TO THOSE wHO CONTINUE TO LOvE despite the hurts, to those who refuse to give up hope, to those who always care, I am deeply grateful.
They never ask what may become of them materially, mentally or financially, and instead rush to help others. when they see a problem or crisis, they never waver in their resolve to help. They understand and experience suffering and still give all their love. Especially today, where it’s now trendy to say ‘I have no cares to give’, they do otherwise. In a world that tries to convince you that becoming mature means caring less and not more, they do the opposite. Despite everyone thwarting them, despite the hassle and inconvenience, despite the rejection and insults, despite the harm, those who care just carry on.
I have seen them occupying their jobs and doing more than was ever asked of them, not for glory or accolades but because it is innate within them. They are the ones who go above and
beyond to help others in their time of need, wanting and expecting nothing. They know that they are not obliged to help, to do more, to be better than their position, to do things with integrity, but somehow, they find the strength to do so, all the same. Never exhausted, they plod along, ever doing, ever singing, ever smiling. Even when insulted, unfairly deterred, scarred and maligned, they shrug it off, continue with determined focus, knowing within themselves that which they must do.
If you've ever been in the presence of those who care – you'll know and feel a difference. You'll feel the aura, the energy they exude. without thinking, they'll lessen your burden and never ask for anything in return. They help because they cannot do otherwise, because it is in their nature to think of others, and what others might be going through.
That is not to say that these people do not carry burdens and pain of their own. They do,
softly and silently, but instead of it hardening them, it moves them to compassion. Indeed, it is often, they who have suffered the most in this world and still find it within themselves to help others.
I am forever grateful to these souls, for it is those who care who know the great secret of life. They know that life is not meant to be lived for oneself alone. At its zenith, at its most profound, life is love, where selfishness is erased and replaced with sacrifice to other things, people, ideals, life itself. It is only by giving ourselves to something or someone else without thought of rewards that we become truly human. Those who care know that love is giving and expecting nothing in return.

A Quick, Easy Way to Reduce Stress
Proper and controlled breathing (pranayama in Sanskrit, the language of yoga) is an effective way to reduce stress and calm your mind. Most people, however only breathe with their chest. To maximize oxygen, practise deep breathing through your diaphragm – meaning that your belly will rise and fall as you inhale and exhale.

For your face, place your index finger lengthwise slightly above the space between the eyebrows. Tap your index finger with the fingers of your other hand 8 to 10 times. Then use an antioxidant-rich oil to calm your skin. Place a few drops of oil in your palm and dip your fingertips into oil. In a circular motion, using light pressure massage both sides of the nose with fingertips moving on to cheeks toward and behind the ears. Gently pat the cheeks and jawline.
According to dermatologist Shilpi Khetarpal, MD of the Clevland Clinic, “dry brushing unclogs pores in the exfoliation process. It also helps detoxify your skin by increasing blood circulation and promoting lymph flow/ drainage.” Dr. Khetarpal suggests using a natural bristle brush (CSL’s choice is a loofah) and with moderate pressure begin the feet or ankles and work your way upward in long, fluid strokes on limbs. Inhale slowly through your nose for 7 seconds, hold your breath for 7 seconds and slowly exhale through your mouth for 7 seconds.
“Aromatherapy can be incredibly helpful, especially in calming a child who is tense,” says Lisa Squires, a clinical nurse with the Integrative Health Program at Children’s Hospital of Philadelphia. The practise uses essential oils to soothe or uplift. Squires advises aromatherapy for children over the age of 3 and recommends lavender, peppermint, citrus, and ginger as those have been studied and found to be safe and effective. This one has already been blended with a carrier oil and just a small swipe is all that’s needed.

