A

ssistant Minister for Agriculture and Water Resources Anne Ruston said she encourages everybody to have their say in the 2018 Australian Fish and Chips Awards. “Fish and chips are an Australian icon and we all have a favourite local shop,” Minister Ruston said. “There’s no time to ‘mullet’ over, and whether you prefer grilled, battered or crumbed, voting will be hotly contested. “It is important to recognise the success stories in the seafood industry and the hard work of our fishers who bring the food to our table.” Voting in all states and territories will run for six weeks until 15th September. Winners will be announced in October. The awards are coordinated by the Fisheries Research and Development Corporation, in partnership with the state and territory fishing industry councils. Over 2,000 fish and chip shops are registered to date. Last year’s winners were Frying Nemo from Tipperary Waters and Tasmanian Gourmet Seafoods, Cambridge, Tasmania There are two categories: a people’s choice and a judge’s choice. SAY HOLL-O! Rapeseed oil better in sustainability comparison

A

new cooking oil that promises a healthier nutritional profile has also come up trumps in a sustainability comparison against one of the most commonly used alternatives, showing a lower carbon footprint and reduced water consumption. HOLL oil – an oil high in healthy oleic acid – is produced from oilseed rape grown throughout northern Europe. It compares more favourably to similar sunflower oils – often known as HOSO – in terms of greenhouse gas emissions and water consumption, according to data provided in a report commissioned from the consultants Bidwells. Oilseed rape is more usually grown in cooler northern Europe, whereas sunflowers tend to be more commonly found in the warmer climes of southern Europe. Both crops are grown primarily for oil extraction, and they are regarded as being more sustainable than many alternatives. Palm oil, for instance, is an imported product whose production is associated with negative environmental effects, including substantial greenhouse gas emissions, deforestation and threats to biodiversity. This was emphasised by the recent move from British supermarket chain Iceland, which has now banned the use of palm oil in its products on environmental grounds. “In our marketing of HOLL, we have focused on the benefits that it offers to both the foodservice operator – improved performance and reduced heat deterioration – and to the consumer, in terms of healthier eating and a better taste,” explains Lionel Lordez, HOLL’s business development manager.

“We’ve also underlined the benefits of using a European-sourced oil, giving operators a fully traceable supply chain, to improve their sustainability.” Bidwells’ study was conducted using respected international standards, including those drawn up by the Kyoto Protocol, the UN Food and Agriculture Organisation, and the Water Footprint Network. For carbon footprint, the study looked at the CO2 equivalent emitted in production of the crop, drying and storage, transport and oil extraction. Across the countries included in the study, oilseed rape emitted an average CO2 equivalent of 333kg/ tonne of crop, while sunflower production led to an average CO2 equivalent of 525kg/tonne of crop. The study also revealed that sunflowers tended to require more inputs during production, particularly diesel fuel and energy-intensive fertiliser, although some of this was attributed to differing requirements and practices between regions. When it came to the water footprint comparison, there was much greater variation between countries. Nevertheless, oilseed rape showed itself to be more ‘water friendly’, with sunflowers requiring up to four times as much water per tonne of seed. “The report helps to underline HOLL’s credentials as a sustainable oil for the foodservice industry, says Mr Lordez. “We’re all increasingly focused on reducing our impact on the environment; switching to HOLL gives users the reassurance that they’re doing their bit too, while also benefiting from HOLL’s performance and healthier profile.” HOLL is widely available from distributors nationwide. Cox’s Lighthouse Shines Brightly Indeed! In June 2016 Mick Cox sold his beloved chippy in Letchworth after having it for over 20 years. He believed the site had reached its maximum sales capacity and it was time to have a change By Austen Dack

ick had created a very successful shop there, and even reached the TOP 10 in the fish and chip shop takeaway category in the 2016 Awards National Fish and Chip Awards. The secret to his success seems easy to Mick himself. “Look after your staff, use the best ingredients, always cook fresh (we don’t do fast food) and take pride in your community. “ Circumstances at home and a sense of achievement led to the sale of Letchworth. Was Mick to put his feet up and rest for a couple of years? Of course not. “I was back looking for another shop the following day. I saw several then an opportunity came up in St Neots. The site itself had a few problems so I left it, but months later these were resolved. It was a growing town with lots of new houses and the site backed onto a thriving railway station.” Once the site was chosen Cox’s Lighthouse of St Neots was beginning to take shape. With a multi-thousand-pound makeover (it is so modern, and brilliantly lit) and the choice of range had been made. Mick had teamed up with Henry Nuttall. Between them they decided the range that would be best for this size of unit a 5 Pan HE Island Range. It’s perfect for now but easily something that would cope as the sales start to grow. Mick was keen to offer a Gluten Free option from the start too. “With a spare pan for fish, and the chips are always gluten free anyway, it’s a big plus to be able to offer this all day every day.” Mick is proud of his new Henry Nuttall range. It offers me great flexibility and has some lovely finishing touches. I particularly

