I

n a recent initiative by the heads of chefs associations of Islamic countries a conference was organized in Istanbul, Turkey. For the first time in history, the idea of forming an international forum to promote cuisine and the culinary traditions of Islamic countries was brought on table and approved with consensus by all the delegates of the conference. Thus, World Islamic Culinary Society (WICS), having it’s headquarter in Istanbul, Turkey, was founded unanimously by 18 Islamic countries. The most important feature of the event was Pakistan’s presence there with complete support from the Chefs’ Association of Pakistan (CAP), represented by the writer as Secretary General of the CAP. Like on many other occasions at international forums, this time again Pakistan played a very vital role in the formation of WICS as a founder member.

The leadership of Chefs’ Association of Pakistan has played a significant role in bringing the Islamic countries closer to form WICS. In future, the role of Pakistan will become even more potent in building a strong rapport and goodwill among the Islamic countries by creating opportunities of sharing culinary knowledge and traditions through culinary competitions, exchange programs, seminars and workshops across its member countries.

Pakistan’s initiatives in organizing and hosting events as a founder member of WICS will impact the union of Islamic countries in various ways. It will help explore and unfold the culinary traditions imbedded in our culture and lifestyle spanning over centuries and linking with the other Islamic countries. It will help develop and promote friendly ties with the member countries. It will promote travel and tourism from the member countries to Pakistan. The formation of WICS is just the beginning of a new era of culinary arts which will pave way for highlighting, promoting and showcasing centuries old Islamic culinary traditions in front of the world.

The China-Pakistan Economic Corridor (CPEC) is a strategic economic initiative that has attracted the world in general and regional countries in particular. CPEC has changed the negative security narrative into an exceedingly positive economic narrative for Pakistan. Pakistan is now on the road to progress and prosperity.

The concept of the Pakistan International Culinary Festival 2017 will play a vital role in exploring and developing immense talent of Pakistan for promoting a soft image of the country in the region and globally.

The cultural and family festivals in a country reflect the soft image of its nation. It shows the peacefulness, tolerance and resilience of a nation. Pakistan has been facing big challenges of security in the past decade but through the concerted efforts of the government and the military leadership, Pakistan has emerged as a peaceful and trouble-free country in the region.

COTHM Pakistan and Dubai, in collaboration with Chefs' Association of Pakistan (CAP) Lahore Restaurant A s s o c i a t i o n ( L R A ) , a n d To p a z Communications (Pvt.) Ltd. marked the beginning of a new era of family festivals in Pakistan. They jointly organized one of its kind Family Festivals, the 'Pakistan Culinary Festival 2016' from December 01 to 04, 2016 at Al-Hamra Cultural Complex, Gaddafi Stadium, Lahore. 'Pakistan Culinary Festival is the brainchild of a thought that the beauty of this nation, its heritage and infinite colors, choicest flavors and unlimited potential, be depicted in a MONTHLY HOSPITALITY PLUS

manner which is traditional and true to PAKISTAN. This year Pakistan International Culinary Festival (PICF-2017) will take place from November 24th till November 26th. The PICF-2017 is being organized by COTHM the Chefs' Association of Pakistan (CAP), TOPAZ Communications Pvt. Ltd and Lahore Restaurant Association (LRA).

Teams from the World Islamic Culinary Society (WICS) and other International teams will participate in the Pakistan Culinary Championship (PICC-2017).The spirit of this festival emanated from the idea of projecting a positive and soft image of Pakistan across the globe. The PICF-2017 will consist of three tiers of culinary competitions ranging from school children to the university students and culminating into the competition among the professional chefs from five star hotels, restaurants, cafes, catering companies and bakery sector.

The first Pakistan Culinary Championship 2016 initiated the journey of exploring the unmatched talent of the Pakistani chefs. The cuisine of Pakistan has its own idiosyncrasies and a depth beyond imagination. The culinary championship

provided the chefs to showcase and demonstrate their unique talent and skills to prove that they are no less than any other nation on the map of earth!The crosscutting theme of the festival was to promote the Pakistani cuisine internationally.

Launch Press Conference of the Pakistan International Culinary Festival (IPCF) 2017 was held at COTHM. National Women Culinary Team of Pakistan (NWCTP) was also announced during the Press Conference. The festival will feature the top restaurant brands, culinary competitions, cultural performances, live music, magic shows, kids play land, seminars and a host of festivities for families.

exchange to the country. Festivals like Gulffood have become major economic contributors to the national exchequer.

Mr. Ahmad Shafiq, CEO of COTHM Pakistan & Dubai, said that the key objectives of this festival are to promote food, culture and heritage of Pakistan and develop and project a soft image of Pakistan

internationally. This festival will be held annually in all major cities of Pakistan, carrying the true spirit of the food culture across Pakistan. Such events, he said, can play a vital role in creating a culture of tolerance and provide people with opportunities to explore the good things happening in Pakistan.

When did you join the hotel industry and why?

I joined this industry in early 70s. Actually we are two brothers, both engineers, but I joined hotel industry. I loved the job and I thought there is a career in it. I joined as a trainee, and then I left for Dubai to work as a cost controller. After that I planned to go to West Germany, Heidelberg, the heart of West Germany. It is a city where Allama Iqbal used to study. When I went there, I did not know German language. So rst of all, I had to learn German language. In the morning, I did German language course and my evening was consumed in dish washing, so as soon as I learnt German language, I got a better job. I became bar tender in a hotel. Then I did my Diploma and later in 1979 left for USA to further study and build may career. I was Director Food and Beverage in Holiday Inn and I became General Manager of the year twice in California. I came to Pakistan Because of my parents and I felt like whatever I learnt in West Germany and United States I should practice in Pakistan.

I joined Hashoo Group Hotels and served at various senior management positions. I was serving as Director Operations when I left this group in 2014. I then joined Faletti’s hotel as Director Operations.

Your key to success?

