ast month we secured a slot as the guest publication on prime time satirical show ‘Have I Got News For You’ for our magazine hosted by Frank Skinner with captains Paul Merton and Ian Hislop, and guest panellists Sara Pascoe and Nick Robinson The resulting publicity sent thousands to our website and social network pages to find out just what makes the Chippy Chat world tick and sent a chippy tea message to millions of BBC viewers across two evenings. The team at the BBC picked several items from our pages in the Friday night show and the extended version ran on the Monday evening. First up they focused on the Chippy Chat Ball. Elvis Presley to play the Chippy Chat Ball, a reflection on our story about asking readers which tribute band they would like to see at the December event. They also joked about Chip King Calum Richardson taking on Prince Charles for a top

One Hip Hop Chip Shop! A unique chippy on wheels is one of the winners at the British Street Food Awards winners 2014

T

he men responsible for notably named Hip Hop Chip Shop are Luke Stocks, head chef, and managing director Jonathan “Ozzie” Oswald. Luke, a chef with over 13 years of experience under his belt, though previously only in stationary kitchens; and Ozzie, surviving member of the advertising industry for over 7 years, decided to combine their knowledge of the food industry to create a trailblazer of a business. After taking some time to save up and tweak their plans, The Hip Hop Chip Shop finally opened for business in January 2014. From the get-go, the duo were interested in imbuing the food industry with a little razzle-dazzle, and, after collaborating with artist Stanley Chow and Wilkinson Catering, their unique American Style stainless steel trailer was born. Thanks to their one-of-a-kind, eye-catching design, The

Hip Hop Chip Shop recently won ‘Best Looking Van, Truck or Trailer in Britain’ at the British Street Food Awards. Intent on keeping their carbon footprint as small as possible, ingredients are sourced from local markets in the North West (Luke and Ozzie’s home), and eco-friendly products such as plant starch spoons and biodegradable pulp trays are employed. Big things are planned for the future of The Hip Hop Chip Shop, including finding a home base where people can travel from far and wide to taste their delicious dishes, rather than Luke and Ozzie being the ones spending their time on the road. In the meantime, the food truck can be found at a whole host of festivals, popup events, markets, music festivals and private events too, so keep your eyes peeled!

Gordon Ramsay is set to open a fish and chip shop in America, it was recently revealed. And we have an offer of help to make sure it’s doesn’t turn into a kitchen nightmare.

he superstar chef is opening a branch in Las Vegas, where he already has three restaurants. A spokeswoman for the Scot confirmed: “We have applied for the trademark Gordon Ramsay Fish & Chips, and are looking at options in Vegas but nothing confirmed yet.” Ramsay, is planning to open at The Linq casino on the Strip. He already runs BurGR at Planet Hollywood Resort and Gordon Ramsay Pub & Grill at Caesars Palace and Gordon Ramsay Steak, at Paris Paris Las Vegas Hotel. The chef has applied for three trademarks in the US with the Patents and Trademark Office, to use ‘Gordon Ramsay Fish & Chips’ on items from comics to coasters, and recipe cards. Another is for clothing, footwear and headgear. The final one is for ‘Services for providing of food and drink.’ There were no plans at present to open up a chain in Britain. Lesley Graves from multi award winning Burton Road Chippy (Lincoln) has offered to help Gordon following their recent exchange on Twitter. Lesley invited Gordon to Burton Road to try her chips and he responded by saying “Yes I’ve heard you serve the best – well done.”

Triple Celebration For Mister C’s At Mister C’s in Selby, North Yorkshire, we are overjoyed to be celebrating three major achievements. By Mark Corbally

T

he first of our good news came in the form of a phone call from Briar Wilkinson from Drywite, telling our manager Amy Grimwood that she had made the final of the Drywite Young Fish Frier of the Year 2015 competition. The standard in this competition seems to increase every year and after four gruelling rounds of paper questionnaires, telephone interviews, practical assessments and presentations we were delighted to hear she had made the final. Our second lot of good news came in the shape of a blue tick with confirmation of our success at becoming an MSC certified shop. This came after several months of studying, staff training, recording, logging and gaining a true understanding of what MSC really stands

for. We would like to thank Ruth Westcott from ROC group and George Clark from MSC for all their help and coaching. We are now proudly displaying the MSC logo on all our menu boards. The icing on the cake came when we heard the news that our shop had won the North East Region in the Independent Takeaway Fish and Chip Shop of the Year Award 2015 organised by Seafish. This places us in the top 10 shops in the UK and into the final of this prestigious award. After all the mystery shoppers and the rigorous inspection we have undergone, we are so proud to have been chosen to represent the North East when we know the calibre of the other shops that we have been in competition with. When we look at the other nine finalists,

it is a privelege to see Mister C’s listed alongside some of the elite names in our industry. I would like to wish good luck to all of the finalists in all categories of the National Fish and Chip Awards and we look forward to seeing who are crowned as champions in January? Mister C’s was first established in 1981 as a traditional family run business I (Mark Corbally) opened the business then my wife Denise joined me in 2001. Our son Danny Horsley joined us in 2004 and then his partner Amy Grimwood started in 2008. We have achieved Investor in People status, held the quality award since 2000, we won the National Staff Training and Development award in 2009, won

