London based Anna Barnett released her debut cook book ‘Eat the Week’ in 2015 and spent several years writing ‘The Reluctant Vegetarian’ Blog for The Independent (newspaper). She currently writes and supplies recipes for Vogue, Grazia and The Arcadia Online while also running her own website www. AnnaBarnettCooks.com. Anna regularly hosts pop-up restaurants and caters private events.

A small town girl from North Carolina, Natalie was living in Seattle in 2013 when she left her career job and made the decision to dedicate her life to building BeautifulBooze.com. In the years since, everything has grown exponentially, allowing her to travel the globe while sharing her experiences and recipes with a much broader audience than she could ever have anticipated.

Mary E. Nichols has been a well known and respected photographer in the design and architecture world for over 30 years. Her photos have appeared on the covers of nearly every shelter magazine published, including 60 of them on Architectural Digest alone, as well as many books relevant to the field. These clients along with her hospitality and commercial clients have made use of her talents all over the world. Mary has also been the focus of many professional articles on the craft of architectural photography.

What are these horses? What are these white fences? And where do we sign up?” questioned stylist Belén Salomon on her first trip to Hidden Hills. For Belén and her husband, YouTube personality Alejandro “Salomondrin” Salomon, the peace and safety of the neighborhood was its main attraction.

Belén is a fashion marketer and stylist whose best client is her husband, a daily vlogger who has amassed over 600,000 YouTube subscribers. His eccentric car collection, from Ferraris to Lamborghinis encased in rainbow wraps, is what has helped him to command the Internet’s attention. Now alongside reviewing cars, his vlog features daily adventures with his friends, which provides a hilarious and entertaining glimpse into Alejandro’s remarkably colorful and comedic style.

In gaining his following, however, the Salomon’s lives had to adapt. “We realized we needed privacy,”

MARRYING BELÉN’S FASHION EXPERIENCE WITH ALEJANDRO’S LOVE OF EXOTIC AUTOS, THE SALOMONS HAVE BUILT A THRIVING BRAND.

Belén said of their move. Alejandro’s fans were beginning to unexpectedly show up at their house in Hancock Park.

When they started to look for a new home in December, Belén used real estate apps to research Hidden Hills. Awed by the expansive houses and convenient location, she and her husband drove across the city to visit. By February, they had moved in. “We’ve never really lived in the suburbs before,”

Belén said. “But we never want to leave.”

A flatbed truck was needed to transport all ten of their cars to their new home in Hidden Hills, including their Rolls Royce and magenta Porsche Carrera GT.

Inside, their home doubles as a studio where they work each day, producing their online content. While Alejandro uses the space to edit videos, Belén uses it to update her fashion blog, stylenotesbybelén.com.

Before he began to make YouTube videos, Alejandro produced movies and lived in the same apartment complex as his soonto-be wife, Belén. “The reason we met is because of our dogs,” Belén laughed. “When I went to work, my neighbors would watch my dog, Zoey Alejandro would go over to hangout with them, so he met her first.”

Alejandro said he knew he would marry Belén after only speaking to her once. Not far after their first encounter, Belén began to

style the actors of his films. On the side, she continued to put together collections, titled with her signature “by Belén” name.

As Alejandro’s following grew exponentially, he asked Belén to make a collection for himself. She has now completed two collections for him, called

“Salomondrin by Belén,” and runs her own fashion website, which reaches an extensive, majority-male audience. “The advantage I have is that I have Alejandro,” she explained. Working together,

she picks out his outfits for each of his videos.“He’s spoiled,” she laughs.

Having collectively lived in Spain, Mexico and New York, the couple is thrilled to have found a home in Hidden Hills. “We know our neighbors, which is crazy,” Belén said. “Everyone here is so nice.”

They are thankful, too, that this home fits all of their cars.

Clothing, wardrobe and interior designer, Lindsey Colhoun wanted to design and build the home of her dreams. She turned to her mother, Pamela Galloway of Pamela Galloway Interiors, for guidance and together they created a rustic, yet modern place that welcomes all who enter to enjoy and savor the experience of this impeccably designed house.

