NATIONAL TRAILS DAY

The PRCR Advisory Board will host National Trails Day on Saturday, June 7, at Joyner Park. OLD SCHOOL FLAVOR, NEW SCHOOL INGREDIENTS

Recently, I found myself flipping through some old cookbooks with a few friends, revisiting recipes from our childhood and reminiscing about our favorites at the time appearing at holiday feasts, family dinners, and our parents’ cocktail parties – and how much food trends have changed since then. Rattling off the ingredients was a bit comical at times … cream of mushroom soup in a Mexican casserole? Canned pineapple magically making a dish “Polynesian?”

Now, retro recipes are making a comeback, bringing nostalgia to the dinner table. But let’s be honest – many of them could use a refresh to better align with modern tastes, dietary needs, and available ingredients. Whether you’re modernizing a cherished family recipe or revamping a vintage cookbook classic, you can revive old favorites while keeping their comforting charm intact.

Many of these dishes became popular during the rise of convenience foods, as canned goods and ready-to-add ingredients made home cooking easier than ever. While these shortcuts were once considered a game-changer, the downside is that highly processed foods and preservatives entered the mainstream, pushing from-scratch cooking into the background. Fortunately, you can revive these classic dishes with a modern, healthier twist; by making simple ingredient swaps and incorporating fresh, locally sourced foods, you can honor tradition while creating a dish that’s both nostalgic and nourishing.

Take, for example, the reliance on rich ingredients like butter, heavy cream, and mayonnaise. While they create delicious, indulgent flavors, they can also make dishes overly heavy and high in saturated fats. Fortunately, healthier swaps can maintain the creamy textures and flavors you love without compromising taste. Try substituting Greek yogurt or coconut milk for heavy cream to achieve the same luscious consistency, but with added nutrients and fewer calories. Olive oil or avocado oil are excellent butter alternatives –cutting butter in half or eliminating it altogether can lighten up recipes without sacrificing flavor. For mayonnaise-based sandwiches or for stirring into your favorite dressing, opt for a light mayo, or perhaps hummus or mashed avocado, both of which add richness while boosting fiber and healthy fats.

Many old-school dishes depend on table salt and processed seasonings like onion and garlic powders for added flavor. While these ingredients are convenient, they often lack the depth and freshness that can truly elevate a dish. Instead, enhance your recipes by using sea salt or kosher salt, which provide a more balanced, natural taste. Fresh herbs add layers of flavor, while sautéing fresh garlic and onions creates an aromatic base that enhances any dish.

And let’s talk about canned “cream of whatever” soups – and why you should skip them. Sure, they’re timesavers, but they’re also loaded with sodium, preservatives, and unnecessary additives. The good news? Making your own creamy soup base is easier than you think – and far more flavorful. Start with organic vegetable or chicken broth and thicken it with a little flour or cornstarch. Add fresh herbs and sautéed vegetables, and for an extra umami boost, try miso paste, smoked paprika, or nutritional yeast. With

these simple swaps, you’ll create a richer, healthier version of your favorite foods –no can opener required!

Classic comfort meals often revolve around meat and dairy, but there are easy ways to lighten things up while keeping the flavors intact. Instead of ground beef, try lentils, mushrooms, or plant-based crumbles for hearty texture and rich flavor without the extra saturated fat. When it comes to dairy, substitute whole milk with oat, almond, coconut, or cashew milk, each offering creaminess without the added fat. For baking, flax or chia seeds can replace eggs; but one of the most surprising and effective swaps is my favorite, aquafaba, the starchy liquid from canned chickpeas. It mimics the binding and fluffing properties of eggs, making it perfect for baked goods like cakes and muffins without compromising texture.

Whenever possible, choose whole ingredients over processed alternatives. Fresh fruits and veggies are always ideal, but if time is an issue, frozen produce is a great backup, offering similar nutritional value without the additives. If making homemade broths and stocks isn’t feasible, organic store-bought broths are a much healthier alternative to sodium-heavy bouillon cubes. By choosing real, whole foods, you can preserve flavor, texture, and nutrients, making every meal feel more vibrant and satisfying.

Many classic dishes were designed for convenience over finesse, but small upgrades can elevate them into something special. Quinoa, brown rice, and healthy grains are great substitutes for white rice and boxed mixes and can be a great canvas for your favorite recipes. Unexpected flavor pairings can also give traditional dishes a fresh twist – take Mom’s meatloaf, for example, but with ground turkey, sun-dried tomatoes, and feta, finished with a balsamic glaze for an updated taste profile. Even something as simple as ground beef gets an Italian-inspired upgrade when combined with chopped arugula, roasted tomatoes, caramelized onions, and peppers.

Part of the joy of retro recipes is their comfort and nostalgia. Keep their spirit alive with modern plating and fresh garnishes. Try serving dishes in individual ramekins or mini cast-iron skillets for a stylish touch. Enhance the visual appeal with microgreens, edible flowers, or freshly grated cheese, and consider layering ingredients for a cool, deconstructed look rather than mixing everything together.

Updating retro recipes isn’t about losing their charm – it’s about keeping them relevant and delicious. With a few simple

tweaks, you can revitalize vintage favorites, transforming them into fresh, flavorful meals that honor the past while embracing today’s culinary trends.

So dust off those old cookbooks and reimagine your family’s favorite recipes with a fresh, modern twist. 

Spring’s floral fashion trends are blooming with creativity and vibrance. Flowers have long been a symbol of the season, and designers are embracing this motif with fresh and innovative takes for everyone who wants to add a touch of nature to their wardrobe. Florals have transcended the boundaries of seasonal trends and have become a staple in everyday fashion. Their versatility and timeless appeal make them a perfect addition to any wardrobe, allowing for endless styling possibilities that can be both casual and chic.

This spring, expect to see florals in bright, eye-catching colors like fuchsia, electric blue, and sunny yellow. These lively colors invite a sense of joy and rejuvenation, perfect for shaking off the winter blues. Look for pieces that make a statement with oversized floral patterns. For those who prefer a softer approach, delicate floral prints are making a graceful return in pastel shades and intricate designs that evoke a sense of romance and nostalgia. These are perfect for flowing dresses, lightweight scarves, and blouses that add a touch of femininity to any outfit.