We are always keen here at Chippy Chat to promote fish and chips to the masses and this set up certainly does just that!

rayton Manor Park is one of Britain’s most popular visitor attractions welcoming over 1.5 million guests annually and voted the UK’s best children’s attraction in three of the last five years. The fish and chip restaurant (one of 22 food outlets) was recently moved to a more prominent position and expanded. At the heart of this new development is a 6-pan Hewigo High Efficiency Island range. The man behind the move, Drayton Manor Park’s Development Chef Kevin Price, explains, “We could see even greater potential for fish and chips so this was an important move for us. State-of-the-art equipment was needed, that was easy to operate, reliable and had the speed and versatility to cope with high levels of demand. Other options were considered but the Hewigo range was a clear winner with its excellent value of money, the amount of support including training on the job and its factory in the West Midlands as we always support local suppliers when we can.” For most of the time two people are required on frying and four on serving to cope with visitors’ appetite for over 500 portions per day, which is increasing all the time. Kevin Price adds, “Now it is situated at a main entrance/exit. So as well as its popularity

at lunchtime we are also picking up custom from guests leaving the park who think they might as well have fish and chips to eat here rather than having to prepare something at home.” Phillip Purkiss, General Manager of Hewigo UK said, “We are exceptionally pleased to be chosen by such a prominent and popular leisure venue. Any catering outlet at Drayton has to really earn its keep. Nestled away in London’s buzzing Camden Town is a brand new fish and chip shop with a difference: Hook Camden Town. It’s only been open for a few weeks and it’s already causing a splash with its take on the nation’s favourite dish.

B

arry Wallace and Simon Whiteside honed their concept with their restaurant in Brussels and decided to bring their ideas to London this year. The focus is on fresh sustainable fish with creative flavours: their menu can include Jamaican jerk pollock or Cajun spiced red gurnard and is constantly adapted to bring new flavours to their customers. Their unique vision has extended to the whole visitor experience so their customers are met with a fresh interior look including eye-catching artwork on the walls and their food, cooked in a 3 pan electric Florigo wall frying range, is served in wooden tray boxes. As well as the flavoured fish, they also provide just as original homemade sauces and salts; in fact they claim that once you’ve tried their home-ground seaweed salt, you’ll never look at a regular salt shaker in the eye again! The two thirty somethings started their business in 2010, with stalls in Sandyford

Using Whiteside’s experience in fine dining to re-imagine fish and chips, on good days they had queues round the block. “Two years into the recession, we decided to do something to combine my entrepreneurial spirit and Simon’s culinary skills,” says Wallace. “We had huge interest – often selling 150 portions in one hour. “We were selling sustainable fish which is more expensive, so at times it wasn’t very cost effective, especially as Ireland’s weather really determines the business of a market – if the heavens opened, we’d have no customers.” With an investor they then startred Bia Mara in Belgium which quickly became one of the most popular restaurants in Brussels, offering customers a relaxed dining experience and a new take on sustainably sourced fish and chips. www.hookrestaurants.com

“M

y partners and I were sitting having a drink one evening and we had the munchies. I said, it’d be wonderful to have fish and chips here – and it just came about from there. It was like, OK, let’s go for it!” “I used to go down Wenceslas Square and you’ve got all the fast food facilities there… I said even 10 years ago to my friends in England who run fish and chip shops that [opening here] would be a wonderful idea for them. “Then there was one that didn’t work here close to Old Town Square. When I tried it, it was very greasy, it was not done properly. We’ve done everything as it’s done in England, traditional fish and chip shop style. That’s why I think it will work as well.” Where did you get all the stuff here, like the fryers and so on? I presume they’re quite specific. “The main fryer, the main range, was built for us by KFE Ltd and transported over here.” Had you any experience in this business before? Or anything like this? “As I mentioned, I have friends in

