M

any of you contact me when you have a famous name visiting your shop, but not many can match the guest who visited a Coventry chip shop in 1983! Former world heavyweight champion Mohammed Ali visited Coventry on the final stop of his 10-day Midlands tour and paid a visit to a fish and chip shop in Tile Hill owned by Jack Bodell, himself a former boxer. More than 1,500 people crowded to see him and was greeted by astonishing scenes of adulation. It was the first time the pair had met since Bodell helped Ali prepare for a fight in Germany in 1966. Brad to be open! TJ’s Fish Bar, which is based in Bradford officially opened its doors to the public recently.

T

he owners posted on the business’s Facebook page on the big day to declare it had been a “manic 24 hours”, but they were ready to serve up “some delicious fish and chips”. TJ’s Fish Bar has brought a well-known fish and chip shop delicacy in Scotland across the border. That’s right – this shop serves deep-fried Mars Bars. The business had strict rules in place, given the country was still in the midst of a lockdown due to the coronavirus pandemic on opening weekend.This included no more than three people in the shop at once and face masks to be worn at all times. For those who prefer delivery, TJ’s Fish Bar also went live on Just Eat, on the day of its grand opening. It proved extremely popular with the masses from the get-go. The owners posted on fish and chip shop’s Facebook page on the first Sunday afternoon to outline they had to turn off Just Eat due to the sheer amount of orders. The post said: “Folks we have had to turn Just Eat off and we have been absolutely swamped with orders. Please bear with us, we are trying our best.” Then after closing that evening, TJ’s Fish Bar revealed it had run out of fish and apologised to those who were unable to order.

The post on Facebook said: “Wow. You know it’s busy when you run out of fish. “So sorry to anyone who didn’t manage to order. We have only just opened and are still finding our feet with staffing, stock levels, etc. There are bound to be teething errors and we know this. So please bear with us while we fine tune the way we work. And thank you so much to everyone who did Your patience really did help us. We will be back Tuesday to do it all again.” TJ’s Fish Bar is open from Tuesday to Sunday every week, from 11.30am until 7pm. What happened when you opened, did you sell out? National Fish and Chip Day is back and it’s bigger than ever! By Austen Dack

T

he biggest day on the fish and chip calendar is back! National Fish and Chip Day in association with NEODA will return for the sixth year on Friday 4th June! The event has gone from strength to strength since its launch in 2015 and, despite the restrictions, nearly 50 million people would have seen, heard or read about the awareness day last year. National TV, radio and newspapers featured stories, as did the regional media. Social media was awash with fish and chip stories with the hashtag, #nationalfishandchipday, and was number 1 on Twitter from 8am and stayed there all day long! Merchandise for the day can be ordered online at the National Fish and Chip Day website www.nationalfishandchipday.org. uk. Also on the website are downloadable posters to print and display, plus logos, social media headers, a press release

Speaking about last year’s event, NEODA President, Gary Lewis said “National Fish and Chip Day 2020 was always going to be very different to previous years and none of us really knew what to expect. The focus was very much on the resilience of the fish and chip sector and wow...did that shine through on the day! We were completely bowled over by the number of shops, both those who have previously celebrated the day with us, but especially the many, many new shops, who got involved in any way they could. National and Regional media - TV, Radio and newspapers - were awash with stories of how shops were celebrating the day and social media was full of amazing competitions, activities and photos exactly what National Fish and Chip Day is all about! We are delighted that so many shops, who have been so hard hit by the pandemic, embraced their special day and threw everything they had at it! No matter what unfolds in the coming months, fish and chips will remain at the centre of every community and we are delighted to be able to bring this very special awareness day to the nation again in 2021” Over the next 14 pages we are going to highlight many of shops got involved last year. It will give you over 50 ideas for the big day itself. Many of them don’t need you to spend vast sums of money but give you an idea of what can be done to join in on the day. Big Papa and Chips! Papa’s Fish and Chips has opened two Mcdonald style drive-thrus