As she conceived her dream place, Lindsey wanted to stay true to the ranch/casual style of the Hidden Hills area, while at the same time adding sophistication. She mixed woodsy materials

with modern and even some industrial elements, all to stunning effect. The lightcolored wide plank wood floors paired with the highceilings, white walls and metal framed windows are beautiful and natural. The motherdaughter duo worked with architect, George De La Nuez of Rocha Nuez Associates to design the remodel. The approximately 6,400 square foot house reflects Lindsey’s love of entertaining and understated luxury, and has a casual aspect that invites visitors to put their feet up and unwind. Working closely with her mother, she selected all the materials based on her love of textures and colors. The front entry has a

Pamela used her years of interior design experience to manage the project and fulfill Lindsey’s vision. The kitchen is spacious with white cabinets, two islands, a deep gray custom-built hutch that acts as a coffee station and serving area, and a pantry that has a sliding barn door at its entrance. Inside the pantry, is copper sheeting on the walls and thick, gray floating shelves. The high ceiling is covered with tongue and groove wood painted white, adding warmth and texture to the room.

Each bedroom is a suite with large closets, an attached bathroom and plenty of storage space. The master bathroom continues the appealing modern/ rustic mix with white tiles, plenty of mirrors, a large porcelain tub, a vintage rug and a simple wood bench alongside the tub to hold towels and other bathing accessories.

Inside the gates of Hidden Hills lives 13-year-old fishing prodigy, Miles Ostrow, and his family. While most kids his age are thinking about catching up with friends, Miles is thinking about catching the big one. Ever since a trip to Troutdale at the ripe age of two with his grandfather, Miles has been hooked on fishing. Little did his grandfather know, that was the day he would not only become Miles’ mentor, but also that his naturally-talented grandson would grow up to catch a 550 pound Black Marlin. This hefty accomplishment occurred in

December of last year at Tropic Star Lodge in Piñas Bay, Panama. It is experiences like this that Miles explains why he loves fishing. “I get to see new parts of the world when I go fishing,” says Miles, having just returned from a fishing expedition to Alaska the day before this interview. “At sea, I get to see things you normally would not see on land.”

At the top of Miles’ list of fishing spots to visit next is the Great Barrier Reef, where he fears fish one day will be extinct.

Miles attributes being a lucky angler to his age. “Most anglers are adults, I am only 13, so it gives me more time to learn”. He also claims that it doesn’t hurt that he lives in Southern California, which is a top 50 fishing spot in the world and gives him access to a variety of fish including yellowtail, halibut, sea bass, and tuna. It also provides him with the opportunity to fish twice a week during the summer and once a week during the school year. The Malibu Pier has become one of his local spots where you can find him often. When asked what advice he gives other young fishermen, Miles replied, “If you want to be a fisherman, start as young as you can. Fishing takes a lot of patience, so don’t get frustrated.” He also had advice for his other peers that want to pursue their passions, “Don’t be discouraged, keep doing what you love to do.”

Despite spending countless hours out at sea, Miles still finds time to do the things he loves. He is going into 8th grade at AC Stelle Middle School, loves social studies and history, and plays on two basketball teams: Calabasas Rec league and Courtside Hoops. He loves being a resident of Hidden Hills and part of the tight knit community where most of his friends live. Miles likes being able to walk to his buddies’ houses and enjoys going to the Thursday night BBQ’s. Miles also enjoys sharing his bounty with his friends and recently made salmon sashimi from his recent catch in Kodiak, Alaska.

At 13, Miles still has a lot to accomplish. He is very interested in business. When not fishing,

playing basketball or hanging out with friends, Miles resells clothes including stylish threads from Supreme, Beat, and Air Jordan. Surprisingly, Miles doesn’t aspire to make fishing his profession, but rather would like to go into wealth management or private banking, but this does not mean that he will give up on fishing. He wants to make changes in the industry, including amending the rules in the state of Alaska where he feels politicians do not have experience in fishing. “They think they can make laws that benefit commercial fisherman and don’t do anything for regular fisherman,” claims Miles.

Miles Ostrow is a kid with a lot of ambition and interest. He certainly is riding a wave of

success on his fishing endeavor. Wherever his paths takes him, Miles confidently claims, “One hundred percent, I will fish for the rest of my life.”

