SERVES: 6 PREP: 20 mins COOK: 20 mins 160g Plain Flour 1 tsp Bicarbonate of Soda 1 tsp Baking Powder 1 tsp Ground Cinnamon 100g Oatmeal 50g Chopped Walnuts 110g Softened Butter 100g Demerara Sugar 2 Eggs, Lightly Beaten 3 Ripe Bananas, Mashed 120ml Skimmed Milk 12 Muffin Cases 2

Directions: 1. With a 12 hole muffin tin, fill with the 12 muffin cases or simply place on a baking tray. Pre heat the oven to 190°C (375°F or Gas Mark 5).

2. Sift the plain flour as well as the bicarbonate of soda, baking powder, cinnamon and oatmeal into a large mixing bowl. Any bran left in the sieve can be added as well as the walnuts (if using them). Stir well.

3. Next, place the softened butter and the demerara sugar into a separate mixing bowl and using an electric whisk, cream together until light and fluffy. Add the eggs and mix well. Finally, stir in the bananas and milk.

4. Pour this wet mix into the dry from part 2. Stir to combine but take care not to over mix otherwise the muffins will be dense.

5. Divide this mixture evenly between the 12 muffin cases.

6. Bake for 20 minutes (check after 15) or until a cocktail stick comes away clean. Leave to cool on a wire rack.

urum restaurant is set in The Seven Hotel in Southend and offers a contemporary twist on the traditional afternoon tea, and being only 35 minutes from Chelmsford, is well worth the trip. With its lush interiors and stunning design, the luxury boutique hotel and restaurant aim to excite the eye as well as the palate.

The Aurum afternoon tea will cost you £23 pp and is themed, ‘Oh I do like to be beside the sea’. The menu is locally sourced where possible.

Staples such as traditional sandwich fillings, plain and fruit scones with clotted cream and Tiptree jam, and cakes are on the menu - whats not staple or traditional is the presentation. ‘Outside the box’ is one way to describe it. Cakes on offer include a blood orange and raspberry cake, white chocolate and passion fruit cheesecake, chocolate brownie sundae and a cherry and pistachio battenburg.

An additional charge will be added for alcoholic beverages, from prosecco to champagne, as well as a ten percent service charge. Allergies and dietary requirements can be accommodated when booking.

There are a variety of options for cream or afternoon tea, with ingredients locally sourced, all freshly prepared and served everyday between 11am-6pm. Booking is advisable and dietary requirements can be accommodated at booking.

Cream teas cost just £8pp and a full afternoon tea starts at £18pp. A Full afternoon tea consists of four silver served sandwiches taken from a selection, cream tea and freshly made cakes and sweets. For £9.50pp, the Children’s afternoon tea (up to the age of 10) includes white finger sandwich with cheese and a granary one with ham, plus a homemade savoury, selection of sweets and a scone with jam and cream. They can have a soft drink or tea included in the price.

his family run boutique style bistro has been the hub of the Stock village for seven years now.

Everything is freshly prepared and locally sourced, with the team working hard to build relationships with local suppliers to give their customers the best quality they can. The Dandelion & Burdock Kitchen and Lounge is a chic, contemporary cafe with genuine customer service, delicious food and artisan coffee.

They are open Monday-Saturday 9am-4pm and Sunday 9am-2pm, and also run occasional evening and Sunday events. Booking is advisable for afternoon tea and the events they run, and they can cater for dietary requirements mentioned at booking.

For a very reasonable £17.99 pp, the Dandelion & Burdock afternoon tea includes a selection of sandwiches, home made cakes, a scone with clotted cream and Tiptree jam and tea or coffee.

Dandelion & Burdock run Afternoon Tea Days, usually on a Sunday with a different ambience to the cafe with Jazz played, giving a more formal feel.

They also run Tapas evenings throughout the month most Fridays and cost £25 pp. Upcoming tapas nights are Friday 12th, 19th and 26th April.

Pre-booking is a must though as they are incredibly popular.

The Dandelion and Burdock is a fine example of what a bistro should be - chic, outstanding customer service and great food!

Dawn travels to your home or chosen venue, sets up for you including the vintage china, table clothes, bunting and all the food and then returns to collect everything after your event has finished. For an additional fee, Dawn will provide a waitress service.

