Christmas card showing December in central Alabama would feature a very different scene from the traditional ones the greeting card companies offer each year. Rather than showing Santa sledding over fields of snow, our Christmas card would show the jolly old elf against a brilliant blue sky with still-turning leaves on the trees and maybe a glisten of perspiration on his brow from being ridiculously overdressed for the climate. Add a couple of enchanted children, shoot the picture at Pell City’s Lakeside Park, and you have the perfect representation of Christmas on Logan Martin. Is it coincidence that I’m describing our cover this month? Hardly. It is our Christmas card to you. Alabama is fortunate, indeed, to have many days of gorgeous weather in winter. We know, of course, that rainy days are ahead and that the temperature will drop. We’ll have some days in which Santa’s fleece suit and heavy robe will feel appropriate even if they look a little odd. Eventually, the leaves will drop, leaving a landscape dominated by gray. And we may even see some snow. But in between, we’ll enjoy the sunny Alabama skies and congratulate each other on our choice of place to live. Lakeside at Christmas — why be anywhere else? ndustrial folk artist Hunter Bell has always been a collector. The Pell City native describes himself as on the eccentric side of the fence, using everyday items to express what he considers to be the “human condition. This condition, he says, is a cross between human emotion and existentialism.

When life turns golden... Always There Provides the Silver Lining. At 93-years old, Herman Libbe’s life is golden. “Being able to remain in his home is very important to him,” says Herman’s daughter Penny Patterson. “Always There In-Home Care makes that possible. He dearly loves his caregiver, Amelia.” For over a year, Always There’s Amelia Gibson has nurtured a special relationship with Mr. Libbe that transcends helping maintain his home and preparing his meals. They have become friends. In fact, when the dapper Mr. Libbe takes his two walks per day, he carries his cane in one hand and Amelia on the other. Penny says, “We can’t imagine having anyone else care for him.” Like many adult children of aging parents, Penny has a busy personal life, which presents challenges in her ability to offer constant attention to her father. Always There offers Penny a solution - call it a silver lining - to that cloudy issue. My father is not always easy to deal with. I tried other companies in the area, and Always There has been by far the best. In particular their Care Management services have been a huge help with planning and decision-making. I couldn’t be more pleased with their dependability and service.” For more information about Always There, call 205-824-0224, or visit our website at www.alwaysthereinc.com for a free online assessment of your needs.
Before you hire an in-home care company, be sure to ask: Who is responsible for payroll taxes, Social Security, and liability insurance on the worker? Who sends a replacement when my regular caregiver calls off sick? Is the company insured, licensed, and bonded? Are caregivers employees of the company or merely independent contractors? 931 Martin St. South, Pell City AL. (In the K-Mart Shopping Center)

‘I can make something out of nothing, and in doing that I believe it’s a lot more special than purchasing something.’
“With my philosophy background, I focused on religion and theology,” Bell said. “Through studying religion, I really got into existentialism.” Bell studied art while at Jacksonville State University and then moved to Birmingham where he developed as an artist and got into music, poetry and spoken word. Bell says there is a lot of symbolism in his artwork that reflects both the dark and colorful parts of his life. Colorful parts such as the birth of his son Tristan, and dark parts such as the feeling of isolation and contemplation after his divorce and the death of several close friends over the past year and a half. After moving back to Pell City from Birmingham after

his divorce, he said he faced a lot of isolation, especially while being apart from his 2-year-old son. Bell was also shot in his leg during a carjacking in front of his house in 2003 and was diagnosed with posttraumatic stress disorder. But Bell eventually added some color to his life and found it in industrial folk art. “My art is more toward African-American and Native-American folk art,” Bell said. “There is a theme of struggle, hope, balance, regret, and a light at the end of the tunnel.” In addition to using visual art as a way of expressing himself, Bell has also been involved in music and spoken word for years. He is a founding member of Portal Dementia, The Hunt Rx LeBelle Experience, khasma, DIAS, Awake and Dreaming, and several other musical bands and projects. While in Birmingham, he also worked at the Woodlawn Family Resource Center, teaching children how to play and make their own Latin-American and African drums. “I show them how to make their own instruments and artwork out of things they can find anywhere,” Bell said.