England that run fish and chip shops, so when we started talking about this a couple of years ago I then did some training with them. “Then when we picked the range that we were going to purchase, KFE offered a flying excellence course so we went on it…” So you learnt the ropes and then you taught all the staff here? “Yes. Also another friend of ours Mark Petrou ran five shops in Cambridgeshire and when the range was installed we arranged for him to come over and he spent four or five days with our staff, training them up on best practices.” What about the actual fish – where do you get it? “It’s all from the Atlantic. We’ve got a couple of fishmongers that we deal with, but we specify that it has to come from a special trawler that concentrates on one area, because we’ve found that this is a better quality of cod and haddock.” Where are your fishmongers? In the UK? “One’s here in Czech and the other one is in the UK. But it still comes from the

Atlantic, they still have to get it down to us, so whether it’s form here or Timbuktu, it’s still got to get here [laughs].” Who is your target market? “Czechs, tourists, local businesses around here – to offer them something at lunchtime and in the evening when they’re on their way home from work.” “It is like a traditional fish and chip shop with everything you would find in a fish and chip shop in the UK, ranging from cod, haddock, homemade chips, not frozen ones – we’ve got our own peeler, we’ve got our own chipper here.” I was wondering if there’s a danger if for some Czech customers this place could have novelty value – they’d come here once and think, this is interesting, but maybe not come again? “We hope they’ve enjoyed the experience and then they find they’d like to come back again. The fish is nice, flaky fish, not typical of what you’d normally find here. It has a very nice flavour. “What we’re seeing is that a lot of Czech people who are in this area are returning.” Are Czechs willing to pay for quality fast food? I understand Czechs will pay more money to go to a nice restaurant and have a nice meal. But I think when it comes to fast food, they may not be that concerned about quality? I’m sure your fish is great, but they may look at the price and see 150 crowns or whatever – and that could be a lot for a Czech person. “There are one or two other places, like the Irish pubs, selling fish and chips and we are cheaper than they are. 21

“So the concept that we have, which is like a menu, with fish, chips, mushy peas and a drink for 109 crowns for the small cod or haddock, and 159 (under£5.00) for the larger cod or haddock, I think it’s still a fantastic offer.”

A lot of people, especially expats, have been asking about malt vinegar, which we have also brought in now. What about vinegar? I’m curious if Czechs take to it, or do they have to be encouraged to try using vinegar? “A lot of them try it. I know you only opened in December, but can you imagine a time in the future, if this place really takes off, when you might open another branch or branches? “This is our plan. We don’t want this to be the last branch. We want to start looking for and opening more places and to push out the Ryby & Chips logo further.” What about the name – why did you go for the mixed language name? Is it because somebody had already used the name Fish and Chips? “No, it was actually before the other place [on Dlouhá St.] opened. We had the idea two and a half years ago. I just liked the idea of a little bit of Czech with a little bit of English.”

ith our great chip shop reviews from home and abroad and in depth features lots of our readers are telling us they like to sit down with a cup of tea (or something slightly more alcoholic) and read the magazine. Online too numbers are increasing, with over 7,000 people registered and over 1500 visiting our forum and website every week, we are attracting great interest. Our approach is simple. First off we are a publishing company run by marketing professionals. You are the experts in the trade who actually serve the consumer or you provide your wares to enable the consumer to be served. We are an intermediate of that transaction offering our expertise to both sides in order for them to work efficiently. Secondly the people who own Chippy Chat (John and Oliver Boutwood) also own Isle of Ely Produce, selling bags of potatoes to the chipping trade. The Chip Run Hundreds once again lined the High Street of Ely as the third annual potato race was held recently.

T

here were 12 teams who each sprinted the half-a-mile course laden with a 20kg bag of spuds, all of which had been grown by farmers in the Fens surrounding the city. The two-man Ely Octagon Cycling Club team were crowned worthy champions, comfortably winning their heat before, in the final, powering away from runnersup Bodyshape Fitness (Tim Megginson)) in the dash to the line. The Ely Tri Club came in third. Ely Octagon Cycling Club team was racing on behalf of D Palmer & Sons while the Team Awesome was carrying PJ Lee & Sons produce. Teams from Sainsbury, Atrium and Everyone Active, David Green & Parsons (farmer) also took part but were knocked out in the heats. A special mention to the Corkers Crisp team who ran the team dressed in dinner suits and bright orange wellingtons. New for 2014 was a schools trophy with £500 being split between three

local teams. A fiercely contested race between St Marys, St Johns and the Lantern (represented by Corkers Crisps) saw the Corkers/Lantern team win. Austen Dack, of organisers Isle of Ely Produce, billed the event as the “world’s only street race for potatoes”. “It was a fantastic set of races and we look forward to welcoming everyone back again next year.” Donations on the day helped to raise more than £1500 for local schools and charity from the event. The event is put on by Isle of Ely Produce to celebrate the region’s potato growers and the local harvest festival, it also forms part of the firm’s field to frier campaign which we feature in Chippy Chat. Director Oliver Boutwood said: “It was lovely to see so many people coming out to support the teams today, Isle of Ely Produce are happy to play such an important part in the community and will continue to invest in these types of