Rarely do we get the opportunity to right a great wrong and almost never are we allowed to do it on the scale that the proposed wildlife crossing at Lindero Canyon in Agoura Hills presents. In the 1960s, the 101 Freeway was constructed and bisected the Santa Monica Mountains, permanently separating various forms of wildlife from their natural habitat. The eight-lane concrete highway created an impenetrable barrier that few animals safely cross. After thirty years of research, design and meetings, the 165 foot wide by 200 foot long wildlife overpass above the 101 Freeway is close to becoming a reality. It will connect the Santa Monica Mountains on the south with the Simi Hills and the Santa Susana Mountains. Imagine the ability to roam from Malibu all the way

Twelve mountain lions have been struck and killed crossing the 101 Freeway since 2002 and The Mountains Recreation and Conservation Authority (MRCA) work tirelessly to help prevent future mountain lion deaths. The MRCA recently purchased a 71-acre parcel of land in Agoura Hills that will provide key connectivity for the wildlife crossing over the 101 Freeway.

The culmination of the planning for the wildlife crossing began

in 2012 with a meeting between Beth Pratt-Bergstrom, Regional Executive Director of the California National Wildlife Federation, who worked for years in the national parks of Yosemite and Yellowstone, and Jeff Sikirch of the National Park Service. Pratt-Bergstrom was told about the plight of mountain lions and asked, “How can I help?”

Sikirch mentioned this ‘little wildlife crossing’ they were working on and PrattBergstrom agreed to take on a leadership role. Her

#SaveLACougars campaign works to protect “Southern California’s mountain lion and to advocate for the critical habitat linkages they require to ensure a healthy future for people, mountain lions and other wildlife…” Her devotion and passion for the project speaks to her understanding that this is a farsighted project that the world is watching. There are other successful wildlife crossings, but none of this scale in an urbanized setting.

Senator Henry Stern works tirelessly to educate the public about the great need for the wildlife corridor. “At first it appears to be an awkward fit; a metropolis sitting alongside nature, but then the beauty of adding wildness to our lives, makes perfect sense,” said Senator Stern in our meeting. “It shakes us out of our increasingly digitized lives and enables us to feel more human, more alive.”

Some want to build concrete monuments, while Senator Stern wants the public to

see the monuments nature already offers: hawks soaring above, vegetation that is native to California, and mountain lions and other mammals able to freely live, eat and breed. The overpass will help to mitigate the damage done to the ecosystem. Senator Stern hopes through this and other environmental measures to “have an environment that will support the future grandchildren of this planet.”

People question how the animals will know to cross at the overpass and the answer is simple. The path will be constructed where a natural crossing existed long before construction of the freeway separated the habitat. Also, the wildlife corridor will be landscaped in native plants and grasses to create an environmental funnel, as sound barrier walls lower freeway noise and little artificial light will cover the crossing. This will allow the animals to hunt freely at night with the connectivity that they need. People will be able to traverse the path during the day and experience the

City Council member, Paul Koretz of District 5, says, “Wildlife are our barometer for the health of the world. Therefore, it is our responsibility to make sure that we create the wildlife linkage that allows the animals, birds and plants to flourish as they were before we wreaked havoc on their migratory pattern with the construction of the 101 Freeway.”

To be able to live in an urbanized setting, side by side with wildlife, offers a rare opportunity to maintain the comforts we are used to while re-learning to appreciate nature and wildlife. “The ecosystem is fragmented and if not protected it starts to fail,” says Pratt-Bergstrom. As the mountain lions have become isolated, their genetic diversity has shrunk due to inbreeding,

science has said, “We as human beings depend on natural ecosystems for food, clean water and even safety, such as the coastal habitats that protect us from storms and flood. These ecosystems are made up of individual species. When they disappear, the systems that support us can unravel.”

Consider the east coast of the United States, where the mountain lion population has disappeared, resulting in an explosion of the deer population along with the increased incidence of Lyme Disease.

“The incredible thing about working towards the Wildlife Crossing, is that there are no bad guys. We are not fighting anyone,” Pratt-Bergstrom states. This is a cause where the California Transportation Authority (Cal Trans) wants to build the bridge and because it is Cal Trans, the bridge will be built to the highest level

of quality and safety. This measure is supported not only by Cal Trans, but by MRCA, state Senator Henry Stern, the SMMC and the City of Agoura Hills. The MRCA has spent years acquiring land and adding it back into open space and former state Senator, Fran Pavley, convened a successful meeting of Cal Trans, the MRCA, the SMMC and the city of Agoura Hills to jointly plot a logical course for construction to reach the goal of connectivity for the separated animal habitats.

Cal Trans is now working on an environmental review and Pratt-Bergstrom’s #Save LACougars campaign has raised 3 million dollars of its 10 million dollar goal for 2017, which will get Cal Trans funded to be “shovel ready.”