The trend of mixing prints continues this spring, with florals at the forefront. Pairing different floral patterns together or alongside other popular prints like stripes or polka dots creates a unique and playful look. This style is all about experimentation, so don’t be afraid to mix and match different textures and colors.

For a playful twist, opt for floral bottoms. A floral midi skirt can

be dressed up with a sleek blouse and heels for an evening out, or dressed down with a simple tee and sneakers for a laid-back vibe. Floral pants can add a pop of color to an otherwise neutral outfit, making them great for both casual and smart-casual occasions.

Floral motifs aren’t limited to clothing; accessories are also getting a botanical boost. From handbags to shoes, and even jewelry, florals are embellishing accessories in fun and unexpected ways. A floral statement necklace or a pair of flower-printed sneakers can easily elevate a simple outfit.

Layer floral pieces as your base and add solid-colored jackets or cardigans to balance the look. Pair bold floral prints with neutral accessories to keep the focus on the main piece, or showcase that aforementioned bold botanical necklace atop a simple spring top.

IN TO SPRING GARDENING

Happy spring, gardeners! It’s time to dust off your garden tools and keep them in an easy-to-grab spot for the season ahead. We’re putting our garden plans into action, and as any gardener knows, it doesn’t come to fruition without some sweat, patience, and maybe even a few tears ... so let’s get started!

First, I’m going to tout the soil test. When was the last time you tested your garden soil ... if ever? Now’s the perfect time. Grab a plastic bucket and a garden shovel and collect a few samples from different areas of your garden. But before you do, make sure you have a soil test kit on hand. Locally, you can find them at the Wake Forest and Rolesville Farmers’ Markets. Stop by either market on Saturday mornings and the enthusiastic Wake County Extension Master Gardener volunteers will be happy to hear about your gardening experiences. They can also walk you through the testing process, including how to properly collect and package your sample using the provided cardboard box and information sheet. The NC Department of Agriculture will analyze your soil, running a series of tests that will help you make informed decisions for your garden’s success. And the best part? This time of year, the service is free! Once you’ve gathered your soil samples, you can drop them off at the extension service office on Carya Drive in Raleigh. The results will be an invaluable tool in determining essential nutrient needs and acidity levels in your soil, aiding in plant selection and judging fertilizer needs.

Now, let’s move onto the blooms … are you admiring the flowering shrubs on your neighborhood walks? If so, you may still spot Camellia Japonica in bloom, a spring favorite known for its lush,

elegant flowers. If you adore camellias, consider adding Sasanqua varieties to your garden – they bloom in the fall, offering a stunning contrast to their spring-blooming relatives. Both varieties are evergreen shrubs that thrive in part-shade and bring year-round beauty to your landscape.

The brilliant yellow blooming shrubs currently dancing in gardens are likely forsythia, one of the earliest signs of spring. If you’ve also noticed small, delicate pink flowers, you may be looking at a flowering almond, another stunning early bloomer. Both of these beauties enjoy full sun and are fairly drought-tolerant once established.

Have an extra sunny spot in your landscape? Consider adding quince. You may be aware of the common red-orange variety, but keep an eye out for white, pink, or peach double blooms for something a little different. Just remember – as with all spring bloomers, don’t wait too late in the season to prune, as you don’t want to interrupt next year’s bloom.

Now is also a great time to plant azaleas in shades and sizes that suit your space. If you want a long-lasting floral display, consider Encore Azaleas, which bloom up to three times a year, offering color in early spring, summer, and again in fall. Whether you prefer spring bloomers or rebloomers, azaleas are an excellent choice for adding vibrant color to full shade garden areas.

If you started plants from seed as winter waned and are now preparing to move them into the garden, be sure to harden them off before exposing them to full sun. Hardening off is the gradual introduction of seedlings to outdoor conditions – sunlight, wind, fluctuating temperatures, and even light rain – to help them adjust and to prevent transplant shock. Start by placing them outside for just a few minutes on the first day, then gradually increase the

time they stay outdoors over the course of a week or two. Once acclimated, leave them out overnight in a protected spot. Here in the Triangle (Zone 8a), the average last frost date is April 6, but unexpected cold snaps can still happen. If temperatures drop, protect your tender plants. Large nursery pots can be placed over seedlings to shield them from frost. If using plastic coverings, be cautious – remove them before the sun rises to prevent overheating, as trapped heat can quickly scorch young plants. For a larger area, draping a sheet over plants for a few hours can offer protection. For the best safeguard, keep row cover fabric on hand – it’s lightweight, easy to use, and provides excellent protection from cold snaps and intense sun. Later in the season, it can shield salad greens from the harsh summer sun, extending your harvest and keeping delicate crops thriving.

Spring is the time to start planting summer bulbs and rhizomes (think daylilies, iris, and dahlias). These bulbs will soon be popping up in local garden centers, so pick out your favorites and start planning your summer garden. With a little effort now, you’ll be rewarded with vibrant color and lush blooms in the months ahead.

As your cool-season grass, namely fescue, continues to grow, regular mowing is essential. Keep it at a height of 2.5 to 3.5 inches to promote strong root development and maintain a lush, healthy lawn. Additionally, be sure to provide 1 inch of water per week if rainfall is insufficient. The same is true for warm-season grasses. However, once your lawn greens up, it’s best to mow it to about 1 inch. Be cautious not to scalp any type of grass, as this can weaken it, making it more susceptible to disease and demise. When making fertilizer decisions, consider your grass type and research care documentation available to homeowners.

textures of the season. Many of the new plant introductions will thrive through summer with proper care, bringing vibrancy and life to your space. Pinching back spent blooms or lightly cutting plants after a flush of flowers will encourage new growth and repeated blooms. This also prevents your plants from becoming leggy or tired-looking.

Don’t be afraid to rearrange your pots to highlight different areas of your garden. A fresh placement can enhance the overall look and breathe new life into your space. The same goes for hanging baskets – whether filled with greenery or blooms, they will benefit from proper light, feeding, and watering. Keep in mind that container plants need extra care in full sun. They will struggle if not properly watered and fed, especially in North Carolina’s afternoon heat. When possible, avoid placing container plants in direct, intense sun for long periods.

