Fish and Tips! Norwegian Seafood Council launches sustainability hub for fish and chip shop operators

T

he Norwegian Seafood Council (NSC) is launching a new sustainability hub featuring resources for fish and chip shop operators. Following the recent launch of its educational video series, the NSC has created a digital resource hub where friers can access materials to help them communicate the importance of sustainable seafood – and to show the value in every portion of fish and chips. The Fish and Tips resource hub, www. seafoodfromnorway.co.uk/fish-and-tips has a range of materials available to download including: Ocean-to-Plate Short Film: A short film captures the nostalgia associated with fish and chips in Britain, and the importance of protecting this much-loved institution for the future. Fish and Tips Social Media Toolkit: Designed for busy friers who are short on time, this digestible toolkit is accessible to novice and experienced social media users alike. ‘Know where your fish is from’ poster: A printable poster for use in-shop that includes a QR code to take customers through to the Ocean-to-Plate film. The NSC is also releasing point-ofsale (POS) including branded window stickers, bag and box stickers and A3 posters. These resources feature a QR code which customers can scan with their smartphones, allowing them to watch the Ocean-to-Plate film. Hans Frode Kielland Asmyhr, UK Director, Norwegian Seafood Council says: “We’re delighted to offer these sustainability resources to talented and dedicated fish and chip shop operators across the UK. We expect them to drive

engagement with customers around the issue of sustainability, and ultimately give them a greater understanding of the importance of sustainable seafood. “The more we can tell customers about where their fish is from, and the effort that goes into making sure it’s as sustainable as it can be, the greater chance we have of getting UK consumers to understand the incredible value they are getting from a portion of quality fish and chips.” The resources have been created following clear demand from fish and chip shop operators. In a research piece carried out by the Norwegian Seafood Council in partnership with the National Federation of Fish Friers (NFFF) it was found that 88% of fish and chip shop owners find the issue of sustainably sourced fish especially important, but the majority of them struggle to communicate this to their customers . Norway leads the world in sustainable fishing practices and is home to the planet’s largest cod stock. By choosing Seafood from Norway, operators can be confident that they really are serving their customers the best quality seafood and that it’s as sustainable as it gets. It’s a From Zero to Hero plus your National Fish & Chip Day Pictures

W

ell, the seventh NEODA National Fish & Chip Day certainly went well this year. Despite uncertainty with ever increasing prices shops celebrated in style. Neoda also organised roadshows in Wales, Scotland and England. Chippy Chat Editor Austen Dack helped them to organise one in Cambridge too where they gave a way over 500 portions of fish and chips(see pages 36-37). With headline sponsorship from both Seafood from Norway and Blakemans and support from across the industry too (with both financial and staff donations for the day) the resulting PR once again gave us all a huge boost. If it wasn’t enough celebrating National Fish & Chip Day (May 27th) by giving away half price chips in this climate, one South Wales shop went one step further. The Award Winning Zero Plus Fish Bar in Cardiff broke the World Record for wrapping five bags of chips live on TV. Owner Zohaib Hussain said to Chippy Chat “We wanted to do something that will shine a light on Cardiff, and also give our customers a great offer too. The challenge was a difficult one as you have to portion up 5 bags of 350-gram chips and wrap them all in at least two pieces of paper.” Zohaib managed to do it in 40 seconds smashing the old record standing at 44 seconds, even with the added pressure of doing it on National Fish and Chip Day. Helping Zohaib on the day was his longstanding potato supplier R&M Potatoes. Zohaib uses the Famous Black No1 Markies supplied to R&M Potatoes by Isle of Ely Produce and grown exclusively by A L Lee Farming Company in Cambridgeshire. Russell from R&M said “We have been supplying Zero Plus Fish Bar for many years and they always ask for the best potatoes available. Black No1 Markies are a premium consistent chipping potato and so we send them to Zohaib. We are proud of him grabbing the new record”

Yanks for the memories! Some hilarious reviews left by Americans after eating traditional fish and chips in London