P

apa’s Fish and Chips have opened not one but two drive-thru restaurants during the pandemic. The first opened in Kingswood in December, offering chippie lovers a chance to pick up all their favourites without leaving their car. Additional goodies were also available that are not on offer in other outlets - Tango Ice Blast and chocolate milkshake. There were long queues for the opening day as people were eager to try the new outlet following it’s transformation from a Harvester pub. Owners Dino and George Papas said how excited they were for the opening

of the new drive-thru, which is also a restaurant ready to open when Tier 3 restrictions lift. “It has taken us a long time, but we finally opened our first drive thru and are so excited about it,” they said. “We are providing the first fish and chips drive-thru in the area and the restaurant will also open in Kingswood as soon as the Government allows it and there is also click and collect available through the website. “The drive-thru is exactly like McDonalds with the intercom and we have wanted to do it for ages. “It is a more convenient way for people to get their fish and chips and we have been spurred on by everything happening this year [with the coronavirus pandemic], as it is a completely contact

free service and customers won’t have to wear masks coming in as a takeaway. The restaurant’s latest venture at Bilton opened for business in January with customers picking up a free doughnut with every meal. Papa’s posted on Twitter: “Bilton! You never have to leave your car again for fish and chips. “Our drive-thru is now open.” Dino, said about the opening of their second drive-thru: “We are delighted to announce the opening of our second Drive thru at Bilton. “Providing people with a more convenient way to collect their fish and chips without having to leave their car. “This is part of an investment we are making to our Bilton location refurbishing the entire building including our restaurant which will be ready to open when the government allows.” Hull Live visited the Kingswood site (unfortunately I was not allowed to drive that far) and said they thought that the whole drive-thru process was a great way of ordering fish and chips and it was just the same process as any other drive-

thru like McDonalds, Burger King or KFC. The menu was clear to read next to the intercom where drivers need to pull up and they went for fish and chips and a drink and then moved on around to the collection and pay station. The food was ready in no time and tasted delicious. The batter was nice and crispy, the portion was huge and the chips were chunky and well-seasoned. It was a great alternative to the normal drive-thru fast-food options, and they enjoyed being able to stay warm in the car rather than queuing up. It also meant that they did not have to wear a mask or sanitise in line with coronavirus rules. So, if you fancy a chippie dinner without the hassle, they’d definitely recommend the new drive-thru service that Papas are providing. People can still use the walk-in takeaway service or click and collect if they prefer a more traditional method of ordering their meals. Weston Super Glare! As fish and chip shops go, this one in Weston-super-Mare has to be among the brightest in the UK.

B

ecause not only can customers tuck into tasty portions of cod and chips at Winstons Fish Bar, they can also enjoy their meal with the feeling they themselves are under the sea. Owner Sophia Michael commissioned local artist Martin Darcy to create an underwater wonderland at the seafront restaurant, which she has owned since 2005. “I just wanted something colourful and fun in the restaurant, said Sophia. “Something which was a bit different which everyone can enjoy. “It’s something a bit different and I love it.” Martin and Sophia worked on the design together which took five days to complete.

“The design was based around the fish tanks which are already set into the wall,” said Martin. “I wanted to make it feel like a fish tank within a fish tank. “I think young customers will really love it although the design includes something for everyone.” The design features crabs, fish, colourful corals, a giant shark and even a mermaid a special request from Sophia. The restaurant, which can seat up to 200 people, is a favourite eaterie in the town, not only with locals but the many tourists who visit Weston each year. Often people are seen queuing around the front of the award-winning restaurant to sample the traditional seaside supper. During the coronavirus pandemic, the restaurant is open only for collections. Grumpy Old Man! Grumpy’s Owner is actually very Happy