Saké Samurai is a title, bestowed by the Japan Brewers Association - Junior Council, to individuals for their outstanding contribution to the understanding, appreciation or promotion of sake. My ceremony was in 2018. There are less than a hundred Saké Samurai and less than 2 dozen non-Japanese Saké Samurai in the world.
What kind of training is involved to become a saké samurai?
There is no ‘training’ nor course, as this is not a “certification” open to anyone to apply or to study to attain. It is a recognition from The Japan Brewers Association, which represents one of the most significant cultural icons of Japan. So, rather than someone soliciting to achieve a title, it is more about receiving recognition by this official body, for life-long work dedicated to expanding awareness for saké globally.
What first interested you in sake, and becoming a saké samurai?
I have a long history and learning passion with Japan, starting with formal Japan studies, including a year in a University in Tokyo in the 1980s. Post university, with my career path I started working in Japanese companies, where ultimately, I was exposed to delicious saké. When I returned to Canada and launched my company in 1996, I began importing premium saké into Canada, as there were no Premium sakés available and I was determined to share this with Canadians.

Saké 101
Everything You Need to Know
Made from rice, water and yeast, saké is unique among all other alcohol (wine, beer, spirits). It is brewed using “multiple parallel fermentation” instead of distilled. With 14 to 16 percent alcohol, it is closest to white wine in appearance. Saké has an earthy, slightly sweet and prominent fermented taste. Serve it chilled in a wine glass to capture its aromas.
▶ Recipients of the title saké samurai can include saké brewers, sommeliers, educators, journalists, and other professionals who have made significant contributions to the saké world. Each year, a small number of individuals are inducted into the Saké Samurai ranks in a ceremony held in Kyoto, Japan. bluenotesake.com
TYPES OF SAKE
Though there are a wide variety of styles (sparkling, unpasteurized, undiluted, extra dry etc.), sake is formally placed into three major categories, mainly based on Rice Polish levels. Here is a quick guide:
Minimum 50% rice polish
Notes: Fragrant, fruity with lighter, delicate textures
Minimum 40% rice polish
Notes: Fruity, floral delicate flavours
Minimum 30% rice polish
Notes: Refined, delicate, easy drinking sakés with more savoury notes. Junmai means that no brewers alcohol has been added, while Honjozo contains a small amount of distilled alcohol. This is for stylistic purposes but is no reflection of a higher/lower quality level.

Muddle mint in serving glass and let stand for a few minutes. In a cocktail shaker filled with ice add elderflower syrup and pomegranate juice and shake vigorously. Pour in serving glass and top with sparkling water and garnish with mint sprig.

How to Choose a Pineapple 1. Look for a yellow-orange colour on the outside. Some pineapples can be green on the outside, but are fully ripe. Leaves (the crown) will be slightly wilted when fully ripe. 2. Squeeze the pineapple as an indication of its ripeness, ripe pineapples should be firm but not hard and give slightly. Remember too that ripe pineapples smell sweet. 3. If in doubt, keep on a countertop for a few days, and then cut.
Coconut, lime and pineapple are the perfect tropical trio. Remember to toast coconut before sprinkling around the tartlet!

DuLCEY WHIPPED GANACHE Bloom 2 teaspoons powdered gelatin in cold water for 5 minutes. In a pot over low heat, melt 1 cup Dulcey 32% chocolate and ½ cup heavy cream. Take mixture off the heat and add gelatin. Place in refrigerator to cool. Whip ½ cup cream and ½ cup mascarpone to a soft, thick consistency. Fold the chocolate mixture into the cream and mascarpone mixture until fully incorporated.

PINEAPPLE CuRD Place 1 cup pineapple juice in a pan over medium heat and bring to a boil. Let the juice simmer for about 20 minutes, until reduced by half and set aside. In a separate bowl, add 2 Tbsp. condensed milk, ½ tsp. powdered gelatin and 2 egg yolks and whisk until combined. Add warm pineapple juice to this mixture and whisk until smooth. Transfer back to a pan on medium heat and stir constantly until mixture is thick and smooth. Remove from heat and let cool.

