First Class Fish and Chips at Cumbrian Post Office How are you making use of any down time in your shop – this one in Allonby doubles up in a brilliant way.

P

ost offices offer all manner of extra services these days, but there’s only one that sells fish and chips. The businesses had been run separately, albeit next door to each other, by Adrian and Pamela Twentyman. When they decided to emigrate to Portugal, they sold to Adrian’s brother David and sister Vicky, who knocked down a dividing wall to run them as one. Manager Rosamond Blaney said: “A lot of folk have said they’ve never seen a post office in a chip shop before. “But people were pleased that the post office was being kept open. If we hadn’t done this it would have closed.

“That would have been a real shame because the village has a lot of elderly people who would have had to travel to Maryport or Silloth.” Mrs Blaney, 46, used to cover in the post office so had the necessary training to take charge when the two businesses merged in July. She added: “The post office is now open when the chip shop is open. “That’s Thursdays through to Sundays in winter, and in summer every day except Tuesday until eight o’clock at night. “This summer we’re looking at opening seven days a week.” Allonby is unique in having a post office inside a fish and chip shop. But it is becoming increasingly common for village post offices to move into other unrelated businesses as a way of staying viable.

The new Fish and Chip Champions of the UK - Simpsons Fish & Chips in Cheltenham recently reopened with a fresh new look.

T

he multi award-winning chippy has undergone an extensive redesign of its Priors Road restaurant and takeaway. James Ritchie, Co-Founder of Simpsons Fish & Chips, said: “We could not wait to throw open our doors and share this exciting new space with our customers. This is a project we’ve been working on for some time now and we are over the moon with the results. For it to tie in with being crowned champions is just fantastic! Kelly and the team at Shadowplay have done a sterling job. Our main reason for the refit was to enhance the experience for our customers. The new restaurant and takeaway will hopefully put us on the map, making Simpsons a foodie destination.”

The developments include a dramatic expansion to the restaurant area, increasing the dining capacity to accommodate for over 65 diners from 42. The restaurant is now entirely separate from the takeaway area to give the space a more self-contained feel, uninterrupted by the buzz of the takeaway. Aligning with the colour pallet of the iconic Union Jack flag, Simpsons’ new interiors follow tones of navy, red and ivory with grey to create a contemporary vintage feel. A bespoke hand painted seaside themed mural adorns the entire back wall, together with a reclaimed vintage Union Jack flag covering the adjacent wall. Mirrors on the opposite wall dramatically reflect the flag. Flown in from Sweden, a retro light box with changeable lettering also features. An eclectic mixture of tables offers a variety of dining options. Chesterfield style button back seating provides booths

and benches. Raised scaffold high top tables have been paired with reclaimed wooden school chairs. A much larger bar dressed with apple crates and stool seating allows guests to enjoy a drink before being seated. A state of the art Sonos sound system has been installed, making the new restaurant ideal for private functions. Amazingly Simpsons Fish & Chips reopened on the evening of Monday 18 just a day and a half before they triumphed at the awards (see our awards special section). Bonny and James Ritchie said: “After coming in second for this award twice over the last few years, we really are over the moon to have finally won – third time lucky! “We’ve really pushed the boundaries of that traditional, stereotypical ‘chippy’ image, developing a strong brand which can compete with some of the familiar big catering businesses. This is just the beginning for us, we’re determined to push fish and chips forward and keep growing our business.” The pair hot footed it over to the ITV This Morning Studios to record with a slightly worse for wear Philip Schofield and Holly Willoughby who themselves had been out celebrating their own national TV award with Ant and Dec! The re-launch and of course the title victory were due to be celebrated in style at Simpsons to members of the fish and chip world and friends on January 29th. Simpsons bag the Top Trophy at Fish and Chip Shop of the Year Awards Simpsons Fish & Chips, Cheltenham, Gloucestershire has been crowned the best fish and chip shop in the UK at the ‘Oscars’ of the fish-frying industry.

T

he shop scooped the ultimate title - Independent Takeaway Fish and Chip Shop of the Year – at the 2016 National Fish & Chip Awards after beating stiff competition from nine other UK regional winners, all vying to take home the top accolade. To earn the top spot, Simpsons went through a rigorous, multi-stage judging process over a seven month period; encompassing several mystery shopping assessments and indepth audits by industry experts, reviewing everything from responsible sourcing policies to menu diversification – and off course, the quality of fish and chips on offer and levels of customer service provided by staff. The final stage of judging put the shop’s presentation skills to the test as they faced a 12-strong specialist industry panel – ‘frying off’ against their fellow finalists in a ‘Dragon’s Den’ style pitch. Commenting on their award win after receiving the distinguished trophy from awards host Nigel Barden, voice of food and drink on BBC Radio 2, shop co-owners Bonny and James Ritchie said: “After coming in second for this award twice over the last few years, we really are over the moon to have finally won – third time lucky! “During the last year we’ve really upped our game; streamlining our marketing activities, expanding the shop to double the size of our