“I can make something out of nothing, and in doing that I believe it’s a lot more special than purchasing something.” And like the percussion instruments, Bell uses his folk art skills to make functional everyday items into pieces of artwork. Bell collects things people throw away, finding them in junkyards and sometimes on the side of the road. “I see things that are made to be functional, not beautiful,” Bell said. “There is something beautiful about the design.” Bell’s pieces “Dream Serpent” and “Dental Field” have symbolic meaning in their names as well as the artwork, but most of his work is untitled. “The meaning is always different to different people,” Bell said. Bell wants people to observe the artwork with open minds and interpret the pieces for themselves. It may take him anywhere from three hours to three months to finish a piece, and he often works while listening to music. One of his first — and larger — pieces, “Sustained: grains and stains” took about three months for him to complete. It was one of the first folk art pieces he had ever worked on; Bell worked with the natural grain of the wood and used markers, some professional and some from discount stores, to color the wood. Bell said that when he moved back to Pell City, he decided to dive into visual art and didn’t have a lot of materials, so he learned how to use everyday materials such as natural slate, old window frames, steel rods, the 10

circuitry of old calculators and phones, and bones from dead animals. “Instead of letting these things just sit out there, I’m going to take them and clean them and make them beautiful,” Bell said. “A lot of people would think of bones and skulls or something like that as death, but there’s a lot of beauty in those items.”

His work is being featured at Artscapes in Pell City until Feb. 8, 2011; this display at Artscapes is Bell’s first exhibit in his hometown. “I’m really excited to be here and show my work here in Pell City,” Bell said. About 15 of his pieces will be on display at the exhibit. Penny Arnold, president of the Council of the Arts, and other council members reviewed Bell’s art after he applied to be featured in the Artscapes exhibit. “You can see from his work, there’s nothing like it here,” Arnold said. “It was different and unique, and we’re glad to have him.” Bell sold his first paintings in Pell City at the 2010 Artscapes Festival and

Traveling the Coosa This Island’s For the Birds Bald eagles, Canada geese, herons and egrets find refuge on Logan Martin’s ‘Bird Island’
I followed these ducks for about 20 minutes, trying to catch up to them so I could get a close-up shot with my camera.
T
hey told me it’s covered up with birds, all kinds of birds — big birds, small birds, brown colored birds and soft-white birds. Of course, I’m talking about the small island Logan Martin Lake residents call “Bird Island.” During certain times of the year, there are so many birds on Bird Island the tops of trees are solid white, and the noise — bird noise is something to witness. “They make so much noise, the fish stop biting,” said Ed Mitchell, an avid fisherman. “At least that’s the excuse I use when we aren’t catching fish.” Ed and his wife, Yong, fish near Bird Island, all the time, day and night. “Back in the spring and summer, it’s full of birds,” Ed said. “I mean it is full of them, too.” The couple does not have far to go to reach one of their favorite fishing spots. They live just a little further up the slough from Bird Island. Ed says they normally catch bass and catfish near the island. I didn’t have far to paddle on my trip to Bird Island. Jim

and Laurie Regan of Pell City, who allowed me to camp on their “Grand Island” the month before, allowed me to use their lake home property as a launching pad for my trip to Bird Island. Jim greeted me when I arrived at their lakeside home on a really beautiful fall afternoon. It was gorgeous weather, perfect. Jim and Laurie live a stone’s throw away from the popular island that birds seem to love. Jim talked about the varieties of birds one can see on Bird Island. He’s even seen what he thought was a golden eagle one time. Maybe it was; maybe it wasn’t. I say that because juvenile bald eagles look much like golden eagles. These young birds do not have a white colored heads until they mature, so they look pretty much like a golden eagle — at least that’s what I’ve been told by one of the local eagle experts, Julie Pounders of Riverside. She really enjoys watching the bald eagles on the lake. Jim also talked about a beaver that once swam around

the island and the many geese, egrets and herons that have inhabited the island from time to time. He said at certain times of the year the tree tops on the island look like they are covered with snow. It’s actually large white egrets roosting in the treetops. I really looked forward to this trip, not really knowing what to expect on Bird Island. As I paddled closer to the island, I spotted my first bird, a blue heron. The large bird was wading in the
shallow water at a point along the island. I was able to get a quick picture as the bird flew to a treetop on the island. I guess I got a little too close for the bird’s comfort. I checked along the island’s shoreline. There were no more birds to be seen, so I decided to dock my kayak and explore. As I eased through the woods, I saw movement. I realized it was a turtle sunning on a boulder protruding

from the water on the east side of the island. I tried to ease my way toward the turtle for a closer look. I was amazed that the turtle spotted me. They must have extremely good eyesight. I heard that familiar “blop” sound of a turtle diving into the water. It was gone in a splash. I decided just to sit on the beach to see if the turtle would return to its warming spot. In about 20 minutes, the turtle was climbing back onto the rock. I guess it figured I was no threat to him.

