I write as the last bit of Winter may be reminding us how good the cold temperatures are for the lands…My generation is still rooted in the goodness of what Winter provides, snow, freezing and thawing, a process that is beautiful when we take time to observe.

This local Guide is rich in its rootedness of all these years, giving us a strong foundation in our ability to support our local farmers with all the places their products can be found and in turn to support our local communities. A commitment that is apparent as we shop at farmers markets, enjoy a meal, a drink at restaurants or wineries that are supporting local farmers: read your labels and buy for and from our local artisans.

The fortitude of roots when given the right conditions will provide a plentiful harvest. However, we see or hear the word rooted, remember the places it can take you. In your backyard, in your fields or out in your community, it is the tie to what will keep us strong in these times.

What’s Regenerative

Regenerative agriculture is defined by Understanding Ag as “Farming and ranching in synchrony with Nature to repair, rebuild, revitalize, and restore ecosystem function starting with all life in the soil and moving to all life above the soil.” The 5 principles are (1) minimal disturbance to the soil, both mechanical and chemical (2) keep the ground covered at all times (3) keep a living root in the ground as long as possible (4) increase biodiversity (5) integrate livestock.

And why do it: So we can produce healthy, nutrient- dense food from healthy soil that sequesters carbon, helping address the climate crisis, now and into the future.

Local Simply Tastes Be er

Istarted working at Bouquet in Covington in the fall of 2021. Having a background in local food and farming, and experience working in restaurants, becoming a server at an authentic farm-to-table restaurant felt like the perfect fit. Bouquet’s history and foundation of sourcing local food is reflected in its strong root system of farmer connections and regular guests who are just as committed to Bouquet as we are to them.

When I sat down with Chef Stephen Williams to talk about how and why he has been sourcing locally for 17 years, he answered simply, “because it tastes better”. Stephen grew up influenced by the time spent in his grandmother’s restaurant in Hazard, Ky. Before starting Bouquet, he attended culinary school while working for 3 years with Chef Jean-Robert de Cavel at Pho Paris. When Stephen first opened Bouquet, he would go out to 3-4 farms a day helping harvest and loading up his truck with fresh, seasonal ingredients to draw up his daily recipes. Cooking from what is seasonally available made him more creative as a chef. Since 2007, our list of local farms has grown substantially, and with it, Bouquet’s influence on local food culture, as well as its reputation as being one of the most delicious and celebrated restaurants in Northern Kentucky and greater Cincinnati.

Ashley Philpot is a mother, gardener, and herbalist living in the Enright Ecovillage. She formerly worked as an organic farmer, CSA coordinator, and school garden educator. Ashley has a Master’s degree in Social & Cultural Anthropology, and is certified in Permaculture Design.

Since I’ve worked at Bouquet, I’ve seen firsthand the beautiful crates of freshly harvested vegetables being brought in by farmers, and the easy conversations back and forth between farmers and the kitchen staff. Bouquet has cultivated relationships with over 60 local farms and artisans including Dark Wood Farm, Carriage House Farm, Guided by Mushrooms, Pippin’s Produce, Greenacres Farm, as well as the smiling woman the kitchen lovingly refers to as “Farmer Sallie”. Most recently I had the honor of serving the owners of Kenny’s Farmhouse Cheese of Austin, Kentucky– two of the sweetest people I have ever met–whose artisan cheeses made from their own herd of cows grace our Charcuterie boards on a daily basis.

In the last year, Bouquet has joined forces in a partnership of local restaurants sourcing organicallygrown vegetables and pastured meat from Holland Farms in Williamstown, Kentucky (39 miles south of Cincinnati). Chef Stephen says this creative partnership includes the opportunity to plan with the farmers what to plant for the upcoming growing season. This level of connection is unique in our area and enables our restaurant to influence the growing practices at a deeper level. Holland is currently implementing a pond irrigation system to close the loop on the water cycle at the farm, making them less reliant on city resources, and helping to achieve greater sustainability overall. I agree with Chef Stephen that local simply tastes better, and tasting better serves many purposes.

Growing, Feeding, Serving

Avision rooted in passion, a Grandmother, and faith - that’s why Shannon Carr embarked on her journey 25 years ago that has become the Isaiah 55, Inc. organization. The original garden program was inspired by Shannon’s grandmother, Mary King Ingram, affectionately known as “Mrs. Kanggy”. Mrs. Kanggy had award- winning gardens in her small town of Devereaux, Georgia; she then acquired farmland to feed her family and her small town.

Like her grandmother, Shannon also loves to garden and feed people. And her favorite game is Monopoly. So putting all that together, she used her creativity to acquire land for gardens by finding blighted and donated parcels. The land may not be the Boardwalk or Park Place of Monopoly but hard work has turned the acquired land into gardens located in Evanston, Avondale, Mt. Auburn, and most recently, East Price Hill. Some of that creativity was also used to acquire supplies for gardening through reclaiming items from trash days, thrift stores, dumpsters and closed businesses.

