Sibiu County in short Sibiu County, one of the most beautiful regions of the country and home to numerous treasures, both natural and cultural, is situated in the center of Romania at the foothills of the Carpathians. Sibiu County offers visitors many attractions. Abrupt and forested mountain ridges, waterfalls, glacial lakes, and abundant green hills to the north all shape the county’s dynamic landscape. Visitors can spend their time sunbathing at the salty lakes of Ocna Sibiului, skiing in Păltiniș, or tackling extreme sports at Bâlea. There is a series of fortified churches, typical for Transylvania, and the medieval towns’ many architectural and cultural riches, among which the city of Sibiu is the most renowned, so much so that it was named the Cultural Capital of Europe in 2007. Sibiu County has many towns that are typical for the Central European style and many small towns with charming museums. What makes this county even more special are the many Transylvanian Fortified Churches, built between the 13th and the 17th centuries, that are generally well preserved and extremely diverse in their features - from simple churches with crenels and arrow holes to very complex ones surrounded by multiple fortification walls, giving them the aspect of true fortresses. Another unique attraction of the county is the area called Mărginimea Sibiului that consists of a series of Romanian villages at the foot of the Cibin Mountains whose inhabitants make their living from agriculture, trading and the raising of animals, mostly sheep. Sibiu is connected to air, road, and railroad transportation networks, maintains a diverse economy with qualified human capital, and hosts an entire range of modern services and accommodations.

Geography Most impressive for the visitor is the mountain chain in the southern part of the county that covers a third of its surface. The mountains are divided into 2 large mountain ranges split by the Olt gorge: The Cindrel and Lotru mountains (2,244 meters) to the west and the Făgăraș Mountains (containing Negoiu peak, the highest in the county at 2,535 meters, and Suru peak at 2,383 meters), nicknamed the Transylvanian Alps, to the east. Heading north the topography descends approaching the Olt Valley and then mildly rises again to the Transylvanian Hills, consisting of hills and mounds with average heights of 490 to 790 meters. The climate is temperate continental.

Population Sibiu County has a population of 423,096. 67% of the inhabitants live in the 2 main cities (Sibiu and Mediaș) and 9 towns (Agnita, Cisnădie, Copșa Mică, Dumbrăveni, Miercurea Sibiului, Ocna Sibiului, Săliște, Tălmaciu). The population is 90.04% Romanian, 3.7% Hungarian, 4.2% Roma, 1.6% German, and other nationalities. From a religious point of view, the majority of the population is Romanian Orthodox (88.9%) that lives peacefully next to the Reformats (2.3%), Roman - Catholics (1.5%), Greek - Catholics (2.3%) and other religious groups.

Adam Wirsing 1733-1797, View of Sibiu in the 18th century

Throughout History Southern Transylvania, with river valleys and low hills, has been a favorable region for human settlements since as early as the Paleolithic and Neolithic periods. Later the Geto - Dacian civilization developed in this area during the bronze and iron ages. After the second century A.D. the area succumbed to Roman influence. The Romans, however, withdrew in 271 A.D. due to the successive population migrations of Goths, Gepidaes, Avars and Huns. Even after the Roman withdrawal, both Christian and Latin populations remained behind, a fact proven by an archaeological discovery in Biertan where the Donariu, a fragment of a votive offering from the 4th century, was unearthed. Successive waves of migratory populations through these territories continued during the following centuries including those of the Slavs, Petchenegs, Cumanians, Tartars and Hungarians. The latter seized

control of the Panonic Plains during the 9th and 10th centuries, followed shortly by taking Transylvania. In the 12th century, the Hungarian kings of the Arpadian dynasty recruited Saxon colonists to the area in order to guard the territorial borders, and the Sibiu area received the highest concentrations of colonists. This area became an important contact area for the 3 main populations of the realm - Romanians, Saxons and Hungarians. During the 13th century the Principality of Transylvania, including the Sibiu area, was officially recognized and in 1224 the county of Sibiu was created and governed by a county ruler, named by the king, who would reside in the city of Sibiu (archaeologically proven to exist since 1191). The area dominated by the Saxons was later organized into seats and districts. Beginning with 1355, the province of Sibiu featured seven seats (Orăștie, Sebeș, Miercurea Sibiului, Nocrich, Cincu, Sighișoara and Rupea) with Sibiu as the main seat, and was