Yong Mitchell of Pell City is ready to set the hook on a big fish.
I took a few pictures of the turtle before it dived back into the water, then continued my exploration of the island. As I approached the other side of the island, where there is deeper water, I heard talking. It was Ed and his wife, Yong. When I said, “Hi,” I startled Yong. “You scared me to death,” she said, adding that she didn’t know where the voice hd come from. She continued fishing, reeling in a striped bass as I watched her and Ed fish. It was apparent Yong takes her fishing seriously. The expression on her face while fishing is intense. The couple was very friendly and talked with me for a while before I moved on. Apparently they were fishing at a spot where people dock their pontoon boats and hang out. A fire pit lay close to the shoreline, and that part of the island was cleared of vegetation. I headed back to my kayak, boarded my trusty vessel and

started paddling around the island. I saw a few unidentified ducks and paddled toward them, taking pictures of them intermittently. The flock of ducks wouldn’t let me get too close. I finally gave up on the ducks and started going back toward the island. That’s when I saw a different kind of boat in the distance coming my way. “I thought I had it bad,” I joked with Margie and Wayne Brewer of Pell City, as they approached my kayak. They both laughed. They were in a small aluminum pontoon boat that operated by pedal power. They looked all over the place until they found this aluminum boat in Wisconsin and special ordered it. The Brewers explained their neighbor had a pedal boat, but it was too heavy because of the materials used in building it. “That was all work,” Margie said. They said the aluminum boat is much lighter and easier to pedal. “You still get exercise without killing yourself,” Margie said. They do have a little help — just in case. “We put a trolling motor on the back,” Wayne said. The Brewers also live farther up the slough from Bird Island. They paddle from their lake home to Bird Island and back about once a week. They also talked about the birds that flock to Bird Island, which unfortunately were nowhere to be found during my I tour. Margie said that one year there were so many Canada geese, she could hear the flock all the way to their house. Sounds really travel on the lake. “They were so loud they would wake you up at night,” she said. 20

Margie and Wayne Brewer of Pell City enjoy the lake and get a little exercise in their pedal-operated pontoon boat.
But a few loud birds would never change Margie and Ed’s minds about lakeside living. “It’s beautiful here,” she said. “You get up in the morning and look out at the lake. There’s nothing better.” I can’t agree more, and I look forward to my next trip down Logan Martin Lake, part of the Alabama Scenic River Trail. Just maybe I can return to Bird Island when it is occupied by a few more birds. So until then have a safe and wonderful time on the lake.

Golden said the Stafford House offers a wide variety of items perfect for entertaining during the holidays. “Our holiday serving pieces are very popular,” she said. “The reindeer or Santa Claus serving dish and spreader are great for cheese balls and crackers and other holiday foods.” Golden said for a gift basket, the serving dish and spreader could be matched with cheese ball mixes (which come in a variety of flavors including dessert cheesecake flavors), crackers, cheese straws, soup mixes, dip mixes, sausages, holiday cake mixes and more. “We can make pasta-themed gift baskets with pasta, pasta sauces mixes and meatball mix, coffee baskets with our wide variety of flavored coffees, and we also have a large selection of 22

wine that can be added to gift baskets,” she said. Golden said there are 150-plus different wines to choose from including champagne, blends, port wine, reds, whites and even a chocolate wine. “We can help pairing different wines with different food gift baskets, depending on whether the wine goes better with meat or fruit or dessert or cheese,” she said. Golden said the mulling spices with recipe packages are also very popular. “They make great little gifts, and a lot of the recipes are quite good,” she said. “We also have hot chocolates, Christmas tea and our Christmas coffees for those who prefer it.” Golden said items such as Christmas watches or jewelry can also be included, as well as Christmas tree ornaments. “We have little outhouse Christmas tree ornaments that have been popular,” she said. “When you open the outhouse door, there is a deer or bear inside.” Personalized items are also the theme at Granny’s House in Lincoln.