Vegetables should be planted, fed, and watered just like the rest of your garden treasures. Keeping up with weeding is essential, as weeds compete for nutrients and moisture, impacting the health of your crops. For running plants like cucumbers and squash, consider training them on a trellis or other support structure. Or if you prefer to let them sprawl on the ground, using a layer of straw or mulch can help keep the fruit clean, prevent rot, and suppress weeds. I follow the same practice for pumpkins, which I plant in late June.

Keep an eye out for powdery mildew on plant leaves in both your ornamental and vegetable gardens. If you spot affected leaves, remove them immediately, bag them, and throw them away – do not compost them, as this can spread the spores. For ornamental plants, if mildew has already taken hold, cut them back and discard the infected growth to encourage healthy regrowth.

Listen closely to your newly planted edibles, perennials, and annuals, and you’ll hear that they are just as excited about the growing season as you are. Okay, I exaggerate – you won’t actually hear their excitement, but you’ll certainly see it as they flourish in the warming weather. Keep an eye on their sunlight exposure, hydration needs, and nutrition, and together we’ll enjoy a vibrant and abundant spring and summer.

As the saying goes, “Spring is nature’s way of saying, ‘Let’s party!’” Did Robin Williams say that? I think so! Regardless, get out in your garden and enjoy the party – and when the tomatoes start to ripen, invite others over to enjoy the party too. Happy gardening! 

THE TIMELESS APPEAL OF GIN SIPPING ON HISTORY

The prohibition of alcohol was tried (and failed) long before the U.S. attempted it in 1920. In fact, its predecessor in Britain singled out one spirit in particular – gin. The Gin Act of 1736 was passed by the British government to substantially tax the cost of operating a distillery to ensure that gin production would all but cease. Of course, the distilling just went underground, and illicit gin distilleries and bathtub gin production skyrocketed. One illicit gin peddler devised what might have been the very first vending machine. Captain Dudley Bradstreet hung a painted sign of a black cat with a tube hanging out of its mouth outside his window. Those in search of their next gulp of gin would approach the sign and call “Puss!” When the voice within the house responded “Mew,” pennies were placed in the cat’s mouth, and gin would pour down the tube into a waiting receptacle – or even straight into the customer’s mouth!

We also have gin to thank for the pubs and bars of today. Sometime around the 1820s, “Gin Palaces” began to appear. In an effort to attract a wealthier clientele, many gin distillery owners built elegant and plush gin palaces with shop counters designed for efficient gin serving. This counter, or “bar,” was a place for drinkers to lean and get the bartender’s attention, and is still the model we know today.

The list of gin lovers is both iconic and a bit surprising, starting off strong with F. Scott Fitzgerald and his wife Zelda. Theodor Seuss Geisel (name sound familiar?) was the son of Theodor Robert and Henrietta Geisel. His father managed the family brewery, which was later closed because of Prohibition. As a student at Dartmouth College, Theodore Seuss Geisel adored gin. One evening, Mr. Geisel was caught smuggling gin into his dorm room. The year was 1925, the height of Prohibition, so alcohol was forbidden on campus. Geisel was immediately dismissed from his position as a lead writer and editor of the campus humor magazine, Dartmouth JackO-Lantern. Still wanting to write articles for the magazine without the administration’s knowledge, Geisel began signing his work with the pen name “Seuss.” He would later add the “Dr.” (despite lacking

the actual doctorate degree), and the legendary author of Green Eggs and Ham and How The Grinch Stole Christmas, Dr. Seuss, was born – all thanks to gin, some might say!

Gin has long been seen as a classic spirit, with a history deeply rooted in British tradition and European craft. With countless concoctions of botanical infusions, artisan and small batch craft gins, homemade gin makers, and, of course, the traditional big guns of gins that release exotic, flavored, and pink delights, there is no end to the bouquet any particular gin might offer. In recent years, the American gin scene has exploded with creativity, innovation,

and flavor. Gin is currently experiencing a “Ginaissance,” as it is affectionately dubbed, and the spirit’s future is looking bigger, brighter, and more beautiful than ever imagined.

We even have a world-renowned gin maker in our own backyard –Conniption Gin, made by Melissa Katrincic of Durham Distillery. Melissa combines art with science, revolutionizing the distilling process by incorporating cold vacuum distillation, “a modern technique that preserves the delicate botanicals that would otherwise be destroyed by heat.” Her award-winning gin comes from fond memories of the classic spirit and “cocktail hour at her grandparents’ house, where gin martinis were the drink of choice, and sneaking olives out of her grandfather’s glass became her first taste of gin culture.” This nostalgic connection to the spirit is what fueled Melissa’s passion for creating a gin that honors tradition while embracing modern innovation, bringing the past into the present and future.

There are more classic cocktails made with gin than any other spirit, including Negroni, Ramos Gin Fizz, Martinez, Gin Rickey, Red Snapper, Tom Collins, White Lady, Hanky Panky, Clover Club, Alexander, French 75, Gimlet, Vesper, Singapore Sling, Silver Bronx, Pegu Club, Bee’s Knees, and Southside. But none have withstood the test of time yet offered so much variety as the G&T (Gin & Tonic). Some say the perfect G&T is any G&T – and they’re right –but there is also a science to it.

THE PERFECT GIN & TONIC

The perfect ratio is 1:4 (1 part gin to 4 parts tonic). Choose your gin carefully. Read the label and discover the botanical bouquet inside. Choose your tonic carefully as well. Ideally, choose one that isn’t sugary to allow the natural botanicals of the gin to be the highlight of the cocktail. However, some Fever-Tree Tonics help to enhance those botanicals such as the Elderflower or Cucumber Lime tonics. Add 2 ounces of gin to your chosen glass (the bigger the glass, the better the taste – a large, round glass allows the aromas to travel up the glass to your nose, and 80% of your taste is through smell). Slowly introduce the gin to your ice. The melting ice encourages the release of the botanical flavors within the gin as the oils are released into the water. Add 6-8 ounces of tonic slowly (to taste), followed by your garnish. Get creative with your garnish – add a slice of grapefruit, orange, lemon, or lime, or try a cucumber curl or even a fennel branch. Smell the gin and tonic together. Take a sip and breathe in gently after swallowing – this prolongs the release of flavors in your mouth. Repeat until the world melts away. 

