But what is there to do after you’ve made your way through the main attractions? The answer? Plenty! In Shanghai, we’ve found the best vantage points and riverside locations from which to enjoy The Bund (pages 58-66). n January 16, China Eastern Airlines opened a new route – Shanghai to Brisbane. Now, direct flights between China and Australia operated by China Eastern Airlines have reached up to 41 weekly in this northern winter season. In joint cooperation with Qantas Group, the air network covers all major cities in Australia and China, and provides more convenience to those transit passengers. A fantasy opera of poetry and myth – set in the exotic world of Imperial Peking, where fear and love go hand in hand and death is always just around the corner – Puccini’s dramatic Turandot captures its audience from the very first note. Bringing this classic to life is director Chen Shi-Zheng. Born in China, Shi-Zheng is an artist steeped in Chinese cultural traditions and is bound to produce a new vision for one of opera’s most loved works. Opera Australia artistic director Lyndon Terracini has been looking forward to the collaboration. “For some time I’ve wanted to work with director Chen Shi-Zheng,” Terracini says. “He was one of the great singers working in Chinese Opera in Beijing before moving to New York, and now he’s one the most interesting people working in theatre today. His incredibly rigorous Chinese opera background combined with his work in the West has given him two worlds to draw upon. Country Kitchen at Rosewood Beijing The Rosewood’s stunning design for its casual Chinese restaurant is enough reason to visit. The wood-fired ovens produce an imperial crisp pork belly that can’t be had anywhere else, along with traditional Peking duck. Choices are difficult with so many temptations – including hand-spun noodles and a menu that has been locally sourced.

Da Dong Kaoya (roast duck) It’s not one of Beijing’s famous, centuries-old Peking Duck eateries, but this eatery was made famous by serving one of the best ducks in town. The skin of the duck is crispy and the meat is tasty, and each roast duck is served with an array of condiments, including sweet wheaten sauce, granulated sugar, crushed garlic, thin slivers of scallions, red turnips and cucumber.

Silver service House of Jensen has opened its doors to Beijing. Glitz and glam There was an outpouring of sorrow when Glamour Bar closed – the venue had been a staple of Bund-side drinking for the best part of a decade. But now it’s back, minus three letters. Glam, the new dining lounge and bar from the M Restaurant Group has taken over the space that was formerly the Crystal Room, adjacent to M on the Bund. Make no mistake, though – Glam is a different beast to its predecessor and certainly lives up to its name. It’s upmarket meets casual. Good nature

Stroke of genius Travelling the around the world, Da Vinci: The Genius Exhibition has landed in Shanghai. The exhibition looks into Da Vinci’s works through a series of blown-up picture cross-sections that allow the detail to really shine through. Also included are reproductions of some of Da Vinci’s machines that were made according to his own notes, and a wide range of reproductions of his work. The new Shanghai Natural History Museum is uniquely modern and equally Chinese, drawing on basic elements from local design and art. It’s shape was inspired by the nautilus shell, fittingly one of the purest geometric forms found in nature. Meanwhile, one whole side of the building is covered from floor to roof in vegetation. Inside you’ll find more than 10,000 artefacts from all seven continents, a 4D theatre and a 30-metre tall atrium. 510 Bei Jing Xi Lu, Jingan Qu.

Sky’s the limit David Hare is one of the reigning masters of British drama and Stephen Daldry (famous to an international audience for Billy Elliot, film and musical) is a wizard of a director. This walk-through theme park sports a collection of scale replicas of famous world monuments from the Eiffel Tower to the Leaning Tower of Pisa. It makes a fun day out for the family.

The sprawling OCT-LOFT complex, converted from factories, is one of the best places to see contemporary art in Shenzhen, and provides a wonderful browse-as-you-stroll experience.

3 KK100 The tallest building erected in 2011, at 100 storeys and 441.8 metres, KK100 is situated on the edge of Shenzhen’s CBD and features the St. Regis hotel on levels 75 to 100.

4 Guanlan Original Printmaking Base At this 300-year-old village, rows of quaint black-and-white houses exuding a modest, functional elegance unique to Hakka architecture are occupied by the workshops and galleries of printmaking artists.

5 Dapeng Fortress This walled town and lively village built 600 years ago lies on Shenzhen’s eastern edge. Stately mansions, fortress gates and ornate temples from the Ming and Qing dynasties are the main attractions.

6 OCT East Some 20km east of downtown Shenzhen is OCT East, an upmarket theme-parkcum-resort. Think Universal Studios plus Chinese Disneyland, with a mock Swiss village, a golf complex, a scenic tea valley and luxury hotels thrown in.

Merivale’s all-new whisky bar, J&M at the Angel Hotel, is a tribute to the late father of bar tsar Justin Hemmes, “Mr John” Hemmes (J&M stands for John and Merivale, you know). It has interiors inspired by old haberdashers, a drinks trolley named The Sidecar, a long glass bar, and chesterfield lounges (a prerequisite for any whisky bar). architect, its unique and unconventional structure and interior are unique to Guangzhou and to opera houses. It’s also said to look like a giant pebble – something you’d find on the shores of the Pearl River. Where do you take your friends to impress them with great food? There are all kinds of food in Guangzhou. You can go to Chez Max for French cuisine, Ice Cube Bar & Grill for a fusion of Indian and Asian cuisine, and Wilber’s for fine-dining Western-style dishes. If you like history... Head to Shamian Island. It’s an elliptic sandbar and the island’s name literally means “sandy surface.” From the Song and the Qing dynasties, it served as an important port for Guangzhou’s foreign trade. In 1859, the territory was divided into two concessions, given to France and the UK. Buildings of this era have been restored and still stand. Of the 150 buildings, 42 are counted as the most exotic, with Gothic, baroque and neoclassical design.

You’ve got to admit it – Shanghai’s skyline is really rather special. But from down on the ground, it’s tricky to appreciate Shanghai’s full splendour. To properly take in the multifaceted beauty of this Chinese mega-city you need to get up high. Only then can you see Shanghai’s diversity writ large below: from the chiselled-stone art deco wonders to the flecks of green spaces, boats plodding along the vein-like central waterway and clusters of modern glass towers stretching towards the sky. Yet in a city with so many tall buildings to choose from, where should you go to get the very best bird’s-eye views? >