Mountains Conservancy (SMMC) and Chief of Natural Resources and Planning for MRCA estimates, “if there are no major setbacks, the project should be complete by 2021.”

People may balk at the proposed overall cost of 30 to 50 million dollars, but PrattBergstrom states, “most of the funding comes through private and corporate donations, where public funds are used, those are funds that are earmarked for conservation, not roads, schools or housing.”

The Annenberg Foundation donated one million dollars and donations have flooded in from around the world.

An intrepid two-year-old male mountain lion named P-22 captured the public’s attention in 2012 as he safely crossed two massive freeways and 50 miles to eventually make

himself a home in Griffith Park. He now lives alone in about eight square miles in an urban park where thousands of people visit during the day. Most mountain lions need 250 square miles to call home. He is rarely seen as he hunts mostly mule deer, some coyotes and raccoons during the night. He has no mate, but his lonely life and unnatural existence garnered attention and created a movement where people work tirelessly to reconnect an ecosystem, so other mammals do not suffer his fate.

The creation of a continuous uninterrupted green space in a land of concrete and chrome is a visionary project. One that opens the door to reconnecting an ecosystem, while creating an environmental wonder deep in the middle of an urban setting. The old philosophy of bringing people to nature such

as a visit to Yosemite, is countered with the new philosophy of people living next to and in nature. The project is not about an investment with an expectation of a monetary return. Short-term economic gains are not valid reasons to permanently destroy our natural heritage or our fragile ecosystem that keeps the planet in balance. It is a project with a far greater reward – the knowledge that the right thing is done. An error corrected.

Any parent who has gone through the real-life horror of being told their child has cancer, has had to become a chariot of strength for their families as they embarked on the fight for life, with an attitude of

Rothman’s son, Cooper, was diagnosed with Leukemia at the age of two, which forced them into a new normal which employed the power of positive thinking, and emphasized the importance of having the support of family and friends every step of the way.

“It rocks your whole world, I always say we hit the wrong lottery” Rothman said. “It’s a one in ten million chance, and he got it; the one positive thing I found in all of this is that I never take anything for granted, especially with my son, he’s still here and I couldn’t be more grateful that he is.”

Cooper is now seven years old, and has been in remission since week one, however, remission, like Rothman explained it, is a tricky word that can be easily confused. Leukemia and Lymphoma are both blood cancers, which means there is no solid tumor that can classify someone as “in remission” after its removal. Cooper’s remission means making monthly visits for checkups in order to ensure his white and red cell counts remain the same.

“We’re still following what happens after all of this, the kids who have received the same treatments as Cooper are now only in their midthirties, so his doctor is collecting data to figure out what to expect for the future for those with the same diagnosis,” Rothman said.

Rothman ensured that Cooper would live a life of the utmost normalcy while completing his numerous procedures and hospital visits. She never wanted him to feel fear of his diagnosis, or even a feeling of being different than other kids his age.

“He adapted very quickly and had a sense of empowerment, he went from having me hold him in his bed before a procedure, to wanting independence by going in on his own,” Rothman said. “We never told him he was sick, we told him he was there to stay healthy.”

When Cooper was initially diagnosed, Rothman wanted to make a difference in the efforts towards a cure for blood cancers, while simultaneously being a solid support system for her son. She discovered the Leukemia &

Lymphoma Society, the largest volunteer-based organization dedicated to research for blood cancer, and has been involved in their fundraising efforts ever since.

“My uncle passed from lymphoma, so I figured I could honor his memory, while also helping my son, I could sit in a hospital and make a difference,” Rothman said.

The Light the Night foundation has raised money for LLS through their events, such as Light the Night, which is a walk to honor those who have lost the battle to Leukemia or

Lymphoma, as well as those who are still fighting the fight.

“There’s three different colored lanterns which stand for: supporter, survivor and in memoriam, so we technically have three lanterns at the event,” Rothman said. “LLS is the most efficient group to work with, they get things done and put their money where their mouth is to do what they say they’re going to do.”

Rothman also hosts a neighborhood lemonade stand with Cooper to raise funds for LLS, which attracts support for finding a cure throughout the Hidden Hills community.

“The community support in Hidden Hills is amazing, the last day of treatment, my friends in the community put up balloons and fliers for when we came home,” Rothman said. “Hidden Hills is the absolute best place to live.”