THE AMERICAN CHESTNUT

A COMEBACK STORY

Dominating the Appalachian skyline for thousands of years, the most impressive of trees was the American Chestnut. Towering over 100 feet tall and 14 feet wide, this amazing tree stretched from Georgia to Canada. But it was more than just a tree – it was a way of life. Its strong, rot-resistant wood built everything from homes, paneling, and fences to telegraph poles and tannin for leather production. In fact, much of the stacked wood fencing along the Blue Ridge Parkway is made of entirely chestnut, still standing after more than 80 years. And let’s not forget its nutrient-rich chestnuts, which filled market stalls and kept families fed for generations.

But then, in the blink of an eye, it was gone. In the late 1800s, the Chinese Chestnut was introduced to America, bringing with it new opportunities for food, lumber, and agriculture. A new nut, a new tree, more wood to use – what could go wrong? Unfortunately, these foreign trees that were meant to help brought something else with them – a deadly fungus that would change the American landscape forever. What seemed like a benign fungus quickly became a devastating blight. Once infected, a tree would die within two years. Despite its towering beauty, the American Chestnut simply couldn’t survive. While it took 15 to 20 years for these trees to reach maturity, they were being wiped out in a fraction of that time. It became impossible to ignore – the onceabundant giants were vanishing from the Appalachian forests. Within just a few years, thousands, then millions, then billions of trees succumbed.

By the 1950s, over 85% of all American Chestnut trees were dead. They weren’t just disappearing; livelihoods were as well. Families who once made a living collecting chestnuts were forced to find new ways to survive. Woodworkers, fence makers, chefs, and even power companies struggled in its absence. The American Chestnut wasn’t just a tree – it was a pillar of American industry, culture, and history.

But the story of the American Chestnut isn’t over. Scientists and conservationists have spent decades searching for a solution, and they may have finally found one – the Dunstan Chestnut. This tree is a cross between the American and Chinese Chestnut, carrying 80% of the original tree’s DNA while maintaining the blight resistance of its Chinese counterpart.

And the best part? We might just be witnessing one of the greatest environmental comebacks of all time. Imagine driving down the Blue Ridge Parkway in a few years and seeing American Chestnuts blooming again, their bright white catkin flowers swaying in the spring breeze. ROASTED CHESTNUTS

Nothing says rustic, fireside flavor like charcoal-roasted chestnuts. These smoky, nutty, slightly sweet treats are perfect for spring evenings by the grill. Whether you’re preparing them as a snack, salad topper, or side dish, this simple roasting method brings out their natural richness while keeping them tender inside.

Light your charcoal grill, allowing the coals to heat until glowing red with a steady medium heat. Soak the chestnuts in water for 12-24 hours. This softens the shells and helps them steam as they roast. Using a sharp knife, cut an “X” on the bottom of each to prevent them from bursting during roasting. Push all the charcoal to the center, creating indirect heat around the perimeter. Place the chestnuts in a single layer along the outer edge of the grill so they will cook evenly without burning. Roast for 45 minutes, turning often to ensure an even char and to help the shells open up. Once roasted, let them cool slightly before peeling away the shells.

Toss your roasted chestnuts with flaky sea salt and a drizzle of honey for a simple, satisfying treat. Or chop and sprinkle over a spring greens salad with strawberries or citrus fruits, goat cheese, and balsamic glaze. Top a toasted baguette with chopped chestnuts, ricotta, fresh herbs, and a squeeze of lemon, or serve with soft cheeses, charcuterie, and a crisp white wine for a seasonal appetizer. Layer crushed roasted chestnuts with Greek yogurt, honey, and fresh spring berries for a simple, nutritious breakfast.

CHESTNUT SEARED PORK LOIN

– 1 pork loin

– 1 pound sausage

– 1 pound peeled and chopped chestnuts

– 1 onion

– 1 clove garlic

– ¾ cup white wine

– 3 apples, cored and cut into thirds

– Chopped fresh sage

– Juice of 1 lemon

– ¼ stick of butter

Salt and pepper, then pan sear your pork loin. Let cool. While that is cooling, mix your chopped chestnuts with sausage. Wrap pork in sausage mixture, then sear again; add onion, garlic, and apples to the pan and stir often, being sure not to burn the garlic. Deglaze with wine and lemon juice. Place in a 350 degree preheated oven. Cook to an internal temperature of 145 degrees, then remove from the oven. Place pork on a serving platter with apple slices around it. While stirring the jus in the pan, slowly add the butter. Pour over the loin, then slice, serve, and enjoy. 

Spring has officially arrived, and I’m sure you’re excited to fill your home with all the lush greenery you can find. But before you go plant shopping or rearrange your indoor jungle, let’s talk about some common mistakes that many beginners make when caring for their houseplants in spring. It’s easy to get caught up in the excitement of warmer weather and longer days, but don’t worry – here are some tips to keep your plants happy and thriving.

The first mistake to watch out for is overwatering. After the quiet months of winter, your plants are starting to wake up, and the last thing you want is to drown them in water. Overwatering is one of the most common issues, especially as we get into the warmer season. Plants can be slow to absorb water during their spring awakening, and when they’re overwatered, it can lead to root rot and other problems. To avoid this, always check the soil before watering by sticking your finger a couple of inches into the dirt to see if it’s dry. If it is, then it’s time to water. If it’s still moist, give it a few more days. It’s better to underwater than to overdo it.

Next is a mistake I see often – leaving your plants in the same spot

they were in during winter. As the days get longer and the sunlight gets stronger, your plants will need more light to really thrive. Leaving them in low-light spots can result in leggy growth and yellowing leaves. So don’t be afraid to move your plants to a brighter location where they can soak up that glorious spring sunshine. But be cautious – direct sunlight can burn delicate leaves, so opt for a spot with bright, indirect light. If they’re getting too much sun, use sheer curtains to soften the rays and protect them from the burn.