As anyone with a penchant for pampering will know, Shanghai has some killer spas – but how many of them also boast killer views of the city skyline? The Water’s Edge Spa in the plush Park Hyatt Shanghai sure can. Occupying floors 79 to 93 of the World Financial Center – smack dab in the Lujiazui business district of Pudong – this is one of the highest hotels, and therefore spas, in the world. Flushed with sunlight that pours through its enormous windows, the centrepiece of Water’s Edge is its 20-metre-long infinity pool, flanked with a heated whirlpool and decked out in luminous blue mosaic tiles. Splash around – this is the closest you’ll get to swimming in the clouds, so make the most of it – then plonk down on one of the perfectly placed sunloungers, set by windows so you can take in the squiggle of the Huangpu River below. Or, if you’re staying in the hotel, join the free 8am tai-chi class, where you can mull over the view as you learn the serene movements of this ancient practice. There’s seeing the city skyline, and then there’s waking up to it. For donkey’s years Shanghai’s tallest building, the iconic 88-storey Jin Mao Tower in Pudong, has unsurprisingly boasted some of the most breathtaking vistas of this metropolis. And inside, filling its floors from the 53rd to the 87th level, the Grand Hyatt Shanghai is one of the best places from which to experience them. It helps, of course, that the generous rooms have immense floor-to-ceiling windows that let all of the city’s misty mornings and twinkly evenings rush in; book the Club Deluxe River View variety and you’ll have prime corner views to the Oriental Pearl Tower building, with its candy-like

giant baubles close enough that you feel like you can reach out and grab them. Pretty much everything about this hotel is dedicated to looking outward at that view (there’s even a 16-metre pool on the 57th floor with its own panoramic vistas), but that hasn’t stopped designers from decking it out to the nines inside. Bedrooms strike a balance of art-deco swish and traditional Chinese glam with rich red-and-gold swathes offset by clean white linen. They’re all decked out in tech too – not that you’ll really need to worry about watching a state-of-the-art 40-inch LCD TV when you’ve got those windows, mind. Within easy striking distance of some of Shanghai’s top sights, including the Shanghai Museum, the Grand Theatre, the Bund and the Former Shanghai Art Museum, the JW Marriott Hotel Shanghai at Tomorrow Square soars 60 stories above downtown Puxi. Nestled among the bustle that spills from nearby Nanjing Road – home to some of the city’s best shopping – massive soundproof windows keep the noise of the traffic and scrambling shoppers below at bay, while still letting you watch their ant-like movements. Watching it all unfold below can prove quite mesmerising – even from the, ahem, bathrooms, as they too have stunner views over the horizon. How does soaking in a bubble bath while watching the sunset turn the sky from blue, to golden, to purple-pink, sound? If you want to slowly digest that city view, one of the best ways is over an unforgettable meal. At M on the Bund, topping the 1920s Nissin Shipping Building, which overlooks the city’s historic riverside stretch, well-heeled locals down globally inspired seasonal cuisine such as king crab fritters with tarragon mayonnaise or crispy suckling pig with stuffed cabbage rolls. Inside is lovely – think crisp, white tablecloths, red accents, stripey banquettes – but the real show happens outside on the open-air upper deck, where you get the full-frontal sight of the Bund and futuristic Pudong. The best time to come is just before sunset, when you can watch groups of friends, couples or families strolling along this iconic stretch of the city, chatting, buying trinkets from street vendors and taking in the sunset. If there’s a more Shanghai scene than this one, we don’t know what it is. After something really swanky? The glam factor really hits the roof at art-deco-inspired Sir Elly’s Restaurant, on the 13th floor of the Peninsula on the Bund. It’s open almost all day, so you could come for an epic Sunday brunch or a quick lunch – though this is a spot that really works its magic come dinnertime. It’s not only because that’s when the views – of the Bund, the river, and neon Pudong beyond – glimmer with their full Shanghainese fabulousness, but the chandeliers, brooding tones, and sexy, rich fabrics (think red velvet, baby) are also just screaming for a romantic late-night dinner à deux. Whisper sweet nothings into your lover’s ear over a marbled wagyu steak; if that’s not enough for the perfect night, there’s also Sir Elly’s Bar one floor up, where you can revel in a bottle of bubbly and 270 degrees of city view. > 62

The fun-loving people of Shanghai do love an evening on the town, so it’s little wonder some of the finest views of this city are from top-notch drinking holes. Thirty floors up at Char restaurant in Hotel Indigo on the Bund, you can catch snippets of that luminous skyline between bites of grilled steak, freshly landed lobster, or top-quality imported French cheeses. But for the very best views, make it a liquid dinner and instead head straight for its outdoor rooftop bar Char, which opens up in panoramic loveliness to the river below and Pudong across the way. While you pick out the world-beating towers beyond (a favourite is always the bauble of the Oriental Pearl Tower glowing in the night sky like a dayglo cherry), you can lean across the tables made of giant soft lighting pillars, each one of them casting a soft hue over the wooden deck. There’s everything and anything you could want to drink here; sip your way through flashy modern cocktails (try the Char Tini – raspberry, cabernet liqueur, vodka, lemon, basil and egg white), fabulous classics (Moscow mules, mojitos or margaritas) or a fine international wine list, while soaking up the tunes of the resident DJs. The Grand Hyatt on the Bund is one of Shanghai’s most exclusive hotels, but you needn’t stay there to bag its finest views. Its coveted top-two floors (numbers 32 and 33) aren’t occupied by exclusive suites – but rather by a bangin’ open-to-everyone bar, VUE. This isn’t any ordinary cocktail lounge: on the highest level, an open-air terrace features day beds for lazy lounging, a whirlpool bath, and DJs pumping out beats every night of the week. Open until 2:30am, you can stay here from sundown until well past bedtime – especially if you have booked one of the swanky rooms below, as you can tumble straight into bed post-party.

What better place to get a view of this city than from a mega-monster building, the second tallest in the entire world? At a whopping 623 metres high, the Shanghai Tower was completed this past summer and literally towers over the former record-holder, the 492-metre-tall World Financial Center. Right in the heart of Lujiazui Financial District, it plans to have a vertigo-inducing hotel occupying its 84th to 110th floors, from which you’ll get brilliant vistas – but even those won’t compete with the viewing platform, all the way up on the 120th level. Once it finally opens to the public (any day now), to get up there you’ll need to take a mighty long, mighty fast elevator journey (it travels 580 metres in less than one minute, in case you’re wondering). Once up there, practically among the clouds, you’ll be able to peer down to the dwarfed 88-floor Jin Mao Tower, and – on a clear day – see a solid 50km across to the blue of the East China Sea. 64

our walls are usually the first requirement when it comes to high-end hotel rooms – along with great interior design, a well-stocked mini-bar and an amazing view. There are no walls (or even rooms) at St Jerome’s Hotel in Melbourne’s CBD – but that doesn’t stop it from being one of the city’s most indemand high-end experiences. And it certainly delivers on the design, view and mini-bar front. Conceived by Melbourne’s very own bar tsar Jerome Borazio, St Jerome’s Hotel is a pop-up glamping site located on the roof of shopping mall Melbourne Central. Thirty bell tents have been pitched on an AstroTurf roof in the shadow of the mall’s distinctive glass pyramid. The small patch of greenery is surrounded on all sides by skyscrapers, so it’s not the standard bird’s-eye view one comes to expect of luxury CBD hotels – but the simple pleasure of waking up and seeing the sky above your head more than makes up for it. This one-of-a-kind experience is no school camping excursion. Each tent is decked out with a full-size bed, heaters, air conditioning, chair, table, mini-bar, robes and a wicker trunk. The portable “en suites” are heated and have showers, while the General Store bar has a daily happy hour and freshly baked sweet treats for afternoon tea. Breakfast is delivered to your tent, to be eaten in bed or on your private patio. A custom-made Gelato Messina dessert even makes an appearance – the perfect pick-me-up if you’ve popped upstairs to drop your shopping off in your tent before heading out again. Glamping in the concrete jungle of Melbourne’s CBD is definitely not your average city break, but it’s perfect for visitors who’ve stayed in every luxury hotel around town and want to try something a little different. In typical trendsetting Melbourne style, it represents a shift in the city’s focus towards bespoke experiences over the obvious luxury choices.