later expanded with 2 additional seats (Mediaș and Șeica Mare). Thanks to the privileges offered by the Hungarian kings, the Saxon colonists had the right to create villages and towns, to cultivate the land without feudal obligations, to elect their magistrates and priests, to do commerce and have their own currency, and to organize into guilds. The towns in the area enjoyed economic success despite the frequent Turkish invasions that would follow, eventually forcing Transylvania to obtain, in 1571, the status of an autonomous principality under Ottoman suzerainty. From 1486 until 1876, the province of Sibiu, with its 10 seats, together with the districts of Brașov and Bistrița, formed the Saxon Community (Universitas Saxorum) - a political, administrative and judicial union of all the Saxon communities on the kingdom’s land that was ruled by the Saxon Committee that also served as Sibiu’s royal judge. The Turkish attacks of 1437, 1438 and 1442 were repulsed by the local

Sibiu - The Treasure of the Carpathian Foothills

inhabitants’ resilience and led the Saxons to build city and village fortifications to protect their population and wealth. Beginning with the early 15th century, the Saxons built strong fortresses while also reinforcing the older, established ones (Sibiu, Mediaș, Slimnic, and in the majority of the villages in the Târnava Mare and Hârtibaciu valleys). In October 1599 at Șelimbar, near Sibiu, the Romanian Prince Mihai Viteazu defeated the army of Andrei Bathory, unifying Transylvania, Wallachia and Moldova under his rule for a short period of time. Transylvania, caught in the middle of the conflict between the Hapsburg and Turkish Empires, found itself under Ottoman suzerainty until 1688, after which it was incorporated into the Hapsburg Empire. An important figure for the 18th century Sibiu was Samuel von Brukenthal (1721 - 1803), governor of the Large Principality of Transylvania, who built in Sibiu the palace that carries his name and put together a rich art collection. According to his wishes, Brukenthal’s art collection has been open to the public since 1790 and in 1817 it became a public museum. Meanwhile, beginning in 1867, Transylvania was again part of the Hungarian Kingdom within the greater Austrio-Hungarian Empire, and Sibiu had become the center of fighting for the emancipation and unity of all Transylvanian Romanians. Sibiu had been the headquarters of the Romanian Orthodox Bishopric in the old Habsburg Empire, the Transylvanian Association for Romanian Literature and Culture (ASTRA) was created in 1861. Its headquarters have remained here, and the National Romanian Party was constituted here in 1881, where it has also maintained its headquarters. After the unification of Transylvania with Romania on the 1st of December 1918, the Dirigent Council (the government of Transylvania) and the Great National Council (the Transylvanian Legislative Assembly) were created in Sibiu. Between the two world wars

part of the present Sibiu County was assimilated into the former counties of Târnava Mare and Făgăraș. During the early communist period Sibiu County territory became part of the Brașov Region until the 1968 administrative-territorial reorganization when Sibiu County got its present shape. Though the two world wars did not result in major destruction here, the communist era brought an acute lack of investment in the county. Since the 1970’s mass emigration of the Saxons to Germany began it led to a major decrease in their population by the middle of the 1990’s (from 19.1% in 1977 to 3.56% in 1992).