Repotting is another springtime mistake that’s easy to overlook. Many plants grow rapidly as temperatures rise, and if you notice that your plant’s roots are growing out of the pot or circling the base, it’s time to repot. If you skip this step, your plant may become root-bound, which can stunt its growth and lead to health issues. When repotting, go for a pot that’s just slightly bigger than the current one, and be sure to use fresh, well-draining soil to help your plant continue to thrive.

Now, let’s talk about pests. As the weather warms up, pests like aphids, mealybugs, and spider mites tend to make their way indoors. It’s easy to miss these tiny invaders at first, but if you don’t catch them early, they can do a lot of damage. Be sure to check your plants regularly for signs of pests – symptoms like sticky residue, tiny webbing, or specks on the leaves. If you see anything suspicious, don’t wait! Treat your plant with insecticidal soap or a homemade solution of water and dish soap. And if you spot pests on one plant, be sure to isolate it from the rest to prevent the infestation from spreading.

Lastly, fertilizing is key during the spring months. Your plants are in growth mode, and they’ll need extra nutrients to support all that new foliage. Many beginners forget to adjust their fertilizing routine when spring rolls around, but it’s essential to give your plants what they need to stay strong and healthy. Choose a balanced liquid fertilizer and apply it according to the instructions. Be careful not to over-fertilize – it’s better to give your plants less fertilizer than to go overboard. A monthly feeding during their growing season is usually perfect.

Q: I’m doing a major spring cleaning and replacing my rugs, but I’ve never been confident in choosing the right size. Is there a rule of thumb for rug placement? And how do I coordinate multiple rugs in an open-concept space?

A: Choosing the right rug size and coordinating multiple rugs can be tricky, but following a few simple guidelines will ensure a balanced and cohesive look. For living rooms, the general rule is that at least the front feet of all furniture should sit on the rug. This anchors the space without overwhelming it. If your room is large enough, a rug that accommodates all furniture legs can create a more polished look. For dining rooms, the rug should be at least four feet larger than the table to accommodate chairs when they’re pulled out. For example, a 3’ x 6’ rectangular table needs at least a 7’ x 10’ rug – common sizes like 8’ x 10’ or 8’ x 11’ typically work well. If your table is round, opt for a round or square rug, versus a rectangle. A 5’ round table pairs best with a 9’ round or square rug.

In open-concept spaces, selecting rugs that complement each other without matching exactly is key. Start with one statement rug – often in the dining area – and build from there. But once you retire, you’ll probably need to draw on these accounts to help pay your living expenses. Consequently, both of you will need to be sure that you don’t withdraw so much each year that you risk running out of money later in your retirement. One common guideline is to aim for an annual withdrawal rate of 4%, but everyone’s situation is different based on age, pre-retirement income, lifestyle, health, travel plans, and other factors. (Once you turn 73, or 75 if you were born in 1960 or later, you will have to take certain amounts, based on your age and account balance, from your traditional IRA and traditional 401(k) each year.)

WHEN SHOULD YOU TAKE SOCIAL SECURITY? The answer to this question depends on many factors, such as your age and other sources of income. You can take Social Security as early as age 62, but your monthly payments will typically be bigger if you wait until your full retirement age, which will be age 67 if you were born in 1960 or later. And if you can afford to wait even longer, your pay-

ments will “max out” when you reach age 70. Your decision on when to take Social Security can affect your spouse (and vice versa).

(Spousal benefits are given to the lower-earning spouse if their full retirement benefit is less than half the other spouse’s full retirement benefit.)

SHOULD YOU DOWNSIZE? If you live in a big home and your children have reached independence, you may find it economical to downsize. Of course, this is also an emotional decision, but you may find that you can save money by moving into a smaller home.

WHERE SHOULD YOU LIVE? Some states are far more expensive to live in than others. You’ll want to weigh your decision carefully, considering the costs of housing, food, income and real estate taxes, transportation, and healthcare in whichever state you choose.

HAVE YOU FINISHED YOUR ESTATE PLANS? If not, now is the time. You’ll want to work with your legal professional to create whatever documents are needed (a will, living trust, power of attorney, etc.) to help ensure your assets go where you want them to go, and that your financial and healthcare choices will be protected if you become physically or mentally incapacitated.

Of course, many of these same issues will apply if you are single, divorced, or widowed. But if you are married, you and your spouse will want to discuss your choices and then decide which steps to take together. With thoughtful preparation, you can confidently embrace this next chapter – spending less time worrying about logistics and more time enjoying the experiences and freedoms that retirement has to offer. 

THE LOWDOWN ON GROWING PAINS

If your child has called out in the night with lower leg pain in the calves, knees, or shins, you have probably been told by a family member or physician that it’s just growing pains. But what exactly does that mean, and how do you know if it’s something more serious? We asked Pediatric Nurse Practitioner Stacey Talarico, CPNP, with WakeMed Children’s – Pediatric Primary Care, to explain what’s really going on and what you should do when children experience mysterious pains that are seemingly out of nowhere.

As a mother of three who also remembers having growing pains when she was younger, Talarico understands how perplexing they can be for children and families. First and foremost, she wants families to know that the pains are very real and a common part of childhood – especially between the ages of four and eight – so you don’t need to be overly worried if your child is growing and developing normally. However, it is completely logical to talk to your child’s doctor if you are concerned or have any questions when they occur.

It’s unknown why growing pains happen. “While some associate them with growth spurts, they’re actually not as common during stages of rapid growth, so it’s a little confusing that we call them growing pains,” she shared. “What we do know is that the pains do not indicate that any damage is happening with the muscles or bones.”

These pains should be easily alleviated with massage, ice, or a heating pad, and Talarico recommends children’s pain reliever for bothersome pain that does not easily subside. Eating a banana may also help since they contain potassium and other nutrients that can ease cramps.

The goal is to comfort your child and help them get back to sleep

if the pains are preventing them from getting a good night of rest. “Reassure them that it’s normal and nothing to be alarmed about,” said Talarico.