Through all of this, faith sustains her (*see Isaiah 55). Even though she enjoys what she does, it’s hard to grow food in an urban environment. Challenges abound with changing codes, investors who want the properties, and water access being expensive. Yet, calling on her faith, she remembers that everything she has helped create so far has come out of trouble, and then she finds ways to move forward. The work started with addressing the trouble of some people not having access to enough healthy food, or even just enough food, in our city. Trouble creates opportunities to rethink how to adapt to meet the challenges.

The gardening work has expanded into a mobile food pantry and a restaurant, Garden of Eat’n in East Price Hill, renovated thanks to the help of supporters like Keep Cincinnati Beautiful and Altafiber and its employee volunteers. Supporting families, not just individuals, is the latest program development. This approach enables families to have both food access and food knowledge through hot meals, healthy food prep, gardening skills, budgeting information and food stamp tips. The program is especially for the “working poor” whose paychecks barely cover their expenses.

Isaiah 55, Inc continues to emphasize healthy food for all human beings, no matter their ability to pay. This organization serves the community by reminding us all that food justice is part of community justice, and we all deserve to eat.

South Fairmount residents Jules Brookbank and Heather Sayre have shared a local food journey since gardening with friends at the City of Cincinnati’s Urban Agriculture Pilot Program at Martha Street in 2008. With back of the house restaurant experience, Jules was drawn to gardening with an interest in fresh ingredients for cooking. He also wanted to get outside and connect with nature. As he became aware of the industrial food system, he looked for alternatives. Meanwhile, Heather was inspired by how much food her grandparents were able to both produce and divert from waste in their transient homesteads. Though Heather’s parents gave up the big garden and meat rabbits early in her childhood, small gardens and compost remained normal. She was concerned that growing food and soil wasn’t common for a lot of people. So Jules’ and Heather’s interest in local food has allowed them to share nearby but separate paths.

Jules has focused on production. One of Our Harvest’s first apprentices, he learned to work organic vegetable fields efficiently in the fertile lands of Bahr Farm in College Hill. Today, he cultivates high-quality vegetables at the Greenacres Foundation’s Michaela Farm campus in Oldenburg, IN where his focus is on regenerative agriculture. His production gardens use a variety of regenerative ag approaches such as cover crops for green manure, animal impact, trial compost mulch no till systems, and living pathways to keep the Michaela Farm Store stocked year-round. He enjoys the beautiful farm aesthetic, the feel of soil on his hands, and the intuitive flow of growing. It feels good to grow food that contributes to a healthy planet and to feed people who are in the community.

Heather has focused on access. She structured a work for trade component to the CSA (Community Supported Agriculture) at Enright Ridge Urban Ecovillage during her time as an Americorps. She expanded the gardens at Parker Woods Montessori, leading several classes in garden education each week and integrating seasonal harvest into school festivals. Today, Heather works with neighbors of the Beekman Corridor and Working in Neighborhoods to establish Beekman Community Market (BCM) which offers the benefits of local food, rescued food, and entrepreneurial opportunity. OhioCAN purchases food at market rate from local farmers who then deliver to the monthly market. Distributing locally produced food for free gives neighbors who are historically disenfranchised the opportunity to experience top quality produce. BCM hopes to build a diverse community through food resource equity and education, including rejuvenating urban growing spaces so that they can have a resilient food system.

Jules and Heather not only share a passion for their food work, but they share a vision for the (central) Ohio River Valley food system to expand production through widespread implementation of regenerative agriculture and collaboration between neighbors. Community partner investment will fund growers and facilitate equal access to real nutrition. The next generation needs more growers to meet our food production needs. Regenerated soil will inspire the next generation to grow more food in more places so that everyone can eat well without relying on highways for survival. Together, Jules and Heather build soil health, food system health, and hope for future generations.

The Ohio River Valley is the birthplace of American viticulture (cultivation of grapes), starting with Nicholas Longworth, a lawyer from the Cincinnati area. He saw the potential of the Ohio River Valley to become a major producer of wine and in 1820 he planted the first Catawba grapes.

Breweries have blossomed in our region. The local beer industry was once the largest per capita of any city in the U.S. Besides the use of local water, many are using other local ingredients.

Growing Practices

(B) Biodynamic: A unified approach to agriculture which tends the soil and the farm as living organisms, considers animals an integral part of a living ecosystem, and strives to bring community into farming. There is a certification process in order to use the biodynamic label.

(C) Conventional: Depend on many off-farm inputs to produce high yields. Often use concentrated, highly soluble fertilizers that can be caustic to soil life and leach into water. Also use broad spectrum pesticides.

