CELEBRATION OF CENTRAL COAST FOODS

This epicurean farm-to-fork dinner will kick off a two-day heritage poultry workshop led by Jim Adkins, the dinner will feature sustainably raised heritage poultry grown locally and prepared by Chef Steve Pope, who specializes in cooking with heirloom breeds. The event will be held at the beautiful Rinconada Dairy in Santa Margarita, home to awardwinning cheeses and pasture-raised livestock. A unique array of delicious farm-fresh regional foods will be prepared with the assistance of Chef Pandee Pearson, former chef at Adelaide’s at Trilogy and Window’s on the Water in Morro Bay. Central Coast wine will be featured at what promises to be a memorable harvest celebration!

HERITAGE POULTRY INTENSIVE FOR BEGINNERS

Develop your skills in raising heritage poultry! This comprehensive training will be ideal for those raising or thinking about raising standard-bred poultry for farming, marketing, exhibition, preservation and/or fun! During the day-long intensive workshop, you will learn how to properly identify heritage poultry breeds as described in the Standard of Perfection published by the American Poultry Association, how to select for qualities and rate of growth, how to select for egg production, how to select your on-going breeding stock and learn the basics of genetics and breeding.

SLOCAVORE WORKSHOPS EVERYTHING OLIVES

This workshop will impart all the skills needed for the aspiring olive oil connoisseur. We will begin with a tour of beautiful Olea Farm in Paso Robles and learn about production practices involved in olive cultivation. Participants will then learn how olive oil is made, which will include a tour of Olea Farm’s stateof-the-art mobile olive press. Numerous olive oil products featured in the farm’s gift shop will be highlighted. The tour and instruction will conclude with a tasting of Olea Farm’s award-winning oils and sampling of ‘olive fries’­­: delicious French fries cooked in olive oil, as well as tasting of another delicacy: artisan ice cream made from sheep’s milk. We will be joined by Negranti Dairy’s classic ice cream truck and learn the story behind this unique local food business.

This introductory class is for beginners interested in learning this wonderfully expressive medium. We will start with some main techniques involved with watercolor then expand into mixing colors. Practice will consist of painting flowers, glass, skies, water, trees rocks, landscapes and simple buildings. Stepby-step instructions will walk all students through small paintings to ensure quick progress.

INTERMEDIATE DRAWING AND PAINTING

This class will focus on how to compose textural details and capture the likeness and personality of your chosen subjects. We will start by learning how to recognize and draw the proportions, details, and features of animal subjects, then, using your choice of medium, you’ll find out how to choose, mix and use the colors that you will need to paint them. Along the way you will also learn how to render the wide variety of textures including fur, feathers, features, and background elements that will be involved in these subjects.

Life & Culture IPHONEOGRAPHY CREATIVE iPhoneography is photography using your iPhone. Classes will begin with an introduction to the native photo app (the built in camera app) on the iPhone, how to take great pictures and how to alter the settings within the app. Learn everything from tips and tricks of iPhone’s camera and how to quickly and easily edit a photo from good to great. Beginning iPhoneography will give you a solid foundation in using the native photo app. This class will also entail at least 2 other shooting apps outside the native camera app. Editing photos will be done in Snapseed. iPhones (models 4S and above) and iPads (models 2 and above) welcome; sorry we will not be covering android devices.

SAVVY This advanced class will focus more on editing options rather than shooting. Recommendations for apps to download and/or purchase for special effects to your photos will be provided too. This is a standalone course, therefore completion of Creative class is not required. Explore the history of wine making from its beginnings to modern day, the basics of winemaking, wine serving, and food and wine pairing. You will also discover the origins of wine grape varietals and their importance. In addition, you will learn how climates, microclimates, and soils have an influence on grape quality. CALIFORNIA WINE APPRECIATION Learn to be a wine connoisseur. Do you know the difference between a Merlot and a Cabernet? This course provides basic knowledge and experience in taste discrimination of a variety of Central Coast and other California wines. Learn the sensory evaluation of various components in wine. The varietal characteristics of wine produced on the Central Coast and in other parts of California are reviewed. Note: California Wine Appreciation will be offered again in a separate session that will take place January 7, 2015 through February 4, 2015.

EUROPEAN WINE APPRECIATION Learn how European geography and climate influence wine from different regions. The focus will be on French wines from Bordeaux, Burgundy, Rhone and Souther France plus Loire, Alsace and Champagne. You will also learn about Italian and Spanish wines and discover how European wines differ from those of California. Additionally, you will learn how to read and interpret European wine labels. You should have taken the California Wine appreciation or another basic wine appreciation course prior to taking this course. Bring three glasses to each class. Minimum age: 21 years old, must bring photo identification to first class session.

Professional Advancement APPLIED TECHNOLOGY OPEN VSP WORKSHOP

OpenVSP (Vehicle Sketch Pad) is a parametric aircraft geometry tool, allowing the user to create a 3D model of an aircraft defined by common engineering parameters. This is an open source project under the NASA Open Source Agreement (NOSA) version 1.3.

INSTRUCTOR:

This three day workshop will cover the newly released 3.0 version presented by VSP developers and power users. Topics range from introductory to advanced model building, reports on cutting edge development, and work that real users are accomplishing with OpenVSP. The first public alpha release of the v3 re-write of VSP is now available for download. For the past two years, a dedicated team has been re-writing VSP from the ground up. The core v3 team responsible for this work so far is: Alex Gary, J.R. Gloudemans, Yue Han, David Marshall, and Rob McDonald. Come learn the tool from the developers.

INTRODUCTION TO VINEYARDS You will gain an understanding of the internal and external factors that can affect vine productivity. Grape growing practices will be explored using both historical and international perspectives. In addition, you will learn how to develop successful vineyard production strategies.

BASIC ENOLOGY Introduction to Enology describes and explains the basic chemistry and microbiology of wine making to better understand how to make high-quality wines, prevent and address flaws, and improve age ability. Topics will include grape composition and harvest decisions, primary and secondary fermentation processes, spoilage organisms, sanitation procedures, the aging process, barrel dynamics, bottling considerations, flaw correction, fining agents, filtration methods and improving cellar procedures.
