It's a New Year with new opportunities for healthy and engaged living, and we are approaching it invigorated and revitalized. Buoyed by 50 years of cooperation, our Board celebrated our shared milestone throughout 2024 alongside new and old Member-Owners and Directors, and now our gaze turns to the new year - and the next 50!
Our celebration continues this year with the ability to pay MemberOwners a patronage rebate. This is directly related to the support of Member-Owners and the cooperative successes we share together. We also acknowledge the many contributions of our staff at both locations who worked hard to support one of our busiest seasons yet.
If you aren’t already a MemberOwner, now is the perfect time to become one and take advantage of the February OAD (Owner Appreciation Days). OAD events occur throughout the year and allow our Member-Owners to receive a 10% discount on a shopping trip of their choice during that month. These occur in February, June, and October.

Textile Recycling
During our recent Ten Tons of Textiles event, we collected about 7.3 tons of textiles to be recycled by Helpsy and Frederick County Recycling! This event is a great way to clean out your closet and make a positive impact on the environment. Look on our website and social media feeds for our next event in the Spring of 2025!
Cranksgiving
Thanks to our customers who rounded up their purchases at the register in November, the Co-op was able to donate more than $550 worth of food to the annual Cranksgiving Food Drive and Fundraiser! This event, hosted by The Bicycle Escape, benefits local families via the Frederick Community Action Agency.
Christmas Alive
From December 1 - 15th, we collected donations to benefit the local families in Frederick. With the help of our community, we donated $1,420 worth of fresh produce to help feed local families as part of the Christmas Alive program. Thank you again to everyone who donated and helped brighten the holidays for local families in need.
NATIFS Fundraiser
National Co+op Grocers (NCG) and its 165 member coops raised more than $139,000 for the North American
Traditional Indigenous Food Systems (NĀTIFS), a nonprofit dedicated to revitalizing Indigenous food systems and promoting cultural preservation within Native American communities. Through a promotion that ran from Oct. 30 through Dec. 3, NCG member co-ops donated 5¢ for every Field Day product purchased by their shoppers.
The Birthing Circle
In October and November, The Co-op collected new and gently used baby clothes, diapers and more to benefit The Birthing Circle, a non-profit in Frederick working to provide high-quality, knowledgeable education and support throughout the pregnancy, birthing, and postpartum process. Thank you to all of our customers who donated items, all of which have been distributed to local families.
FFOCAS Fundraiser
We were excited to partner with local non-profit Frederick Friends of Our County Animal Shelter to raffle free groceries for a year for as a prize for their annual fundraiser. One lucky raffle winner was awarded $6,000 worth of Common Market gift cards to use at either store throughout 2025 - an amazing prize! Funds raised through raffle ticket sales will be used to treat and rehabilitate shelter pets, enrich the animal shelter environment, and more.

The mission, the message, and the perspective. I was not the healthiest person previously, but I always had somewhat of a knowledge base that made it ever easier to jump into the rabbit hole of physical well-being and attentiveness to what we put in our body…I also needed a meaningful sidehustle!
If you were a fruit or vegetable, what would you be and why?
A plum; the second most cultivated fruit comes in one of the largest varieties with a swiss army knife of benefits; sweet, sour, then full of substance the astringency of a plum will always cause a reaction… a symbol of strength and fortune in Chinese culture.

Any pasta, and aromatic/herby steaks.

Soak in solitude, most people fear loneliness… I tend to embrace the dive, only way to find what you look for in yourself is to ask yourself.