Physical exertion or overuse of muscles may lead to some growing pains, so good daytime stretching habits may also minimize nighttime pains.

“Growing pains also seem to be associated with genetics – meaning a child may be more likely to experience growing pains if a sibling or parent has experienced them as a child,” she explained. “They should outgrow them, but some adults who report memorable growing pains in childhood also experience restless leg syndrome later in life.”

Talarico tells parents and children to simply think of growing pains as a part of development with a little mystique. However, she cautions families to talk to their doctor if the pains are also occurring during the day or if they recur in the same area or along with concerning symptoms such as decreased functionality, increased pain at rest, or are accompanied by recurrent fever.

If a child is experiencing leg pains with other symptoms, their pediatrician will most likely check some things with bloodwork or imaging.

“Don’t delay a medical evaluation of pain that does not subside easily or occurs with other symptoms,” said Talarico. “There may be further issues that should be looked into and addressed.” 

Don’t overlook Camilla Kitchen, tucked inside the independent bookstore, where Chef Teryi Youngblood pours her heart and soul into each of the snacks and sweets. If it’s “Golden Hour” (after 4:00 PM), the small bites menu is the perfect means to hold you over before more exploring.

No visit is complete without a stroll through Falls Park on the Reedy. As many as 24,000 flowers are planted in the 32-acre urban oasis each year. Take a moment to watch the Reedy River waterfalls crash beneath you and find yourself surrounded by nature in the middle of downtown. Be sure to find Dale Chihuly’s sculpture, Rose Crystal Tower, located at the park’s West End entrance. It’s one of more than 120 pieces of public art throughout the city.

Your hardest decision all day will be where to eat dinner, as downtown Greenville boasts more than 200 independent restaurants. Jianna is just outside the main entrance to Falls Park. DAY 2

Classes range from Southern comfort classics like biscuits and gravy to international cuisine like Asian fusion. After you’ve sharpened your skills, head downstairs to explore their massive kitchen shop, a boutique dedicated to all things cooking where you’ll find every gadget and tool you never realized you needed.

Continue your retail therapy by exploring some of the other downtown boutiques. Find the penny candy barrels at Mast General Store, taste dozens of on-tap oils and vinegars at Oil & Vinegar, and find the perfect gift at Samantha Grace Designs before stopping by Greenville Soy Candle. Candle-making classes are offered regularly, and you’ll select everything from the scent to the color before hand-pouring your own candle.

For a DIY history lesson, take a tour of Greenville via Eugenia Duke’s Unofficial Guide to Greenville. Greenville’s story as it relates to Duke’s Mayonnaise is legendary. In 1917, Eugenia Duke began selling homemade sandwiches to help make money for her family during the war. Due to requests from soldiers at nearby Camp Sevier just outside the city, she started bottling her mayonnaise around 1923. The mayo trail includes 20 of the tastiest dishes in town featuring the condiment, plus four historical stops.

Plan to spend the rest of the afternoon and evening in The Village of West Greenville, the creative hub that reflects the city’s growth over the past decade. I’ve learned the hard way that if we don’t take the time to care for our bodies, minds, and spirits, we can easily run on empty. This is where self-care comes in, and trust me, it’s not just a buzzword. It’s a lifeline.

At first, I used to think that self-care was a luxury reserved for weekends or special occasions. I believed it was something you’d do occasionally – perhaps a spa day or a long bubble bath. But as I got older, I began to understand that it’s more than just a treat. It’s a necessary practice for maintaining balance and well-being in a demanding world. In fact, self-care is not just about pampering yourself; it’s about creating space for healing, growth, and finding moments of peace.

Physical self-care is often the first thing that comes to mind, but it’s more than just warm baths and massages. It’s about nourishing your body, listening to its needs, and respecting its limits. I once ran on caffeine, late nights, and constant work, believing that pushing my body would lead to success. But my energy dropped, I got sick more often, and I was mentally drained. That’s when I realized my health had to be a priority. I started prioritizing sleep, nutritious meals, and hydration. Breaking old habits wasn’t easy, but the positive impact on my body was undeniable.

Physical self-care doesn’t just mean staying healthy; it also means moving your body in ways that make you feel good. For me, that meant finding an exercise routine I loved – walking through nature, playing hockey, or going to the gym. These simple actions helped my body recover and my mind relax. It’s about finding what works for you and making it a part of your daily life.

Mental self-care is just as vital as physical care. With constant stress and information overload, our minds need rest. I once believed every moment had to be productive, but I didn’t realize how mentally taxing that constant pressure was until I hit a burnout. It was a tough moment, but it helped me understand the importance

I’ve learned that being still and present helps me recharge, so I can approach challenges with a clearer, calmer mindset. Setting boundaries is also key. Saying “no” to draining commitments isn’t always easy, but protecting your mental space is crucial for longterm well-being.

Emotional self-care is often the most overlooked, but one of the most important, forms of care we can give ourselves. It’s about acknowledging and allowing ourselves to experience emotions. For years, I bottled them up, thinking that ignoring them would make them go away. But the truth is, emotions are not meant to

be ignored; they need to be expressed and processed. One of the best things I did for my emotional health was to start talking openly with close friends and family. Having those honest conversations was incredibly healing. Sometimes, just knowing that someone understands your struggles can make a world of difference.

Another key element of emotional selfcare is forgiveness – both of others and of ourselves. Holding on to grudges or past mistakes can weigh heavily on the heart. Learning to let go, practicing selfcompassion, and the ability to forgive has been liberating for me. I’ve realized that my emotions are valid, and I deserve to honor them, not suppress them.

Spiritual self-care doesn’t have to mean religion – it’s about connecting to something greater and finding meaning in your actions and relationships. It’s deeply personal and looks different for everyone. For me, it involves spending time in nature or practicing gratitude. Taking a few minutes each day to reflect on what I’m thankful for has profoundly improved my well-being, reminding me that even in chaos, there’s always something to appreciate.