like the grid system for food storage, its so easy to clean as is the glass too. “Henry Nuttall have been very helpful, from design stage to the installation process, which was very smooth. Jack Price from Henry Nuttall said “It’s been a pleasure supplying Mick with the new range. From start to finish the process was seamless, and you could tell immediately that Mick was a serious operator. With his wealth of knowledge Mick knew exactly what he needed from his range, so the 5 Pan design was quickly finalised. High Efficiency was a must, along with the right configuration to ensure Gluten Free was achievable. With his experience and passion for the industry, no doubt that this new venture will be a great success, was great to be involved and to have Mick back in the trade.” To launch the shop Mick offered fish and chips half price on a hot weekend in June. “It went well, but anyone can give them away” said Mick. Thankfully many of those who queued are coming back on a regular basis. Whilst I was there a large order came in via his online ordering system something Mick is keen to grow. A New Lease of Life… Alternative finance is thriving in the fish and chip market

ithout a top-of-the-line frying range, any chip shop is bound to fall behind the competition. Planet Rates Chipper Out of this World! It was a ‘whirlwind week’ recently for Calum Richardson, founder of Stonehaven’s The Bay Fish and Chips, as the humble chippy was voted the Best British Foodie Experience by travel guide giant, Lonely Planet

peaking of The Bay Fish and Chips in their Ultimate Eatlist Lonely Planet said: “Sailing boats bob in the harbour; rockpools teem with crabs and sea stars; gulls ride on the breeze; and in the distance, the leaden horizon of the North Sea. “Completing the scene, halfway along the beach is The Bay Fish and Chips, whose fish is wild-caught from Marine Stewardship Council-certified stocks. “Considering the setting, the sustainability and the beautifully cooked fish, is it the best fish and chip shop in the world? heir first shop ‘Fylde Fish Bar’ opened their doors in 2009 in Marshside, Southport and they were greeted as a welcome addition to the community as a take away and 50 seater restaurant. Their second shop being a take away is situated in Birkdale Village also in Southport and opened in early 2015. Banico and Jodie owners of Fylde Fish Bar looked to open a third site and the opportunity arose in Burscough, Lancashire on a site which was able to offer both a restaurant, take away and outdoor seating. Designing and planning this flagship shop has taken many months to ensure that both design and layout are to the highest quality and standard. They have rebranded and Burscough is now known as ‘Fylde Fish

and Chips’. This involved working closely alongside a branding company and an interior designer and they wanted to create somewhere that everyone feels comfortable coming along! Banico says ‘I wanted somewhere you can bring your girlfriend, wife, Grandma, friends and even your kids!’ They decided to become a licensed restaurant as they wanted to create a place where families could come but also if they fancied a beer, wine or even a prosecco they can to accompany their fish and chips or seafood! Banico and Jodie are passionate about their food so decided to add some new dishes to the Fylde brand and in Burscough have some tasty small plates – halloumi, dips and olives, calamari and fish balls to name a few. They also have some exciting main dishes, mussels, hake, delicious pies and even some tasty delicious desserts. The kitchen design was also very well planned out with a high efficiency range, rationale ovens, high quality walk in fridges and freezers which once completed was to perfection! As a result of opening their new venture they now employ in excess of 80 full time and part time staff and

Time to be a Chippy ChApp! Over the last 12 months App4 have seen a substantial shift within the Fish and Chip sector, with dozens of businesses choosing to embrace the Mobile App and Online ordering era and use it to increase revenues and expand in to new services to reach more customers.

To aid the order processing App4 also provided a custom printing service by replacing the existing printer for an intelligent Epson printer in order for them to provide fully customisable receipts, controlled through the App4 platform. Since going live with App4, Baked & Battered have seen a significant growth in repeat orders from App and Online users and an increase in the average order value compared to walk-in and telephone orders. Another unexpected benefit is the reduction in calls coming in to the stores which has meant that, for those customers still calling, they don’t have to wait in a call queue during peak times. Overall the introduction of the App and Online ordering has helped Baked & Battered to reduce the need for additional members of staff to man the phones, resulting in a healthy cost saving to the business. Hunky Dory, exceptional food and service By Gabbyna (Aussie blogger)

