Chef David Allison oversees the seasonal menu, which like all the best produce, is subject to change on a regular basis and makes for mouth-watering fare all year round.
BEEF SHORT RIBS WITH SALSA VERDE & TREACLE REDUCTION SERVES TWO Ingredients:
1 x four-point beef short rib (approximately 1kg where each 'point' is one cutlet) 2 x litres beef stock 1 x tbsp treacle 30ml Woodford Reserve Bourbon Whiskey Zest of one lemon Salt and pepper
Method: Season beef with salt and pepper, brown in a heavy-based pan. Place in a 'snug' casserole dish and cover with beef stock. Braise covered at 190 degrees for approximately 3 hours or until tender. Once cooked, remove beef and set aside. On a high heat, reduce beef stock to a thick glaze, add treacle, bourbon, lemon zest and season to taste. Return ribs to casserole dish, cover with treacle bourbon glaze and place in oven for 5 to 10 minutes to re-heat the meat.

BIVOUAC Bivouac Canteen and Bar is the ideal place to rest and recuperate over hearty food and peasant fare on William Street. Head chef Zaki Anwar likes to cook the way he likes to eat, loading up on flavour and using plenty of fresh herbs, Middle Eastern spices and quality local and seasonal produce.
BEEF CHEEK & PEPPER RAGOUT IN CHIANTI CLASSICO SAUCE SERVES SIX TO SEVEN Ingredients:

3kg beef cheeks 4 x large carrots, roughly diced 3 x medium sized onions, roughly diced 6 x celery stalks, roughly diced 1-2 x bottles chianti classico 45g black peppercorns 1/2 x pkt thyme 3 x sprigs of rosemary 3 x tsp salt 150g plain flour 6 x tbs extra virgin olive oil 4 1/2 x cloves garlic, crushed 6 x bay leaves 10 x green olives, pitted and roughly chopped 3 x litres beef stock
Trim beef cheeks of any fat and obvious sinew. Put the carrots, onion and celery in a large saucepan or bowl and place the beef cheeks on top. Pour the wine over the contents so the cheeks are submerged and add the peppercorns, thyme and rosemary, then cover and leave to marinate overnight. Preheat the oven to 200 degrees Celsius. Remove the cheeks from the marinade and pat dry with a clean cloth or paper towels. Strain the wine into a clean saucepan, place over a medium heat to high heat and reduce by half. Reserve the marinated vegetables and herbs for later use. Season the meat with salt, dredge the flour and pat off the excess. Heat the oil until shimmering in a sautĂŠ pan, add the meat and sear on all sides until brown.

Transfer to a casserole dish along with the reserved vegetables and herbs then add the garlic, reduced wine, bay leaves, olives and stock. Cover and cook in the oven for 2 and a half to 3 hours, checking and maintaining the fluid level throughout (test for tenderness and moistness after 2 and a half hours). When the meat is ready, remove from the cooking liquid and set aside, covered. Pour the liquid into a saucepan, bring to the boil and reduce until it is of sauce consistency. Strain, taste and adjust seasoning. To serve: Reheat the beef cheeks in the sauce, spoon sauce over and serve with an extra grind of black pepper. Garnish with a sprig of thyme.

CHAR GRILLED BEERLAND BIRD HONEY LIME CHICKEN, GUACAMOLE, FIRE ROASTED SALSA, MEXICAN SALAD SERVES FOUR Ingredients:
2 x deboned chicken halves (or use breast or deboned chicken thigh) 3 x limes (one zest) 1g black pepper (freshly milled) 40g fresh coriander (finely chopped) 1g ground cumin 125ml honey 60g mustard 3 x spring onions (finely chopped) 2 x jalapeno peppers 3 x capsicums (red, green and yellow)
1 x red onion 1 x tomato (de-seeded and diced) 1 x garlic (minced) 1 x avocado ½ pnt cherry tomatoes ½ cucumber (peel, deseeded and diced) 1 x corn on the cob 1 x radish (thinly sliced) 150g grated tasty cheddar cheese chipotle (or use chilli paste) mint ranch dressing
Method: Chicken Marinade Combine zest of 1 lime, black pepper, 10g fresh coriander, ground cumin and enough vegetable oil to combine. Marinade chicken for 2 hours or overnight if time permits. While chicken is marinating prepare the following: Fire Roasted Capsicum Salsa Roast capsicums, jalapeno and half a red onion until blistered and dark then remove skin, de-seed and finely dice. Once cool, combine these with diced tomato, minced garlic, 10g coriander, 1 spring onion, add
chipotle to taste, salt and pepper and 1 lime (juiced). Guacamole Finely dice avocado and mash a little with a fork in a bowl with 1 lime (juiced). Combine this with 1 spring onion, 10g coriander, salt and pepper and olive oil. Mexican Salad Roast corn on the cob until tender, cool, slice off kernels. Add cherry tomatoes, cucumber, radish, half a red onion, grated tasty cheddar cheese, 10g picked coriander, picked mint and ranch dressing.
Honey Lime Sauce (to drizzle over your chicken) Combine honey, mustard, 1 lime (juiced), spring onion, 1 jalapeno pepper and fresh coriander. To cook the chicken, pre-heat a pan over medium to high heat. Place all chicken skin side down and cook until golden brown. Turn and repeat on other side. Place in oven to finish off if you wish. Once cooked, let stand and then smother the chicken with the honey lime sauce and serve with your guacamole, fire roasted salsa and Mexican salad.

BRAISED LAMB SHANKS WITH MUSHROOM & WHITE TRUFFLE PEARL BARLEY RISOTTO SERVES TWO Ingredients:
Braised Lamb Shanks 2kg lamb shank 200ml red wine 50ml soy sauce 100g raw sugar 250g crushed tinned tomatoes 50g honey 3 garlic cloves, crushed
Sprig of thyme 3 star anise 1L of chicken stock (approximately) Risotto 2 cups of pearl barley 1L of stock (approximately) Quarter of an onion
2tbs butter 60ml cream Handful parmesan cheese, grated 1 cup of mushrooms 5 basil leaves, finely sliced 2-3 garlic cloves, crushed
Method: Seal lamb shanks until golden, season with salt and pepper. Place lamb shanks and all braised lamb shank ingredients in a large ovenproof dish. Cover with chicken stock. Cook for 2 to 3 hours until meat is tender and falling off the bone, then remove from liquid. Skim off excess fat and reduce to a sauce consistency. Boil pearl barley in vegetable stock until tender (approximately 15-20 minutes), strain and put aside.
In a pot, fry onion, garlic and sliced mushrooms of your choice. Add pearl barley, butter, basil and salt and pepper to season, stir well then add vegetable stock and cream. Cook until almost all the liquid has been reduced, fold in parmesan cheese and white truffle oil. Plate risotto and serve with a lamb shank sitting on top, finished with the reduced sauce.