My key to success is my rm belief in teamwork. I always try my best to give excellent service to my clients, to give excellent service requires hard work,

Faletti’s is a very beautiful and one of the oldest hotels of Pakistan, where Quaid-e-Azam used to stay commitment and dedication because I know that the customer is one who is paying our salary. So customers should leave our hotel happily. Any property where I go, I rst of all take care of the staff there, because they are the ones who keep our customers happy. I always treat my customer like “a King” and always provide personalized services. I always create a family-oriented environment in the hotel, so that the staff can work with loyalty and honesty. Mostly, you will nd me on the oor taking care of my customers, getting feedback from them.

Some good hotel brands are already nearing opening of their new properties in Pakistan. Very soon, our hotel industry will match with Malaysia and Dubai.

What qualities make one suitable to serve in the hospitality profession?

Very good question. On top of these qualities is a good communication skill.

Customers’ expectations are very high nowadays. We try our best to come up to their expectations. One must have a pleasing personality to meet customer expectations. If we go 30 years back when people did not know what the service is, what the room is, but now the customer is very much aware of these services and is quality-conscious. So we have to keep our eye open to ensure the best services.

What are the latest trends in this industry these days?

Actually, right now, so many restaurants are coming up like mushrooms. You can see tough competition at the moment which is a healthy sign. People always look for the best and I think we have got so many good restaurants in Lahore.

Whenever we need trained staff we always approach COTHM. Your favorite country?

My favorite country is Germany. People there are very hospitable, welldisciplined. It is a very well-organized country, but I have been to Europe, France, Scandinavian countries, Sweden and USA etc.

Your favorite cuisine?

I love Chinese Cuisine.

Since hotel industry is a very demanding industry and your role is very hectic, how do you manage worklife balance?

How many kids do you have?

I have got 3 kids; one son and two daughters. Daughters are married. My son is Assistant Director in NADRA.

You see, working in hotel industry is very sensitive and a very demanding job where you cannot keep everyone happy. We have to go an extra-mile to keep the customer happy because of the increasing competition. It’s not easy to maintain the work-life balance. All you can do is, making effort for achieving this ideal.

What message would you like to give to our readers?

I would like to advise the youngsters to love and take great care of their parents. If you want to achieve your goals in life, your parents’ prayers will help you. Right now, there are many challenges and tough competition to survive, so please work hard.

Are you satised with the quality of fresh graduates being trained by the hotel-schools?

COTHM is taking a lead in Pakistan and the CEO of COTHM, Mr. Ahmad Shaq, is playing a vital role in this context. He is an asset for this country. What he is going an extra-mile to promote this industry.

Straddling the border of the U.S. and Canada, three massive waterfalls, together called Niagara Falls, spill about 6 million cubic feet of water—from a maximum vertical drop of 165 feet—every minute.

Rapid Expansion In the 1990s the family made the decision to expand into other compliance areas and started to reinvest the company’s profit into development. This is still their philosophy today and Highfield’s research and development team is proportionally far bigger than most of its competitors. In 1995 the company launched a health and safety range, followed by fire safety, first aid, licensing and security products.

The year 2000 was a landmark year for Highfield as the strategy of becoming a ‘one-

stop-shop’ for corporate customers became reality when the company won its first contract with UK retail giant Marks & Spencer. Since this time the relationship has continued to grow and is still very strong today.

We have since built incredible relationships with many corporate clients including winning a contract with McDonald’s to provide an innovative customised package for their 15,000 managers.

Highfield Awarding Body for Compliance Formed Our growth even remained strong during the UK recession, and increased dramatically with the launch of Highfield Awarding Body for Compliance. This was driven by our customers asking us to become an awarding organisation. After a great deal of research, a decision was made that this venture was viable and there was the potential to make a significant difference within the industry. In 2007 Jason Sprenger (the current chief executive of Highfield) left his position as a senior solicitor with international law firm Eversheds to drive our application forward with regulatory body Ofqual. Please share your experiences as to how you started your career.

Well, the time when I started my career, there was hardly any established hospitality education institute in Pakistan so not only me but most of the hospitality bigwigs of that era used to land in the profession without any formal hospitality studies and so did I. My personal enthusiasm for the profession was developed when I realized that hotel were the center of all the high prole happenings.

Also whenever Pakistani or any international cricket team stayed at a local hotels I used to go there and loved watching them closely.

And that star-studded glamourous environment attracted me to the hospitality career and after some hardcore struggle I succeeded to join the Food & Beverage Department of Pearl Continental Lahore as a trainee.

How many years have you spent in this eld and what motivated you throughout your career in this eld?

Altogether, my hospitality career spread across over 25 years working with renowned local & international hospitality brands like; Marriott, Hilton International, InterContinental, Holiday Inn, Pearl Continentals, Avari and the very prestigious Organizing Committee of the Asian Games.

Talking about motivation, it has always been varying at each stage of my professional career like for instance; in the beginning when I was a trainee I used to idealize my F&B Manager Mr. Shakeel Ahmad and like him my passion was to be the head of the Food & Beverage Department. And in order to accomplish that desire I was motivated to improve my hospitality education and technicalities of the trade. By the time I was

the restaurant manager, I really wanted to have an international exposure and that took me to the Hilton International in Middle East.

Currently, being the head of the largest department of the hotel, my ultimate motivation is be the General Manager of prestigious property and I am pretty sure to get the opportunity in near future so my motivation keep switching with time.

Tell us something about the major challenges of the Hospitality industry these days in Pakistan?

Keeping in view the Pakistan perspective, our single biggest challenge has been the security situation in the country which fortunately is improving rapidly and remarkably and today our country is much safer & secure. But unfortunately this positive development is not being spread widely & effectively so it is

I believe that hospitality is all about having a truly generous, friendly nature and desire of serving others. the responsibility of all the stakeholders especially all the media to market this improvement inside and outside Pakistan so that the trust & condence of the business community could be restored.