Sibiu was one of the cities that revolted against the communist regime at the very beginning of the 1989 revolution. Starting in the 1990’s Romania began its journey to reinstitute democratic values and transition to a market economy. Modernization of administration and legislation, the financial, industrial, transportation and telecommunication infrastructure, and the diversification of services at a national level resulted in two fundamental objectives for Romania - joining NATO in 2004 and the European Union in 2007. Also in 2007 Sibiu was named the European Cultural Capital. Anonymous, second half of the 8th century, Portrait of Baron Samuel von Brukenthal (detail)

Sibiu - The Treasure of the Carpathian Foothills

The City of Sibiu Sibiu, the county capital, is one of the most beautiful medieval towns in Transylvania. The medieval fortifications, Gothic churches, Renaissance buildings and elegant Baroque palaces give Sibiu a special charm, transforming it into an objective of cultural patrimony in and of itself. Visitors may witness eight centuries of urban history in the historical center whose heart beats in the three main squares that have recovered their initial splendor. The historical center is easy to explore - it is enough to let your feet guide you through the Upper Town, on Nicolae Bălcescu Street, nicknamed Corso by the locals, where you may walk among the lines of 19th century houses, richly ornamented with stucco work, giving in to the temptation of a stop at a cafe shop, pub or pizzeria with tables on the street. On Cetătii Street, running parallel to Corso, one can still see the strong Sibiu city walls, with 3 of 30 defensive old towers still standing - the Cloth Makers’ or Harquebusiers’ Tower (16th century), the Potters’ Tower (16th century) and the Carpenters’ Tower (15th century) - as well as the bastion, named the Thick Tower, that was transformed in 1788 into a theater and renamed Thalia Hall. Walking down Corso will take you to the Big Square, dominated by the City Hall, a splendid Jugendstil building, (1906, renovated in 2006) and the imposing Baroque edifices of the Brukenthal Palace (1785), the Roman - Catholic Church (1733) and the former Jesuit College (1739). Inside the City Hall building there is a Tourist Information Center. The Square is animated by 2 fountains and surrounded by Renaissance buildings, with high gates and roofs with typical small eye-shaped skylights, that host many of the city’s cultural manifestations as well as providing a meeting point and walking destination.

Upon entering the Small Square, the Red House, recently renamed the Luxembourg House, and the House of Arts (the former Butcher’s Trade Market dating back to 1370) will immediately catch your eye. From here, you may pass beneath the richly ornamented cast iron bridge, named the Liar’s Bridge (1859), on a little street that takes you into the Lower Town or you can climb the City Council Tower. This edifice, originally built in 1370, and rebuilt at various times following fires or collapses, is a splendid place where you can admire a panorama of the old city and better understand its urban structure. The Upper Town, built on a hill and surrounded by the remains of old fortifications, is linked to the Lower Town through picturesque passages with stone stairs - The Stair Passage, The Tower Stairs, The Ocna Stairs and The Goldsmiths’ Stairs. The same picturesque panorama can be admired from the 73.34-meter high tower of the Evangelical Church (1370 - 1520), the most important and impressive Gothic edifice in the city, which dominates the Huet Square. The Church is located in front of the Baroque-style Brukenthal College that replaced a 14th century school in 1786. From the Huet Square you can continue your walk on Mitropoliei Street, where you can see the Reformat Church (1786) and the Neo-Byzantine styled Orthodox Metropolitan Cathedral (1906).

Sibiu - The Treasure of the Carpathian Foothills

Around Sibiu For those visitors with only one weekend to see the Sibiu area, it is recommended that the first day be spent visiting the city and the second day be reserved for a trip outside the city to Cisnădie, Cisnădioara, Rășinari, Cristian and Șelimbăr. Cisnădie is exemplary of a typical Saxon town, complete with narrow streets lined by houses, set perpendicular to the road, with stucco facades and green blinds at the windows. In the center of the town is the St. Walpurga fortified church, built at the beginning of the 13th century with a massive tower. After the Turkish attacks the church was both transformed, into the Gothic style, and fortified by raising the tower, endowing it with arrow holes and building three surrounding walls with towers (The Guardian’s Tower, The Larder Tower, The School’s Tower, The Blacksmiths’ Tower). The main tower, which originally had a gilded globe on top, was struck by lightning various times, and therefore, in 1795 it was recognized as the first lightning rod in Transylvania. Within the church precincts is the Museum of Textile Industry History that presents documents, images and machines, which reveal the evolution of wool processing from 1700 to 1900. From Cisnădie it is just a few minutes by car to Cisnădiaoara to visit the splendid St. Mihail Church (1223),