Finding a strong and capable support system is a necessity when navigating through life’s toughest obstacles. Whether through friendships, family relations, or foundations such as Light the Night, each individual can be uplifted to take the next step towards a brighter tomorrow.

“SHELLING” OUT OPTIMISM & WISDOM

Laura McCorkindale enjoyed a Hollywood career that was, well, right out of the movies. Though her professional life began as an investigative reporter and columnist, the Rochester, NY-native eventually landed at Colombia Pictures, leading to stints as Vice President for Goldstein Productions (which produced hits like Pretty Woman and Under Siege), and later, an independent producer.

After McCorkindale finished her pet project—the Golden Globewinning Iron Jawed Angels for HBO--she decided to leave her decade-long film career behind to forge a career she could truly be passionate about. “I realized I liked producing but didn’t love it, so I gave all my studio projects to my business partner, took a sabbatical, and fell back into writing just for the fun of it,” McCorkindale confides.

After penning a piece on Dwight Yoakam, they struck up a friendship, and McCorkindale stepped in to sell his historic publishing catalogue. This resulted, in turn, in a record breaking price and

an out-of-the-blue offer from Yoakam for her to manage his iconic music and acting careers, as well his ancillary businesses, including his Bakersfield Biscuit food line.

“I had no idea what I was getting into at first, but working in that industry (country music) and with someone at that level of talent turned out to be a great gift,” she explains. When McCorkindale was ensconced in the music business and hundred-hour work weeks, ideas that she had been playing with since the early 2000s— which became the book ON THE BRIGHT SIDE: Ways to Feel Safe in Challenging Times (on sale after 9/23) fell to the backburner. However, a few years on, the whimsical characters and their adventures found their way back into her focus. She noted that once she committed to finishing the project, she found the creative process a new experience for her as she has been in the support position for artists or other people’s businesses most of her working life.

The resulting book is written and illustrated to appeal to readers of all ages, as well as spark conversations about tangible ways they can do

McCorkindale is a bit of an anomaly in Hidden Hills, single in a community of mostly families. She cherishes the small town feeling, especially as she counts horses, donkeys, goats and a cow as treasured neighbors.

“I didn’t chose Hidden Hills, it chose me,” she muses. “There’s an ineffable joy in having animals leaning over the fences and onto our streets. I’ve found their presence uplifts the entire resonance of our neighborhood. The animals aren’t all that different from the Peanut People. They both have an inherent goodness and beautiful

PERFECTING THE ART OF TILE

Being based in London means my husband and I are lucky enough to have the option of a brief flight or a scenic route by car over into Europe. Having spent the last two summers exploring (and getting married in) Italy, it was time for us to head back to the country where many a summer vacation was spent growing up.

CLAMATO PARIS IS OLD WORLD PERFECTION. FOR SEAFOOD AND SIDES ALONE IT IS WORTH THE TRIP.

Paris is our first stoP, albeit a brief one! I’ve worked a lot in Paris but never had the chance to just wander the streets, stop at a few tourist destinations, take time out at a gallery (the Rodin exhibition at the Grand Palais is worth a long stroll along the river to) and mainly eat the incredible food the city’s best chefs have to offer. On this short stopover, we stay at the Grand Pigalle Hotel. A hotel renowned for its vast array of cocktails and stylish art deco design. The bar is definitely one that requires a few hours’ dedication. Set just a few moments from Pigalle metro station and a short walk from Montmartre, the Sacré-Coeur and Moulin Rouge means there’s plenty going on around here too. This area is steeped rich in history; once a place where

musicians and artists flocked, dominating the area for much of the 1800’s.

We, however, spend a little time exploring then head over to the Marais to check out my favorite Parisian store; Merci. We dip in and out of several cafes before we meander onto our lunch spot just outside the 11th. The incredible Michelin starred chef Bertrand Grébaut whose restaurants; Septime, Clamato and La Cave are amongst the most popular in the city, and are what ultimately brings us to this part of Paris. We head to Grébaut’s Seafood spot Clamato (the michelin starred Septime doesn’t open on a Sunday) and enjoy the most incredible seafood lunch. Whole globe artichoke, seasonal new potatoes, wild

PREPARATION

Begin by adding the olive oil, butter, garlic and onion to a pan and cook over a low heat for around 10 minutes so the onions and garlic soften and begin to turn sweet. Next add in the rice and increase the heat slightly ensuring all sides of the rice are coated in the butter and oil and allow to cook for a minute or two (keep stirring to ensure the rice doesn’t stick to the pan).