Sarah, 40, of Meadowland, Chineham, picked up one of 200 golden envelopes that award-winning local chippy Trawlerman was giving away to mark its 30th anniversary. Sarah, who works as a learning support assistant, said: “I didn’t open my golden envelope until I got home, and I was thrilled to find I had won the top prize.” On a return visit, she was chuffed to pick up her 52 vouchers for a standard portion of fish and chips from her favourite local chippie, Sarah said: “Fish and chips is the only meal that everyone in my family can agree on for a takeaway. “It always tastes good and I think eating fish and chips is a relatively healthy takeaway.” Although a favourite meal for her husband Andy and two children, Holly and Harrison, Sarah does not intend to pick-up fish and chips every week, as she will use her winning vouchers in chunks of four to treat the family every now and again. Iain Norrington, who has managed Trawlerman since 1999, initially as joint manager, said he was delighted to present Sarah with her winnings. “Our 30th anniversary celebrations were a great success and to add to the fun we dressed up as though we were in the 1980s,” said Iain. “The first 200 customers on the day received a golden envelope, and every one of them contained a prize.” These ranged from a free can of pop, to a bag of chips, a dessert, or a £5 voucher. T

here are many impressive sounding enemies that you may or may not have heard of including - Late Blight, Altenaria, multiple strains of virus, Rhizoctonia and Blackleg, but there is one that has become a super threat… Potato Cyst Nematode (PCN) is the most prevalent potato pest in the UK and can cause substantial loss of yield, costing millions of pounds to the potato industry annually.

What is it? Potato cyst nematodes are 1mm long round cysts, each of which contain worm like larvae. These tiny worm like creatures live in the soil and feast on the roots of potato plants. This impedes the growth and development of the plant, resulting in loss of yield. These pesky nematodes can survive for up to 20 years inside these cysts without feeding, meaning that the problem never really goes away. There are two species of PCN that affect potato crops - Globodera rostochiensis and Globodera pallida. Whilst many potato varieties are now resistant to the former, it is the latter G. pallida that has become so widespread. This is due to its prolonged hatching period and the cultivation of varieties that act as habitat hosts which multiplies the infestation and therefore the scale of the problem.

Where does it come from? The nematode is not indigenous to the UK, originating from the Andes. It was first detected in Chile in the 1930’s and shortly thereafter in Norway. The problem is now widespread in many potato producing countries including the chipping growing areas of the UK.

Why is it a problem? The damage caused by G. pallida can range from slight yield loss and growth impediment, up to crop failure, depending on the 42

infestation level and whether crop treatments have been applied. Until now the choice of potato varieties with true resistance to PCN Pallida has been limited, but that is now changing.

What can be done about it? Current control measures rely on crop rotation, the use of chemical treatments, other measures such as trap cropping, and the selection of resistant potato varieties. Most growers tend to use a combination of these methodologies as part of their PCN control program. However with crop protection chemicals under scrutiny at the European Commission, new technology will be needed, and potato varieties with a naturally in built resistance are becoming increasingly important.

PCN resistant varieties Seed Potato breeder and supplier Agrico UK, have such a potato with resistance to PCN. The aptly named ‘Performer’, is a chipping and processing potato that has undergone many years of trials and evaluations to come out on top as one of the rising stars in the fight against PCN.

About Performer What is so special about Performer is that it manages to produce a high yield in soils infested with G. pallida, even if no chemical treatment is applied. This means that it can be grown in fields where other

potato varieties cannot, often at reduced rental costs because of this problem. This has benefits for the farmer, and by reducing chemical treatments makes Performer a very sustainable and environmentally friendly variety to grow. However it gets better than this - Performer has the added ability to prevent G. pallida from multiplying which reduces the nematode population, effectively cleaning the soil for future production.

But how does it chip? Performer is the classic chipping potato being big and oval long in shape, with shallow eyes so that there is less wastage when peeling. The dry matter content, i.e. the percentage of the potato that is solid rather than water, averages 22% which is where it needs to be. If it is too low then it won’t have the required texture, will absorb more oil and subsequently end up as a limp soggy chip; Too high and it can make the potato susceptible to bruising and creates a hard textured chip. The fry colours are good and the texture has a fluffy consistency, synonymous for chipping. And finally and perhaps most importantly they taste great. With Performer quietly gaining momentum in the fish and chip and fast food trade, what do others think... The fry colours are good, as is the texture, with both being similar to Maris Piper I would say. They’re a beautiful chip and with repeat orders week after week after week says it all really”.