The other major challenge our hospitality facing is the modernization of our operating systems which are too manual currently. We are living an era when globally this industry has literally gone Hi-Tech and rapidly moving further whereas we are still clinging to the past and relying on manual operations and record keeping systems which is a severe lack on our part and keeping us behind the rest of the world when it comes to competing with them. So there is need to initiate revolutionary measures to incorporate broader data based computerized operating systems in the hospitality industry which will help us initiating the comparative evaluations with corrective solutions.

Do you nd good human resource available here? Are there any challenges that you face while hiring people?

Individually, our people undoubtedly are the hardest working people and with the availability of some world class hospitality institutes, their professional education is also at par with the latest requirements. But same time the local human resource is lacking the on job training & exposure opportunities while completing their hospitality studies. This leads to a nerve-wrecking exercise for the organizations to go through very basis orientation before putting a newly hired personal into work.

So our hospitality institutes must take actions to incorporate much more practical real time training along with the theory which could create a win-win opportunities both for potential candidates to resume jobs right after their colleges and also the organizations to secure ready to work human recourses. This will also prepare our students to have better likelihoods in the international job market and effectively compete with the other countries.

What do you look for when hiring a candidate?

Well it is a million dollar thought which makes a new candidate to steer through the very demanding and tricky job interviews. Despite the fact that relevant education & personality are two most desired qualities we should look for before even shortlisting the candidate, my personal preference is to look for a right passion in the candidate with a positive attitude. Understand the fact that hospitality is a very unique profession which is both rewarding and challenging. You must have the passion to work with people and for people and possess the nature of serving others. One could always improve his/ her education & skill but the passion and attitude always come from deep inside and not very easy to inculcate articially.

This profession is very demanding. You have to work extensively for extra hours. How do you maintain this work-life balance because your personal life tends to get ignored generally?

There are wealth of hospitality professionals labelling the hospitality jobs as very demanding and I principally tend to agree but personally I am not convinced at all to interpret the long hours as hard work or a smart answer to the demands. Actually, it does not matter how many more hours you spend at work, they cannot guaranty efciency and success. One of the modern working strategy for today’s executives is to be better organized and productive in less possible time. In order to concentrate well at workplace, it is very important to enjoy a happy and smooth personal life as well which is very much possible by putting in place the core management principals of planning, organizing, MONTHLY HOSPITALITY PLUS

prioritizing & scheduling. And by following these strategies, I have accomplished a perfect balance between my professional & personal life.

Any advice for the youngsters who are aspiring to join the hospitality industry?

I believe that hospitality is all about having a truly generous, friendly nature and desire of serving others. Understand the fact that undoubtedly the hospitality is a fascinating & glamorous profession with exciting opportunities locally & globally but same time it is very demanding and challenging. A challenge to work with various kinds of people, challenge of being ready for the last minutes changes, being ready to work very hard, work in odd hours and days. It is a career about constantly striving to look for innovating ideas which could positively surprise both the customers and the competitors.

So all the students who are interested to undertake hospitality as a career must do the self-evaluation about having these characteristics and if you have them, you are absolutely prepared to take up these challenges. THE HOTEL ROOM OF THE FUTURE

Take a spin back to 1950, and you’ll be sure to find a well written and animated article on the subject – the hotel room of the future. It’s an interesting subject for players in the hotel space, a culmination of unhinged literary creativity, and fairly logical projections based on the trends and technology of the day.

M

ore than ever, hoteliers will in the future strive to offer unique and personalised experiences to the guest, and to immerse him in an environment that is closest to his ideal throughout his stay.

The changes and advancements in the hotel business have always been driven by this quest, and with technology, the leverage is greatly increased.

In the hotel business, there is such a race towards automation and robotics that in a couple of decades from now, hotels are expected to re-introduce human concierges and attendants. This will be in a bid to revive the personal touch that will be missing from a lot of service provisions. One can hence expect, that the stoic, friendly, discreet, and polite hotel attendant will be a character that is re-introduced after robot butlers become less popular.

Window panes will be transformed into a gateway to the guests imagined destinations – a stretch of the Sahara, or the heart of the Amazon… The walls will change colours through light to match the guest’s mood and temperament. The boring mirror will be transformed to an interactive surface through which guests can input room commands or access the internet. The guest is expected to be immersed into a realistic augmented environment where theme-specific ambient sounds, smells and feel are programmed to his taste.

It’s not all bad news for technology however, as it’s expected that technology drives augmented reality which in turn drives seamless guest-specific customisations. The hotel will eventually evolve past one block of rooms with similar themes into a grouping of less dependent room units that are differently customised on an as-needed basis to have themes and settings required by the guest.

The gym experience should also be affected as rooms are even today, being merged with the gym. Simple set-ups like the treadmill or the workout bike can be coupled with augmented reality to provide outdoor-like experiences for the guest as they exercise – a walk, jog, or run through Thames Park, Central Park or the Harbour of Sydney – all from atop a mechanical contraption.

Interactions that guests traditionally have with rooms are driven by sight, smell, and touch. In the future, these interactions will be redefined with at least a fourth added – sound.

The bed. This is the single most important and prominent feature of any hotel room. One imagines that in years to come, the science of levitation is fully mastered and that guests will be treated to resting on floating masses of

warmth and softness, with an ever so gentle rock now and then as guests retire for the day.

Voice control, a novelty of sorts today, will tomorrow be a norm. All functions and room settings that are typically controlled by a button or a tap will be controlled hands-free in tomorrow’s hotel room, all with a voice command or two. Already, Starwood line of hotels such as Sheraton Hotel, and Le Meridien Resort are already experimenting with this feature.

Several other impressive and guest centric features that revolve around technology will define the future of the hotel room. All the advancements will be geared towards making the guest king, a customer to be tended to and fêted on one hand, a guest who knows what he wants and is unafraid to take charge on the other hand.

It will be all about the guest, giving them control, providing him impeccable services, and customising every aspect of his stay to the closest that technology’s complex algorithms will allow.

