CINNAMON ROLL CAKE
Cake
110g unsalted butter
200g caster sugar
2 large eggs
360g plain flour
4tsp baking powder
350ml milk
1tsp vanilla extract
Cinnamon swirl
150g unsalted butter
200g light brown sugar
4 tbsp cinnamon
Glaze
200g icing sugar
50ml milk
Method
1. Preheat your oven to 170 and line a 8x10” cake tin.
2. Cream your caster sugar and butter together until light and fluffy, add your two eggs one by one, adding a spoon of flour if they begin to curdle.
3. Sift the rest of your flour and baking powder into the mix and combine. Mix in the milk and vanilla.
4. Combine your butter, brown sugar and cinnamon for the cinnamon swirl and mix until smooth.
5. Pour your cake batter into a tin, drop spoonful’s of your cinnamon swirl mix on top and swirl into the batter using a knife.
6. Bake for 30-40 minutes or until a skewer comes out clean.
7. To make the glaze combine your icing sugar and milk, pour the runny glaze over the warm cake and you’re ready to serve!