which has preserved the shape of the Roman basilica, a beautiful front with columns and blind arches and the fortification wall. From Cisnădioara one can exit on the county road from Rășinari to Păltiniș. Rășinari, birthplace of the famous writer Emil Cioran, can be reached from Sibiu by tram, passing through picturesque valleys. In the center of the village, which is part of Mărginimea Sibiului, there is an Orthodox church (1758), welcoming visitors with its beautiful exterior fresco. Cristian is located on the E81/68 road from Sibiu to Sebeș - Alba. In the center of Cristian there is a fortified church with double inner court and five defensive towers, one of them octagonal (The Larder Tower), built between the two sets of fortifications on the ruins of an older one. The village, which also has a landlers’ museum and an Orthodox church (1790), was named “Insula Cristiani” (Island of Christianity) in 13th century documents after surviving the 1241 Mongol invasion. Visitors can reach Șelimbăr from Sibiu on E81/68 heading towards Brașov. It is worthwhile to visit the St. Nicolae of Mohu Orthodox church (1782 - 1785), painted by the brothers Nicolae and Alexandru Grecu of Săsăuș, and the Orthodox church of Bungard, built in 1690 and rebuilt in 1824. One can also visit a roadside crucifix, built in 1925, in memory of Mihai Viteazu’s victory over prince Barthory. Saliste old church

Mărginimea Sibiului Mărginimea Sibiului is a very picturesque area in the northwestern part of Sibiu County, at the foot of the Cibin Mountains. The area is bordered by the Sadu river valley to the south and the Săliște Valley to the North and contains mostly Romanian inhabited settlements, which used to be the former Amlaș Country that was documented in the 14th to 15th centuries. Mountain ridges dominate the landscape of the area and the villages with narrow roads still have old stone or fir log houses with high-shingled roofs. Traditional occupations of the area included crafts, wood, wool and pelt processing, beekeeping and raising animals, mostly sheep. Some villages practiced the transhumanitus shepherding, taking their flocks of sheep to the Danube, in Dobrogea, or even to the Balkan Peninsula. The locals can be seen on Sunday in their elegant traditional costumes of white shirts embroidered with black thread, considered to be precious garments saved only for holidays. After exiting Sibiu on E81 towards RâmnicuVâlcea there are the villages of Tălmaciu, with a small church from 1780, and Boița. Here one can see the ruins of two towers, remnants of fortifications used in the defense of, and collection of tolls in, the Turnu Rosu gorge. From Tălmaciu a right turn will take you on the road towards Sadu and Râu Sadului. In Sadu there is a beautiful little 18th century Orthodox Church, with red brick ornaments, and the Electric Plant Museum, which exhibits interesting samples of the history of the hydro-plant construction in 1896. One can see electric turbines from 1902 and 1903, which still function. Exiting Sibiu on E68 towards Sebeș - Alba and passing through Cristian, the road takes you to Orlat, where you can visit a stone and brick church, a historical monument, built in 1796, and then on to Gura Râului, a village famous for its harbor, sawmills and fulling mills that gave birth to the saying: “To the people of Gura Râului money arrives on the river”). Sibiel is also in this area, with the little church from 1765 and the famous

glass icon museum. Further down on E68 Săliștea, with Orthodox churches from 1724 and 1786. From Săliștea you can continue on to Tilișca where you can visit the ruins of a 1st century Dacian fortress. Going up into the mountains you will find Poiana Sibiului, with the 1766 wooden church, a historical monument, and Jina, famous for its folklore festival “Up on Jina Mountain.”

The Secașe Tableland is a hilly area where Saxon villages alternate with Romanian villages. It contains the towns of Ocna Sibiului and Miercurea Sibiului and the villages of Șura Mica, Apoldu de Jos, Ludoș, Păuca and Loamneș. One can reach Miercurea Sibiului via E68 and visit the beautiful Saxon fortified church from 1496 on the ruins of a former 13th century Roman basilica and an Orthodox church built in 1864 with the altar facing South.

