BOOZE BANGERS After a cheeky few, there’s many a song we love to sing to (or maybe shout too). But as much as we love a pub classic, we thought we’d take a look at some of the biggest hits that specifically showcase the hard stuff.

“That funky monkey!”

Inspired by a cocktail of the same name (rum, vodka and orange juice) after its release, Brass Monkey quickly rose in popularity – both in the charts and behind the bar.

Originally written and performed by country singer Johnny Bush, Whiskey River will always be a Willie Nelson classic in our hearts; as essential to him as his long braids and bandana.

The inevitable last call. This late 90’s tune is an ode to savouring the last of your drink, the company around you, and finding that one person you want to take you home.

You know the song, but do you know the origin? Former life insurance salesman Pat Alexander (songwriter) was attempting to close a deal with prospective customer Duncan Urquhart at the pub. The sale was unsuccessful, but they both enjoyed their beer.

It’s been 25 years since the songs release, and while Snoop Dogg is forever associated with gin and juice, we’ll forever be grateful for the line “with my mind on my money and my money on my mind.”

Friends in Low Places

A staple reggae ballad (and an easy pick for this list), Red Red Wine was originally written and performed by Neil Diamond who has since stated that UB40’s cover is one of his all-time favourites.

In what started as a parody of the phrase “friends in high places”, this number quickly became a country celebration of the whiskeyshooting, beer-chasing, working class man.

ST HALLETT’S BUTCHER CART SHIRAZ The Lindner family established St Hallett in 1944 on a property they had owned since the late 1800’s, focusing on their butchery business, with only a small amount of wine made for local sales. The Butcher’s Cart was used by the Lindner’s for a daily sales trip throughout the Barossa with a range of meats available for purchase.

Inviting dark berry fruits lift the nose with a hint of nutmeg spice. Palate holds a black cherry, dark plums and chocolate coat the dark, rich palate, finishing with lingering, voluptuous tannins.

The brilliant idea of Margaret River as a wine growing region started as a “gut feeling”. Agriculturalist Dr John Gladstones knew the district well. He saw undulating, well-drained ironstone gravel soils carrying healthy marri trees (Eucalyptus callophylla) which were regarded in Western Australia as an indication of prime vineyard soils. Climate data suggested strong growing-season similarities to Bordeaux, but warm, sunny Margaret River promised to be even better.

Established in 1970, Cape Mentelle is one of Margaret River’s ‘founding five’ wineries, pioneering many of the region’s renowned wine styles and today is a benchmark for the quality of the region’s wines. As testament to this, in 1983 Cape

Mentelle won the coveted Jimmy Watson Memorial Award and cemented its position as a premium wine maker with another win in 1984. The range focusses on wine true to the Bordeaux region with Sauvignon Blanc Semillon, Cabernet Merlot, Chardonnay & Cabernet Sauvignon leading the charge with their profiles capitalising on the unique maritime terroir.

The experienced and innovative team at Cape Mentelle are always progressing with forward looking ideas, handcrafted wines and an international perspective. Emphasis on fruit quality, sustainable viticulture and innovative technology in the winery are all an integral part of the quality control and vision in the pursuit of excellence.

FOR SAKE’S SAKE. Sake consumption is on a serious upswing and it’s not just enjoyed with sushi anymore. One of Japan’s most exciting exports is now popping up on wine lists and bars all over the country. Here are a few juicy droplets to soak up before you say Kon’nichiwa to your next cupful.

It’s extra mature

The exact origin of sake is unclear as it predates recorded history, but the earliest known production took place in China and the probable origin of true sake, which is made of rice, water and Koji mould, dates back to the Nara period (710794). By the 1300s, breweries were built that allowed mass production of sake.

They don’t make it like they used to. Thankfully.

In ancient times villagers used to get together to chew on the polished rice and then spit its mashed remains into a communal tub. The enzymes of their saliva aided fermentation. Today they simply use Koji fungus. Of the many tweaks made to the brewing process over the years, this is probably the least missed tradition.

Rice wine has more in common with beer

Though English-speaking countries often refer to sake as "rice wine," that's a misnomer. Sake is made from rice, but through a brewing process that converts starch to alcohol similar to the way that beer is made.

Drink to your health!

Sake contains no preservatives, it’s low in acidity and residual sugar content and its non-allergenic as it contains no histamines. Apparently it’s also great for your skin. We’ll drink to that!

Best served at just about any temperature

Sake can be served at more temperature points than any other alcohol. Temperature influences the taste – the warmer it is, the dryer the flavour. Generally, hot sake will be served with dishes with lots of oil or fat, warm sake pairs well with cold foods like sushi, and chilled sake is recommended for lightly sweet or sour food. But the major factor when choosing the temperature, is the weather.

It’s kind of rude to pour your own glass of sake

Some say that serving yourself suggests that you don’t trust your host to take care of you, but it’s more about sakedrinking’s focus on friendship.

Pouring for a friend and letting them do the same for you, is meant to be an act of bonding.

Polished to perfection

Making sake is an arduous process. The rice is first stripped of protein and oils in polishing, then washed of debris and air-dried before the two fermentation processes start. The grade of the sake is determined by how much of the rice grain was polished away.