The Stafford House offers made-to-order themed baskets, such as this pasta gift basket.
“We do a lot of special things you can’t find anywhere else,” said Kelly Love, owner of Granny’s House. Love said Granny’s House offers monogramming to personalize the gifts. “Quilted bags are very popular Christmas gifts,” she said. “We have quilted duffle bags, hipsters, carry-alls and makeup bags.” Love said Auburn and Alabama football colors are very popular, and prices include personalized monogramming. “Scarves are really big, and we have those in a wide variety of colors,” she said. “And purses are always popular.” Love said Granny’s House has an assortment of silicone or jelly watches, monogram jewelry, monogram Christmas ornaments, Lincoln-themed items and more. “We make a lot of our own items,” she said. “We have fleece ponchos that are made to order. We sell those as fast as we can make them.” Love said she also makes little girl’s Christmas dresses to order. “People have a lot of things they need during the holidays, and we are very hands-on with the very specific items, such as a grandmother wanting a particular dress for their granddaughter,” she said. Granny’s House specializes in personalized and monogrammed items, some made to order and others brought in by customers.

Love said Granny’s House also offers monogramming on items not bought in the store. “Probably half our monogramming is outside items that people bring in for us to monogram,” she said. “The personalized items give presents a special touch.” Home décor and ceramic items also make great holiday gifts. “People like items that are made locally,” said Judy Potter, owner of the Cabin on Cedar Lane. Potter said Riverside artist Ron Sims makes a wide assortment of useable pottery, including goblets, bowls, juicers, apple bakers and brie bakers, platters, lamps and more. “I also carry jewelry and paintings done by several other local artists,” she said. Potter said lamps of all types are big sellers, as well as furniture and Christmas ornaments. “The woodsy Christmas items, made of natural materials, are also big hits,” she said. “The rustic and natural-looking things like candle holders and figurines and wooden lamps.” Potter said Christmas ceramics are popular as well, both for holiday entertaining and to give as gifts. “The Christmas accessories and home décor items just make great gifts,” she said.

Laurel Patrick’s custom-designed stockings adorn the mantel.
Decorating for the holidays? Here’s how a designer does it.
I
t’s Christmas all over at the Patrick home on Logan Martin Lake, and it’s the perfect time of year for Laurel Patrick. She’s a professional interior designer, and Christmas is a time she can showcase just exactly what she’s trained to do. “I get excited about it,” she says. “Decorating is what I do.” She and her husband Robert have been in their home in the Eastland Shores area of Lincoln since 2006, and Christmas and the holidays are played up big here. Over the arched entry at the front porch hangs a fat garland of fresh-cut magnolia bunched with other greenery and dotted with ribbons and touches of traditional Christmas color. The front entry is edged by four pillars supporting a broad porch where two pairs of Adirondack chairs and a table can be used for visiting on mild lake days. The exterior is of beige siding against white trim and soft yellow shutters. The Patricks built their Craftsman-style home using a Southern Living magazine plan as a basis, but with changes to suit their lifestyle and lakeside lot.
The Patricks flipped the original kitchen and dining areas, moving the kitchen to the front of the house and the formal dining area to the rear. In the revised design, a two-story foyer leads into the great room. Both this room and the entry feature vaulted ceilings with exposed cedar beams. In the foyer, a modernistic oil painting in golds and bronzes by Birmingham artist Charles Nugent hangs over a hall table made of aged wood. On the facing wall of the entry hangs a collection of metal molds once used to make machine parts. Overhead is a wrought iron chandelier with duplicated scrolled metal work and multiple sconces. The entry also gives access to the kitchen and dining room. “We wanted open, open, open,” Laurel Patrick said. The open design adds a feeling of spaciousness and the togetherness a family can enjoy with the rooms connecting. The vaulted ceiling in the great room allows for an oversized Christmas tree, decked out with an array of ornaments and special touches. December 2010 - Lakeside Living & Logan Martin Homes

