funfetti cookies A party would not be complete without sprinkles, and these Funfetti Cookies are an excellent addition to your next party’s dessert table. Have you ever tried adding a pudding mix to cookie dough? You end up with soft, chewy cookies packed full of flavour! When placing these cookies on the cookie sheet, make sure you space them at least two inches apart from each other as they do grow quite a bit. This recipe makes two dozen large cookies. For sprinkles, I use the Cake Mate sprinkles from McCormick Canada. The last time I checked, this brand of sprinkles is nut-free, so they’d be safe for a classroom party. Ingredients: •
½ cup unsalted butter, softened
•
½ cup sugar
•
2 eggs
•
1 cup all-purpose flour
•
1 package (4-serving size) instant vanilla pudding mix
•
1 teaspoon baking soda
•
2-3 tablespoons of sprinkles
Directions: 1.
Preheat oven to 350F.
2.
Beat butter and sugar together until creamy.
3.
Add eggs and beat well.
4.
Add flour, pudding and baking soda and beat until well mixed.
5.
Stir in sprinkles.
6.
Add cookies (two tablespoon size per cookie) onto greased cookie sheet.
7.
Bake for 10-12 minutes (until cookies brown on the bottom).
8.
Let cool on cookie sheet before removing to baking rack to cool.