LIFE IN THE FINE LANE

Definitions of luxury in Melbourne are also evolving in other realms, whether it be fashion, food, fitness or fine art. Leading the charge is a new shopping precinct poised to transform the CBD shopping experience in a big way. Tucked between the grand boulevard of Collins Street and the edgier Little Collins Street, St Collins Lane will open in Autumn 2016. The $30-million development is bringing big-name international brands including REISS, Sandro and Tag Heuer to the already burgeoning CBD shopping scene. And that’s not all. St Collins Lane will be selling more than clothes – it will be selling a luxury lifestyle. Along with 9,000 square metres of high-end shopping, there will be a dining terrace filled with restaurants > 70

and cafes. It will also connect Collins Street and Little Collins Street, creating yet another arcade. It’s a perfect illustration of why Melbourne’s laneways and arcades are famous for serving more than just a utilitarian purpose. The narrow corridors connect the city’s major streets and are home to everything from street art to hidden bars and flagship stores. The Block Arcade dates back to 1891 and is one of the city’s most beautiful pieces of architecture. Drawing on the wrought iron mastery and natural light of Milan’s Galleria Vittorio Emanuele, the arcade’s French Renaissance-style stainedglass windows and elaborate mosaics complement the quaint shopfronts – the perfect setting for master tailors, antiquorums, spice emporiums and the Hopetoun Tearooms. The latter were established by the Victorian Ladies Work Association and are original residents of the arcade. Today the window displays are filled with towering sponge cakes and delicate choux pastry swans. After an old-world afternoon tea, walk through the Arcade to Collins Street, where family-owned luxury menswear specialist Harrolds has its flagship store. The Poulakis family is responsible for bringing curated menswear collections to the country, stocking high-end suits by Tom Ford, Brioni and Aritoli among others. Their bespoke concierge service will have you suited up in style, with made-to-measure suits created from the latest designs by big brands and the Harrolds private label.

TREAT YOURSELF

One-of-a-kind services abound in this section of the city. Back on Little Collins street, the Miss Fox day spa is all about bespoke beauty. Step off the crowded street into another world – crystal chandelier, long pink chaise,

STATE OF THE ART When each new Beijing hotel tops the previous in terms of lust-worthy amenities, how do you begin to define real luxury? With an exclusive, world-beating modern art collection – that’s how, writes Alicia Miller

T

here was a time in Beijing when the big brands ruled. The Four Seasons, the Mandarin Oriental, the Peninsula, the Hilton: these addresses were famous because they were exclusive, and they were exclusive because they were expensive – and extensive. Decked out for (mostly) business travellers yearning for the comforts of home, they majored in amenity overload: rambling spas, numerous restaurants, endless event spaces. Even now, they’re beautiful hotels – but is staying in a Hilton in Beijing really so different from staying in one in Paris, or in New York? Today’s well-heeled traveller isn’t looking for another cookie-cutter box in which to park their suitcase; they want something unique – local personality, original features, and extras rich in cultural value rather than just plain old bling. And so, Beijing has witnessed the birth of the art hotel. Boutique by nature – most being smaller in scale than the chain brands – and with daring design, they ooze the allure that comes with exclusive spaces. But they boast more than just sexy bone structure and bespoke furniture; they also happen to be graced with precious collections of fine art. As much galleries as they are places to stay, these shiny new getaways measure fabulousness not by their stunning rooms or tome-like list of spa treatments (though they have those too…), but rather by the rarity of their ‘collections’ – some of which, it so happens, can rival the capital’s top museums. So book into one of these creative hotbeds, and consider your room rate as doubling for a gallery entrance fee. GREEN WITH ENVY

When it comes to the major-league players of the Beijing art-hotel game, nothing quite competes with the visual extravaganza that is the Hotel Eclat. A jewel in the crown of the ritzy new Parkview Green shopping and entertainment complex – itself in Beijing’s Central Business District, Chaoyang – it boasts more than 100 pieces by the crème de la crème of modern art. Legendary global names dot the space as if it were the MoMA: you can mull over pieces by surrealist Salvador Dali, impressionist Matisse and pop-art-extraordinaire Andy Warhol (you’d swear his panda painting was made for the space). Not to mention, of course, the homegrown talent: renowned Chinese sculptors Gao Xiao Wu and Chen Wen Ling (the latter of ‘Red Boy’ fame) also feature. And the hotel really is a form of art in itself. Reminiscent of a luminous shard of glass rising from the car-thronged streets of the CBD below, the striking 100-room interior is all slick, smooth surfaces with pops of jammy colour; dramatic, often sultry lighting; and vast spaces. The aquarium-like lobby, with its shimmering blue ceiling and splatter-tastic paintings, might be the coolest check-in ever. And in dimly lit hallways, eclectic finds – from monochromeprint Louis XIV-inspired armchairs to sculptures that look like they’re made of molten gold – provide a constant stream of wows. The rooms? Not too shabby either. They feature Bang & Olufsen audio systems, Philippe Starck-designed desk chairs, pillow menus, and the occasional piece of handcrafted furniture by Timothy Oulton. Oh, and in case you’re wondering, the swish lounge is also deliciously hip in design, and provides a constant stream of drinks and canapés to guests all day long – for free. >

Cross Chaoyang to the sparkly new designer shopping and restaurant area of Sanlitun and you’ll be greeted with an art hotel of a whole different school. The elegant Opposite House was one of the city’s first design-centric boutique hotels; set across from a traditional courtyard-style home, its jade-green-flecked glass exterior shimmers like an Oscars-worthy evening gown. Inside, its cavernous lobby is all smooth, shiny surfaces, geometric shapes and boxy, minimalist furniture – the perfect gallery-like setting to show off a rotating collection of modern sculpture pieces. Chinese artists from around the globe – sometimes down the road, sometimes as far flung as Sydney or London – provide bespoke pieces, many of which are inspired by the surrounding fashion district. From afar, ‘Beijing Memory No 2’ by Xiao Feng Li appears to be a tailored, printed qi pao dress – but look closer and you’ll see it’s in fact made from mismatched shards of blue-and-white porcelain. Wang Jan’s imposing ‘Dream of China’ is a take on a traditional emperor’s dragon robe, but is, insanely, made of PVC plastic and coloured fishing wire. Because the Opposite House is perfectly placed among some of the city’s hippest shops and eateries, it’s easy to pop in for a peek even if you aren’t staying here – although it really would be a shame not to. The 99 rooms are some of the most stylish in Beijing: natural woods, smooth lines, crisp white linens and floor-toceiling windows through which the sunshine pours in. They are havens of cool serenity in this full-on city.

