CHOCOLATE & ALMOND COOKIES

Here’s a quick, easy cookie recipe by Helen Ridgeway. Super delicious, crispy on the outside, soft in the middle; perfect!

Makes 12

Ingredients

• 150g ground almonds

• 3 tbsp melted coconut oil

• 3 tbsp maple syrup

• 50g chocolate

• chopped nuts

Method

Preheat the oven to 180°C/160°C fan/Gas 3

Mix the ground almonds, maple syrup and melted coconut oil together.

Separate the dough into 12 pieces and roll into balls and flatten and put on a lined baking tray and bake for about 10 mins.

Once cool you can dip in melted dark chocolate and add a sprinkle of chopped nuts. They’ll only last for a few days out of the fridge but you can refrigerate overnight to help them last a little longer. Enjoy!

OCTOBER IN CRESCENT GARDEN

Bay trees are the backbone of much of the shrubby planting in Crescent Garden. They form most of the shady cover along terrace walk, making it a very pleasant stroll on a hot summer’s day. Interspersed among the bays are some other bushes like holly, strawberry tree and Amelanchier. All the bays were planted when the garden was first established in 1830, so are among the most venerable plants in the garden. In 1989, when the restoration of Crescent Garden was begun after years of neglect, one of the major tasks was to trim back overgrown bays and remove some of them completely to create an open woodland effect through which the rest of the garden could be seen during a walk along Terrace Walk. Being so old and with plentiful root systems throughout the area, one of the constant jobs which the garden volunteers tackle is cutting back bay shoots before they grow into full sized trees and swamp other things growing around them.

Bay (Laurus nobilis) is originally native to the Mediterranean region and covered much of the area when the climate of the region was much more humid than it is now. Most of the laurel forests around the area are believed to have disappeared about 10,000 years ago with some remnants persisting in damper mountainous areas. However, the plant has been widely cultivated in parks and gardens in regions with Mediterranean or oceanic climates for many centuries. It can be left to be a natural shape as in Crescent Garden or used to create topiary shapes or low hedges. Bay trees are dioecious, ie they have male and female flowers on separate plants. So at this time of year some plants (the female ones) bear fruits in the form of shiny berries, gradually turning black as the autumn progresses.

Many of us mainly know the bay from the kitchen, where its leaves are used whole to flavour savoury dishes, but leaves can be ground up and used in soups and stocks. Dried berries can also be used as a spice and the wood can be burnt for flavouring smoked foods. The plant has also been used medicinally for centuries:- the Roman naturalist, Pliny, suggested that laurel oil could be used to treat paralysis, sciatica, bruises, headaches, ear infections and rheumatism! Rather less extravagant claims are made for it in modern herbal medicine, an aqueous extraction of the leaves is used in massage therapy and aromatherapy and in folk medicine a poultice soaked in boiled bay leaves is used to relieve the pain of stinging nettles.

In both Greek and Roman cultures the bay, more usually referred to as laurel, was extremely important. In the Greek myth of Apollo and Daphne, the god, Apollo fell in love with Daphne and when he tried to seduce her she pleaded to the earth goddess, Gaia, for

help. Gaia transported her to Crete and put a bay laurel tree in her place from which Apollo fashioned laurel wreaths to console himself. Other versions of the myth suggest that Daphne was transformed into a bay laurel tree. This myth gave rise to the uses to which laurel was put in ancient Greece. It was used to fashion the laurel wreath, a symbol of highest status. Bay laurel wreaths were awarded to winners in the Pythian Games, second only in importance to the Olympic Games. They were held at Delphi, Apollo’s sanctuary and were in honour of him. According to one account, the priestess of Apollo chewed leaves of the sacred bay tree inside the temple to induce the trance from which she uttered her prophesies.

Like so much in the Roman Empire, the Greek reverence for bay laurel was carried over into Roman culture. They held the laurel as a symbol

of victory and it was closely associated with Roman Emperors, beginning with Augustus. It was also associated with immortality, with ritual purification, prosperity and health. So laurel wreaths were an important part of Roman culture, worn by any one worthy of praise or fame. Today in modern Italy graduating school students wear laurel wreaths as crowns. Even English has been influenced by the laurel wreath as in the words poet laureate, baccalaureate and “resting on one’s laurels”.

So next time you walk along terrace walk in Crescent Garden under the humble bay, think about its glorious history and distinguish between the male and female trees by spotting those with the ripening berries on them.

DECORATIVE FOUNTAINSCAPES

Ideal for front gardens as statement pieces, or for smaller rear gardens where you want the sound of water without the footprint that a pond requires. Do

you have important legal documents in place to protect your interests and make life easier for you and your family, whatever the future brings?

If you have received a diagnosis of dementia, or are concerned about becoming ill and unable to cope with paying your bills, wouldn’t it be helpful for a family member to be able to step in and deal with your finances? If your family member needed to make decisions for you, instead of just acting on your instructions, they would need your formal written authority to do this.

Formal authority can be given by creating a Lasting Power of Attorney. This document will allow your family member to take over managing your money, either temporarily or long term.

You can also create a Lasting Power of Attorney which allows your family member to make decisions for you about medical treatment, if you are unable for any reason to make your own decisions. This is not the same as an Advance Decision, which is a document which sets out your decision to refuse medical treatment in the future, under specific conditions.

If you are caring for an elderly relative, or are likely to be doing so in the future, a Lasting Power of Attorney will mean that you can provide the support your relative needs and access services on their behalf, without the difficulties, stress and resistance you would otherwise encounter.

Having a Will gives you peace of mind that your money, property and personal possessions will be going to the people you have chosen to benefit. An out of date Will can cause problems within the family or mean that a chosen beneficiary receives nothing.

If you have any unanswered questions about Wills or Lasting Powers of Attorney, Christine will be pleased to help, so do please get in touch for a free, no obligation, chat.