Laurel Patrick and her husband Robert built their craftsman style home in 2006.
A huge, gold-rimmed red bow is perched on top, with tendrils trailing downward through the branches. Gifts underneath are dressed with wrappings in complimentary seasonal colors, set off against the tree with ribbons and flourishes. The stacked-stone fireplace and hearth are garlanded with magnolia and bright ribbon, and a selection from Laurel Patrick’s own line of custom Christmas stockings dangles from the mantel. The stockings have a distinctive design using satin and silk and end with long curled toes for a fun effect. They have an old world antique flair, made with special touches Laurel selects from markets throughout the world. Laurel’s design handiwork can be seen online at www.couturechristmas.com. Duplicated cherry-stained cabinetry borders the hearth and fireplace, giving space for storage and family photographs. Matching armchairs upholstered in beige striped fabric are paired at one side of the great room with a side table and reading lamp in between. A soft shade of beige fabric is used on an oversized couch, dressed for the holidays with a pillow bearing the message, “Dashing through the dough!” A pair of Christmas trees made with bright red berries top a tiered coffee table of knotty pine. Floors throughout the great room and adjacent dining room are reclaimed maple from a textile mill in North Carolina that was being demolished. Laurel found the reclaimed wood through a broker she knows through her design contacts. The planks vary in color, lights play against darks, and the effect is a pleasing piece of the past. The dining room is spacious enough for a table for eight, which is of a modern mission style in dark wood. A red satin table runner is loosely arranged down the center of the table, holding a series of three prancing wire-crafted reindeer with berry-filled bushes underfoot. Overhead is an oversized wrought iron chandelier finished with arched arms bearing eight lighted globes. Places are set using cheery silver chargers topped with contrasting white dinner plates that hold holiday china designed with holly and berries. Tree ornaments add a touch of Christmas to a decorative metal fish on the Patricks’ screened porch.

The Patricks’ kitchen mixes a combination of granite countertops and tile set against sleek stainless steel appliances.
Starched linen napkins in white are held by silverspangled holders, and water and wine goblets add more holiday sparkle. A tall country French hutch holds serving pieces in white and ivory. A bar with seating for three borders the kitchen, where a broad central island topped with honed Ubatuba granite has antiqued cabinetry that offers storage for cookware and cutlery as well as a wine cooler. “We have so much storage in here,” Laurel says, pointing to the walls of additional cabinets that line the kitchen. These are in a cherry finish and have space on top for storing large items. Countertops are beige and gray slate with patterned backsplashes. A deep sink with pewter fixtures stands against a front window fitted with rattan shades. Appliances are stainless, and the gas range features two ovens. “My husband is really the cook; I do the side dishes,” Laurel said. “He loves to grill out.” With that in mind, they had to include an outstanding

outdoor space for cooking and entertaining when they modified the house plan. They designed and added a screened porch that wraps around the rear of the house, entered from the great room by matching sets of glass doors bordered with floor-to-ceiling sidelights. The ceiling is vaulted and has exposed beams that duplicate those in the great room, and deep toned rattan couches and chairs topped with chocolate and blue cushions offer ample seating along with a dining table and chairs. A collection of straw hats hangs on one wall, and dual exits allow access to deck areas on each side of the porch. One deck is designated for Robert Patrick’s grilling space. A sign hanging beside the gas grill reads, “Everything is better at the lake.” From the great room, there’s entry to the master bedroom and bath through a hall that the Patricks redesigned to serve as a bar. A granite countertop holds a sink, and overhead are stacked shelves for a variety of festive offerings. An icemaker fits underneath the workspace. Originally, the space was designed to be a closet, Laurel said. The master bedroom branches off to the rear of the house, with a lake view all its own. High tray ceilings add distinction to the room, with walls in a washed linen shade and floors covered with ivory carpet. A massive four-poster king-size bed in dark wood is covered with a black-and-white patterned spread with floral 30

and striped pillows stacked at the headboard. Carved side tables flank the bed, with matching reading lamps on top. An antique chest Laurel found was restored by her husband, and is one of her favorite pieces in the house. The chest has four deep drawers, two of them carved in a scrolled design. Double glass doors bordered by windows dressed with beige silk drapes lead from the room to a private deck facing the water. “This is our favorite coffee place,” Laurel says. On the other side of the room are walk-in closets and a master bath, where floors are limestone and vanity tops are granite in flecks of black and brown. Cabinetry in the bath is ivory, and there’s a jetted soaking tub with a glass-tiled window overhead and also a glass walkin shower. Sinks are squared off, in white porcelain. Sink fixtures are pewter. From the bar area in-between the great room and master bedroom, stairs lead to a large bonus room where the Patricks can sleep four guests. There’s a queen sized bed at one end, and in a facing alcove, two twins. Colors are soft: A couch in a sitting area in the center of the room is peach and sage, carpet is light beige, and walls are ivory. Just off the hall to the upper floor, a large laundry area gives great work space and storage and leads to the two-car garage. On the opposite end of the house from the master bedroom are bedrooms and a bath for the Patricks’ two