ART AND SOUL

If you want art to feature in more than one way on your stay, it pays to book a room close to the mega-cool 798 Art District, in another quarter of Chaoyang. Thanks to local and international artists alike, this former military factory is the hottest place for creatives in town: it features all manner of contemporary galleries, work studios and shops, and is the place to rub shoulders with the up-and-coming talent of the Chinese art world. Sound like your scene? Nearby NUO hotel is inspired by the imperial romance of the Ming Dynasty – think rounded archways, gleaming grey marble, and period calligraphy-turned-wall-dressing. Its art collection reflects this throw-back sensibility, but NUO is anything but staid: whether it’s a piece in the dedicated in-house gallery or one on a bedroom wall, they all feel as strikingly modern as they do nostalgic. The effect is a timeless vibe where you’ll find a top-notch array of work by China’s finest artists on show – most notably the famed Zeng Fanzhi, who also happens to be the hotel’s own art consultant.

Best known for his work depicting the connection between art and daily life, Fanzhi’s four star pieces (all in public areas) have been designed specifically to suit the space, and it shows: ‘Le Shan’, a massive 2.5-tonne silver and bronze sculpture, is the eye-catcher in the magnificent marbled lobby, while at the check-in the five-metre-long oil painting ‘Landscape 2014’ is a riot of blues and a vision of wild, barren branches reaching forth from the canvas. But there’s a plentiful buffet of other contemporary Chinese artists on offer: marvel at the remarkable detail in the landscape panorama of bamboos and cypresses by Tang Bohua at the entrance to the restaurant; or the stark, albeit richly textured allwhite ‘Jing’ in the lobby – by Huang Qi, it’s meant to represent the pure, peaceful thoughts of the spiritual world. Book a room and you’ll not only get second helpings of Fanzhi’s work (reproductions, mind), but also a distinctly Ming tone throughout: curved benches, parquet floors, dark woods and rich blues – plus, Ming-inspired slotted windows that make a framed work of art out of the Beijing skyline beyond. >

But NUO isn’t the only hotel within a dumpling’s toss of the coveted 798 Art District. Inside the high-end INDIGO mall and entertainment complex, the hightech EAST Beijing also boasts a Chinese lilt to its art collection, though here it tends to take on a far more contemporary angle. At this sister hotel to the Opposite House, expect a more informal vibe; there’s plenty on show from local, young artists, some from just around the corner. Wired up for the business traveller but cool enough for weekenders, its rooms are minimalist, a soothing offset to the saturation of local look-at-me art. Each one is a vision in clean white, with airy down comforters, rainfall showers, tech galore – and, in some cases, a view over the 17-hectare open park below. And that’s still not all. In a former crystal factory in the very heart of the 798 District, Beijing Yi-House Art Hotel is a 30-room boutique hotel that strikes a balance between the contemporary and traditional veins of Chinese art. This quirky, modern pad has a lobby set with rotating exhibits, inspired by China’s past as well as its present; expect anything from graffiti street art, Alice-in-Wonderland-style chairs or reimagined Chinese pottery painted an unearthly blue. Each room is unique, and all tick the boxes on the style front in their own way – thanks to the unexpected uses of brilliant colour, surreal imagery and fantastically textured fabrics. To properly soak it all up, save time for a sit-down in the Mediterranean-style restaurant, or grab a few tipples at the bar; unsurprisingly, it’s bedecked in its own wild photographic mural. >

“For Sokyo I enjoy using Australian produce and keeping the dishes clean and simple” How did your love of cooking come about? I grew up helping my father, Sachio Kojima, in his sushi restaurant back in San Francisco. It was there that I learned the craft of traditional Japanese cuisine. I have a very humble approach when it comes to food and I think what makes dishes special are unique flavours and smart combinations of ingredients. Before setting up shop in The Star I was working in kitchens across the globe for the iconic Nobu restaurant group. After four years in Las Vegas working under Nobu Matsuhisa I moved to Dubai, London and LA before finishing at Nobu Bahamas. The Star got in contact with me while working in the Caribbean and flew me to Sydney to check out the food

scene and produce. What can I say? It was love at first ‘site.’ There are just endless opportunities at The Star. How did you come up with it? Loving Sydney and also loving Tokyo, I felt my restaurant had a very good feel from both. I basically took the ‘S’ from Sydney, and replaced it with the ‘T’ on Tokyo – hence, Sokyo. “In the last 10 years Sydney has become one of the most interesting capitals of food in the world. Aussies love to experiment” What were your early influences in food? As a child growing up in Tuscany (a region in central Italy), I got to know the great aspect of the regional cuisine, which I’m still drawing inspiration from 20 years later. I started cooking when I was 15; I just always loved prepping food for family and friends. Throughout my childhood I had a nanny, Dora, as my parents were running their own business and were always busy. Dora was a cook, and so she taught me a lot of different things. I had always wanted to be a chef since I was little, and when I turned 15 I decided it was time to take the first step and get into a kitchen. How did you begin working with Osteria Balla Manfredi? In 2003 I was working for Giorgio Locatelli at Locanda Locatelli in London and he had connections in Australia. A friend of his was looking for chefs and I didn’t hesitate for a second to get in touch with him. The following year I left Europe and I moved to Sydney. Australians love to experiment with new cuisines and this curiosity and positivity allows for a rapidly developing and evolving food landscape. The kitchen pre-cooks individually vacuum-packed steaks in a water bath at 54 degrees for up to 1.5 hours and finishes them on a wood-fire grill – ensuring cooking control and the necessary char and hint of wood smoke. “The BLACK bar cellar boasts roughly 1,200 bins carefully sourced from some of the greatest wineries in Australia” What were your early influences in food? Growing up in Lebanon, as a young boy I would watch my father grow and handpick fresh fruit and vegetables as a hobby. Heirloom tomatoes, zucchinis, pears and apples would be picked and my mother would create delicious home-cooked meals using the fresh produce we grew. From an early age I knew I wanted to be a chef. When I was just 16 I began my career as a chef in my home country. I trained for five years gaining a degree in gastronomy and I was offered an opportunity to work as a commis chef at Beirut’s award-winning restaurant Le Centrale. “We were excited to be alongside the celebrity chefs and renowned restaurants to create a dining destination offering for visitors” What were your early influences in food? My grandparents and parents have always been involved in food. My grandparents had a Chinese cured meats shop, and mum started a restaurant in the 1970s. They started running Golden Century in Sydney’s Chinatown in 1989 and it has been a big part of my life. We believe the food, drink, and interiors should complement one another to create an enjoyable overall experience. “I want my food to tell a story. Our menu is a reflection of our culinary team’s diverse backgrounds” What were your early influences in food? Definitely my family. They are all cooks and musicians. My grandma, greatgrandma and uncles were all cooks. My great-grandma used to sell food, and one of the dishes on our tasting menu – the black pudding – is inspired by her version. I don’t think mine is as good as hers! I talked to my parents about it, and they said I shouldn’t do it – which made me want to do it even more because I’m so stubborn. My dad got me a job in the kitchen at the hotel so I could see what it was like, and literally the day that I walked in I was hooked. I worked for free at the hotel for a year and a half until the chef got me a paid job at what is often considered to be the best restaurant on the island. PARADISE CITY Xi’an is a city dotted with both historic and new-age landmarks. From the Bell and Drum Towers built in the 1300s to Tang Paradise completed as recently as 2005, Shaanxi’s capital has much to offer, writes Adrian Mourby