Next add in the wine and stir, cooking over a medium to low heat again not allowing the rice to stick at all. Once the rice has absorbed the wine you can begin to add in the vegetable stock. Do this in small batches, a ladle at a time. This will take around 12-15 minutes.

TIP: Don’t add the next batch of stock until the rice has absorbed the last.

Make sure you keep checking that the rice still has a bit of a bite to it; you don’t want to overcook it.

For the green pepper and pistachio pesto prepare all ingredients as noted then blitz in a food processor until you have a smooth paste. You can also muddle into a paste using a pestle and mortar starting with the harder ingredients first. Have a taste and adjust seasoning or add more oil to loosen the paste if necessary.

Once your risotto rice has absorbed all the stock and has a good consistency to it (you’re aiming for your rice to be slightly al dente and definitely not too sloppy. When you’re ready to serve add in your pesto mix. If you need to add in some extra liquid once you’ve used all your stock to loosen it slightly, hot water will do, adding a small dash at a time.

TIP: Only add in your pesto mix at the very last minute so you retain the vibrant green colour.

Take a small frying pan and add several glugs of oil, heat and then add in the mint leaves frying for thirty seconds or so. The oil is hot enough when the leaves fizz immediately on adding them. Remove from oil and drain on kitchen towel.

Serve the risotto with an extra handful of grated Parmesan, a drizzle of extra virgin olive oil, some freshly ground black pepper and a scattering of crispy fried mint. Serve immediately.

30g parsley – stalks removed
100g finely grated Parmesan (or opt for the vegetarian version)
150g pistachios
3-4 generous glugs of extra virgin olive oil
Sprinkle of salt
Generous sprinkle of white pepper

rocket, pesto salad and pickled carrots for the Vegetarian. Fresh fish tartar and sardines in sherry vinegar for me. The carefully selected wine list isn’t to be missed either. This family spot fills up quickly so get there early!

OUR NEXT DESTINATION UPON LEAVING PARIS IS JUST OUTSIDE OF BERGERAC, south-west France. Our residence for the week is a stunning old converted mill. The bedroom window opens out over the running water that passes through the still working mill beneath the house. We drive through endless sunflower fields as we draw

closer to our destination. The old mill sits by itself within the wheat fields that surround it: picturesque and modest at a first glance. On our first night we head out laden with an assortment of French goodies as the sun begins to lower in the sky. Cheese, bread, wine and charcuterie with plenty of cornichons weigh down our baskets. We pitch up just beyond the stream with children and dog in tow. The complete calm and serenity of this area lets nature take center stage. The constant hum of crickets, local birds and dark starry nights are a welcome addition and a far cry from our hectic London lives.

BERGERAC INSPIRED FRENCH TOAST

• 1 medium/small crusty white loaf

• 5 large eggs – whisked together

• 3 heaped tbsp plain four

• 3 tbsp caster sugar

• 2 pinches of cinnamon

• 2 pinches of ground nutmeg

• 1 pinch of mace

• Generous sprinkle of sea salt flakes

• Oil for frying

• 30g butter for frying

COFFEE, CARAMEL & HAZELNUT SYRUP

• 5 tbsp/90g butter

• 125g light brown sugar

• 170ml single cream

• 1 ½ tsp of instant coffee

• ¼ tsp vanilla bean paste/1tsp vanilla extract

• Sprinkle of sea salt flakes –to taste

Begin by slicing your bread. It actually works in your favor if the bread is a little stale.

Next, mix together all french toast ingredients to make an egg mix.

Soak the bread in egg mix for around 30 seconds flipping so each side is evenly coated.

Heat a non-stick pan with a generous drizzle of oil.

Fry bread on both sides until golden and crisp adding a small knob of butter once it starts to begin to turn crispy. This will ensure you cook it thoroughly without burning the bread.

Remove and keep warm in the oven on 140°f.

PREPARATION

Melt the butter in a small pan over a medium to low heat until liquid.

Whisk sugar, coffee and cream into the melted butter, making sure the coffee is fully dissolved.

Gently bring to the boil whisking the whole time.

Reduce the heat and continue to whisk for another 2-3 minutes to allow the sauce to thicken a little.

Remove from the heat and add in the vanilla paste.