children, 2-year-old Hollis and 7-year-old Vack, along with a guestroom and bath. Vack’s bedroom has a nautical theme, and there’s a very cool bed any 7-year-old would love. It’s made in the shape of a boat. Oars hanging over the headboard hold his collection of caps, along with a Santa hat ready to don for the holidays. Walls are a light blue, and the bed covering is a blue-and-white patchwork quilt. Hollis’s bedroom is at the other side of a hallway and is decorated with a bright red poppy theme. The headboard on a queen-size bed is upholstered in the poppy fabric used for the bed covering, large poppies against a white background with their stems reaching downward. Drapes are gold silk hanging over white sheers, and carpeting in the room is a gold shade. Walls are white. The guestroom is down a short hall at the rear of the house and has a view of the slough the Patricks live on. Walls are white and carpeting is gold, along with the sheer drapes that border floor-to-ceiling windows. A four-poster iron bed is covered with a quilt patterned with circles of blues, browns and pinks and a brown bed skirt wraps around beneath. Antique side tables are finished with a soft green effect and an upholstered chair is covered in the same tones.
Laurel Patrick’s holiday table sparkles with silver and white, brightened with a red table sash and greenery.
A full bath adjoins, making the guest area a complete suite for company. When looking for lake property, the Patricks found another spot first that they really liked, but it sold before they could get it. 32
| Lakeside Living & Logan Martin Homes - December 2010
“We were going to buy a fixer upper,” but it didn’t turn out that way,” Laurel said. They then found the property at Eastland Shores, which was vacant, so they decided to build. Laurel said her father, a retired builder, told them that if they didn’t buy the property, he would. With his help, the Patricks had their home dried in but then finished it themselves and had a total construction time of just nine months. Robert Patrick is a nurse anesthetist for a hospital and Laurel operates her design business out of their home, along with using her website. She does design work for individuals as well as for commercial clients, having designed interiors for hotels and other businesses. When working with clients, she says she wants the end result to become “an extension of the person whose home it is. It’s personal.” The Patricks are enjoying their lakefront lifestyle, and keep a Bryant ski boat and two Jet Skis handy for doing just that. They’ve had dozens of friends and family over to enjoy it with them, and a crowd of 20 or more isn’t hard to handle at their home, Laurel said. Like so many others who have chosen Logan Martin Lake as their place to call home, looking out at the water on a calm day in early winter, Laurel says, “We just love it here.

Mitchell’s roasted beef tenderloin with balsamic marinated mushrooms and gorgonzola sauce can travel well if the trip is less than four hours.
Have Food, Will Travel If your holiday feast has to travel with you, here’s some advice from restaurateur Polly Mitchell on what to take.
T
he modern holidays are all about family and food. And since families have a tendency to disperse over time, the holidays also frequently involve travel. And traveling with food can be tricky. Fortunately, according to Polly Mitchell, owner of Talladega’s Café Royale, Pell City’s LUNCH and the Chevron Station on Alabama 34 in between, you’ve got lots of options. “Most deserts travel well,” she said, “cookies, bar cookies, that sort of thing. Just no cakes with butter cream icing, since they can tend to melt. You don’t want to take butter cream on a drive of more than six hours, although you can freeze it. “You can also make dressing in advance, freeze it, and then thaw it out when you get where you’re going. You might want to maybe think about bringing along a nice bottle of wine, too.” Depending on the length of the trip, however, most foods are fairly amenable to transport, Mitchell said. “Pretty much anything that’s not soupy, like gravy or, well, soup, you could do, and even do those if you have a container that you know won’t spill. “Smoked meats are good in the car for a whole day, but with other 36

meats you’re looking at about a four-hour window until you get into the dangerous temperature zone,” she said. “Rolls and our cranberry-walnut bread are always popular and travel well.” Mitchell said, although, she pointed out that any kind of homemade bread will be less spectacular after about two days. Getting the food to your destination in good shape is difficult enough, but what about planning for family members
who are trying to get some weight off or who have health issues such as diabetes? Also not a problem, Mitchell said. “I’ve got two diabetics in my family, so this is an issue I’m familiar with,” she said. “But you can still do the traditional holiday dinner. Use fresh green beans, maybe provide more meat options. You can get pasta with less starch content that you can serve with a vinaigrette that’s really good. You still get some carbs that way.” December 2010 - Lakeside Living & Logan Martin Homes

