Whaley Bridge Fryery is crowned (Buxton Advertiser) Chip Shop of the Year 2014. Local newspapers are a great way for you to get noticed whether it be with a reader offer or competition like this one. We look at a recent competiton ran by the Buxton Advertiser!

T

hey asked readers to tell them which local fish and chip shop gets it right and why it should be named the best. From a shortlist of ten chip shops, The Fryery polled the most votes to take the title. And owner Michelle Bailey believes her excellent staff who offer a “service with a smile” is one of the reasons why the Canal Street chip shop came out on top. Michelle, 38, has worked at The Fryery for 15 years, taking over the running of the business in March 2011. “I absolutely love my job,” she admits. “I love the customers and the area. We offer a service with a smile, and we have a laugh with the customers.”

Michelle runs the business with her staff Tina Firth, Abbie Brown and Shannon Bennett. As well as being renowned for their traditional fish and chips, The Fryery also serves up a number of home-made specials, ranging from Chinese chicken and chicken madras curry to braising steak and chilli con carne. “It gives customers that little bit more choice,” explained Michelle, adding “but it’s fish and chips that are always number one on the menu.” The Advertiser editor Jonathan Dodds said: “Congratulations to Michelle and her staff at The Fryery for winning this year’s award. To be chosen from a very competitive shortlist is a great honour. “I’d also like to thank all our readers who voted, as well as the chip shops which took part in this year’s contest.”

Dreams can come true This month’s story is told by Mathew Williams owner of the Crispy Cod Fish Bar, Tonyrefail, a small Welsh mining village 25 miles inshore.

P

reviously before opening The Crispy Cod Fish Bar, I was a chef by trade and worked my way through the ranks to become a Head Chef. I was very lucky to have worked in some of the finest hotels in Wales but always had the passion for fish and chips at a very young age. The passion came from going on holidays with my family, eating fish and chips out of newspaper and the smell of the sea air. As my passion was turning into reality, I wanted to find the correct location for my business. It took me 3 years to find the location in order for my dream to start. I was driving home one day and passed a rundown building which had lots of character and potential. It was in a very highly populated area but very close to 2 former Welsh Fish and Chip Shop of the year winners. I viewed

the building the next day but didn’t haggle on the asking price as there was so much interest . From that day on its been 100 miles a hour and I’ve loved every second of it. From only having a few thousand in the bank it was very hard as I had to remortgage my house and take out a bank loan and 4 credit cards. THANK GOD WE WERE BUSY FROM THE OPENING, OR I WOULD HAVE ENDED UP BACK HOME WITH MY PARENTS WITH VERY LITTLE. Having no experience in the fish and chip industry and never even wrapped a bag of chips, I was getting worried! I’m a very passionate person and I believed that The Crispy Cod would be a great success, as everything that I have challenged I have always given 110% even when I worked for Chippy Chat & Fast Food Magazine • May 2014

other people. My father always told me when you run your own business you only get out what you put in. The opening of The Crispy Cod was a great success, having 2 famous Welsh rugby players to cut the ribbon. That day was very emotional for myself and my family as we couldn’t believe that our dream was just about to start. The day we opened I entered the shop at 6am to prepare everything from scratch and couldn’t stop crying realising this was one of the most important days of my life apart from the birth of my son (COREY WILLIAMS ). Since opening I’ve used my chefing ability to produce many homemade products on the menu. This sets you apart from many of your competitors and maximises your profit. We have won some great awards for the hard work and dedication we have given to the trade as a business. Below are just some of the awards we have already achieved: Seafish 5 star Quality Award Nfff Quality Award 5 star hygiene rating for 3 years running from local council Welsh regional winner 2 years running Top 10 in the whole of the UK 2 years running Drywite Young Fish Frier of the Year Final 10 (shop manager Ryan Hughes). 7

As a business owner I have enjoyed myself more in the last year 6 years than my previous career as a chef and have been fortunate to have met some fantastic ambassadors to the trade including: Richard Ord-Colemans, South Shields, Fred Capel-Chez Fred, Bournemouth, Calum Richardson- The Bay, Stonehaven and Stuart Fusco- Quayside, Whitby The list is endless as everyone helps each other to raise the standards in this fantastic industry.

This journey has only been made possible by having hard working, dedicated and committed staff members 18 months ago I realised my business was maximised, I had to think of new ideas to increase my business. So I decided to do a full shop refit and looked into quicker more efficient fish and chip ranges. I opted to buy a KFE range, I’m happy that I made this decision as business has increased by 25%. This journey has only been made possible by having hard working, dedicated and committed staff members and a very loyal shop manager Mr Ryan Hughes who has worked for me since the age of 13. He has worked his way through the ranks to firmly deserve the position he has today of shop manager of one of three best fish and chip shops in the UK. When it Sizzles Paris A Brit opening a “chippy” among Paris’s traditional brasseries

and celebrated eateries sounds a batty idea. But chef, Michael

Greenwold, told the French edition of The Local (and us) about how he is making the French fall in love with Britain’s most famous dish