The beauty of self-care is that it’s an evolving journey. There’s no one-size-fits-all approach, and it doesn’t look the same for everyone. It’s about taking time for yourself and discovering what nurtures your body, mind, and soul. It doesn’t have to be a big, elaborate event. It can be as simple as taking a few minutes each day to breathe deeply, going for a walk, or saying no to extra commitments. It’s in those small, everyday moments that true self-care lives. Remember, you can’t pour from an empty cup. Taking care of yourself is not selfish –it’s necessary. It allows you to show up as your best self for others, whether that’s at work, in your relationships, or in your community. So, take a deep breath, check in with yourself, and ask, “What do I need right now?” The answer might surprise you. Whatever it is, give yourself

permission to honor that need. Because in the end, when you prioritize yourself, you become better equipped to take on everything life throws your way.

SPICY SALMON RICE BOWL

This is the perfect example of food as self-care – it’s packed with lean protein, healthy fats, and fresh vegetables, all essential for feeling your best. Plus, it’s easy to prepare, meaning you can nourish your body without stress or hassle.

– 3 tablespoons low-sodium soy sauce, plus more for drizzling

– 2 tablespoons rice wine vinegar

– 1 tablespoon honey

– 1 tablespoon toasted sesame oil

– 1 tablespoon grated fresh ginger

– 2 garlic cloves, minced

– 11/2 tablespoons sriracha

– 4 6-ounces skinless salmon fillets

– ¼ cup mayonnaise

– 3 cups frozen white rice

– 3 mini cucumbers, thinly sliced

– 1 avocado, sliced

– Sesame seeds, for garnish

Preheat the oven to 425 degrees. Coat a baking sheet with cooking spray. Stir together the soy sauce, vinegar, honey, sesame oil, ginger, garlic, and 1 tablespoon sriracha in a small bowl. Place the salmon on the prepared baking sheet, pat dry with paper towels, and brush with the soy sauce mixture. Bake until just cooked through, 10 to 12 minutes. Meanwhile, combine the remaining 1/2 tablespoon sriracha with the mayonnaise in a small bowl. Microwave the rice as the label directs, then divide among bowls. Flake the salmon into chunks and arrange on top of the rice. Top with cucumber slices and avocado and drizzle with soy sauce. Sprinkle with sesame seeds and serve with the spicy mayo. 

In the educational, spiritual, and aesthetic center of town stands a collection of beautiful buildings spread across 300 acres of meticulously maintained grounds. Starting in 1834 and ending in 1956 when it relocated to WinstonSalem, it was once home to Wake Forest College. In 1951, Southeastern Baptist Theological Seminary began offering classes there, and acquired the entire campus in 1956.

The landscape of the abundant acreage evolved over the first 100 some years – most notably to include the creation of a sturdy and charming fieldstone wall that surrounds the campus – built from 1885 to the early 1900s. Made without mortar, the walls are flexible and withstand changing environmental conditions like rain, temperature, and shifting ground.

Along with five gates on the north, west, and south sides, the lush lawns, mature trees, and shrubs that adorn the grounds and the sense of beauty, peace, and purpose emanating from this sacred space cannot be overstated. The gates are formed by stone bases, ex-

tensions of the walls, and support delicate cast-iron arches. Electric lamps set in the peaks of the arches were installed in the early 1990s.

Indeed, for those lucky enough to live or work nearby, or make it part of a downtown visit, walking across the grounds is both like being transported back in time and experiencing what amounts to an ambulatory meditation. Wandering the paths as they crisscross the campus, in close proximity to the large and leafy magnolia and boxwood trees and abundant azaleas, pansies, and tulips, admiring the simple bricked beauty of the buildings and landscape architecture – all surrounded and insulated by the stone wall – wondering how it came together and imagining all who were there before, constitutes something of a spiritual experience in itself.

Two bronze plaques near the wall honor those who built and preserved it. The north plaque commemorates Doctor Tom (Tom Jeffreys), a dedicated maintenance worker and gardener at Wake Forest College from 1880 to 1927, who, along with Len Crenshaw, constructed the wall. Jeffreys was born enslaved in Virginia around 1846 and moved to Wake Forest in the 1880s with his wife and children. He worked at the college until his passing in 1927. The south plaque recognizes Douglas Buttram, a Seminary student who repaired the walls in the 1990s.

“Dry-laid stone walls are found throughout the historic areas of Wake Forest and contribute to the character and sense of place of the town,” said Michelle Michael, senior planner for Historic Preservation. “These walls were erected using local materials to build retaining walls, boundaries, and property lines. They are a significant part of our historic landscape and are worthy of preservation.”

According to Ed Morris, retired director of the Wake Forest Historical Museum, visitors and residents alike take note of the imposing stone wall, often wondering about its origins. “Few likely know it was built by a formerly enslaved man in the late 1800s,” he said. Unlike the wooden fences common at the time, the stone wall was a visionary alternative, suggested by Jeffreys as a low-maintenance solution to enclose the campus. It served to define the school’s boundaries, keep wandering livestock out, and contain sheep once used to maintain the college grounds.

By 1931, four years after Jeffreys’ passing, the community honored his nearly 50 years of service with a commemorative plaque. Over time, the wall became both a landmark and a testament to his legacy.

North Main resident and longtime Wake Forest Garden Club member Ruth Ann Dyer considers the wall an irreplaceable part of the town’s identity. “The wall is a symbol of what we once were and how we started and greatly contributes to the small-town character of the town,” she said. “I can’t imagine the center of our town not having that wall. It’s not about keeping people out or in, but inviting them to sit, walk, and take in the fresh air.”

“There’s a sense of peace there,” Dyer said of the Seminary. “Walk the brick walkway, sit for a spell on the benches or on the wall. Take in the beauty of the scenery. Look at the trees and smell the fragrance of the flowers drifting through the air. It is the core of this community. It always has been and always will be.”

Today, Wake Forest has fully embraced the stone wall as a treasured symbol. Its influence extends to new developments, from Heritage to Joyner Park, where similar stonework continues to honor its legacy.

Dry eye disease (DED) is a chronic condition affecting millions, causing discomfort, blurred vision, and ocular surface damage. As the days grow warmer, thoughts of summer fun are just around the corner. While it may not be peak pool season yet, now is the perfect time to start preparing, especially if you plan on introducing your four-legged friend to the water this year. Whether you have a dog that loves to splash around or one that’s new to the idea of swimming, taking the right precautions can ensure a safe and enjoyable experience for both of you.