What's the Deal with ?
Over the last several months, shoppers have continued to ask about Apeel products being used on produce at the Common Market. We want to take a moment to acknowledge the concern about food additives and clarify a few issues about Apeel.
First things first, Common Market’s vision statement includes a clause about providing high-quality, natural foods to the community. It also includes language about educating the community about food, health & wellness choices, and social & environmental issues in food production. We like to be transparent about food products sold in stores through product labels and our health attributes key.
So, what is Apeel anyway? Apeel Sciences is a California based company that makes a coating sprayed onto produce to extend the life of perishable fruits and veggies – organic and conventional. Two main products in question –Edipeel and Organipeel - are plant based, FDA approved coatings derived from the peels, seeds and pulp of fruit and vegetables. The sprays are intended to extend shelf life in order to reduce food waste from spoilage. Both products also contain oils and acids that turn into into mono and diglycerides during product processing. Mono and diglycerides are approved by the FDA but are most frequently found in processed foods rather than fruits and veggies.
Apeel Sciences gained notoriety last year when they were mistakenly tagged in a social media post about a British based company, also called APEEL, that was cited for a cleaning agent
that caused skin and eye irritants. The post went viral and misinformation was spread, with consumers convinced that the California-based Apeel Sciences was coating fruits and vegetables with the harmful chemicals found in the cleaning agent.
Because we want to be transparent about what our shoppers are purchasing and consuming, we asked our produce suppliers about their use of Apeel Sciences coatings. To our knowledge, and our suppliers’ knowledge, no producers or packers in our supply chain are using this substance on their produce. Furthermore, about 95% of Common Market’s produce is certified organic. Because Apeel’s coatings are not widely used in the organic marketplace, customers are generally unlikely to encounter Edipeel or Organipeel when shopping organic. From what we’ve learned, Apeel products are generally used at the request of certain grocers and distributors to extend the shelf life of produce. Our distributors have answered our questions and have confirmed that they are not using Apeel coatings.
The bottom line? The Common Market wants to continue to be a trustworthy source of healthy food for all community members. Apeel Sciences products are not used in our stores.

Over this years’ issues of the Spoonful, we’ll be focusing on Functional Foods – the parts of your daily diet that, according to the International Food Information Council (ific.org), may provide benefits beyond basic nutrition and could offer health advantages and reduce risks of chronic disease.

Carrot Top and Pepita Spread
Serves 4. Total time: 15 minutes.
1 cup carrot top leaves, packed
1⁄2 cup pepitas (raw pumpkin seeds)
1 large garlic clove
1⁄2 teaspoon salt
1 tablespoon lemon juice
3 tablespoons extra-virgin olive oil
1. Pick the leaves from the stems of the carrots, packing the leaves in a cup. Wash and spin dry or pat dry with a clean towel.
2. Place the pumpkin seeds in a medium skillet and swirl over medium-high heat until the seeds start to smell toasty and pop. Transfer the seeds to a food processor bowl.
3. Add the carrot leaves, garlic clove and salt and process until minced finely. Scrape and repeat. Add the lemon and olive oil and process until smooth.
4. Transfer to a storage jar and store in the refrigerator up to 4 days.
Use this peppery, savory spread like a pesto on pizza, stir it into cooked rice or jazz up a simple sandwich.
Potatoes
Boiled and roasted potatoes freeze and reheat very well.