ike any modern Chinese city, Xi’an has its skyscraper skyline and broad, linear boulevards. But at its centre, you’ll still find echoes of Chang’an, the ancient capital of Jin dynasty China (265–420 AD). Chang’an stood here for centuries at the eastern end of the Silk Road’s northern route, and the wealth and trade of the city made it very open to non-Chinese influence. Today, Xi’an’s vast grey brick fortifications enclose a prosperous city that remains rooted in a complex past. The winding lanes to the west of Xi’an’s famous Drum Tower are known as the ‘Muslim Street’. There, on Huajue Lane, you’ll find the Great Mosque, one of the oldest, largest and best-preserved Islamic temples in China, built 1368-98 AD. Its mixed architectural style symbolises the dual influences that created Xi’an; the prayer hall is carpeted and has inscriptions from the Koran on its ceiling, but the carved wooden pillars holding it up are Chinese in style, while the minaret looks like a typical hip-roofed pavilion capped with purple Chinese tiles. The Great Mosque is constructed around four courtyards. In the centre of the second stands two steles displaying the work of the great calligraphers, Mi Fu of the Song Dynasty and Dong Qichang of the Ming Dynasty, who came here after the Jin emperors were swept away in 420 AD. Meanwhile, in the hall to the south of the minaret, a handwritten copy of the Koran is preserved.

IF WALLS COULD TALK

Were it not for the now-famous Terracotta Warriors (dated circa 250 BC but discovered as recently as 1974), people might have come to Xi’an just for its City Wall. It runs in a huge, precise rectangle for 13.7km around the old city, unbroken except where a dozen modern roads cut in through 20th-century arches. This implacable 14th-century barrier is 12 metres tall and so wide at the top (12-14 metres) that you can be driven around it in a battery-powered car. 104

The best way to see the wall, however, is by bicycle. Access is by the South Gate, the most magnificent of Xi’an’s 18 fortified gates. Up above, red lanterns light the wall and small pavilions for guards line the route at regular intervals. It costs 40 RMB to rent a bike for 100 minutes, and you can definitely complete the circuit in that time if you don’t stop. The problem is that there are so many places to take photos that there’s a very good chance you’ll be into the (modest) penalty payments by the time you get back. Every morning a ceremony for opening the city wall is held in South Gate Square, recently restored and only re-opened in 2014. It’s difficult to believe there’s an underground parking lot below. South Gate is the focal point of modern Xi’an; immediately outside it are two luxury shopping malls, Century Ginwa (on Huancheng South Road) and Wang Fu Jing Plaza (on Chang’an Road). The popular Jienuo Belgium Pub is also nearby. The official centre of the city has always been the Ming Dynasty Bell Tower. It was built of wood with a green, three-tiered roof in 1384 by Emperor Zhu Yuanzhang and is the largest and best-preserved bell tower in China. It stands 36 metres high and was intended to provide early warning of any attack on the city. The great bell was also used to sound the start of the day. Because Xi’an developed eastward over subsequent centuries, the Bell Tower was moved 1km in 1582 so it would remain in the centre. Originally, vehicles passed through the north, east, south and west arches of the tower, but the volume of traffic became so great in the 20th century that a roundabout was created around it. Next, they dug a pedestrian subway underneath the roundabout, through which visitors enter the tower today. At night time lanterns hung from the eaves are lit, emphasising the tower’s majestic, ancient appearance. And yet, today, close to the Bell Tower you’ll find the best of the new shopping malls, including Zhong Da International at 30 South Street, which specialises in international luxury goods. >

To the west of the Bell Tower stands the Drum Tower , a 34-metre-high wooden structure built without a single nail. It was constructed in 1380 near the old centre of the city. The purpose of this tower was to mark the passing hours and, specifically, the end of the working day – though it could also be used to signal an emergency. In 1996, a new drum, covered in a single piece of cowhide and the biggest in China, was installed in the tower. There’s much to see outside the old walls too. Four kilometres to the south-west stands the Da Ci’en Buddhist Temple complex, one of a number of historic sights located at the beginning of the old Silk Road. It was built in 648 AD by one of the Tang Dynasty emperors to honour his mother. Although it extends over 50,738 square metres today, the temple is one-seventh of its original size. Within the complex stands the Big Wild Goose Pagoda, constructed in 652 AD by the Buddhist monk Xuanzang to house sutras (scriptures) that he brought back from India. The pagoda has wooden stairs inside, and it’s traditional to throw coins from its windows for good luck. Outside the temple complex is North Square, a modern space containing Asia’s largest musical fountain, which gives nightly performances. There are also midday and afternoon performances on certain days – but evenings, with the illuminated pagoda in the background, are definitely best. A 2km walk south-east of Da Ci’en Temple stands Tang Paradise, shrouded by Lake Qu Jiang. Despite the authentic appearance of its ancient buildings, this is a new tourist attraction that only opened in 2005. The idea behind the theme park was to celebrate the culture of the Tang Dynasty (618-907 AD), which also ruled China from Chang’an. It’s the first park in China modelled after a royal garden. All together 12 scenic zones have been designed in the park to reflect various aspects of life under the dynasty – including its royal gardens and marketplaces, poetry, food and dancing. More than just a historical replica, Tang Paradise has become a spot for locals and tourists alike to take a break from the city without actually having to leave it. You can spend hours weaving your way through colourful gardens and past waterfalls. Tang-style buildings can be found throughout the whole park. As so few have survived in modern China, these elaborate wooden structures conjure up a past that’s almost completely lost. Incense burners have

been placed at regular intervals along every path, making Tang Paradise probably the biggest al fresco fragrance project in the world. There’s also a water film project, the largest of its kind in the world, which at night projects images onto a fan of moving water.