T

he Merriam-Webster Dictionary defines the word “Hunky Dory” as “pretty satisfactory” but I would declare that Hunky Dory, the Fish and Burger Bar at Clarendon Street South Melbourne as more than just satisfactory. It is simply exceptional. Starting with its interior décor, the ocean blue menu boards and brightly lit salad and seafood bar, forms the perimeter of the open-concept kitchen. Besides a view of how the chefs are handling your fishes and burgers, the open concept seems to enliven the place with the dynamic interactions between the chefs, service staff and the customers that walk in. Upon entrance into the restaurant, I could feel the energy of the place with the spontaneous shouts of welcome by the chefs. How they remain so energetic while dipping fishes in messy batter and throwing them into dangerously hot oil, I have no idea. Robert, the supervisor of the place at Clarendon Street, engages his customers by going round the tables and personally asking them how they find the meal and he delights them with his twinkling eyes and witty humour. When asked by a patron where the washroom is, he pointed to the back and cheekily told her, “Just say my name, Robert, and you will get a good seat.” Charming. Hunky Dory has been voted the best fish and chips place by NovaFM, a radio station in Melbourne. It is not surprising as they

serve a good variety of different types of seafood and fishes in various styles. Their fried batter is light and does not leave you with a queasy stomach from the grease and their fishes are so fresh that you can almost taste the seawater in it. They serve this colloquial dish with either the usual flake, which is the local gummy shark, or with other types of fish for the more discerning ones, such as Blue Grenadier, Barramundi, Dory and King George Whiting. For the more health-conscious, there is a choice of grilled fish, for an additional $2. Interestingly, there is a wide selection of different marinate flavours to go with the grilled fish, such as The Caribbean (Topped with a mango, onion and coriander salsa), The Asian (An infusion of sweet soy, coriander, lemon grass, chilli and ginger) and The Spaniard (Topped with tomato, spanish onion, basil and a balsamic vinegarette). So, wherever your dream destination is, just close your eyes, take a bite and let the flavours take you there. The prices here are reasonable as well. For a traditional fish and chips pack, which comes with a fillet and chips, it cost $12. If you are not in a “fishy” mood, try their salt and pepper calamari, which are fresh calamari (not those in the usual rings) lightly fried with salt and pepper or their prawn cutlets or seafood sticks. If you can only choose one, go for their salt and pepper calamari as I find that the most appetizing. With 9 outlets in total now there is a Hunky Dory for everyone

On Yer Bike! Rushcliffe fish shop marks Tour of Britain with bicycle shaped chips!

A

Keyworth fish and chip shop has produced specially cut bicycle shaped chips for hungry Tour of Britain fans to savour as the event races past its premises. Plumtree Fish and Chips in the village have produced the limited-edition fries marking the national cycle race with an innovative bike framed fried potato. It’s part of their celebrations for the race that saw the first 250 customers through their doors receive a free cone of chips on Saturday September 8 as the likes of cycle superstars Geraint Thomas and Chris Froome flew past the restaurant and takeaway at roughly 11.10am. P l u m t re e F i s h a n d C h i p s h ave commissioned the special chips to celebrate the Tour’s arrival Manager Tim Meadows said a national event on their doorstep had inspired the team including wife Liz and owners Peter and Anna Piponides to embrace the day and think of different ways to celebrate. He said: “We wanted to welcome the Tour of Britain and to encourage some of our loyal customers to come along and enjoy some chips on us on the day.

North Yorkshire fish and chip shop is casting its net far and wide to tap into the growing Oriental visitor market keen to sample the UK’s favourite dish. Since Chinese Premier Xi Jinping was treated to fish and chips by former British Prime Minister David Cameron in 2015, visiting a chippy is a must do for Chinese tourists visiting the country. Now, thanks to launching a Chinese website on Weibo, and the use of the Wechat messaging app widely used in the Communist country, Scotts Fish and Chips – located on the A46 at Bilbrough, near York – has seen a large increase in the number of Chinese coach parties stopping off for a bite to eat. And to make it easier for its foreign guests, the award-winning restaurant has also translated its menu into Mandarin and

he event put on by John, Oliver and Claire Boutwood and hosted by Chippy Chat Publishing Editor Austen Dack highlights the journey the potato makes before it hits shops. It is the culmination of their ‘field to

Highlight of the day was Miller’s from Haxby the current UK champions. David and Nick who showed us just why they are the best in the UK with benchmark activity in a thrilling keynote speech. Back to farming our featured farmer this year was once again Patrick Clabon of HG Bliss Farms. He took the owners to his farm giving them a running commentary as they approached the farm before jumping out to see the potato growing process first hand. Patrick was a great speaker and the group all complimented him on his fantastic tour. Other highlights included tasting the new Pukka Pie brand, tastings from Middleton Foods and Kerry Food Service, seeing the revolutionary Vito machine, plus benefits of teaming up with other Chippy chat partners. In the evening over 60 people dined and drank into the night in Ely all reflecting on the day itself. We are already planning next year’s event.