PINEAPPLE SALSA & ASSEMBLY
Brunoise ½ cup of fresh pineapple, grate ½ lime zest, squeeze 1 Tbsp. fresh lime juice, chiffonade 1 Tbsp. of fresh mint, and 1 tsp. of honey in a bowl and mix. To assemble, fill a sablé Breton tart shell with Dulcey whipped ganache. Place dollops or dots of pineapple curd randomly on ganache. Sprinkle 1 Tbsp. on top the pineapple tart. Brush tart shell with a thin layer of honey and roll in toasted coconut for decoration. Serve.

the Route CSL tested the CX-50 on a road trip from Toronto to Cambridge, a small town in the Ontario countryside. Halfway into the drive westward from Pearson International Airport, the landscape morphs. As the industrial trappings of Canada’s largest city wane, farmhouses begin popping up. the Vehicle The mid-sized family crossover features a 2.5L four-cylinder turbocharged engine, great for long stretches of highway when cars zip by and you begin to drive beside shiny red dairy trucks and trailers. We could imagine that with slippery wintertime roads, the front-wheel-drive based system, i-AWD fast reaction time together with electric power assist steering would prove useful. In our case, a sudden stop when the car in front of us clipped another was smooth but quick. fuel The 60L fuel tank was efficient for the almost 100km drive and we filled up only once. design This is a stylish vehicle from the KODO design with low roofline, accentuated wheel wells and sleek headlights. It certainly looked sophisticated set beside the 19th century brickwork buildings of town. Though not as spacious as other Mazda models, the interior cabin fit four passengers comfortably for the trip, with 3 pieces of checked luggage stored in the trunk. While mobile connectivity is ideal for the modern driver and family it takes a little while to get oriented.

SPEARS emerge proud of the soil like toy soldiers in alignment. The asparagus, the last of the spring crop in the impeccable kitchen gardens at Langdon Hall, are a reminder that seasons, especially in the Canadian climate, are fleeting. Too small and woody at this time of year, they will not appear on tonight's menu. Only the best will suffice.
A diamond anniversary, marks a decade-long journey for executive chef Chef Jason Bangerter who is as synonymous with the country house hotel as the Revival-style edifice itself. His training in European Michelin kitchens, adheres to classic techniques, meticulous presentation, and a touch of playfulness, as showcased on tonight's discovery menu.
A moss-covered tree stump holds two amuse bouche: a singular disk of crunchy tapioca permeated with the sharpness of parmesan and the floral notes of fresh cracked pepper - a clever reinvention of one of the chefs’ favourite pasta dishes, caccio e pep-
pe. The second, a circle of compressed watermelon, topped with herb gel, refreshes the palate.
The proceeding dishes show restraint, allowing ingredients to shine: white velouté adorned with a quenelle of inky sustainable Canadian sturgeon caviar; tomato water beurre blanc and anise delicately balanced against sweet dices of East Coast lobster, a nod to summers spent with the chefs’ family; and caramelized sheets of a mille feuille that shatter against silky chocolate crémeux, made with proprietary chocolate blend.
Bangerter’s steadfast dedication, consistency and thoughtfulness to detail, has deservedly made the property's restaurant one of the best in Canada, with numerous accolades including Canadian representative at the Relais & Chateaux world Culinary Council. "For me, cooking was always family time, and hanging out. It was not stressful - not work, not school. It finally clicked for me and I never looked back. So, I’ve been doing what I love for
the last 30 years,” he says, joyfully.
This commitment is shared - young staff are impressively politeand polished service is reminiscent of hospitality's finest heyday. “I came here and realized I couldn’t do it all myself. I need to train people and delegate and trust. I’ve been maturing as a leader over the last 18 years. I realized it could all be gone tomorrow. So that’s where my focus is, not just for myself, but for my team,” says Bangerter. Nothing here is done by half measures, even breakfast is a feast, with both buffet and a la carte options and a carousel of standouts like thick wedges of luscious vegetable quiche, enormous croissants and plated dishes like the baveuse scrambled eggs and lobster and the coddled egg in verdant sweet pea velouté. Lunch in the courtyard beneath a sculptural Camperdown Elm tree is relaxed. “We’ve redeveloped the whole lunch experience to be much more casual and approachable to really draw in locals,” he adds.