All the Afternoon Delights are made to order in their registered kitchen in Chelmsford, Essex. Afternoon Delights by Dawn offer a Traditional Vintage, Vintage Lace, Deluxe Vintage and a Children’s Afternoon Tea. The Traditional Vintage comes with a selection of sandwiches, plus scones, jam and clotted cream with tea or coffee - at a very reasonable £12pp.

Vintage Lace afternoon tea has the addition of a selection of mini cakes and treats at £16pp. Deluxe Vintage is the vintage lace with Lemonade plus individual chocolate mouses or cheesecakes at £20pp. Children’s Afternoon Tea includes a milkshake or fruit squash, a selection of sandwiches, a cupcake or scone, vegetable sticks or fruit skewers and crisps - all for £8.50pp.

Dawn caters for birthdays, christenings, baby showers, wakes and weddings. Afternoon Delights by Dawn can also cater for dietary requirements such as gluten intolerant or vegetarian options.

We felt this was a brilliant option for those who maybe have mobility issues or whom want to book their own venue and have an afternoon tea party without having to worry about organising it all.

Spotlight on a Local Charity: Lois’ Legacy Lois’ Legacy raises money and provides memory making products for Broomfield Hospital Blossom Suite MEHT, supporting parents through Baby Loss.

‘Nothing is worse than the day you find out you’ve lost your child’ Stacey Alliston, 8th August 2018

After 36 weeks of a relatively problem free pregnancy, Stacey Alliston suffered a severe placental abruption (where the walls of the placenta come away from the womb) and was rushed into intensive care - unfortunately, just two days after a healthy scan.

Tragically, on Wednesday 8th August 2018 baby Lois was born sleeping after an emergency caesarean section. Stacey suffered a concealed placental abruption, had lost around 6 units of blood and was extremely ill. She was in surgery for 10 hours, put on life support and placed in an induced coma.

‘I woke up Thursday thinking it was Wednesday, I had lost track of what happened. But I knew they were going to bring Lois to me sleeping’ Stacey Alliston, 8th August 2018

Whilst Stacey was being cared for, her partner Terry Brown was with daughter Lois and Bereavement Midwife Tabitha in Broomfield Hospital’s Blossom Suite. The suite is a peaceful space where parents who have sadly lost a baby can spend time together as a family unit.

Photos can be taken, foot and hand prints and possibly castings too if deemed suitable for the baby. A memory box is provided to place these mementos inside, plus a lock of hair if possible, baby’s cot card and name bracelets.

The only issue with this, is that ALL of this is funded solely through donations Terry and Stacey decided to set up Lois’ Legacy following their stay in the Blossom Suite to help other families going through the unimaginable grief of stillbirth, to spread the message about their beautiful daughter and to break the taboo about baby loss.

The first step in creating their daughter’s legacy was a Daddy’s wallet card made by Pretty Personalised. The Daddies of Angels receive Lois’ Legacy cards that have a ribbon for a son or daughter and a push out heart with ‘Daddy Loves You’ inscribed, to be given to their child when they are laid to rest.

My love for you will never cease, You are forever my missing puzzle piece Lois’ Legacy also aim to provide enough casting materials to the suite to be able to continue offering hands and feet castings, plus any equipment the suite may need to support newly bereaved families.

Lois’ Legacy managed to secure the services of a company called Little Star Creations, who produce stuffed bears that can be filled to the birth weight and created from the Angel baby’s clothing or blanket for a comforting memory for the families. Funding is needed to make this something that can be offered on a longer term basis.

Due to recent fundraising efforts, a coffee making machine was purchased for the Blossom Suite so the families can stay there longer in the privacy of the suite.

There are plans to create hand and footprint key rings in the coming months and the long term goal is, with approval, to create a memorial and reflection garden to allow families on the Blossom Suite a calm and peaceful haven away from the rest of the hospital.

discover a healthy balance Health Tips for Springtime Springtime is arriving as the quiet stillness and containment of winter comes to an end. Animals, plants and trees become full of colour and life ready for a new beginning. Our mind and body is effected by the climatic changes, and if we can live in harmony with nature, we can harness the changes for our own wellbeing. I’m going to share some wisdom of Chinese Medicine that can help us prepare for the energetic changes ahead, and use it to our benefit.

