Óscar Gonçalves conta-nos que a família foi um pilar fundamental no seu percurso: “Existe todo um percurso familiar que sempre me fez viver rodeado pela cozinha e pela arte de bem receber. Foi ao lado do meu pai e do meu irmão que comecei a servir à mesa. E foi mais tarde, ao lado da minha mãe, que cozinhei o meu primeiro prato”. Hoje quem ocupa o lugar de chefe de sala e sommelier no restaurante é o irmão, António. O Restaurante G é o primeiro em Bragança a ser premiado com uma estrela Michelin e o chef mostra-se orgulhoso deste resultado: “Há muito que sentíamos que a qualidade dos produtos e da cozinha da nossa terra era merecedora desta distinção. É uma honra que a nossa família o tenha conseguido”. O papel da equipa foi fundamental nesta conquista. “Este prémio é o reconhecimento do valor que esta equipa tem”, diz António Loureiro. Costuma dizer-se que os amigos são a família que escolhemos e neste caso “a nossa equipa é a nossa família”, remata Óscar Gonçalves.
Nascidos para ganhar
Os chefs são perentórios quando questionados sobre o processo até à conquista da estrela Michelin. Até porque a sorte não acontece por acaso e nada se consegue sem trabalho. “Acho que não existe processo, existe sim trabalho com paixão, dedicação, produto e uma disciplina que ajuda a ter consistência”, garante António Loureiro. E desengane-se se acredita que por terem ganho uma estrela Michelin vão ficar de braços cruzados. Ambos querem continuar a aprender a evoluir como profissionais do setor. Óscar Gonçalves diz mesmo que “ser distinguido com uma estrela era uma ambição, mas o caminho passa sobretudo por continuar a cumprir com o principal objetivo: satisfazer quem nos visita”.

Chef Óscar Gonçalves tells us that his family was a fundamental pillar in his journey: “There is a whole family journey, which has always made my life surrounded by the kitchen and by the art of welcoming. It was with my father and my brother that I started as a waiter. In addition, later on, it was with my mother that I cooked my first dish.”. Nowadays, the headwaiter and sommelier in the restaurant is his brother, António. Restaurant G is the first one to be awarded a Michelin star in Braganza and the Chef is proud of this result: “We have long felt that the quality of the products and the cuisine of our land deserved this distinction. It is an honour that our family has made it.”. The role of the team was fundamental in this achievement. “This award is the recognition of the value that this team has”, states Chef António Loureiro. It is often said that friends are the family we choose and in this case “our team is our family”, finishes Chef Óscar Gonçalves.
Born to win The Chefs are peremptory when questioned about the process until the Michelin star’s achievement. Even because luck does not happen by chance and nothing is achieved without working. “I believe there is not a process. There is working with passion, dedication, product and a discipline that helps to have consistency”, assures Chef António Loureiro. Moreover, think again if you believe that because they were awarded a Michelin star, they will stand by and do nothing more. Both of them want to continue learning and developing as professionals of the industry.
