home of Princess Anne – and what an amazing place. Admittedly, it might not be the same in pouring rain but this year, the weather was fantastic. Being able to picnic on the lawn of the Queen's daughter's house does add an element of grandeur to your day, whatever you're doing... but when I'm also able to watch the country's top riders in front of my nose despite it being the middle of the Olympic Eventing on the other side of the world, I'm like a pig in the proverbial. The big class is the British Open Championships and I had a fiver on Oliver Townend to win, which he did. He's pictured looking chuffed with his result. How about that for an enormous rosette? Anyway, I needed no excuse to celebrate. The shopping is exceptional too - I found some fantastic new boots, a cashmere jumper and my daughter shopped for a matching hat and belt (and about 20 dog toys for her puppy, who had the best day of his life being led about and fussed over by everyone). There was an entire bar in a double decker bus and Pimms on tap from a VW camper van. I didn't think the weekend could possibly improve until my best friend Helen found a luxury champagne bar at the top of the hill in a teepee. We enjoyed a glass of Pol Roger while looking out across the grounds at first class sport, with the Olympics on a TV behind us. (As you can see from the second picture)! In fact, there wasn't a single dull moment in the two whole days I spent there. Once the arena jumping had finished, the organisers trotted out one entertaining display after another. I found myself jumping up and down 114 SEPTEMBER 2016 COTSWOLD STYLE

“Being able to picnic on the lawn of the Queen’s daughter’s house does add an element of grandeur to your day...” with excitement during the Shetland Grand National. It was addictive and so much fun! This was followed by a display from The Devil's Horsemen Cossack Riders. The name sums it up rather well - it involved the riders galloping full pelt across the arena while diving alarmingly, head first towards the ground and still clinging to the horse with their legs, only to arrive at the other end sitting upright again. How they ever came up with this sport I have no idea. It's a treat to have such a great time watching such an impressive list of who's who of the horse world performing and competing on your doorstep – and during the Olympics,

it proves home grown sport continues to expand. Zara Tindall was also competing, coming 11th in the Championships and her brother Peter, and father, Captain Mark Phillips, is the Chairman of the Festival. It gives the whole event a wonderfully contradictory atmosphere. With The Princess Royal as host and the best horses and riders in the world taking part there is an air of nobility but it's a family run event - that also holds a team Pony Club show jumping class, so the ambiance can be rather jovial, very relaxed and somehow, safe. It's also in the heart of the Cotswolds, so expect to bump in to everyone you know. Next year, the dates are 4-6th August. I can't wait to see you there.