aris has a new addition to its restaurant scene but you won’t find confit de canard, entrecôte or agneau souris anywhere on the menu. What you will find however is good old British fish and chips. Le Sunken Chip, in Paris’s 10th arrondissement, has already been making a stir in Paris with France’s Glamour magazine recently featuring it at number 3 in the “hottest places to go” Last September. Michael Greenwold, co-manager of the restaurant, along with James Whelan, tells us why he is confident they can convince the French, notoriously proud of their own traditional cuisine, about the joys of battered fish and chunky chips. Where did that idea come from? Well, I already run another restaurant in Paris, which does traditional French cuisine and although it is successful, I always wanted to do something with fish and chips. Being British it was close to my heart. We researched the possibility for a long time and felt the time was right. It’s still seen as being quite cool to be British at the moment. But it’s Paris, home of the brasserie! Yeah, we were worried at first about how we would be received by French people. We obviously get a lot of ex pats coming in but 70 percent of our customers are French. So if we can make trendy Parisians eat fish and chips then we must be doing well. The Right Solution

The Old Swinford Fish Bar has been serving its local community Fish & Chips for over 20 years. With the turn of the New Year brothers Zach and John Ioannou decided to do a complete refit of their store in order to appeal to a broader customer base and add offer an exciting new menu.

“The decision to go digital was easy; - why spend money on a static system which would cost us money to update every time? It also wasn’t feasible that we would be able to sign off a static menu given the number of new items and timescales we were under. Opening with a new menu we really wanted to be flexible in our promotions, offering our customers new deals and promotions tempt them to our new offerings - This wouldn’t have been possible with the traditional format. It was importantthat we ended up with the right solution that could be both remotely managed and instantly updateable; we knew that with a new menu we would have many menu item and price changes untill our menu was fine tuned.

The two brothers closed their store for a period of three weeks whilst the refurbishment took place, natural their priority was getting the store back open again to start generating revenue. The menu was going to be completely re-invented to include pizzas, wraps, southern fried chicken and more.

We were happy to see an end to end solution with flexibility that would be otherwise be impossible with static menus

: Listening to their Customers for 59 Years “If you don’t listen to your customers you don’t have a business” says Glenn Edwards of Chippy’s who have been doing just that for almost 60 years.

C

hippy’s of Haverhill have been frying fish and chips since 1955 and throughout that time they have always cooked in Frymax to produce their delicious fish and chips. They are a true family business currently in their fourth generation of fryers with eleven family members involved in the business. The secret of Chippy’s success lies in their attitude to the business. “We have always taken a very open and progressive approach to the business. We listen to our customers and we invest in the latest equipment and the best ingredients to provide a top quality

product and the best customer service for our customers. We don’t always follow the conventional wisdom; we do what our customers want” An example of this is their approach to packaging “We tried boxes & trays but our customers just didn’t want them so we moved back to traditional bags. We wrap in paper but also offer re-usable environmentally bags for life which our customers love and the bags advertise our shop, Everything is paper no plastic bags are used.” The business is currently run by Glenn, Chris Teresa & Barry. grandfather Mick Brimsden and father Chuck Edwards in High Street, Clare in 1954. In 1955 they opened a shop in nearby Haverhill and in 1972 the current shop was opened on a new out of town development estate. In addition to the shop Chippy’s started a mobile business in 1966 and almost 50 years later they are still visiting the local villages with a bespoke mobile fish & chip lorry. A more recent development has been catering at weddings which started in 2005. Chippy’s has built such a strong reputation over the years that customers drive up to 25 miles to enjoy their fish and chips. On a Friday & Saturday with four staff cooking and five staff serving there are queues outside the shop. Quality, hygiene and service are at the heart of Chippy’s success story. In order to produce good food you need the best quality ingredients and Chippy’s take care to ensure they use only the best. The fish supply is split between frozen at sea and fresh delivered daily and they use Maris Piper potatoes. They make their own batter which matches their

customer requirements and “we fry in Frymax which is of consistent quality, odourless and doesn’t transfer taste. This means our customers get delicious fish and chips every time. We have never had a complaint about Frymax in almost 60 years” Chippy’s fry in a bespoke 6 pan Kiremko range using three conventional pans for fish and three high efficiency round pans for chips, an arrangement which they believe produces the best frying results. Customer service is another strength of Chippy’s. The involvement of the family plus long serving staff members of 28, 20, 16, 10, and 5, years creates a skilled and experienced team. But there is much more to customer service in the eyes of the Edwards family. An example is their approach to gluten free fish and chips. their customers want it. The latest technology is also used to enhance customer service. Chippy’s installed a bespoke till system which in addition to linking to the range, serving points and back of shop to improve the efficiency of the serving operation also holds 4,000 customer names and addresses and maps to enhance the delivery service they provide. Glenn recalls the days when the price of fish and chips was one shilling and four pence ( 7p in today’s money ). His father used to collect the wooden cases of fish from Haverhill station with a wheelbarrow. The potatoes in those days were King Edwards and they were delivered in hundredweight sacks. That’s all changed now with wellestablished distributor systems but the other side of the coin is more paperwork and more competition. “The meal choices for our customers have expanded over the years and we have evolved our menu to meet the requirements of our customers. The 1960s saw the addition of BBQ Chicken, & battered sausages, the 70s was the introduction of pies onto our menu and today we are offering burgers, kebabs, wraps, Southern Fried Chicken and salads.” The basics however remain the same.” Invest in quality ingredients and latest technology to provide delicious food and top grade customer service, listen to your customers and always remember that you are only as good as your last meal “