(CNG) Certified Naturally Grown: A grassroots, affordable certification program for farmers who sell locally and directly to customers. Its standards are based on the National Organic Program but uses peer to peer inspection instead.

(CRCC) Crop Rotation, Use of Cover Crop: A method to help hold the soil, renew fertility, and reduce pests.

(FSC) Forest Stewardship Council: Practices that respect natural habitats by restricting the conversion of new forestland; prohibiting illegal harvesting, the use of hazardous pesticides or genetically modified trees; and supporting fair labor policies.

(GAP) Good Agricultural Practices: Voluntary audits that verify that fruits and vegetables are produced, packed, handled, and stored as safely as possible.

(IPM) Integrated Pest Management: Matches information with available pestcontrol methods to prevent unacceptable levels of pest damage while using the most economical means and causing the least possible hazard to people, property, and the environment.

(LS) Low-Spray: Chemicals are used sparingly.

(Non-GMO) Non-Genetically

Modified Organisms: GMOs are novel organisms created in a laboratory using genetic modification/engineering techniques. Some growers specify not using GMOs in seeds or in animal feed.

No-Till: An agricultural technique for growing crops or pasture without disturbing the soil through tillage. No-till farming decreases the amount of soil erosion and compaction and often uses cover crops.

(O) Certified Organic: The operation is certified by a United States Department of Agriculture accredited agency by a neutral third party professional inspector to meet national standards for raising produce or livestock in a way that does not harm the environment with synthetically derived inputs and that preserves or improves soil fertility, soil structure, and farm sustainability.

(P) Permaculture: A design system for creating sustainable human environments which, for food production, begins with soil building and focuses on perennials.

(PF) Pesticide Free: No use of pesticides on seeds and plants throughout the crop lifecycle.

(R) Regenerative Agriculture: Conservation and rehabilitation approach to farming and gardening methods that extends organic agriculture. It improves the soil, biodiversity, and water cycle while building resilience to climate disruption.

(ROP) Real Organic Project: A grassroots, farmer-led movement and add-on label to protect the meaning of organic. We grow food in the soil, not hydroponically. We raise livestock on pasture, not in confinement.

(SA) Soil Amendments: Use of compost and non-synthetic fertilizer to build soil fertility etc.

(S) Sustainable: Describes farming systems that are “capable of maintaining their productivity and usefulness to society indefinitely. Such systems... must be resource-conserving, socially supportive, commercially competitive, and environmentally sound.”

(T) Transitional: Moving to organic.

ANIMALS AND THEIR TREATMENT:

(AGA) American Grassfed Association Certified: Animals were fed a lifetime diet of 100% forage, raised on pasture, not in confinement, and never treated with hormones or antibiotics.

(FR) Free Range: At a minimum, animals have access to an outside area.

(GF) Grass Fed: Animals are fed grass or stored hay, but may be supplemented by grains. Grass-finished animals are only fed grass and hay.

(HB) Heritage Breeds: Older, general purpose breeds used prior to highly selective modern breeding which aims to create specific traits, like larger chicken breasts, higher milk production, leaner pork, and beef gains on grain.

(HF) Hormone Free: Growth hormones are not used to force an animal to gain weight, increasing incidences of disease and leading to the routine prescription of antibiotics. (Hormones are not permitted in chicken production.)

(HR) Humanely Raised: Animal stress is limited through sufficient space, shelter, and gentle handling.

(NR) Naturally Raised: Animals cannot be given antibiotics, hormones, or animal by-products.

(PR) Pastured: Animals are raised and forage on pastures a significant amount of time.

The majority of meat is produced on large-scale industrial farms called CAFOs (confined animal feed operation) which are inhumane and unsustainable. While there is controversy about the effects of meat production on the environment and concern about meat overconsumption in the US, there is widespread agreement that “factory farms” are unhealthy in all aspects. Local, small-scale farmers are happy to explain how they raise their animals – practices which are not only better for the animal but for environmental and human health. If you eat meat, eat local meat.

COMMUNITY SUPPORTED AGRICULTURE (CSA)

Community supported agriculture (CSA) is a plan where community members become shareholders, pay an upfront fee, possibly exchange some work, and in return get a share of the harvest and/or other products during agreed upon times of the year. Shareholders are taking some risk by participating in the “adventure of farming” and what is successful that season; shareholders are also getting the benefits of regular connection with a grower and their land.

Some of the varied structures of CSAs that have developed are: ownership by a co-op or community, not just a farmer; work and non-work shares available; year-round offerings, not just summer and fall. Some even ask for preferences or offer a choice of products; these can include not only vegetables and fruits, but meat, eggs, milk, mushrooms, herbs, and canned/ packaged goods.