Y

ou always know what Mr Grumpy will give you - good Kiwi style fish and chips at a great price, fast service, and friendly staff. Mr Grumpy’s is a favourite among Foxton locals and tourists. Their burgers are to die for with fresh ingredients and fish cooked to perfection with the batter nice and crispy and fries well-drained. Nothing says summer more than a scoop of hot chips on the beach. The secret to the best fish and chips in town, according to Foxton Beach’s Mr Grumpy’s Takeaways owner Glen Hitchcock, is the fat. “We don’t use vegetable oil. We cook in fat, and I tell you that makes the biggest difference. You get ‘em cooked properly, nice batter and let ‘em drain correctly so they’re not greasy and the fat lets them drain a lot better, I think, than oil.” Foxton Beach’s Mr Grumpy’s Takeaways has been around for more than 10 years. It is a popular spot during long hot summer days. It has visitors from other countries, because of his listing on Trip Advisor as a great place to get takeaways. “On a busy day we might have 150 customers. Friday is our busiest night.”

Glen has a secret recipe for his batter it’s thin and patrons like that.The extensive menu includes curly fires, camembert wedges and popcorn shrimp.They have “well over 200 items on the menu”. But don’t be fooled by the name. Hitchcock is not grumpy at all. Hitchcock is known for being a bit of a character. He gets a bit of enjoyment out of pulling people’s legs. “I love dealing with people. If I know you or I don’t know you, if you come and get fish and chips from Mr Grumpy’s it can be quite an adventure. You’ll get racked up. I just love dealing with people.If you ask anybody anything with a straight face, if you’re pulling their leg, it’s a hilarious time.” Trip adviser gives them an average of just over 4.5. At last, a proper ‘FushnChups Ship’ “Called in on the way through on the off chance. Service was not very attentive, but that’s a problem I always find with take always - ask for anything that isn’t in the server’s idea of how they would want it and you don’t get. In this case it was simply asking for plenty of salt and vinegar and getting none. Luckily easily rectified. Five stars however for the food quality, very tasty and best chips in NZ other than George’s in Whanganui. Nice to find Blue Cod on the menu at a fair price too. Hoping to get there before closing for lunch today!”

The Frenchmark! Babylon Fried by Century Old Shop

I

sle of Ely Produce have been promoting a new Chip Ambassador role to promote the great British Chip in association with Agrico. The aim will be to carry on the good work promoting chipping potatoes at their hugely successful open days, and through the ‘Field to Frier’ award. The Chip Ambassadors will become part of an UK wide group of shop owners and fryers who will promote best practice for potato buying, storing, and of course frying. The chain will also include key growers too like PJ Lee & Sons, and A. L. Lee Farming Company, as IOE looks to nurture the relationships they have grown across the whole supply chain during the last twenty years. Agrico have partnered with Isle of Ely Produce to bring two new varieties into the trade initially via our Chip Ambassadors. The two varieties Babylon and Lugano will be sampled at some of

these ambassadors to back up the results of early trial successes. This month I visited French’s Fish & Chips in Wells Next to Sea. I met with owner Marcus French ahead of a busy Friday shift. It is a big year for Marcus and the team, as they are celebrating 100 years of fish and chips in the town a massive achievement over seen by Marcus for over a third of this tally! French’s is one of the best fish and chip shops in the UK and very much a destination shop for over 50 miles around. Armed with some pre-cut Babylon I gave them to Marcus to fry alongside some Maris Piper. Their Florigo range, is equipped to cope with a very busy seaside queue, and was ready for the expectant deluge of customers already starting to gather outside as we arrived pre-opening. Once cooked and plated, both myself and my wife Sarah tucked into some Babylon chips with some fantastic FAS Chippy Chat & Fast Food Magazine • May 2021

cod. Marcus too tried some chips. He was impressed by the fry colour, crisp outside and size of the sample. He also said that they compared really well to his usual supply of piper, and he would look out for Babylon next season for use in his shop. It was so good to see Marcus and his team in action. Quality and a consistent product has kept people coming to French’s for over 100 years now, something that Marcus is keen to continue with daughter Alana taking over as shop manager, with him continuing as MD. Street Party at Your Plaice? A Norfolk mobile chippy offered the chance for someone to be the most popular person on the street - by providing all their neighbours with free fish and chips.