One day, as I sit in the lobby of the spa before going for a Thai hot massage, I notice a mother and her pregnant daughter taking selfies before going to the pool bar for afternoon bites, to mark the special occasion. Minutes later, a reunion of girlfriends grieving one of life’s unexpected moments, perhaps yearning for a glimmer of hope that only a shiny pink manicure and company of friends could bring. It strikes me that the country house elicits both celebration and solace, a feeling of healing only nature can provide, an amalgam of the cocooning embrace of the Carolinian forest, and its lush gardens.
Head gardener Jeremy Gehl, tells me the gardens were designed by the father of landscape architecture, Frederick Law Olmsted, chief architect of Central Park whose design touchstones included spaces that bring natural features to the fore, emphasize the whole rather than fixating on individual details, and, importantly, work on the unconscious to induce relaxation. Go for a tour and tasting of this delicious sipping rum, a blend of molasses rum and rhum Agricole. The product name is a nod to the year St. Martin was divided between the French and the Dutch, and Robert de Lonvilliers de Poincy, avid agriculturalist, was Governor of French St. Martin. Master Blender Olivier Kleinhans mixes several aged rums, including molasses rum from the Dominican Republic and rum agricole from Guadeloupe to create the brand’s streamlined selection. A signature of the French Caribbean, rum agricole relies on fresh pressed sugar cane juice for distillation imparting a purity in flavour, while traditional molasses-based rum adds depth with caramel and vanilla notes. The amber liquid is then oak aged in barrels in St. Martin to produce a luxurious rum equally suited to sipping on its own, or mixing as a cocktail. Julie Kleinhans, a France-native relocated to the island nearly a decade ago and guides visitors through a cellar tour that includes an interactive Mai-tai cocktail mixing class.

Make your own bespoke perfume
One of the Arawak names for St Martin was Oualichi, meaning land of women. And, nothing speaks to femininity as perfume (men, of course, have cologne, which they are welcome to create). Founded in 2007 by American couple John Berglund and his wife Cyndi, the perfumery in Grand Case is an opportunity to create your own bespoke scent – a transportive souvenir from your time on the island. As soon as you enter, fragrances waft in the air. Indistinguishable at first, you're encouraged to peruse the store and choose a favourite from the already bottled scents. Then, the fun begins. Sporting a lab coat, you'll concoct a scent of your very own according to a proscribed formula. Dark brown vials of essential oils from lemon verbena to ocean rain sit arranged amphitheatre-style in a semi-circle on a table. In total there are 300 scents. Coffee clears the heady confusion between sniffs. Your scent is made a drop at a time by layering the oils – rounded out with top, heart and bottom notes. My friend subconsciously made a scent that amalgamated her two longtime favourite perfumes, and I recognized the mashup straight away. There's something fascinating about learning about your senses this way – what you like, what you thought you liked and what actually goes together – and, every time you open your bottle, you’ll think of Oualichi.

