Costa Offee!

A new fish and chip shop has opened in East Lancashire after taking over a historic business that first fired up its fryer in 1901.

F

ry’s Fish and Chips has opened in Crawshawbooth, taking over Toffalis which closed earlier this year. New owners, Koren and Alex Fry, have completely rebranded the chip shop – while still keeping its traditional menu. The aptly named

‘Fry’ couple, who live in Crawshawbooth, say they are looking forward to what the future holds. Koren said: “We’re excited about what the next few months and years have in store. We haven’t got any major changes in mind - we are just going to stick as a traditional fish and chip shop.” The new chippy officially opened to the public at the end of 2021 and Koren and Alex said they were rushed off their feet. Alex said: “We had a brilliant start; I’m not going to lie – we were really happy. I think we were very well received, and we had a lot of familiar faces in here.” After 15 years running the chippy, owners of Toffalis, Costa and June, put their business up for sale earlier last year after Costa fell ill. They said: “As we move on to our new chapter we are delighted to hand over the reins to Alex and Koren Fry. “There has been a fish and chip shop on this site for over 120 years and we wish Fry’s Fish and Chips every success as they continue on with the tradition of serving quality fish and chips to the lovely people of Crawshawbooth and from further afield.” Koren added that Costa and June were helpful when passing over the business. Koren explained: “They were brilliant. They went through every step with us and made us feel at ease. They’ve given us a few tips and tricks.” Are you selling your shop? What’s up Dock! Collins Team Visit Iconic Vessel

O

n Monday the 4th of April, the Kirkella landed successfully in King George Dock, Port of Hull, after returning from the Barents Sea with a new batch of Frozen at Sea fish. Although the quota agreement means we get around half as much stock from Norway as we did before Brexit, Kirkella’s trips to sea are now planned for 2022. This means we hope to have a steady flow of stock coming in, which is welcome news for the industry. Some of the team at Collins visited the Kirkella and saw it being unloaded, then went on a tour of the vessel to see the factory, engine room and crew’s facilities. The fishermen face the dangers of the sea, the ice, the freezing temperatures, the storms, hurricanes and many more unpredictable factors; it was nice to see how they relax in the cinema room, the gym, sauna and cafeteria. The crew were pleased to return home to recharge for their next trip out – with the Kirkella due to go back out to sea once again at the end of April, and with the high worldwide demand for fish, time to unwind is a necessity. This demand for fish is one reason why prices are the highest they have ever been, as well as the impact on the fishing industry of the war between Russia and Ukraine. Before the war, Russian fish accounted for around 40 per cent of the UK’s white fish. This is also alongside rising fuel prices, which cause an increase in delivery costs, and further logistical expenses. Factoring in soaring energy

prices for us all, it’s not difficult to see why prices are at record levels. As a business, we are always looking at ways to adapt and cut costs wherever possible, with the aim of passing on any savings to our valued customers. So what else is new? We are ensuring we are working as sustainably as possible, on land and at sea. As well as being fully MSC certified, we are in the process of installing electric vehicle charging points at our North East and Yorkshire depots, and we are aiming to install solar panels on the roof in the coming year. he biggest day in the fish and chip calendar is back! National Fish and Chip Day 2022 will return for the sixth year on Friday 27th May! Bought to you by NEODA and industry partners including Seafood from Norway and Blakeman’s sausages, the event gets hundreds of shops involved promoting our national dish. The event has gone from strength to strength since its launch in 2015 and despite the restrictions, nearly 50 million people would have seen, heard, or read about the awareness day last year. National TV, radio and newspapers featured stories as did the regional media. Social media was awash with fish and chip stories with our hashtag #nationalfishandchipday and we were number 1 on Twitter from 8 a.m. and stayed there all day long! We want to celebrate this amazing industry who are at the centre of every community and who have, when able to do so safely, kept us fed, and when that wasn’t possible kept us all safe by remaining closed at great sacrifice to their business. So, let’s make National Fish and Chip Day 2022 the best yet as NEODA brings together everyone involved in creating this iconic British dish; from the Fish & Chip shops, suppliers to the fishermen and farmers who provide the sustainable and natural ingredients needed to create this family favourite. Frankie’s, do you John Gold back at the helm in iconic shop