DINE AND UNWIND

Some of the best contemporary food in Xi’an is to be found in its five-star hotels, while the best street food is definitely in the Muslim Quarter. There are also some excellent individual restaurants in the centre of the old city. Close to the Bell Tower are Tong Sheng Xiang and De Fa Chang Dumpling Restaurant, while Papa Park’s Big Wild Goose Pagoda Restaurant is in the trendy Century Ginwa Shopping Center. This is one of seven Papa Park’s restaurants in Xi’an, serving dishes like pizza, salmon and potato wedges western-style. The bar scene in Xi’an, meanwhile, is quieter than in Beijing, Guangzhou or Shanghai, but among the liveliest are three in the central Beilin District: Park Qin, Helens, and Jienuo Belgium Bar. > 1 07

The most dramatic hotel in Xi’an is so new, it’s still being completed. Kempinski Hotel Xi’an is situated on a peninsula with the Chanhe river to one side and Bahe river to the other. It’s designed in the shape of a Chinese dragon, a tower representing the dragon’s head and a curve of apartment blocks its tail. Currently only the body of the dragon is operating as a hotel. Located not far from the Terracotta Warriors on the route in from the airport, it offers a wide range of restaurants as well as a Munich “brewhouse” dining area and a beach cafe on a specially constructed white sand beach along the Ba river. Xi’an’s other five-star hotels include the Shangri-La, a rectangular glass construction with opulent interiors just outside the Second Ring Road, and a Sheraton within the Second Ring Road with a roof garden up in the clouds. Taking cue from its historic surroundings, Sofitel Legend People’s Grand Hotel Xi’an has kept its 1953 facade and is a short walk from the Bell and Drum Towers. Xi’an isn’t just a city rich in history and culture – it also caters to visitors who like to stay in style.

hey call it the magic hour for a reason. A sliver of light on the horizon bursts through the cracks of a thin cloud cover at sunset, transforming Uluru from deep, dormant purple to striking highlights of blood red and black. This is the moment travellers cross the world to experience. Indigenous Mutitjulu men and women are spread throughout the area, greeting us with the traditional welcome of ‘Palaya’, dot paintings sprawled across the red earth telling stories and scenes of their people’s past and present in Uluru-Kata Tjuta National Park. It may be a fleeting moment for us, but for the local community this has been a land of significant spiritual and cultural significance for more than 30,000 years. While the Australian outback is one of the country’s most beautiful features, there’s no denying you’re in the middle of nowhere. Uluru-Kata Tjuta National Park is truly off the grid, the most isolated region in this huge country. Still, that doesn’t mean you can’t indulge in some luxury while you’re there. Hidden in the middle of the Australian desert, shielded by orange-red sand dunes and low green-and-yellow spinifex shrubs, you’ll find an encampment of 15 low-peaked tents. This gem is known as Longitude 131°, and it just happens to be one of the most luxurious retreats you can find in Australia.

Inside the main pavilion, the Dune House, the landscape is celebrated through its distinctive Australian architecture and acts as the hub for all activity at the retreat. Its tall, peaked roof and minimal but authentic traditional fittings allow the views, sky and colours to become the heroes, commanding your attention through every meal and relaxed evening. DESERT DISCOVERY

As captivating as the rooms and expansive views are, you don’t come to the Red Centre to stay in bed all day drinking wine (although that doesn’t sound all that bad). Exploring the area and absorbing its culture and history is the priority here. The package at Longitude 131° includes everything from meals to tours, park entry and transport, meaning there’s not a thing you’ll need to worry about. And the guides and staff are genuinely excited to share the stories of the region with anyone who’ll listen. Setting off on a 6am tour might not be everyone’s cup of tea, but in the words of Lewis McPherson (our guide for the day), “Catching the morning light means sacrificing some beauty sleep.” Throughout the day Uluru takes many forms, ranging from striking bright oranges in the morning to smooth browns in the day, dark purples in the afternoon and deep reds at sunset. Every trip to Uluru offers something new. Uluru is easily the most unique natural formation in Australia. At 348 metres tall, it rises higher than the Eiffel Tower, and its circumference is larger than that of Sydney’s CBD. But it took a long time to develop its current form – over 500 million years, in fact. Uluru began its life some 133km away among the Petermann Ranges. Millions of years of ice ages and erosion eventually caused the ranges to degrade; this led to the formation of rivers, which carried sand, mud and sandstone blocks away from the ranges to be buried in an inland sea on the >

site where Uluru is now located. After another few million years of pressure, the sediment compacted and the inland sea dispersed, revealing Uluru in its current form. Of course, this scientific explanation doesn’t matter too much to the Indigenous Mutitjulu people, one of the longest-lasting Indigenous tribes in the world. The tour around the base of Uluru describes their creation story – though only in as much depth as they’ll share with outsiders. “Their stories are extremely sacred to their culture,” Lewis explains. “They have only shared with us the equivalent story that they would share with a child, keeping the true story and its complex cultural complexities sacred.” Lewis is referring to the story of Kuniya the python woman and Liru the venomous snake – a tale of deception, murder, heroism and a giant demon dingo that is carved into the stone. Cave art scattered around the base, meanwhile, further depicts these stories and provides a snapshot of life hundreds of years ago. As the tour continues, you’ll be taken to Kata Tjuta, an impressive – but often overlooked – rock formation situated 25km from Uluru. Although considerably taller than Uluru at 546 metres, its shape is quite different. Visitors can walk through the 36 individual domes; the most famous of these walks is the Valley of the Winds, where high stone walls tower around you on both sides. The wind flows directly through the middle, creating a dramatic experience from all angles.

Experiences in the national park aren’t limited to sweating it out in your hiking boots – there are a number of adventures Longitude 131° offers as an extra. Camel tours at sunrise and sunset are an extraordinary way to travel – a few hours atop one of these lumbering charmers and you’ll quickly become friends. The bush tucker tour, meanwhile, allows adventurous eaters to devour bush figs, desert plums and even honey ants and witchetty grubs. While eating from the desert floor may tide you over for a few hours, make sure to save room for the dining at Longitude 131° – specifically, the Under the Stars Dining experience. There’s something otherworldly about enjoying a fine dining meal paired with top shelf South Australian wines in the middle of a secluded, red desert. With nothing but campfire light and the moon to illuminate your meal, the small team of waiters and chefs bring out plates of pork belly, tooth fish and desert-themed trifle. Head chef Seona Moss has made it her mission to theme every aspect around the desert; each dish features something from the region, including salt bush and desert fig. Moss has also aimed to make sure every ingredient is organic and local where possible. “Seona even has the entire staff supplying the kitchen from their own gardens,” Worthington says. “Chillies, zucchini flowers and cherry tomatoes all come from someone at Longitude 131°’s garden.” After dinner, settle in as Longitude 131°’s resident astronomer shares his tales of the night sky backed only by the sound of fire crackling amid the otherwise peaceful silence of the Australian outback. With no light pollution for thousands of kilometres, there’s no clearer place to learn the significance of the stars and the Aboriginal stories of creation attached. Some of the most memorable experiences are also the most simple. Sitting and waiting for the light to hit Uluru just right, enjoying dinner under the stars or waking up with a view across the desert all reinforce what makes this area so spiritual. et on a lush peak at the south-western end of Kangaroo Island, Southern Ocean Lodge offers a spectacular view over the crashing waves of the ocean below. Inside the vast forestation lives an array of iconic Australian animals, including kangaroos, echidnas, wallabies and koalas. On warmer days, you’ll need to do a bit of exploring to find their secret hiding places – they like to keep cool, taking solace underneath anything that provides a spot of shade from the sun – but come cooler moments, they’re more than happy to make friends with the guests who’ve travelled a long way to meet them. “One evening, over canapé-and-cocktail hour, an echidna strolled right in front of the patio,” Southern Ocean Lodge manager John Hird recalls. “Everybody crowded around, fascinated, but it didn’t bother him! He wanted to strut down our very own natural catwalk – and we were going to make him feel like a celebrity. Camera phones were out, recording, snapping photos. It set a great mood for the night ahead.” And what a night it was, thanks to a menu designed by executive chef Jack Ingram – undoubtedly one of the best in the world. Every morning, day and night, he serves up a combination of flavours that can only be described as magnificent, taking lucky taste buds on a culinary tour of the island’s freshest produce. Partridge bred specifically for the resort is prepared sous-vide, remaining moist yet falling to pieces with the touch of a fork, and tasting more like chicken than a game bird. Fish – such as trevally and yellowtail kingfish, taken straight from the ocean to your plate – keeps its true taste, complemented by the likes of watermelon, citrus and crème fraiche. Lamb is cooked perfectly to medium rare – most Australians would argue that this is the way it’s meant to be. Reach the dessert at the end of the four-course wine-paired menu to meet with light, fluffy soufflés and delectable pastries handcrafted by talented patissier Yolandi Cronje. >