Nowhere are the contrasts of the island more evident than on the road. It takes only minutes, seconds really, to pass from the Dutch side to the French side but the atmosphere, the language and even the geography differs. Locals speak of the “other” side literally as if it were a different country, and, it is. Driving is the best way to see these differences up close. Michelin-trained chef Bastian Schenk (stints with Anne-Sophie Pic and Joël Robuchon are among his credentials) has created an intimate restaurant that hearkens back to the South of France. A charming outdoor garden and simple white and beige palette are the backdrop to a delightful, ever-changing multi-course menu (available for lunch or dinner), prepared by the chef and his small team. Lunch could begin with a vieux Carré, followed by a trio of gourmet courses like a citrus-butter poached lobster tail, juicy chicken ballotine filled with sun ripened tomatoes and herbs, and a refreshing kiwi-cucumber mousse dipped in a whisperthin coating of white chocolate. This already famous Dutch gelato chain recently opened its first location in St. Maarten on Front Street in Philipsburg, next to the tourism office. Can’t find it? Look for the long queues of tourists holding cones or cups. Luscious gelato is churned on site, at the back of the standalone location, with a rotating menu of more than 24 flavours – from classic pistachio (one of the best) and nutella to modern flavours like Bailey’s and stroopwafel.

The familiarity of staff and host, greeting customers like old friends and carrying on conversations like family, is undeniable while the menu
is a feast of iconic dishes: French onion soup (vegetarian), foie gras, and whole grilled Dover sole meuniere done to perfection. Overview Old school R&B on the playlist. waiters serving rum punches and Mai Tais from the swim-up bar. Bellmen skipping to bring your luggage around. valets promptly jumping into the complimentary airport shuttle. They may well be snapshots of a stay, any stay, but its the spirit with which they're done that makes all the difference here. There's something uplifting and delightful about this resort in Beacon Hill near Simpson Bay. The 124-room hotel is in the same complex as a multitude of bars, restaurants and shops and it's a short walk to the famous Maho beach from which intrepid bathers and curious visitors pause to take selfies with incoming planes. The hotel flaunts its airport proximity with an observation deck where you can spot the glitterati on their way to St Barths. The greatest asset though is the staff who really make the hotel – friendly but unobtrusive, helpful but not pushy – everyone seems genuinely happy to be there. Give the breakfast bartender a smoothie recipe and he'll happily whip it up, ask for a change to your dinner reservation and the front desk will follow up, request fresh coconut water and the security guard will gladly supply recommendations. If you're accustomed to slow and belaboured Caribbean service, this makes for a refreshing upgrade.
Background Built in the aftermath of Hurricane Irma and opened in 2021 when pandemic-era restrictions were in full force, the hotel is relatively new. Owned by Egyptian-born, New York-based businessman Ray Sidhom, the hotel regularly hosts music events and live entertainment.
Rooms Rooms range from runway, ocean and pool views and include accessible options, suites and a penthouse. My junior oceanfront suite features two balconies overlooking the pool, walnut wood throughout and a couch for lounging. On mornings I wake up without an alarm just the sun rises and the Caribbean Sea's blues intensify.
The Whole Picture Designed to resemble a white sand shoreline, the focal point here is undoubtedly the pool – the picture of Caribbean paradise. Private cabanas, coconut trees and beach chairs line the infinity pool and a jacuzzi, slide and grotto cave prove popular even as dusk approaches. Roam the grounds and you'll find hidden wonders like an animal rescue farm with bunnies, ducks, birds and iguanas who'll make a raucous as you approach but quickly simmer down. Just to ensure you're never bored there's a volleyball net amidst a turf lawn, table and lawn games strewn throughout, a boutique store and a large tent for weddings and events. At the edge of the property a long pier leads to a rocky outcrop on which stands a gazebo.

Soulful and flavourful, each dish is well-thought with the dinner menu focusing on composed classics with a twist while the lunch menu features fun shareable plates. There’s freshly caught lobster, grilled and perfectly seasoned; lovely whole fried snapper; seared tuna, grilled octopus and an incredible dessert selection including delicious mango sorbet and innovative choices like soursop and passion fruit bavarois.
Spa warm, accommodating staff make you feel at home instantly. A well laidout, intimate setting makes for a relaxing retreat for an hourlong rejuvenating deep BLU massage.
What CSL Loves when I am told that late checkout cannot be extended elsewhere on the island, I traipse back to the Morgan for a few hours (I have an evening flight). Not only do they welcome me with open arms in their air-conditioned oasis five days after I'd checked out, valets I had hardly interacted with, hail out to me and welcome me back. For anyone who's become jaded with travel it's a place to restore your faith in hotels.