Bar cookies, such as Mitchell’s lemon squares and chocolate-chip coconut bars, travel well and are always welcome.
Mitchell’s secret for cooking vegetables is utter simplicity. “You cook them at a high temperature for a short period of time with just olive oil, salt and pepper. The big secret is to use fresh, high-quality ingredients. When preparing a holiday feast, I say there is absolutely no need to own a can opener.” Also for the health-conscious feaster, she recommends some of her own salads, including the apple salad with vinaigrette and nuts, which should appear on her menus this month. If for some reason you are unable to be there in person but still wish to contribute something to the family banquet, you have options here, too. When shipping food, keep in mind the time limits for carrying food in the car. “Again, desserts always ship well with the exception of butter cream,” Mitchell advised. “If you’re ordering something to ship, you want to use someone with experience. I have a friend in Texas who ships smoked turkeys (www.JbarH.com), and there’s a company in Virginia that ships hams. If it’s something you baked personally, ask yourself if you would be comfortable serving it three days later. If you do, it’s probably OK to ship.” And of course, Mitchell has a few items from her own menu available for shipping. “The fresh butter cookies, brownies and no-name cookies from the Chevron station and LUNCH ship well, although our local customers come first. And of course we love going around to local restaurants buying food.” Mitchell added “casseroles and dressing ship really well, too, although we don’t do that. And if I could ever figure out a way to ship cranberry salad, I would be able to make a mint.” Maybe some day… If you serve your guests these appetizers of cheddar ham biscuits with chardonnay sauce or cranberry tuna salad, warn them to save room for the main course. Mitchell’s walnut-cranberry bread, butternut squash salad, cranberry relish, and mixed varieties of potatoes roasted with olive oil, salt and pepper. All of these dishes are low calorie and appropriate for diabetic diets.

Recipe for Your Holiday Table Your feast will be even more special with a centerpiece you’ve made yourself.
Y
ou follow a recipe — only instead of making something tasty to eat, you create a beautiful flower arrangement to take home. “We recently began offering Sips ’n’ Stems classes a couple of months ago,” said Cindy Luby, who owns Pell City Flower & Gift Shop with her sister, Karen Steed. In the classes, customers come to the shop and spend an evening learning to make flower arrangements from the professionals. Luby said the two sisters are following the family tradition of owning the flower shop. “Our grandparents, Fred and Mildred Adkins, opened the shop in 1945,” she said. “Our parents, Bob and Jeri Hollis, owned it after them, and now we own it. We are the third generation in our family to own it.” Steed said the idea for Sips ’n’ Stems came from a simple question one day. “Cindy was on Facebook and just asked if anyone 40
| Lakeside Living & Logan Martin Homes - December 2010
wanted to learn to make a flower arrangement,” she said. “A lot of people said yes, so we played with the idea and went on from there. We enjoyed it so much we thought other people might too.” Luby said each Sips ’n’ Stems class is $45, which covers the cost of flowers and materials. “You can bring wine or tea or the beverage of your choice with you,” she said. Luby said class participants are provided with a “recipe” for the flower arrangement they will make each evening. “Although the recipe is the same, the arrangements look different because each person picks out their own flowers,” she said. “For example, if the recipe calls for five mums, the person might pick three white and two yellow, or four yellow and one white, so each arrangement is different, depending on that person’s color preference.” Luby said she and Steed provide step-by-step instruction and tips as the class participants create their masterpieces.
Five Lakeside ladies took part in a recent Sip ’n’ Snip class. Facing page, from left, Tracy Smith chooses roses for her fall arrangement, while Laura Smith, Hannah Foote and Sheena Weems select greenery. Above left, the group gathers around a table to assemble their fall arrangements. Above, Carol Cosper Meadows and Sheena Weems decide among roses, carnations and chrysanthemums. Left, the ladies show off their masterpieces. Sitting in front are instructors Karen Hollis Steed, left; and her sister, Cindy Hollis Luby. Standing, from left, are Tracy Smith, Carol Cosper Meadows, Laura Smith, Sheena Weems and Hannah Foote.
“Everyone leaves with a beautiful flower arrangement,” she said. Luby said the December Sips ’n’ Stems classes will feature arrangements in Christmas colors. The classes are at 6 p.m. at Pell City Flower & Gift Shop. The Dec. 7 class will feature a holiday greenery arrangement. The Dec. 16 class will feature a centerpiece, perfect for Christmas decorating. “If the centerpiece is taken care of properly, it should last through the Christmas holiday,” Luby said. To keep it fresh, she said, “the centerpiece will need to be watered every day and kept cool.” “You can use different shaped bowls or a different
number of candles or different color flowers and candles to create variations on the centerpiece,” Luby said. Luby said in addition to the Sips ’n’ Stems classes, the sisters will offer a bow-making class at 6 p.m. Dec. 14 for $35. “Participants for the bow-making class will choose from a wide variety of ribbon to work with in the class,” she said. “They will be able to take home a finished bow, as well as the rest of the roll of ribbon to decorate their house with or wrap packages with.” Luby said individuals may also purchase gift certificates for future Sips ’n’ Stems classes as holiday gifts. “We have had a very good response to the classes so far,” she said. “It makes for a really fun evening.” December 2010 - Lakeside Living & Logan Martin Homes

