Field to Fork: Bringing Local to Your Doorstep BY AUSTRIA COHN My mom was a simple cook: we ate protein and two veggies for dinner almost every night. At the time, this felt extremely boring. Now that I’m a mom, I understand the challenge of feeding my family after working all day, decision fatigue, meal planning, sports, shopping, etc. In an ideal world, we would all eat fresh ingredients from local farmers. Unfortunately, with the long to-do lists and demanding work schedules, shopping, cooking, and eating local can be unrealistic. There are only so many hours in a day, and getting food on the table can be a challenge in itself. Joy Rubey, a Denver mom, wanted to get seasonal local food on her family’s table, but she battled with the same problems. “My mom was a simple cook: we ate protein and two veggies for dinner almost every night. At the time, this felt extremely boring,” Rubey recalls. “Now that I’m a mom, I understand the challenge of feeding my family after working all day, decision fatigue, meal planning, sports, shopping, etc.” Seeing the need in the community, Rubey founded Spade & Spoon, a meal delivery service that works with local farmers, ranchers, and bakers to easily bring healthy, local food to the community.

“I knew way too many people my age battling cancer, and I wanted reassurance that the food I was feeding my daughter wasn’t filled with chemicals, antibiotics, hormones, colors, preservatives, etc,” Rubey says. “We care how food is produced, how people and animals are treated, and the impact we will have on our planet now and in the future.”

“I just wanted great food and recipes delivered to my doorstep,” Rubey says. “Once I made the connection that local meal kits could solve both of our issues, I made the jump and started a side hustle. We quickly realized that getting good food on the table is a pain point for so many families, and the business took off.”

The family-owned business is taking steps to change the food system by bridging the gap between local farmers and the community. “We work with the producers that have organic standards that maintain sustainability and regenerative practices,” Rubey says. “We believe that if we can make life easier for both eaters and local producers, we can begin fixing our broken food system.”

When the Seed Sprouted

Rubey’s husband, Dustin, took a leap of faith, found a piece of land to lease, and started Acme Farms + Kitchen. With marketing, customer service, distribution, and social media, the couple soon realized how hard it is for local farmers and makers to reach

4 Tips

For Reinstating Routines After the Holidays BY AUSTRIA COHN

The holiday break looks different for every family. Whether your student had a productive, hobby-filled break or spent way too much time on their screens, getting them back into the school grind can be a daunting task. Lena McCain, Founder and Clinical Director of Interfaith Bridge Counseling, PPLC shares, “No matter what age you are, whether you’re a young kid or 18, or even as an adult, we all fall out of our routines in the holiday season.” Maybe you’re excited about the new year, or the resolutions are already weighing you down, whichever situation you’re in, here are some tips to making the transition after the holidays a little bit easier.

1. A Day to Decompress

Most of the holiday season is packed with visiting friends and family, cooking eccentric dishes, and attending classic Christmas events around town. What comes with all this fun is routines and norms are disrupted, and social batteries are drained. “Everything’s chaotic [during breaks]. And then we’re supposed to just go back into our norm, but that’s not how the nervous system works. The nervous system needs some

downtime,” McCain explains. “Make sure when you’re planning your holiday season that you at least add in one or two days at the end of the whole rush to take a few deep breaths and just hang out at home.” If you’ve been cooking for the holidays– take a break! Order in, relax, maybe even watch a movie with the family, and just decompress.

back into the groove, model the routine for them. “I’m a big advocate for parents not asking or demanding their kids to do anything we aren’t willing to do ourselves. If you want them to start changing their routine…you need to also be ready to get back into that norm,” McCain explains.

It’s important to ease your child back into their routine before school starts up again. “Before we start implementing the full routine again, we want to take time to decide what is really the priority of the routine,” McCain says. “Usually, the most important one is getting back on a normal sleep schedule.” Have your child go to bed and wake up 15 minutes early so they can slowly start getting back to their regular schedule. Once the family begins feeling more comfortable with the sleep piece of the routine, add in an additional part, like getting dressed for the day before noon.

If you follow the three tips above, and your child is still struggling, breathe and find patience. “We can do all these steps, and it’s still not going to go as perfectly as we hoped it would. We have to remind ourselves and everyone in our family to be patient with one another, and then also be really patient with that internal voice in our head,” McCain says. “Things will be back in the groove within a week or two.” The holiday season is stressful for parents, from buying gifts to finding a babysitter or working from home with the kiddos who are now off school. Check off the transition back to school by planning ahead of time and being patient.