A

mericans love our chips, but they’re not too sure about mushy peas Fish and chips is a British institution, and while those of us who grew up with the delicacy might take it for granted, visitors to the UK certainly don’t. Americans in particular seem to be taken with what many consider to be our national dish, and they have a lot of thoughts when they finally get a taste. MyLondon took a look at some of the reviews left by their friends across the pond at some of the capital’s chippies, and they didn’t leave them disappointed. Despite being used to huge American portions, Matthew U from Pittsburgh couldn’t get over the size of his fish from London’s Golden Union Fish Bar. “I’m not sure what I was expecting for fish and chips, but when they arrived I was surprised by the serving size,” he said. “This piece of fish barely fit on the plate. I will admit that I was a bit weary of tartar sauce in general, but I figured why not give it a try. “Was I ever glad I did. Needless to say, but that fish didn’t last long on the plate, no matter the size. “The chips, oh my god, the chips. I felt as if I had died and gone to heaven.” Meanwhile Stephanie L from Mountain View was similarly enamoured with the size of a proper fish and chips from Golden Union. “WOW. Fish and Chips in the UK really is way better than in the US,” she said. “I had the small cod and chips and was pleasantly surprised when my plate came with a GIANT, deliciously battered, light and fresh fillet. I couldn’t believe it. “We’re not talking a tiny piece of fish and inch thick batter - this was all fish, baby. I loved every bite and WISHED that California had anything even remotely like this.” Unsurprisingly, mushy peas tend to be more divisive for the American crowd. When reviewing Poppies in London, Augusto T from Dublin, US, wrote: “The mushy peas... well... they tasted exactly like what you expect. I like peas, but these must be British kids’ nightmare food.” But some Americans just get them. Schelly Y from Santa Clara would have licked her plate clean at Kerbisher and Malt if she wasn’t so dignified. She said: “It was delicious (...) the name doesn’t sound so appetizing but I could have licked my plate clean if that wasn’t so inappropriate.” And Bobb S from Madison proved that once you embrace them for what they are, you’ll wonder where mushy peas have been all your life. Speaking of his visit to The Mayfair Chippy he wrote: “It was my first time trying mushy peas and while reminiscent of baby food, I was hooked.” What has been your funniest online review? Start of the Pier Show! Panoramic views for every customer after award-winning restaurant’s refurb

P

anoramic views are on offer to every customer who visits a newly refurbished restaurant beside the sea. No 1 Cromer, famed for its high-quality seafood dishes and of course traditional fish and chips, has unveiled its new downstairs look recently. And the beachside venue now boasts views of the North Sea from every seat. It only took a week, but the new look and layout already has customers singing its praises. Dan Apps, 39, office manager at the restaurant said: “We’re really excited to be open again after the refurbishment and we’ve had some great compliments and busy days so far. “We changed all of the downstairs, removed the old booths, put in new flooring and all of the downstairs has been beautifully repainted. “The restaurant has been the same for some time so we wanted to achieve something different. It’s an enhanced No 1 experience. Now everyone can have a view out to the North Sea and can enjoy panoramic views.”

The restaurant is run by chef Galton Blackiston, who also owns the Michelin star-awarded Morston Hall. Mr Apps added: “Customers are loving how much more open and spacious the layout is. It is great to make the most of the views we have over the pier and the North Sea. “It is one of the biggest draws of the restaurant, alongside our award-winning fish and chips of course.” Mr Apps, originally from Maidstone in Kent, moved to Cromer two years ago just before the pandemic began. “It’s wonderful here and I love the place,” Mr Apps said, adding: “I moved at a strange time, and it was really interesting to spend lockdown by the sea without any tourists around. “It is great that it is busy again and we can’t wait to welcome people to the restaurant who are visiting for the Cromer Pier show.” The downstairs restaurant is open seven days a week between 12pm to 8pm Monday to Saturday, and from 12pm to 7pm on Sundays. Babba Dabba Do! Hanbury’s Famous Fish and Chips Hits 40!

A

well-known and award-winning Torbay fish and chip shop has recently celebrated its 40th birthday by raising £5,000 for charity. The Babbacombe shop Hanbury’s Famous fish and chips reached the milestone on January 11. It was on that day back in 1982 that David and Maureen Hanbury took over the ownership of the shop and have been at the heart of the Babbacombe and St Marychurch community ever since. January 11 was also the date that fish and chips were first sold from 24 Princes Street in 1922 - making it a centenary of the nation’s favourite meal being sold from the same location. To celebrate the shop sold Cod, Chips and Mushy Peas or Curry Sauce for only £5, and raised on the day a cheque for £5,000 for the Children’s Hospice Southwest.