Incorporated into many of the meals is fresh produce from Island Pure Sheep Dairy, a 260-hectare grazing property home to 1,200 sheep. Producing one litre of milk every day over two milkings (with an area for keen onlookers to observe the action), the sheep contribute to a selection of Mediterranean-inspired cheeses: soft haloumi, salty feta, melt-in-your-mouth manchego and sharp kefalotiri. Their produce also features in labneh and yoghurt, one varietal of which is infused with Ligurian bee honey (Kangaroo Island has the most pure strain of Ligurian bees in the world; in 1880, they were imported from Italy to be the first and only honey bee on the island). As the seasons change and different trees flower, Dave Clifford of Clifford’s Honey Farm manually migrates the bees to ensure they’re kept well-fed and, therefore, producing the most amount of honey possible. Thanks to this migration, many different naturally antibacterial honey flavours abound: blue gum, tea tree, mallee, sugar gum, bottle brush, canola, cup gum.

THE MORE THE MERRIER

Inside the town of American River (so named when American sealers disembarked at that point in the 1803), the rustic Mercure Kangaroo Island Lodge is a hotspot 1 24

for groups on the island. One of the more affordable accommodation options available, it offers spacious rooms, a mid-size pool, a lounge area that visually invites you to enjoy an apéritif, and a pub-style eatery that often caters to groups of 30 or more. ‘The more the merrier’ is general manager Warwick Tomlinson’s philosophy. “We welcome lots of tourists – Chinese, Italian, French, Swedish – and the best thing for me is hearing them laughing, drinking and having a great time. They’re on holidays – that’s exactly what they’re supposed to be doing!” But the food is not the usual you’d find in this type of environment. Responding to demand, Warwick and renowned Australian chef Andrew Waterhouse have tailored a menu that’s sure to impress international guests of all types. Starting with the most important meal of the day, breakfast-goers can choose between a continental buffet selection or a Chinese menu of fried rice, congee, fried vegetables, dumplings and fruit salad. Highlights of the dinner menu, which changes quarterly, are most certainly the freshly shucked oysters and the King George whiting, both local to the region. And for dessert, try death by chocolate or a refreshing sorbet. >

When you’re ready to move from the tastes of the tongue to explore the world at your feet, book a tour with Chris Baxter at Kangaroo Island Wilderness Tours, which provides a Chinese translator on request. Sitting between a storage unit and a smash-repairs shop, award-winning Ferguson is the locals’ favourite supplier of the best seafood in town. Enjoy your meal a few minutes’ drive away at Reeves Point, where, in 1836, the first settlers pulled up and declared Kangaroo Island to be the South Australian mainland – only to revoke the crown when they realised it didn’t offer a large enough fresh-water supply. Spend time exploring the area to have prime seating at Nepean Bay at 5pm, where pelicans flock to feast on a meal of fish guts and skeletons. En route to the lodge, along coastal limestone and ironstone gravel roads adorned with makeshift letterboxes fashioned from refrigerators, microwaves and washing-machine drums, you’ll find yourself at Flinders Chase National Park. Inside is Admirals Arch, sculpted by Mother Nature over thousands of years. Thanks to the weathering and erosion, it’s possible to see right through what was once a solid rock formation to a lively ocean on the other side. Walk along the sturdy timber boardwalk and look out below for a colony of Australian and New Zealand (also known as ‘long-nosed’) fur seals. Weir Cove is often teeming with these creatures, some playful and challenging the waves to a game of ‘catch me if you can’, others simply trying to rest on the rocks – though, being blessed with dark skin of brown and black, none of them actually need a sun tan. On the way back out of the park, there’s a sign for Remarkable Rocks. Drive in the direction it’s pointing to be dwarfed by the oversized granite boulders, crafted over 500 million years by rain, wind and waves – yet another on the expansive list of natural wonders.