Beyond ABCs at Home: Making Literacy Part of Your Family’s Lifestyle BY JAMIE MAYES

As an education consultant, I found myself overwhelmed this summer with email after email from parents with a similar request: “My child is struggling with reading. Please help.” Each plea tugged at my heartstrings. In addition to these clients, my phone buzzed with close friends whom I’d assumed had their children’s literacy skills–reading, writing, speaking, and listening–under control. But their children, like so many others across the country, are experiencing the long-term impacts of COVID-19 that go beyond physical and mental health.

Start a Family Book Club

O

ur nationwide literacy problem is nothing new. For nearly 20 years, student literacy has been an urgent discussion in the education community. The widening learning gaps have been attributed to excessive absences among teachers and students and the emotional trauma brought on by the stress and anxiety of going to school during the pandemic. Multi-state licensed therapist and clinical social worker Alexis Young says that while schools sought to use technology to bridge the educational gap during the pandemic, there has been a drastic increase in anxiety and inability to focus because of overexposure to online programming and social media. When I first meet with new clients, I always remind them: “You are the first teacher your child ever had. Let’s talk about how you can teach literacy at home.” While many parents are open to working with their children, they are unsure how to begin. They also wonder how to fit teaching literacy into their already busy schedules. As a single mother, I can relate. I spent several years figuring out how to navigate my role as a parent, high school teacher, and business owner. To my delight, my young son played a vital role in helping me develop a plan that strengthened our family and jump-started his literacy. One of the greatest misconceptions is that literacy has to look a certain way–specific terminology, well-structured lessons, and rigid thinking processes. Literacy should and can fit into our normal lifestyle with ease. Here are a few ways to integrate literacy into your daily family life. First, know your child’s reading level–often available through standardized and other reading tests given at school–so you can provide the best literacy support possible. If your child’s school does not provide such information, community-based literacy centers may be able to provide assessments.

When people think of book clubs, Oprah Winfrey’s famous book picks or a group of older women sipping wine and reading the latest popular novel may come to mind. However, book clubs are a growing trend that can benefit everybody, including parents and their children. I’ve encouraged many parents to start a book club in their homes. It is one of the easiest ways to identify your children’s literacy problems and create a literacy culture in the home. If your children are around the same age, have them vote on one book each week or month for the entire family to read. If there is a wider age gap, select a theme or holiday within the month and choose books based on that theme for each age and reading level. Then, select a day for the family to discuss the books. To get the discussion rolling, try writing questions on slips of paper and placing them in an empty fishbowl or other container. In addition to cultivating a culture of literacy at home, books offer a great way for parents to talk about subjects that affect children without the discussion feeling too uncomfortable. Cook New Recipes as a Family

When I was still teaching full time, I used to come home exhausted in the evenings. I had three missions: spend quality time with my son, prepare dinner, and get ready for bed. The “quality time” goal always seemed to slip just out of reach. As I cooked, my son watched television, played learning games on his tablet, or scribbled in a coloring book at the table. After dinner, bath time and preparing for bed zapped what little energy I had left. But this cycle shifted when my son was two. One evening, he pulled his step stool up to the counter next to me and asked if he could help cook dinner. His inquiry had me so befuddled that I stumbled around trying to figure out what a toddler could do in the kitchen. That first night, we experimented with stirring, grabbing ingredients from the refrigerator, and looking at recipes together. I soon realized that making cooking a family experience encouraged vocabulary enhancement and comprehension–two essential literacy components. My son responded well to identifying objects, learning to read easy labels on food, and using cooking language. I used index cards to label different objects in the kitchen.

Each evening, I would take a few minutes to review the labels before we cooked dinner. Eventually, he practiced the words on his own and used them in conversations. This kind of labeling does not have to be relegated to the kitchen. Try labeling toy boxes and other items in all of your rooms. The extra benefit of this tactic is that it does not require constant direct engagement to be effective. Our fun and success with family nights in the kitchen inspired my son and me to write a cookbook entitled Cooking with Mom to encourage other families to spend time together. Our book shares tips for parents to engage their children in cooking and teach kitchen safety. My son, now seven, has enjoyed his learning experience so much that our book has led to speaking engagements and a YouTube channel called Cooking with Fam.