Over 40 years ago, John started out his business by selling potatoes to the trade. Despite a horrific car crash which confined him to a wheel chair for life John battled through over a year’s treatment in Stoke Mandeville to restart his business. Between John and his son Oliver and daughter Claire, they now distribute over two million bags of potatoes to fish and chip shops across the UK and Ireland every year many of which are grown in the fens. In addition they purchased Chippy Chat, the leading magazine for fish friers and suppliers, as well as launching the annual ‘Field to Frier’ open day which is attended by key delegates across the industry. Both magazine and event are regarded as a poignant source of sharing knowledge within the trade, showcasing new product launches and best practice from across the industry. he loyal customers who frequented through the 75 years the old store existed had feared another specialist store in Oslo would be lost. It is therefore with extra pleasure that it has now resurfaced a new and bright fish shop in precisely the same premises. It also houses a fish restaurant and serves some of the best fish and chips in Norway! In spring 2010 Fiskeriet’s opened their first branch in Sandvika, also there in premises inherited from another fish shop. They see it as our proud duty to safeguard and spread the knowledge of one of the main ingredients of all time “Our fish. Our vision is to become one of Oslo’s institutions within the food industry, and we look forward to taking on this task”. A new era. The former customers of fishmonger Erling Moe will probably be very pleasantly surprised by the changes shop premises have

The menu varies according capture, season and probably the chef’s inspiration and the tiny kitchen can be glimpsed behind the bar where the staff take orders, cutting bread and pour drinks.

SELECTION Around ten dishes, with fish and chips as the top seller, if one is to judge from the customers’ choice this day. Fishbeef, bacalao, oysters here it is to revel in the delicacies. FOOD A large, delicious piece of fish on a bed of fries with tartare. Furthermore, there is a basket with assorted accessories on the disk, including malt vinegar, so you can get chips as in Britain. The fish is so fresh it literally curl, and the meat parts themselves delicately up when we put the fork in it. Bacalao comes on a large plate. With olives and carrots, not so we got it in the genus in western Norway, but good taste. GUESTS / SERVICE Clerk and business people from the neighbourhood, many of which seem to belong to the hip cafés in the neighbourhood, here comes everybody. The place is very popular, not without reason. Tables are busy virtually all the time, but the waiters are efficient and have full control. Impressive when it is at its worst and five to six orders come out simultaneously from the tiny kitchen.

onelli’s fish and chip restaurant and takeaway was officially opened in Market Street on Monday, December 28 and business has been booming. Owner and managing director Hassan said he was pleased with early feedback. “It’s going very well and we’ve had a good response. People have commented nicely about the food, the place and the service. “I have been in the catering business for 33 years and was the general catering manager at Loughborough Students Union for 15 years. “I always wanted to open a fish and chip shop in Loughborough and the opportunity came along. We have been busy since it opened and we’re hoping to get better and better.”

A source said: “Getting Gordon Ramsay to cook you fish and chips feels like getting Michaelangelo to ­ decorate the ceiling in your spare bedroom. “He’s one of the world’s most famous chefs and has made his name cooking high-class French cuisine at some of the world’s classiest restaurants. “But there’s money in selling fish and chips and burgers, especially in Vegas. “He loves the city and is now looking for a new home there and he’s also in talks to open a cooking academy there.” Ramsay, who was inducted into the Culinary Hall of Fame in 2013, already owns three restaurants in Vegas - including Gordon Ramsay BurGR, Gordon Ramsay Steak and Gordon Ramsay Pub & Grill. Life begins at 70! A BARRY Island chippy is appealing to their customers to help come up with ideas to celebrate its 70th anniversary.

F

amily-run O’Shea’s Fish and Chip cafe was established in 1946 when Frank Thompson used his World War Two pay-off to start a business on Barry Island seafront. Mr Thompson found immediate success attracting crowds of holiday makers from the seaside resort. Fish and potatoes were not rationed in 1946 and therefore proved a great business venture for the war veteran. The original cafe was opened for the traditional holiday season of April 1 – September 30. Alongside his family, Mr Thompson worked 12 hours a day, serving crowds of customers, before spending the evening’s hand peeling potatoes for the next shift. His daughter, Barbara Thompson inherited the business and then married Dennis O’Shea. When she had children, Dennis ran the business and the cafe got it’s familiar name, O’Shea’s. Dennis’s son, Craig O’Shea now runs

the business, but everyone in the family is involved – even Craig’s eight-year-old son enjoys working behind the tills on busy afternoons. Craig said: “O’Shea’s is such a focal point of the community. We have loyal customers who have been served by three generations of the same family. People stop and chat to me in the street because they recognise me from the cafe. It’s quite amazing.” But like all local businesses, O’Shea’s hasn’t always tasted success. The closure of Butlins in 1994 hit Island traders hard. “For a good few years it was tough,” admits Craig. However, the arrival of Gavin and Stacey meant a tidy transformation for Barry Island trade. O’Shea’s felt the boom of the Gavin and Stacey phenomenon. “It’s been tremendous for everyone on the Island,” said Craig. After 70 years, O’Shea’s cafe has never been busier. Open all year round, it provides wintery refuge to local dog walkers and holiday treats for the summer crowds.