Here, hundreds of sea lions make themselves at home on brilliantly white, soft, cool sand. Though humans shouldn’t go within eight metres of the giants, it’s still possible to hear squeaks from newborn pups and whimpers from the beached bodies soaking up the rays. Then, just when you think they simply won’t do anything else, a dominant male rears his head from behind you, checking to see if it’s safe to make his way to the pack and subsequent ocean; it’s getting too hot where he set up camp a few hours ago. As he passes his fellow marine mammals, a few pups stir, then excitedly chase each other until they’re splashing about on the shoreline, overseen by protective females in mother mode. Retreating to even Southern Ocean Lodge’s most basic suite will provide unbeatable views of the island and ocean, appreciated from the balcony’s day lounge. The must-see Series When the BMW 7 Series moved from its slightly drab pre-millennium form to its Chris Bangle-designed relaunch in 2001, it divided opinions. This was a car so modern, so cutting edge that – frankly – some people just didn’t get it. The passage of time proved Bangle right, however. His classdefining masterpiece introduced new standards to the segment and became the best selling 7 Series iteration of all time. It’s a tough act to follow, but with the latest generation 7 Series, BMW has done it again. The precise lines and strong proportions of its predecessor have been maintained while the overall weight has been reduced by as much as 130 kg. As everyone knows, a lighter car is a better-handling car, and at the heart of this massive BMW is a technique they’ve called Carbon Core – a mix of steel and aluminum that increases the strength and rigidity of the passenger cell while simultaneously weighing less. The engine options are winners too, with extensively updated V8 engine and six-cylinder in-line options, a diesel offering 560 Nm of torque and a plug-in hybrid model, which allows for emission-free driving at 120 km/h. However, none of that is what you’ll be talking about at parties. Nor will it be the Sky Lounge Panorama glass roof, the Welcome Light carpet that illuminates the ground around the doors, or even the gesture control for functions like answering calls. Nope. When people gather around and talk about the 7 Series the conversation is guaranteed to turn to its remote control parking. That’s right: the car can pop itself in your garage at the touch of button. Bridging the grape divide One of my current challenges – and one I’m keen to complete – is to show Chinese people just how easily wine partners so many local cuisines. China is blessed with a regional culinary spectrum of comparable significance to that found in Europe, so to me it’s only natural to explore ways Chinese people can marry their culinary heritage with wine. For reasons that have more to do with an imposed French tradition and less to do with logic, cabernet sauvignon and its blends have become the fall-back wine currency in China. Having travelled China and experienced some of its culinary diversity, it’s disappointing to me that the first wines Chinese people choose to partner with their regional cuisines are so often based around cabernet, especially from Bordeaux. Shiraz, with its inherent expression of pepper and spice, would in most cases be a far more suitable partner. Shiraz mirrors its origins with breathtaking honesty. When grown in warmer regions – the Barossa Valley and McLaren Vale especially – it delivers its sought-after richness. Bring it from a cool climate, such as the Yarra Valley or the Great Southern, and its jamminess turns to fine, drying and savoury qualities. From cooler regions it can even deliver a perfume of dark flowers to complement its scents of black pepper and spice, all the while retaining its intensity and flavour. It’s pure historical accident, and a fortunate one for Australia, that it has become the home of the world’s most high-quality plantings of this variety. Australia has become synonymous with shiraz, which gives its wines more chance to partner with a range of Chinese cuisines, from Shandong to Yunan, Hunan and Guandong. Its rather closed, earthy aromas of dark plums, berries and cedar/ chocolate oak are lifted by a whiff of violet and cracked pepper. Try it with classic Shandong cuisine; lamb and cumin in particular.

t’s a mere 10 hours before the launch of her eponymous fashion label and Lillian Xu is a vision of absolute serenity. It’s creeping up to 9am and her hair is done perfectly, her makeup applied flawlessly and, to top it off, she’s dressed immaculately in pieces from her collection. Sitting at Bills in Bondi, ready to take media interviews throughout the morning, it’s hard to believe anyone could be so calm after having dedicated a whole year to a collection while juggling her final trimester of pregnancy and motherhood – all for the first time and at the tender age of 24. But it’s Lillian’s positive attitude towards life that allows her to keep her cool. “You’re going to find hardships in everything you do,” Lillian says. “It’s funny because I call my collection my second baby; I started designing when I first found out I was pregnant. and there’s a lot of work to be done, I just stay positive for myself and my team. When obstacles present themselves we overcome them. That’s all you can do.” Some will say Lillian has had very few obstacles to overcome – she’s an heiress to a multi-billion dollar fortune, built by her father Peter Xu in her home country, China – but she’s out to prove the doubters wrong. While her father agreed to lend financial support, Lillian and her husband Lucas have been left to their own devices when it comes to the label. Lucas, a financier, is in charge of the business and managing the brand, while Lillian works in her Melbourne and Kunshan studios, hiring the people to bring her sketches to life. Her first taste of design came when studying sociology at the University of Melbourne. A year into her degree she found herself looking for more creative ways to express herself. >

“The academic foundation of my degree was very philosophical,” Lillian says. “I just had all these creative thoughts that I felt like I needed to put down on paper. I thought of writing a series of novels, but just naturally started to design clothes and it just flowed from there.” Wanting to source fabrics that will fit her designs perfectly, rolls of material have travelled from Europe, Korea and China to her studios to turn each drawing into reality. But Lillian says the hardest and most challenging part was designing a manufacturing base in China. Her formative years spent shadowing her father, who runs metal processing factories supplying components to companies around the world (many of them Fortune 500), have proved crucial in helping her get her on her feet. “My father is a very hard-working and accomplished man,” Lillian says. “I’m lucky to have him as someone to look up to.” And while that business brain has been a tremendous influence, when it comes to fashion and style Lillian says she inherited her innate flare from another family member. “My grandmother was a socialite when she was younger and always dressed elegantly and still does today, at 82 years of age,” Lillian shares. “She is a woman who embraces life and has done so since she was young. I grew up by her side watching her go about her days with poise 158

and style and I think – actually, I know – that has been a huge influence on me and my designs.” It’s not hard to see, either. Lillian’s collection of 28 outfits exudes the elegance and class her grandmother apparently possesses – but with a fun, playful twist. Her travel experience is another subtle influence; Lillian says she draws inspiration from most of the cities she has visited. Splitting her time between Melbourne and Kunshan, there’s definitely a mix of Eastern and Western cultures evident. “The Chinese market and the Western market are very different, but they also have similarities,” Lillian says. “Appreciation of beauty is universal and I don’t want to separate my customers by geography, but prefer to look at what is happening in world culture. I want to connect women all around the world.” Her aim for the collection was to make clothes for women who appreciate beauty – and the clothes certainly are beautiful. When used, patterns are bold, tops are cropped, skirts are trimmed with frilling or, alternatively, are full like a ball gown. It’s modernity meets femininity. To describe her collection, Lillian has even coined a new term: ‘Ready to Couture.’ “It’s a blend of ready-to-wear and haute couture,” she explains. “I want to approach my ready-to-wear collection with the same respect that you would haute couture”

Haute couture, on the other hand, is traditionally defined by three rules: one, the designs are made-toorder for private clients; two, the labels involved have a workshop in Paris that employs at least 15 people; and three, each season the labels present a collection to the Paris press. These rules have somewhat loosened over the last few decades. Nonetheless, haute couture is the kind of fashion many could never dream of owning. Pieces of haute couture clothing sell for five- or six-figure sums. Lillian has been privileged enough to experience such luxuries first-hand and can appreciate the quality of such unique pieces. So while ready-to-wear and haute couture are polar opposites, Lillian is looking to close the gap. “The traditional view is that there’s this huge distance between ready-to-wear and haute couture,” Lillian says. “There’s this line, and I think it can be crossed – it’s just if you want to or not. With the help of my team, I want to approach my ready-to-wear collection with the same respect that you would haute couture. That’s the quality of clothing I want to produce.” Wasting no time, Lillian has already started work on her next collection. “I want to see my clothes hanging in stores and hopefully on the rack of my own flagship boutique someday,” Lillian says. And after a flawless trunk-show in Sydney, it’s not hard to see that this hardworking ‘billion-heiress’ means business. 160

The carbon is much stronger than steel, so I don’t have to take too much care when wearing it like I might have to do with other precious timepieces of mine. That’s one less thing for me to have to worry about when I’m travelling. It’s just an added bonus that it also happens to be super stylish.
