Praus Welcome New Employee! Trey Praus joined the Consolidated team on May 1st as a Combination Technician. He is a graduate of Trinity High School and lives in Dickinson with his wife, Amaya. He enjoys fishing, hunting, and all things outdoors!

Trey finds his co-workers friendly and willing to help and also enjoys working in our cooperative area outside Dickinson. Welcome Trey!

Funds Available

Consolidated Telcom is a member of the Rural Development Finance Corporation (RDFC). As a result, communities in our service area are eligible to apply for a grant of up to $3,000 for community-based projects. RDFC is making these funds available in order that more people become aware of their larger loan program that funds community-based projects and nonprofit and with low interest loans.

The Rural Development Finance Corporation (RDFC) is a nonprofit corporation that encourages economic diversification and community vitality through the generation of funding that supports sustainable asset building.

Funding for RDFC programs comes from fee income generated by Dakotas America LLC, a community development entity providing New Market Tax Credits in economically distressed census tracks across the United States. The North Dakota Association of Rural Electric Cooperatives provides support to RDFC.

Fresh Peach Cobbler

1/2 cup butter, melted

3 large peaches, peeled and sliced

1 1/2 cups white sugar, divided

1 cup flour

2 tsp baking powder

1/4 tsp salt

1 pinch ground nutmeg

3/4 cup milk

Preheat oven to 375 degrees. Pour butter into an 8-inch square baking dish. Combine peaches and 3/4 cup sugar together in a bowl. Whisk flour, remaining sugar, baking powder, salt and nutmeg together in a bowl; stir in milk just until batter is combined. Pour batter over butter and top with peaches. Bake 45-50 minutes or until cobbler is golden brown.

Rhubarb Cheesecake

CRUST:

2 cups flour

1 cup melted butter

2 cups oatmeal

1 cup brown sugar

Combine crust ingredients in a large bowl; mix until crumbly. Press about ¾ of crust into a greased 9 x 13 in glass cake pan, reserving the remaining crumbs for topping.

FILLING :

2 eggs, beaten

1 tsp vanilla

1/2 tsp cinnamon

2 (8 oz.) pkgs. of cream cheese

1 1/2 cup sugar

3 cups finely chopped rhubarb

Preheat oven to 350 degrees. In a separate bowl, combine eggs, cinnamon, sugar and vanilla; mix until combined. Add cream cheese to filling mixture, combined until smooth. Fold rhubarb into filling; pour over crust. Top filling with reserve crumbs from crust. Bake for 40 minutes; cool and refrigerate. Serve with whipped cream or ice cream.

Pear Muffins

1 1/2 cups flour

1/2 cup brown sugar, packed

2 1/4 tsp baking powder

1 tsp cinnamon

1/2 tsp ground ginger

1/2 tsp salt

1 medium pear, peeled and chopped finely

1 large egg

1/2 cup yogurt, plain or vanilla

1 tsp vanilla extract

1/2 cup vegetable oil

TOPPING MIXTURE:

3-4 Tbsps. finely chopped walnuts or pecans

3-4 Tbsps. Packed brown sugar

Preheat oven to 350 degrees. In a large bowl, mix first six ingredients together; stir in chopped pear. Whisk together egg, yogurt, vanilla and oil. Stir into dry ingredients until just combined. Do not over mix. Fill greased muffin cups about 2/3 full. Mix topping ingredients together. Sprinkle topping mixture over each muffin. Bake for 20 - 25 minutes, until lightly browned.

Lemon Angel Cake Bars

1 box (16 oz.) angel food cake mix

1 can (14 ¾ oz.) lemon pie filling

1 cup finely shredded unsweetened coconut

FROSTING:

1 8 oz. pkg. cream cheese, softened

1/2 cup butter, softened

1 tsp vanilla extract

2 1/2 cups powdered sugar

3 tsp grated lemon peel

Preheat oven to 350 degrees. In a large bowl, mix cake mix, pie filling and coconut until blended; spread into a greased 15 x 10 x 1 in. baking pan. Bake 20-25 min. or until toothpick inserted in the center comes out clean. Cool completely in pan on a wire rack. In a large bowl, beat cream cheese, butter and vanilla until smooth. Gradually beat in the powdered sugar. Spread over cooled bars; sprinkle with lemon peel. Refrigerated at least 4 hours.