The sleek modern kitchen is fully equipped and I loved picking up lobster, tuna and snapper at Simpson Bay fish market and preparing it at my leisure, glass of wine in hand. Prefer dining out? Nearby Simpson Bay is full of restaurants, cafes and bars.

The Cliff has a nice tennis court, outdoor infinity pool lined with semi-precious lapis lazuli stones, and sits on a beautiful sliver of Cupecoy beach. Venture through the fitness centre and a door takes you to the inside pool, jacuzzi and sauna. On ground level, pathways meander through trickling brooks and ginger lilies, and the colonial louvered doors, frame a perfect view of sunset.

Drinks and Dining Breakfast is one of those sweet rituals that reminds me of Paris. Picking-up a basket full of locally made pastries identified by your room number. Then to the self-serve coffee, yogurt, fruit, baguettes and cereal station before bringing the whole lot to your room (in a tray that matches the decor, of course) ensures you slow down and savour the morning. Lunch is a casual affair with seafood or meat salads and burgers paired with cocktails by the pool.
What CSL Loves At first, you'll notice the bowls of water, then you'll see Jack lolling about bedecked with a collar that says, "mayor of Grand Case." The dog is the unofficial mascot of the hotel befriending all and sundry when not napping.
Overview L'Esplanade has honed its personality over decades and it shows. Set upon a cliff which slopes toward Grand Case Bay, its paved pathways are bordered by tamarind trees, oleander and Turk's head cactus. Antillean crested hummingbirds flit from nearby neem trees to gorge on the nectar of Mexican petunia. Rather than the engineered sameness of big box names, the 24-unit hotel favours substance over trendiness. You'll get lovely touches like caramels and mints at reception, decorative accents like mosaic inlays offset by tiered fountains and colourful tiles, and functional details like towel hooks (remember those?). If it all sounds rather old school it more than makes up for it in charm.
Background Opened in 1992 by the Petrelluzzi family, the second generation has been operating the family-run hotel since 2000. Sister property Le Petit Hotel which shares a similar Mediterranean aesthetic is accessible by shuttle where you can enjoy its beachfront location, chairs and facilities. Plus, it is within walking distance of lolos, local street-food stalls.
Rooms Light pours in from framed glass doors, embracing every corner of interiors featuring rich, dark Brazilian wood and Balinese furnishings. The kitchen stocks every appliance and utensil you need to cook a nice meal and there's a small starter kit of snacks and drinks. Should you need supplies there is a shopping complex with everything from a large Super U grocery store (think cheese and rillete direct from France) to a pharmacy and wine shop at the main junction just before the hotel on the former Hope Estate. On the upper level of loft style rooms, a four-poster bed invites you to jump in while the bathroom is clad in slate with showers tucked under the vaulted ceiling (and they actually drain properly). In my suite, I find myself swaying in the hammock on the patio. The panoramic view encompasses the small, nearby Grand Case airport which offers plane spotting during daytime takeoffs and landing from surrounding French-speaking islands. Or, tilting my head a little, I watch boats and yachts bob in the water under an ever-changing sky.
The Whole Picture It's a nice walk to the beach and a shortcut will take you past beach houses ravaged by Irma. The beach itself is an idyll – shallow enough for relaxing with enough fish to make for interesting snorkeling. Mostly, I had it to myself. The hotel provides a complimentary shuttle to restaurant row in town, which I made use of despite having a car because street lights are scarce and well, this is technically France, so wine is never refused. Down a few flights of stairs from reception and to the left is the pretty pool. To the right is the yoga studio with daily classes attended mainly by locals. Further down, Ti Spa offers treatments in a simplified gingerbread house. The attendant worked out knots I did not realize I had (lugging suitcases will do that).
