Joe Cannon’s

Shrimp Dip

ingredients

• 1/2 onion • 8 oz. cream cheese, softened • 3 Tbsp. mayonnaise • Juice of 1/2 lemon • 6 oz. chili sauce • 1 Tbsp. horseradish • Cholula Hot Sauce, to taste • 1 Ib. fresh shrimp, peeled and deveined (pat dry) • 1 tsp. Old Bay Seasoning Directions

1. Finely chop the onion in a food processor. Add cream cheese, mayonnaise, lemon juice, chili sauce, horseradish, and a couple dashes of hot sauce. Process until just mixed. 2. Sprinkle shrimp with Old Bay, then add to the food processor and pulse a few times to keep the shrimp in large chunks. 3. Chill 2-3 hours before serving. Serve cold.

I got this recipe years ago from Joe Cannon, and it’s been a favorite appetizer ever since. I like to serve my shrimp dip with Captain’s Wafers crackers or Fritos Scoops, but other chips, crackers, and even celery pair well with the dip.” MIKE WALDEN, LO OKOUT MOUNTAIN