F

rankie’s was a new build and opened in Brae in Shetland in 2008 making it the most Northerly fish and chip shop in the British Isles. During the past 14 years they have developed into a popular seafood eatery in Shetland, enjoyed by many locals and visitors from all over the world. They pride themselves in the fact that over 98 percent of the fish and shellfish they sell at Frankie’s comes from MSCaccredited stocks and this premium quality seafood is offered as daily specials on their menus fresh from the local market each day. Their extensive menus offer gluten free, vegetarian, and vegan options in a family friendly environment including disabled access and parking. They are passionate about what goes out through the door in their distinctive Frankie’s boxes or is set down in front of customers in the cafe making sure it is of the highest quality and consistency. They have won numerous awards including picking up 4 awards at the National Fish and Chip Awards in 2013 winning The Field to Frier Award (our first winners), and the Staff Development & Training Award. They also captured the Amanda Seafoods Challenge Award

(which included an all-expenses paid trip to the factory in Denmark) plus The Young fish Frier of the Year Award. In 2014 they finished runners up in the National Fish and Chip Awards. Finally in 2015 they reached the pinnacle of the industry by being named the number one fish and chip shop in the whole of the UK, as well as picking up the Good Catch Award too. After the 2015 Awards the Manager John Gold who had been a major part of this success left the company and ultimately the industry. In January 2020 new owners Mark and Corinna Hoseason took over at Frankie’s. Mark was a former partner in the Guardian Angell (LK272) whitefish trawler. He said that after 23 years in the fishing business it was the right time to take on a new challenge. So, himself and his wife thought to take over this well-established local business promoting local produce was to good an opportunity to be missed. In May 2021 Mark got in contact with John Gold to see if he would come back to the shop and help out and do a few shifts as they were short staffed during the covid pandemic. John came back to work a couple of shifts per week whilst still working as a taxi driver during this time helping to show the new owners some of the tricks of the trade, which had made the business

Later on, that year they asked him to come back full time as manager which after some consideration he eventually did in February 2022 just in time to help out with the new refurbishment of the shop. John said, “After being away from the industry for 5 years it was great to be back behind the range and I’m looking forward to meeting up with some old friends and making some new ones once we can eventually get back to normal and start going to trade shows etc and maybe entering an Award or two!” “We have a busy summer period coming up with a lot of tour buses and cruise ships booking in for our fish and chips plus our seafood specials we hope to have some other event on during the summer all promoting local seafood and other foods and who knows maybe a peerie visit to the Chippy Chat Ball in December.” John also helped to organise many local fundraisers on the Island including the Frankie’s annual cycle sportive which raised thousands for charity including the Fisherman’s Mission Have you come back into the business? sle of Ely Produce have been promoting a new Chip Ambassador role to promote the great British Chip in association with Agrico. The aim will be to carry on their good work promoting chipping potatoes at their hugely successful open days, and through their ‘Field to Frier’ award. The Chip Ambassadors will become part of an UK wide group of shop owners and fryers who will promote best practice for potato buying, storing, and of course frying. The chain will also include key growers too like PJ Lee & Sons, and A. L. Lee Farming Company, as IOE looks to nurture the relationships they have grown across the whole supply chain over the last twenty years. Agrico have partnered with Isle of Ely Produce to bring two new varieties into the trade initially via our Chip Ambassadors. The two varieties Babylon and Lugano will be chipped & fryed at some of these ambassadors’ shops to back up the results of early trial successes.

This month I visited Fisher’s Fish & Chips in Hunstanton. I met up with one of the managers Barry Jezeph during a busy Mother’s Day shift. Since the early 1960’s, Fishers of Hunstanton has been cooking up good quality fish and chips, using only the best locally sourced fish. It has long been one of the go to places on the coast for thousands of day trippers and holiday makers alike. Armed with some pre-cut Babylon I gave them to Barry to fry alongside some Sagitta. Their ranges, are equipped to cope with a very busy seaside queues, and were ready for the expectant deluge of customers ready to celebrate by having fish and chips with mum! Once cooked and plated, both myself and my wife Sarah and our friends Paul and Maureen from Amsterdam tucked into some Babylon chips with some fantastic fish, I had haddock. Barry too tried some chips. He was impressed by the fry colour, crispy outside and size of the sample. He also said that they compared really well to his usual supply, and he would look out

