apnick Orchards will mark its 40th year of hosting an Apple Festival when this year’s event takes place Saturday and Sunday, October 13 and 14. Begun in 1978, the festival started as a small gathering, and continues each year with family-friendly fun. The 25-acre farm produces every fruit crop that can be grown in Michigan except currants and gooseberries, said Scott Robertello, co-owner of Kapnick’s, in an interview this summer. “You name it, we grow it,” he said. The orchard typically produces 15,000 bushels of apples. With an average of 100 per bushel, that’s 1.5 million apples the orchard sells at the store, brings to market, or presses into cider. That doesn’t count the hundreds of thousands of small apples they knock off the trees to allow the larger, healthier apples to grow bigger. One of the more popular items Kapnick Orchards produces is its cider. Using a variety of apples, 25,000 gallons are produced each year. Last year they won first place in the state. “It was like winning the Stanley Cup,” Robertello said of winning the traveling trophy that proudly sits atop the counter in the store’s bakery. For years Robertello said they worked on different recipes to enter into the competition. The best they had finished prior to last year was fifth place. Running out of time, they submitted their regular mix and ended up winning. The orchard was founded in 1958 by Robert and Gertrude Kapnick and Charles and Janice Kapnick on property in Raisin Township. In 1975, Charles and Janice purchased the market from Charles’ parents, Robert and Gertrude. In 2001, Janice’s daughter, Sharon, and her husband, Bruce Shaffer, along with Robertello purchased the farm from Janice. “It was kind of my idea,” Janice said, of the beginnings of the festival. “We started out a lot different from

what it is now. It was real small, we kind of had a family thing. We used to have pie-eating contests and apple-peeling contests and bakeoffs and things like that. That’s how it started out, as kind of just a little entertainment thing, and gradually we started adding arts and crafts.” Long ago the orchards’ apple butter for the festival was all prepared by Janice’s family. “My aunts and uncles, my mother-in-law, it was all relatives, and they would hand-peel all those apples to make apple butter. They just had a ball,” she said. The family would spend the week before the festival in the little greenhouse on the property to produce large quantities of the stuff. “They loved it because it was

a family get-together. They had their coffee pots and they had their lunch out there,” said Janice. She said the event started out just a fun thing to do, and it gradually grew. In previous years the festival had a Little Miss Apple Queen, and then, as now, the owners wanted people and their families to come and participate and have fun. This year’s event will include live entertainment, an arts and crafts show, you-pick apples and pumpkins, wagon rides through the orchard, a petting zoo and demonstrations of how their apple butter and awardwinning cider are made. The store will offer fried cake donuts, madeto-order caramel apples, and a variety of pies and breads, as well as

a large selection of candy, and other food offered by vendors. Musicians performing at the festival will include Genevieve Rose, Charles Elliott, T.J. Craven, and Cat Canyon. The festival, located at the orchards at 4245 N. Rogers Hwy., Britton, will run Saturday from 9 a.m. until 6 p.m. and Sunday from 10 a.m. until 5 p.m. A free shuttle bus will run between Tecumseh High School, the concurrently-running Appleumpkin Festival in downtown Tecumseh, and Kapnick’s throughout the weekend. Ingredients: 2 medium red Michigan apples 2 tablespoons lime juice 1/2 cup chopped orange segments 1/2 cup finely chopped onions 1/2 cup finely chopped green pepper

1 finely chopped jalapeno 1 clove garlic, minced 2 tablespoons chopped fresh cilantro 1 tablespoon cider vinegar 1/2 teaspoon ground cumin 1 teaspoon vegetable oil

Directions: Core and dice apples into 1/4 inch pieces. Toss immediately with lime juice. Stir in remaining ingredients. Chill 2 hours before serving over fish, chicken or turkey.

Directions: 1. If using apples as “cups” to serve, cut tops off of apples. Using melon baller, scoop out inside of each apple to form a cup, being sure not to make a hole into the bottom of the cup. Use pastry brush to brush lemon juice on cut parts of each apple. 2. Place caramel sauce on small plate. Place sugar and cinnamon on second small plate; stir to combine. 3. Dip the rim of each apple cup (or glass, if using) in caramel sauce, allowing excess sauce to drip off before dipping into sugar mixture. Place cups upright on serving platter. 4. In pitcher, stir sparkling cider, apple cider and rum until well combined. Divide cider mixture between apple cups or glasses. If serving in glasses, garnish each glass with an apple slice.