JEWELS OF LAHORE PART- II

unday being a regular ‘working’ day for our cycling group of young professionals – with this abe old hand alongside – we proceeded on our second tour to discover some lesser known monuments of the Mughal era. This time the destination was Mughalpura, a locale that carries its name after the Mughal nobility and aristocracy of Lahore which had set up an exclusive residential estate, replete with gardens, mosques and tombs. We shall use the GT Road as a loose dividing line between Begumpura in the north, and Mughalpura to the south, to differentiate between the two locales

by Kaiser Tufail and easily spotted a domed tomb just south of the road, inside a fenced enclosure. The dilapidated state of the tomb was deplorable, though the fascinating architectural elements of what remained were worth a brief scrutiny.

But first, we had to settle who is the actual occupant of the tomb.

Department of Archaeology are clueless, can be confirmed by the display of two conflicting information boards at the entrance. One of them claims it to be the tomb of Buddhu, a brick-maker who lived in the mid-seventeenth century; the other board says that it is the resting place of the wife of Khan-e-Dauran Bahadur Nusrat Jang, a favoured noble of Emperor Shah Jahan. For want of her maiden name, we shall call the lady Nusrat Begum for this discourse.

While Buddhu’s influence to be able to muster a plot of land amidst the prized estates of the Mughal nobility must seem outlandish, his having left a fortune for the construction of a grandiose tomb is equally incredible. His nearby brick kiln (Buddhu ka ava), whose remains can still be seen, could have led to the erroneous association with ‘Buddhu’s tomb’.

Khan’s real name was Khawaja Sabir. One wouldn’t be surprised if the Railways employees yet again re-purpose the tombshrine in the name of one more Khawaja!

The much ado about Nusrat Begum’s tomb occupancy is less significant, I thought, than its architectural composition which needs attention. Square in shape, the main chamber is constructed in massive brick masonry, with an arched opening flanked by two recessed arched panels on all four sides, creating a baradari effect. The low dome rests on a high circular drum, which in turn rests on a short octagonal base,

resulting in a gradual ‘smoothening over’ from the main square structure upwards. On the whole, the tomb has an overbearing appearance, which must have been softened somewhat by Kashi-kari mosaic tiles, remnants of which are visible in some portions of the dome.

Ali Mardan Khan’s Tomb Backtracking about one kilometre from Nusrat Begum’s tomb, we turned right, heading south on Wheatman Road (corrupted to ‘Wehtmun’ by the Punjabis).

After about half a kilometre, we came across two boards alongside a wall, indicating Ali Mardan Khan’s tomb and the nearby Hamid Shah Qari’s shrine. A steel gate opened into a strange narrow vestibule with an iron lattice

Khan-e-Dauran Bahadur Nusrat Jang was a favourite amir in Shah Jahan’s court, having gained the goodwill of the emperor for suppressing a rebellion in Deccan. He died in 1659 and was buried in a tomb which lies 1.5-km to the south-east of his wife’s tomb.

Since his own tomb lies squarely in Pakistan Railways lands and is not accessible to the public, some people have further added to the mystery by assuming Nusrat Begum’s tomb to be that of her husband’s.

Intriguingly, a second grave in the begum’s tomb brings this riddle to a head. Not yet done, the enigma gets really knotty when we learn that Khan-e-Dauran’s own tomb has been re-purposed as a mosque and a shrine by employees of the Railways under the name of Khawaja Hasan’s, though the MONTHLY HOSPITALITY PLUS

supported, the bigger outer dome could be built with ease. Better acoustics (for mosques and cathedrals) was an added bonus. The smaller and relatively flatter inner dome also simplified ceiling artwork.

About a hundred metres north of the tomb is an utterly dilapidated gateway to the funerary garden, that once existed. It has remnants of Kashi-kari mosaic work, and is quite similar to the one at the Gulabi Bagh Gateway in Begumpura. The designer of the ‘Versailles of Punjab’ as Shalimar Gardens have been called, deserved a better-kept tomb complex, we thought.

Arriving at our destination in a swarm of over a score cyclists, and with the neighbourhood in complete awe, we went through our usual motions of photography and a bit of adventure. Some clambered up secret staircases and discovered another double-shelled dome, while others explored for a roof, all 400 metres of the way. A chowkidar, who had done us a special favour to let us in on a Sunday (closed to public), welcomed us heartily, for we had coordinated earlier and had promised to be good to him.

Ali Mardan Khan was a Persian Governor of Kandahar who became a turncoat to his master, Shah Safi I of Persia, after having been bribed handsomely by Emperor Shah Jahan in 1638. Ali Mardan quickly found favour in the new court as Amir-al-Umara, and was granted governorship of Kashmir and Punjab. He is best known for his engineering skills in various public works, including a canal running from River Ravi to Shalimar Gardens, and a similar canal in Shahjahanabad, Delhi. He died in 1657 and was buried in the tomb that he had built for his mother.

high drum in Timurid style. We discovered a remarkable double-shelled feature of the dome when one of the youngsters called us from somewhere above. We followed his calls, climbing up a special stairway, which took us to the top of the inner dome. There we stood in the dark and dingy gap between the two domes, much like school children who had discovered a secret passage to a treasure trove. We were surprised to see candles, a prayer mat, and knotted ribbons on a streamer, and wondered if these were signs of transition to a shrine.

Indeed, the subterranean chamber of the tomb which houses the grave, had been treated as a shrine – as well as a potsmoking den – by unscrupulous characters, the chowkidar revealed, which is why entry to the public has been restricted.

The tomb is an imposing structure, with an octagonal main chamber, with eight arched, deep-set alcoves, all opening to the interior. Atop the corners of the octagon once stood Rajasthani chhatris, of which only two survive. The dome stands on a

The tomb is octagonal in shape, with eight deep-set alcoves, each having an entrance arch at the ground level, and another arched opening at the upper level the upper floor galleries full of graffiti that Pakistanis must always bless their imaginary beloveds with.