Make Libraries Great Again

Libraries are one of the most underused places for free literacy resources and activities, yet they are the foundation of literacy and intellectual stimulation for learners of all ages. In a world of social media and apps, libraries have sought to regain the attention of the crowd that used to pack their building for computer use, free magazine reading, story times, and other literacy-based activities. While the internet is a hard market to compete with, the public library isn’t giving up–especially during a time when literacy support is needed more than ever. Reach out to your local library to discover all of the resources they provide, and discover what additional literacy assistance resources exist. For many years, I believed children lacked interest in reading because other things were more appealing to them. But my philosophy on student literacy and learning evolved during my 13 years as a classroom teacher. I realized that the culture I established around reading, the patience I demonstrated, and how I implemented literacy strategies in my classroom, influenced my students. As a parent, I try to maintain the same passion for literacy with my son. Each night, we set aside time to read, and we like to watch movies that correlate with our books’ themes. It’s been amazing to listen to him make connections between the books we read and movies we watch. Literacy is ingrained into everything we do–from learning how to use the latest social media platform to learning how to perform life-saving surgeries. My hope is that we continue to search for fun ways to shift literacy from strictly a school concern to a part of our daily family lifestyle.

Navigating Divorce: Present a United Front BY AUSTRIA COHN

The fairytale stories we read as children about a prince and a princess falling in love and having a magically happy ending is just a tale for many. In fact, almost 50 percent of marriages in the U.S. end in divorce, states Wilkinson & Finkbeiner. It can be devastating, frustrating, and overwhelming to decide to get a divorce, especially if there are children involved. If you’ve made the difficult decision, here is how you can discuss, handle, and care for your child while going through this time.

The Discussion

After making the decision, one of the first steps is having a discussion with the children. This conversation can be heartbreaking for both the parents and the little ones. Depending on the age, maturity, and family dynamic, this will look different for everyone. If possible, it can be beneficial for children to hear the news from both parents together rather than just one. “Children look to us for security, and a divorce inevitably shifts the family foundation a child has come to rely on,” states the Child Mind Institute. “But it is also a very important conversation because it gives parents an opportunity to try to lay the groundwork for a healthy new start for the whole family.” Following a divorce, visitation schedules lead to reduced time with each parent, and children have two different homes. As parents, it’s crucial to acknowledge and address these shifts in order to support the well-being of the children involved. “With a child who is young, maybe in grade school or younger, I think the best thing to always tell kids is ‘Mom and Dad both love you,’” says Ashley Opfer, A Law Partner at Opfer | Campbell | Beck P.C. By telling and reinforcing to children that both parents love them and nothing will change that, can help them digest the news. Opfer also encourages parents to invite appropriate questions, like “Will I get to bring my dog with me to the other house?” For middle and high school kids, it’s important to let them know what’s going on because they might make assumptions or blame themselves. Parents don’t need to go into the details of why

the marriage failed but, instead, find a median so they aren’t completely out of the loop. “I think the courts in Colorado for a while had leaned towards keeping all kids in the dark in the hopes that it would allow kids to maintain a really positive relationship with both parents because they wouldn’t be tainted against either parent,” Opfer says. “But I think the taint will come if you keep them in the dark more than it would if you’re just being honest with them.”

Avoid the Blame Game

If possible, it’s important to avoid putting blame on one sole parent. Ashley Beck, another Law Partner at Opfer | Campbell | Beck P.C., points out that adults tend to want to explain why something happened, but this can have negative consequences. Beck offers a few ways to explain to children without putting the blame on one parent: • We don’t work together in the marriage anymore. • We wanted to create the best situation for you. • You may have noticed that Mom and Dad fight a lot, and we wanted to create an environment where you didn’t have to listen to that. Another person you shouldn’t put the blame on is the judge because it can make children afraid and not trust the legal system. Opfer explains that there are people put in place to help families through a divorce, but if children fear the court system, those individuals can’t help. Moreover, don’t discuss or explain what specifically is happening in the legal process. Saying things like “I’ve filed a motion to restrict your dad’s parenting time” is extremely harmful and confusing for children.