an Betts, from Fakenham, ran a ‘treat your street’ raffle which gave one person in Norfolk the chance to offer up to 100 people a fish and chip supper. “I did this competition to make a lot of people happy, to see a smile on their faces,” he said. “I know it’s only a few quid to get fish and chips, but imagine people walking up and getting their free fish and chips, they would be chuffed. “How proud would you be to turn around and say to people it’s Friday night, here is free fish and chips, go and help yourself and cheer people up.” Buying the van in 2014, the 42-year-old normally caters for between 50 and 60 weddings a year. But last year he only had 12 events with anywhere between 15 and 30 people. He also runs a chip shop in North Elmham, which he opened during the lockdowns. During the first lockdown, he found himself very busy as he was the only shop opened in his area. This time he said it seems quieter, so the raffle was the best idea to keep himself

relevant while also spreading some joy. “It’s to keep my name fresh in people’s mind, and make sure I am not forgotten about, which I’m sure I have not been,” he said. “It was to keep me busy, I don’t want the van just sitting there doing nothing. “I’m just hoping people are sensible and only one person is coming out to collect their food at a time.” He is also saying the winner should not encourage people to travel to take part and break the guidance. The winner also got a £100 donation from Mr Betts to donate to the charity of their choice. Tickets for the raffle cost £2 with 600 available. Level 2 – Food Hygiene - The course aims to teach food handlers the basic and necessary protocol for handling food in a safe and hygienic manner. Level 2 – Health& Safety – The course is designed to be concise and informative, and to allow learners to gain a general understanding of health and safety. Level 2 – HACCP - Completing the Level Two HACCP Awareness course ensures that you have practiced due diligence. Level 2 – Allergens Awareness- The course is aimed towards those whose occupations have any involvement in the handling and preparation of food. Level 3 – Food Hygiene - The course is aimed towards business owners, supervisors, and managers as it involves the management of a food business as well as guidelines on how to prepare, handle and cook food safely. It is also targeted towards food handlers who have completed Level Two Food Hygiene and Safety and would like further their education. This course is just £65. All employees must legally receive fire awareness training as part of their induction into the workplace. Why not formalise this training by enrolling them in the course below. Level 2 - Fire Awareness in the Workplace - This course aims to teach employees the risk of fire in the workplace, what themselves and others can do to prevent or diminish that risk, and how to deal with the actuality of a fire and is only £14.00 per person. It’s Theatrical!

Many fish and chip shops boast about their famous visitors, from The Krankies to The Beatles, but not that many owners get to meet three famous faces in just one week!

F

ish & Chip legend Calum Richardson had not one but three celebrity brushes in April and scored yet more PR goals for team fish and chips. British journalist, broadcaster and former politician and defence secretary, Michael Portillo, popped into an award-winning Stonehaven fish and chip shop recently as he wraps up filming for his latest series of Great British Railway Journeys. Taking a trip north, Michael caught up with The Bay Fish and Chips owner, Calum Richardson, to find out more about the business, and local area as part of the show. The production team were interested in the fish and chip shop due to it being named as one of the best food experiences in the world by Lonely Planet in 2018, ranking at 31, Britain’s highest entry. Next he got to pose with Outlander star Sam Heughan after was invited to cater for the cast and crew while they were filming at an undisclosed location with The Bay on the Road. Calum revealed that after a long day of cooking he couldn’t resist asking Sam who plays Jamie Fraser on the show, for a cheeky pic with him and fiancee Viktorija Kunickaitee, who was also working on the van. After the Scots actor had enjoyed his meal, which Calum revealed was a North Sea Haddock and one of his special chickpea fritters with tartare sauce, Sam came to say hello. “Sam came to speak to us and he remembered us from when we had previously catered for a party at the end of season five, he was really nice and said he’d try and get us back later on for when they are filming more stuff.” Finally top Tv chef and National Fish & Chip host Phil Vickery dropped in to say hello.