The occupant of the tomb carries a longwinded title viz, Khan-e-Jahan Nawab Bahadur Zafar Jang Kokaltash. He found favour with Emperor Aurangzeb for capturing his recalcitrant brother Prince Dara Shikoh, who was promptly executed for heresy. Bahadur Khan was then put in charge of Deccan to bring matters under control there. He also served as Governor of Punjab. He died in 1697. He is often confused with another Khan-e-Jahan, a nobleman in Emperor Akbar’s court.

The tomb is octagonal in shape, with eight deep-set alcoves, each having an entrance arch at the ground level, and another arched opening at the upper level. The brick tomb is bereft of any outward embellishment, though pigeon holes all over the building suggest a marble facing, since removed by, who else but, the Sikhs! The dome is slightly higher pitched, with an inverted lotus finial on top, giving it a more sinuous appearance than the classic Timurid ones that we had seen earlier. The historian S M Latif wrote in 1892, that the tomb was “surmounted by turrets with cupolas�, none of which exist today. He also mentions that the tomb was used as a theatre for the British military officers, when the adjacent Mian Mir locale was established as a cantonment.

We noted that the two noblemen Khan-eDauran and Khan-e-Jahan were essentially loyalists to their emperors, while Ali Mardan Khan did great public service to the Lahorites. In a fund-constrained regime, it is the latter whose tomb deserves major renovation, while the other two tombs could do with simple preservation, for the time being.

rance is the largest country in the European Union and the most popular tourist destination with some 84 million visitors each year. France is famous for fashion, perfumes, music, the most influential writers and a century old tour de France.

France is also known for its wines, cheese produce of staggering one billion ton each year and last but not the least, centuries old French gastronomy which has recently been awarded the UNESCO heritage status.

French National Day is celebrated on 14th of July each year and with that connection the Embassy of France in Pakistan hosted a prestigious reception in the honour of the Lahorites on 7th of July 2017 at Avari Lahore.

In conjunction with the occasion, the Avari Lahore also celebrated a 10-day long French Food Festival at its signature Kim’s Restaurant. The Festival was inaugurated by Her Excellency, the Ambassador of France, Mrs. Martine Dorance jointly with the Cluster General Manager Av a r i H o t e l s , M r. G r a n t Raubenheimer. The entire restaurant and the adjacent lobby were decorated with authentic French props such as; French flags, posters of French lifestyle and famous attractions and French city directional road signs together with world renowned monuments. The entrance of the Kim’s restaurant was converted into the famous Arc de Triomphe which glorifies the glamorous Shanzelize Street as well as a giant replica of Eifel Tower which literally transformed the whole venue into a mini France.

The overall atmosphere was so French that one feel like following, “Quand en France faire comme le font les Français”, When in France, do like the French do.

ourism is a growing industry in Pakistan. With more and more foreign investment and funding over the last few years, Pakistan has built its major road and air networks to cater mass movements of cargo and inter-city travel. Roads have been developed by several consultants from the Northern Areas all the way down to the Port of Karachi.

However, it is important to note that the government has not been able to take the tourism market seriously within Pakistan. Pakistan is home to a diverse number of tourist attractions.

The good news is, after a long time, the domestic tourism has witnessed an amazing activity which is indicative of the revival of domestic tourism in the country. Over the last few years there is an incremental increase in traveling of families to the northern region of Pakistan. Interestingly, they come from all parts of Pakistan.

According to government sources, northern parts of the country including Murree, Nathiyagali, Ayubia, Bhurban Patriata, Abbottabad, Swat, Naran, Kaghan, Shogran, Rawalkot, Nelum Valley, Leepa and GilgitBaltistan have been witnessing a unique surge in domestic tourism over the last couple of years.

The obvious reason for the growth of tourism is the gradually improving law and order situation in the country. The control on incidents of terrorism is a key factor that has led to encouraging people to leave their homes and spend their leisure time in hilly areas.

The domestic tourism always plays as a catalyst to pave way for the international tourism. It builds trust amongst the international tourists and invites them to join the domestic tourists. Now that the law and order situation in the country is under control and the foreign investment is pouring in, the

If I am not exaggerating, this unique rail route along the Karakorum Highway has great potential to become one of the top 10 rail journeys in the world because of the incredible landscape value of this region culture, centuries old civilizations, vast deserts, golden beaches of Makran to all the other natural and manmade attractions. But unfortunately Pakistan’s tourism potential has largely been untapped and no serious attention has been paid by concerned authorities to make it a major engine of economic growth for the country.

Ironically, government of Pakistan has totally ignored this sector and now Pakistan is almost a forgotten destination on the world tourism map. Pakistan lacks the good policies and government backing which might help bring

the tourism industry back on its feet. On top of this the tourism industry in Pakistan has been facing continues wrath of instable law and order situation as a result of post 9/11 wave of terrorism.

The mega project of Pak-China Economic Corridor between the two friendly countries which has been envisaged as a game changer by most of our economic experts also has enormous potential to revive Pakistan’s ailing tourism industry. The multi-billion dollar MONTHLY HOSPITALITY PLUS

joint venture will include road and rail link passing through the mighty Karakorum and Himalayas in the northern Pakistan. This road and rail route will pass through the most spectacular mountain ranges where we have world renowned high mountain peaks, long glaciers and beautiful valleys. In July 2006, China inaugurated similar railway link between Mainland China with Lahasa spanning over 1956 km including nearly 1000 km at an altitude of over 4000 meters.

This railway line has brought huge economic beneď€ ts to both Qingahi and Tibet and has become a major tourist attraction from its very beginning. In 2011, the railway line saw a record high of tourist number of 10 million compare with 1.8 million

in 2006 when it was inaugurated. Similarly the railway link between China and Pakistan passing through the mighty Karakorum will deantly attract millions of foreign and domestic tourists. While planning this rail link our government should also pay special attention to develop the areas along the route with the tourism point of view.