Behavior Issues

Opfer tells clients to expect behavior changes even if it’s a standard divorce because any level of change in a child’s life will produce some sort of issue. Common behavioral changes include

children becoming frustrated more easily or a reversion of milestones like having trouble sleeping or having accidents. “Those are all really normal because change produces anxiety in any human, especially in young kids who don’t really understand,” Opfer says. “They haven’t lived long enough to have the foresight to see what’s going to happen in the future and to know that this will work itself out eventually.” Children adapt to change much better than adults, so the quicker parents can get back into the new routine, the better. Yet, if these behavioral changes occur or a child continues to struggle with emotional dysregulation after the divorce is resolved, it’s a good indicator that the child would benefit from therapy. One behavioral problem that should raise some concern is if a child is being secretive with one parent, like saying, “Dad told me I can’t tell you.” Parents should not be pulling information from a child about the other parent, but if a child becomes secretive, it is a good idea to reach out for help.

Your Child Comes First

Put your child’s needs above the feelings towards your partner. Invite questions, be patient, and make the most of this change. For little kids, explaining they get to have two Christmases and two birthdays can be exciting. When Rebecca Barrilleaux’s children were born, she wanted them to receive an individualized Montessori education. As she began searching for a Montessori school, Barrilleaux was disappointed with the schools she found “A lot of schools would have some principles, or they claim to be play-based or child-led, but there wasn’t really the structure and the emphasis on the academic curriculum within Montessori,” says Barrilleaux. “The schools that we did find that met our standards had waitlists that were two to three years long.” Seeing the need in the community, Barrilleaux and her husband set out to start a Montessori school that met their and other children’s needs. In 2018, Barrilleaux became the Head of School for Midtown Montessori Academy, which provides an authentic Montessori education for children ages eight weeks to sixth grade. “Montessori is great for children who both struggle and are incredibly gifted because the instruction is so individualized to meet their needs,” Barrilleaux says.

To create a community and give every parent a voice, Midtown Montessori meets with families to discuss their goals and their child’s needs. Where is Mapleton Public Schools? “It’s a common question,” says Charlotte Ciancio, Superintendent of Schools in Mapleton. “And I like to say we’re pretty much the ‘heart’ of the Denver-metro area.” Located in the southwest corner of Adams County, one of the fastest-growing counties in Colorado, Mapleton Public Schools is where major arteries, including Interstates 25, 76, 270, and Highway 36, intersect. Truck farms put the district on the map more than a century ago. Today, an innovative, responsive, and resourceful approach to education keeps Mapleton in the local, national, and even international spotlight. Mapleton has supported a full-choice, small-by-design approach to education for more than two decades. If you’re looking for an Early Childhood Education (ECE) program for your little one, Rocky Mountain Prep (RMP) is one of the only Denver programs that runs a unique charter school model. The curriculum supports the whole child through social, emotional, and academic learning, which is key during the early developmental years. Especially in preschool, when young students transition to a new classroom with a different caregiver, they experience regression in social and academic learning. To combat this, RMP students stay with their teacher for two years, allowing them to form strong attachments with their peers and caregivers. This model has children in mixed-age classrooms during the years three and four. “This approach shows stronger learning results where the students who have been with us are about six to eight months ahead of the four year olds who are entering the program for the first time,” says Callan Quiram, the Senior Director of ECE. “Additionally, having older children model social skills for younger children helps them to grow and advance socially in a way they wouldn’t have access to if they were the sameage peers.”

Experience Close Encounters with Exotic Species Start the New Year off right with the exciting and immersive learning program Behind the Scenes: Experience Close Encounters with Exotic Species. Grades 1-12 will explore the Downtown Aquarium in a unique way by stepping into a biologist’s shoes for a day. Behind the Scenes is a five-hour program (beginning at 9 a.m.) where students will dive into the intricacies of the biologists’ careers, gain valuable insights through “staff-only” areas, and even get to help the staff prepare daily meals for the animals. The program isn’t just an educational experience but an immersive journey in which students will gain a unique perspective of the aquarium. If your child is an animal lover, interested in becoming a biologist, or

is trying to decide what career path is right for them, this is an excellent opportunity for them to become excited about school and what comes after. The program creates a bridge between classroom learning and practical application. Participants are advised to come prepared with closed-toed shoes and clothes that can get dirty and wet. The program is $65 per person, and this is a drop-off program, which includes lunch, T-shirts, and all the necessary supplies.