Milk
8 cups veggie trimmings
8 cups water
1 bay leaf
1 teaspoon black peppercorn
1⁄2 teaspoon salt
3 dried mushrooms, optional
1⁄4 cup white wine, optional
1. Combine the veggies, water, bay leaf, peppercorns, salt and mushrooms and bring to a boil over high heat. Lower the heat immediately (boiling too long makes it bitter) and cover, to simmer very gently. Leave covered so the water will not boil away. Add wine, if desired.
2. Set a timer for 45 minutes.
3. At 45 minutes, strain the stock, and discard the veggies (they make great compost).
4. Taste the stock; add seasonings as desired.
5. Use as a base for soup or freeze for future use.
Save onion skins, carrot peels and other trimmings in the freezer until you have enough to make stock.
Instead of buying a half-gallon, buy two quarts. The unopened one will keep longer.
Cheese
Firm cheeses freeze well; shred and freeze a pile for a future pizza.
Sausage, Kale and Potato Soup
Serves 6. Total time: 30 minutes; 20 minutes active.
1⁄2 pound sweet or hot Italian bulk sausage
1 small onion, diced
2 large potatoes, cubed to make 3 cups
1 large carrot, chopped
1 clove garlic, crushed
1 14.5-ounce can chicken broth
1 15-ounce can diced tomatoes with juice
1⁄2 bunch kale, sliced
1⁄2 teaspoon dried oregano, crushed
1⁄2 teaspoon dried marjoram, crushed
1⁄2 teaspoon salt
1 pinch crushed red pepper flakes, to taste
1. Place a large pot or Dutch oven over mediumhigh heat and crumble the sausage into the pan. Stir as the sausage starts to sizzle, then add the onion. Cook, stirring occasionally, for about 4 minutes, until sausage is browned and cooked through.
2. Add the potatoes, carrot, garlic, chicken broth, tomatoes, kale, oregano, marjoram and salt. If desired, add red pepper flakes. Cover and bring to a boil, then reduce the heat to low and simmer for about 10 minutes.
3. When the potatoes are tender, serve.
An easy way to use up whatever vegetables happen to be in your fridge — especially those past their prime but still fine to eat — is to feature them in soups and casseroles.
Up to 2 cups of shredded, cubed or chopped leftover chicken, ham or other meats plus one additional egg (optional)
1. Preheat the oven to 400°F. Lightly oil a 2-quart baking dish. In a large saute pan, heat the olive oil and add the onion, veggies and carrot and bring to a sizzle over high heat, then reduce the heat to medium. Stir often until the carrot is soft, about 5 minutes. Add the herbs and cubed bread, turn to mix and transfer to the baking dish.
2. In a medium bowl, whisk the eggs with the milk, salt and pepper, and pour over the bread mixture in the dish. Use the spatula to move the cubes to allow the egg mixture to seep through it all, then press it down to level the top. Cover with the cheese and sprinkle with parsley.
3. Bake for 30 minutes, until the cheese is wellbrowned and a paring knife inserted in the center of the pan comes out with no raw eggs on it. Let cool for about 5 minutes before serving.
Classic Caesar Salad
Serves 6. Total time: 40 minutes; 15 minutes active.
1⁄2 loaf Italian bread
2 tablespoons extra virgin olive oil
1⁄2 teaspoon salt, divided
1⁄4 cup mayonnaise
1 teaspoon Worcestershire sauce
2 cloves minced garlic
1 tablespoon anchovy paste
1 teaspoon Dijon mustard
2 tablespoons lemon juice
1 head romaine lettuce leaves, washed and torn
1 chunk Parmesan cheese (about 4 ounces)
1. Preheat the oven to 350°F. Tear the bread into ½ inch chunks and place on a sheet pan. Drizzle with the olive oil, sprinkle with salt and toss to coat. Bake for 20 minutes.
2. In a medium bowl, combine mayonnaise, Worcestershire, garlic, anchovy paste, Dijon, lemon juice and salt and stir to mix.
3. Place lettuce in a large salad bowl. Add the mayo mixture and croutons. Toss to coat. Use a vegetable peeler to shave the Parmesan over the salad. Serve immediately.
Don’t toss it! Turn stale bread into tasty toasted croutons for a Caesar salad or use it to thicken ribollita and other stews.
5. Total time: 45 minutes; 25 minutes active.
1 tablespoon olive oil
1 medium onion, chopped
3 large garlic cloves, chopped
1 small zucchini, chopped
2 ribs celery, chopped
2 large carrots
1 bunch kale, stems chopped, leaves chopped
3 cups vegetable stock
2 teaspoons dried rosemary
1 cup tomato sauce
1 teaspoon salt
1 can cannellini beans, drained
7 slices bread
Parmesan cheese
1. In a large pot, heat the olive oil over mediumhigh heat. Add the onion and garlic and stir for 5 minutes or so, until the onion is clear. Add the zucchini, celery, carrot, kale stems, and stir for a minute, then add the stock and rosemary and bring to a boil. Reduce to a simmer and cook until the vegetables are tender, about 10 minutes. Stir in the tomato sauce, salt, kale leaves, cannellini beans and 2 slices of crumbled bread and simmer until the kale is softened.
2. Serve soup over a slice of toasted bread and top with freshly shredded Parmesan.
