offers tasty, healthy options By Jennifer Lucarelli Contributing Writer Shrewsbury - While Kim Ferguson was raising her five children, she did everything from driving a school bus to selling real estate. In 2003, her youngest was old enough for her to try something new. Ferguson and her husband talked about starting their own business, especially one that he could help with after he retired from his high tech job. That’s when Ferguson took the leap and opened Apple Spice Junction on Route 9 in Shrewsbury. “It is a franchise and had 20 to 24 locations across the country,” she said. “At the time, we were located in a business park and did primarily box lunch delivery along with a café.” Earlier this year, they moved to a new location in White City and became a hybrid of a café and juice bar, serving healthy and organic juice blends. “We’re the first juice bar in the Apple Spice company, and we’re considered a hybrid, so we can try our own recipes,” Ferguson said. “We also serve sandwiches, and we make our bread from scratch unlike other restaurants.” Ferguson considers herself a small business owner despite being part of a franchise. “They gave us recipes for the café, but I suggested the juice bar,

and they are letting me run with the idea,” she said. Ferguson loves being self-employed. “I love dealing with the employees, and I enjoy the struggles of a small business,” she said. She also takes a great deal of pride in running a business that serves fresh and healthy foods. “The juice blends include six to eight servings of fruit and it makes eating healthy not expensive,” she added. She said she has customers who drink a juice drink for breakfast, then has one of their salads for lunch and then a healthy dinner. “I know one of our regulars said she lost 15 pounds from drinking our juices,” she said. “That’s what I love to hear.” One of the biggest parts of her businesses is catering. “Because we’re a small business, we can do anything to please the client,” she said. “We do a lot of box lunches for businesses, and we are able to modify our menu to accommodate a cancer organization that had a limited budget.” Last year, Apple Spice Junction changed its name to Apple Spice Café and moved to their newly renovated 100 Boston Turnpike location in the White City plaza. “We love our new location in White City – it’s great to be right next door to [gym] Planet Fitness,” Ferguson said. “We’re hoping if this location works out that we can grow our business to include other locations throughout the state.”

Their menu consists of breakfast sandwiches and eggs, café and Panini sandwiches, soups and salads for lunch and chicken pot pie and a few pasta selections for dinner. On a recent visit I tried the ham and cheese Panini sandwich, which was great with a side their homemade pasta salad. “We don’t use mayonnaise in our pasta salad,” Ferguson said. “We wanted to make our pasta salad healthier than other Apple Spice locations, so we were able to change the recipe – and people love it!” The Berry Juice Blend was also tasty and filling.