for Babylon next season for use in the shop. Dutchman Paul De Ruijter on holiday in the Uk was impressed too. “It was lovely to have such good fish & chips on our visit” he said. It was so good to see Barry and his team in action. Quality and a consistent product have kept people coming to the shop on the green for over 60 years now, something that owner Mark Wilson is keen to continue. ecently I took the time out to visit Hull (home of fish and the House Martins). I was invited to see Smales Fish Merchants and by FASFA to go onboard Kirkella the UK’s leading freezer trawler along with NFFF President Andrew Crook & leading chip shop owners from across the UK. The shops represented were • Chez Fred • Finnegans Fish Bar • Harlees • Bells Newton Hall • Ruddy’s Fish & Chips • Shoal Winchester • Skippers Of Euxton First stop Smales. Founded in 1937, Smales remains wholly and independently owned by the Smales family. During this time the business has developed an excellent reputation throughout the UK, thanks to its sourcing of quality fish and seafood, coupled with its experienced and dedicated team of employees. It was great to see first hand the team at Smales in action. They have around 100 staff who between them have around 3000 years of experience in the fish and chip industry. As we entered the

place to be! cold store it was clear to see just how many trusted brands Smales have built relationships with over the last 80 years, securing supply from many countries & vessel owners. Many of their customers have been with them for many decades, including Fred Capel, who owns Chez Fred near Bournemouth. We were very lucky to have Fred as one of the owners on the trip too. Fred said of Smales: “They have supplied Chez Fred since we opened in 1989, and throughout that time they have been a supplier who I know and trust to provide the service and quality I expect. We are always striving to give people the best fish and chip experience possible, and we work hard to promote the sustainability of the fish we source. Smales have certainly helped us to deliver a quality product every time.” The next day as the sun shone brightly, we were driven to Hull docks to see Kirkella. It is hard to comprehend just how big these vessels are from photographs but as we approached her from the port entrance, I was truly amazed. Just days before she had been sailing 39

in the Barents Sea and beyond. Here she was gleaming in the bright sunshine ready for us to take a tour. Kirkella is 81m long. She is a state-ofthe-art trawler, catching around 12 tonnes of fish per haul. With 30 crew onboard and automated processing, the first fish reach the on-board freezers just 40 minutes after being caught. Aided by GPS, sensors on the nets and sophisticated control systems, modern trawling is now so precise that wastage is negligible. She can store up to 780 tonnes of fish fillets at -28 degrees Celsius in her onboard cold store. With cinema sauna gym and even a hospital onboard the crew are well catered for on their 60 day trips to sea. After our tour we had a lovely cod & chips meal served to us by the onboard chef, which were delicious. Special mentions to Dean, our guide onboard, and for First Mate Charlie Waddy’s final day before his well-earned retirement. It was soon time to say goodbye. Codgratulations! Mobile Fish and Chip Shop Named West Midlands Start Up Champion

A

couple who run a mobile fish and chip shop are among 12 UK businesses to be selected as start up ‘champions.’ Husband and wife team Matthew and Corina Martin started Stafford-based Cod of Duty in December 2020, just months after being made redundant from their previous roles in the hospitality industry. The pair used two GBP17,000 Start Up Loans to launch the food truck after deciding to make their dream of owning a food business together a reality. Today Cod of Duty makes regular visits to three sites in Staffordshire and has several street markets booked in. Now Matthew and Corina have been named Start Up Loans ambassadors for the West Midlands by Start Up Loans, part of British Business Bank The Start Up Loans Ambassadors Programme celebrates ‘exceptional’ business owners who have followed their ambition of becoming their own boss after receiving support from the Governmentbacked Start Up Loans programme. Cod of Duty is just one of 7,342 West Midlands-based businesses which have received a loan since 2012, representing a total value of more than GBP64 million. Matthew Martin – who hopes to expand the business with bookings for weddings, parties and corporate events – said: “We decided to take a leap of faith, take redundancy and start our own business. “We had talked about self-employment for a while and had an idea that a mobile fish and chip van would be a good

business idea.” He added: “The first outing was really nerve-wracking, we did a couple of test runs in Stafford, but we had no complaints – and we recently got our first five-star review on Trip Advisor. “We have never worked harder but this is our choice, and we make all the decisions. Importantly it puts us in control and gives us what we always wanted – a positive work-life balance with plenty of time for the family.” Richard Bearman, managing director at Start Up Loans, said: “The small business community has been through a disrupted and challenging period, making it all the more important that we celebrate and champion the sector. I want to congratulate our 2021 ambassadors on the tenacity and determination they have shown over the past year, which has resulted in hugely impressive achievements. I look forward to working with them and sharing their stories to inspire others in their communities.” Since 2012, the ambassadors programme has delivered more than 88,000 loans to business owners across the UK, amounting to more than GBP790 million.