In Chinese Medicine, Springtime is related to the liver and gall bladder energy. Traditional Chinese physiology tells us the liver is all about creating a smooth flow of energy (Qi) throughout the whole body. If the liver is harmonious, there will be no stress or tension, and planning comes easily.

The body wants to naturally cleanse itself of excess emotion and food residues at Springtime. We can encourage this process by eating liver cleansing foods and changing how we cook. Eating lighter meals is a good starting point, as is slightly steaming or stir-frying foods with high quality fats.

Foods that are particularly useful for springtime cleansing include rye, romaine lettuce, asparagus, radish, citrus peel, watercress, seaweeds, sour plums, rhubarb. We need to increase greens and sprouted beans such as alfalfa and mung beans (beansprouts) - they are so easy to do at home by adding them to soups, salads, or just eat them as they are!

Make nature part of your daily routine Taking a walk outside is perfect. Even having your cuppa outside, looking at the new plants or listening to the birds. Visit the country or grow plants and produce. Perhaps take part in gentle exercise like yoga, walking, tai chi, swimming, dancing and stretching!

A cleansing drink can be made using hot water, adding 1 tsp of apple cider vinegar, along with lemon/grapefruit/honey. As is fresh mint tea with a small amount of honey. We can also use the essential oils of lemon, orange, grapefruit, lavender, bergamot and vetiver to help relax the liver and gall bladder Qi in a diffuser, massage oil or in your bath.

Get creative The liver and gall bladder energy relaxes when we create, helping to maintain a harmonising flow. You have to find your own style - what works for you.

Some people find creativity in cooking, gardening, singing, crafting, decorating and making. Music is a good source to encourage that creative flow. Try making a playlist or simply listen to music you love!

Learn to delve inwards, express emotion, thoughts and feelings, and let go of those emotions no longer useful. Make room for new things that will nourish and heal you. Spring is a key time to see things in a renewed way by letting go of the old.

Cleanse your body and home Traditionally, people know of the spring cleaning idea. This relates not only to your personal space, but also your mind and body. Clearing out cupboards and drawers will give you a new space 12

Spotlight on a Local Business:

COMBAT ACADEMY CHELMSFORD, a Self Defence and Fitness Group, was started by Richard Mitchener January 2015 in Chelmsford and by the end of the year, had seen expansion to Brentwood. Richard decided to start due to the rise in violent attacks and bullying.

COMBAT ACADEMY in Essex provides self defence classes as well as anti-bullying, knife defence, rape defence and personal safety courses. Self defence training is a life skill - it helps with confidence, self esteem, fitness, plus develops strong bonds of friendship and respect.

The self defence techniques learnt through the training are relatively simple, extremely effective and fun. Students learn the ability to avoid freezing in an attack situation by perfecting learned responses. It is possible to learn the skills and procedures for improving your awareness and being prepared if the unthinkable were to happen. The training is always positive, encouraging and challenging.

COMBAT ACADEMY can offer group sessions as either a one off or as part of a multi session course with techniques covered including theory and practical skills, standing and floor based aspects of an attack including knife and rape defence.

Programmes can be tailored for school pupils, students, staff, tutors, women’s / youth groups, mixed adult sessions and corporate team building activities. Some of these run during the day, whilst others run as an end of day activity or later in the evening.

Ages 10 to 11 are often when children start to have a little more responsibility and independence, maybe walking to and from

school alone and preparing to move up to secondary school.

This often coincides with children receiving their first mobile phone around this age and courses cover personal safety skills including aspects with tech. Secondary school leads to young adults travelling perhaps when its getting darker or the use of trains and buses. COMBAT ACADEMY courses help to make them aware of their surroundings, to not take risks with their personal safety and develop the skills to better defend themselves should the need ever arise.

Potential students will need to participate in a half day Beginners Induction costing £25, which run monthly on a Sunday morning to learn the fundamentals. This covers an hour of theory covering reasonable force, personal safety and the mindset of an attacker. A 2 hour practical then covers things like distance control, voice commands and restraining an attacker in various scenarios. The Induction concludes with ‘Pressure Testing’, where the instructor will ‘attack’ and students can put their newly learned knowledge and skills into practice.

On completion of the induction, students can then safely participate in the regular sessions.