Begin with an oblong bowl, one piece of soaked oasis (the green water-retaining material) and two red taper candles. The soaked oasis sits inside the oblong bowl, and the two candles are placed in the soaked oasis.
Add greenery including pine, magnolia, cedar and holly. The greenery is cut at an angle and stuck into the oasis.
Add colorful red berries, either ornamental or fresh, as well as pinecones.
Add six red roses and white miniature carnations.
Add a colorful bow.

gly concrete wall or relaxing majestic oasis? Current trends are saying the latter. David Agee, vice president of GeoStone, a company out of Birmingham that designs and constructs segmental retaining walls, said the walls are used to basically retain the earth. “They take an area where there is a slope or a slight slope and create two flat areas,” he said. “They typically put up a structure that will enhance beauty of the property, something that is attractive. In lake properties we typically see someone that has lost some of the shoreline due to erosion. A retaining wall can be used to protect bank or shoreline.” Eric Mackey, with Mackey Pile and Construction, said the materials are varied for the walls and lots of different stones and formations are designed. The colors of the finished walls depend on the pigments 48

used. In some of the blocks, you can see gray, black, red and green. All those colors blend in well with the shoreline, Mackey said. “The block itself is one block for the wall then there is a cap block that fits on top for a finished look,” he said. “Then there is a wire-mesh system that goes in and holds the wall in place, giving extra support. A lot of gravel behind that lets water flow through the wall, so no pressure is on it.” If there is no pressure on the wall, you don’t have to worry about the future of the wall, Mackey said, because it will not fall over. Agee said homeowners often add a patio or steps that lead up to the wall, so it’s not only functional but also attractive. Retaining walls are often added to the lakeside home landscape, but Agee works with commercial construction as well.

GeoStone Vice President David Agee said the hardscape his company created for Carolyn Romanus on the east side of Logan Martin, was one of its most interesting and beautiful. In addition to the retaining wall, GeoStone’s designer put in several landings and patios leading to the water.
“In the past five years, the most interesting and most wellknown project we did was a wall to retain at The Summit,” he said. The Summit is an upscale shopping center on a hill overlooking U.S. 280 on the south side of Birmingham. “That whole addition of the parking deck is being retained by one of our walls. We’ve also certainly done some interesting, per se, residential walls, but nothing that large.” Mackey, who has been constructing retaining walls for four years, estimated he built 15 walls last winter and expects that number to be the same this year. He said all his work is done on the shoreline. Mackey and Agree both said that prices for the walls vary from project to project. Mackey said the cost depends on how long and how tall the wall will be and on how accessible the site is. “Each job is going to come out with a different estimate,” he said. “You can’t put a number on it. A wall 100 feet long that’s accessible is going to be cheaper than one that’s not accessible. There will be two different quotes.” Agee said the cost of the wall could be compared to purchasing a home. “How big of a house do you want?” he said. “If you want a very large house which will require a lot more retaining wall, it will be more expensive. If you incorporate stairs, it will cost more.” The most interesting project Agee recently constructed was also one of the most attractive ones, he said. Located on Logan Martin, the homeowners had unusable land from their house to the lake. “They couldn’t enjoy their property,” Agee said. “They had

to get on the dock if they wanted to do that. Now they have several landings and patios that lead down to the water.” Mackey said one of his more interesting projects was in Talladega, too. He constructed a 200-foot wall with a contour of the lake bank. “It was different,” he said. “It wasn’t just a straight wall. The contour added detail. The curve around the bank added a feature for looks. When you have a wall that curves around the shoreline, it adds character.”