Skateboard and Chips! Clarence Fish Bar is Newport’s newest chip shop takeaway

T

HE newest fish and chip shop in Newport has opened, after undergoing a radical transformation. The family-run Clarence Fish Bar, in Clarence Place, is opened late last year. Offering a traditional menu with all your chip shop favourites, they also serve ‘dirty chips’ – smothered in masala mince, cheese and jalapenos – and have plans to add more specials over the coming months. The takeaway is being run by Abdul and Arin Chauduery, and Bobby Rashid, who for the past four years have also been in charge of the Clarence Barbers shop, just a few doors down in Clarence Place. The grand opening comes after a year’s hard work to transform the building from a disused retail premises into a modern takeaway restaurant. “It was derelict [when we moved in],”

Mr Chaudery said. “Before the renovation we had to build an extension. We literally knocked the whole back out and did a full revamp.” Mr Rachid said: “Years ago this was an old second-hand shop, then it was a skateboard shop, but it’s been empty for 10 years.”, Newport. Even though this is their first foray into running a food service, the owners will be spurred on by their parents’ history of running fish and chip shops – one in Newport and one in Griffithstown in Pontypool – when they first came to the UK. “They always told us stories, so we thought if we had the opportunity to do it, we’d do it as well,” Mr Chaudery said. And when his father sadly died from Covid last year, Mr Chaudery said the family was determined to finish the project and open the new takeaway in his honour. Clarence Fish Bar opens, from Monday to Saturday, midday to 9pm.

Off the Perth’s first vegan fish and chip shop Nuthin Fyshy opens in Leederville, Australia

K

ylie Pogorzelski and Erin O’Brien opened the doors to Nuthin Fyshy in the middle of Leederville recently and already they are the talk of social media. While the menu features exactly what you would expect from your classic takeaway shop — fisherman’s baskets, juicy burgers and golden chips — there’s not a scrap of real meat to be seen. Instead, chef O’Brien uses products made from plant protein, soy and konjac to recreate the flavour and texture of seafood and also makes her own vegan fetta, tartare and mayonnaise. Pogorzelski — who is coincidentally the daughter of a fisherman — had the idea for Nuthin Fyshy last year and encouraged long-time friend O’Brien to pack up her life in Melbourne and move west for the venture. “Perth is a fish and chip town, we love our fish in WA,” Pogorzelski says. “We are the only vegan fish and chip shop in Australia right now. There was one in Sydney but then it closed down. “We want to show you can still enjoy absolutely beautiful fish and chips as a vegan. The substitute has to be as good as the real product because we want to change hearts and minds.” O’Brien painstakingly researched meat alternatives to find dupes for the real thing. Everything from the fish to the crab sticks, prawns, squid and burger patties has its own unique flavour. “A lot of people think, if you’re vegan why would you

Scales! want to eat something that replicates meat?” O’Brien says. “But for me personally, the only way I can stick to a plant-based diet is by satisfying my craving for a big juicy burger or a succulent prawn or a nice big bit of fried fish. “We are trying to get as close as we possibly can, especially for people who are finding it difficult to transition.” The appeal of Nuthin Fyshy’s offering is not limited to vegans or those wanting to adopt more plant-based meals into their diet. “It’s also fantastic for people with allergies, whether they are seafood, dairy or peanut allergies,” O’Brien says. “They know they can come in and safely eat here without worrying. We have a gluten-free fryer, too.” In yet another coincidence, the store is located where Leederville institution Sweetlips Fish and Chips sat for more than 20 years. Pogorzelski and O’Brien say they have deep respect for what the former tenants created and they hope to build a legacy that does the site justice. The fresh fit-out features splashes of black and hot pink to create an energetic atmosphere, with fun 80s music and no charge for BYO alcohol. The owners are enjoying getting to know the local community and create a safe place for families to begin new traditions. “I absolutely love the idea of people walking out feeling full, comforted and satisfied,” O’Brien says. “There is a nostalgic vibe to fish and chips. When I was a kid, we had it every Friday night so there’s a happy memory there, and I am not alone.”