Hârtibaci Tableland

Iacobeni fortified church

In the heart of Sibiu County is the Podișul Hârtibaciului, or Hârtibaci Tableland, a hilly realm with valleys that are home to villages with Saxon fortified churches. At the edge, bordering the Secașe Tableland is Slimnic, a settlement containing the impressive ruins of a 15th - 16th century fortress. You can reach Daia and Roșia, which have preserved churches built over 13th century Roman basilicas, by exiting Sibiu on DJ106A. In Roșia, the writer Eginald Schlattner, author of “Decapitated Rooster,” which charmingly describes life in Southern Transylvania around the time of the Second World War, lives in the parochial house. Vurpăr has an even older Saxon church, dating from late 12th century, one of the oldest Roman constructions in the country, that is surrounded by fortifications and a bastion. DJ106A takes you farther to Nocrich, where you can see the 18th century house of the Brukenthal family and the fortified church of Hosman. The latter was built over a 13th century Roman basilica, to which was added a double set of walls and 6 defensive towers in the 16th century. Another attraction in Hosman is the engine-powered mill from the late 19th century that was produced by Langen & Wolf in Budapest. (Information: Gabriela Cotaru, phone: +4 0748 800 049). Five kilometers away from the main road you will discover, up on the hillock of the Fofeldea village, the church painted by the Grecu brothers. In Marpod you can see the 13th century Saxon church and close by, there is the 18th century wooden church of Ilimbav. In Altana, Chirpăr and Veseud you can visit beautiful fortified churches, and Veseud and Săsăuși also have two Orthodox churches built between 1790 and 1792.

Agnita, an agro-industrial town first mentioned in 1280, offers visitors a few attractions including the Hârtibaci Valley Museum, with exhibits about centuries old trade activities, and an Orthodox church from 1797. There is also the Gothic style Evangelical Church, with both Renaissance and Baroque elements that is fortified with walls and towers, from which you can still see the Bell Tower, the Taylors’ Tower that has been incorporated in the school building, the Shoemakers’ Tower, the Wheelmakers’ Tower and the Larder Tower, which was used in the past for storing provisions.

Entrance in the old Orthodox Church in Agnita

Along the road from Agnita to Sighisoara there are the villages of Iacobeni, with a beautiful fortified church, and Netus, with the oldest little wooden church in the Hârtibaciu Valley. Nearby is Brădeni, home to a 14th century church, a historic monument, located in the village center. Walls with bastions surround the church and the building itself is raised with defensive stories that include two lines of arrow holes and a water well in the inner yard. In the upper stories there is a unique collection of 140 decorated chests, used for storing clothes, jewels and food, dating from the 15th, 16th and 17th centuries.

Târnava Valley In the northern part of the county the main attraction for visitors is the necklace of settlements along the Târnava Mare River and the perpendicular valleys. Beginning from Sibiu or Medias, an easy day trip will take you to visit the highlights specific to this area, namely the fortified churches. The Saxon communities built the churches during the 15th and 16th centuries following the first Turkish invasion of Transylvania in 1395. For defensive purposes the Saxons built fortified churches with protective walls and arrow holes or even true church fortresses with successive walls, crenels, ramparts, and towers to store provisions and where, in case of attack, the entire community would take refuge. Exemplary of such fortified churches are those from Axente Sever, Șeica Mica, Valea Viilor (a UNESCO World Heritage Site), Bazna, Atel, Ighișul Nou, Moșna, Malancrav, Valchid, Copșa Mare, Richiș, each one with its own special charm, archaic shapes and circular or rectangular precincts of fortifications with defensive towers. Set amongst the hills nearing Târnava is the village of Apold, whose church is built on a hillock with two walled precincts and nine towers. Particularly beautiful is the fortified church at Biertan, included in the UNESCO list World Heritage Sites. The massive fortifications include three rows of arcaded walls, seven towers and three bastions to protect a hall-shaped church (1500 - 1525), which contains precious altars, medieval pulpits and carved funeral stones. The vestry door preserves an amazing 16th century locking iron mechanism that, with a single turn of the key, closes the door with 13 locks. Also on the list of attractions is the town of Dumbrăveni, with the Armenian Church in the center, an 18th century building in the Baroque style, and the Renaissance styled Appafy Castle that now shelters a school.