In order to fully materialize the great potential of Pak-China Economic Corridor, the

government should integrate the development of tourism related infrastructure along this route in the overall development plan. Tourist destinations in Gilgit-Baltistan, KPK, Punjab, Sindh and coastal areas of Baluchistan should be especially focused in the near future development agenda to take the load of future high ow of foreign tourists who will enter Pakistan through this scenic route via China. By developing tourism industry, other small and medium enterprise activity such as hotels, restaurants, transport, handicrafts, shopping, local recreational spots and local entrepreneurs get simultaneously boosted up and it create thousands of new jobs for unskilled and skilled workforce.

Far-reaching policy measures would need to be adopted by federal as well as provincial governments, so that the tourists who were scared away due to the terrorist activities may be attracted back to revive the tourism industry in Pakistan. Although in the post 18th Amendment scenario tourism is now a provincial subject but creation of a National Tourism Council at federal level by involving stakeholders from public and private sectors from all regions is the key to enhance coordination, international cooperation and to create harmony on the matters of common interest for the development and promotion of tourism on sustainable lines.

he cream of restaurants from Lahore is gradually seeping into the culinary map of the twin cities. English Tea House – the most recent addition to the capital – has been welcomed with open arms, and customers have been rolling in since day one. What started off a few years ago as a small café in Lahore has evolved into a popular restaurant, known for its lip-smacking Italian and continental platters.

In Islamabad, the restaurant is located in Rana Market, Sector F-7.

It seems a lot of thought has gone into planning the architecture. The twostorey red-bricked structure has teal window and door frames. A stunning garden trails the right side, and provides a satisfying view from an neighboring sunroom. Customers can also enjoy the outdoor seating area once the weather gets better. In the evening, the café is lit up by warm yellow lights, making the atmosphere cozy.

2. Neelum Valley, Azad Kashmir Opposite to the Keran sector of Indian-held Kashmir. From the Chella Bandi Bridge – just north of Azaad Kashmir’s capital Muzaffarabad – to Tau Butt, a valley stretches out for 240 kilometres; it is known as the Neelum Valley (literally, the Blue Gem Valley). Neelum is one of the most beautiful valleys of Azaad Kashmir, and it hosts several brooks, freshwater streams, forests, lush green mountains, and a river. Here, you see cataracts falling down the mountains; their milky-white waters flowing over the roads and splashing against the rocks, before commingling with the muddy waters of River Neelum.

3. Shangrila resort, Skardu In the extreme north of Pakistan, Skardu the central valley of Gilgit-Baltistan, is an epitome of beauty, serenity and wilderness. After Jaglot on the Karakoram Highway, a narrow road turns towards Skardu. During the seven-hour journey, one is greeted with several streams, springs, and the hospitality of the local people. After crossing the old wooden bridge built over the River Indus, one reaches Shangrila, a paradise on earth for tourists. It is a famous tourist spot in Skardu, which is about 25 minutes away by drive. Restaurant in Shangrila rest house is highlight of this place, which is built in the structure of an aircraft.

4. Gojal Valley The Gojal Valley borders China and Afghanistan, with its border meeting the Chinese border at Khunjerab — 15,397 feet above sea level — and remains covered with snow all year long. In the north west, there is Chiporsun, whose border touches the Wakhan region of Afghanistan. Wakhan is about six square miles in area, after which starts Tajikistan. The Karakoram Highway which connects Pakistan to China also passes through Gojal Valley and enters China at Khunjerab.

5. Deosai Plains Deosai is located on the boundary of Karakoram and the western Himalayas, and at no point it is less than 4000 meters above sea level. It remains covered with snow for 8 months. The rest of the year, it hosts a range of beautiful flowers of all hues and colours, but not a single tree is found in this plateau spread over 3000 sq. km. Sheosar lake is also part of this. This lake is one of the highest lakes in the world. The deep blue water, with snow-covered mountains in backdrop, and greenery with wild flowers in foreground offer such a view in summers, that one is left amused for the rest of his life.

6. Rama Meadow Just a little ahead of Rama Village, which is 11 kilometres from Astore, is a beautiful and serene plain called Rama Meadow. If you ever happen to find yourself in plain, ice-cold and milk-white water flowing in streams, sheep and cows grazing in peace, pine trees, Chongra’s ice-covered peak in background, and Nanga Parbat’s southern ridge is in view, then you are probably in Rama Meadow.

7. Paye Shogran had seen an influx of tourists, who trampled over its beauty, leaving it jaded. Siri Paye, nonetheless, still retains its strong attraction for tourists as a green plateau on top of the Hindu Kush. Engulfed in clouds and fog more often than not, it entices many as a rendezvous which allows one to observe Nature play peek-a-boo. Here, you see numerous small ponds filled with freshwater, meet horse-riders wandering about, and smell wild yellow flowers blooming everywhere. With the Makra Peak set as a backdrop, the beauty of the Siri Paye meadows comes to life.

8. Ayun and Bamburet Valley Ayun district is a village of Chitral. Located 12 kilometres south of the city at the confluence of the River Bamburet . There are no words to describe the beauty of the mountains surrounding the village. Beyond Ayun valley is Bamburet Valley, it is one of the three Kalash valleys.

Bamburet is nearly two-hour journey from Chitral. Locals trace their roots to Alexander the Great and Greece. Bamburet valley is a picturesque valley with lush greenery and mountains that give you a sense of calm and solitude.

9. White Palace Swat White Palace Marghazar is the only breathtaking location in the Swat district that’s situated at a distance of around 12 km from the city of Mingora. Not only do tourists visit Marghazar for its natural beauty and pleasant weather but also to visit the historic White Palace (1941), built during the era of Swat state. After the White Palace was constructed on the directives of the founder of modern Swat state, Miangul Abdul Wadood also known as Badshah Sahab, Marghazar became the capital of Swat state during summer season. Even today, after seven decades, White Palace remains an attraction for tourists.The Palace doesn’t just look beautiful in summer; even during winter it remains enchanting especially after snowfall. 10-Ranikot Fort Ranikot, with a circumference of about 26 km, is the largest fort in the world. However, this has not been enough to convince the authorities to develop it as a major tourist attraction. This fort is easily accessible from Karachi through the National Highway. After departing from Karachi, head to Dadu through on the Indus Highway. The road is in excellent condition. It's an hour-long journey to San, the home of Sindhi nationalist, GM Syed. A little further from the town there comes a diversion. A rusty board announces that Ranikot is some 30 km away. Even though the road is in pathetic condition, the distance can be covered in 30 to 40 minutes.