Celebrate Norway Day

The Norwegian Seafood Council (NSC) and a number of Norwegian Frozen At Sea fishing vessels have come together to launch a UK-first partnership that saw 99 fish and chip shops offer their customers a portion of their favourite takeaway for just 99p to celebrate Norway Day.

an important market in the export of cod and haddock. Fish and chips is the UK’s favourite takeaway and Norwegian whitefish is a popular choice for British fish and chip shops - the vast majority of cod used by these shops is caught all year round in the cold, clear waters of the Barents Sea. Jack-Robert Møller, UK Director for the NSC, comments: “Norway has been an important contributor to the UK’s fish and chip industry providing high quality fish for this celebrated national dish for nearly 70 years and I would like to thank all our Norwegian partners for supporting this project – their contribution has been invaluable. Together, the vessels have gifted an enormous 16 tonnes of sustainably caught Norwegian cod to 99 British fish fryers to commemorate the 200 year anniversary of the country’s constitution (this is known as Norway Day), and to share the sustainable cod which is available in abundance in Norway’s Barents Sea. This gift enabled the 99 stores to serve around 40,000 99p portions nationwide. Chips, Charity and Music Fan Dabi Dozi! This year, David Hanbury is hosting the 7th Fish and Chips on the Downs Music Festival on Sunday 22nd June. Since he first started the event, he has raised over £100,000 for local charities by putting on a fantastic day full of live music, beautiful views and of course delicious fish and chips.

Double Top! Fish and Chips is Britain’s greatest-ever double act, beating the Beatles & sweeping aside Sooty and Sweep!

t is a British tradition that has brought joy to millions of families for more than 150 years. Now one of Britain’s favourite dishes, fish and chips, has been voted as the country’s greatest-ever double act. The meal polled above the likes of Posh and Becks and the Duke and Duchess of Cambridge in a survey of the top 50 British combinations. The survey asked 1,000 adults to choose their favourite British pairing, from areas such as comedy, music, food, business or sport. Second in the list was tea and biscuits, followed closely by comedy duo Eric Morecambe and Ernie Wise, who polled at number three. The rest of the top ten was dominated by classic food pairings, including bacon and eggs, roast beef and Yorkshire pudding, sausage and mash and strawberries and cream. Other duos which clinched a top ten spot included The Two Ronnies, otherwise known as Ronnie Corbett and

Ronnie Barker, and fictitious duo Sherlock Holmes and Dr Watson The list showed Britons’ appetite for comedy, with Steptoe and Son and Delboy and Rodney Trotter, from Only Fools and Horses, both featured in the top 20. Dawn French and Jennifer Saunders polled at number 22. The musical world was also well represented. Beatles songwriters John Lennon and Paul McCartney, pop rock duo Chas and Dave and Mick Jagger and Keith Richards from The Rolling Stones all featured in the list. The list also included much-loved British brands, including Marks & Spencer, which came in at number 10, Procter & Gamble, Rolls-Royce and Fortnum and Mason. Two Coronation Street stalwarts also made the list, including Jack and Vera Duckworth and Newton & Ridley, the fictional brand of beer served in the TV show’s pub, Rovers Return. Chip Week 2014 (17-23 February) has beaten all records, achieving £5million worth of coverage and reaching over 163 million consumers

elevision coverage of Chip Week included The One Show, Wright Stuff and This Morning. Radio stations covering the Week included BBC Radio 2, Absolute Radio and TalkSPORT and articles appeared in The Sun, The Express, The Guardian, Metro, Sunday Mirror, The Daily Mail and The Telegraph – to name a few. Chip Week 2014 was also highly visible across social media platforms, which alone reached over 30 million consumers during the Week, a tenfold increase on 2013. Twitter was inundated with Chip Week mentions, with tweets from @ BBCGoodFoodShow (81,500 followers) and Great British Chefs @gbchefs (29,400 followers) amongst others. What’s more, with 900 chip shops, pubs and restaurants signing up to take part in this year’s Chip Week celebrations, support from loyal customers reached a record breaking high with almost 63,000 votes cast for the Choice Chip Awards. Lincoln’s Burton Road Chippy and The Crown in Henlow, Berkshire were both

This year – (the third year of our campaign) we will really start to see some momentum. We have presented our activity thus far to key figures in the industry and I’m pleased to say the reaction has been fantastic. The ‘Field to Frier’ film shot at Mark Gilbert’s farm (which was made in conjunction with Calum Richardson, WM Fraser, Isle of Ely Produce,KFE, Potato Council & Drywite) was a massive catalyst for action particularly once the film was shown in an international premiere at Fruit Logistica in Berlin. The National Fish and Chip Awards have also been a large springboard for us to create this new platform in the industry and for the first time allow our growers and farmers a way to be involved at the coal face.