MONTCUQ MARKET INSPIRED FIG, ASPARAGUS, HERIATAGE POTATO & BLUE CHEESE GALETTE

TART

• 275g plain flour (have extra on hand for when you roll it out)

• ½ tsp salt

• 150g unsalted butter –roughly chopped into chunks

• 25g Parmesan – finely grated

• 2 medium free range/ organic egg yolks

• 1 tsp Dijon mustard

• 1-2 tbsp cold water

• 2 sprigs of thyme – fried and leaves removed from stalk

TART TOPPING

• 3 Heritage potatoes – Sliced

• 8 asparagus spears – hard ends removed, cut in half long ways / 2 kept for peeling into a salad

• 150g Dolcelatte – roughly broken up into lumps

• 2 spring onions – finely sliced

• Several sprigs of parsley

• Small sprinkle of cress

• 2 ripe figs – cut into quarters

• Drizzle of olive

• Sprinkle of sea salt flakes and freshly ground black pepper

Combine the flour and salt in a bowl, add the lumps of butter then rub the flour and butter between your fingers until you have a crumble type consistency. This could also be done with a K beater in a mixer. Next whisk together the egg yolks, Dijon and Parmesan then add this to the crumble, stirring until you have a smooth dough. If it’s a little dry add in the water, a dash at time. This can also be done in the mixer to save time. Once the dough has come together slightly flatten it out (don’t leave it in a ball) and wrap in parchment paper or cling film and place in the fridge for 30 minutes to rest. Fry the thyme leaves and allow to cool, remove leaves from stalk and add to the pastry when rolling it out.

When you’re ready to bake the galette, remove the pastry from the fridge, roll it out until it’s around half a centimeter thick then fold the edges in, before placing it on parchment paper or a non stick tray. You can sprinkle over the fried thyme leaves and simple roll them into the pastry with your rolling pin. Prick the top of the pastry and place in the oven on 190 degrees Celsius for fifteen minutes. You can also add parchment paper and baking beans to ensure the pastry doesn’t balloon.

For the topping, add the thinly sliced potato to the non stick try with a dash of oil and seasoning and roast for fifteen minutes while the pastry cooks.

Once the pastry is part cooked you can add on the potatoes, asparagus, dolcelatte and figs with a drizzle of oil and seasoning. Return to the oven and allow to cook for a further fifteen to twenty minutes or until the pastry turns golden and the potatoes are cooked through. Once ready you can serve warm or cold. Sprinkle over the parsley, spring onion and cress and raw asparagus salad. Drizzle with a little extra olive oil and black pepper and serve.

We venture to Le Caillau, a nearby restaurant just outside Puy L’Eveque. A fifteen-minute drive amongst endless rows of vineyards. Golden hour is upon us and we’re in awe of this incredible spot. Part of the main courtyard consists of an open barn style structure, which is where we dine, others sit beneath the enormous willow tree that dominates the other side of the courtyard. Food has a European focus and is made up from as much local produce as possible. Wine is of the same ethos. The key is to go local with whatever you can. It’s all completely delicious and the staff will happily guide you through the wine list.

This is a region of France where wine, cheese and charcuterie are to be appreciated. It’s no wonder that the French are proud of what their country produces, I could easily live off this wealth of produce and quality produce at that. The endless small towns we wander through, old cafes, brocantes and restaurants all with endless charm and steeped in history. This is a part of the world where you can’t help but be seduced.

METHOD

Combine ingredients in a cocktail shaker with ice

Shake extra hard for around 1 minute to properly emulsify the ingredients

Strain out ice and shake again to create a silky consistency

Fine strain into your coupe glass

Garnish with beautiful edible flowers

CARMELIZED BANANA tiki cocktail

• 2 ounces of white rum

• 1 ounce of lime juice

• 1.5 ounces of pineapple juice

• 1/2 ounce of caramelized banana simple syrup

• 5 dashes of Angostura Bitters

METHOD

Shake all ingredients but the bitters then pour over crushed ice then top with bitters

I took 2 bananas and cut them in half. I put them in a pan with 1 cup of sugar turned the heat to medium. I added 1/4 cup of rum and then took a torch and set it on fire. Then I added 1/2 cup of water and stirred until the sugar dissolved. Then took out the bananas and strained the syrup

In 1995, the leader of United Pegasus Foundation, Helen Meredith, learned about the PMU (pregnant mare urine) industry, which is responsible for the constant breeding of mares for the purpose of producing pregnant mare urine, an ingredient in the drug Premarin.
