Corinthia Hotel Séf / Executive Chef Megtiszteltetés, kíváncsiság, tapasztalatszerzés…

Ezt éreztem, amikor Ölvedy Balázzsal elindultam a Sylti Gourmet Fesztiválra.

Az északi-tengeri sziget hét Michelin csillagos étterme közül a kétcsillagos, Johannes King által vezetett Söl’ring Hofba kaptunk meghívást.

A helyi alapanyagok itt az ételekben és tálaláskor is fontosak, így kerül az asztalra fakéreg, moha, tengeri kő.

Az aranydarabkákkal, fahéjfüsttel készített libamáj terrine-nel a Söl’ring Hof vendégeit is sikerült kicsit elvarázsolnunk.

Honor, curiosity, experience: feelings that accompanied me on the way to Gourmet Festival Sylt. On the North See island of seven Michelin stars restaurants Balázs Ölvedy and me were invited to Johannes King’s two-star Söl’ring Hof. Here, local materials are put in the food and on the table too.

Bark, moss or stone from the see are part of the setting.

We were proud to charm Söl’ring Hof’s guests with our goose liver terrine with gold and cinnamon smoke.

Új menünk főszereplője a szték, amely azok közé a húsok közé tartozik, amelyek esetében a végeredményt alapvetően és összetéveszthetetlenül meghatározza a minőség, az érettség és a biztos kéz. Csúcsminőségű sztékjeink beszer­zési forrása Ausztrália, Új-Zéland és Argentína, a húsokat pedig 21 napig érleljük, hogy aztán a lávakövön a legkiválóbb fogás váljék belőle, vendégeink örömére.

The secret: experience, passion and top quality cut During my years abroad I became aware of the high importance of the visitor’s satisfaction at the end of a meal. This edification, the true faith in quality and the passion for my profession make me go further, to present the guests real experience again and again. Steak is in focus on our brand new menu. In case of cuts like this final result is essentially and unmistakably determined by the quality, length of maturing and solid knowledge. The source of our top quality steaks are Australia, New Zealand and Argentina, the meet is aged for 21 days and cooked on lava stone to prepare the most delicious meals for the joy of our guests.

Roy, a mókus és a húsvéti nyuszi csokoládéval, locsolkodással és pálinkával köszönt. A menü tojás, sonka és bárány, a hangulatot pezsdítő cigányzene fokozza, a kisebbek tojásvadászatra indulhatnak.

Roy the squirrel and the Easter bunny are welcoming all with chocolate, sprinkling and pálinka. The menu consists of egg, ham and lamb, the atmosphere is lifted by spirited Gipsy music, and the little ones may embark on egg hunting.

Matyó needlework is part of the World Heritage. Fabulous patterns match only with excellent brunch garnished with Hungarian wines, beers, sparkling wines and lively Gipsy music by Csicsó Band.

Pekingi kacsa / Peking Duck A kacsasütés kínai hagyománya a déli és északi dinasztiák korába nyúlik vissza. A XX. században a pekingi kacsa olyan emblematikus ínyencséggé vált, amelyet a politika vezéralakjai sem hagytak ki látogatásaik során. A Rickshaw menüjén öt éve szerepel, vendégeink nagy örömére.

Sütés előtt két napig hagyományos kínai fűszerekkel pácolják, másfél órán át, lógatva, sütőben sütik, vékonyan szelik, kínai palacsintá­val, házi szilvaszósszal, csípős, pirított kesudióval és julienne-re vagdalt zöldségekkel tálalják.

Chinese tradition of duck roasting draws back to the age of Southern and Northern Dynasties. In the 20th century Peking Duck became a trademark delicacy that was favored by many political leaders during their visits. It has been served in the Rikshaw for 5 years for the delight of our guests. Marinated for 2 days in Chinese traditional spices, baked for 1,5 hours hanging in the oven, sliced thinly, served with Chinese pancakes, homemade plum sauce, spicy roasted cashew nuts and vegetable julienne.

Just a couple of months ago we started our new program, the Royal Wine Experience Dinner Series. Featuring well-known vintners, rare vintages hosted by the best winemakers of Hungary. The Royal Wine Experience Dinner series will pair some of their finest selections with exquisite cuisine from Executive Chef Peter Bolyki. It is a unique addition to the series, a special Guest scheduled featuring breathtaking fragrances. Zsolt Zólyomi is most probably known as the Only Hungarian Nose in the World. At each event, guests will have the opportunity to mingle with and learn from a guest speaker knowledgeable about the featured label.

These popular evenings will begin with a reception followed by a sit-down dinner.

Az Orfeum Club a 19. századi, csillogó pompájú, zsúfolt zenés-táncos mulatók emlékét idézi, ahol énekesek, táncosok, zsonglőrök, versmondók léptek fel az aprócska színpadon. Az idő múlásával ezek a mulatók rendre bezártak, egy kivétel maradt csak: az Orfeum Club, ahol továbbra is a mulattatásé és a kápráztatásé a főszerep.

A színpadon a város legkiválóbb előadóit csodálhatjuk meg.

Orfeum Club evokes the glamour and excitement of the famous cabarets of the 19th century where acrobats, singers, dancers and poets performed on a tiny stage in front of a tightly packed audience. The bright lights of these cabarets have faded since the turn of the century, but not at Corinthia Hotel Budapest, where, to this day, the cream of the city’s entertainers still converge to captivate and thrill their audience.