Students from COTHM Johar town campus, COTHM Main Campus, COTHM Faisalabad and COTHM Gujranwala, competed in professional category and from other colleges and universities also participated in amateur category in the LIVE cooking competition. Students from University of Education, University of Central Punjab, Kinnaird College, College of Home Economics, University of South Asia, LUMS, UVAS and UMT won bronze, silver and gold medals.

Certication Ceremony for the winners of the LIVE Cooking Competitions, was held at COTHM. Dr. Hamid Jalil, Executive Member Technical, (PHDA), graced the occasion along with Mr. Ahmad Shaq, CEO COTHM Pakistan & Dubai. They awarded certicates and cash prizes to the winners. Mr. Ahmad Shaq highlighted efforts of the Punjab Halal Development Agency in creating awareness about Halal foods. NOSHAKH RESTAURANT

ast week, we went to Noshakh in Lahore, an Afghani restaurant, for a food tasting. We were pleasantly surprised by the variety and authenticity of the flavors and how warm and hospitable the management was. Lets begin with the overall ambience of the restaurant; it spanned across two floors and was spacious and bright. What did catch my eye though, was the option to dine in a traditional Afghani way. Although they had regular tables and seats as any restaurant would, they also had open compartments where one could sit on the floor on comfy cushions and enjoy a little bit of culture, while being served with A FEAST FIT FOR KINGS. We started off with some appetizers; the Fatoosh salad alongh with Hummus and Mutabal ( a hummus like dip with seeds in it- which was an absolute delight). We moved on to skewers of chicken and beef Kabli Kebabs with ‘garma garam naans’ straight out of the tandoor. Might I add, I have never tasted Kebabs so scrumptious and juicy in my life. With the vast variety of new restaurants that have been MONTHLY HOSPITALITY PLUS

launching, one expects mostly basic performance from the majority. However, Noshakh was truly exceptional. As a lover of Afghani food, I have rarely come across such an authentic Afghan cuisine in Pakistan.

Just when we thought we were done with all servings, we were caught by surprise.

Every time we’d finish one dish, we’d see waiters walking over to us with five more.

Towards the end, we had food scattered over four tables. We made sure we took the leftovers home, it was not an option to say no! The Mutton chops, Badami handi, Chapli kebas, Special Sajji and the mouthwatering Rosh were surely the highlight of our lunch- and this was probably a third of what they served us.

As we slowly dosed off into a food comma, unable to move, they served us with Firni(Yes, in the mitti ki tooti) along with some tea and Gur to digest all the heavenly goodness that we had consumed.

Overall, we give a hundred points to Noshakh for taste, hospitality and the general environment of the space.

Women from all over Punjab participated in this festival with full zeal. There was so much of women's interest regarding their health and Beauty e.g. Beauty tips were shared by experts.Free screening for Hepatitis was also done.

Besides this numerous Cosmetic and Pharmaceutical companies had displayed their product stalls. Stall by COTHM remained the Center of attraction for female guests particularly. Musical program & Fashion show was also held. In the end Awards were distributed among the achievers & honourable guests. This was the biggest program of the year2017.

International Expansion

These qualifications are relevant to hotels, restaurant, catering companies, retail, food production, education, government and various other sectors across the country.

Richard and Jayne share an innate understanding of customer service, value and the training market, which helped the business to flourish and set the foundations for the business today.

Highfield Awarding Body for Compliance Formed Our growth even remained strong during the UK recession, and increased dramatically with the launch of Highfield Awarding Body for Compliance. This was driven by our customers asking us to become an awarding organisation. After a great deal of research, a decision was made that this venture was viable and there was the potential to make a significant difference within the industry. In 2007 Jason Sprenger (the current chief executive of Highfield) left his position as a senior solicitor with international law firm Eversheds to drive our application forward with regulatory body Ofqual. In 2010 the government of Dubai suggested that we open a branch in the UAE. A decision was made to do this, resulting in an office being opened in Dubai - managed by Richard Sprenger. AVARI LAHORE CELEBRATES THE

F

rance is the largest country in the European Union and the most popular tourist destination with some 84 million visitors each year. France is famous for fashion, perfumes, music, the most influential writers and a century old tour de France.

France is also known for its wines, cheese produce of staggering one billion ton each year and last but not the least, centuries old French gastronomy which has recently been awarded the UNESCO heritage status.

French National Day is celebrated on 14th of July each year and with that connection the Embassy of France in Pakistan hosted a prestigious reception in the honour of the Lahorites on 7th of July 2017 at Avari Lahore.

In conjunction with the occasion, the Avari Lahore also celebrated a 10-day long French Food Festival at its signature Kim’s Restaurant. The Festival was inaugurated by Her Excellency, the Ambassador of France, Mrs. Martine Dorance jointly with the Cluster General Manager Av a r i H o t e l s , M r. G r a n t Raubenheimer. At this marvellous festival, all the staff were clad in traditional French uniforms welcoming the diners in a French way; “Bienvenue au Festival de la cuisine Française, monsieur”, welcome to the French Food Festival.

The entire restaurant and the adjacent lobby were decorated with authentic French props such as; French flags, posters of French lifestyle and famous attractions and French city directional road signs together with world renowned monuments. The entrance of the Kim’s restaurant was converted into the famous Arc de Triomphe which glorifies the glamorous Shanzelize Street as well as a giant replica of Eifel Tower which literally transformed the whole venue into a mini France.

The overall atmosphere was so French that one feel like following, “Quand en France faire comme le font les Français”, When in France, do like the French do.

electronic media after the inauguration, H.E. Mrs. Dorance said that French and Pakistanis are common in many way as we both are found of good food and I personally like Pakistani cuisine and today the Avari chefs have done a wonderful job by showcasing genuine French food.