NOT ALL DOGS ARE NATURAL SWIMMERS

Labrador retrievers, golden retrievers, and Newfoundlands are famous for their love of water and natural swimming ability, but that doesn’t mean every dog is built for the pool. Some breeds, particularly those with short legs, stocky bodies, or flat faces, may struggle to stay afloat. Breeds like bulldogs, pugs, and dachshunds are at a higher risk of exhaustion or drowning due to their body structure. However, even if you have a breed known for swimming, it’s important not to assume your dog will automatically know what to do. Every dog is different – some may love the water immediately, while others may feel hesitant or even fearful. Start slow, never force them in, and give them time to adjust to the water at their own pace.

GRADUAL INTRODUCTIONS ARE KEY

If your dog is new to swimming, begin with a shallow area, such as the pool steps, a kiddie pool, or a calm lake shoreline. Let them explore at their own comfort level before gradually moving to deeper water. Encourage them with praise and treats, and always supervise closely. If your dog is showing signs of fear or discomfort, don’t push it – some dogs need more time to gain confidence in the water. A canine life vest is great for dogs that struggle to stay afloat or tire easily. They provide buoyancy and support, making swimming safer and more enjoyable for your pup. They also come with handles, making it easier for you to lift your dog out of the water if needed.

SUPERVISION IS NON-NEGOTIABLE

Even if your dog is an experienced swimmer, never leave them unsupervised in the pool. Accidents can happen quickly, and dogs can become disoriented or exhausted without warning. Additionally, prolonged exposure to chlorinated water can cause skin and coat irritation. If your dog loves spending time in the pool, be sure to monitor their skin and rinse them off with fresh water after each swim session to remove residual chemicals.

PREPPING YOUR PUP FOR WATER FUN

KEEP YOUR POOL SECURE

Make sure your pool area is fenced and that your dog cannot access it unsupervised. Many dogs may jump in without realizing how to get out. Train your dog to enter and exit the pool from designated areas, such as the steps or a dog-friendly pool ramp. Consider installing a pool alarm that detects movement in the water for an added layer of protection if your dog accidentally falls in.

POOL ETIQUETTE AND MAINTENANCE

Dogs bring joy to the pool, but they also bring fur, dirt, and debris. Regularly check the pool filter for fur buildup and clean the pool more frequently to maintain water quality. Providing fresh drinking water nearby will also discourage your dog from drinking pool water, which contains chemicals that can lead to digestive upset.

WATCH FOR FATIGUE OR OVERHEATING

Swimming is great exercise for dogs, but it can also be exhausting. Watch for signs of fatigue, such as heavy panting, slowing down, or struggling to keep their head above water. Encourage breaks and provide a shady area where they can rest. In warmer weather, dogs are also at risk of heat exhaustion, even when in the water. If your pup is excessively panting, drooling, or acting sluggish, move them to a cool, shaded area and provide plenty of fresh water.

POST-SWIM CARE

After swimming, dry your dog’s ears thoroughly. Water trapped in the ears can lead to infections, particularly in breeds with floppy ears. Consult your vet about pet-friendly ear cleaning solutions to help prevent issues. Keeping your dog’s coat clean is just as important. Rinse off chlorine, salt, or lake water to avoid skin irritation, and brush their fur to remove any tangles or debris.

WHEN WE ARE US

Allan Young was a prominent community leader in Wake Forest who dedicated his life to advocating for education, political rights, and social freedoms for African Americans. He organized local Emancipation Day celebrations, supported the Rural Progressive Uplift organization, and advocated for increased voter registration and electoral participation among African Americans. His efforts to improve local infrastructure and expand opportunities reflected his commitment to fighting injustice and fostering a more democratic society.

One of Young’s most significant accomplishments was his work in advancing African American education in Wake Forest. Born in 1875 to Ailey Fowler Young and Henry Young, both formerly enslaved individuals, Allan Young grew up during an era when racial discrimination severely limited access to public education for African Americans. Before the Civil War, southern states like North Carolina banned African American education, fearing that literacy would threaten the established racial hierarchy of slavery. Young’s determination to overcome educational barriers became a driving force in his life and work as he worked to combat the legacies of slavery.

Initially, the Wake Forest Normal and Industrial School began as a mission school affiliated with the Spring Street Presbyterian Church, known as the Presbyterian Mission School for Colored Boys and Girls. The Presbyterian Board of Missions for Freedmen partially funded the school for its first decade. It started with 30 students, with Young serving as both principal and the sole teacher during its inaugural year, operating out of an empty mattress factory on White Street.

By 1930, the Wake Forest Normal and Industrial School campus included a two-story main building, with grades six to 11 on the lower floor and a dormitory for girls above. Surrounding this central structure were smaller buildings, including an elementary facility on East Pine Street. The school served over 300 students and employed around a dozen faculty members, many of whom were part of Young’s family. His wife and several of his children took on teaching roles, fostering a strong sense of community around education.

In 1905, Allan Young worked with other community leaders to establish the Wake Forest Normal and Industrial School. Normal schools combined teacher training with practical vocational training for African American students. Young developed a well-rounded curriculum covering English, Latin, French, and civil government. The school also taught industrial skills and provided trade knowledge to prepare students for life’s practical duties. Male students received training in farming and manual trades, while female students learned skills like housekeeping, sewing, and cooking. Night classes were offered for adults, widening the accessibility to education. The establishment of schools like the Wake Forest Normal and Industrial School paved the way for better employ-

Allan Young’s dedication to education, social progress, and civil rights left a lasting impact on Wake Forest. Despite the closure of the Wake Forest Normal and Industrial School in 1957 and the demolition of its buildings, Young’s vision for education continued to shape the community for generations. 

Earlier this year, the Wake Forest Historical Museum (WFHM) hosted the “Making Our Voices Heard” exhibit, presented by NC Historic Sites, which highlights the stories of North Carolinians like Allan Young, who have raised their voices against injustice and fought for a more democratic society.