Mediaş From Sibiu, a one-hour drive by car on DN14 will take visitors to Medias, the county’s second largest town, an old commercial and crafts center. The first thing to catch the visitor’s attention upon arrival in Medias is the Trumpeters’ Tower, which is the name for the steeple of the St. Margareta Gothic church, home to a very beautiful altar dating from 1480 - 1488. The church in the Castle’s Square is fortified with two rows of walls and defensive towers (the Bells’ Tower, the School’s Tower, The Rope makers’ Tower, the Taylors’ Tower). Fifty meters from the church is the Stefan Ludwig Roth High School, housed in an early 20th century building and the Schuller House, a beautiful 16th century edifice, with a renovated Gothic first floor and Renaissance upper floor with stone carvings at the windows and an arcaded patio with an arched roof. A short walk of a few minutes leads to the Franciscan complex, built in the 15th century and renovated in the 18th century, whose Baroque church has beautiful stucco decorations. Today the convent shelters the Municipal Museum. Located in the same area are also towers from the second row of fortifications - the Goldsmiths’ Tower, The Leather makers’ Tower, the Wheel makers’ Tower, the Knife makers’ Bastion and the Stone carvers’ Tower.

Leaning Towers Though not as famous as the Leaning Tower of Pisa, but still leaning, are the towers of the Ruși church, which began to lean right after being built in the 18th century, and the Trumpeters’ Tower of Mediaș, which began leaning by 2.28 meters after being raised in the 16th century.

Avrig old Orthodox church

Olt Country Also known as Făgăraș Country, this area extends to the southeast of the city of Sibiu along the middle course of Olt River, in the counties of Sibiu and Brașov. The region is guarded to the south by the Făgăraș Mountains and opens in the North towards the fields of the Olt River, from where one can scan the Hârtibaci Tableland. The part belonging to Sibiu County contains the town of Avrig and the villages of Racovița, Cârța, Porumbacu de Jos, and Arpașu de Jos. Access from Sibiu is via E68 in the direction towards Făgăraș and Brașov, crossing the hills of Hula Bradului before entering Avrig. Here the tourist can visit the Brukenthal Summer Palace, a splendid 18th century Baroque edifice, with three wings shaped like the letter U. The side wings have only one floor, while the central wing has two floors and an attic with an imposing facade. The garden with terraces, fountains and orange trees was composed in the Baroque

style of the Schonbrunn Garden. In Avrig you can also visit the 18th century Orthodox Church, in whose cemetery is the tomb of the scholar Gheorghe Lazăr. Close to Porumbacu de Jos, in Sărata, you can visit the 1804 “Nașterea Domnului” Orthodox Church, painted by the Grecu brothers, as well as the “Adormirea Maicii Domnului” church, built in 1791, in Arpașu de Jos. Take left off of E68 and you will find the village of Cârța, the location of the ruins of the Cistercian Abbey from 1202, an early Gothic monument in whose precinct there is an Evangelical church. In Cârțisoara tourists can visit Badea Cârțan Museum, which displays a traditional regional house, a collection of glass icons, painted furniture and pieces of traditional garments. The museum carries the name of a peasant (Gheorghe Cârțan, 1849 - 1911) who was part of the fight for political emancipation of Romanians in Transylvania, who delivered books brought from Romania and who walked all the way to Rome to see Traian’s column, proof of the Romanians’ Latin origin.