University For National Fish and Chip Day this year we were set a challenge by Agrico to feed over 500 people with their new variety Babylon. For ease we sent them up to PG Chips to make them into pre-cut chips, ready to just open, fry and serve. The setting was to be the magnificent open park in the city of Cambridge, Parker’s Piece. he event was one of many to be set up by NEODA across the UK to celebrate our national dish, I was lucky to be custodian of this one. Alongside the chips we also gave away cod goujons courtesy of Seafood from Norway, with their UK Director Hans Frode Kielland Asmyhr on hand to help us on the day. Cambridge MP Daniel Zeichner, (Shadow Minister for Fisheries) also joined us to hear about our industry and the challenges we are facing in the current

climate. He said “It’s great to be able to mark National Fish and Chip Day, right here in the centre of Cambridge. Fish and chips are such an iconic dish, and one of the nation’s favourites, so it’s absolutely right that we should celebrate it with events like this. I’m especially pleased to see the focus on sustainability, which is particularly important in relation to fisheries, and to be able to support one of our fantastic local hospitality businesses, which have been through such a tough time over the past two years.” Our friers on the day were from local mobile fish and chip company Pimp My Fish. Owner John Hudgell was thrilled to be involved. “We absolutely loved being part of National Fish & Chip Day this year. To fry and give out so many portions of fish and chips in less than three hours was amazing. We also fed over 50 people from the local food hub too. On hand to support us on the day were representatives from Isle of Ely Produce, Seafood from Norway, Friars Pride, Pukka Pies, T Quality, & Neoda. A real poignant part of the day was when we delivered 30 portions of fish and chips to a local church who were hosting an event for refugees from the Ukraine. This event was championed by trade organisation, The National Edible Oil Distributors Association (NEODA). NEODA represents all the major refiners, key packers and distributors of edible oils as well as suppliers of non-oil products (such as batter mix, sausages, range manufacturers and potato preservatives) in the UK.

he industry was once again in the spotlight recently, when family – run Halifax fish & chip shop Hirds Family Fisheries were crowned joint winners of BBC television show, Britain’s Top Takeaways. Hirds Family Fisheries is located in Siddal, Halifax and they were one of five fish & chip shops to take part in the show – which was hosted by DJ Sara Cox and comedian Darren Harriot. They were up against Simpsons Fish & Chips, Cheltenham Tony’s Fish & Chips, Coatbridge The Posh Fish & Chip Company, Llandaff, Cardiff Chris’s Fish & Chips, Barwell Each episode of the show focused on a different takeaway food and the brief was to create a menu including main courses and side dishes. Adam and Amber devised an innovative menu for the show, cooking up dishes such as ‘chef’s classic posh fish butty’ (haddock

goujons in parsley and lemon batter), fishcake with Grimsby smoked haddock and chorizo (in panko breadcrumbs with homemade pesto mayonnaise), ‘dirty’ chips (with chorizo, pepperoni, mature cheddar, parsley and peri mayonnaise) and halloumi fries (made with local smoked Yorkshire Dama cheese, in panko breadcrumbs with harissa mayonnaise). Vegetarians and vegans were also in for a treat, with a vegan dish of homemade pie with shortcrust pastry, filled with chestnut mushrooms, potatoes and fresh rosemary and served with vegan gravy and chips. Each course was delivered to the ‘judges’, members of the public from the local area. Ultimately, Hirds Family Fisheries were awarded as winners of the fish & chips episode of the show, alongside Simpsons – Adam Hird commented “it was a huge honour for us to represent our industry on a television show and to be the only fish & chip shop in Yorkshire selected to take part. up with new dishes – for example, we put our own twist on traditional classics such as pies. We also love using local Yorkshire produce. Being on the show was an unforgettable experience, we filmed in Manchester for 13 hours on one of the hottest days of the year last summer. I was delighted to have my daughter Amber by my side competing on the show, she is an instrumental part of our family business and she delivers a youthful perspective and energy. We are so thrilled to have been awarded joint winners of the show.” Amber Hird commented “this was the opportunity of a lifetime, and we are so proud to have taken part. We were delighted to be awarded as joint winners of the show, it is truly great to gain that sort of recognition.” Hirds Family Fisheries is operated by Adam Hird, his wife Alison, daughter Amber and son Aiden. Adam worked in hospitality for many years, before the family opened their own fish & chip shop just over ten years ago