She termed the food varieties and display as very French and booked a dinner for her entourage from the Embassy and other dignitaries. She also appreciated the initiative of Avari Lahore management for organizing such a wonderful festival at an ideal time.

2. Neelum Valley, Azad Kashmir Opposite to the Keran sector of Indian-held Kashmir. From the Chella Bandi Bridge – just north of Azaad Kashmir’s capital Muzaffarabad – to Tau Butt, a valley stretches out for 240 kilometres; it is known as the Neelum Valley (literally, the Blue Gem Valley). Neelum is one of the most beautiful valleys of Azaad Kashmir, and it hosts several brooks, freshwater streams, forests, lush green mountains, and a river. Here, you see cataracts falling down the mountains; their milky-white waters flowing over the roads and splashing against the rocks, before commingling with the muddy waters of River Neelum.

The Gojal Valley borders China and Afghanistan, with its border meeting the Chinese border at Khunjerab — 15,397 feet above sea level — and remains covered with snow all year long. In the north west, there is Chiporsun, whose border touches the Wakhan region of Afghanistan. Wakhan is about six square miles in area, after which starts Tajikistan. The Karakoram Highway which connects Pakistan to China also passes through Gojal Valley and enters China at Khunjerab.

Deosai is located on the boundary of Karakoram and the western Himalayas, and at no point it is less than 4000 meters above sea level. It remains covered with snow for 8 months. The rest of the year, it hosts a range of beautiful flowers of all hues and colours, but not a single tree is found in this plateau spread over 3000 sq. km. Sheosar lake is also part of this. This lake is one of the highest lakes in the world. The deep blue water, with snow-covered mountains in backdrop, and greenery with wild flowers in foreground offer such a view in summers, that one is left amused for the rest of his life.

Ayun district is a village of Chitral. Located 12 kilometres south of the city at the confluence of the River Bamburet . There are no words to describe the beauty of the mountains surrounding the village. Beyond Ayun valley is Bamburet Valley, it is one of the three Kalash valleys.

Bamburet is nearly two-hour journey from Chitral. Locals trace their roots to Alexander the Great and Greece. Bamburet valley is a picturesque valley with lush greenery and mountains that give you a sense of calm and solitude.

Just a little ahead of Rama Village, which is 11 kilometres from Astore, is a beautiful and serene plain called Rama Meadow. If you ever happen to find yourself in plain, ice-cold and milk-white water flowing in streams, sheep and cows grazing in peace, pine trees, Chongra’s ice-covered peak in background, and Nanga Parbat’s southern ridge is in view, then you are probably in Rama Meadow.

White Palace Marghazar is the only breathtaking location in the Swat district that’s situated at a distance of around 12 km from the city of Mingora. Not only do tourists visit Marghazar for its natural beauty and pleasant weather but also to visit the historic White Palace (1941), built during the era of Swat state. After the White Palace was constructed on the directives of the founder of modern Swat state, Miangul Abdul Wadood also known as Badshah Sahab, Marghazar became the capital of Swat state during summer season. Even today, after seven decades, White Palace remains an attraction for tourists.The Palace doesn’t just look beautiful in summer; even during winter it remains enchanting especially after snowfall. Shogran had seen an influx of tourists, who trampled over its beauty, leaving it jaded. Siri Paye, nonetheless, still retains its strong attraction for tourists as a green plateau on top of the Hindu Kush. Engulfed in clouds and fog more often than not, it entices many as a rendezvous which allows one to observe Nature play peek-a-boo. Here, you see numerous small ponds filled with freshwater, meet horse-riders wandering about, and smell wild yellow flowers blooming everywhere. With the Makra Peak set as a backdrop, the beauty of the Siri Paye meadows comes to life.

Ranikot, with a circumference of about 26 km, is the largest fort in the world. However, this has not been enough to convince the authorities to develop it as a major tourist attraction. This fort is easily accessible from Karachi through the National Highway. After departing from Karachi, head to Dadu through on the Indus Highway. The road is in excellent condition. It's an hour-long journey to San, the home of Sindhi nationalist, GM Syed. A little further from the town there comes a diversion. A rusty board announces that Ranikot is some 30 km away. Even though the road is in pathetic condition, the distance can be covered in 30 to 40 minutes.

As we slowly dosed off into a food comma, unable to move, they served us with Firni(Yes, in the mitti ki tooti) along with some tea and Gur to digest all the heavenly goodness that we had consumed.

Overall, we give a hundred points to Noshakh for taste, hospitality and the general environment of the space.

YUM OPENED IN ISLAMABAD

T

he cream of restaurants from Lahore is gradually seeping into the culinary map of the twin cities. English Tea House – the most recent addition to the capital – has been welcomed with open arms, and customers have been rolling in since day one. What started off a few years ago as a small café in Lahore has evolved into a popular restaurant, known for its lip-smacking Italian and continental platters.

In Islamabad, the restaurant is located in Rana Market, Sector F-7.

It seems a lot of thought has gone into planning the architecture. The twostorey red-bricked structure has teal window and door frames. A stunning garden trails the right side, and provides a satisfying view from an neighboring sunroom. Customers can also enjoy the outdoor seating area once the weather gets better. In the evening, the café is lit up by warm yellow lights, making the atmosphere cozy.

Lady Smith’s Choice Burger was one of my favorites’ on the menu. The charcoal grilled chicken, turkey bacon, cheddar cheese, sauté onion rings and jalapenos went together perfectly.

There is a wide array of options on the menu. To start off, the Chicken Alfredo Pasta is deliciously rich and creamy, a little hot, but balanced with freshness from the sautéed chicken slivers, crispy on the edges and bulbously meaty in the centre.

The Double Deck Steak is appetizing and evenly cooked, with a nice charred finish, and topped with a dense jalapeno sauce.

Grilled Moroccan Chicken, as the name indicates, is inspired by the bold flavors’, smoky aromas, and varied textures of Moroccan cuisine.