Ocna Sibiului Sunbathing at Europe’s saltiest lakes The town is located only 12 kilometers from Sibiu, on the road that turns right from E68 from the Sibiu Airport. Extracting salt was an old Iron Age occupation and processing it was the locals’ main occupation for centuries until the closure of the last salt mine in 1931. Around 1820, when the curative quality of the salty water and mud became renowned, a spa resort was created around the natural lakes formed in the abandoned salt mines. Among the 15 lakes, Lacul Negru, Lacul Roșu and Lacul Brâncoveanu are the saltiest in Europe, with a salt content of 415 grams per liter of water. Currently the spa resort is housed in a few Jugendstil style buildings, renovated between 1906 and 1909, and contains modern equipment for treating rheumatism, ear, nose, throat and endocrine illnesses. The complex offers accommodation in two hotels, both offering three and four star accommodations, with restaurants and various sources of entertainment. Hotel Helios****, Hotel Salinas*** str. Sibiu’s Aromas: Gastronomy A visit to Sibiu has a specific taste. After a day of wandering around on narrow streets or through hills and valleys, in the shade of fortification walls or defensive towers, or after a day of skiing, everybody cedes to culinary temptations. Gastronomic allurements are lurking everywhere - in restaurants and in the villages that strictly preserve the traditional flavors and aromas of quality products that must be known and tasted at leisure. Fascinating culinary journeys await visitors everywhere - at the homes of friends, in a wine seller, a bed and breakfast or a restaurant. Such

gastronomic diversity is a result of mixing many styles of producing and eating food and various cuisines - Romanian, in the mountain pastoral villages, Saxon (rural and urban), Austrian and Hungarian. True “gastronomic detectives” will discover authentic cuisine, knowing how to discern such treasures from the tourist and industrial food industry. For appetizers there are various types of cheese, produced mainly in Mărginimea Sibiului, including white cheeses of differing consistency and flavors - from soft and non-salty to dry and quite salty, soft cottage cheeses (finer and more grainy), sweet or fermented cheeses, soft nonsalty cheeses, hard yellow cheeses (sometimes smoked) and the cheese stuffed in a sheep’s bladder. The latter

also comes in differing consistencies and flavors ranging from soft enough to spread on a slice of bread, hard, dry and spicy, and the one aged in tree bark. Typical snacks from the region include onion pies and cabbage pies found in bakeries and pastry shops, and bread topped with pork lard and sprinkled with onion. Also available are typical Romanian snacks including balmoș, bulz, grilled pastrami with garlic sauce and polenta, sausages (dry, smoked, etc.), and Central - European snacks such as crepes with soft cottage cheese, dill or caraway seeds. For those who are looking for an easy start we recommend the Saxon soups made with caraway seeds, onions or apples, sour lettuce soup with sour

45

cream and beaten eggs. The sour bean, chicken, pork or veal soups are sweeter and spiced with tarragon, a plant less well known in the rest of the country. For the main course, or second course, visitors may enjoy sarmale (cabbage rolls, bigger than in other parts of the country with smoked meat added) topped with sour cream, or choose chicken, pork, or veal paprika, a kind of stew. Some specific dishes are not to be found in restaurants, such as the pomana porcului (a stew with various types of pork), poor potatoes, potatoes with sour cream or pea stew with smoked pork fat, paprika powder and scallions. What makes these dishes so specific for the area is the combination of ingredients and unexpected spices: meat dishes are spiced with vinegary horseradish or accompanied by a sour cherry sauce, apples or red berries, or with vinegary pickles. Additionally, dock-sorrel and hops are often added to the lettuce salads, and red onion salad or beet salad with vinegary horseradish are also popular. For dessert there are numerous options ranging from the ancient recipe of polenta with plum marmalade to cozonac with poppy seeds and plum dumplings, which have since spread across the country. Food lovers should also try the rhubarb pie or rhubarb compote (rhubarb is the sour, reddish stem of a plant), sweet noodles with poppy seeds or crepes with soft cottage cheese sweetened with sugar or various fruit jams. Visitors should make an effort not to miss Sibiu’s local beer, which is to be served at the brewery restaurant’s very own beer garden, Trei Stejari (www.restaurant-treistejari. ro, 2 Fabricii St., phone: +4 0269 430 631). Various types of beers are on tap here including filtered, unfiltered, blond, black or the so-called “cut beer” (2 types of beer, blond and black, poured into the same mug yet don’t mix due to their different densities). Tourists in Sibiu must be sure not to miss an occasion to try the local plum brandy or the double distilled firewater famous in the area.
